¶ C.R.E.A.M.: Vax edition Last week we reported that Florida Congressman Charlie Crist is calling for an investigation into Gov. Ron DeSantis funneling 3,000 coronavirus vaccines to two wealthy, donor-rich zip codes in Manatee County in the form of pop-up vaccination sites. “Time and time again, Governor DeSantis has proven he is not up to the task of leading our state out of this pandemic as he continues to play politics with the health and well-being of vulnerable Floridians,” said Crist in a statement. @Michael Dempsey I am a 70-year-old white guy with 4th stage prostate cancer (in remission), diabetes, Crohn’s … I can’t even get signed up, much less GET the vaccine. Not one bit of help out there. @IamViv Mon Charlie Christ? What crypt did they pull him from? I haven’t heard from him since he was elected. I forgot about him! Sigh. @Lindsey Asay Thank you, Charlie Christ! [sic] Someone has to look out for Floridians, and we all know that it is not Ron DeSantis. @Maggy Ojeda Hernandez Orlando Weekly, focus on the 25,000-plus illegal immigrants that will have priority in being vaccinated. Your liberal publication is to trash DeSantis, and we’re not buying it. [Editor’s note: Illegal

immigrants can spread COVID and/or die of it too, so we’re pretty sure vaccinating them is good for the health of the state. And this newspaper is free.] @Karolyn Couch I know people that got the vaccine because of who they know. People should get it when they are supposed to!

¶ Thirst tap Last week we reported on shortsighted Florida officials selling our precious natural resources down the river once again. This time it was the Suwannee River Water Management District Governing Board approving a permit application that will allow Nestle Waters North America to expand its water bottling operations in Gilchrist County (“Florida board approves permit for Nestle to continue bottling 1 million gallons of spring water a day for just $115,” Feb. 24), which is catastrophic news for the beloved Ginnie Springs @Laura Bellardini Henderson This is terrible. If we aren’t careful, we will end up like Southern California. No bodies of water outside of the ocean because greed takes over. @Kenneth Rambo May sinkholes develop under their houses. @Federico Castro Free water! How much did the lobbying cost?

Orlando ranks fourth highest in concentration of gay and lesbian coupled households in the U.S. Orlando is home to the most gay and lesbian coupled households in the entire state of Florida, according to a new study released by the U.S. Census Bureau last week. As reported by the Associated Press, Orlando and Miami placed fourth and sixth respectively on a ranked list of metro areas nationwide with the highest percentages of same-sex couples. This study used data from the Census’ 2019 American Community Survey. Topping the list were standbys like San Francisco, Portland and Seattle, but Orlando came in strong at No. 4, elbowing aside cities Austin, Boston and Phoenix. “Miami is a port city and Orlando is the epicenter of amusement parks and hospitality, so it makes perfect sense,” Nadine Smith of Equality Florida told the AP. “The cities have led the way for sure, rebuilding Florida’s image from a really hateful history.” Coming on the same day as the U.S. House of Representatives passed LGBTQ+ civil rights bill the Equality Act, these are indeed a “couple” of reasons to celebrate. — Matthew Moyer

Orlando attorney John Morgan dons meat sweatsuit and apologizes to Arby’s on Twitter Orlando attorney and minimum-wage hike activist John Morgan has been gifted a meat sweatsuit from fast-food chain Arby’s and promptly took to Twitter last week to show off his new finery. On the Twitter video posted last Wednesday morning, Morgan broadcast live to followers from his Maui vacation home, excitedly modeling his new Arby’s logo hat, “We Got the Meats” sweatsuit (with one leg hiked up like an ’90s rapper) and a Jamocha shake, Beef ’n Cheddar sandwich and curly fries — all flown in from Honolulu courtesy of Arby’s. Starting with the helpful clarification that he is “not Pharrell” (a reference to the producer’s 2014 Grammys appearance in a vintage Vivienne Westwood fedora), Morgan raved about his new threads and eats, calling the food “flat-out delicious” and offering up an apology to Arby’s. 10

This gracious move puts to bed a simmering feud between Morgan and Arby’s, after an earlier, freewheeling Twitter video Morgan posted in February where he noted that Arby’s parking lots often seemed empty, and wondered colorfully about their business model. “How the fuck do they stay in business?” he queried. (Arby’s corporate account later replied with a plaintive, “Why the hate?”) But in Maui last week, good vibes and meat-themed attire abounded. “What I want to say to Arby’s is — I apologize, your food is delicious,” Morgan said, before closing the video with an entreaty for franchise info in Maui and a slogan mashup of “We got the meats … for the people.” — MM

Orlando Police Department to work with licensed mental health clinicians on nonviolent emergency calls As of Sunday, Feb. 28, the Orlando Police Department has incorporated a Community Response Team to assist with nonviolent incidents involving people who are experiencing mental health crises. The CRT trained with the Orlando Police Department for two weeks in preparation for the oneyear pilot program, which is a combined effort of the city, Aspire Health Partners, and the Orlando Police Department. Mayor Buddy Dyer discussed the murder of George Floyd and its impact on initiating the program. “We had a lot of community conversations in the wake of George Floyd’s murder, and one of the things that we heard is that we needed to look at how our first responders interacted with various cases that maybe didn’t need a person with a badge and a gun to respond,” Dyer said. Each response team will include a licensed clinician and a case manager. The team members will respond to calls where individuals are unarmed and have no history of violence. Licensed clinician Crystal Raullerson described her role as “a collaborator” with the Orlando Police Department. “Yes, we are linking with the Orlando Police Department. However, we are not the Orlando Police Department,” said Raullerson. “We are trained mental health professionals to help in those moments where we can give alternatives.” Police Chief Orlando Rolón said that the department

responds to an average of 50 calls a day from people in need of mental health assistance. “Both the community and our officers have expressed interest in having trained mental health professionals respond to nonviolent calls for service,” said Rolón. “This partnership reaffirms our commitment to redefining public safety.” The CRT will work Wednesday through Friday from 9 a.m. to 1 a.m., and Saturday through Tuesday from 2-10 p.m. Orlando Police will continue to respond to calls that involve armed individuals and will refer calls to the CRT when necessary. — Melissa Perez-Carrillo

