I’ve never overplayed it and even at the height of my success in the early Nineties I always had time in between to gather my thoughts and decide where I wanted to tour.
Mary Black’s voice has been wowing audiences around the globe for 27 years. Content with her lot, the No Frontiers singer tells Carmel Riggs why she’s only too happy for her children to follow in her footsteps music and I often meet up with Seamus Begley in Kerry and my old pal Steve Cooney. You’ve featured on Hollywood actor Steve Martin’s album, The Crow. Are there any other musicians you’d like to perform with? I love Bonnie Raitt, she’s an American country rock singer. Also, Tony Bennett – he’s an amazing singer but he’s getting a bit old now so it looks like it won’t ever happen! What’s your favourite method of relaxation? Gaelic football – I love watching GAA. I also like to chill out by reading a good book, with a bit of music in the background. Where do you like to escape from it all? I love Tuscany – we were there earlier in the year. But Kerry is a good spot, it’s my first port of call when I want to get away from everything. You look fabulous – how do you stay in shape? With difficulty! I think when you get to a certain age it’s harder to maintain your weight. I try to go to the gym when I can and I also try to walk. I’m not a savage eater though so I suppose that helps! trip to Clogherhead’s Little Strand beach wouldn’t be complete without a visit to Villa Rose Boutique. Ideally situated on the Main Street clients are urged to shop at their leisure without feeling pressured into making a purchase. According to proprietor Mary Lynch who opened the boutique 11 years ago the secret to her success is she likes to make it personable. ‘I have a great clientele and even in these bad times I’ve held onto customers,’ she says. ‘That’s partly due to the fact that I’ve got to know what my customers like and I try to keep that in mind when I’m buying my stock. ‘My forte would be to listen to the needs of customers. At the end of the day it’s the customers who dictate the trends – not the glamour magazines!’ Villa Rose’s clothing this season range from smart, casual to evening wear and high fashion. Mary sources beautifully cut labels from Spain, France and Germany including Marc Aurel, Kapulua, Gerard Darel, Cocomenthe, Jota Mas Ge and Caramelo. The most popular seller is the Michele trousers with customers coming back year in, year out to get their hands on a pair. ‘The quality of this line in particular is great but it’s the style and cut of the trousers that clients love,’ adds Mary. The boutique caters for all ages, from 25 years up to 75 and only carries one size in each style so the chances of bumping into someone wearing the same dress are slim! Villa Rose is open Thursday and Friday, 3-7pm and Saturday and Sunday, 2-6pm.

Make-up artist Emma Woods recreates the runway’s Favourite look – the smokey eye
I
f I had a euro for every time I’m asked how I do smokey eyes I’d be a very rich woman! But before you even attempt to try it, it’s important to know which smokey eye suits you best. What I mean by this is do you prefer a full-on black smokey look like Taylor Momsen, or the more subdued blend like Kim Kardashian, Kate Moss or Penelope Cruz? This month, I’m going to create a smokey look which is a runway favourite. Simply follow these steps and customise the technique to suit your taste…

I like to finish off any black smokey look with a little of the eye shadow under the eye. It really gives the look the sizzling finish it deserves! Apply the black pencil right onto your waterline, or under if you prefer. With a small eye-shadow brush (MAC brush#228, €25, from MAC counters), pick up a small amount of black/ grey eye shadow and again matte this over the pencil, right along the waterline. Now take your blender brush from before, and blend the pencil and the black together. Pull the bottom of the eye down slightly so to give you more space and carefully blend back and forth.
Emma’s Top Tips • Apply your foundation after your eyes are complete as this allows you to wipe off any excess eye shadow without ruining your face! Alternatively, pack loose powder onto the cheek as this will catch any fallen eye shadow and can be easily dusted away.
• A nude lip is usually teamed with smokey eyes however I always like to try a few colours before deciding to go nude as it does not suit everybody. Deep plums with a smokey eye can look quite gothic and vampish, as too can a red cherry lip.

