AFRICA AWAITS - WILL YOU TAKE THE CHALLENGE?

Sleep under the stars, trek with the Maasai, discover waterfalls, mountains and explore the beautiful African savannah with Essex & Herts Air Ambulance Trust’s (EHAAT) next challenge - Trek Tanzania. Hot on the heels of this year’s trek to Slovenia, the life-saving Charity’s October 2017 event, Trek Tanzania, will take adventurers to the wildlife-rich plains of East Africa’s largest country. The group will experience trekking with the Maasai tribe, an early morning game drive in the Ngorongoro Crater where they can spot elephants and flamingos and a trek through Maasai villages and the Elbulbul grasslands, the grazing pastures of zebras and wildebeests. The trip will culminate with an early descent of the Rift Valley Escarpment to the base of the Oldoinyo Lengai, the ‘Mountain of God’, before enjoying lunch at Lake Natron and a hike to the Engare Sero waterfalls. Maria Alexander, Head of Fundraising at EHAAT said: “Our treks are one of our most successful events of the year, and everyone who has taken part so far has made lifelong friends while experiencing the trip of a lifetime. Trek Tanzania will capture the imagination of our adventurers, with its mountains, plains and lakes to be experienced in one trip, all while raising vital, lifesaving funds for the Essex Herts Air Ambulance Trust. Joining us on the trek is a great way to support the Air Ambulance. As a Charity we rely on the generosity and support of residents and businesses across Essex and Hertfordshire to keep our helicopters flying to emergencies in the area.” Registration for the trek between October 7th and 15th 2017, is £299 before December 16th 2016, after which it will be £350. JOINT PROGRESS SUCCESS FOR KING HAROLD ACADEMY AND DEBDEN PARK HIGH SCHOOL

King Harold Academy in Waltham Abbey and Debden Park High School in Loughton are overjoyed at having achieved Progress 8 scores well above the national average. The schools have attributed the success down to the collaborative working relationship. The data, which can be found on the DfE website, shows that students at both schools make fantastic progress compared to students nationally. Executive Headteacher Christian Cavanagh said: “We are thrilled at the progress students in both schools have made. This is testament to their hard work and to the dedication and commitment of all staff at both schools. What is clear is that the close collaboration, working together for success, and common structures between the two schools has benefited both of them. These Progress 8 scores put both schools among the highest in Essex.”

Keeley’s family have lost family members due to heart conditions as well as her partner losing his father 13 years ago. KING HAROLD ACADEMY HOLDING REMEMBRANCE EVENING

Staff and pupils of King Harold Academy are holding a remembrance evening to commemorate those who have given their lives for our country and those that continue to serve their country today. The evening - Wednesday, 16th November (5.30pm-7pm) - will feature a variety of performances including dance, poetry and song. During the week of remembrance students will also be involved with a variety of curricular activities including poetry competitions, creative writing and the completion of more than 300 clay handmade poppies that will be on display. Event organiser and English teacher Stuart Springthorpe said: “Remembrance is a very important time of the year and symbolises a message which can never be forgotten. It is our duty as educators to inform, teach and help make aware to the younger generation the sacrifice that others have made in order for them to lead free lives today. It will be their job in the future to carry this message forward to ensure that it is never forgotten. Waltham Abbey was an area greatly affected by war. LOCAL NEWS RECORD-BREAKING CHIGWELL HALFMARATHON RUN FOR CHARITY

The Chigwell School community again came together to run, walk and stagger for charity when almost 100 Old Chigwellians, parents and staff ran the Royal Parks Foundation Half Marathon on Sunday 9th October. The 13.1-mile course took them through the heart of the capital as the route showcased the iconic sights of London through four Royal Parks (Hyde Park, Kensington Gardens, St James’s Park and Green Park) and past some of the capital’s most historic landmarks including Buckingham Palace, Horse Guards Parade and the Royal Albert Hall. With ‘Chigwell School’ emblazoned across their chests team members donned their trainers again to raise much-needed funds and awareness for Cancer Research UK. Cancer Research UK chief executive Sir Harpal Kumar said: “My huge thanks to all the alumni, staff, parents and children at Chigwell School for the amazing

support and participation at the Royal Parks Half Marathon.To see so many running, supporting and raising awareness of our cause was hugely impressive. Chigwell is a role model for the sort of impact that a school community can have in society. Given that one in two of us will be diagnosed with cancer in our lifetimes, this support is critical to us. You should all be enormously proud of your efforts, which is helping us to beat cancer sooner. We look forward to seeing you all at

next year’s event.” Gill Punt, who is married to Chigwell School headmaster Michael Punt and who organised the team effort, said: “It was a wonderful day and showed Chigwell at its best! We all came together to raise funds and awareness for a very worthy cause and managed to have fun at the same time. We are still collecting the donations but the total will join our running total of £132,000 from the last two Royal Parks Half Marathons.”

