Chile’s immense geographical variety makes it the perfect destination for those seeking an unparalleled adventure. The journey stretches from the arid Atacama Desert in the north to the breathtaking fjords and glaciers of Patagonia in the south, not far from Antarctica.

This is a land of contrasts and unimaginable landscapes, a masterpiece that seems to have been painted by celestial hands, now transformed into a nation. Chile, a slender strip of land measuring 4,270 kilometers in length between the Pacific Ocean and the majestic Andes Mountains, is meant to be explored from north to south. SAN PEDRO DE ATACAMA: THE JEWEL OF THE DESERT

In northern Chile lies San Pedro de Atacama, an oasis nestled in the heart of the driest desert in the world, the Atacama.

San Pedro is the starting point for exploring landscapes that seem like something from another planet.

Once inhabited by the

Atacameños, this area has a rich history, leaving behind fascinating archaeological sites such as the Pukará de Quitor, an ancient pre-Columbian fortress. Santiago, the capital of Chile, is a modern and vibrant city sprawled at the foot of the Andes. It has grown into the country’s economic and cultural hub. While cosmopolitan, it maintains a balance between the old and the new, with historic neighbourhoods contrasting futuristic buildings. Its privileged location allows travelers to enjoy both the mountains, especially in winter, and the sea, in under two hours with Viña del Mar nearby. Moreover, from Santiago’s international airport, you can embark on this journey from north to south, and vice versa.

THE EUROPEAN PUERTO VARAS

They say that the beauty of Chile begins at Lake Llanquihue. Here, in southern Chile, with the imposing Osorno volcano as a backdrop, lies Puerto Varas, one of the country’s most picturesque cities.

Founded by German settlers in the 19th century, the city retains a strong European influence, visible in its Bavarian-style architecture and cuisine. The city is a gateway to unexplored national parks, lakes, and volcanoes in the Lake District.

The climate is key when visiting Puerto Varas: the best time to visit is summer, from December to March, when sunny days allow outdoor activities. However, autumn offers stunning landscapes

with the changing colours of the surrounding forests. Generally, the region has a temperate and rainy climate, typical of the Lake District. Winter temperatures can drop to near 0°C, while in summer they can reach 25°C.

EASTER ISLAND, RAPA NUI, AND THE ENIGMA OF THE MOAIS

Over 3,500 kilometers off the Chilean coast, in the heart of the Pacific, lies Rapa Nui, globally known as Easter Island. This remote island is famous for its giant stone statues, the Moais, which hold secrets about the ancient civilisation that created them.

Rapa Nui’s history is an enigma that continues to fascinate archaeologists and visitors alike. It’s Polynesia, Oceania, South America, and Chile all at once. The Moais, with their enigmatic expressions, dominate the landscape, but the island also offers paradisiacal beaches and a unique culture.

It’s said that the best time to visit Easter Island is during spring and autumn, when the weather is more temperate and there are fewer

tourists. However, the Tapati Rapa Nui Festival, held in February during summer, is the perfect opportunity to immerse yourself in local traditions, enjoying sports competitions and cultural events.

The island’s archaeological sites, such as Rano Raraku, the volcano where the Moais were carved, and Ahu Tongariki, the largest ceremonial platform, are must-see locations. Anakena Beach, with its white sands and palm trees, is ideal for relaxing after a day of exploration.

From October to March, the days are longer and the temperatures warmer in Torres del Paine, though it’s advisable to be prepared for strong winds and rapid weather changes. Rain is frequent, and the Patagonian winds can reach surprising speeds.

The famous W Circuit trek takes you through some of the park’s most breathtaking landscapes, with the trail steepening as you enter the Ascencio Valley. Hiking to the Base of the Torres, trekking into the French Valley, and witnessing the ice formations from the Grey Lake lookout will leave you with unforgettable memories.

Germany, a country where temperatures can plummet to below zero in December, is nevertheless a hive of activity, and crowds gather at sizeable Christmas markets in many cities and towns. Delicately crafted ornaments, seasonal lebkuchen (spicy gingerbread cookies), stollen (spicy fruit and nut bread), schneebälle (pastry balls made of fried dough), and glühwein are some of the best things you can find.

HOW DID CHRISTMAS BEGIN?

Christmas is celebrated in the Christian tradition to commemorate the birth of Christ, which is believed to have occurred close to the winter solstice. Originally, the biggest Christian celebration of the year was Easter. However, in the fourth century, the Roman Church set December 25 as the official date of Jesus’ birth because it aligns with the winter solstice and festivals like Saturnalia, which focus on light and rebirth. Over the centuries, numerous traditions – including gift-giving, singing Christmas carols, and enjoying family feasts – were incorporated. By the 20th century, Christmas had transformed into a more secular holiday celebrated across the globe by people from various cultures.

