Whether it’s to support such a worthy cause (Irish Cancer Society) or because you’ve a passion for fashion, the Daffodil Day Fashion Fair on March 10th is an event not to be missed. Drogheda man Geoff Fitzpatrick is on a mission – to get 1,000 runners to participate in the Boyne 10K run! Locals are being urged to put their best foot forward on May 2nd in aid of humanitarian aid organisation GOAL. A dedicated runner for the last 20 years and current member of Drogheda & District Athletics Club, Geoff was keen to combine running and fundraising for the poorest of the poor in the Developing World. ‘We have been overwhelmed by the positive response we have received from the people of Drogheda and we are looking forward to hosting a great sporting event in the beautiful Boyne Valley,’ said Geoff. ‘We are also hoping to raise lots of funds for the essential work GOAL do in Africa, Central America and India.’ Entry fee costs €35 and 100 per cent of that will go directly to GOAL. TV chef Jamie Oliver rubbed shoulders with our own Frank Godfrey recently when the councillor accompanied his friend Catherine Murray, from Tallanstown, to an exclusive Gala Dinner in the Grosvenor Hotel, London. Catherine was rewarded for her amazing contribution to the chef’s new business venture, Jamie at Home, which she joined in August 2009. She is now one of 2,300 consultants around the country who are holding Jamie at Home parties, selling the exclusive Jme kitchen and homeware collection. Goodbye Cinders, hello Aladdin! This year’s panto, Cinderella, is not long over but already producer Paul Henry is preparing for 2011’s show, Aladdin! Historic walk

Star quality One pub which is aiming to have the X Factor this month is the Star Bar on Trinity Street. The newlyrefurbished bar is under new management and to celebrate its grand opening, a Sex & the City themed night will be held on Saturday, March 6th. The ladies will have to control themselves though as it is hoped that Olly Murs of X Factor fame will make an appearance on the night. If you didn’t know it already, the Star Bar is open Thursday-Sunday and all drinks are just €3. The function room has also been revamped and for just €399 you can get room hire, DJ, security, late bar, food as well as a Limo to pick you up at home and bring you to your party. Now that’s what we call style!

Legendary RTE broadcaster Donacada O Dualing will lead a walk from Slane to Monasterboice on Sunday, March 21st, as part of the Irish Wheelchair Association’s 50th birthday celebrations. Locals are asked to come out in support of this ‘Journey to Rome’ walk which retraces the route taken by the Irish earls during the Flight of the Earls. It is unlikely that any other group has done this before. All help greatly appreciated.

Charity shave

It will be a close shave for the men of Drogheda on Friday, March 26th when a charity head or beard shave (even a wax!) takes place in McPhails. The fundraiser is in aid of Cystic Fibrosis and admission is €10 on the night, with music by The Sopranos. Meet the ladies behind Drogheda’s Daffodil Day Fashion Fair which is still going strong after 16 years Interview: Carmel Riggs

W

hen Lizanne Allen and Colette Byrne’s close friend, June McCullough, died of cancer aged just 34, the Julianstown mums were determined it wouldn’t be in vain. They had already been involved with the Irish Cancer Society’s Daffodil Day, but it seemed no amount of fundraising could reach the €10,000 mark. They needed to think of something bigger and better! It was thanks to a suggestion by Lizanne’s sister, Linda Welsh, that Drogheda’s biggest fashion extravaganza, the Daffodil Day Fashion Fair, was born. That was 16 years ago with the first fashion show being held in the Rosnaree Hotel before moving to the Westcourt Hotel two years later. ‘June’s death spurred us on,’ says Lizanne. ‘When she got ill there was no such thing as home care as we know it today – nothing to facilitate her dying at home. That’s why all the money raised from the fashion show goes to the Homecare Nurses. ‘Thankfully, the show has gone from strength to strength and last year we collected about €75,000 between the show and selling daffodil pins on the street. ‘The people of Drogheda have been very good to us and it’s thanks to our loyal supporters, from 14 14

the businesses in the town to the patrons who attend the show every year and the models who give up their free time, that the show has been so successful.’ The ladies commend the other hardworking committee members – Stephanie Turner, Edeltraud Kyke, Mary Convery and Karen Healy– for their dedication to the cause and also all those who have contributed over the years. Lizanne says: ‘Colette and I started out together and we’ve met some fantastic people over the years and made many great friends. We wouldn’t dream of giving it up. ‘People need something to cheer them up, especially now in these gloomy times. But I feel sorry for the businesses that supported us for years and now they’re gone – it’s scary. ‘We’ve been running for 16 years and it would be a shame to stop it now. After all, there is still a huge need for these cancer services which our funding goes towards.’ One of the particular attractions of the show, which takes place on March 10th in the Westcourt Hotel, is that all the fashion models are local so you can be sure to spot someone you know on the catwalk! ‘Some of our models have done it for several years but we are always looking for new faces,’ adds Lizanne. ‘From mini-celebrities strutting their stuff to the infamous Ken Martin who started out as a groom and is now