HAVEN HOUSE VOLUNTEER VIOLET PACE RECEIVES HEART OF ESSEX AWARD

Haven House Children’s Hospice’s longest-serving volunteer has been honoured at the Heart of Essex Awards for her tireless support for the charity. Ilford resident Violet Pace, who recently celebrated her 85th birthday, attended a glitzy evening ceremony at Hyland House in Chelmsford last month where she received second place in the Volunteer of the Year category. Violet has been with Haven House from the very beginning and long before the hospice opened its doors at its home, The White House, in Woodford Green in 2003. Having worked at the Kenneth Moore Theatre in Ilford for more than 30 years, Violet started volunteering with Haven House in 1999 when the charity was operating from a temporary office on Cranbrook Road in Ilford. Violet recalled: “Back then Haven House had one fundraiser, an administrator, a facilities person

and just two or three volunteers. It’s lovely to see how everything has changed since those early days”. Mike Palfreman, Chief Executive of Haven House, said: “We are delighted that Violet has been honoured for her long-standing volunteering. Violet’s ability to brighten up everyone’s day at Haven House with a joke and song makes her wonderful company. She is simply a legend and an inspiration to all of us. Violet is one of more than 300 volunteers who give their time to Haven House each year and help us make an immeasurable difference to life-limited children in our local area.” Violet said: “I love volunteering at Haven House because it’s such a lovely place; the good that we do here and the care that we provide to the children is exceptional.

KING HAROLD DAY IN WALTHAM ABBEY

King Harold Day was celebrated in Waltham Abbey on 8th October with the laying of flowers on the King Harold memorial stone in the grounds of the Abbey Church. Flowers were laid by Waltham Abbey councillors Jeanne Lea, the chairman of Epping Forest District Council, and Waltham Abbey mayor councillor Helen Kane, as well as by Jean Church from the Waltham Abbey Historical Society. This followed a costumed procession along Sun Street and Church Street. This year is the 950th anniversary of the Year of King Harold II, of his Coronation, the three great battles of 1066, and Harold’s death on the battlefield. The event commemorated Harold Godwinsson, King Harold II, who was Lord of the Manor of Waltham when he was Earl of Essex and East Anglia, owned much land and property in the area, and whose family home with his wife, Edith Swan-Neck, was at Nazeing.

Harold founded the Minster Church which eventually became the Great Abbey, and legend has it that he came to pray at the Miraculous Cross of Waltham before the Battle of Hastings, and that his body was brought back to the town after his death. Waltham Abbey Mayor Helen Kane said: “It was an

Birds of prey were on display while the Chingford Morris Men performed their Mummers’ Play. Various local attractions manned exhibition stalls while Waltham Abbey Town Council had a stall to promote its Neighbourhood Plan.

After making the short trip up the M11 to Cambridge we arrived at the The Cambridge Belfry Hotel, on the quieter outskirts of town. The Cambridge Belfry is a four star spa hotel which seems to attract a variety of guests, from wedding parties to business people. Being a modern building, the hotel is a little underwhelming from the outside, but once we stepped into the foyer we were pleasantly surprised in comparison. The large foyer is light, bright and welcoming and the check-in process was quick, with very hospitable service. We were lucky enough to be staying in one of the 6 Penthouse Suites that are available at the hotel and found the room to be more than adequate. It was very luxurious, stylish and even included an amazing spa bath with luxury toiletries. The super-king size bed was extremely comfy and in the separate living room we were greeted by a beautifully presented tray of treats including a bottle of red wine, chocolate raisins and savoury snacks, plus the usual tea and coffee facilities. The perfect place to unwind and relax and we’d not even got to the spa yet...

SPA

The Cambridge Belfry is home to an ESPA Spa, which we were very keen to try out. The treatment rooms were set within a larger leisure area, with swimming pool, Jacuzzi, steam room and sauna. This gave us a chance to fully unwind before going in for our treatments. There is also a fitness suite which we did not use. We grabbed our robes and slippers from the spa reception desk and headed straight for the Jacuzzi, overlooking the pool. There were a number of other guests using the facilities but it didn’t feel crowded at all, so far we were impressed. For our treatments I opted for a Full Swedish Massage: A traditional full body massage using firm pressure to promote relaxation and ease muscle tension. Plus I also had a separate head, neck and shoulder massage and a tension relieving massage to the legs and feet whilst my guest went for the ‘Fit for Business Back Ritual’ - with a back cleanse, exfoliation and deep massage followed by a purifying back mask and then a pedicure. The full body treatments were approximately an hour long and superb value for money (£55).