Across Europe, the majority of countries celebrate Christmas with similar customs, but many have quirky traditions that are incredibly intriguing. Iceland has the Yule Lads – 13 tricksters who visit children on the 13 nights before Christmas. Each ‘Lad’ completes one naughty action (such as slamming doors and stealing snacks). Austria has Krampus – a horned creature that visits kids in December, often accompanied by St. Nick! He’s far from innocent; he captures naughty children in his sack and beats them or drags them off to hell – depending on how bad their behaviour has been. In Norway, there’s a belief that witches and spirits roam freely

on Christmas Eve. Therefore, homeowners hide their brooms to prevent them from taking flight. One lovely symbolic tradition occurs in Scotland, where people burn a rowan twig to get rid of any bad feelings between family and friends. The Scots also believe that the first person to enter a home on New Year’s Day (the ‘firstfooter’) brings good luck. As such, first-footers typically arrive with gifts such as whisky, salt, bread, and coal. And finally, let’s head to Ukraine, where families decorate their Christmas trees with spiderwebs for good luck. Thanks to a legend of a family that woke up to find their trees covered in shimmering webs, the tradition is thought to attract fortune and protection!

CHRISTMAS IN ASIA

It is difficult to choose just a few memorable traditions from such a large group of countries, but one that really stands out is the Filipino Christmas, which many consider to be ‘the longest in the world’. Celebrations start in September and last until January. They include the display of colorful bamboo and paper or capiz shell ‘parols’ (lanterns), carolling, and the celebration of ‘misa de gallo’ – nine morning masses that typically take place at 4am. After church, people gather outside to enjoy treats like puto bumbong, an ube rice cake steamed in bamboo tubes and covered in grated coconut.

Filipinos celebrate ‘noche buena’ (Christmas Eve), tucking into a grand feast alongside their relatives. The Filipino Christmas very much reflects its Spanish influence. For instance, Christian communities perform nativity plays and many decorate their homes with ‘belenes’ or nativity scenes, made up of ceramic statues of Jesus, Mary, Joseph, the Three Wise Men, and more. Turning our eye to original celebrations, we can’t ignore Japan. In the ‘land of the rising sun’, Christmas isn’t a national holiday, but it’s widely celebrated with an unusual tradition: ordering KFC! It

all began with a successful marketing campaign in the 1970s. The idea came from Takeshi Okawara, the manager of Japan’s first KFC store. He overheard foreign customers lamenting the lack of traditional Christmas fare and decided to promote fried chicken as a festive alternative. His team created the Party Barrel, comprising fried chicken, wine or Champagne, and cake –all designed to resemble a Western Christmas dinner. A mention should also go to Singapore, whose extravagant Christmas lights (especially along Orchard Road) are known for their beauty and artistry. ›

CHRISTMAS IN AFRICA AND THE MIDDLE EAST

Countries in Africa have a vibrant mix of celebrations, some of which are similar to those held in other nations (such as going to Midnight Mass) while others are more original. In Ethiopia, for instance, people celebrate Christmas (or ‘Ganna’) on January 7. This event takes place a little later than Christmas in Europe because the months on the Ethiopian calendar are different. Celebrations are mainly religious and comprise processions and

special services at Orthodox churches. Many Ethiopians fast for 43 days before Christmas, consuming just one meal a day. On Christmas Day, they wear white and don a traditional item of clothing called netela, which is similar to a scarf and is made of cotton with woven coloured borders. On Christmas Eve (January 6) they attend church, chanting and singing to make the occasion special. Service starts at around 6pm and continues into the early hours of the 7th. Many people walk from one church to another, attending various services before the break of

dawn. On the 7th, they break their fast and enjoy foods like doro wat – a spicy meat and vegetable stew. If you are visiting Ethiopia at this time of year, don’t miss out on the holy city of Lalibela – a UNESCO World Heritage Site known for its churches, which are cut into rock.

In the Middle East, nations with a strong Christian influence (such as Lebanon) celebrate Midnight Mass, lighting up their towns with stunning light displays and exchanging gifts. Christmas feasts comprise treats like kibbeh (minced meat with bulgur and spices), stuffed grape leaves, roast lamb, and bûche De Noël (a French-style yule log cake). There is also a strong emphasis on helping the poor, with many families donating food, clothing, and money. ›

CHRISTMAS IN THE AMERICAS

Christmas in the U.S. is a melting pot of various traditions, though many American and European traditions overlap. On Christmas Day, families gather for a big holiday meal, which can include ham, roast meat, regional dishes, and desserts like pies and Christmas cookies. One feature that really stands out in the U.S. is the all-out décor. Many families invest a great deal of time

and effort in decorating their homes with outdoor lights and figures. Indoors, it is common to have one large tree in living rooms and sometimes, smaller trees in individual rooms in kids’ or teens’ bedrooms. Town squares are an important gathering point, with events like the annual Tree Lighting in New York City’s Rockefeller Center or the Holiday Trail of Lights in Louisiana (featuring parades, festivals, fireworks shows, and food) consistently making it into the news.

One of the most popular newer traditions is the Christmas drive-through – ticketed events that take entire cars through amazing light displays inspired by characters such as Barbie, Bigfoot, prehistoric life, and more.

Still in the Americas, Mexico has many wonderful traditions, including Las Posadas, a nine-day re-enactment of Mary and Joseph’s search for shelter when Jesus was to be born. Participants sing carols and illuminate their way with

candlelight, stopping at designated homes as part of the re-enactment. Around Christmas time, kids break colourful piñatas to access delicious lollies and small gifts.