Florida ends breeding of non-native tegu lizards and green iguanas Commercial breeding of non-native tegu lizards and green iguanas in Florida will end in three years, despite the objections of reptile dealers and owners warning of the potential destruction of their industry. The Florida Fish and Wildlife Conservation Commission voted unanimously last week to add 16 reptiles to a list of prohibited species, including several python species, green iguanas and all species of tegu lizards. Commissioner Robert Spottswood said the “high risk” of environmental and ecological damage from invasive species that are released or get loose in the wild outweighs the hardships “imposed on the business community as well as the enthusiasts.” “These animals are out there doing lots of damage,” Spottswood said. “It’s incumbent upon us to address it and do something. This might not be perfect, but it’s the best I’ve seen yet.” Commissioner Rodney Barreto said the time has come to take a “bold stance,” after a process that also included the commission hosting 10 three-hour workshops on the proposal and more than 4,000 people submitting written comments. “We’ve got to put our foot down,” Barreto said. “This is wreaking havoc within Florida. People move to Florida, why? They move here for our environment, our beaches, our lakes.” Reptile owners and dealers, asking for more time to work with commission staff members on the changes, contended the prohibited-species designation will destroy their industry and create an underground reptile market. — Jim Turner, News Service of Florida

THE MAGIC NUMBER Senate Democrats represent 56.5 percent of the country. Yet Mitch McConnell and Joe Manchin control their agenda BY JE FFREY C. BILL M A N

Let’s stipulate something at the outset:

There was no circumstance under which President Biden’s American Rescue Plan would get Republican support. Not if it came in under $1 trillion. Not if it was stripped of funding for the arts or Planned Parenthood. Not if no one whispered the words “minimum wage.” This was fated from the moment the second hand struck A-Democrat-Is-President o’clock, and Mitch McConnell dusted off his old playbook. Like Barack Obama, Joe Biden responded to a crisis he inherited by proposing a large stimulus that polls very well, even among Republicans. But as in 2009, Republicans see no upside to working with the new president. If the economy bounces back, they figure, Biden will get credit regardless. But by withholding their votes and making the bill partisan, they can take some bloom off the rose. After all, hadn’t Biden promised to unite the country? In 2009, this worked splendidly. Obama’s overtures to Republicans watered down the American Recovery and Reinvestment Act until it was too small and too loaded with inefficient tax cuts to quickly juice a languishing economy. Republican messaging about a convoluted process and outof-control spending stuck, laying the groundwork for GOP gains in 2010. You’re watching what they hope will be the sequel. Biden learned from Obama’s experience. His $1.9 trillion bill is front-loaded with tangible stuff, not abstruse “shovel-ready projects”: $1,400 stimulus checks, $400-a-week unemployment supplements, a $3,600-per-child allow-

ance, billions for schools and vaccines. By year’s end, Biden wants the pandemic under control and the economy cranking, putting him in a stronger position than Obama was 11 years ago. For Republicans, replaying 2009 would seem like a risky move. Yet they feel no pressure to bend. No Republican supported the bill in the House on Friday; few if any are likely to in the Senate, either. The party can enforce this orthodoxy because — owing to our institutions’ rural bias — Republicans don’t need majorities to gain power. Senate Republicans haven’t represented a majority of Americans in 22 years, though they’ve controlled the Senate for two-thirds of that time. Democrats, by contrast, must form broad, fragile coalitions to govern. Over the last three Senate election cycles — one-third of senators are elected every two years — Democrats have won the aggregated national vote 50-43. They currently represent 56.5 percent of Americans. But the Senate is split 50-50, and progressives find themselves at the mercy of their caucus’ most conservative members — specifically, Joe Manchin of West Virginia, whose state backed Trump by 39 points. The math is simple: Without Manchin, they can’t get 50 votes. Without 50 votes — plus Vice President Kamala Harris as the Senate’s tie-breaker — they can’t do anything. That brings us to last Thursday, when the Senate’s parliamentarian declared that the provision of the American Rescue Plan raising the minimum wage violated the “Byrd rule” governing budget reconciliation, the process

