County Craft & Food Fair Ardee will be the place to be on the August Bank Holiday Monday when the County Craft and Food Fair returns, as part of the town’s annual Turfman Festival. Scarecrow Day Wanted! Scarecrows to protect Farmer Bill’s crop on Newgrange Farm! Children throughout the north east are invited to the Farm on August 21st for Scarecrow Day and they are encouraged to bring along a scarecrow they made at home for judging. Entries will be judged by visitors and Farmer Bill between 2.30pm and 4.30pm when the winner will be announced. The weather might have been gloomy but the guests at the Des Smyth Drogheda Youth Foundation fundraising BBQ were full of laughter! The event was held on Thursday, July 8th in the Boyne Valley Hotel to launch the new ‘Friends of DSDYF’ scheme which encourages local people and business owners to support the work being done by DSDYF here in the local community. The Foundation gives kids across the local community access to high quality sports facilities, equipment and coaches. Their aim is to build their confidence and support their development. Essential takes a closer look at local talent who are making their mark
e just love Drogheda – it’s in the blood! So myself and Martin decided to set up a one-stop shop for everything for the Drogheda people. We wanted to create a site that would also tie in with social network sites Facebook and Twitter and create a whole community for Drogheda. For us it’s been an instant hit. Within four weeks it became so popular that we had to upgrade our services to cater for the amount of hits each day. Martin works on the technical side of things while I work on the design element. Because this started out as a hobby I suppose the big surprise for us was the amount of work actually involved! We never realised the amount of things going
on in the town, especially live music! We get such a thrill every morning when we see the number of visitors to the page and our hope going forward is that it will grow into something even bigger. Our aim is to make mydrogheda.net Drogheda’s number one website within the year. We want Droghedeans to make it their homepage, their favourite website. We want to become one of those pages that locals will look at first before any other. We feature anything that is going on in the town, from eating out, places to stay, arts, cinema, gigs, clubs etc. Basically whatever’s happening we’ll promote it for free!

rom the age of four, psychic medium and clairaudient Sapphire Rose knew that she was ‘different’. The mum-of-four recalls playing a game of Guess Who with her friend and instinctively knowing the image on the card her competitor was holding. ‘When I was very small I predicted things before they happened to my mum, Maggie,’ she says. ‘Like someone ringing or a person calling to our door – I’d tell Mum it was going to happen and then seconds later it would. ‘After a while this pattern became normal to me but it was never encouraged at home. It was something I had to discover for myself.’ After the birth of her first child, Amber, at 18 Sapphire Rose’s psychic ability became much more obvious. An accidental brush with someone while out for a walk could lead to ‘a little message from the spirit world’. t’s not something I admit too often – but yes I do wear make-up on the beach! I wouldn’t wear as much as I would on a Saturday night but if you’re clever you can achieve a ‘made-up’ look without actually looking ‘made-up’! Just follow these simple tips to look amazing on the beach...
Celebrity make-up artist Emma Woods shows how to get the beach babe look 1
FACE - As always, start with a clean moisturized face. Before applying my 7 make-up I always apply sunscreen; there are wonderful tinted moisturizers out there that 2 contain sunscreen for added protection. I particularly like using La Roche-Posay 6 Tinted Moisturizer with SPF 50 €19.99, Superpharm Chemist, West St (1). 8 Once the moisturizer has absorbed into the skin, dab on concealer, using a synthetic brush on the areas where you 3 need coverage, and blend the edges into 9 your skin. Make sure you use a colour 5 that is the same as your skin tone. And remember, as your skin darkens so 4 should your concealer; a good tip is to purchase a concealer one shade darker EYES - Personally, if I than your natural skin tone and then mix this have nothing on my eyes I feel naked! Organic Aloe-vera After-sun Lotion from Aloe Pura, €7.70 (6) is quite good as is Clarins Oil-free Ultra-Matte Rebalancing Moisturiser, €28 (7), both available from Hickeys Pharmacy, West St. HAIR - It’s just as important to protect your hair from the summer sun as it is to guard your skin. Chlorine used in the pool may give a greenish tinge to your hair while salt can dry it up. Wind and humidity on the beach are known to frizz up your hair too, and may cause your hair colour to fade. To avoid all this and more, shampoo your hair and apply a leave-in conditioner before going to the beach for a swim. A clarifying shampoo will get rid of the chemical and mineral build-up in your hair. I like Kerastase Bain Apres-Soleil Shampoo, €19 (8) and Kerastase Masque UV Defense Active, €33.30 (9), both available at Kazoo Hair Salon, Drogheda.