Brazil, meanwhile, celebrates Christmas in the summer with concerts, nativity scenes, and fireworks displays in major cities. As the weather is warm, festivities often spill onto beaches and Santa Claus is often depicted in lighter, beachy clothing. Not to be missed is the Árvore do Rio (Tree of Rio) which holds the Guinness World record for the largest floating Christmas Tree in the World. Standing at 85m tall, it floats along Rodrigo de Freitas Lagoon in Rio de Janeiro. ›

Finally, we get to the neck of the woods I hail from – Australia! December is a peak summer month so shops are decked out in images of Santa on a surfboard or otherwise lazing on the beach! That’s not to say that we don’t have a sense of tradition. On Christmas day, families hold outdoor beach parties and picnics. Forget hot roasts; most families enjoy lighter meals like fresh seafood, cold ham, salads, and pavlova. Surfing, swimming, and even cricket on the beach are a great way to stay cool and gather with family and friends. Aussies also enjoy Christmas carols

and in many cities and towns, large groups gather for Carols by Candlelight events, which involve singing beneath the night sky.

New Zealanders celebrate many Māori traditions, such as incorporating hangi (a traditional Māori feast cooked in an earth oven) into their celebrations. Carols are sung in English or in Te Reo Māori (the Māori language) to highlight the country’s bicultural identity. Moreover, Māori legends are often woven into Christmas stories to reflect the country’s diversity. Finally, the native pōhutukawa tree (metrosideros excelsa) with its scarlet flower is often featured on greeting cards

ROLLS-ROYCE GHOST II

As the new Ghost emerges from the shadows, Rolls-Royce promises this to be the most ‘driver-focused V12’ the marque has ever created – a very grand statement of measure. But will the revised Ghost II deliver?

It’s more subtle evolution than outlandish revolution on the cards for the Ghost II. Rolls-Royce doesn’t do facelifts, so consider this new iteration of the Ghost more of a mid-life refresh of the second-generation Ghost that first appeared in 2020 – making this the Ghost 2.1, if you will. This secondcoming of the Ghost was prompted by the call to action from the marques existing client base, who requested an even greater breadth of customisation be added over the outgoing version. As such, RollsRoyce has answered, and promises the Ghost II to be a potent stage for bespoke

commissions. We’ve not seen the options list yet, but it’s safe to assume it will be very extensive. For context, Rolls-Royce has added several new colour variants to the marques existing palette for the new Ghost, meaning you can now spec your Rolls from an impressive 44,000 different paint hues.

styling, as if the entire thing was carved from a singular slab of granite. The proportions are large, lines are long, and the quality, outstanding. There are some revised headlights in the second series car, and some of the grilles and vents have been tided up to give a cleaner overall aesthetic, but the ever elegant silhouette remains unchanged. ›

The drivetrain powering this opulent sled is the familiar 6.75-litre twin-turbocharged V12. Details of any changes to the motor or power output have yet to be released, so it’s safe to expect performance to be on par with the previous model – a healthy 563bhp and 627lb ft of torque available from a mere 1,600rpm, barely above idle. The more ‘driver-focused’ Black Badge version gets all the same treatments in this second-gen update, but receives an additional 29bhp and 37lb of torque to play with too. All that power meets the road via a plethora of optional 22-inch forged rims, and turning the wheels is the same eight-speed ZF automatic transmission as before. And the 0-100km/h sprint? Who cares. But it’ll be effortless and as ultra refined as you do it.

It’s from inside the cabin where the facelift changes will be most apparent. The Ghost II will feature the new SPIRIT operating system, that was debuted in the Spectre. In addition, all the traditional dials on the dash are now digital – part of the marques nextgeneration modernisation we’ve seen across the lineup, and helping to enable the client request for more bespoke options, allowing full customisation of the instrument cluster on the fly. Despite some calling out the lack of analogue dials as a move away from traditional craftsmanship for which the marque is synonymous, this couldn’t be further from the truth, with more interior

materials being added to the extensive spec sheet than ever before. A range of exotic natural woods, polished and brushed metals, carbon fibre, cloths, leathers, Champagne coolers and an unimaginable selection of stitching options are available... for a price. ›

If you’re more inclined to have your Rolls-Royce driven for you rather than doing it yourself, the Ghost II can deliver thanks to the Extended Series edition. This kicks out the wheelbase and elongates the profile of the rear doors, resulting in an additional 170mm of legroom for the rearward passengers. A nice option if you’re going to be spending more time cruising in comfort than behind the wheel.

Whatever your style, the second coming of the Ghost promises to deliver a wide and varied canvas for self-expression like never before, boasting more bespoke options, a simplified design language, and Rolls’ most modern amenities. Few brands reach the sheer level of excellence, quality, and refinement on display here. ART AS A PATHWAY INTO THE FUTURE

“I WALKED AND SCRAMBLED OVER MANY OF THE MOUNTAINS IN SCOTLAND, WALES, AND ENGLAND AND I FOUND IT HUGELY INSPIRING, FOR MY PAINTINGS, YES, BUT FOR ALL MY WORK AND MY LIFE. A SPIRITUAL PROCESS REALLY, AND A METAPHOR FOR ACQUIRING SKILL AND INSIGHT AND UNDERSTANDING. THE MOUNTAINS, THOUGH, ARE WHERE I FIRST DEVELOPED MY LOVE OF PATHWAYS.” ROGER DEAN

Roger Dean is as prolific as he is visionary; a true embodiment of the artist who refuses to be limited by genres, expectations, or predetermined ideas of what art and architecture should be. Dean has been one of the world’s best-loved artists for

many years, but when discussing his work with other fans, I realised that many different paths have taken us to him. As a keen book cover enthusiast, I first came across his work while reading about science fiction book covers.

