appy New Year everyone! The Noughties might be over but what better way to kickstart 2010 than by setting some goals – realistic ones at that! Whether it’s joining the gym or starting a new course, the options are endless. Here at Essential we’re still deliberating our New Year resolutions, but that’s not the case for some of E’s readers who reveal theirs on pg 15. This month, E chats to comedian Brendan Grace ahead of his TLT performance (see pg 12). Also, former Republic of Ireland defender Gary Kelly reveals his best childhood memories on pg 46. While fitness regimes and diets are at the forefront of most people’s minds this January, Laura Armada of Labfitness questions the benefits of expensive detox products on pg 28. Our competitions this month are better than ever with a holiday to Morocco up for grabs and a midweek break in the g hotel, Galway. Where do you get the inspiration for your material? Sometimes every day events and current affairs and various observations on life in general. Also, occasional observations at the expense of my family and my dear wife, Eileen. The crafty schoolboy ‘Bottler’ is one of your most famous characters, but which of your alter egos do you enjoy playing the most? I dearly love playing Bottler (pictured right) the naughty Dublin schoolboy who was really me in my school-going days. I also love playing the drunk ‘Father of the Bride’ which is my most requested piece. What is your most memorable performance to date? I think my return to the Gaiety in 2001 after an interval of a few years was very memorable because the seven-night run was pre-sold in record time and I got a wonderful welcome back to my native Dublin.

Who is your biggest influence? There were many in the comedic field. I really loved and admired comedians such as Tommy Cooper and Les Dawson in Britain; Jackie Gleeson and Jack Benny in America and Hal Roach and the late Jimmy O’Dea in Ireland. What is the proudest moment of your career so far? There were many. But the one that probably stands out was receiving the ‘Entertainer of the Year’ award live on my Sunday night TV series over 20 years ago. You once appeared in an episode of Fr Ted, are you planning any more TV work? I love to appear occasionally on talk shows such as the Late Late Show and, indeed, if a suitable offer came up to play in a TV sitcom I would be interested. You’re residing in Florida with your family – could you see yourself ever returning home to Ireland to live? Ireland is still my first love and will always be. My own people are warm and generous and I could definitely return to live permanently in the future. The climate in Florida is nice though, particularly in the winter months. In all your years in showbiz, have you ever been star struck? Yes, when I first met Frank Sinatra. We formed a great relationship and I worked with him regularly. I would describe him as the ultimate professional. God rest his soul. ell, the festive season has passed, and here we are in the new year, contemplating our lives. The question being: Is your belly bottom in the same place as it was before the season of over-indulgence? If you have emerged from 2009 fighting fit and still fitting comfortably into your jeans, then very well done! If, however, 2010 finds you searching for your emergency tracksuit bottoms (the huge ones at the back of the wardrobe) then you are not alone. Help is at hand; at this time of the year papers and magazines are crammed full of new diets, celebrities-turned-fitness instructors dvds… and they all tell us to detox. So, should we detox? There are so many expensive products and plans on offer; Seven-Day Detox diets, nutritional supplements, scientific-looking kits containing herbs and exotic ingredients. They claim to eliminate toxins that have built up within our bodies and many contain ‘diuretic’ herbs to encourage urination, and get rid of them. This all seems like a good idea, especially if we feel sluggish or guilty about overindulging. But the problem is that there is little scientific evidence that these things really work, other than making us think that we are doing something healthy. The massive diet and nutrition industries have created yet another myth, the Detox Myth, encouraging us to spend money on pills, treatments, spa breaks, books etc, but the benefits of the products are questionable, and the claims are not supported by science. Each day, normal bodily processes (even in stressful situations) produce ‘toxic’ chemical products which the body then uses, breaks down or excretes. If you eat plenty of whole foods and fruit and vegetables, stay hydrated, and exercise regularly, your body will work efficiently to metabolize and deal with bodily and environmental chemicals, but this needs to be worked at every day of your life; and that is the naked truth. Most people just don’t want to hear it; it seems like too much hard work and that is why the quick-fix industries exist. They are selling us the belief that we can behave exactly how we wish, and then spend money to make it better quickly and without sustained effort. 28