In the first of a three-part series local web designer Jonathan Callan guides you through the process of creating a professional website from scratch without forking out a lot of money
W
hen you think of getting a website for your business, most people presume they must go directly to the professionals and pay a lot of money. However, over the next three issues I will show you how to create a professional looking website yourself and explore some ways to promote it. This month I’ll get you thinking about what your website can do for you, where to host it and what software to use. So why get a website at all? If someone wanted to find out about your business the chances are they will use Google to find out about you. This may be the first and only time they will get a sense of what your business is about and how professional you are. People’s attention span and patience is amazingly short when they’re online. If they don’t find what they’re looking for quickly they’ll just click through to another website, probably a competitor. The thing to note here is that you need to have a web presence in the first place. A recent survey showed that only 30% of local businesses have a website. The first thing you need to ask yourself is: ‘What do I want a website to do for my business?’ There’s no point in having one just for the sake of it. It could be used to save time on repetitive tasks, for example you could publish a frequently asked questions (FAQ) page about your products or services so you don’t have to spend hours on the phone answering the same questions every day. Or you could write a business blog that keeps visitors coming back to your site. The idea here is to think about ways to save time and promote

Laurence Barkey weds Frances Daly Frances Daly and Laurence Barkey were married on June 15th last after seven years together. They chose to have an intimate Civil Ceremony and reception in Darver Castle. Laurence’s brother Francis Barkey and his wife Winifred were witnesses for the bride and groom. The weather on the day couldn’t have been more glorious and Frances looked radiant in her gown from Edel Tuite Bridal Design. Entertainment was provided by Tropical Storm – a three-piece band from the Philippines – who performed for three hours outside in the open air. The celebrations were carried on by musician friends of Laurence’s who very kindly took to the stage for the remainder of the night. The newlyweds honeymooned in Sorrento for one week. Johnny Carter weds Linda Delaney Childhood sweethearts Linda Delaney and Johnny Carter said those two all important words ‘I do’ in Our Lady of Lourdes Church, Drogheda on April 9th last. Linda had three bridesmaids in total, two of which were her sisters Karen and Denise Delaney and her best friend Lyndsey Bohan. Johnny’s bestman was Gary O’Hare and his two groomsmen were his brothers Aidan and Barry Carter. Linda’s nephew TJ Delaney and Johnny’s niece Lily Carter did superb as pageboy and flowergirl. Their reception was held in Darver Castle where the guests were entertained by a group of Irish dancers and a band specially put together by Johnny’s good friend Shane Brannigan of Clockwise. A very memorable day was had by all! For their honeymoon, the happy couple went to Cancun in Mexico for seven days, New York for three days and also to Galway for three days with friends. Paul Ellis weds Charlene Tyrrell Charlene Tyrrell and Paul Ellis might have waited 12 years before they tied the knot but it was well worth the wait! On June 5th they had the time of their lives when they married in St Patrick’s Church, Skerries surrounded by their many friends and family. Charlene’s three bridesmaids were Rebecca Tyrrell, Debbie Ellis and Gina Mellows. The bestman was Harry O’Toole and the two groomsmen were Derek Trumper and Damien Doolan. The newlyweds’ two sons also had roles to play on the day – Glen was the ring bearer and Paul brought up the lucky horseshoe. Irish dance teacher Caroline Campbell put her best foot forward for her wedding day recently! The Ballsgrove girl wed Declan Dunne from Clogherhead on April 10th in St Mary’s Church, Drogheda, and was thrilled when the girls from her dancing academy lined up for a guard of honour at the church. They also entertained the guests later at the couple’s reception in the Boyne Valley Hotel. The bridesmaids included Catherine Campbell, Mary Lesley and Anne O’Shaunessy, who were accompanied by Alan Fitzpatrick, Simon Nugent and Thomas Campbell. Flowergirl Moira Russell also stood out on the day as did the ring bearer Liam Campbell. Singing duo Linda & Paul took to the stage later in the evening and a great time was had by all. Alan McArdle weds Terri Fitzmaurice After seven years together, Terri Fitzmaurice and Alan McArdle finally tied the knot on Saturday, July 3rd. It was a wonderful day with the ceremony taking place in the Church of the Immaculate Conception, Termonfeckin. How long do you have it? Three years – I built it from scratch in 2007. It took about a year to get it on the road and I haven’t looked back. It’s reliable and very cheap to run. What was your first car and how old were you? A Ford Fiesta and I was 17. It came along at the right price and I couldn’t pass it. How old were you when you passed your driving test? I passed the test first time when I was 17. I did it in Navan and I took to it like a duck to water! What’s your dream drive and why? One of the new Audi F8’s. I’ve always loved Audi and during the day I drive an Audi A4.
What was your first bike and when did you start riding? Like half the country, a Honda 50 that belonged to a friend’s elder sister, I was about 12 at the time, but that was the start of a lifetime enjoying motorcycling. What bike do you currently have and how long have you had it? A two-year-old Triumph Bonneville bought new from Kennedy’s in Dyer Street. All my life I longed for a Bonnie and when I finally got a secure workshop finished I ordered one straight away off Jimmy. What bikes would be in your fantasy garage? I’d have a Hyde Harrier, Yamaha RD400E, Bultaco Sherpa trials bike, Honda CB350K4, Honda RC45, a late model Yamaha TZ350 production racer, a nicely restored Honda CB500 and a ‘Noddy’ CD175 for old times. What protective gear do you wear? Shoei Multitec helmet, Wolf textile jacket, leather jeans, Sidi black rain boots and Wolf gloves – all bought locally.