I discovered that Dean, an English artist, designer, architect, and publisher, had been disappointed by

the little value given to the science fiction genre in the early 1970s. For him, science fiction had the “potential for anticipating human evolution… ›

and perhaps the means to bring it about.” Dean eloquently stated, “Science fiction is unfortunate in having a most unsatisfactory framework of existence it’s considered literary kitsch. I believe it should be the mainstream of literature because all the books that have become important down the generations of civilisation have been books about ideas.”

Meanwhile, a friend who is a rock music aficionado has been a fan of Dean’s album cover art

for decades. Some of Dean’s most renowned artworks are the covers he designed for the band, Yes. In 1971, Phil Carson, the European General Manager of Atlantic Records, hired Dean to design the cover of Yes’ fourth album, Fragile. It was to be the first of many collaborations between Dean and the band. For Fragile, Dean suggested a work based on a creation myth “about a child who dreamt they were living on a planet that was breaking up, so they had to build

a space ark to find another planet to live on. And they towed all the little bits of the planet with them.”

Once again, we see science and art as bridges toward a better future… and the value of a child’s imagination. But it’s not just his dreamlike portrayals of nature that made him the talk of the art scene. It was also the stunning typography he created for the many album covers he designed, and the extent to which these typefaces reflected the music within the vinyl.

Many fans are also fascinated by Dean’s works from the realms of architecture and furniture design. For instance, his Sea Urchin Chair and the Landscape seating for Ronnie Scott’s Jazz Club in Soho, London are iconic pieces that marry imagination, playfulness, and aesthetic splendour. In 1981, Roger and his brother Martyn displayed their collaborative design, the Tectonic House (a futuristic, economic ‘home for life’) at the International Ideal Home Exhibition in Birmingham. The idea stemmed from Dean’s earlier ideas for a bed and bedroom designed for the safety of children, and Roger and Martyn’s ‘retreat pod’, which was featured in the Stanley Kubrick film A Clockwork Orange. The pod, a futuristic, egg-shaped

capsule for one, echoed the ideas found in the narrative. Martyn explained, that “The Pod simulates conditions which are in some ways similar to brainwashing. Because the Pod is sound and lightproof and has a soft fur interior to minimise touch, it disconnects you, and that’s a state in which you are most receptive to propaganda, or self-determined indoctrination via tape recorders, projectors, light effects, and so on.” The description is reminiscent of the Ludovico treatment Alex is subjected to in the film. If you are enamoured by one genre of his work, then you may find it fascinating that he was so skilled in so many different types of art and architecture. One of the reasons is his educational background.

After completing Grammar School, Dean enrolled in the Canterbury College of Art, studying furniture design and silversmithing. Unbelievably, he was removed from the Fine Art Department by the principal owing to the fact that his other subjects were maths and physics. Therefore, Dean switched to industrial design, but ultimately grew dismayed by his teachers’ approach. Dean asked why people had to live in ‘boxes’ and was referred to Le Corbusier’s work. The artist refused to be bound by dogmatic ideas in design and was determined to move beyond the box as it seemed that the architects of the modern movement had no idea about the function of a home. ›

In 1965, Dean enrolled at the prestigious Royal College of Art in London to study furniture design, completing a thesis on the psychology of architecture and the qualities that make people comfortable in buildings. He graduated with a Master’s degree and took home a silver medal for his ‘work of special distinction.’ Upon finishing his studies, he delved into furniture design. After his work for Ronnie Scott’s Jazz Club, he was hired to design his first-ever cover for the album, Gun (1968) by the rock band of the same name. He was paid a handsome sum for

his work and grew interested in immersing himself more in this sector.

The 1970s were a key decade in his career, as he began working more with musicians and rock bands. His design

for the band Osibisa’s album Flying Elephants (1971), which featured an otherworldly winged elephant flying through a lush landscape, was made into a poster and sold countless copies. ›

By this stage, Dean had made a name for himself and was free to venture into the areas he was most interested in. In addition to his incredible work for Yes, he designed the logo for Virgin Records, which is one of the most captivating and recognisable logos in current times.

In the 1980s, he branched out into other areas, including stage design, architecture, and video game art. He is additionally known for revolutionising video game box design through the work he did for video game developer, Psygnosis. This company was one of the

first to proclaim that games were works of art and its association with Dean showed its commitment to original art that reflected the magic of the games themselves.

As noted by Polygon writer, Tracey Lien, before Dean, video game box design had been somewhat primitive. She adds,

“Dean's work fired up players' imaginations before they even started the game. The games themselves were often about transporting players to other worlds. Dean's work for album and game covers was no different.”

