BACK IN PRAGUE

I’m back in Prague, on my third visit which will not to be my last. This time I was looking to do something different. The Czech capital never disappoints.

Prague sits at the epicentre of Europe and has been attracting invaders for centuries. These days they come in the form of exuberant party people from across the European continent eager to make the most of the city’s vibrant atmosphere and reasonable prices. You can snag a last-minute long weekend in the

Czech capital for little more than a night out in London, Edinburgh, or Azerbaijan.

On this visit, I was staying at the Hilton Prague Old Town, an ideal address to explore Prague Old and New and I noticed a predominance of American and Asian guests, so there’s no end to the city’s global appeal. It is in fact the fifth most visited city in Europe! ›

Prague panorama including the historic Charles Bridge on the Vltava river at night

FAR FROM THE MADDING CROWD

Such appeal could lead to a huddle of human activity in the town’s more popular spots such as the Old Town, Charles Bridge, and Prague Castle. I was looking to swerve the Madding Crowd and discover a Prague that is a bit more serene and relaxed. Don’t get me wrong! Prague’s attractions are all worth sampling. But it’s nice to know you can easily take a break!  Prague is essentially a walking city so you’ll need a good pair of shoes. There are easy-going alternatives such as e-bikes, scooters, trams, and trolleys but there’s no way you can avoid a bit of street-level hiking.

PRAGUE 1 & 2

At some point, some imaginative bureaucrat divided downtown Prague into two distinct districts, Prague 1 & Prague 2.  Prague 1 encompasses the beating heart of the city including the Staré Město (the Old Town)

and Josefov (the Jewish Quarter), Malá Strana (the Little Quarter), Hradčany, and Nové Město (the New Town). This is where tourists flock like birds of a feather, gaggling and gawping along the narrow streets.

Prague 2 is less historic – and less hysterical. It offers a variety of nightlife, restaurants, and pleasant places to hang out. Just for the record, the Prague district numbering system goes all the way up to 10. ›

THE OLD TOWN

Prague 1 is a UNESCO World Heritage Site and here you will find the city’s main hotspots including Prague Castle, Old Town Square, Charles Bridge, and the Jewish Quarter. The astronomical clock gracing the Old Town Hall was installed in 1410 making it the third-oldest astronomical clock in the world and the oldest still in operation.

Built by Emperor Charles IV in the 14th century, the Charles Bridge connects the Old Town (Staré Mesto) with the Lesser Town (Malá Strana) on the other side of the River Vltava. The bridge is more than 500 meters long and 10 meters wide, once sporting four lanes for the passage of carriages. Now it’s fully pedestrianised and a must for photo opportunities. It’s possible to climb the 138 steps of the Charles Bridge Tower for a fabulous view over the bridge, river, and castle.

OFF PISTE

There are side streets throughout the Old & New Town where you can amble at leisure,

not that far from the Madding Crowd but distant enough to enjoy a quiet beer or memorable meal in harmony with the rest of Prague’s citizenry. The quality of these cafes and restaurants is far better than the ‘tourist establishments’ flanking the busier streets and squares – and at a much more reasonable price. You can dip back into the throng at any time only a block away. This is the kind of Prague I like!

On a street called U Luzickeho Seminare, I came across the city’s narrowest street, a passage so narrow that they had to install traffic lights to control the pedestrians. It’s a great bit of fun and there’s a lovely restaurant and courtyard at the far end with views of Charles Bridge and the Vltava River. ›

PRAGUE’S PASSAGEWAYS

Speaking of passageways, my favourite discovery on this visit was a guided walking tour of the town’s Art Deco arcades. I met my personal guide, Dagmar at Saint Wenceslas Monument and commenced a fascinating amble through a labyrinth of corridors and plazas that once made up the city’s shopping and entertainment centres. They basically line Saint Wenceslas Square, along a boulevard dividing the Old and New towns. This was originally called ‘Horse Square’ because there was a market where horses were traded!

Featuring brass, glass, marble, and metal, these indoor arcades are still impeccable,

protected I presume from the cold winters and heat of the summer. They’re still lively and used by the locals for community dancing, cafe culture, dining, and shopping.

Dagmar was a wonderful guide. There’s a lot to take in and it’s a fair bit of walking so I was glad when we reached the Franciscan Garden, a green oasis of peace 100 metres from the frenzy of Saint Wenceslas Square. Tourists just don’t know about this side of Prague. We ended up at an interesting statue portraying Franz Kafka’s head, took some photos and walked back up to the monument. I told you, you need good walking shoes here! ›

PRAGUE & THE ARTS

On the Passageway Tour, I noticed lots of little cinemas within the delightful Art Deco arcades. Cinema was strong, particularly in Prague. I presume during the wars and the Communist era, people took to the cinema to escape their rather grim reality. The Czech capital still has a host of arty, independent little cinemas.

The Karlovy Vary International Film Festival is held not far from Prague, one of the oldest film festivals in the world, commencing in 1946 in the aftermath of World War II.  Czechia has fostered a host of artistic appreciation. Franz Kafka was one of the most influential writers of the 20th century and lived in Prague. Tom Stoppard, the British playwright and screenwriter and winner of an Oscar for the screenplay for the film Shakespeare in Love, also comes from the Czech Republic. Writers, poets, and artists used to meet in delightful little cafes dotted around town and even Albert Einstein attended the regular Tuesday salons for traditional five o’clock tea. ›

FOOD FOR THOUGHT

One of the best examples of Czech Cafe Culture still exists at Café Imperial which was once the meeting spot for the city’s literati. Today, more than a century after it opened, it retains an unforgettable Grand Café style and atmosphere as I discovered when I went one night for dinner.

The interior décor is hugely impressive, an architectural gem full of unique ceramic decorations. The cafe’s owner and head chef, Zdenek Pohlreich is the ‘Gordon Ramsay’ of Czech cuisine, a culinary television personality, and prodigeous publisher of books as attested by the array of publications at the

entrance to his café. He has other restaurants in town such as Divinis, an Italian theme and apparently among the best in Prague. But we’ll have to leave that for my next visit.

Another interesting culinary encounter was Štangl Restaurant, located in Forum Karlín, a taxi ride away from my hotel but worth the short trip for something different. This is a hipster haven, a loftstyle restaurant that evolved organically from a bread shop and local eatery that is still located downstairs. Both serve locally sourced foods for brunch, lunch, and dinner. I settled down for a sixcourse menu with wine pairings. For starters, I was

supplied with a cold, wet towel for my hands and an almond oil moisteuriser closely followed by a panoply of perfect little dishes balanced with biological wines from the southern Moravia area which produces around 96 per cent of the country’s vineyards.

Štangl’s been open for a year and only has 36 seats so you feel you’re being personally looked after by the venerable team who busy themselves around the open plan kitchen, conferring and engaged in what was going on. The experience is quite unique and works very well. Even the cutlery and glasses are sourced from Czech companies working with local

artists who produce fine implements, even wooden bowls and spoons although they were a bit ‘Fred Flinstone’ for me… but part of the appeal. Štangl Restaurant is part of the Ambiente Group and perhaps worth checking what else they do for your next visit.

I only stayed in Prague for four days and must admit, I did fit in three rounds of golf as is my want but I proved to myself that there’s a lot more to this popular city destination than the obvious. It was easy to discover an ‘alternative Prague’ and I strongly suggest you do the same. e

ALMERÍA

A PARADISE WITH A LEGENDARY WESTERN LEGACY

Panoramic view of Almería city from the Alcazaba fortress

Almería is a hidden gem in southeastern Spain, known for its captivating contrasts and stunning beauty. With sun-drenched beaches, rugged desert landscapes, and a rich historical tapestry, it’s a place that enchants visitors from around the world. But beyond its natural allure and cultural heritage, Almería holds a special place in the annals of cinematic history. This region is iconic as the backdrop for some of the most famous Western films of the 1960s, including Sergio Leone’s legendary ‘Dollars Trilogy’ starring Clint Eastwood.

A CULTURAL JOURNEY

Beyond its cinematic connections, Almería is a region rich in culture and history. The city of Almería itself is home to a stunning array of historical sites, including the Alcazaba, a massive fortress that dates back to the 10th century. From its commanding position overlooking the city and the Mediterranean Sea, the Alcazaba offers breathtaking views and a glimpse into the region’s Moorish past.

The city’s cathedral, originally built as a mosque and later converted to a Christian church, is another architectural gem. Its unique design, blending Gothic and Renaissance styles with elements of fortification, reflects the tumultuous history of Almería. Walking through the narrow streets of the old town, visitors can discover charming plazas, hidden gardens, and vibrant markets that offer a taste of local life. ›

BEACHES AND BEYOND

Of course, no visit to Almería would be complete without spending time on its pristine beaches. The coastline here is dotted with beautiful, unspoiled stretches of sand, where crystal-clear waters invite swimmers, snorkellers, and sunbathers. Playa de los Muertos, with its striking turquoise waters and dramatic cliffs, is often cited as one of Spain’s most beautiful beaches. For a more secluded experience, head to Playa de los Genoveses, a crescent-shaped bay surrounded by dunes and lush vegetation.

The Alcazaba
Cathedral of Almería city

For those seeking adventure, the Cabo de Gata-Níjar Natural Park offers a wealth of outdoor activities, from hiking and cycling to kayaking and diving. This protected area is home to a remarkable array of flora and fauna, as well as some of the most stunning coastal scenery in the Mediterranean. The park’s diverse ecosystems, ranging from volcanic mountains to salt flats, provide endless opportunities for exploration and discovery.

CULINARY DELIGHTS

No journey to Almería would be complete without indulging in the region’s culinary offerings. Almerian cuisine is a delightful blend of Mediterranean flavours, with an emphasis on fresh seafood, locally grown produce, and traditional recipes. Tapas are a staple here, with an endless variety of small dishes to sample, from gambas al ajillo (garlic shrimp) to migas,  the traditional Spanish dish made from leftover bread crumbs. Each tapa is a small masterpiece, offering a

burst of flavour and a glimpse into the region’s culinary traditions. One local specialty not to be missed is the ajo colorao, a hearty stew made with red peppers, garlic, potatoes, and cod. This dish, like many in Almería, reflects the region’s history of resourcefulness and creativity in the kitchen. Pair it with a glass of local wine or a refreshing tinto de verano (a light, fruity wine cocktail), and you have a meal that captures the essence of Almería’s culinary heritage. ›

FESTIVALS AND TRADITIONS

Almería is also known for its vibrant festivals and traditions, which offer a deeper insight into the local culture. One of the most significant events is the Feria de Almería, held in August. This week-long celebration features parades, bullfights, flamenco performances, and a variety of cultural and recreational activities. The streets come alive with colour, music, and dance, creating an unforgettable atmosphere of joy and community.