Democrats are using to circumvent a filibuster and its impossible 60-vote threshold. The decision let Manchin off the hook. He’d opposed the hike on the ground that $15 an hour was too high for lowincome states. Sen. Kyrsten Sinema of Arizona, meanwhile, complained that the provision didn’t belong in a COVID relief bill, a convenient dodge. But as progressives pointed out, the parliamentarian doesn’t have the final word. That belongs to Harris, who, as the Senate’s presiding officer, can disregard the parliamentarian. The Senate can try to overrule her, but the Congressional Research Office has said doing so probably requires an unlikely 60 votes. A more straightforward option, former Obama aide Dan Pfeiffer advised, is for Senate Majority Leader Chuck Schumer to fire and replace the parliamentarian, as Republicans did in 2001. The White House immediately announced that it wasn’t interested. The left seethed, accusing Biden of hiding behind procedural minutiae to abandon a core campaign promise. Their anger is justified. Adjusted for inflation, the minimum wage is worth $4.30 per hour less than it was in 1968, and since 1978, workers’ paychecks jumped just 12 percent. Meanwhile, CEO salaries increased by 1,008 percent. Such inequality is unsustainable as well as reprehensible. But there’s no guarantee the demanded solution would produce the desired result. Again, there’s a math problem: The Byrd rule aside, Democrats don’t have 50 votes to raise the minimum wage, and the White House won’t risk the entire bill over one piece of it. There’s also a time crunch. Without the minimum wage, the American Rescue Plan has a clear runway to passage before federal COVID assistance runs out in two weeks. But if Democrats play parliamentary hardball or try putting the screws to the holdouts, the legislation could become a slog, bog down remaining Cabinet nominations, and force a confrontation with Manchin that Schumer wants to avoid just six weeks into the new administration. Remember, broad coalitions are fragile. Still, the White House can’t shrug off its promise indefinitely. Losing is one thing; not bothering to fight is another. Hiding behind parliamentary arcana is the weakest excuse of all. The silver lining: Assuming no last-minute fix materializes, this won’t be the last bite at the minimum-wage apple. Sen. Bernie Sanders is prepping an infrastructure bill for later this year that will also move via reconciliation, giving Democrats time to develop a Byrd-rule strategy and get Manchin and Sinema on board. Or they could stop worrying about antiquated norms and get on with the inevitable. The parliamentarian and the Byrd only matter because of the filibuster. So long as it exists, McConnell’s minority — which represents only 43.5 percent of Americans — will control their agenda: the climate crisis, voting rights, LGBTQ protections and anything else they can’t squeeze into reconciliation will die. And when Democrats don’t deliver, they’ll pay the price. That’s McConnell’s playbook. Sooner or later, Democrats — Manchin and Sinema included — will have to decide whether they want to govern or let Republicans hold them hostage. They can’t do both. raditionally held in Washington, D.C., this year’s annual Conservative Political Action Conference — described by CNN anchor Anderson Cooper as “Woodstock for election liars” — found new turf at the Hyatt Regency in Orlando. Lucky us. While a four-day lineup of conservative politicians, pundits and Fox News favorites discussed the future of the Republican Party inside, hundreds of grinning, maskless right-wingers gathered outside to proudly proclaim their support for former President Donald Trump — who was scheduled to make his first public speech since leaving the White House on Sunday. On Saturday, “Stop the Steal” architect and longtime Trump ally Roger Stone was met with warm welcome by the mostly maskless jubilee of Trump supporters. Stone was even caught dancing to a pro-Trump rap on Saturday, in front of a pickup truck painted with an unrealistically ripped version of Trump on its side. Florida’s part-time Grim Reaper, real estate attorney Daniel Uhlfelder, secured funding to fly a “Welcome Insurrectionists. RemoveRon.org” banner over the Orlando hotel, in a reference to last month’s right-wing Capitol riot and the movement to unseat Florida Gov. Ron DeSantis from office in 2022. Orlando Weekly photographer Dave Decker caught neo-Nazi Nick Fuentes, an extremist who was in town for another explicitly white nationalist conference, getting kicked out of CPAC Saturday afternoon for not wearing a mask. On Sunday, the maskless propaganza — featuring a multi-racial, redpilled motley crew of Trump supporters — continued. Outside the Hyatt Regency, a local conservative named Todd (who identifies more as an independent constitutionalist than a Republican) told Orlando Weekly that he was primarily out there on behalf of protecting free speech and the right to bear arms. When questioned about the storming of the U.S. Capitol last month — a touchy, and controversial point of discussion among conservatives, depending where you

fall on the right wing of the political spectrum — Todd was adamant in his belief that the whole thing was a setup. “I think Antifa was the first ones [sic] going in there,” Todd said, insisting the riot was a sham, organized to tarnish the credibility of American conservatives. “I don’t believe for one minute that it had to do with Trump’s cause at all.” When asked whether he believed law enforcement was in cahoots with Antifa — that is, why the Capitol police might be more likely to let a group of antifascists storm the Capitol than right-wingers — Todd paused. “I think … I don’t think they [the police] knew what to do.” A young woman from St. Petersburg, Florida, who asked not to be identified, also didn’t immediately name Donald Trump as her motivation for attending the MAGA festivities, similar to Todd. “I’m here for freedom,” she told Orlando Weekly, wielding a sizable “Babies Lives Matter” flag. Sharing her experience as a Venezuelan immigrant, she stated simply, “I don’t want to live in a socialist country,” citing government corruption, a robust social welfare state, and the right to have an abortion as antithetical to her vision for a strong, capitalist country. Unlike a sizable portion of the Trump-supporting crowd who continue to refute the loss of Donald Trump to President Biden, the young woman conceded that Biden “had won” the election. Still, she maintained her belief that the election “was stolen” and she was doubtful of the credibility of the votes that solidified Biden’s 2020 victory.