the father-of-the-bride, it’s always an entertaining night.’ Among the fashion houses who will be displaying their wares will be Francelles, Pamela Scott, McKenna Man, Shanique, The White Door, Unit 1, Esprit, Marks & Spencer, All About Brides, Bella and The Golf Bag among others. In the foyer, the Motivation Clinic, the Design Gallery, Gosh Cosmetics, Boots and the White Door will each have a stand. Thanks go out to Beverage Business Solutions, the main sponsor, KMK Recycling, the Westcourt Hotel as well as the Laurence Town Centre which has donated the star prize for the raffle– a free car park space in the Laurence Centre for one year. Standard tickets to the show cost €25, including light buffet supper, however anyone wishing to upgrade should consider the gold ticket or silver ticket options. A gold ticket costs €75 and includes dinner, glass of wine and a reserved seat at the show; while the silver ticket costs €45, including a finger food dinner, glass of wine and reserved seat at show. Tickets are available in the Westcourt Hotel and the Laurence Town Centre.

Catwalk queens

I

t will be a night to remember for three local ladies when they take to the Westcourt’s catwalk on March 10th. Between them, Aveen Toner, Gillian Plunkett and Ruth Flynn have lost more than 15 stone and now they want to share their success with others. The trio have been attending the Motivation Weight Management Clinic on Fair Street and haven’t looked back since, each describing it as a ‘life-changing’ experience. ‘Having been on every single diet all my life, it’s changed my life,’ says 52-year-old Aveen Toner, who went from a size 26 waist to a size 12. ‘To me, the Motivation Clinic is not just about being weighed, it’s about checking in and seeing how your motivation lies. If I had a really hard week, I’d sit down and talk about it with my consultant Barbara Gaynor who I now consider more of a friend than anything else! It’s not all about

t was no accident that Gemma McGuinness paved a career for herself in retail. The proprietor of Jacqui’s boutique on Laurence St, has always had a passion for fashion and before opening her own shop in the town 17 years ago, had put in years of hard graft working in various clothing stores, including GayWear (now known as A-Wear). ‘I love this business,’ she says. ‘I always did, from when I was a child and although I’m here 17 years, it only feels like five.’ When Gemma took over Jacqui’s she inherited an older clientele but these days she caters for a wide range of age groups. ‘Our market is aged 30 upwards with special occasions and weddings being our speciality,’ she says. Jacqui’s stocks a vast range of top labels including Linea Raffaeli, Fee G, Molly Jo, Frank Usher, Dusk, and Louis Civit. Together with her sales assistant of 10 years, Breda McNally, Gemma goes out of her

way to put customers at ease when they’re looking for something special. She adds: ‘Some people are very nervous, especially some mothers of the bride or groom. They’re not used to dressing up and they’re afraid we’ll try to push something on them that might not be suitable. ‘But it’s our policy in the shop for our customers to be happy than to gain a sale.’ Gemma also pays tribute to Breda McNally who is much-loved by their customers. ‘Breda is always patient and will go over and above to help in any way,’ she adds. Despite the obvious downturn in the retail business locally, Gemma admits the current season is very positive for Jacqui’s. She says: ‘I’m a long time working in the town and when I first opened it took a couple of years to really take off. ‘But every day of the week is a learning lesson. You can never stop working at it and it’s important to keep changing things around.’

ou get up in the morning with the best of intentions after having porridge and a herbal tea for breakfast. Then at work someone offers you a biscuit at coffee break and you think, ‘What harm can a biscuit do?’ An hour later, your workmate asks if you want anything from the deli for lunch; you’re tired and a coffee will wake you up! You also buy a scone with it for only a little extra cents – it seems too good of a bargain, especially in this economic climate! On your way home from work you have to stop at the supermarket, meticulously avoiding the crisp section. You are waiting to pay, feeling tired and hungry. Your determination is weak and you are facing a few hours before that healthy, vegetable lasagne is ready... so you finally give into temptation at the till, where a mouth-watering chocolate bar is waiting for you. Once at home the guilt sets in, so after dinner you head down to the gym. You return home an hour later feeling happier and hungrier, surely a treat is in order? Okay, I might be exaggerating (I tend to do that a lot, I’m Spanish!), but in Ireland wherever we turn, we are presented with a vast choice of snacks, and this snacking could be the unknown reason why you have gained weight over time without you noticing it. In order to tackle the problem, we must first find out why we snack, and then do something about it...