Another notable event is the Semana Santa (Holy Week), when the city

hosts elaborate processions that commemorate the Passion of Christ. These are marked by their solemnity and grandeur, attractomg visitors from all over Spain and beyond.

A LANDSCAPE LIKE NO OTHER

Almería’s unique landscape is one of its most striking features. The region boasts an array of natural wonders, from the arid expanses of the Tabernas Desert to the lush greenery of the Cabo de GataNíjar Natural Park. This diversity makes Almería a paradise for nature lovers and outdoor enthusiasts alike.

VISITESSENTIALMAGA

The Tabernas Desert, often dubbed ‘Europe’s only desert’, is a stark yet mesmerising expanse that has remained largely unchanged for centuries. Its dramatic terrain, with rolling sand dunes and jagged rock formations, creates an almost otherworldly atmosphere. This arid beauty, coupled with over 3,000 hours of sunshine a year, provided the perfect setting for filmmakers seeking to recreate the American Wild West on a budget.

THE BIRTH OF SPAGHETTI WESTERNS

In the 1960s, Almería became synonymous with a new genre of film: the Spaghetti Western. These films, primarily directed by Italian filmmakers, sought to reinvent the classic Western by infusing it with European sensibilities and distinctive style.

Playa los Escullos

The most iconic of these directors was Sergio Leone, whose Dollars Trilogy transformed both the genre and the landscape of Almería.

Leone’s trilogy, consisting of A Fistful of Dollars (1964), For a Few Dollars More (1965), and The Good, the Bad and the Ugly (1966), starred Clint Eastwood in his now-legendary role as the laconic Man with No Name. Almería’s rugged desert and desolate towns provided the perfect backdrop for Leone’s gritty, atmospheric tales of gunslingers, bounty hunters, and outlaws. The hauntingly beautiful music of Ennio Morricone, paired with Leone’s innovative cinematic techniques, helped to create a new and enduring cinematic mythology. ›

EXPLORING ALMERIA’S CINEMATIC LEGACY

Today, visitors to Almería can step back in time and explore the many locations that brought these films to life. The Tabernas Desert remains the heart of Almería’s cinematic legacy. Here, the original film sets and locations have been preserved, allowing fans and curious travellers to walk in the footsteps of their favourite characters.

One of the must-visit spots is Oasys Mini Hollywood, a theme park that was originally built as a film set for For a Few Dollars More. This charming recreation of a Wild West town offers live shows, a zoo,

and even a swimming pool, making it a fun and educational destination for families and film buffs alike. Other notable sites include Fort Bravo and Western Leone, both of which continue to offer immersive experiences for those looking to relive the glory days of the Spaghetti Western.

As you wander through its landscapes and towns, it’s easy to see why Almería has captured the imagination of so many. It’s a place where legends were made, both on and off the screen, and where every visit feels like a new adventure. So, pack your bags and set off for Almería, a sunkissed paradise with a legendary past that continues to enchant and inspire. e

THE FOUR SEASONS RESORT MALLORCA

OPENS ITS DOORS AT FORMENTOR

WORDS MARISA CUTILLAS PHOTOGRAPHY COURTESY OF THE FOUR SEASONS RESORT MALLORCA

Formentor, a pine-covered cape located on the northern tip of Mallorca, is known for its rugged cliffs that pierce the Mediterranean dramatically, providing breathtaking panoramic views – especially from the Mirador Es Colomer viewpoint. At 200 metres high, this spot offers a unique canvas comprising various shades of blue and green. It is embraced by the Serra de Tramuntana and its beaches, including Playa de Formentor, are lined with fine white sand. Despite its wealth of natural offerings, it is also home to stunning architectural sites like a romantic lighthouse and the iconic Hotel Formentor, which has been extensively renovated and reopened as the new Four Seasons Resort Mallorca.

The original hotel, which was ensconced within a 486-hectare nature reserve, was built by Argentinean millionaire and art lover, Adán Diehl. Taken by the area’s beauty, he purchased a sizeable plot of land from the Costa i Llobera family for just 520,000 pesetas (a little over €3.000). The Hotel Formentor opened its doors in 1929 and welcomed a myriad of celebrity guests, including Winston Churchill, Audrey Hepburn, Grace Kelly, and the Dalai Lama. Today, it boasts a beautiful design and the modernity one would expect from a luxury resort bearing the Four Seasons name. ›

The hotel comprises 100 sleek, stylish accommodation options, including 31 suites – all with a comfortable terrace and many with plunge pools. The rooms are front-facing and enjoy the views of gardens, pines, and the sea. They are modern and nature-inspired, with light, sandy hues holding sway and all the creature comforts that guarantee a restful stay – sizeable beds, designer furniture items, and wooden fittings that align with the biophilic design concept. The lodgings range in size from around 40m2 (the size of the Garden- and PineView Rooms) to 126m2 (the Royal Suite). The latter houses three adults and one child or two adults and two children and features an expansive living room, separate dining room, and three bedrooms. Its extensive terrace with a private jetted tub is the perfect place from which to catch breathtaking Mediterranean views.

The array of dining options is as you would expect for a resort of this calibre. The Mediterranean restaurant, Mel, is named after the Catalan word for honey. Its menu is inspired by farm-totable freshness and contains a host of scrumptious Mediterranean dishes. If you’re by the pool and prefer to keep things casual, head to the Quiosc Pool Restaurant & Bar and tuck into light snacks and refreshing drinks crafted with the finest ingredients. There is also the Xiringuito Beach Bar, smack bang on the Playa de Formentor. In the summer, you can savour satisfying snacks and drinks while enjoying the sea views. For a drink with chic company, we recommend Cercle, the lobby bar whose name pays homage to its circular shape. There are exciting openings lined up for 2025, including Shima (a Nikkei cuisine restaurant), Crocant (an artisan ice-cream shop), and Sospir (a pastry shop). Guests can also avail of the 24-hour in-room dining service. ›

The Four Seasons is home to a blissful spa, which celebrates the natural wonders that surround the resort. Guests can choose from many massage and skin treatments that embody an ecobeauty philosophy. The treatment rooms invite

one to pause, rejuvenate, and reconnect with the profound healing powers of nature. If you are planning a romantic weekend, we recommend sharing side-by-side treatments with your partner and relaxing in an ensuite bathroom complete with its oversized tub and separate shower.

A stay at this hotel doesn’t just have to be about laying back. Energise your exercise routine at the 24-hour fitness centre, fitted with the latest Technogym equipment for cardio

and weight training. You can also hone your fitness on the resort’s extensive hiking and biking trails, enjoy private yoga classes, or take a dip in any of the three heated pools. In the swimming areas, you will find comfortable lounge chairs, umbrellas for shade, and private cabanas. The friendly Four Seasons team brings guests fresh towels, iced water, cocktails, and complimentary treats –what’s not to love?

DESIGN WEEK MALAGA ´

TAKES PLACE AT FYCMA MÁLAGA FROM OCTOBER 23 TO 27

PHOTOGRAPHY CHARLY SIMON PHOTO AND DESIGN WEEK MÁLAGA
A stunning home by JMR Arquitectos
Over 600 professionals and 15,000 visitors will be gathering at the Palacio de Ferias y Congresos de Málaga for one of the most important yearly events in architecture, construction, and interior design. Marisa Cutillas reports.

The muchanticipated Design

Week Málaga (DWM) will be open to the public at the Palacio de Ferias y Congress de Málaga (FYCMA) from October 23 to 27. It will serve as a meeting point for architects, interior designers, decorators, landscape artists, real estate firms, constructors, suppliers, artists, promoters, and tourists from Spain and abroad. The focus will be on avant-garde, luxury design, which aligns perfectly with the

Coast’s high-end real estate offerings. There will also be an exclusive programme for exhibiting companies from October 21 to 22 at associated DWM Urban venues.

The founders of DWM define it as “a fair where the latest trends and innovations in architecture and construction, design and interior design, and interior architecture can be discovered.” It differs from previous exhibitions in terms of its concept, organisation, and structure, promising an original and professional approach that is rich in academic content and local participation. They have enlisted the support of a prestigious list of sponsors, including STRONGFORMS, a company that creates high-end modular aluminium formwork to enable the rapid construction of in-situ concrete structures such as one-family homes, walls, platforms, columns, and swimming pools. Participants will include highly renowned

construction firms such as M&V Design, MDBP Studio, and Sebastián González with Bali Arquitectura y Urbanismo.

DISCOVERY AND NETWORKING

At DWM, professionals and design lovers will find a host of events to keep them entertained. There will be numerous exhibitions, talks, and conferences. The list of participants is impressive and includes the Official College of Andalusian Decorators (the Colegio Oficial de Decoradores de Andalucía), Goccia Spa, MLKT Architecture and Design Solutions, Engel & Völkers, the Málaga College of Architects (the Colegio de Arquitectos de Málaga), and the Junta de Andalucía. The Official College of Decorators of Andalucía will have a dedicated stand where professionals can present their latest work and liaise with movers and shakers in the industry. ›

The official presentation of Design Week Málaga

Recent editions of DWM have revealed the extent to which freedom of vision and artistry are celebrated. At past events, visitors were able to peruse everything from gorgeous works of art to designer furniture pieces, innovative construction materials, and completely designed spaces seemingly taken from high-end show homes.

They were also able to appreciate the work of some of the industry’s most talented firms and individuals up close. The list of renowned participants includes names like JMR Arquitectos, a contemporary architecture

firm known for its elegant, personalised, meticulously undertaken work. This company has given life to many sustainable projects created with natural materials and the integration of vegetation in carefully selected places.

Also worthy of mention is Estudio Baelo, which specialises in creating stories within personalised spaces, where tradition meets the very latest advances in technology. The firm is known for creating singular spaces that nevertheless pay heed to a distinctly Andalusian identity.

FREE CONSTRUCTION

Features to watch out for this year include the Free Construction Zone (the ‘Zona de Libre Construcción’), a new concept that allows architects, interior designers, constructors, and providers to reveal their work. FYCMA offers over 6,000 m2 of space for participants to display their creativity and demonstrate the potential of their respective firms. This year will also feature more ‘contract projects’ such as designs for offices, restaurants, conference rooms, kitchens, and more

AUDIENCE INVOLVEMENT

There will be prizes for creativity and innovation and, for the first time in DWM’s history, the public will be able to vote for their favourite projects in a couple of categories. The list of accolades covers interior design, architecture, and construction, and companies will also be rewarded for sustainable material proposals and optimal design of their commercial stands.

