Welcome Hi There, Welcome to our 3rd Christmas edition. I’d like to wish you all a very Merry Christmas & a Very Happy New Year. As you are probably aware Christmas is my favourite time of the year (probably because I’m a big kid at heart !). I don’t know where this year has gone and my children are very excited. It is a family time and I look forward to everyone coming together and having a good time and a nice break from work. An extra special thought goes out to people that are on their own, so if you know someone who is on their own, please make a special effort to take time and visit. Also to the lots of children spending Christmas at the women’s refuge this year. The Basildon Women’s aid is doing a fantastic job supporting these families. There are some lovely shops, boutiques, Restaurants in Basildon, Billericay and Wickford, these local Businesses rely heavily upon local trade so when shopping for Christmas presents, please try to shop locally. I would like to send out special thoughts and healing to Daisy, a local little girl who is suffering from the incredibly rare and debilitating illness known as Chronic Intestine Pseudo-Obstruction (CIPs). This means she cannot eat anything at all orally, and is instead fully reliant on being fed intravenously directly via her heart. (See page 6) A carol service is being held in aid of Daisy and entry is free. Daisy Palmer Trust Christmas Carol Service is on Saturday 15th Dec, 7pm. Billericay United Reformed Church. It has turned very wintery over the last few weeks and my thoughts go out to people that have been flooded.

ingredients 2tblsp Olive Oil

2 stalks celery finely diced 2 carrots trimmed & peeled

method

1 onion finely chopped 400g tin chopped tomatoes

1. Heat olive oil in a large saucepan. Add celery, carrots & onions and sauté gently until soft

250g spinach

275g turkey, cooked & cubed 1.2litres vegetable stock

2. Add the chopped tomatoes

3. Add the spinach, turkey, stock, bay leaves, thyme & harissa paste.

2 bay leaves 1 large sprig thyme

4. Simmer until the veg are tender & turkey is heated through – about 15minutes

1tblsp harissa paste

1 small handful chopped basil 110g brown rice, cooked

4. Remove the bay leaves & thyme & stir in the rice & basil to serve.
