Savoury This delicious quick bread could be your next mealtime favourite, inspired by the flavourful beers and delicious cheeses of the Netherlands. We’ve included a wonderful combination of local ingredients here.
Cheddar Beer Bread INGREDIENTS 3 cups all purpose flour 1 tbsp. baking powder 1 tsp. salt 1 tsp. garlic powder 2 tbsp. sugar
DIRECTIONS
■ 3 tbsp. fresh chopped herbs ■ 2 ¼ cups grated cheese ■ 12 oz. of craft beer (alcohol-free beer can also be used) YIELD: 1 loaf of 8-12 slices
1. Set aside 1 tbsp. herbs and 1/4 cup cheese for topping. 2. Mix first 5 ingredients together in large bowl with a wooden spoon. Then blend in herbs (dill, rosemary or other) and grated cheese. 3. Mix in beer last. Batter should be the consistency of Bisquick™. Spoon into a well-greased bread/loaf pan. 4. Sprinkle herbs and grated cheese topping onto batter. 5. Bake at 350 ˚F for about 50 minutes, or until a toothpick in the center comes out clean. 6. Remove bread from the oven and let rest for about 10 minutes. 7. Remove from pan, cool, then slice and enjoy. (Recipe adapted from food.com)

GET IT LOCALLY: This dish features pork, but chicken and beef are excellent substitutes. For maple syrup, try Rose Elm, Thomey Farm or Curles Maple Products. The vegetables can come from Northumberland’s many farm destinations. You can also visit our community Farmers’ Markets. (All are detailed in this Map Guide).
tisfying This popular Filipino dish comes from the northern regions of the Philippines. This version is ideal for Northumberland with pork, fresh seasonal vegetables, and a little maple syrup.
Pinakbet INGREDIENTS ■ ¼ lb. pork ■ 1 large eggplant ■ 1 medium zucchini or summer squash ■ ¼ lb. squash ■ 3 pieces large tomato ■ 1 piece chopped onion 1 tbsp. minced ginger ■ 3 cloves crushed garlic
■ 6 to 8 pieces okra ■ 1 bunch green beans 4 tbsp. fish sauce or soy sauce ■ 2 tbsp. maple syrup 1 cup water 3 tbsp. cooking oil salt and pepper to taste
DIRECTIONS 1. Cut the pork and the rest of the ingredients into bite sizes. Slice the okra into ½ inch rings. 2. Heat the pan and add the cooking oil. 3. Sauté garlic, ginger, onion and tomato for about 2 minutes. 4. Add the pork and cook it completely, until it is no longer pink in the centre (at least 145 ˚F with meat thermometer). 5. Stir in the fish sauce (or soy sauce), maple syrup and cook for 2 minutes. 6. Cover all the ingredients with water. Bring to a boil, then simmer. 7. Add the squash and simmer for 5 minutes. 8. Add the remaining vegetables. Simmer for 5 minutes or until all the vegetables are cooked. 9. Add salt and pepper to taste. Serve over steamed rice. (Recipe adapted from Wikipedia)

Apple Cider 3 Ways GINGER CIDER WITH MINT ■ 1 tbsp. of fresh mint leaves 1 small piece of fresh ginger root, sliced 1 piece of lemon zest (taken from rind of a fresh lemon) ■ 1 tsp. of local maple syrup ■ 6 oz. of locally-crafted hard apple cider (or farm fresh cider for a mocktail) ■ 1 sprig of fresh mint (garnish)
1. Muddle the mint leaves, ginger, lemon zest and maple syrup in a bowl with pestle or wooden spoon. 2. Transfer mixture to a cocktail shaker, and add the fresh cider. 3. Strain mixture into a clear glass with ice. Garnish with a sprig of mint.
APPLE CIDER SANGRIA ■ 1 sliced apple ■ 1 sliced pear 1 sliced lemon 8 oz. apple brandy 1 bottle white wine ■ 32 oz. farm fresh apple cider
1. Combine all ingredients in a large pitcher. 2. Chill at least 4 hours and up to overnight. 3. Serve with pieces of fruit in large wine glasses with ice.

GET IT LOCALLY: The flavour of the honey syrup is based on the kind of honey selected. Some varieties include alfalfa, apple blossom, buckwheat and lavender. You’ll find local honey at Dancing Bee Equipment and many other locations. Garnish this treat with local lavender, or fruit in season, such as sliced strawberries, peaches and apples.
Sweet Baklava is a memorable treat with origins in Syria, Greece and Turkey. We’ve added a special twist on this decadent dessert with a syrup made from Northumberland honey.
Honey Baklava INGREDIENTS 1 (16 oz.) package phyllo sheets, thaw 1 hour before using 1 lb. (about 4 cups) walnuts, finely chopped 1 tsp. ground cinnamon 1 cup granulated sugar
¾ cup water ■ ½ cup honey 1 cup (2 sticks) unsalted butter, melted ■ fresh lavender to garnish. (a small amount is excellent drizzled with honey syrup)
DIRECTIONS 1. Honey Syrup: Combine sugar, water and honey in a medium saucepan. Bring to a boil while stirring frequently to melt sugar. Reduce heat and simmer for 4 minutes. Let cool completely. 2. Baklava: Chop walnuts into small pieces (food processor is best). Add cinnamon and set aside. Melt butter to a liquid state (microwave or stove) in separate pot. 3. Grease a 9x13 in. baking pan and preheat oven to 325 ˚F. Unpackage phyllo sheets and trim to fit pan. Place phyllo sheets between 2 damp kitchen towels to prevent drying out. 4. Add one sheet of phyllo dough to pan and brush with melted butter. Repeat with another 9 sheets for a stack of 10 buttered phyllo sheets. Top with ¾ cup of the chopped walnut mixture. 5. Top with another phyllo sheet, butter and repeat until you have a stack of 5 buttered phyllo sheets. Top with ¾ cup of the walnut mixture. Repeat this step 3 more times. 6. Add another 10 phyllo sheets, buttering each sheet between layering and spreading the remaining butter on top. 7. Cut lengthwise into 1.5-in. wide strips. Then cut diagonally to form diamond shapes. Bake for 50-60 minutes or until the top is golden brown. 8. Remove from the oven and leave in the pan. Immediately pour the honey syrup over the top and let cool completely.