SOCIAL MEDIA PLAYS A STARRING ROLE

Design Week Málaga has developed an app that allows visitors and professionals to access all scheduled events, exhibitions, video content, images, and more. The schedule contains the full lineup of speakers and topics to be discussed. The app will provide attendees with a rich opportunity to network and catch up on any events they may have missed. It has cool features like badges (which permit attendees to share information about themselves via a QR code) and a chat feature, which

Finally, Mármoles Martín, a specialist in the extraction of natural stone and exclusive materials for homes, will be joining the Official College of Andalusian Decorators, to show off the beauty of natural and artificial stone.

A LOVE OF NATURAL MATERIALS

There is no doubt that natural stone has been a big player in high-end design over the past few years, owing to its

beauty, durability, and versatility. This material will be given due importance at DWM, thanks to the involvement of collaborators like the Association of Marble Entrepreneurs of Andalucía (the Asociación de Empresarios del Mármol de Andalucía) and the World Natural Stone Association (WONASA). The latter’s President, Anil Taneja (who is also the Director of the magazine, Litos Online) will be analysing new trends and applications of stone and revealing its importance in architecture and design at the dedicated conference, DWM Learn.

All this is made possible by the technology found in the video game, Unreal Engine, which works supremely when applied to architecture and design. Visitors will be able to enjoy a wealth of threedimensional experiences that will help them envision the near future.

THE VICIOUS MAGAZINE & DESIGN WEEK AWARDS

Prestigious electronic music publication, Vicious Magazine, will be awarding prizes to

celebrate the work of the hotel and beach club sector. The aim is to recognise the perfect combination of design and creativity (in an architectural and musical sense) offered by top entities. Awards will go to the best hotel and beach club (taking into account competing establishments’ design and electronic music offerings), the most innovative staging, and the people’s favourite venue.

It looks like Design Week Málaga is an event not to be missed if you work in real estate, architecture or design, or if you simply cannot resist an event that celebrates high-quality design for life.

Is it an escape room in an empty shopping centre? No, The Panic Room Company produces safety rooms designed to offer the ultimate peace of mind for owners of large properties.

THE PANIC ROOM ULTIMATE SAFETY

Modern technology means independent air, water and power supply, as well as continued communication with the outside world

We can’t deny it, the fact is that we inhabit an increasingly volatile world in which those who live in large luxurious homes attract unwanted attention from criminals of various kinds. For families and in particular people with small children this can be a constant worry, and while gated communities and highly sophisticated security systems offer a lot of peace of mind, for some families another level of protection is needed.

The panic room is not a new invention. It has been around for a long time, but modern technology has given it a level of effectiveness, comfort, and sophistication that is very new. “Our company also produces

ballistic-resistant windows and doors, and more recently we’ve also added nuclear shelters,” says Paul Weldon, Managing Director of The Panic Room Company. “Originally, we worked in what was very much a niche segment, with most of our market consisting of celebrities and important businesspeople who needed to feel safe in case of an intrusion, robbery, or attempt at kidnapping. In recent years, however, the market has grown considerably and attracted a global market base that exceeds our wildest expectations.”

A GROWING MARKET

You may find it hard to imagine, especially given the fact that these are not cheap commodities and are obviously aimed at a highly exclusive market, but demand for the company’s

products, especially its panic rooms, is growing hand over fist. “We’re originally a British company,” says Paul, “but also active across Europe and now truly around the globe.” It’s understandable if you’re familiar with the situation in Latin America, the USA, and large parts of the world, but a key growth market is Europe, and with its concentration of wealthy people owning large properties, Marbella is one of the most important markets within the continent.

“We see a lot of demand for panic rooms, but even so people sometimes associate them with the old ones and are surprised at how they have evolved and what they offer these days.” A panic room has always had to be invisible and undetectable to all but those who need to use them. ›

A modernday fortress that is even blast-proof

This means that especially if the facility is not incorporated into a villa’s design while under construction, it becomes a highly skilled job to assimilate one into an existing structure in such a way that it is invisible but functional. “In the majority of cases our systems form part of a new build, but we also pride ourselves on the ability to create solutions for existing homes.”

A HIDDEN SAFE PLACE OF COMFORT

A panic room is much more than just a space, or a reinforced one with a secure, impenetrable door. It is an entire system that builds upon advanced engineering, and has

to be capable of providing clean, breathable air, fresh drinking water, a power supply, lighting and cooling/heating, hygiene facilities such as a shower and bathroom, in many cases beds as well as emergency food supplies – even if the power or water supply to the home is cut.

In other words, the panic room is an independently functioning entity within the property –much like a little home within the larger house.

The panic room is therefore a vital survival support system and safe refuge in case of an intrusion, attack, or some sort of natural or manmade disaster – a true safe space that can save your life and

wellbeing. It not only has safe backup systems for air, water, and power supply, as well as comfortable facilities, is sealed, blast-proof, and has an unfindable, impenetrable structure, but above all, it must maintain communication capacity with the outside world, especially the security forces.

“The panic room is designed for temporary use,” says Paul. “It is a transitional solution but can also be made to accommodate people for longer periods of time. With the right infrastructure, all of this is possible.” He emphasises that while there are standard options, the company also produces made-to-measure

A made to measure unit that becomes an independently functioning part of the home

solutions built around the client’s specific needs and requirements.

“The true skill is to create a secret safe space that no-one will find or be able to breach. One that provides comfort and all required amenities and gives you peace of mind in any situation. That is what our clients are after, and we’re providing it in a great many different locations around the world.”

LAMBORGHINI TEMERARIO

How will Lamborghini hope to keep the fire alive after retiring its legendary V10 engine? By giving life to an all-new 907bhp hybrid monster!

WORDS SAM HEXTER PHOTOGRAPHY COURTESY OF LAMBORGHINI

Given the Huracán has reached its tenth year in production, it was inevitably time for Lamborghini to revise its ‘entry level’ model. But much to the dismay of the motoring world, it would come at the cost of the petrol-powered symphony that was its naturally-aspirated V10 engine. The same V10 that first appeared back in 2003 in the Gallardo, and later in Audi´s formidable R8. Lamborghini pulled the cover off the Huracán´s long-awaited successor during Monterey Car Week 2024, showing the Temerario to the world for the very first time. ›

VISITESSENTIALMAGA

So, what will power Lambo´s new Temerario? It´s an all-new twin-turbo 4.0-litre, flat-planecrank V8, mated to not one but three electric motors – with a motor on each end of the front axle, and the third between the engine and gearbox. Pretty trick. The output promises to be staggering. The Temerario´s new heart will pump out a massive 907bhp and a healthy 590lb ft (730 nm) of torque, a substantial leap above the output of the V10 Huracán Evo, that peaked at 631bhp. The new drivetrain will rev out to an immense 10,000rpm – ultra impressive for a turbocharged V8! The result promises to see you off to 100km/h in a mere 2.7 seconds and onto a top speed of 343km/h. Maybe this hybrid lark isn´t as bad as we´d feared. Unsurprisingly for a car boasting hybrid tech, the

Temerario is heavier than its predecessor, with a dry weight of 1,690kg.

Despite the powertrain being of a hybrid persuasion, Lamborghini claim the sound produced by the Temerario to be “immense” and has put a lot of focus on having the new powerplant still sound like a Lamborghini. According to the marque, there are absolutely no compromises being made to the signature expectation of

what a Lamborghini experience should be, behind the wheel or simply watching one drive down the street. It promises to be emotive and visceral, like the cars that came before it, and in-line with some of its V12powered stablemates.

The styling of the Temerario is also pushing in a new direction over the outgoing Huracán, though it remains unmistakably Lambo thanks to a wide, wedge-shaped hood,

plucked rear, and angular aero parts hidden across all exterior surfaces. The flanks feature large intakes that are recessed behind the doors, and the deck above the engine is louvered to aid airflow into the new powerplant. The rear section is possibly the best view of the Temerario, offering up a neat cut-away section either side of the rear diffuser, to show-off some of the massive rear section of rubber adorned on the back wheels. The car´s underbody features vortex generators that help channel airflow towards the diffuser for maximum efficiency. Lamborghini claim the Temerario to be 103 per cent more aero efficient than the Huracán Evo, and that increases to 158 per cent with the optional ‘Lightweight Pack’ applied. ›

Inside the cabin, the designers have struck a careful balance between record-smashing lap times and around-town comfort – evident in the increased headroom, allowing occupants to sit comfortably in racing garbs and helmets, while also offering a look at the new generation of Lambo´s luxurious interiors. There´s a lot to take in, from all-new switchgear to infotainment system, all with the quality hallmarks and a plethora of bespoke options for new owners to tailor their Temerario experience, with colourmatched stitching, carbon fibre, and soft leathers. The Temerario also boasts new 18-way adjustable seats, that are both heated and ventilated. Owners can additionally spec a carbon-fibre double shell if desired. Luggage space is improved from the Huracán too, up to a total of 112 litres.

Hardly a grand tourer, but a welcome addition.

The Temerario is available in two forms, the base model, and the Lightweight Pack. Opting for the LW option will tailor your vehicle for maximum attack on track, though it´s still road legal. It ups the ante with carbonfibre parts, including front splitter, rear diffuser, intake covers, and underbody panels, plus the addition of Gorilla Glass and CFRP side skirts and rear hood. This helps to save 12.65kg over the base

spec, but most importantly is responsible for the improved aero efficiency. Make no mistake, in either form, the Temerario retains the marques look and feel of a luxury fighter jet!

If the Temerario is representative of the new innovative direction and performance capabilities of Lamborghini, then there´s a whole lot to get excited about with this release and beyond for the brand. Expect to start seeing the Temerario on the road from mid-2025. e

WHO IS RFK 2?

If JFK was John Fitzgerald Kennedy, former President of the United States, and his brother RFK was Robert Francis Kennedy, Attorney General and presidential candidate – until he too was famously assassinated, then who is RFK 2?

WORDS MICHEL CRUZ PHOTOGRAPHY COURTESY OF JOHN F. KENNEDY PRESIDENTIAL LIBRARY & MUSEUM, TEAM KENNEDY
Robert Kennedy Junior with his uncle, President John F. Kennedy © Abbie Rowe, John F. Kennedy Presidential Library & Museum

Born into the powerful Kennedy clan that produced the above two politicians, respectively his uncle and father, RFK 2 is in fact Robert Francis Kennedy Jr, a lawyer and politician who in many ways has followed in the footsteps of his illustrious family members. RFK, as he is more commonly known these days, has an impressive track record as a lawyer who

has been willing to take on big corporations, especially in relation to environmental issues, though he has also successfully represented consumers, indigenous people, and impoverished communities.