Stephen Hoey weds Jane Gibney The 19th of June last was an extremely sunny day, much to the delight of newlyweds Jane Gibney and Stephen Hoey. They were married in the Church of Our Lady of the Assumption, Tullyallen in front of many close family and friends. Jane looked stunning in her dress by Edel Tuite Bridal Design, as did her three bridesmaids, her sister Mary Gibney, Karen Hanley and Emma Quinn. Bestman was Anthony Hoey and the two groomsmen were Shane Fitzpatrick and Richard Mulroy. A reception was held in Trim Castle Hotel were Deco 5 entertained the guests. Elvis fan Stephen dressed up as the King later in the night and even belted out a few of his hits! En route the newlyweds stopped in their local, Gibney’s, for a quick congratulatory drink with the owners. Bridesmaids were Megan O’Donnell and Nicola McGale while Gary Fogarty and Rory Brennan helped the groom on his way! David Whelan weds Traci Tiernan Up to 64 family and friends travelled to Italy to witness the nuptials of Traci Tiernan and David Whelan. The Drogheda man swept his beautiful Dublin bride off her feet in Rome on June 26th. Traci had four bridesmaids in total – her two sisters Susan and Veronica and her friends Lynn Walsh and Maryrose Maguire. The bestman was Brian Whelan and the groomsmen were Allan Hanratty, Brian Gray and Gearoid Byrne. The flowergirl duties went to Rachel Compagno and the pageboy was Joshua Tiernan. Dean O’Donoghue had the great honour of being ring bearer. It was a truly memorable day but the icing on the cake was the arrival of their friends Fab and Trudi, who had been travelling through Asia but went to Rome to surprise them. The happy couple continued their stay in Italy for their honeymoon.

Drive Make: Vauxhall HC (Blydensten Viva) Engine: 2.3L It’s a very special car as it has a dry sump, fuel injected Lotus engine. How long do you have it? It was built in 1972 for the ’73 season and was driven originally by Des Donnelly who was the Irish Saloon Car Champion. My husband at the time Philip de Fraotor bought it in 1974 as he knew I had my eye on it! We were living in South America at that time so we shipped it over immediately. It was very successful and very quick in its day. What was your first car and how old were you? Nobody gave people cars when I grew up! I drove whatever my father had at the time. When I lived in London I had a little jewellery stolen so from the insurance I bought an Austin Healy Sprite which cost around £350-400 – it had a special engine but it still wasn’t quick enough for me. I started my racing at Brands Hatch outside London around then. How old were you when you passed your driving test? I didn’t have to pass one here as there were none at the time! I took one in England in the early ’60s and passed first time. I drove appallingly badly and I still managed to pass it! That tells you what I think of driving tests…