Back pain Q&A with Robert Shanks from Spine Plus

Chigwell born and bred Osteopath and founder of Spine Plus clinics, Robert Shanks, knows a thing or two about Back Pain and other musculoskeletal injuries. Why are back problems so common? It’s often related to faulty posture, undue wear and tear due to incorrect lifting techniques. Once someone injures their back their core muscles often remain switched off, even when the initial pain has eased they are vulnerable to future episodes.

So what is the best way to diagnose back problems?

Q

My friend has been told he needs injections and if that does not work he might need surgery, what does that involve and are there any alternatives?
 Spinal injections usually involves injecting pain killing medication and corticosteroids into the facet joints or onto the nerve(s) causing sciatica, this is to reduce the local pain and swelling. This can work well with patients but with many it’s just a temporary relief as it does not tackle the cause of the pain which may be from shrunken or bulging discs compressing the facet joints and nerves. Back surgery commonly involves shaving off the bulging part of the disc (microdiscectomy) or removing the disc completely (fusion). The success rates are pretty good for things like sciatica but are not without risk of serious complications and relapse rates. Patients often come to our clinics because previous physical therapy and injections has not worked for them and they are seeking an alternative to surgery (and more injections), we usually offer such patient IDD Therapy which involves gently stretching out the damaged discs and this tends to fix the pain in around two out of three cases.

With lots of great up-cycling taking place, there are many interesting ideas and guides online on how to revamp something old into something new. Depending on how creative you are, you may find old curtains could be revamped into new roman blinds, or an old chest simply needs a little paint. Or an old worn in chair can be transformed by simply draping a large sheepskin rug over it. To avoid disappointment, try keeping hold of all your items until you have a clear vision of what you need in your room. The lifestyle you tend to live, should be a represented in your styling ideas. If you don’t like clutter, then think about some good storage options for your bedroom. Does your room feel dark and small? Do you have cats or dogs who like to snuggle up on the bed all day? Or children who like to play with your make-up? All these sorts of things need to be accounted for when you’re redesigning your bedroom. Try getting inspiration from a number of sources such as interior lifestyle magazines, Pinterest and bloggers. Collect and save these ideas in one place so you can keep returning to them to narrow them down, but don’t forget to consider what will work for your pocket as well as your lifestyle and desires. When you feel you’re clear on your design, it’s time to start visiting your local shops or searching the internet to find those perfect items that will give you your dream bedroom. Don’t be too surprised if you find you’re quickly going over budget. It’s very hard to make sure you get it all perfect first time around, the trick is to prioritise your design. If a new bed is the most important thing on your list to create the look

you want, then avoid compromising on this. Instead look at what items are further down the priority list and see if these items can be exchanged for slightly cheaper options, bought second hand, or maybe consider delaying them until a later date. Make sure any delayed purchases are scheduled into your plan, this way you can feel content that you’re still achieving your desired look. Don’t be shy of talking to industry specialists about your design, often they will have great tricks up their sleeves! A great way to get talking to industry specialists is through a website called Houzz, which allows you to share your pictures and ideas with other Houzz members and experts. You’ll find no project is too small to post.

Encourage more wildlife into your garden this month by building a bug hotel. You can build it by using any old wood or palettes. Stack it up and fill it using a number of materials such as straw, canes and pots to help encourage wildlife to hibernate such as hedgehogs, ladybirds or lace wings. BAKI N G WITH AMY-BETH ELLICE Seasonal recipes from Britain’s youngest baker

T

his month Amy-Beth Ellice shares her recipes for Sticky Toffee Pudding, perfect smothered with toffee sauce and topped with sparklers for Bonfire Night and Autumn Chutney, which will make a great edible Christmas gift.