This earned the colourful Kennedy with a love of nature and conservation programmes such as Waterkeeper, a reputation as something of a maverick. As a Kennedy, it was pretty much automatic that he

should be a Democrat, and for a long time he was considered to belong to the more progressive, left wing of that party, particularly because of this environmental work and his efforts on behalf of indigenous groups and poor people of any colour or background. However, over time RFK became increasingly disillusioned with a party that, in spite of its rhetoric, was as closely allied to Big Money as the Republicans, and sometimes moreso. ›

A SHIFT OF FOCUS

To RFK the decision to step out of the Democratic Party is not the product of a ‘change of mind’ or a shift in his values. He argues that he believes in a clean, healthy world where the environment is nurtured, and efforts are made to reduce the growing disparity between rich and poor. As both problems have become increasingly

intense in recent years, he lost faith in either the Democrats or the Republics coming up with solutions, mostly because their career politicians have long since been in the pockets of the large financial institutions and power brokers.

This stance would have him branded as more than just a maverick, it made the media shout out ‘populist’, a

term usually used alongside ‘conspiracy theorist’ or ‘racist’ to discredit anyone who criticises the established order, and in this case it is accurate, for Robert Francis Kennedy is indeed a populist in the sense that he, at least on the surface, champions the interests of the broad population above those of corporate and financial America. His run-ins with them

had previously focused upon making big corporations stop dumping waste and chemicals in rivers and lakes, cleaning them up, and paying compensation to local residents, but when he stepped out of the Democratic Party and began to voice dissident political views, the knives were sharpened in an effort to reduce his popularity and possible impact on the elections.

RFK initially stood as a ‘third candidate’ – an independent in the 2024 US election race, but this summer dropped out and now endorses not a Democrat, but Republican nominee Donald Trump. This ‘dramatic’ change earned him criticism in itself, with accusations of betrayal to the party being voiced and his family distancing themselves from him in favour of the Democrats, who wasted no time attacking the doubts he has voiced over the background and handling of the Covid-pandemic, and the involvement of players such as Doctor Fauci and medical pharma giant Pfizer. ›

ON THE MEXICAN BORDER

“I’LL SECURE THE BORDER ON DAY ONE AND TAKE DOWN THE CARTELS WHO ARE CURRENTLY RUNNING OUR IMMIGRATION SYSTEM”

ON RISING POVERTY

“WE’RE LIVING AT A TIME IN THIS COUNTRY WHEN THERE ARE SO MANY AMERICANS WHO FEEL LIKE THIS WHOLE SYSTEM, THE ECONOMIC SYSTEM AND THE POLITICAL SYSTEM, ARE RIGGED AGAINST THEM.”

ON BEING SINGLED OUT

“SINCE THE ASSASSINATION OF MY FATHER IN 1968, CANDIDATES FOR PRESIDENT HAVE BEEN PROVIDED SECRET SERVICE PROTECTION, BUT NOT ME.”

ON INDEPENDENT CANDIDATES

“HALF OF THE ELECTORATE NO LONGER IDENTIFIES WITH ANY POLITICAL PARTY AND 63% OF AMERICANS WANT AN INDEPENDENT TO RUN FOR PRESIDENT. WHAT IS POLITICS GOING TO LOOK LIKE WHEN IT’S NO LONGER US VERSUS THEM?”

Add to this his scepticism about the media’s simplification of the war in Ukraine and claims that we’re in the midst of a wealth transfer from the middle classes to the super wealthy, along with an accompanying dilution of our freedoms, and the labels ‘conspiracy theorist’ and ‘Covid misinformant’ had already been printed and were ready to be used against him. This, together with a spate of negative media stories about him have indeed cut the momentum he had among the millions of disenchanted Democrat voters who would have struggled to opt for the ‘opposition’, but the picture created by a more or less united front has scuppered RFK’s plans, and it must be said, his speech impediment, spasmodic dysphonia, has also not helped.

The condition, which sees the voice muscles periodically spasm and distort his speech, has certainly been an impediment to success, but ultimately RFK has fallen foul of the powers that be, without being able to count upon the same level of anti-

establishment support that has made Donald Trump, another figure hated by the media, almost immune to attack. RFK is no angel. In the troubled years following his father’s murder he was a teenager and adolescent who got into trouble because of vandalism, drug consumption, and later also became a womaniser – it could be said something of a tradition

among several of his family members – but the politician, male, female, current or bygone, that has nothing in their past has yet to be found, so it remains a pity that this colourful maverick was not allowed to go up against the traditional American political monopoly of two and maybe kick up a little sand. Lord knows the country needs a fresh breeze, wherever it comes from... e

WhyLADY GAGA

JOKER: FOLIE À DEUX IS THE PERFECT FIT FOR HARLEY QUINN IN THE NEW

Most people we know are excited about the latest Joker film, Joker: Folie à Deux, starring the inimitable Joaquin Phoenix and another larger-than-life performer – Lady Gaga. The Applause singer is portraying Harley Quinn, one of the most beloved characters in the DC Comics universe. If you’re into comics, then you know that Dr. Harleen Frances Quinzel (Harley Quinn) is a complex character – a former psychiatrist who knows the difference between right and wrong but chooses wrong anyway. Her ‘psychiatrist self’ acts as her conscience, saving her from going totally berserk, but always arriving after Harley has already wrecked just a little havoc.

Joker: Folie à Deux is a love story built upon a toxic core. Harleen has always been attracted to criminals, and this time is no different. If you read the comics, you know that her high school crush was Bernie Bash, a boy who murdered her nemesis – an act she found rather touching. The character has deep psychological reasons for her preferences. Her father was a shady character who was always in and out of prison, and her mother, who had a promising medical career, lost it all when she met Harleen’s father and became pregnant with her. However, Harleen also has a soft side. She sees the Joker as a victim of circumstance and bad luck and is determined to love him unconditionally, even when he’s cruel to her. Their love story has elements of Emily Brontë’s Wuthering Heights. In many ways, Harley

Quinn and the Joker are two sides of the same person.

Gaga, always an artist who likes to push boundaries, is a fantastic fit for the role. In many previous films, she has played powerful, rather bizarre characters – starting with Countess Elizabeth in American Horror Story and progressing to Patrizia Reggiani – the murderous wife who hired a hitman to kill her ex-husband, Maurizio Gucci in House of Gucci. If you still see her as just a singer, take note. She is known for her Method process and has earned a string of awards for her work – including BAFTA, Screen Actors Guild, and Golden Globes, as well as Oscar nominations. Of course, she already has an Oscar, albeit for Best Original Song for A Star Is Born. In each of her films, she has brought something new and unexpected, so if you’re envisaging a rehash of Margot Robbie’s Harley Quinn, you’re in for a big surprise! ›

Joker: Folie à Deux ’s Director,, Todd Phillips has revealed that Gaga’s version will differ vastly from previous iterations. He compares Gaga’s version of Harley to Charles Manson’s female entourage, who idolised him despite his evil ways. The interpretation is very much in line with the comic book tradition, which sees young Harleen impacted by her parents’ toxic relationship – in particular, her mother’s

choice to be with a man who is constantly in and out of trouble. There is another twist –the new film has elements of a musical, with characters breaking into song. At the Venice Biennale, Gaga explained, “The music is used to really give the characters a way to express what they need to say because the scene and dialogue are just not enough.” Don’t expect Gaga to belt out heart-stopping tunes

like Shallow, though. Joaquin Phoenix was adamant that both the Joker and Harley Quinn should not sound like professional singers: “We didn’t want vibrato and perfect notes.” Gaga elaborated in an interview with The Hollywood Reporter : “I’m a trained singer… when I breathe to sing onstage, I have this very controlled way to make sure that I’m on pitch, and it’s sustained at the right rhythm and amount of time,

but Lee (Harley) would never know how to do any of that. So it’s like removing the technicality of the whole thing, removing my perceived art form from it all, and completely being inside of who she is.” Initial reviews have been mixed, with some critics saying that Gaga’s magnificence has not been fully demonstrated, and others arguing that the film is overly cautious and the plot a little thin. Others praise the film’s daring new direction, calling it one of the most audacious, brave, and creative films in recent times. One thing nobody denies is the great acting of two of the most iconic actors in modern American film. ›

So, what is Gaga currently working on? Something just as ambitious as a film with Joaquin Phoenix – her seventh studio album! At the end of the Gaga Chromatica Ball film premiere in L.A., a message appeared on the screen: “LG7. Gaga returns.” Gaga has also teased her fans on Instagram with images of her working over a piano. She was recently seen in the company of will.i.am, the talented performer and hitmaker who is the backbone of Black-Eyed Peas. will.i.am not only has a string of hits of his own but

is additionally an acclaimed songwriter and producer who has worked alongside Justin Bieber, Miley Cyrus, and Rihanna. While she was in Paris for the Olympics, she met fans outside her hotel and performed a few songs from the sunroof of her car. Early reports indicate that LG7 is going to be a rock album!

Gaga is enjoying a uniquely happy time in her life. She is dating Michael Polansky, a Harvard-educated tech investor and founder of multiple companies. They met at a cancer benefit, where Gaga

was the surprise performer, and became serious during the 2020 lockdowns. The pandemic, says Gaga, offered them a unique opportunity to spend time together and focus on each other, without work and other distractions getting in the way. In July this year, Gaga introduced Polansky as her fiancé to French Prime Minister Gabriel Attal, indicating that wedding bells may soon chime. She told InStyle that she looks forward to extending her family: “I am very excited to have kids. I look forward to being a mum.”

“THE MUSIC IS USED TO REALLY GIVE THE CHARACTERS A WAY TO EXPRESS WHAT THEY NEED TO SAY BECAUSE THE SCENE AND DIALOGUE ARE JUST NOT ENOUGH”

She is also working on a new mystery project, as she was spotted filming scenes late at night at the Louvre Museum in September 2024. Undoubtedly, she is a Queen Midas, bringing success to practically anything she is part of. Her army of loyal ‘monsters’ and film fans alike await whatever she has to offer with bated breath!

JOKER: FOLIE À DEUX WILL BE RELEASED IN THEATRES ON OCTOBER 4, 2024.