Many of Dean’s most fascinating discoveries were made when he was a student. For instance, one of his projects was to build a perfect sleeping space, since the area where people rest is often where they

are most in tune with their environment. He asked a friend who was a primary school teacher to hand his students a survey with the following question: “What don't you like about where you sleep?” The answers were surprisingly uniform. Children did not like spaces that could potentially hide a mysterious presence. “Any source for the imagination to fix on is a threat, and it seemed to me very easy to eradicate those things. You

don't need to have beds that have spaces underneath them or full-length cupboards,”

Dean said. The children’s ideal spaces, in contrast, were highly varied and included tree houses, palaces, and boats. One child dreamed of a “defendable space” – one that was suspended in the air that he could physically block when he chose to. Dean designed this room, then an entire house based on the defendable space idea. ›

Dean is also fascinated by pathways. Many of his bestknown works feature paths (sometimes a double helix as in Pathways from Yessongs). The artist, a lover of nature, found great inspiration from the paths he encountered during his many outdoor walks. He stated, “I walked and scrambled over many of the mountains in Scotland, Wales, and England and I found it hugely inspiring, for my paintings, yes, but for all my work and my life… a spiritual process really, and

a metaphor for acquiring skill and insight and understanding. The mountains, though, are where I first developed my love of pathways.” He also finds inspiration in works like The Lord of the Rings, which is the ultimate tale of epic journeying and physical, mental, and spiritual growth.

Dean’s work somehow elevates human consciousness; it makes us want to inhabit the beautiful, serene, magical worlds he creates… or build better, limitless worlds of our own. Floating islands, winding paths, and bone-inspired

It is no exaggeration to say that Da Bruno is an institution on the Costa del Sol, the first reference for Italian restaurants from Cabopino to San Pedro Alcántara and everywhere in-between. We spoke to founder Bruno Filippone about the formula behind this remarkable success story.

THE MAKING OF A COSTA DEL SOL CLASSIC BRUNO FILIPPONE

With restaurants bearing the name across the length and breadth of the Marbella area, Da Bruno is the eatery of choice for Italian cuisine in this region. The brand has built this reputation over a presence of 30 years in dining and hospitality, but the story goes further back, because before Bruno and his late wife Giuseppina moved to Marbella and established one of the most renowned restaurant chains in its history, they were already highly successful restaurateurs abroad.

Not in Italy, as you might expect, but in Germany, where both were running their own restaurants when they met and fell in love. Unmistakably Italian – Bruno from Pescara and Giuseppina from Avellino province – but having family there, they moved to Germany at a young age, each unaware of the other. “I settled near Freiburg in the Black Forest region of Germany at the age of 19,” says Bruno, “not very far from where Giuseppina and her first husband lived. At the time, I was earning well but didn’t enjoy my work, so I enrolled in a hospitality school in Basel, Switzerland, where I spent the three toughest years of my life.” ›

He had gone from earning a thousand Deutschmark a month – a tidy salary at the time – to as little as 80 Swiss Francs as a student in his first year. “The training was intense in those days, as they demanded Swiss precision in everything from service to the chef’s training, as well as in the logistics of stock planning, costing, keeping the books, and other aspects of running a restaurant as an efficient business. In my last year, I was earning 300 Francs a month, but I left with first class training and the preparation for setting up a business.”

This would come later, as Bruno was still too young for such an undertaking and spent several more years

working at a classical but luxurious restaurant in Basel that is still there today. He also continued to live in Basel when he founded his own first restaurant just across the border in Germany, following in the footsteps of his brother, who has run one nearby for 53 years and continues to have people queuing to get in. “My mother was widowed at the age of 40 with six children, so she had to work hard throughout her life. When she did retire, she said: “What am I supposed to do now?” and set up the restaurant with my brother. Hard work and running our own businesses are a very important part of our family tradition.” ›

TAKING A DIFFERENT COURSE

Life took a different course for Bruno when he visited a restaurant he’d heard people raving about for some time. It was situated on the shores of a lake in the Black Forest, a setting of great beauty where a widow created a dining experience that had people coming from far and wide – as did Bruno on this occasion. They were right, and as a fellow professional, Bruno was so impressed that he asked to see the creator of his wonderful meal. It was the beginning of a romance and a lifelong friendship, for Bruno and Giuseppina became a couple and started a very fruitful

collaboration after she sold her own restaurant and moved to Switzerland.

“We always worked very well together because I think we nicely complemented each other,” says Bruno. “I have always had an eye for detail, and she was a fantastic hostess who made people feel at home. This is such an important part of a restaurant that is sometimes overlooked, but we have always found it as important as the quality of the food and the appeal of the décor. It is a vital part of the service and the dining experience. This is one of the founding principles of Da Bruno, and if you ask me the reason for our enduring popularity.”

Da Bruno was founded in 1977 and it was in 1994 that the couple opened their first restaurant in Marbella. Giuseppina enjoyed holidays in Spain, especially the Canary Islands, but while Bruno too was enamoured with the country, he found the islands too small for year-round living. “This is how we found our way to Marbella, and once we launched Da Bruno Marbella in 1994 we never looked back. Marbella became our home, and we became a part of it, and it of us. Our first restaurant here was on Avenida Ricardo Soriano in the centre of town. It was an instant hit, not a very large venue but there were always people queuing to get

in. I still regret selling it, even though we went on to open four more Da Bruno restaurants, on the Paseo Marítimo in Marbella, on the Golden Mile, in San Pedro, and in Cabopino.”

