Introduction Lecithin is a generic term to designate a variety of naturally occurring fatty compounds found in animal and plant tissues. Lecithin is natural dietary source of Essential Phospholipids–valuable nutrients viz Phosphatidyl Choline, Phosphatidyl Ethanolamine, Phosphatidyl Inositol & Phosphatidyl Serine, an active substance used in manufacturing a variety of Food products, Cosmetics, Pharmaceuticals, Healthcare, and Animal feeds. It is regularly extracted from cotton seed, marine sources, milk, rapeseed, soybeans and sunflower. It is composed of choline, fatty acids, glycerol, glycolipids,

phospholipids, phosphoric acid and triglycerides, usually used as a liquid. The composition depends on the source of the lecithin. Vegetable lecithin, containing primarily phosphatidylcholine (PC), phosphatidylethanolamine (PE) and phosphatidylinositol (PI), are derived commercially from oil-bearing seeds such as soybean, sunflower kernels and rapeseed. Soybeans are by far the most important source of commercial lecithin and lecithin is the most important by product of soybean oil process.


Production of soya lecithin consist of several processes including water degumming (hydration), separation, drying and cooling. Crude lecithin is refined through the use of different processes like enzymatic and chemical adaptation of phospholipid molecules, physical fractionation for separating oil from phospholipids and fractionation of phospholipids to regulate or change its phospholipid composition. One ounce (28 grams) of soybean lecithin has the following nutritional content: 214 calories 28 grams of fat 1,438 milligrams omega-3 fatty acids 11,250 milligrams omega-6 fatty acids 2.3 milligrams vitamin E (11 percent DV) 51 micrograms vitamin K (64 percent DV) 98 milligrams choline (20 percent DV)

Application of Soya Lecithin Soy Lecithin can be used in Food, Beverage, Pharmaceutical, Health & Personal care products, Agriculture/Animal Feed/Poultry. It is used as Natural Emulsifier, Wetting agent, Stabilizing agent, Viscosity Reducing agent, Anti-spattering agent, Mixing & Blending agent, Release agent. Industrial grade Soya Lecithin liquid is used in Printing Ink, Premier Paints, Water based paints, Latex Based Paints, Coatings, Audio Video Tapes, Paper Industries, Plastics Industries, Motor Lubricants, Gasoline, Textile, Rubber Industry, leather Tanning, offshore drilling Industries and in Emulsion Explosives.