HOW TECHNOLOGY IS SHAPING THE FUTURE OF THE FOOD WE EAT

Food technology is the answer to a myriad of problems – from food scarcity to global warming. Take the problem of animal-sourced proteins, whose production causes 18 per cent of the world’s greenhouse gas emissions. Today, numerous companies are investing time and money in finding the best alternatives to animal protein, and technologies like cellular agriculture are helping them achieve their goals. Read on to discover these and more

technologies that are helping us find better ways to produce, distribute, and consume food.

CELLULAR AGRICULTURE AND MOLECULAR FARMING

Cellular agriculture involves recreating animal proteins, fats, and tissues from cultured animal cells. It relies on biotechnologies such as tissue engineering, molecular biology, and synthetic biology to produce agricultural products without needing the entire host organism – just the cell. These

technologies can be used to create molecules (such as proteins and fats), which in turn can be converted into items like eggs, milk, or plant-based alternatives. One method, called precision fermentation, involves inserting genetic material into a microbe. For instance, if scientists wish to make milk, they can insert the gene carrying the blueprints for cow casein (a milk protein) into a microbe. Because all cells read the same genetic code, the microbe, now carrying the cow casein gene, can produce casein.

3D-PRINTED FOOD

3D-printed food technology is advancing rapidly, allowing for the creation of personalised food and diets with programmed shapes, colours, mouthfeel sensations, and trueto-life textures. While the most obvious market for 3D-printed food comprises vegans and vegetarians, this technology can also be used to create food for groups with specific needs – including the autistic community, the elderly, and others who may be struggling with sensory difficulties.

DESIGNER CROPS

Designer crops are created via genetic manipulation of a native plant genotype using advanced molecular biology techniques. These techniques are used to improve resistance to pests and diseases, enhance flavour, and increase nutritional profiles. Imagine produce with higher levels of antioxidants and Vitamin C (or a longer shelf life) than standard fruit. Today, scientists are designing RNA sequences that can suppress genes associated with ripening, extending freshness and reducing food wastage.

BLOCKCHAIN TECHNOLOGY

Blockchain is usually discussed in the context of crypto and finance, but some food companies are using it to manage supply distribution. Blockchain can help identify exactly where products come from and all the distribution points they have reached. For example, an organic meat store can trace a package of chicken to ensure it comes from an antibiotic-free supplier. Restaurants can use blockchain to ensure that food remains safe as it moves through the supply chain.

PERSONALISED NUTRITION

New food technology is enabling more tailored approaches to nutrition through advancements such

as microbiome testing, which allows dietitians to recommend nutritional regimens based on gut health. Those wishing to follow a customised diet also have access to AIpowered apps, which provide personalised meal plans and nutritional advice. The Nootric app, for example, offers users a customised plan created by a qualified dietitian. It takes into account preferences, allergies, intolerances, and nutritional goals, and offers mindful eating and cognitive-behavioural tips to eliminate stress-induced binge eating and help with goals like weight loss. Microbiome testing is also growing in popularity, allowing dietitians to identify the different types of bacteria in a client’s GI tract and recommend diets targeted to their specific health needs. ›

FUNGI-BASED MEAT PRODUCTS

Mushrooms have an amazing capacity to nourish and heal human beings. Currently, they are already a component of many medications and are leading the fight against antibiotic-resistant bacteria. The Spanish company, Innomy, is harnessing the power of specific mushroom

strains and employing biotech processes to create delicious alternatives to traditional meat. It capitalises on fungal mycelia and repurposes industrial by-products as valuable raw materials. The company has secured €1.3 million in funding since its inception.

The future of food looks brighter, healthier, and more

nutritious. Technologies such as cellular agriculture hold promise for creating popular products without the major carbon footprint that current processes leave behind. New technologies also promise to provide healthier options for consumers, including personalised nutritional programmes and plant-based alternatives to meat. e

MODERN MANSION BY THE BEACH

PHOTOGRAPHY COURTESY OF ENGEL & VÖLKERS

The expansive rooftop lifestyle area with outdoor kitchen and unequalled sea views

Situated a hundred metres from some of the finest stretches of beach in Marbella, this architecturally advanced villa has a touch of Bond-like refinement about it. The six-bedroom property covers a built area in excess of 875m2, with extensive terraces that offer varied views of a perfect lawn and pool where shades of green and blue compete with one another, the surrounding greenery of beachside Elviria, and of course those prized impressions of the Mediterranean Sea, punctuated by the outlines of Africa and Gibraltar in the distance.

The iconic shape of Marbella’s La Concha Mountain is another companion in this exclusive home, where rooms flow seductively from one into the other to create a succession of spacious yet intimate areas. From the rooftop terrace, with its outdoor kitchen and areas for lounging and dining, the world is yours with the sea at your feet. This is a private, secluded zone, where walking to the sandy expanses is part of your daily routine. Inside the property, privacy reigns, within the home as well as its garden and outdoor spaces.

The double-height ceiling adds to the impressive interior architecture of this modern mansion, completed with interior design by Pedro Peña, which blends not only exquisite taste and quality furnishings, but also fine attention to every possible detail. Light and views flow into a fresh and welcoming living environment that breathes sophistication amid a great many decorative pieces and artworks that offer such detail for the eye. Glass stairs take you up to a mezzanine gallery that leads to the private bedroom suites. These beautifully appointed

rooms offer space and views within a very intimate and comfortable environment, complete with gorgeous modern bathrooms dressed in the finest marble, in this case evocatively veined brown marble pieces rich with the texture of tropical regions. It is the detail that makes all the difference, as it sets the tone for a very soothing and luxurious feeling. That sensation varies in the different bedrooms and bathrooms, as each has its own configuration, materials, and colour tones while retaining the overall style of the home. ›

A CLASSIC MANSION IN A MODERN SKIN

Approach your home, by car or on foot, and you’re greeted with the soothing murmuring of a Zen style fountain of water that flows down a marble cascade. It’s the ideal way to arrive at the garage or make your way up to the impressive front door but park your car in the large garage and you can head straight for the entertainment area on the lower level, which includes a modern wine cellar as well as a luxurious lounge area with home entertainment and accompanying amenities.

A classic yet also highly modern feature again reminiscent of a ‘Bond villa’ is the view of the swimming pool – in this case not looking out at water but below the surface. It adds a certain intrigue to an already impressive modern home whose architectural design and geometric detailing form a fine contemporary interpretation of mid-century modern architecture. To this, can of course be added a whole list of top-shelf modern luxury, as befits a 21st century version of a classic mansion. These include state of

the art security and home automation systems, a top of the range kitchen with the finest appliances, underfloor heating throughout every one of the three levels of the villa, which are all connected either by elegant staircases or by a modern lift, as well as a high- definition entertainment system and a modern wine cellar that maintains different types of vintages at the exact temperature required. The same is true of the rooftop lifestyle area, whose wet kitchen offers everything from refrigeration to cooking and washing up appliances. ›

Tall ceilings and open-plan interiors filled with natural light characterise the living area

Designed for optimal stylistic impact as well as enjoyable homelife and of course entertaining in the very finest fashion within the Marbella climate, this modern property is a well-rounded offering that starts at the entrance gate and continues through manicured gardens, ambient water features and a poolside area to an impressive openplan living area with modern patio up to the private bedroom suites and beyond, where it has not one but two distinct entertainment and lifestyle areas – one indoors and one outdoors. ›

It is exactly this variety of options, including over 270m2 of terraces that each offer a different ambience with their own perspective of the views, which makes this seaside villa in Elviria a modern mansion for the 21st century. Its situation within a stroll of some of the finest sandy beaches – also close to golf courses, a marina, and a host of other amenities – completes the long list of attributes, and naturally a property of this standing comes with the very best in interior design and furnishing, in this case in the form of a made-to-measure project by Pedro Peña, one of the most renowned interior designers in the region.

A modern work of art, this mansion by the beach does its setting proud to become a property with the credentials of a timeless classic, thanks to quality of design, decoration, and detail of the kind not frequently seen even in the finest homes.

For lovers of the good things in life, this is a little piece of heaven within earshot of the Mediterranean.

LA FLORIE

FLORAL BEAUTY ALL THE TIME

WORDS MICHEL CRUZ PHOTOGRAPHY COURTESY OF LA FLORIE

Step into a stylish home, restaurant, hotel or office complex and you will often see that impressive plants and trees line the entrance and grace interiors and terraces. Who maintains all of that is the question that comes to mind, and sometimes the answer is simple...

Maintaining a large number of plants and trees in the indoor and terrace areas of a private home or commercial premises can be a fulltime job in its own right, especially if you want to keep everything looking perfect and fresh all the time. Where perfect presentation is of great importance, as in the case of an exclusive venue, battling against the elements, in the form of wind, rain, sunlight, and dust, is an ongoing concern, and to this can be added the plants themselves, whose falling leaves, rotting biomass, and the fact that they eventually wilt and also attract insects do create something of a headache. ›

Hanna Rebecca Tõnsberg manages La Florie in Marbella

Nature is of course the preferred option wherever possible, but in some situations it isn’t the most practical prospect, especially if you also have to use scarce water resources to irrigate plants in outdoor and indoor parts of homes and commercial venues. A solution that saves

especially manpower but also water and which looks picture perfect all the time is the practical answer to this problem, and it comes in the form of beautifully handcrafted artificial plants and trees made from quality materials, including real bark, highspecification silk, and other

fabrics – all with a level of realistic detail that is nothing short of perfection and makes them virtually indistinguishable from the real thing. La Florie is the local company that specialises in this field, and although having only opened its Marbella showroom in January, is finding a ready market. ›

Helping to create the ambience in a luxury hotel spa setting

INTERIOR AND EXTERIOR DESIGNED

Though they still operate the original showroom in Tallinn, Estonia, Hanna Rebecca Tõnsberg and her mother, Triin Hirtentreu, recently opened the Marbella edition of La Florie and have been overwhelmed by its success. “We have a strong client base in the Baltic countries, but the response to our offering has been fantastic in Marbella,” says Hanna, who runs the business while her mother manages the company’s interior design projects. “We sell plants and trees of all types and sizes – up to six metres tall – to the public, businesses, and also interior design studios, but a large part of our work comes from our décor projects.”

The Maria Spa Atrium, Helsinki

The company has already consolodated a solid reputation in the Nordic countries, where La Florie is an established concept among the owners of private homes as well as those who need to decorate luxurious shops, offices, restaurants, leisure and entertainment venues, and of course hotels.