What’s the best car you ever drove? The Mitsubishi Evo X – it’s my father’s car! It has great power and road handling. How often do you change your car? Every five years. But I always shop around and whatever deal I get dictates the type of car I buy. Who is your insurer and why? Axa, I started off with them and I’ve never changed. I find their prices are very competitive. What’s on your CD player? Stereophonics. Do you use a Sat Nav? No, it’s maps all the way! I’d know most places where I’m going so I’ve no need for a Sat Nav.

e only took over the reigns of Harry’s Bistro Bar in Mell late last year but already proprietor Stephen O’Donoghue has drawn a loyal customer base. Having previously worked closely with U2 and actor Aidan Quinn, Stephen brings a wealth of experience to Harry’s. Together with executive chef Alan Clarke he has established ‘a local hang-out where everyone knows your name!’ ‘Harry’s is the complete destination for the people of Drogheda and comprises of a 100-seater restaurant, a chilled-out local bar and a cocktail bar. Our two function rooms cater for 100 and 200 persons and we always offer exceptional value to all our guests,’ says Stephen. The restaurateur contributes the success of Harry’s to understanding and listening to people’s needs and it’s as a result of this that
he also set up The Right Catering Company, a bespoke catering and events firm. ‘We cater for private and corporate events offering unrivalled standards of customer service and high-quality, value-conscious menus. in a dry frying pan until blackened. Shake in the flour to coat the meat. 5. Deglaze the pan with the balsamic vinegar and add the red wine (don’t forget to pour a glass for yourself!). 6. Add the redcurrant jelly and rosemary. Stir in the ketchup and marmite and bubble over a medium heat until reduced and thickened. 7. To serve, place lamb on a bed of champ.