detox myth

Are you feeling sluggish after the season of over-indulgence? If so, don’t waste your money on expensive quick-fix solutions, says Laura Armada of Labfitness, Greenshills So my new year message is to reject the detox mentality! How much difference can a seven-day plan really make? Our body has many different rhythms and processes, some taking hours, some taking months; changing your life drastically for a short time will never give a lasting benefit. Be kinder to yourself, and take some time to consider how you can be more healthy, then set yourself an achievable goal each week. For example, week 1-5 drink 1.5 liters of water each day; week 2 - snack on fruit; week 3 - find an exercise partner and join a fitness class; week 4 do 50 crunches per day. Healthy living is about making gentle and sustainable changes to our diet and lifestyle, allowing our body to adapt, and our tastes to adjust slowly, until eating well and exercising becomes a regular and normal part of everyday life. This is the true path to a long, productive and quality life, something that you cannot buy in a box, however much money you spend. Remember, the sculpted celebrity stomachs you see in magazines are often exactly that; sculpted through liposuction and tummy tucks, toned through punishing regimes of over-exercise alongside depressing diets and plastic surgery. Yes, you probably know people who sport effortlessly beautiful bellies, but that does not make it the norm. It is extremely important to aim for a healthy body weight, but it is difficult, disheartening, and possibly dangerous to aspire to the celebrity physique. Keep it real and aim to stay healthy. 1. Leg stretch Begin by lying flat on the mat but with your legs extended toward the ceiling. Lengthen your spine, pull in your abdominals, and curl your chin and upper body up off the mat. You will maintain this upper body lift throughout the exercise. Take your right knee towards your chest. Stretch your left leg out at a 45 degree angle. Keep switching from leg to leg. Repeat 10 to 12 times.

2. Plank Begin on your knees. Place your hands on the floor in front of you. Your arms are straight and elbows are not locked. Engage your abdominals and lengthen your spine. Align your shoulders directly over your wrists. With your abdominals lifted, extend your legs straight behind you (pictured). Breath in and breath out, but always keep your abdominals engaged. Aim to last 45 to 60 sec.

Chocolate Log with Baileys Cream and Homemade Raspberry Ripple Ice-cream Ingredients Chocolate Log 3 whole eggs 90g sugar 90g flour 40g cocoa

Coating 150g melting chocolate with 50g cream Baileys Cream 125ml whipped cream

Method 1. Whisk eggs, sugar and fold in the flour and cocoa. Pour mixture onto a lined baking try and bake at 180C for 12 minutes. Remove from oven and allow to cool. 2. Spread with cream and chocolate; then roll very tightly and place in the fridge.

3. For the ice-cream, heat the milk and add the egg yolks, sugar, vanilla pod, raspberry sauce and raspberries. Place in an ice-cream machine for 15-20 minutes and place in the fridge. 4. Remove log from fridge, coat with chocolate and cream and serve with icecream, whipped cream and garnish.

Succulent Pearls of Melon with Honey, Mint, Cream & Berry Sauce Serves 4 Ingredients 1 melon 6 mint leaves 2 teaspoons of honey 250ml cream Sauce 1 punet of strawberries 100g icing sugar

Method 1. Puree strawberries with sugar, pass through a sieve and refrigerate. 2. Skin melon and remove the seeds. Use a melon cutter or just dice. 3. Whip up cream, add the honey and mint. 4. Mix melon with flavoured cream. 5. Serve in a glass topped with mint leaves and serve chilled. This can be done in advance.