“A good example is The Maria Hotel in Helsinki, Finland,” says Hanna. “It is a super luxurious and exclusive hotel in the heart of the city, within a prime location close to the

Presidential Palace, Senate Square and the very best spots, so very popular with high-end visitors to Finland. We took care of providing for an extensive requirement of plants and trees in the many interior spaces, lobbies, terraces, and entrances, and integrating it smoothly into the overall architectural redesign and interior styling project.”

The result is rather spectacular in what has become perhaps the number one reference of luxury and

refinement in the Finnish capital. “The Maria Hotel blends classical style and refinement with wonderful modern touches and features, and the end result is truly impressive.” A project of this scale requires professional coordination and an advanced design plan, not to mention a very comprehensive range of plants and trees suited to patios, terraces, long corridors, imposing entrances, the spa zone, ambient lounge, bar and dining areas, as well as within the private suites themselves. ›

The Concierge desk at The Hotel Maria in Helsinki, one of La Florie’s notable clients

“To take care of so much greenery and attempt to maintain it at the consistently high level we can provide would have required a lot of ongoing manpower and investment, whereas now the hotel has beautiful plants and trees that form part of its décor and ambience, and will remain in top condition for many years to come.”

As a professional interior designer, Triin oversees projects of this kind, as well as working with other designers and landscapers to integrate La Florie’s plants and trees into home

or commercial venue interiors, patios, terraces, entrances, and other outdoor spaces. “We have our own team that takes care of everything from delivery and installation to styling and making sure everything is absolutely perfect.” This also includes coordinating with the lighting in the room or outdoor space, and blending into the architectural and interior design concept. Much more than just a supplier of the finest specialist artificial plants and trees, La Florie provides complete solutions. ›

Adding a natural tone to a spa zone

“It makes sense that our service would find a ready market in Marbella, not just because there are many luxury properties and exclusive commercial venues, but also because the climate and conditions can make looking after real plants difficult,” says Hanna.

“A lot of homeowners don’t live here year-round, so have different La Florie indoor and outdoor collections, both very extensive with a truly amazing variety of choice. The exterior plants

are treated to be highly resistant to wind, rain, dust, and sunlight, with protection from UV rays so the colours and textures don’t fade or deteriorate.”

La Florie uses Instagram to showcase its latest projects and creations, where it is practically impossible to tell the product from the real thing, such is the quality and detail, including fruit trees, towering palm trees, pot plants, ferns, hedges, and so much more. ›

La Florie provided the plant design project for the Garden Terrace of The Hotel Maria in Helsinki

“We are moving to a new and larger showroom in San Pedro polígono, where we will be able to showcase a larger selection of the products available, as well as a truly broad range of pots in so many different sizes, shapes, colours, materials, and textures. Plus, if you like something even more specific, we can source it, as we already do for clients in the Nordic countries, France, Belgium, and Spain.” That circle is widening all the time, as La Florie offers a very specific solution to homes and venues: floral perfection at all times. e

Far from just working to alleviate pain, Sonic Physio staff are committed to taking a curative and reinvigorating approach. The clinic leverages advanced technological innovations, including the following treatments:

Z PRESSOTHERAPY: This treatment acts on the lymphatic and venous systems. It comprises a wrap covering the area to be treated (including the legs, buttocks or abdomen) and an air compressor system. Pressure is applied in a

controlled manner, alternating compression and relaxation, to activate the lymphatic and/ or venous systems. It is used to treat lymphedema, fluid retention, venous return issues, and varicose veins, as well as to eliminate toxins.

Z SHOCK WAVES: a noninvasive treatment involving the application of alternating positive and negative pressure phases with a sufficient tensile force to cause cavitation in a fluid. Indications include plantar fasciitis, Achilles tendinopathy, delayed healing, and more. This treatment is used widely in regenerative medicine, musculoskeletal rehabilitation (to treat inflammation and other processes), and pain relief. It is also widely used to disintegrate kidney and pancreatic stones, as well as aesthetics and dermatology. ›

Z CRYOTHERMAL THERAPY: A physical therapy that employs cold to treat a plethora of issues, including recent trauma and sequelae of trauma, bursitis, arthrosynovitis, tendonitis, and rheumatic diseases. Its adjunct therapy, thermotherapy (involving heat) is used to address bruises, sprains, bursitis, muscle strains and tears, syndromes with spinal muscle contractions, rheumatoid arthritis, back pain, and more. It can also be used to prepare for physical exercise during the muscle warm-up phase. Some treatments involve the contrasting use of heat and cold cycles to treat oedema, pain, muscle contractures, ligament inflammation, and more.

Z HIGH-POWER LASER: This technology consists of

high-energy artificial light that penetrates deeply into body tissues. It acts on the cell membrane, generating a photochemical effect that facilitates tissue regeneration. It is used for various pathologies, including muscle (tears, contractures, and fibrosis), tendon (tendinopathy, tenosynovitis, bursitis), and ligament (sprains and distortion) pathologies.

Z CELLOXY: A medically certified device that applies intermittent hypoxic, hyperoxic/ normoxic therapy, also known as IHHT. The machine essentially delivers hypoxic air gas, which causes changes in cellular metabolism that have a positive effect on health. Hypoxic gas is the main trigger for the accelerated proliferation of new, healthy mitochondria

(the powerhouses of cells). It helps to eliminate exhausted, dysfunctional mitochondria and boost the production of new, healthy mitochondria.

All these treatments are non-invasive and painless but they are highly effective, allowing patients to enjoy faster, more efficient healing and relief than standard treatments. Sonic Physio also offers manual physiotherapy and treatments such as chiropractic, osteopathy, sports massage, relaxing massage, and urgent therapy, as well as personal training and aesthetic treatments.

The clinic is modern, ample, and stunningly designed. Parking is easy and the lively Puerto Marina is a stone’s throw away, which is convenient for friends or family members wishing to spend some time while a loved one is being treated.

BEHAVIOURAL PROBLEMS IN CATS HOW TO QUELL

As much as we love our furry felines, we may occasionally be called upon to curtail unwanted behavioural issues. One study published in the journal Frontiers has revealed that a majority of cat owners report that at least one cat has one or more current or previous behavioural problems. If your household is struggling with a few pet-related challenges, you certainly aren’t alone. The good news is that there is a great deal you can do to improve the situation. For instance, if you have two or more cats that don’t get along, a simple strategy such as providing multiple separate food areas can reduce the issue of ‘resource guarding’. Below are

a few more common problems and tips.

» SOILING THE HOME

The most common feline behavioural issues are linked to elimination. If your cat is doing a number one or two outside their litter box, tell your veterinarian about it. Your vet will most likely ask you questions about how and where accidents happen. They will want to know how many litter boxes you have, how often you clean them, and what type of litter you use. They will also likely take blood and urine tests to rule out medical conditions.

The vet will work alongside you to address underlying anxieties that may result in soiling and aggression. Often, these issues can be addressed by providing more

litter boxes in various parts of the home, cleaning the litter box more frequently, providing your pet with medication (if the behaviour is anxietyrelated), and/or teaching them behavioural modification techniques. Avoid punishing your pet, as it will only make the problem worse.

» FEAR

Some cats may fear people they don’t know, and react anxiously to other pets, sudden noises, car rides, or unfamiliar places. They can manifest this emotion through hissing, biting, scratching, avoidance, hiding, and spraying. Some may also suffer from separation anxiety. Your vet can help you work out a behavioural modification plan and, if necessary, prescribe anxiety medication.

WORDS MARISA CUTILLAS

» SCRATCHING

Cats are natural-born scratchers. They scratch surfaces to mark their territory, sharpen their claws, and entertain themselves. To keep your furniture safe, invest in multi-level scratch posts with resting spaces so your cats can entertain themselves by climbing, scratching, and enjoying a bit of ‘me time’. During playtime, hang toys above them and rub them with catnip, which targets feline ‘happy’ receptors in the brain.

» EXCESSIVE GROOMING

If your cat is constantly licking its fur, see the vet to rule out skin conditions. If they are grooming excessively because of stress caused by a change in routine or a new pet in the home, reassure them by spending more time playing with them.

» AGGRESSION TOWARDS OTHER CATS

This issue may be caused by predatory behaviour, fear, or play. Cats may become aggressive and seek to control rest areas, common areas, or food. In this

case, cats need to be separated and slowly reintroduced to each other after receiving behavioural modification treatment.

» AGGRESSION TOWARDS HUMANS

Cats can swat and scratch human beings when they are playing with them. Channel their energy positively by giving them numerous toys, ensuring they have areas where they can run, jump, and pounce, and don’t allow your cat to play with your hands or feet. ›

VISITESSENTIALMAGA

WHAT IS BEHAVIOURAL MODIFICATION?

Behavioural modification for cats comprises a customised plan comprising one or more of the following techniques:

» Changing your cat’s environment by adding more resources, replacing current ones, or moving resources around strategically.

» Desensitising and counterconditioning. Desensitising, commonly used for cats that fight or react negatively to noise, involves gradually exposing your cat to something that causes a strong reaction at low levels and increasing the intensity

slowly. Counter-conditioning consists of trying to help build a positive association with something your cat loves.

» Management. This approach involves lessening the impact of unwanted behaviours – for example, buying washable furniture covers or rugs in homes where cats have elimination issues.

» Training. Your cat can be trained to replace an unwanted behaviour with a more productive one (this method does not work for elimination problems).

» Management of humans. Humans occasionally

contribute to negative behaviours by getting angry when their cats misbehave. A good behavioural consultant can suggest actions to make your pet easier to manage and deal with. They may recommend specific tools to make caring for your pet more practical and easier.

Behavioural modification and counter-conditioning can be more effective than you may imagine, as cats work for food rewards. See your vet as soon as you notice negative behaviours, as the earlier you begin, the greater the chances that therapy will be effective. e

CARAT SKY VILLAS AN RH PRIVÉ-PININFARINA DESIGN PROJECT

When a seasoned developer such as RH Privé and the design team of none other than Pininfarina come together, something special is about to happen. The result is Carat Sky Villas.

From your lounge to your sky terrace and pool

WORDS MICHEL CRUZ PHOTOGRAPHY COURTESY OF RH PRIVÉ

RH Privé is a property developer with a portfolio that includes luxurious villas and apartment complexes designed and created with a vision for the future.

Sustainable development and wellbeing have been part of the company philosophy from the start, making this forward-looking developer one of the first to embrace energy efficiency, zero-carbon targets, and neuroarchitecture in search of a new definition of comfort, luxury, and excellence. ›

This, in itself, is reason enough to look back with satisfaction, but Guillermo Rodríguez and his team continue to look forward, and have had new goals in their sights. “It’s in our DNA as a company, part of the way we work and develop new project concepts,” says the founder and CEO of RH Privé. “We do look back at what we’ve done, and importantly, how we’ve done it, with satisfaction, but once it’s completed we move on to the next concept, and creativity is at the heart of that process.”