Hunger: More often than not those hunger pangs you’re feeling really mean you are thirsty. Each time you crave a snack, drink a large glass of water, this may be what you really need, and will help you stay hydrated. Advertising: Marketing companies have done their homework and know where to place snacks in the supermarket. The ‘2 for 1’ offers are very tempting but don’t be pursuaded! Don’t be persuaded!! Write the shopping list at home (with a full belly).. plan your meals for the week and then stick to it. Make a decision that no matter what you will not buy that especial offer, nor you grab the small chocolate bar at the register.

The secret to a healthy diet is variety. Of course you are allowed to snack but only if they are the right food and in small amounts. Aim for a healthy diet containing plenty of slow release complex Routine: If you always eat nachos watching a film, or ice- carbs, plenty of fish cream when you feel down, try to replace those foods with healthier and lots of fresh fruit options such as crudités, or a fruit salad. Simon Noone weds Lorraine Clifford December 26th was a very special day for Lorraine Clifford and Simon Noone of Duleek as this was the day that they exchanged their wedding vows in Duleek Church. Lorraine had three bridesmaids by her side, Karen Dunne, Michelle Clifford and Caroline Murray. Simon had three of his brothers carrying out the duties of bestman and groomsmen, namely Daniel, Kevin and Matthew. Stephen Lambe weds Ciara Everitt Ciara Everitt from Cherrybrook Drive had always dreamed of getting married in Rome. That dream was finally fulfilled on October 5th when she married Stephen Lambe from Darndale, Dublin in The Vatican. Stephen’s sister Caroline Perry had the great duty of being Ciara’s bridesmaid, Ciara’s brother Andrew Everitt did the bestman honours and Molly Perry was flowergirl. Not many brides get the chance to wear their wedding dress for a second time but Ciara was one of the lucky ones. What was your first bike and what age were you? I was 16 years old when I got my first bike, a Yamaha 125. It was the only bike I could afford at that time and I had if for about four years.

What kind of protective gear do you wear? I always wear a full set of leathers. There’s no particular make I go for so long as they’re made of good stuff.

What do you ride now and how long do you have it? I have a few bikes but the one I ride most is the 750 Honda. It’s a trials bike and I like touring on it at the weekends.

Which would you prefer; road, track or motocross racing? Without a doubt road racing because that’s what I work at. I work part-time with Motor Cycling Ireland at the road racing and short circuit meets. It’s all voluntary and from St Patrick’s Day until September I’ll spend my weekends at competitions both at home and abroad.

What bikes would be in your fantasy garage? A nice Harley Davison – it’s like the Ferrari of the cars! As a young fella I always wanted one. My wife would be pleased too because you wouldn’t be going too fast on it. What is your preferred helmet? I wear an Arai helmet, as it’s a good reliable name and a very safe helmet. The way I see it, you’ve only one head so you have to look after it.

People not paying attention or not looking where they’re going when I’m out on my bike! Would you have any suggestions for the RSA to improve safety for bikers? As part of my job with MCI, I go to a lot of safety seminars with the Gardaí. It should be compulsory for motorcyclists to complete a training course before they sit their driving test. That’s how it’s done in Germany and the UK. Also, bike training and car training should begin at school, as part of our education system.

Green day To celebrate St Patrick’s Day, The Black Bull’s head chef, James Ausden, gives traditional Irish recipes a modern twist

H

ead chef James Ausden has been working at The Black Bull Inn for four years, heading up a talented team of 22 in the kitchen. Growing up on the island of Jersey, James has worked in kitchens from the age of 13, training and working alongside an array of international chefs. Situated on the Dublin Rd, the Black Bull Inn is a well-established venue, always striving to offer customers the best quality, value and service. ‘We never sit back,’ says James. ‘Although we

Ingredients: 500g mixed seafood (prawns, monkfish, salmon, cod etc.) 250g fresh mussels 125ml dry white wine 2 tomatoes (seeded and diced) 125g butter

Method: 1. In a large frying pan on a moderate heat, add a quarter of the butter and half of the spring onions with the garlic to gently sweat. 2. Then add the mixed seafood and cook on a higher heat for 1 minute. 3. Pour in the white wine and cover

1 small bunch spring onions (finely sliced) 1 clove garlic (thinly sliced or chopped fine) 100ml cream A few fresh chives to garnish 4 small soda farls until the mussel shells have opened. 4. Finally, add the remaining spring onion, tomato, cream and butter. Shake the pan gently so as to cover the seafood with the sauce. 5. Serve on toasted soda farls (see recipe below) and spoon over the sauce with a sprinkle of sniped chives.