This doubt of a fair election process was echoed by Trump himself in his speech at CPAC Sunday evening, as he repeated the erroneous claim that the United States has a “very sick and corrupt electoral process.” He expressed support for the 253 bills and counting that have been introduced across the country that could restrict voting access if passed, consoling the crowd that the Republican Party would “be victorious” in future elections, with America “stronger and greater than ever before.” Across the street from the MAGA jubilee on both Saturday and Sunday, a small group of peaceful protesters set up their own demonstration on International Drive, holding signs with phrases such as “Fash Not Welcome” and “Half a million dead: When will you care?” Predictably, the group — a visible minority compared to the pro-Trump crowd — became the target of right-wing ire. The group got into several scuffles with right-wing personalities over the course of the sweltering Florida afternoon. Hippie Malone, a protester who faced off with much of their opposition, told Orlando Weekly he was there to oppose the impending threat of fascism in the United States — exemplified and bolstered by Trump’s crowd of supporters. Although he wouldn’t specify any organizational affiliation, Malone denied right-wingers’ claims that he was there on behalf of “Antifa” or Black Lives Matter, saying instead that he works with an unspecified local group that is focused on meeting the needs of oppressed racial

Enrique Tarrio, an FBI informant and chairman of the far-right, nationalist, male-only organization the Proud Boys, strolled across the street at one point to face off with the protesters — one of whom wielded a large “Black Lives Matter” flag, not dissimilar to the one Tarrio set aflame last December in Washington, D.C. But, despite the palpable tension, Tarrio didn’t escalate matters beyond verbal aggression. Mostly, he just stood in front of the protesters, ignored their jibes, and traded snide remarks with maskless MAGA folks — including a group s PRETTY HATE MACHINES: SO. MUCH. YELLING. And although the Hyatt Regency issued repeated remind- #ThanksDemocracy — vibed with the conference’s ers for attendees to wear a mask while on the premises, theme this year of “America Uncanceled.” Although, like

the political promises of the Republican Party, the theme didn’t really live up to its namesake. Days before the conference even began, organizers canceled the scheduled appearance of Young Pharaoh, a hip-hop artist and social media personality who was found to have an extensive history of public anti-Semitic statements. In the early days of the conference and throughout, political commentators noted what they perceived to be ideological shifts among those who attended the annual conservative conference — bolstering the case that Republicans are experiencing something of a civil war within their party. Mickey Edwards, a former chairman of CPAC, told CNN on Friday that the gathering was less about discussing conservative policy than bolstering the almighty Trump in a cult-like fashion: “The people at CPAC are living in an alternate reality in which facts don’t matter, the Constitution doesn’t matter. They have no principle except whatever their leader says.” Political reporter Ben Jacobs of New York magazine wrote that the speeches at this year’s CPAC seemed to reflect a shift from the conservative libertarianism of the American right — which was still on display, with grumbling about the conference mask mandate as a leading example — to a more European form of populism embraced by the likes of France’s Marine Le Pen. Most of the speeches, Jacobs wrote, displayed greater concern with hitting on “the type of culture war-red meat that had been a staple of Trumpism,” by focusing on the uplifting of Donald Trump and emboldening the culture wars against Big Tech, social justice movements and the foreign influence of countries such as China — while at the same time demonstrating a greater amenability to strains of international far right, with video messages from conservative speakers from Spain, Croatia, Brazil and South Korea. “The ‘does Trump run the GOP’ question isn’t interesting,” tweeted Washington Post political reporter Dave Weigel on Saturday. “He does. What’s interesting is how his priorities get incorporated into the dogma [of the Republican Party].” Among the MAGA crowd outside, it was as if Trump had never left office. Although support for the former president is wavering among Republican politicians — some of whom have jumped ship from the Trump cruise to return to an appeal for conservative values, not loudmouthed personality cults — for ordinary conservatives, the political salience of Trump’s unapologetic bigotry still appears largely unrivaled.

John DiDonna and Valencia College Theatre have worked out the rules of the game when it comes to producing shows on Zoom

POSTER (ABOVE) AND CAST OF VALENCIA COLLEGE’S ZOOM PRODUCTION OF ‘DEN OF THIEVES,’ WHICH KICKED OFF THE 2021 SPRING SEASON | IMAGES COURTESY OF VALENCIA COLLEGE

The pandemic paused perform-

ing arts at every level, from theme park spectaculars and Broadway tours down to the smallest community troupe, and the academic world has been no exception. Although the COVID-19 crisis appears to be easing, one of Central Florida’s largest theater education programs is still proceeding cautiously with a mix of hybrid classes and virtual performances. Last weekend’s online production of Stephen Adly Guirgis’ crime comedy Den of Thieves, which launched Valencia College Theatre’s spring season, provided the perfect opportunity for me to talk with artistic director and program chair John DiDonna about educating the upcoming generation of theater artists despite social distancing. Valencia was in the middle of spring break 2020 when coronavirus closures initially occurred, but after an extra week off, classes immediately resumed with online instruction. DiDonna says, “We made the decision in May, and it was finalized in June, to be online in the fall. We had to cancel our entire season, obviously; we had a big musical we were going to do.” This semester, Valencia College Theatre is currently conducting a few hybrid classes for technical disciplines that require hands-on instruction, but otherwise remains remote, as does this year’s Spring Arts Week, running through March 5. Although it’s a contentious issue, “I enjoy teaching online,” says DiDonna. “Some teachers don’t; some teachers are getting used to it. “Other teachers are saying most of our classes are going to be hybrid from this point going forward forever, because it’s working so well, and that was actually a good feeling.” And despite the emotional and financial stress many students are experiencing,