Gabriel DeFreitas of Beaulieu House has a very established career in motor racing under the name of Gabriel Konig. Achievements in the late ’60s and early ’70s rank her in the top two Irish lady drivers car broke badly and hit a tree at Hockenheim in Germany. It was a hell of a circuit and in those days motor-racing really was dangerous. Louis Hamilton is getting close to him though... Do you use a Sat Nav? No and I don’t need one, thank you! I got around Ireland when there were no sign posts whatsoever. I used to take Ordinance Survey maps with me and I managed perfectly! How do you find driving in Drogheda? Very irritating – the one-way system is most annoying because I can’t get from the east side of Drogheda to Dyer street without driving up to the St Mary’s side of town and going up Shop Street!
If you could pick anywhere in the world to take a trip on your bike where would it be? I’d fancy a trip across Holland or France to any Moto GP in Europe, as long as we keep away from motorways, they can be boring. Why do you think there are not more people riding bikes? Many people think biking to be a scary and uncomfortable way to travel, but with good training and the right gear it can be a fun and satisfying pastime and a great way to meet people. Would you have any suggestions for the RSA to improve safety for bikers? The RSA are doing a great job trying to encourage new riders to arm themselves with good skills and road knowledge in recent times. It would be good to see more TV ads in connection with bike safety and awareness to other road users. Bikes are small on the road and hard to see. In the second of a three-part series, web designer Jonathan Callan explains the process of choosing a design for your website
T
here are a lot of options available when you go looking for a website design. The obvious one is to simply hire a web design agency and get something custom designed. This is the best option if you have very specific branding or design requirements but for many it may actually be overkill. If all you need is a web presence without anything very specialised then there is another option called a ‘design template’. These are designs created by specialised companies that are either free or sold for just a few euro. Several people may use the same design so the downside is that it’s not 100 per cent unique to you. That’s not really going to be a problem because the chance of anyone stumbling across two websites with the same design is massively unlikely. I’m going to use the Wordpress content management system (CMS) to manage our website. To begin with we need to get our design, known in Wordpress land as a theme. The first place I’d suggest taking a look is within Wordpress itself. Login to your control panel, usually located at http://www. (your-domain)/wp-admin. The Username and Password would have been chosen when you were installing Wordpress. It’s around now you’re probably wishing that you’d written them down. When you find them, login and click ‘Add New Themes’ in the ‘Appearance’ panel (pictured left). Under the page heading called ‘Install Themes’ there are three links, Featured, Newest and Recently Updated. Click into each one and see if there are any themes you like – they’re all free to use. If you find one just click on the ‘Activate’ link and you’re done. If you don’t find anything there don’t worry because there are loads of sites that sell Wordpress themes. Three of my favourites are Theme Forest (http://themeforest.net/ category/wordpress); Woo Themes (http:// www.woothemes.com) and Template

Monster (http://www.templatemonster. com/wordpress-themes.php). If you decided to buy your theme then there are a few steps needed to get it installed. Back in Wordpress, click on the ‘Add New Themes’ link again then click on ‘Upload’ – located underneath the main page heading. ood light can alter the apparent size of a room, enhance good features or diminish ugly ones. It can add glamour, sparkle and drama, or a warm comforting glow, at the turn of a dimmer switch. Lighting is as essential to the success of a room, as it is to a theatre or a film, yet it is often the least planned of all decorating elements. For an effective lighting system that will provide comfortable light at all times, a balance must be struck between the two types of light – natural and artificial – with one discreetly boosting the other whenever possible. During each phase, the interior of a building will look subtly different, so it is therefore useful to see a room in as many lights as possible before deciding on the colour scheme and furnishings. When planning your lighting scheme bear in mind that nothing is more unpleasant to look at or as dangerous as an electrical socket with multiple adaptors and cables trailing across the floor, so it clearly pays to think ahead. Before you embark on your selections consider these points:

1 What type of lighting would be most appropriate for each activity? Is the storage associated with these activities well lit? Starter Seared Scallops with Chilli
Ingredients: 8 fresh scallops 2 tbsp olive oil 2 tbsp garlic butter, melted
½ tsp dry chilli flakes 2 lemon wedges Season with salt/pepper
Method: 1 Rinse scallops and pat dry. 2 Warm a frying pan over medium-high heat for at least 1 minute. While the pan is warming up, use a paper towel or clean tea towel to gently dab any remaining moisture from the scallops. (Tip: The scallops must be very dry before frying in order to achieve a good sear.) 3 Add 2 tbsp oil to the frying pan and swirl around. Gently place the scallops in the pan, leaving enough space between each one so you’ll have room to turn.

