Slow-cooked Shoulder of Lamb 2-2.5kg lamb shoulder, 3 fresh rosemary sprigs, plus extra to serve 2 tbsp olive oil, 250ml white wine, 4-5 tbsp chilli jam 1 garlic bulb, divided into cloves, unpeeled

Preheat the oven to 160°C/fan140°C/gas 3. Put the lamb in a roasting tin. Make incisions all over the meat, then pull off and insert small sprigs of rosemary into them. Scatter the remaining rosemary around the lamb.

Drizzle the lamb with olive oil and season with plenty of sea salt and black pepper. Pour the wine around the lamb and cover the tin with a large sheet of foil. Roast for 3 hours. Remove from the oven, lift the foil and scatter the garlic cloves around the lamb. Close the foil again, return to the oven and cook for a further half an hour.

Take the lamb out of the oven, remove the foil, then pour off the juices into a bowl. Spread the lamb with the chilli jam, then return to the oven for a further 30-40 minutes until tender and sticky. Remove the lamb and the garlic to a warmed serving platter to rest for 20 minutes and garnish with rosemary sprigs.

Meanwhile, skim the fat from the reserved meat juices, then pour into a pan. Bubble over a medium heat until thickened, then serve with the lamb.

EMILY LINSCOTT - IN BRIEF www.moosemotorsport.net Emily Linscott, 14, only started racing karts in January 2016 at Brentwood Karting Development School for a bit of fun. Having now driven on 24 circuits in the UK, she’s set new lap records, won numerous titles and a Junior Championship in her first year. She also won the prestigious ‘Buckmore Park Junior Star Pupil’ award for 2016. The first girl in its 16-year history to receive the honour. She moved into big grid owner driver kart racing and secured podiums as a ‘novice’ to further reinforce her as ‘the one to watch’. She’s already a serious contender for the 2017 Championship too. In December, Emily was scouted by Arden Motorsport, an international racing team in Formula 4, GP3 & GP2, based in Banbury, Oxford. She impressed them so much that they immediately signed her to their Young Racing Driver Academy (YRDA) for 2017, one of just 15 young drivers worldwide. Emily has already started a limited programme of testing (due to budget constraints) in the Ginetta Junior GT car, but is performing exceptionally well. Subject to gaining the right partners to help raise the budget to compete at the British Touring Car Championship events and beyond, she’ll be on the grid for the last three rounds of

GET PRUNING PEOPLE! Deciduous shrubs that flower in early summer need annual pruning to improve flowering and the roots.
Suitable for... This advice is suitable for deciduous shrubs (losing their leaves in winter) that flower in spring or early summer. Newly planted shrubs only need trimming and shaping. Overgrown shrubs may need drastic pruning to renovate them. Evergreen shrubs are pruned in a slightly different way. When to repair lawns Early-flowering shrubs are pruned after flowering (early summer, depending on the shrub). They usually flower on the previous year’s growth. How to prune Pruning requirements depend on the type of shrub, but all early-flowering shrubs need routine removal of damaged, diseased or dead wood, as follows: • Cut out any damaged or dead shoots back to their point of origin or to ground level • Where there are many stems remove some to ground level to keep the bush open and avoid congestion • Finally take out any weak, spindly or twiggy shoots right to the point of origin or to ground level so the plant concentrates its resources on strong new shoots that will bear the best flowers Then continue depending on the type of shrub. For convenience, we have divided earlyflowering deciduous shrubs into three groups on the basis of timing and type of pruning required: 1. Deciduous shrubs with flowers, young growth Timing: Prune immediately after flowering Examples: Flowering currant (Ribes), Forsythia, Pruning: Cut back flowered growth to strong young shoots lower down. Each year cut out up to 20 percent of ageing stems to near the base. 2. Deciduous shrubs producing new flowering Timing: Prune immediately after flowering Examples: Kerria, Neillia Pruning: Remove flowered shoots back to vigorous sideshoots. Cut back one in three stems to ground level each year. 3. Decidious shrubs that respond to hard pruning Timing: Prune immediately after flowering Examples: Prunus triloba Pruning: Cut back all the stems to near the base After pruning, mulch and feed.
Look out for the following problems when you are pruning; bacterial canker, bleeding from pruning cuts, bracket fungi, coral spot and verticillium wilt.

I recommend swimming as an exercise to many of my patients, whether they are looking to improve their general fitness, training for a competition or looking for a suitable exercise for arthritic joints. Because swimming doesn’t involve you pounding on hard surfaces, you won’t run the risk of joint injuries associated with running or other weight bearing exercises. However, if you do need to learn a good technique to avoid swimmers’ problems such as shoulder and neck pain or low back and knees problems. The best preparation for a successful swimming workout is to warm up by stretching the muscles in your neck, shoulders, legs and low back. Stretching increases flexibility in the muscles and lessens the chance of injury from strenuous contraction during swimming.

If it was either at the school pool with plasters and beetles floating on the surface or lounging around on a lilo then you’ve forgotten what you’re missing. Swimming is wonderful. It can involve most of the major muscle groups, it strengthens and tones the muscles and bones and, due to the resistance of the water, it can burn up to a quarter more calories than similar movements out of the water. I talk with the zeal of the recently converted as I’ve only just begun to swim again regularly...and I love it! Spend a little time looking for a pool that you like. If it’s too busy or too cold then you’re not likely to stick
Start your swim gradually and build up to a steady pace. Varying the strokes you use helps ensure proper muscle balance and to prevent injury. Using a single stroke repeatedly can overwork one group of muscles and cause inflamed tendons (tendonitis). Look down instead of ahead as you swim. If you only look forward, you can strain your neck muscles and compress the nerves. Don’t like water up your nose? Then get one of those nostril pincher thingies. It’s better than neck pain. I don’t recommend breaststroke as it involves too much strain on the neck as you crane your head out of the water. When you are nearing the end of your swim, slow down to cool down gradually. Stretching again after the swim will make it easier to stretch the next time. If you’re not a confident swimmer, then treat yourself to a few sessions with an adult swim instructor – most pools will be able to recommend someone. Go on – starting regular swimming sessions will make an amazingly rapid difference to your health and wellbeing.