DiDonna reports he actually “had less incomplete withdrawals than I have in a regular semester, which is really interesting.” After presenting some original devised performance pieces online in the fall, DiDonna selected Den of Thieves for Valencia’s 2021 return to scripted shows. “I thought the kids needed something light,” he says. “We did heavy in the fall, we’re doing heavy when it comes to the next show we’re doing — it’s another docudrama — and I felt like everybody needed something silly, fun, where they can enjoy doing it, not just the audience enjoy watching it.” DiDonna has been teaching at Valencia for the better part of two decades, and became a tenured professor 10 years ago, but he and I were collaborating years before that, first at Theater Downtown and later in the SoulFire Dinner Theater, Empty Spaces Theatre Co. and Phantasmagoria. Back in 2008-2009, we produced Guirgis’ Jesus Hopped the A-Train and The Last Days of Judas Iscariot, which had online encores last year. As one of Guirgis’ earliest works, Den of Thieves lacks the spiritual depth of its successors, but DiDonna and his cast (which featured students Natalie Webber, James Bordenkircher, Johan Del Aguila, Natalia Guzmán Class, Ramon Jose Carrion and Sebastian Rivera) admirably adapted the script’s sitcom-style rhythms to the restrictions of a live Zoom broadcast. With more than a year of virtual productions now under his belt — including weekly Phantasmagoria livestreams and

a successful run of Romeo and Juliet — DiDonna has some helpful tips for aspiring online directors: • Music Theater International (MTI) and Concord Theatricals (formerly Samuel French) are restrictive about licensing online performances, so seek out works controlled by Dramatists Play Service, which has been more flexible. “I think they see the value in it [and] they’re honoring their own company and the playwrights by continuing to produce.” • Build social time into the rehearsal schedule so your performers can bond. The Den of Thieves cast “would come in 20 minutes before I ever entered a Zoom [meeting] so they could hang out together, and they became really good friends.” • When performing remotely, actors must anticipate and overlap dialogue to avoid an apparent delay. “We had to retrain them to listen for the start of the final syllable of the person before [to] start speaking … we called it ‘Zoom Time.’” • Keep the actors from becoming “locked into a chair as a Zoom head talking into a box” by blocking them to lean toward and away from their webcam, creating foreground and background layers. • Invest in quality webcams, ring lights, and WiFi hotspots (if needed) for all performers. • Despite the risk of technical glitches, it’s better to perform live than pre-record. “It adds a different element to it; it’s more like theater, because it is live.” • Most important: “There are no rules on Zoom; invent new rules for yourself!” skubersky@orlandoweekly.com orlandoweekly.com

TENDER IS THE KNIFE

Knife & Spoon at the Ritz-Carlton Orlando sears the best steaks in town BY FAIYAZ KARA

I

t’s hard to bugger up cooking a steak at home. Just eminence is rooted in chef John Tesar’s prized proteins. procure a beautiful cut of USDA Prime beef and Maillard You’ll recognize Tesar, the four-time James Beard Award reaction the hell out of it with a proper reverse-sear. nominee, from his appearances on Top Chef seasons 10 and 14, or as the character Personally, I finish mine off in a called “Jimmy Sears” in Anthony blazing-hot, cast-iron pan on my Bourdain’s Kitchen Confidential. outdoor grill to maintain a smokeHe’s also the undeniable doyen free and breathable kitchen. Plate it KNIFE & SPOON of dry aging, a process by which with a starch and some vegetables 4040 Central Florida Parkway cuts of beef are stored at a low and, ta-da! Eat your heart out, Peter 407-393-4333 temperature and humidity inside Luger. But to willfully venture to a grandelakes.com a meat locker, then allowed to steakhouse and pay a premium for a $$$$ get moldy over time. The time, of steak I can cook at home — at times, course, varies — 45, 60, 90, 150, 240, often better than the cuts seared even 500 days — as white mold on and broiled at such stodgy bores of bovinity like Ruth’s Chris, Capital Grille and Morton’s — is the surface alters the flavor characteristics of the beef just as aging does to jamón ibérico or Roquefort cheese. The pointless. There are exceptions: The throwback posh and startling longer the age, the funkier the characteristics. That’s it in a wine list at Bern’s comes to mind, as does Capa’s sexy nutshell. But Tesar, along with chef de cuisine, fellow Top slabs and Spanish silhouette. But none are more notable Chef alum and beef geek Gerald Sombright, will tell you than Knife & Spoon, the Ritz-Carlton newcomer whose that taste varies according to the beef, its marbling and