THE MAKING OF CARAT SKY VILLAS

“For us, Carat Sky Villas is the crown jewel, the finest work we have done so far, and the culmination of everything that has gone before. Above all, it is the realisation of a vision where we wanted to create something different, something that blended luxury and modern design, layouts and living styles in a new and fresh way.” Indeed, the architecture, interior distribution, and stylistic detailing make these penthouses look very avantgarde.

“We have redefined luxurious living in a very modern sense, as these are 400m2 penthouses whose interiors and spacious terraces appear to float before the immense views of sea, sky, and countryside they overlook. Our desire was to create a stylish home that offers a truly unique living environment.” The design inspiration for these impressive new homes lies in nature, with one section floating above the sea and the other integrated into the mountain.

Open-plan living, made-to-measure Pininfarina furniture and expansive sea views

Keen to really take the concept to the next level, Guillermo searched for the kind of design partner that would fit the project like a glove.

“We found it in Pininfarina, a legendary design studio perhaps best known for some of the most beautiful cars ever created but in reality also masters in every form of industrial design, from architectural consulting to the creation of high-end consumer and commercial products.”

AN INDOOR-OUTDOOR COLLABORATION

Just as an architect’s work is complemented by that of an interior designer, so RH Privé took responsibility for the exterior styling while leaving the interior detailing and furniture design to the creative genius of Pininfarina.

“We produced our respective design concepts, matched them, and from that moment on began developing a finished product that blends the best of property development and design expertise,” says Guillermo. ›

Space adds to the sense of modern opulence

He loved the process of working so closely together with the design teams of the famous Turin-based company. “Their attention to detail is truly impressive, as was their ability to incorporate our Eco Luxury concept into their designs and subsequently into the manufacture of the furniture and decorative elements that make up such a vital part of the Carat Sky Villas offering. We are very proud to say that these homes are not just beautiful but also cutting edge in environmental terms.”

There are many elements, large and small, that go into creating an environmentally responsible project, but they include water recycling systems, smart and therefore hyperefficient water and electricity consumption, taps with in-built decalcification, optimal reduction of temperature variations and therefore a great reduction in heating and cooling, great use of natural airflow and light, as well as an aerothermal system that uses natural heat to warm the properties. “We recycled

around 70 per cent of the construction materials and used indigenous species in landscaping, which included planting new trees around the complex.”

LUXURY LIVING FOR A NEW AGE

Nature, as such, plays a central role in the thinking behind these modern homes, designed as they are to offer maximum views and exposure to both the Mediterranean Sea and the La Reserva del Higuerón nature reserve that envelop the complex. ›

The Carat Sky Villas enjoy large open outdoor living areas
Luxury for today’s lifestyle

“You could mention many things that make these properties stand out,” says Guillermo “There are certainly many surprising factors, but above all you notice the space, the quality of the materials, the spectacular interior design proposal and the details, as well as the layout and, of course, those large outdoor spaces, which flood the interior spaces full of spectacular views. It is the combination of all these things that makes Carat Sky Villas a very special living experience.”

NUBAY FRONTLINE BEACH RESIDENCES

WORDS MICHEL CRUZ PHOTOGRAPHY COURTESY OF NVOGA

IMAGINE OWNING A BRAND NEW, MODERN FRONTLINE BEACH APARTMENT OR VILLA ON THE COSTA DEL SOL. IS SUCH A THING POSSIBLE THESE DAYS, WHERE VIRTUALLY NO BEACHFRONT LOCATIONS REMAIN AVAILABLE? NVOGA SAYS IT IS.

As much as may have changed over the years, one thing never does – the fact that frontline beach locations remain the most hotly desired of all. That is something that has consistently remained unaltered since the dawn of the Costa del Sol in the 1950s, and it is as true here as virtually anywhere else in the world. For this reason, the best locations were snatched up first and of course beachfront settings were at the top of the list.

Gradually, such a prime location has become scarce to the point of extinction in Marbella and surrounding coastal resort areas, yet a few remain, and you can usually find them in burgeoning new locations that are rapidly evolving into new high-end destinations thanks to a concentration of luxury properties and amenities such as golf courses, marinas, beach clubs, restaurants, spas, and resort hotels. The area west of Estepona is one such spot, and one of the few that still offers brand new luxury homes in a true frontline beach setting. ›

The complex also includes the unique feature of beachfront villas

21ST CENTURY REFINEMENT BY THE BEACH

The result of the above is that the combination of modern homes in a beachside location is very rare indeed, and even more so when it comes to apartment complexes, so that the launch of a new project of this kind is greeted with great excitement within the market.

This is the case with Nubay, one of just a handful of true

new beachfront developments to have been launched in the past couple of years, and true to form a project that really does such a privileged location proud.

“We are very honoured to represent such a special new offering,” says José Carlos Leon, founder and CEO of Nvoga, the master agent for the project. What Nubay offers is as simple as it is seductive – modern refinement, comfort

and luxury in an authentic beachfront setting where you wake up to spectacular sea and sky views every day. Visions of Gibraltar and North Africa are thrown in for free, making this gated complex comprising of 66 two, three and four-bedroom apartments, and five villas a very complete proposition indeed.

In this location you are close to a choice of golf

You, your pool, and the sea

courses, a yacht harbour, and lots of dining, leisure and shopping options in a spot right by a broad beach that extends for hundreds of metres in either direction. The highly exclusive amenities and ambience of Sotogrande and Finca Cortesin, with their beach clubs, championship golf courses, spas, and fine dining restaurants, are on your doorstep, with Estepona close by and Marbella town a

little over half an hour away. Within this setting, Nubay is laying down the marker for a new standard of luxury on the Costa del Sol in an area that is fast becoming an established luxury destination within the greater Marbella zone.

Not confined by the usual limitations of space and budget, it offers prime quality of product and lifestyle in an unequalled beachside location, including a total of

18,500m² of green spaces of which 5,000m² form the parkland gardens of this exclusive community. The architectural styling, detailing, materials, technology, and amenities are everything you could wish for in a top end contemporary development, orientated so as to make the most of the inspiring views that are an everyday companion when you live or own here. ›

“Nubay stands out for the unadulterated quality of the materials, which are nothing short of noble,” says José Carlos when speaking of the tactile and visual characteristics of the stone, concrete, wood, and marble used. “The windows are panoramic, floor to ceiling, providing an abundance of light, and prices

The complex also includes the unique feature of beachfront villas

start at €590.000.” The architectural design, interior layout, and furnishing follow this trend, and it is of course reflected in a new standard of kitchen, bathroom and bedroom detailing, involving the finest wood, appliances, fine-cut stone, and fabrics.

“The rest of Nubay feels like a select five-star deluxe resort, from the panoramic pool deck and gym –equally designed to incorporate full sea views – to the spa and wellness area, Zen chillout zone, professional coworking space, and multipurpose room with visitor’s lobby. It is a private residential resort that offers understated quality and refinement, and with that comes a real implication of class and sophistication. Nubay is setting a new standard for what luxury living looks like on the Costa del Sol today.”

Hercesa, with 50 years of experience in the real estate sector as a developer and construction company, has a presence in eight countries, Spain, Mexico, Panama, Ecuador, Romania, Bulgaria, Portugal, and Morocco and has more than 40,000 homes delivered. The majority of its business is within the residential field, but it also diversifies into commercial, hotel and logistics areas. In this promotion, NUBAY has the BORMA group as a partner.

MALVA BEACH BY BESAYA

Estepona has an enchanting new beachfront dining venue and it’s a real gem. This latest opening by Grupo Besaya, whose popular Besaya Beach and Tikitano restaurants are well favoured by those who appreciate the finer things in life, looks set to emulate the success of its sisters.

MAJESTIC SETTING

Located close to the roundabout with the fountain at the entrance to Estepona, on what used to be the site of Palm Beach, access to the restaurant is by descending a solid wooden staircase from the roadside across from a parking area. This sets the tone for what you will encounter below, where natural materials and especially wood predominate with sturdy tables, cushioned chairs, sofas, boardwalks, sun loungers, and a myriad of umbrellas. The setting is so close to the waves breaking on the shoreline, that the scents and flavours of the sea encapsulate you and the menu pays homage to these surroundings.

Curated and directed by the Group’s Head Chef, Txema Palacio, the quality and presentation of the food lives up to the Besaya reputation but here the focus is on the fruits of the sea. Divided into sections: To Share, featuring a

myriad of seafood platters you can enjoy with friends; Raw and Natural, with a variety of carpaccios, tuna selections, and more; Oysters with enticing accompaniments; Caviar Riofrío with blinis, Tuna Tataki, Lobster Roll and King Prawn Croquettes; Never Out Of Style offering a range of perennial stalwarts like Alaskan Black Cod with Miso, Steak Tartar and weekly rice specials; The Espeto And The Grill and The Seafoods additional menus; and The Garden, comprising some tantalising side dishes. ›

We relaxed into our scenic terrace table setting while we contemplated these choices, sipping on refreshing cocktails mixed by Nuria, who has arranged an extensive offering of beverages for all three restaurants. Her bubbly personality is infectious, lending a lot to the dining experience. This was replicated with all the members of staff we encountered, their welcoming attitude and professional conduct leaving you completely at ease.

FINE DINING

Our starters duly arrived and we savoured a plate of succulent Acorn-fed Iberian Ham, also tucking in to flavourful Ajo Blanco Malagueño, Fried Baby Squid with Lime and Ink Mayonnaise, a Trilogy of Red Tuna, and Matured Beef Slices with Smoked Cheese, Truffle and Crispy Bread. These turned out to be ideal for sharing and were a real joy to experience in such a lovely location. By this time we were in the mood for lingering, and so we took our time in devouring our main course selections, consisting of Grilled Sole with Toasted Garlic which was expertly filleted tableside. Ventresca of Red Tuna, a melt-in-the-mouth Solomillo Rossini, Clams in Salsa Verde, and a delicious Green Salad with Spring Onion and Avocado. All of these dishes exceeded our expectations. ›

Prolonging our very enjoyable afternoon further, we capped a great lunch with a 35ºC Finca Pascualete retort Cheesecake, lemon sorbert, and coffee.