Roast Venison with Fondant Potato, Poached Pear, Cherry Tomatoes and Asparagus Tips accompanied with Homemade Venison Pie (4 portions) Ingredients 1 loin of venison (approx 12oz) 1 punet of cherry tomatoes ½ kilo potatoes 1 bunch asparagus 4 pears 100g sugar 1 cup gravy mix

2 drizzles olive oil 1tsp mixed spice 1 small packet of rolled puff pastry 100g carrots 50g onions 1 turnip Mixed herbs

1. Cut potatoes to any shape and cook for 10 minutes. Then throw into hot pan and add the tomatoes and asparagus. 2. Peel the pears and poach in water and add a little sugar. 3. For the pie; dice 4oz venison, carrots, onions, turnip and mixed herbs. Mix with gravy. Place in small dish and top with puff pastry and

bake in oven at 180C for 10 minutes. 4. Seal the remainder of the venison in a hot pan with seasoning and mixed spice. Place in the oven for six minutes and cook. 5. Serve on top of a garnish with the potatoes, pear, cherry tomatoes and asparagus tips. 6. Place the hot pie on the same plate and add a little gravy mix left from pie and serve.

Business All the very fundamental lessons in life I learnt from my mother Mary and father Peter, growing up on the Windmill Road. I think the most important one is ‘do your business with integrity and honesty’. This ensures that continuity of your business model is built on a solid foundation of trust and honesty. If you maintain these principles throughout your life you will not get into too much trouble.

What was your first job and how much did you earn? My first job was as a trainee accountant and my salary was a very large £1 per week for the first six months, and then moved to £5 per week out of which I had to look after food, etc. What does your current role entail? I am the Managing Director of Gleeson Group. This company employs 680 people with a turnover of €230 million in 2009. As Managing Director the buck stops with me. This last year has been a very difficult one in business and it called for some really difficult decisions which were not pleasant for anybody. We are a national organisation with six factories and 10 distribution depots throughout Ireland. My function, essentially, is to formulate policy and then ensure that it is implemented.

Has the current economic climate changed your spending habits? Personally not a lot, but it certainly has changed my spending habits in business.

What is the most valuable lesson you have learnt over the years?

What was the last thing you ‘googled’? I only use the Internet and Google for business and it was probably looking up some name to find a contact number. Do you twit? Absolutely not.

Is there any technology you refuse to use? No, not at all. I believe you have to embrace all technology of value – value being the key word. What mobile phone do you use and what network are you with? A Blackberry and I’m with O2. Do you have a mantra in life? Never forget where you came from and always know your station in life. Where do you see yourself in 10 years? Hopefully, alive and well and still chairman of a bigger and more successful Gleeson Group.

I spent a lot of time preparing and re-spraying this car under the guidance of my friend Kieran Carr. How old where you when you passed your driving test? I was 19 when I passed my driving test – at first attempt – though I nearly knocked down a cyclist on my test run. What’s the best car you ever drove? I have driven a Subaru WRC on a rally track and was amazed at the handling and control at speed. What’s your dream drive and why? A Ferrari F40 – I think Ferrari make the

How often do you change your car? Every two years. Although I think that may be extended with my current car. Who is your insurer? I am insured with the AA as I get further discounts on membership and travel insurance.

road racing? Track racing – I like to watch Valentino Rossi in action. It’s brilliant TV. What is your favourite race meet? I’m not into racing but if I had to choose one it would be the Ulster Grand Prix. My father took me there from 1966-1972 and I got to see all the famous riders such as Agostini and Mike Hailwood. Who is the greatest racer ever? Joey Dunlop. He won all the Isle of Man TTS and he was a man of the people. Both him and his brother Robert were down-to-earth fellas. Would you have any suggestions for the RSA to improve safety for bikers? Take all the cars off the road! A lot of the accidents on our roads are by people being overconfident. It’s all in the training, we’ve got to keep going with the training.

‘I’m in shock,’ declared Aislinn Trodden, when was told she had won the Globe Travel/ Topflight ski holiday to Bulgaria. Only the week previous, Aislinn, from Grange Rath, had taken her fiancé Joe Healy to the Stillorgan Ski Centre, Dublin as a surprise for his birthday.

‘We went skiing last year and absolutely loved it,’ she says. ‘Because we couldn’t go again this year, I arranged for a group of us to go to the Ski Centre. ‘Now no-one will believe me I’ve won the ski holiday! I’m just so happy – it’s amazing, thanks so much.’