even the dimensions of the dry-aging vault in which the bone-in ribeyes and New York strips are laid to rest. So a 60-day Akaushi ribeye from HeartBrand Ranch ($175) will taste a bit different than a 60-day ribeye from 44 Farms ($146) primarily because of the higher fat content and marbling of the former. But no matter the source, age or level of marbling, the steaks here are superlative, unlike any you’ll find in the country, with the possible exception of Knife in Dallas and Knife in Plano, both run by Tesar. A 45-day dry-aged ribeye from 44 Farms ($130) presents 32 ounces of juicy, buttery beef, but feeling the funk doesn’t begin until the 75- to 90-day threshold. That’s when steaks begin to embody rich, earthy, nutty, even cheesy notes akin to Parmigiano-Reggiano. The 150-day Akaushi ribeye from HeartBrand ($225) gets intense with an avant-umamifunk, while the 240-day aged ribeye from 44 Farms is, simply, the Bootsy Collins of beef. And don’t expect slabs swimming in their own juices. Dry-aging zaps moisture from a steak, but also breaks down the collagen, making for supremely tender meat. You’ll notice these cuts come at a price, a high price, but their unique flavor profiles set them apart from steaks served at other chophouses. Plus they’re large enough for two, possibly three people. There are sides, naturally — pricey à la carte sides — like “financier” French fries ($27) blinged out with caviar, tobiko, truffles and gold leaf. There’s kimchi creamed spinach ($17), peppery avocado fries ($18) served with chipotle aioli, “Johnny” mac and cheese ($16) and a tower of fattened tempura-fried onion rings ($15) — all superb, and all superbly filling. Too filling, in fact. There are limits to this Richie Rich approach to dining for me. Hell, I’d be content with some charred asparagus and a baked potato, to be honest, but this is the Ritz, not Ponderosa, so I get it. There are other indulgences of the non-steak kind to be had: the wedge salad ($16) crowned with a crispy rasher of Kurobuta bacon; pappardelle ($25) tossed in a Bolognese of pancetta, lamb, veal and beef; and whole vermillion snapper (market price). It’s served with lettuce, pickled onions and a lemongrass dip, should you want to enjoy the fish in lettuce wrap form. Also worth noting is the complimentary bread service (love the brioche), a gin cart (how fancy) and a gorgeous selection of desserts like orange-Grand Marnier soufflé ($15) served with passion fruit sorbet, or an ethereal strawberry-mint sorbet atop lychee panna cotta, graced with an airy white chocolatevanilla mousse and a pennant of silver leaf, then dotted with edible pearls. Pure eye candy. Perhaps Franck Steigerwald, who’s serving as the restaurant’s pastry chef, should’ve been charged with designing the main dining room. As it stands, there’s nothing striking about the dull space apart from the odd design elements — a pomo “cloud ceiling” floating above an undulating patch of live moss; seating reminiscent of a corporate cafeteria; neon wall art; grey engineered flooring; and those dreadful arched farmhouse windows left over from the Norman’s days. The whole space feels molded over like Tesar’s steaks, and the decor’s the one, uhh, beef I have with the restaurant. Though I suppose I shouldn’t be all too displeased. At Knife & Spoon, age should always come before beauty.

Moxie! premieres Wednesday on Netflix PHOTO COURTESY NETFLIX MEDIA

ON (small) SCREENS IN ORLANDO Streaming premieres you won’t want to miss by Steve Schneider PREMIERES WEDNESDAY: Moxie! — Apparently, Amy Poehler wants to clarify that some “cool moms” are actually cool, not pathetic vicarity cases like the one she played in Mean Girls. Because she both directed and co-stars in this flick about a teenager who relies on her mom’s example to combat sexism at her school. Personally, I think the high-water mark for Poehler as a moral force was her portrayal of ACLU lawyer Cricket Feldstein in Hamlet 2, but y’all ain’t ready to have that conversation. (Netflix)

PREMIERES THURSDAY: Kamp Koral: SpongeBob’s Under Years and The SpongeBob Movie: Sponge on the Run — To inaugurate its relaunch as Paramount+, the former CBS All Access presents an all-new SpongeBob feature, along with a prequel series that drops in on our waterlogged hero and his pals when they were still wee tykes. Somebody in corporate must be desperate for a pull quote designating their beefed-up new service as “Sponge-worthy.” So let’s not give it to ’em! (Paramount+)

America. Hey, you know what else was a long-awaited sequel? Bill & Ted 3! (Amazon Prime) Boss Level — I’ve made it my policy to never again waste a single word on any movie that relies on the threadbare premise of some poor guy being forced to live the same day over and over again. So instead of saying anything further about the sci-fi thriller Boss Level, I would like to remind you to adopt instead of shop, that Epstein didn’t kill himself, and that having a harmless little Onlyfans account doesn’t make your sister a whore. Thank you. (Hulu) Raya and the Last Dragon — Following the precedent it set with Mulan, Disney is charging viewers an extra “Premier Access” fee to stream this animated fable at the same time it’s in theaters. Raya follows a young girl whose hope of saving the world relies on the possibility that dragons might not be completely extinct. And in the tradition of adorable Disney sidekicks, she’s accompanied by … a pill bug? Sheesh, for that upcharge, you think we’d at least get a Gila monster. (Disney+)

Lucky — Fresh horror about a female self-help author whose experiences with a stalker undermine not only her career but her sanity. Gee, and I always thought Marianne Williamson had it together. (Shudder)

Sentinelle — Olga Kurylenko stars as a French soldier whose quest to avenge her sister’s rape takes her into the heart of Russian oligarchy. Or the omelet bar at Mar-A-Lago. You know, six of one. (Netflix)

Persona: The Dark Truth Behind Personality Tests — It’s time to question your Myers-Briggs rating, according to this probing documentary that casts a suspicious eye on the history, intent and results of personality evaluation. As an Intuitive Empathic Introverted Pescatarian, I’m ready to believe anything they say. (HBO Max)

Bombay Rose — The streets of Mumbai are the setting for a trilogy of animated love stories that were painted frame by frame over the course of 18 months. Which, as you may know, is roughly the amount of time it takes Richard Linklater to parallel park. (Netflix)