What else can we say other than “highly recommended”? Grupo Besaya has come up trumps once again with Malva Beach, which can operate even when the weather is not fine, with folding glass doors that open out to surround the core of the premises. e

WHY DO THE ASIAN AND LATIN CULINARY TRADITIONS OVERLAP SO EXCELLENTLY?

Both are deeply rooted in bold flavours, fresh ingredients, and a respect for tradition. They share a love for spices, herbs, and sauces

that elevate even the simplest ingredients. Both regions use citrus and chilli, for instance, and seafood is revered in both Japanese and Peruvian cuisine.

WHAT DISHES ARE PARTICULARLY POPULAR WITH ZENGO’S CLIENTS?

Diners love the Angry Zengo Maki Roll, comprising spicy tuna, avocado, and a zesty yuzu kosho mayo. Another popular choice is the Lobster Roll, which combines sous vide lobster with creamy avocado, mango, and a tangy a lo macho sauce. Our Wagyu Tenderloin, served with yuzu kosho chimichurri and citrus yakiniku sauce, is a hit for those craving a rich and flavourful steak experience. It has always been a favourite dish at other Zengo locations. ›

CAN YOU TELL ME ABOUT SOME OF THE MOST UNIQUE CONCEPTS AMONG THE RESTAURANTS IN YOUR GROUP? FOR INSTANCE, WE READ THAT THE FOUR SEASONS RESORT NEVIS’ ESQUILINA RESTAURANT HAS A GIANT CRUDO BAR WITH RAW SEAFOOD.

Esquilina is a great example. We wanted to highlight the region’s access to fresh seafood, and the crudo bar lets us showcase that purely and simply, with Mediterranean and Latin-inspired seasonings. Another original concept is Toro, which embraces the convivial dining style of Latin America with dishes meant for sharing. It celebrates bold flavours and communal dining, which are central to Latin culture.

WHAT IS IT LIKE TO RUN SO MANY RESTAURANTS IN DIFFERENT COUNTRIES AND WHY DID YOU DECIDE TO LAUNCH SO MANY ESTABLISHMENTS ACROSS THE GLOBE?

It’s exciting and challenging. Each location offers unique opportunities and local ingredients that inspire new dishes. I decided to expand globally because I wanted to bring Latin flavours to different parts of the world, and I’ve always been curious about how other cultures would receive them. The process has allowed me to blend influences from each region and create something unique.

WHAT WAS IT LIKE TO INTRODUCE LATIN CUISINE INTO NEW TERRITORIES SUCH AS DUBAI OR SERBIA?

It was an exciting challenge. Dubai, in particular, is a melting pot of cultures, and the response to Latin cuisine there has been incredible. People are curious and open to trying new flavours. In Serbia, it was more about introducing something entirely unfamiliar, but the warmth and richness of Latin dishes quickly won people over. It’s always rewarding to see how food can bridge cultural gaps.

TELL US ABOUT HOW YOU GOT INTO COOKING.

I grew up in a family of restaurateurs in Mexico City. My grandmother was an excellent cook, and I spent a lot of time in the kitchen with her. That’s

where my love for food began. Later, I decided to pursue it professionally, and it has been an incredible journey ever since.

TELL US ABOUT YOUR EXPERIENCE STUDYING AT THE CULINARY INSTITUTE OF AMERICA (CIA).

The CIA was an invaluable experience for me. It gave me the technical foundation I needed to take my culinary skills to the next level. It exposed me to a diverse range of cuisines and techniques that helped shape my approach to cooking.

WHOM WOULD YOU CONSIDER AS YOUR GREATEST INFLUENCES?

My grandmother was undoubtedly one of my biggest influences. In terms of chefs, I’ve been inspired by the work of Thomas Keller and Nobu

Matsuhisa, who each brought something unique to the culinary world. They are highly dedicated to their craft and innovation.

WHAT TYPE OF CUISINE DO YOU ENJOY EATING THE MOST WHEN YOU GO OUT?

I love Japanese food – its simplicity, elegance, and respect for ingredients speak to me. Whether it’s sushi or ramen, there’s a precision to Japanese cuisine that I find fascinating.

WHAT PASSIONS DO YOU HAVE ASIDE FROM COOKING?

I’m passionate about travel and discovering new cultures. It’s a big part of why I’ve opened so many restaurants globally. I also love art and design, which is something I try to incorporate into the ambience of my restaurants. ›

COULD YOU LET US KNOW MORE ABOUT THE COLLECTION OF TEQUILAS YOU HAVE CREATED AND HOW YOU EDUCATE CLIENTS ABOUT THEM?

Our tequila collection is curated to showcase the depth and variety of this spirit. We offer tequila tastings and pairings to help guests appreciate the different types – blanco, reposado, añejo – and how each can enhance the flavours of our dishes. Education is key, so we make it a point to share the history and craftsmanship behind tequila with our diners.

HOW DID YOU NARROW DOWN YOUR VAST LIST OF RECIPES TO DECIDE WHICH WOULD MAKE IT INTO YOUR BOOK, NEW LATIN FLAVORS?

It was a difficult process because I have so many dishes that are close to my heart. Ultimately, I focused on recipes that best represented my philosophy of blending traditional Latin flavours with modern techniques. The book serves as a guide for home cooks who

want to explore these flavours in an approachable way.

KINDLY TELL US A BIT ABOUT THE ‘OLD WAYS NEW HANDS’ CSR PROGRAM.

The ‘Old Ways, New Hands’ mentorship and goal accelerator programme is something I’m very proud of. It aims to preserve and amplify Latin culture by teaching the next generation of Latin chefs, creators, and restaurateurs both culinary and business skills. Applications are now open for the 2025 mentorship programme. I am looking for

five up-and-coming Latin chefs, aspiring chefs, restaurateurs, aspiring restaurateurs, or food entrepreneurs to mentor. THE GREEN REVOLUTION

SUSTAINABLE

PRACTICES

IN SPAIN’S WINE INDUSTRY

Spain, a country known for its rich winemaking traditions, is embracing a new trend that is reshaping the industry: sustainability. With consumers increasingly focused on eco-conscious choices, Spanish wineries are producing wines that are not only delicious but also respectful of the environment. From the sunsoaked vineyards of La Rioja to the rugged hills of Priorat, the green revolution is in full swing.

WHAT DOES SUSTAINABLE WINE MEAN FOR SPAIN?

Sustainability in Spain’s wine industry

involves producing high-quality wines while preserving the land and supporting the local community. Wineries across the country are adopting practices that balance quality with ecological responsibility. From large estates like Bodegas Torres in Catalonia to smaller producers such as CVNE in Rioja, wineries are implementing sustainable approaches that minimise their environmental footprint. Sustainability includes water conservation, promoting biodiversity, and reducing the impact of winemaking on the planet. It’s not just about producing great wine – it’s about ensuring that winemaking can continue for generations to come, while protecting the land and workers.

ECO-FRIENDLY VINEYARD MANAGEMENT

In Spain, water conservation is a top priority, especially in regions like Castilla-La Mancha, where drought is a serious concern. Wineries such as Bodegas Familiares Matarromera in Ribera del Duero are reducing water consumption through drip irrigation systems and rainwater collection. In drier regions like Jumilla and Toro, some vineyards are adopting dry farming, which relies solely on rainfall, allowing the vines to develop deep roots and thrive with minimal water.

Many wineries are also moving away from chemical pesticides, opting instead for natural pest control. In La Rioja, Bodegas Vivanco relies on birds and insects to protect their vines, preserving the ecosystem and reducing the need for harmful chemicals. Additionally, wineries like Abadía Retuerta in the Duero Valley are using cover cropping and composting to maintain soil health, ensuring their vineyards stay fertile and productive.

GREEN ENERGY AND REDUCED EMISSIONS

Spain’s sunny climate makes it ideal for adopting solar energy, and many wineries are using

solar panels to power their operations. Bodegas Torres is a leader in this field, not only installing solar panels but also using wind turbines to reduce its carbon footprint, and has pledged to cut its CO2 emissions by 30% by 2030.

Beyond renewable energy, some Spanish wineries are reducing emissions by using electric vehicles for vineyard transportation. Bodegas Ramón Bilbao in Rioja is one such winery, helping to reduce its carbon footprint with cleaner transportation methods.

SUSTAINABLE WINEMAKING PRACTICES

Organic and biodynamic farming are growing trends in Spain. Bodegas Lagar de Pintos in Rías Baixas produces organic Albariño, while Albet i Noya in Penedès is a biodynamic winemaker that uses lunar cycles and natural preparations to enhance the biodiversity of their vineyards. These methods not only protect the environment but also lead to wines that reflect the unique character of their terroirs.

Spain is also seeing a rise in natural wines, particularly among smaller producers like Bodega Celler Credo in Catalonia. Natural wines, made

with minimal intervention, avoid additives and allow the grapes to shine, offering a pure expression of the land.

PACKAGING MATTERS

Sustainability doesn’t stop at the vineyard – it extends to how wine is packaged. Bodegas Beronia in Rioja has introduced lighter glass bottles to reduce the environmental impact of transportation. Some wineries are also exploring alternative packaging options, like boxed wine and aluminum cans, which are more recyclable and ecofriendly. These changes help reduce the carbon footprint of shipping and packaging without compromising the quality of the wine.

SUPPORTING LOCAL AND SMALL PRODUCERS

Choosing wines from local and small-scale producers is another way to support sustainability in Spain. Wineries such as Bodegas La Horra in Ribera del Duero and Comando G in Sierra de Gredos prioritise eco-friendly practices and often have a smaller environmental impact than large-scale producers. By supporting these producers, you can enjoy unique Spanish wines while helping protect the environment. ›

CERTIFICATION AND LABELS

When shopping for sustainable wines, look for labels like Vino Ecológico (Organic Wine) and Demeter (Biodynamic Wine), which ensure that the wine meets strict sustainability standards. Many regions, including Rioja, have developed their own sustainability certifications, allowing consumers to make informed choices. For

example, Bodegas Faustino in Rioja holds certification for its commitment to water conservation, biodiversity, and ethical worker practices.

THE FUTURE OF SPANISH WINE

As climate change affects Spain’s traditional grapegrowing regions, winemakers are exploring new strategies to adapt. Bodegas Torres is researching droughtresistant grape varieties

and planting vineyards at higher altitudes to cope with rising temperatures. These innovations are crucial for ensuring that Spain’s winemaking future remains bright, even in the face of environmental challenges. So, the next time you pour a glass of Rioja or Albariño, consider choosing a wine that supports sustainability. With every sip, you’re contributing to a healthier environment. ¡Salud! e