For the Irish Soda Farls Ingredients: Ingredients 450g plain flour ¾ tablespoon bicarbonate of soda

1. Sift all the dry ingredients into a mixing bowl and make a well in the centre. 2. Pour in the oil and buttermilk and gently mix into soft dough. 3. Knead the dough on a floured

Fillet of Beef on Colcannon Cake with Slane Castle Irish Whiskey Cream and Vegetable Spaghetti

Ingredients: 4 small fillet steaks (8oz) 2 measures Irish whiskey 25g butter 1 tablespoon vegetable oil

Method: 1. Heat a thick bottom frying pan with the oil. 2. Season the steaks with a pinch of salt and black pepper before gently frying for 4 to 5 minutes on each side. 3. Pour in the whiskey, taking caution

200ml brown chicken stock 125ml cream 10 dried green peppercorns

of the small flambé flame. 4. Remove the steaks from the pan and set aside in a warm place to rest. 5. Add the peppercorns and chicken stock to the pan on a high heat to boil. 6. Finally, add the cream and butter and reduce to the desired thickness.

For the colcannon cake Ingredients: 500g new potatoes (peeled and diced into 2 inch cubes) 50g butter

Method: 1. Cook the potatoes in boiling, salted water until soft, then drain and set aside. 2. Heat 30g of butter with a cup of water in a sauce pan. Add the cabbage and cook until just soft. 3. Then add the spring onion and cook until the water has evaporated. 4. Add the cabbage and spring onion to the potato and roughly mash.

¼ Savoy cabbage (finely chopped) 4 spring onions (sliced) 2 tablespoons vegetable oil Plain flour for coating 5. Shape into 4 small cakes and coat with flour. 6. In a frying pan, add the oil and remaining butter and fry the cakes on both sides until golden. 7. To serve, place the potato cake on a plate and top with the steak, then drizzle the sauce around and finish with spaghetti of vegetables of your choice for added colour.

Apple and Guinness Bread Pudding (Serves 4) Ingredients: 4 sweet apples 175g caster sugar ½ pint Guinness 8 to 10 slices white bread

Method: 1. Peel and dice the apples into small chunks, about 1cm. 2. Place into a small pot over a medium heat and cook gently until juices appear. 3. Add 50g of caster sugar and start to caramelise. 4. Pour in the Guinness and reduce until syrupy. Strain off the apple and retain the Guinness syrup 5. Put the cream, milk and sugar into a pot along with the opened vanilla pod and heat gently until it’s just about to boil. 6. Whisk the egg yolks in a bowl and slowly pour over the cream, whisking

for 1 minute. 7. Line the bottom of a well-greased oven-proof dish with a layer of the bread. 8. Spoon over the caramelised apple and then another layer of bread. Repeat this again until you have 3 to 4 layers 9. Pour over the custard and leave to soak in for 5 minutes. 10. Then place in the oven for 25 minutes at 170oC until set and browned on top. 11. Add the Guinness syrup to the remaining custard mix and heat until thickens. 12. Serve the pudding warm with the Guinness custard and ice cream.

Newtown Blues Events Night at the Dogs All bets were on recently when Newtown Blues fans came out in their hundreds to support the club. Bus loads of Droghedeans made their way to Dundalk Stadium where they enjoyed a flutter or two on the dogs! A mixture of young and old

turned up on the night, including the kids from the juvenile teams, their parents, as well as the men’s and ladies teams. The club would like to thank everyone for their support, and all money raised will go towards the Development Fund.

Small Talk with Paul Hayes manager of The Barbican (St Peter’s Parish Centre)

Describe your new role? As manager of The Barbican the first big task was to get the place up and running, now that it’s complete and the centre is open, I manage the staff, bookings, finance etc. What do you hope to achieve at the Barbican? I’m not too worried personally about what I achieve. I hope while I am here that The Barbican can become a centre that the entire community can feel is their own, a vibrant place where people from all walks of life can come and meet, do classes or watch shows.