PREMIERES FRIDAY: Coming 2 America — Maybe when the COVID is finally over, we’ll get that Eddie Murphy stand-up tour he’s been teasing for years. In the interim, here’s the long-awaited sequel to his classic Coming to

PREMIERES MONDAY:

PREMIERES TUESDAY: COVID Diaries NYC — The first wave of the pandemic is documented by a quintet of filmmakers between the ages of 17 and 21. In the surprising conclusion, they all decide that making actual movies is too risky and take their act to Onlyfans. Vive le upcharge! (HBO Max) orlandoweekly.com

LOCAL RELEASES

You might not have heard of new Orlando band Human yet, but area heavy-music scene heads will certainly know the bands from which their members hail. Packing a sterling collective CV loaded with names like Khann, Dzoavits, Republicorpse, Cannabass and Android, the trio of Eric Montanez, John Farran and Josh Dulcie are the new band that the city’s punk and metal cognoscenti have been talking hard about. Well, the hot wait is just about over. Human’s debut record is easily one of the year’s most blistering releases so far, and it’s about to go off like a warhead. On Friday, March 5, the seven-song Delicacies of Extinction will drop and, OMFG, it’s a beast in a box. As heavy as it is hard, Human’s sound is a locomotive of punk-cranked death metal that delivers socially conscious polemics with raw velocity and lethal clarity. It’s a work of concentrated savagery whose bludgeoning knuckles stay bare and bloody from beginning to grisly end. The scorching mini album can be preordered through their label’s Bandcamp, where you can also listen to first single “M.Y.O.E.” About that label: Silence Is Death is a Philadelphia-based benefit tape label run by Orlando scene expat Jake Smith, whose own local résumé reads like an underground hall of fame. All profits from the label’s sales are donated to “supporting Black lives and activists fighting for Black lives.” So, heavy and righteous. Recent Orlando release Voidgazing is a marquee convergence of two leaders of the city’s experimental underground. Industrial band TTN and noise maestro Trotsky’s Watercooler (the solo vehicle of Orlando noise icon Dan Reaves) join forces here for two long drone odysseys

As heavy as it is hard, Human’s sound is a locomotive of punkcranked death metal that delivers socially conscious polemics with raw velocity and lethal clarity that add up to nearly 35 minutes of electronics and factory sounds swirling in a dance of decay. Though Voidgazing isn’t an Illuminated Paths release, production duties from Orlando’s Byson makes it a noteworthy all-star product of IP artists. It’s currently available as a name-your-price download on TTN’s Bandcamp.

CONCERT PICKS THIS WEEK

Who run the world? This week, it’s the ladies. And if you go out, respect everyone’s distance, for all our sakes.

Cat Ridgeway and the Tourists:

Rising Orlando musician Cat Ridgeway has been steady go-getting lately. She and her band are tireless performers, and her latest album, Nice to Meet You, recently broke the top 100 on Billboard’s Americana Charts. With Ridgeway’s effervescent soul leading the way, the Tourists will stay local and hold court this week at the outdoor Front Porch Series. (6 p.m. Thursday, March 4, Plaza Live, $15 general admission or $80 table for up to four)

The Indigo Room Goes Virtual:

Like the Dining Room and the Manes

Emporium of Doubt, the Indigo Room is among the city’s subterranean, grassroots network of private residences that host live shows. Since 2014, local recording engineer and music producer Chris Baranyi (“Best Local George Martin” in our 2020 Best of Orlando issue) and wife Bea Vergara have opened their downtown home for small concerts. That, of course, had to stop last year. But this month, the beat goes on safely with a four-show weekly run of webcast performances on their Facebook page. This Saturday’s launch features jazz-influenced acoustic act the Viviana Clary Band previewing songs from Clary’s upcoming album. (7:30 p.m. Saturday, March 6, Facebook Live, free)

’80s Mixtape Mayhem: As starved concertgoers increasingly seek outdoor events for their fix, one especially picturesque option is the Howey Mansion Music Series, which features jazz and classical performances at the lovely historic mansion in Howey-in-the-Hills. The next event will be a lawn show featuring local ensemble ’80s Mixtape Mayhem, who specialize in lighthearted, jazzy renditions of 1980s hits. (4 p.m. Sunday, March 7, Howey Mansion front lawn, $23) Samantha Fish: Blues fans, don’t make it an early night on Sunday. It’s not often that a slinger of this caliber rolls through town, especially these days. Over the past decade, this award-winning Kansas City blues-rock pistol has shredded her way up the charts, and this weekend she takes the stage to throw some grease on the pan. “DEVASTATION” I am at a loss. I am devastated. I just found out my husband has been sexting with another woman. As if that wasn’t bad enough, this woman is his first cousin! And this has been going on for years! I’ll give you a moment to recover from that jaw drop. OK, now the background. We’ve been married for almost 30 years. Our relationship is not all wine and roses, but we had counseling years ago and decided we wanted to grow old together. We have similar interests, we love spending time together, and it’s just not the same when one of us is gone. Our sex life was never “off the charts” and, yes, this was one of our main problems. He wanted a lot of sex and I was content with very little. I came to believe he was content too and that he long ago accepted that spending his life with me meant this would be how it was. And I truly believed that our marriage was monogamous. Now I know that only I was monogamous. If it were any other women than his cousin, I might be able to deal with this! I feel like I can’t talk to anyone! All I can think of is how disgusting and disappointed my children, who are in their 20s, and his family would be if they found out. Years ago, when my children were small, I noticed some flirtatious behavior between her and my husband. I confronted him and demanded to know what the hell was going on! I thought that was the end of it! I was wrong! I was on my husband’s iPad when I found their explicit chats along with requests for “visuals.” I went to my husband and asked if they had ever gotten together physically. He told me no. A few days later we were on our way to a big family event and this cousin was supposed to be there. With me standing next to him he called her and left a message disinviting her. She called him back and he answered on speaker and I said hello and then asked her if she was fucking my husband. She sounded surprised and caught off-guard, but she said no. We are about to move to a new place to retire! Now what?!? Insane News: Cousins Erotic Sexting Trouble! Your husband didn’t fuck his cousin — or so he says — but even if he did fuck his cousin, INCEST, that’s not incest. Don’t get me wrong: Most people are thoroughly squicked out at the thought of cousins fucking. And cousin fucking is, in fact, incest-adjacent enough that most people can’t distinguish it from actual incest. But you know what does make a distinction between incest and cousin fucking? The law. First-cousin mar-