Bruno and Giuseppina would later also open the exclusive and highly regarded Döss restaurant in Las Chapas, but after Covid and the sudden passing of his wife, he decided

to focus on the original family business. “Döss was our joint project, and I didn’t want to continue it without her.”

He has returned to the highly successful restaurants that are also supported by another love of his – an organic farm and winery in the Manilva countryside that produces the fresh ingredients for the restaurants as well as its own

Doña Giuseppina vintage. “I think we can be pleased with what we’ve created, as we consistently provide our guests with fine quality Italian cuisine, a good ambience, and the warm welcome and service that makes a diner enjoy the experience and go home content. “At the end of the day, that’s what dining out is all about.”

“I ALWAYS WANT TO BE HONEST THROUGH MY WORK AND WITH MY CREATIVE MIND, EVEN AS I SEEK NEW IDEAS AND FORMS TO EXPRESS MY THOUGHTS AND MAKE A STATEMENT. I HAVE A LOT OF FUN DOING THAT, AND WITH A BIT OF TONGUE IN CHEEK WE SHOWCASE OUR WORK. Interior designers, like architects, artists, film producers, and composers, fall into this category, each adding to a known body of work with their own ideas and creations that help their field to evolve further. The extent to which the knowing touch and seeing eye are innate or can be taught is a question for debate, but life is certainly easier and the result more authentic when the talent comes from within. Heidi Gubbins can relate to this, as she has been fascinated by all things creative from a young age. ›

“Mine is a world dominated by the visual and the sensory,” says the founder of one of the leading intErior design studios in Marbella. Hailing from an international background, she has lived in various countries and continents, including South America, Africa, the USA, Portugal, and Spain. “Designers often cite travel as an important source of inspiration because

it surrounds you with new sights, sounds, scents, and experiences, and if you’re a creative person this stimulates the senses. It can come in the form of a direct reaction, but more often adds to a collection of impressions that suddenly spark into ideas. I experience this every day – a natural pull toward whatever captures my attention, those fleeting

moments that stir feeling and ignite imagination effortlessly.”

Since creativity is above all an inner process where the mind conjures up images and ideas from stimuli accumulated over time, personal life experiences and even small everyday things can be the source of something new. “Not long ago, my attention was caught by a beautiful setting of seaweed on a beach. ›

The unusual shape captured my imagination and has become the source of inspiration for one of my upcoming designs, so it can come from all things, big and small. This is why I seek to be sensorially present in my daily life, it’s what makes me a better and more authentic designer.” Many focus more on producing according to the dictates of the latest trend or fashion, but Heidi believes a true designer, regardless of their field, will always want to evolve, not repeat. In other words, treat each project as a new opportunity to create something truly bespoke – designed just for it.

“I naturally run a business and being professional, efficient, and delivering on time are key points for me, but I wouldn’t categorise myself as primarily commercial. I don’t design to replicate to a brief but work with my clients to ensure that I can add value to their vision and make it everything it can be, whether it is a large project or smaller, commercial or residential one.” For this reason, she focuses on creating something truly unique and personal each time, as the ‘alchemy’ is in the distinct elements of each project, and they help to give it an identity of its own.

If the alchemy (read: magic) of design is in the unique combination of elements, then Heidi certainly is an artist. “I guess I have a recognisable touch, but for the rest my work is characterised by a desire to add value, to infuse projects with lasting resonance and meaning through my creative work.” This means that she doesn’t take on all projects and will tell a client if she feels there is little she can add – a form of professional integrity that has stood Heidi in good stead, as she now has a loyal clientele of kindred spirits that is growing both locally and abroad. “If you’re true to yourself and your work, you don’t have to be all things to all people. I believe in it being a selfselecting market.” ›

QUALITY OVER QUANTITY

Instead of wanting to become the biggest, Heidi forsakes the battle for market share in favour of a conscious desire to remain boutique in size and style. “I have a great team of people around me, but you can only guarantee quality and that very important personal touch to clients and projects if you stay within a certain scale, and even though I’m expanding my business, maintaining balance in growth is important for me.”

This shows itself to be true in every one of her design projects, where Heidi’s eye for

detail is valuable both in quality control terms and in the creative process itself. “I love the latter especially, as it is a bit like alchemy – a somewhat mystical relationship between the eye, the brain that processes the visual impressions and stimuli, and the hand that begins to develop those ideas in the form of sketches. In the end, it is my instinct that guides me to create designs the way I do, and that helps to make them different.”

Rather than play it safe, Heidi is not afraid to take some brave steps in the process – the very characteristics required to escape mediocrity and be truly innovative and creative. Just as she allows herself to be inspired by design trends but doesn’t follow them, so she also uses top luxury brands but is not ‘married’ to them.

“We collaborate with renowned brands and artists, while also showcasing a selection of emerging talents and unique furnishings in our boutique section on our website. Soon, we’ll be unveiling our first exclusive collection of original designs. From dinnerware and accessories, to furniture pieces and homeware.” ›

For all this, the affable designer with the spirit of an artist is down to earth and approachable, even if she lets her alter ego loose on social media. “I love the art of expression – not only through interior design but through various outlets like photography, film, composition, and storytelling. For me, it’s all connected; you can’t pull things apart because it limits creativity. I always want to be honest through my work and with my creative mind, even as I seek new ideas and forms to express my thoughts and make a statement. I have a lot of fun doing that, and with a bit of tongue in cheek we showcase our work. It’s our way of highlighting the concepts, textures, tones, materials, the details behind each design we’ve produced, and how we ourselves can become part of the art.”