Chocolate Fondant (Serves 1) Ingredients 50g unsalted butter & extra to grease 2 tsp cocoa powder, to dust 50g good quality bitter chocolate (minimum 70% cocoa solids) 1 free range egg 1 free range egg yolk 60g caster sugar 2 tbsp Tia Maria liqueur 50g plain flour, sifted Icing sugar, to dust Strawberry ice cream to serve
Method: 1. Preheat oven to 160C/gas 3. 2. Butter four ramekins (about 7.5cm in diameter), then dust liberally with cocoa, shaking out any excess. 3. Slowly melt the chocolate and butter in a small bowl set over a pan of hot water, then take off the heat, stir until smooth. Leave to cool for 10 minutes. 4.Using an electric whisk, whisk the whole egg, egg yolk and sugar
together until pale and thick, then incorporate the chocolate mixture. Fold in the liqueur, followed by the flour. Divide the chocolate mixture between the ramekins and bake for 12 min. 5. Turn the chocolate fondants out on to warmed plates. Dust the tops with icing sugar and serve with a dollop of creme fraiche or a scoop of strawberry ice cream.
Thai Sea Bass with Prawns in Banana Leaves
(Serves 1)
Ingredients 1 whole sea bass 1 lemongrass 30g coriander 2 red or green chillies 2 cloves of garlic 10 tiger prawns 2 banana leaves 1 white onion A couple of lemon wedges A few slices of butter
Method: Ask your local fishmonger to gut and scale your sea bass. 1. Preheat the oven at 200C/gas mark 5. 2. Simply stuff the cavity of the sea bass with the prawns and the combined chopped lemongrass, garlic, onions, chillies and herbs. Add some butter
and seasoning to the skin of the sea bass. 3. Wrap in banana leaves (available at your local Asian market) before baking in the oven for 20 minutes. 4. Garnish with some Crab Claws Oysters or a fish of your choice to make an interesting platter.

The most valuable lesson you have learnt over the years? I’m still learning it which is to stop and listen. It’s dead hard!
Has the current economic climate changed your spending habits? No, I was always of the opinion that if you don’t have it don’t spend it, and if you can’t see it don’t buy it. I’ve always been that little bit careful so I guess I’m still a mean git! If you could change anything in the town what would it be? The way the Council meetings are run and the ridiculous expansion of the town which was too fast and too quick, both from the shopping element and the housing. What was the last thing you googled? Electric Picnic – it’s the ultimate festival and I go every year! I wanted to see had the line-up changed. What mobile phone do you use and what network are you with? I have an iPhone and I’m with Vodafone. Is there any technology you refuse to use? Aeroplanes! I’m terrified of them and it’s got to the stage where I can’t even watch Lost without feeling sick. I haven’t flown in years which means I can’t do Council junkets and I’ll never be Minister for Foreign Affairs! Favourite sayings? I’ve three – shop local; keep it in the family and get your hair cut! Where do you see yourself in 10 years? Hopefully visiting my kids in foreign places so I’ll have to get on a plane! We’re always telling them to go out, have an adventure and explore the world. So it’d be nice to have an adventure of my own!

Southern Tenant Folk Union Workshop & Concert, Droichead Arts Centre, Saturday, September 4th, 3.30pm (workshop), 9pm (concert), Formed by Belfast-born five-string banjo player Pat McGarvey, this seven-piece all-acoustic band with banjo, mandolin, fiddle and harmony vocals have just released their third album, ‘The New Farming Scene’. They are the most highly acclaimed folk/bluegrass band in the UK today, and since starting out in 2006 they’ve toured their exciting live show all over England, Ireland, Netherlands and Germany. But it’s they’re amazing musicianship, heartfelt storytelling, acappella singing and their special brand of honest and intelligent music that makes this show so special. A workshop with the band earlier in the day will feature the banjo, mandolin, acoustic guitar, double bass, fiddle, cajon (box drum) and harmonica. Refreshments will be served also. who now coaches at Holy Family Boxing Club Best fight: It was a European Qualifier Semi-Final against Carmine Molaro (Italy) and I won 10-4. Best opponent: Istvan Kovacs (Hungary), Olympic Champion 1996, and who later went on to be a World Amateur and Professional Champion. Best training tip: Fail to prepare – prepare to fail! Best boxer of all time: Sugar Ray Leonard. After being retired for five years he came back to win the World Middleweight Title from Marvin Hagler. Best career advice: Be prepared to put in what you aim to get out of your sporting goals. Best achievement: Representing Ireland at three World Senior Championships and winning four National Senior Titles. Also, having three young kids Dillon (9), Adam (5), Kyle (1) is something to be very proud of. Best thing about representing your country: Listening to the National Anthem before fighting in the National Boxing Stadium in Dublin. Best way to unwind after a fight: A visit to The Monasterboice Inn for their famous steak! Best thing about being a coach: Helping others to achieve their goals.