STICKY TOFFEE PUDDINGS

INGREDIENTS (makes 6) H 75g (3oz) butter, plus extra for greasing H 150g (5oz) caster sugar H 175g (6oz) self-raising flour H 2 eggs, beaten H 175g (6oz) stoned dates H 175ml (6fl.oz) boiling water H ½ tsp. vanilla extract H 3 tsps. black coffee (or Kahlúa) H 1 tsp. bicarbonate of soda For the sauce: H 175g (6oz) soft dark brown sugar H 110g (4oz) butter H 7 tbsp. double cream H 50g (2oz) walnuts, chopped To serve: H Double cream You will need: H 6 x mini pudding tins

METHOD 1. Preheat the oven to 180°C/fan 160°C/350°F/gas mark 4. 2. Roughly chop the dates and put them in a bowl. Pour the boiling water over them and then add the vanilla extract, coffee and bicarbonate of soda and leave to one side. 3. Cream the butter and sugar in a free-standing electric mixer (or you can use a handheld electric whisk and mixing bowl) until the mixture is pale and fluffy. Add the beaten eggs, a little at a time, beating well between each addition. 4. Sift the flour and lightly fold it into the mixture, followed by the date mixture. 5. Grease 6 mini pudding tins with butter, and line the bases with a cut out disc of baking parchment. Divide the mixture equally between them threequarters full. Place on a baking tray and bake in the oven for 25 minutes. 6. When removed from the oven, leave to cool for 5 minutes before turning each pudding out of its tin. Peel off the baking parchment. If you need to, slice a little off the bottom of each pudding so they are level and sit evenly on a plate. 7. To make the sauce, place the butter and sugar in a saucepan and heat gently until melted and combined. Add the cream and stir until fully incorporated. Stir in the

chopped walnuts. 8. To serve, pour the toffee sauce over each pudding and drizzle each pudding with cream.

AUTUMN CHUTNEY

INGREDIENTS (makes 8 jars)

H 725g (1lb 10oz) apples, peeled, cored and cubed H 1kg (2lb 2oz) pears, peeled, cored, chopped and cubed H 500g (1lb 2oz) fresh figs, cut in quarters H 375g (13oz) onions, peeled and diced H 1 tbsp. ground cinnamon H 1 tbsp. cardamom seeds H 1 tsp. mace H Zest and juice of 2 oranges H 500g (1lb 2oz) soft dark brown sugar H 500ml (16fl.oz) cider vinegar METHOD 1. Sterilise the jars. First wash them in warm soapy water and rinse. Allow them to drip dry, upside down on a rack in the oven set to 180°C/ fan 160°C/350°F/gas mark 4 for 5 minutes (or you can carefully swill the washed jars with boiled water). 2. Place the prepared onions, apples, pears and figs into a large pan with the orange juice and simmer until the onions and fruit have cooked and have broken down. Add the spices, orange zest, vinegar and sugar. Bring to a boil and then reduce the heat and simmer for about 30 minutes until the chutney has thickened. 3. Ladle the chutney into the sterilised jars and seal. Store in a cool dark place and give as a gift or serve with bread and cheese. Las Iguanas has taken up residence in a brand new extension to the Braintree Freeport Designer Village dining zone, nestled between the cinema and the prime shopping district. The vibrant restaurant décor takes its inspiration from the team’s most recent travels in South America. Both the decoration and the food showcases the tropical flavours and

colours of Rio; guests can enjoy comfy booths and leather banquette seating against a backdrop of sunshine shades of yellow, sky blue and turquoise, whilst they admire the big bold graphics dancing across the walls inspired by graffiti in Buenos Aires. The décor sets the scene for customers to enjoy an exotic menu, including a variety of South American and Mexican classics; sizzling fajitas, coconut curries, meaty steaks, and fresh, flavoursome salads. For the dessert-lover in all of us, the dishes on offer