PRIVATE AND COMMERCIAL PROJECTS

Heidi and her team work on both private homes and commercial projects. “Each has its own charms and challenges, but one of my recent favourites was creating the concept and design of the interiors as well as the branding for the spa and wellness centre of the Boho Club on the Golden Mile - Ashiana.” ›

Here she took on board the Boho eclectic philosophy of the brand, as well as their desire to give the wellness centre a look and feel of its own while maintaining a visual continuity with the rest of the complex. “We drew inspiration from the spa’s two main areas, the ‘Water House’ and the ‘Dry House’, and wove this theme throughout a series of designs inspired by natural elements like water and rock. In many lease contracts, tenants agree to pay community fees. However, this does not absolve the property owner of their legal responsibility to the community. If the tenant fails to pay, the community will pursue the owner directly, regardless of

any private arrangement. From the community's perspective, the owner is always the legally responsible party.

DIVORCE SETTLEMENTS

Similarly, in divorce cases where one spouse is required to pay community fees for a property occupied by the other spouse, the community is not bound by such agreements or even matrimonial arrangements. As we say, despite any matrimonial or judicial arrangements, the community will seek payment exclusively from the owner of the property.

CO-OWNERSHIP SCENARIOS

When a property has multiple co-owners, there is a common misconception that each co-owner is responsible only for a share of the fees, accordingly with their

share of the property. However, Spanish law states otherwise. The community can demand the entire unpaid amount from any one of the co-owners, regardless of their ownership percentage. This means that the community is entitled to sue the most financially solvent co-owner and ignore the others. The co-owner who ends up paying the full amount can, in turn, take legal action against the other co-owners to recover their proportional shares.

SELLING A PROPERTY

Another frequent misunderstanding is the belief that selling a property automatically releases the seller from responsibility for community fees. Under Spanish law, it is the seller's

obligation to notify the community, specifically the President, Secretary or Administrator, of the change in ownership through a means that provides reliable proof of receipt.

If the seller fails to notify the community, they remain jointly and severally liable with the new owner for any fees incurred after the transfer. Although the seller may later seek reimbursement from the new owner, the community can legally claim unpaid fees from the seller if proper notice was not given.

Requesting a debt certificate from the community as part of the sale process does not release the seller from liability. The seller remains responsible until the community is explicitly informed that the transfer of ownership has occurred.

LIABILITY FOR NEW OWNERS

When purchasing a property, buyers should be aware that they may become responsible for outstanding fees from the current year and the preceding three calendar years. Therefore, it is crucial to obtain a certificate of debts from the community that verifies no unpaid fees exist before finalising the purchase.

FOR THE LOVE OF ITALIAN AND MEDITERRANEAN COASTAL CUISINE

Mercato della Fontanella (Fountain Market), two years in the making, is the latest sensation on Marbella’s culinary scene. This is the first project in Europe by Simon Jacobo, founder of the US-based Vida y EstiloHospitality Group, who has chosen Marbella as the ideal venue for their launch in Spain. Located in the central neighbourhood of La Fontanilla in downtown Marbella, the new venue represents the evolution of the group’s flagship ‘Mercato’ brand.

Long term residents of Marbella will recognise that the new premises are the previously well-known Havana Bar, which has been seductively refurbished during the last two years to create an emblematic restaurant that oozes pizazz and sophistication. The Marbella project, which has created 25 jobs, is a collaboration with two local entrepreneurs, Francisco Martín and José Lozano Muñoz.

BEAUTIFUL SURROUNDINGS

For al fresco dining in nice weather, the full length tree-lined terrace in front of the restaurant offers a lovely setting with umbrella shading. Step inside to encounter an expansive space nicely segregated into different zones by the use of pillars, shelves, and avante garde metallic screening. Spot lighting and hanging shades offset the neutral tones of grey and black, with a backdrop of jade coloured plush sofas and tiled walls supporting under-lit shelves containing a range of stylish artefacts. The tables are varied in size and shape, many featuring a wooden effect surface which also adorns some of the walls, and the surrounding chairs are supremely cosy. ›

The menu is fairly compact, divided into sections with Antipasti, L’Insalata, Pasta, Risotto, Meat & Fish, and Pinsa, the latter being a seriously addictive special pizza using a blend of three organic flours with the resulting dough fermented for 48 hours to provide an exceptional flavour.

DESIRABLE DISHES

We sampled the Salumi e Formaggi Antipasto, an inviting selection of Italian cheese and cold meats, and the Flori di Zucca Fritti, a captivating dish of flowers from the courgette plant deep fried in batter and drizzled with truffle honey. This combination really awoke our palates, piquing our appetites for

the Carpaccio di Manzo, thinly sliced beef carpaccio with rucola, Parmesan flakes, and truffle oil, and the delicious Caprina Salad to follow. With gratin goat cheese, green apple, baby spinach, lettuce, cherry tomato, caramelised walnuts, and balsamic vinegar, this was a real treat.