What was your first job and how much did you earn? Picking apples in a farm out near Ballyboughal. We got 10 pound a day, I worked six days a week for the summer holidays. I think I may still have that money! How would you describe your work style? Energetic, passionate, focussed and unrelenting. What are your pet hates in the workplace? People who clock in and then do nothing and complain about how bored they are

in work. I find that if you work hard the time goes faster and you have a sense of achievement at the end of the day. What is your greatest professional achievement? I am very pleased to be at the helm now that The Barbican (or the new Parochial as a lot of locals call it) has opened. It had been closed for far too long so I’m proud of the job I’ve done here to get the centre up and running. Also this year, I will be directing a new play for Upstate Theatre Project at the Drogheda Arts Festival which I am really looking forward to. Who do you most admire in business? No one business person in particular. I admire anyone who enjoys what they do. I think in the last 10 years we got overwhelmed by the people at the top and the money. If this recession can teach us anything it’s that we should have passion in what we do and not be blinkered by the money. What is the strangest business proposal you’ve ever had? An indecent one! What is the most valuable lesson you have learnt over the years? It’s something Bill Cullen talks about in his book, A Long Way from Penny Apples – ‘Say nothing til you hear more’. I could

really do with practising this and not cutting everyone off when they speak. Has the current economic climate changed your spending habits? Not in the slightest. I don’t really spend money because I don’t really need anything. What was the last thing you ‘googled’? The Irish Times; it’s pretty much what I google every lunchtime. I should really bookmark it. Do you twit? No… because really there are only a couple of things that might happen to a person in any given day that are interesting. Why people feel the need to share this with everyone else is beyond me. Is there any technology you refuse to use? I don’t really like using PCs, I’ve had a Mac for the past four years and as they say, once you go Mac you never go back. What mobile phone do you use and what network are you with? I-Phone, it links straight to my Mac, it’s great for the internet, and it has an App for just about everything. It’s just a pity that everyone who has one feels the need to take it out in the pub and show it off. Do you have a mantra in life? A mantra? Like something I repeat to myself all the time? Eh… no I don’t have one of them! Where do you see yourself in 10 years? Very hard to say, I seem to move town or job every three years. But I am happy where I am so maybe I will still be in Drogheda and running The Barbican, by that stage they may even make me a Bishop!

o Green for Drogheda’ – that’s the message being sent to locals this St Patrick’s Day. More than 30,000 people are expected to take to the streets on March 17th for the 24th annual St Patrick’s Day parade. A great family day out is promised with a colourful array of floats, marching bands and community organisations taking centre stage. This year’s Grand Marshal is Oliver Murphy, founder member of the Irish Wheelchair Association, Grand Marshall Oliver which Murphy and his family celebrates its 50th ‘

anniversary this year. Parade director Isabel Sanroma, said the parade ‘is about the community for the community’ and she appealed to the business people of the town to fly the flag and decorate their windows. She said: ‘This is our 24th year in organising the biggest festival in Drogheda. We would like to acknowledge our main sponsor, Beverage Business Solutions (CocaCola), as well as Drogheda Borough Council and Cassidy’s Funfair.’ Parade PRO, Frank Godfrey added: ‘We welcome a range of entrants on the day; you can be colourful, historical, individual, funny, musical, entertaining! Make sure your float will have maximum impact and Go Green for Drogheda!’ The parade will start at 12 noon from the top of the North Road (outside the O’Raghallaigh’s GFC grounds). Everything with professional golfer

Des Smyth Best thing about being a professional golfer: These last 35 years have been an amazing experience. I started professional golf when I was 20 and I’ve been living out of a suitcase since then. Along the way, I’ve met some fantastic people, both in sports and in business. Best course you ever played on: Carnoustie in Scotland. I like it because it’s a very challenging course, very difficult. One thing’s for sure, you won’t fall asleep playing in Carnoustie.

Best advice you ever received: I remember a very famous amateur golfer, Joe Carr, once telling me, ‘never underestimate the Baltray amount of rest needed in order to perform well.’ I think this was very good advice indeed. Best thing about living in Baltray: It’s a nice, quiet place to live and unlike some other areas it’s not so overdeveloped. Of course, it helps that the people are very nice too!

Best childhood memory: I have so many I couldn’t possibly pick one! Over the years I would’ve done all my reading on my travels. My favourite read though is a book called A Short History of Nearly Everything by Bill Bryson. Best film: There’s an old classic, Casablanca, which I love. Humphrey Bogart and Ingrid Bergman star in it and I’ve always loved sitting down to watch it. Every time it comes on, I can’t switch it over! Best hideaway: My home in Baltray! It’s my haven where I can be left in peace.