are sure to satisfy any sweet tooth, from Dulce de Leche Cheesecake to cinnamon dusted Churros. Or, for a lighter end to your meal try the new Mojito Jelly with lemon & lime sorbet! And that’s not all; Las Iguanas are 25 this year and the birthday celebrations continue with ‘two-for-one’ on 25 cocktails all year round, to get you in that party spirit. We headed down to the new venue to try out some dishes and check out the new interior. Firstly, we loved the décor in Las Iguanas, it is so different to other ‘chain’ restaurants and provides a real talking point with interesting details and vibrant colours. We would definitely recommend Las Iguanas as a great restaurant for a special occasion or party venue over the festive season. Secondly the food was amazing! We shared a selection of Tapas to start (5 dishes for £24.95) including the Corn & Habanero Fritters which are new on the menu and were absolutely delicious. The Bahian Coconut Chicken for the main course was a beautiful combination of flavours with a creamy coconut sauce and the Dulce De Leche Macadamia Cheesecake was indulgent, rich and a delightful end to the meal. he Epping Ongar Railway is a great day out - with friendly volunteers, steam locomotives, buses and a wave from the signalman as the train leaves, the railway offers you the chance to experience life as it might have been 50 years ago. We have tickets for a family of four (2 adults and 2 children) up for grabs for one of their Santa Specials events which are taking place on selected dates throughout December. The experience will start at North Weald, where there will be some stalls, entertainers and a brass band to create a festive atmosphere whilst you wait to board Santa’s train. Once you have boarded your train, Santa will visit your children whilst the train takes you on a leisurely tour along the line. On board the entertainers will visit your party at your seat and the children will have time to write letters to Santa. On returning to North Weald there is time for a quick photo with Santa himself and you can stay to soak up more of the festive atmosphere or catch a bus home. ur youngest is growing, fast. Every day he appears to be shovelling more food into his mouth, vast quantities disappear from the plates of others and still he demands more. Holding Jake when food arrives is like trying to contain a greased velociraptor, and more often than not I’m left with claw marks across my face that would suggest as such. With all this extra food going in he now has additional energy to run, scream, laugh and... fill up his nappy. This is the area where we meet again with the ‘vast quantities’. I certainly back the current strike of our local bin men; I certainly wouldn’t want to be lifting all that waste. So, in short, he’s getting big. Which also means he’s becoming a bit more of a handful for George, who in fairness is taking this new beastly brother quite well. Even when he has to endure hair pulling, or the destruction of his Lego towers, he politely speaks up with, “Look what Jake’s doing,” or “Me think he doesn’t understand”. All of this whilst Jake himself his grinning from ear to ear, me thinks he understands quite a bit! He has also taken to grunting at the dinner table like a caveman... well, cavebaby. If he runs out of food it tends to be one large, long grunt, a drink refill is two short grunts, and wishing to leave the table is a grunt-yell-grunt. I may have to devise some kind of translation book for when he begins to assimilate into society, or failing that he could choose to comfortably live with a pack of gibbons. George meanwhile is speaking perfectly and articulating the majority of words so well that pretty much everyone can understand what he’s saying. This was true recently at the petrol station; we

had both got out of the car as I wanted to explain about the petrol and the engine. Somewhat remarkably he actually seemed to be quite enthused and pleaded with me to join me in paying for the petrol in the shop. As we walked in I suddenly clocked his plan as all the sweets drew him like a magnet, “Daddy, me think me would like some chocolate”. He found the Kinder Eggs (other eggs are available - such as hard boiled, and scotch) and eagerly handed it up to me asking, “Daddy can me have this egg please?” after agreeing to his request I was met

“Daddy, Daddy, me found me bum!!”

with, “Me love you now Daddy”. It was the use of the word “now” that stuck out and puzzled me, much to the amusement of the people in the queue behind me. I went to pay for the petrol and egg, and was startled to hear his voice once more, this time shrieking excitedly, “Daddy! Daddy!!... me found me bum!!” I turned to see him on all fours, facing away from me, bum in the air like a pyramid and his head poked between his legs looking back up at his behind... with a face our pure joy like he’d just discovered penicillin. “Well done George, there it is, congratulations,” I scooped him up and made my way past the queue who were now laughing uncontrollably. My embarrassment had begun to slowly subside as we made our way to the supermarket, I’d reminded George that now he’d successfully attained his ‘discovery of the rear’ award, he no longer needed to yell

this to the public, he agreed and the 4 of us started to walk calmly around the aisles. Quite quickly George asked to go on my shoulders, this seemed to suit all parties as he would be happy up there, and also unable to run away, I saw no downside and eagerly lifted him into position. By the time we had reached aisle 3 I was ready to complain to the store manager, for there was a ghastly smell in the shop which appeared to be getting stronger with each aisle we walked down. As I made my way to the customer service desk the fumes were almost affecting my eyesight and I decided I should put George down for his own safety, the last thing I wanted to do was injure an innocent child because of the stores shoddy cleaning policies. However, once off my shoulders I immediately noticed the smell start to fade, my vision was becoming sharper and my headache was starting to disappear. I immediately grabbed George by the hand and tried to seamlessly walk away from the customer service desk whilst the staff looked at me with a puzzled expression. Once out of sight I asked for answers, “George... have you been doing windies on my head??” His laughter nearly shattered my eardrums as he nodded enthusiastically and with a bit too much pride for my liking. “That wasn’t very nice was it George!?” I tried to reprimand him but the Mrs and Jake had now arrived and seen the situation unfold which resulted in 3 people laughing at me. After the incident in the petrol station it had been a day packed with laughter, unfortunately though... None of it had come from me! ...TO BE CONTINUED