he Salthouse started from humble beginnings five years ago as a small cafe. To boost trade, sandwiches were delivered door to door and slowly customers began trickling in. One of the biggest hurdles however was overcoming the misconception that the Salthouse was a backpackers’ joint with the Greendoor occupying the neighbouring building. ‘Still today customers comment that despite all the good reports they heard about the Salthouse, they were too afraid to come in as they believed it to be a backpackers place,’ says owner Justin Stubbs. ‘The first three years were tough going as the staff consisted predominantly of my wife, Signe and I. In the fourth year we expanded to an evening restaurant on one night per week which included live music. Despite an unconventional menu void of chips evenings proved popular and were increased to three nights.’ These days the Salthouse serves breakfast, lunch and dinner seven days per week and has built up a loyal customer base. The menu is still unconventional with Kangaroo, Crocodile and Ostrich – and customers may find themselves being talked into drinking an 8.5% Duvel beer instead of the Carlsberg they ordered! Live music has been expanded to include midweek and weekend sessions featuring the best of local talent. Justin adds: ‘Excellent staff has certainly eased the pressure, but there are always new challenges. If you do choose to venture into the Salthouse, be warned... a quiet dinner may end in dancing with people you have never met!’

Ingredients: 50g bitter cocoa powder 180g plain flour 1½ tsp baking powder Pinch of salt
Chocolate Beetroot Cake 250g caster sugar 300g cooked fresh beetroot 3 eggs 200ml corn oil 1tsp vanilla extract
Method: 1 Heat the oven to 180C/gas mark 4. Butter and flour an 18cm (7in) round or square cake tin. 2 Sift the cocoa powder, flour, baking powder and salt into a bowl. Mix in the sugar and set aside. 3 Purée the beetroot in a food processor. Add the eggs, one at a time, then add the corn oil and vanilla and beat until smooth. 4 Make a well in the centre of the dry ingredients and pour the

& Garlic (Serves 2) 4 Allow the scallops to cook undisturbed for at least 2 minutes (trying to turn them too early will cause the skin to tear). Larger scallops may take as long as 3-4 minutes per side. While scallops are cooking, season with a pinch of salt and black pepper. 5 Use a spatula to gently turn the scallops. The scallops are done when both sides have a nice crispylooking crust and are firm to the touch. Also, you will see them ‘open’ slightly, as though they are going to flake. 6 Add garlic butter and sprinkle with dry chilli flakes. Remove pan from heat and allow to stand for 2 minutes. 7 Plate scallops and drizzle with garlic and chilli butter. Serve with green leaf salad and lemon wedge.
Kangaroo Fillet with Red Wine Jus Ingredients: 2 x 480g kangaroo killets 4 tbsp peanut oil Method: 1 To cook kangaroo, heat an oven proof saucepan on stove and then add the oil. Avoid the smoking stage as this is a sign that the unsaturated oil fractions are converting to undesirable trans fats. 2 Place the kangaroo in the pan and cook for 2 minutes on each side. Place pan with kangaroo into pre-heated oven and cook for 5 minutes at 220C. 3 Remove pan and serve with Red Wine Jus (see right), your choice of potato and green salad.
(Makes 10-12 pieces) beetroot mixture into the well. Lightly mix, using a rubber spatula, and pour into the prepared cake tin. 5 Bake for 40 minutes, or until an inserted skewer comes out clean. It won’t rise a great deal and the top may crack a bit. Allow to cool a little before removing from the tin, then leave to cool completely on a wire rack. 6 To serve, dust the cake with icing sugar or bitter cocoa powder, and cut into generous slices.

Red Wine Jus Ingredients: 6 shallots 1 tsp fresh or dried rosemary 1 cup red wine 5 tbsp unsalted butter Salt and pepper to season Method: 1 Finely chop shallots and gently fry them in a knob of butter until soft. 2 Add red wine and rosemary. 3 Bring to the boil then take the heat down to a slow simmer. 4 Simmer uncovered for around 15 minutes, or until the volume has reduced by half to two-thirds. 5 Cut butter into tablespoon-sized squares. Add one at a time and whisk vigorously while each lump melts. Allow each lump to fully melt before adding the next. 6 Once the last lump has been added, take the jus off the heat and season with salt and pepper.