Moving on, we happily enjoyed two Primi dishes of Garganelli al Pesto with Genovese pesto, extra virgin olive oil and Parmesan shavings, and a morish Risotto All’Ossobuco featuring shredded ossobuco, Parmesan and saffron. To round off what had turned into a gourmet lunch, our Secondi selections of

Salmon flavoured with passion fruit, cream of carrot, and sautéed spinach, and Charcoal-roasted chicken steak with lime and mayo aroma, both prepared on a Josper, were savoured at length. The two chefs, Davide from Palermo and Fernando from Valencia, are clearly in their element at Mercato della Fontanella. ›

We had been accompanying all of this fine fare with excellent wines, but the cocktail bar, an integral part of the set up, also offers an enticing variety of freshly shaken combinations, with and without alcohol. It is also worth mentioning that the wine list features a very complete range of digestive liquors, including limoncello, grand bottles of which are displayed in their own cabinet.

The restaurant contains a gourmet shop with Italian products, such as olive oil, wine, cheese, and gourmet pasta that can be purchased for taking home. Having come this far, it was of course not possible to finish without dessert and Pistachio cheesecake and a medley of sorbets didn’t disappoint. A return visit is already on the cards! e

It isn’t every day that a King celebrates the 10th anniversary as Head of State.

On this momentous occasion – which took place in June of this year – King Felipe VI hosted a special lunch, choosing a perfect chef to cook for his guests: María José

San Román. The chef, founder of the prestigious Monastrell restaurant in Alicante (with one Repsol sun), is famed for highlighting the wonder of sustainable Spanish cuisine. On the occasion, guests tucked into a beetroot, tomato, and lobster dish, followed by bonito en escabeche with

balsamic Moscatel vinegar and fresh algae. For dessert, a delicate chocolate millefeuille with Jijona turrón showed off the chef’s passion for our national produce to perfection. Days before the event, she spoke to food writer, Helena Poncini (of El País) about the wonders of vinegar. Of the five designations of origins of vinegar in the world, three are Spanish.

San Román is more than a chef; she is an entrepreneur, researcher, educator, and founder of the San Román Group. The latter comprises four restaurants: La Taberna del Gourmet, La Vaquería, Tribeca, Monastrell – which obtained a Michelin star in 2013 –

and the bakery, San Román. Monastrell is the flagship establishment, the place where she passionately champions Mediterranean cuisine and demonstrates her deep love for tradition and seasonal produce. ›

Since Monastrell opened its doors in 1996, it has been a benchmark for haute cuisine that is celebrated nationally and internationally. For San Román, cooking is an art that connects the past with the present. In each dish, one can perceive values such as the tireless pursuit of excellence, honesty, and sustainability. She allows herself to be guided by respect for ingredients and the natural environment. From the commencement of her culinary journey (in 1975), her cuisine has reinterpreted Mediterranean traditions, creatively adapting them to modern times and putting the environment first.

The chef is recognised as one of the foremost experts and advocates for essential ingredients such as vinegar, olive oil, and saffron. Her keen knowledge of all things to do with saffron once earned her the title of ‘The Queen of Saffron’, bestowed by The New York Times When speaking with the press, she often cites various types of olive oil, such as Arbequina (which she uses for mayonnaise) and Hojiblanca (which she uses to cook cod al pilpil). She advocates for celebrating and consuming Spanish products rather than

relying on imported goods. In every one of her restaurants, she demonstrates a strong commitment to sustainability and circular food practices. She hopes that her dishes will inspire people to adopt healthy, sustainable lifestyles. Her belief in environmental responsibility

is demonstrated daily on her farm, Terramón, which supplies fresh ingredients to Monastrell. It is managed under the principles of regenerative agriculture, crop rotation, and organic waste recycling. It also has a sophisticated composting system. San Román makes it a point to use everything she grows, basing her menu on available produce. ›

Throughout her career, San Román has been praised by food critics and received many important distinctions. In 2022, she was awarded the Gold Medal for Merit in Fine Arts for her exemplary perseverance and dedication. Her research and outreach work has established her as a leader not only in haute cuisine but also in promoting the Mediterranean Diet. She couldn’t have chosen a better nutritional regimen, since study after study has shown that this way of life is linked to better heart health. She also presides over the association Women in Gastronomy, which has been working since 2018 to give visibility to female chefs and promote equity in the industry on an international level. She is a fine example of the importance of sharing knowledge and letting one’s cuisine be a reflection of one’s values and passions.

THE JORNADAS GASTRONÓMICAS DEL PESCADO DE CONIL CELEBRATES AN EXQUISITE FISH

The eighth edition of the Jornadas Gastronómicas del Pescado de Conil took place across 13 bars and restaurants in Conil de la Frontera, Cádiz, with a focus on the black drumfish (corval negro). Conil de la Frontera, which is renowned for its high-quality bluefin tuna, also harbours lesser-known yet delicious species like the black drumfish. A member of the croaker family, this fish thrives in shallow rocky seabeds, and most of its catches in Andalucía occur in Conil. Salamar restaurant, located at Fuerte Group Hotels’ Daia Slow Beach Hotel Conil, took part in the event, with Chef Juan Francisco Benítez Almazo presenting a semi-cured black drumfish on a fig carpaccio with fig leaf vinaigrette.