Wine is fermented grape juice so why do wines taste different? I like to compare grapes to apples. A Granny Smith apple has a very different taste to a Coxs’ Orange Pippin or a Russet. Each grape variety has distinct characteristics resulting in wines which taste different to each other.

I don’t know the answer to this but I imagine, like me, you have probably encountered Chardonnay, Sauvignon Blanc, Pinot Grigio, Merlot, Cabernet Sauvignon and Shiraz (or Syrah as the French call it). But what about Chenin Blanc, Riesling, Semillon, Viognier, Muscat, Melon de Bourgogne, Clairette, Muscadelle, Pinot Bianco, Grenache, Macabeau, Airen, Aligote, Verduzzo, Fiano, Falanghina, Malvasia, Greco di Tufo, Verdicchio, Cortese, Inzolia, Vermentino, Pecorino, Cocociola, Prosecco - and that is just some of white varietals.
Other factors Often some of my customers will be amazed that a wine will taste different from one made from the same grape variety a few kilometres away. This is because other factors such as soil, climate and wine making philosophy come into play also. East to West with the RTE Concert Orchestra, Friday, September 10th, 8pm, The TLT Concert Hall & Theatre An evening packed with favourites as the RTÉ Concert Orchestra embarks on a classical journey spanning east to west. The glorious eastern melodies include Borodin’s Polovtsian Dances, famous as the source of the song Stranger in Paradise, and the gorgeous Adagio from Khachaturian’s Spartacus, known to millions as the theme of The Onedin Line. Then we move west to America with exhilarating music including Copland’s rousing Hoedown and Gershwin’s vivid musical portrayal of An American in Paris. Saturday, September 25th, 9pm, Droichead Arts Centre Two concerts for the price of one! Luán Parle is one of the most prominent and critically acclaimed singer songwriters in Ireland today. This show is part of a nationwide tour to launch her new album ‘The Full Circle’ released in mid-September and is preceded by a new single, ‘Why Baby Why’ in mid-August. ‘The Ghost Country’ is the sound of Clive Barnes at the top of his game as a vocalist, guitarist and songwriter. As a musician, Barnes is regarded as one of the finest performers on the roots circuit, a reputation solidified by the lyrical and song-writing prowess on this latest collection of songs. The Diary of Anne Frank by Opera Theatre Company,
Friday, September 17th, 8.30pm, Droichead Arts Centre Vivid and insightful, this heartrending opera recreates the world of 13-year-old Anne Frank in hiding, living in hope and fear, longing for normality for herself and her family. Opera Theatre Company commemorates the 50th anniversary of the opening of the Anne Frank Museum in Amsterdam with this atmospheric opera, composed in 1969. With David Brophy conducting the OTC Ensemble, and direction by Ingrid Craigie and Annilese Miskimmon, this compelling production should not be missed. Tickets €25, www.droichead.com

Best thing about winning the Provincial Town’s Cup two years in a row: Proving people wrong that we could actually do it, even people in our own club! Some people said we were not the same team in our second year and that we had peaked too early in the season. So to go out and win the Cup again last season, the way we did, was great. We had two very tough early rounds but improved as the competition progressed. Winning the semifinal by 20 points and coming from 10 points down in the final was magnificent. Best game you ever played: The Area Club Grand Final back home with our family club. My brother was in the team too so that was very special. It was a marvellous occasion because rugby is a very family-oriented sport in New Zealand and means so much. Best try you ever scored: I don’t get that many – I scored four once in a match when I was under eight years. The try I scored for Boyne last season against Enniscorthy was special because we were put to the pin of our collar in that match and it was the deciding match in our cup campaign. Best coaching tip: Expect the unexpected – especially at Boyne RFC! Always be prepared for the unplanned in any walk of life because little things trip you up when you least expect. Best career advice: ‘Try your best son’ – that advice was from my mum. Rugby is my life outside of my family. My mother had a huge influence on my formative years growing up. She was the one who said the things that always registered and this has always been to 46