30

riages aren’t legal in all American states, but they’re legally recognized in almost all states. They’re also legal and legally recognized in Canada, Mexico, the UK, the EU, Russia, and on and on. And since people are expected to fuck the people they marry, INCEST, it would seem that cousin couples — even first cousin couples — aren’t legally considered incestuous. Mark Antony, Charles Darwin, Albert Einstein all married first cousins. The actress Greta Scacchi married her first cousin. Your husband’s cousin says she isn’t fucking your husband. Seems to me that this is one of those cases where, even if you suspect you’re being lied to, you should take what you’ve been told at face value and avoid looking for evidence that might contradict it. Your marriage is still monogamous … if you define cheating narrowly. I happen to think everyone should define cheating narrowly, INCEST, because the fewer things that “count” as cheating, the likelier a couple is to remain successfully monogamous as the decades grind on. Conversely, the more things a couple defines as cheating, INCEST, the less likely it becomes that their marriage will remain monogamous over the years. Your husband was always the more sexual one in the marriage and obviously still is. He made his peace with having less sex than he might’ve liked over the last three decades because he loves you and wants to be with you. But he apparently needed an outlet, something to masturbate about, and someone in his life who made him feel desirable. And if he was going to swap indecent sexts with someone to meet those needs, maybe … just maybe … it was better he did it with this woman than with someone else. As terrible as it is to contemplate, INCEST, the incest-adjacent nature of this connection is an insurance policy of sorts. Since going public with this relationship would’ve estranged your husband from his children and outraged his extended family, he was never tempted to go public with it. While she wasn’t an ideal choice, and while a cousin wouldn’t be my choice, she wasn’t someone your husband would or could ever leave you for, right? Your children would probably be disgusted to learn their father was swapping sexts with anyone, INCEST, and they would doubtless be even more disgusted to learn their father was swapping sexts with his cousin. So don’t tell them. Your husband isn’t going anywhere. You still get to spend time with him, you still get to retire with him, you still get to grow

old with him. And you know how you didn’t used to think about what he was jacking off about? Back before you stumbled over those explicit chats? Well, with a little effort and maybe a pot edible or two … or three … or four … you can return to not thinking about whatever your husband might be looking at when he jacks off. And finally … Your family shouldn’t be getting together for “big events” in the middle of a pandemic — unless you don’t want to live long enough to retire. Personally I’ve never cared who my husband swaps dirty texts with, but right now I don’t want him swapping virus-y aerosol droplets with anyone, INCEST, and you shouldn’t be swapping droplets with your extended family members either. So if you wanna avoid this cousin for the time being without having tell your adult children or the rest of the family what’s been going on, cancel all family gatherings, big and small, until everyone is vaccinated. My younger brother is a 34-year-old gay man who got out of a really awful relationship about six months ago. Less than a month after that, he met a lovely new guy who is 26 and things seemed to be really great. They just spent Valentine’s Day together, posted cute photos on social media, etc., and 10 days after that the guy dumps my brother. He’s incredibly mature about it, says he thinks they’re best friends but something is missing and he doesn’t want to string my brother along. My brother is beyond devastated and at 34 it’s the first time he has ever been dumped when he was this in love. I’m trying to be supportive and help guide him through the pain, but he’s truly a wreck about it. I sympathize but to be completely honest I felt this kind of pain for the first time when I was around 15 or 16, and I’ve been with my current partner for 14 years. Do you think there’s anything different about how you walk someone through their first heartbreak in their 30s vs. their teens? Helping A Brother In Turmoil Your brother got into a rebound relationship and got dumped — it sucks and it’s awful and it hurts, HABIT, but it happens all the time and people get over it. Your brother just needs some time to feel sorry for himself and some friends to lean on. Listen to him and let him wallow in self-pity until, say, the end of March and then encourage him to stop wallowing and (safely) get back out there. mail@savagelove.net

Meet Jarvis! Jarvis (A442135) is a sweet 4-year-old boy looking for his new home. He was surrendered to our shelter by his previous family, who could no longer keep him due to their living situation. According to Jarvis’ previous owner, he is housebroken, knows basic commands, and is friendly with men and women. Jarvis does not get along with cats, and it is recommended he be slowly introduced to other dogs, allowing them time to adjust to other dogs in his new home. If you are interested in learning more about Jarvis, please email animalservices@ocfl.net. This month is all about Spay It Forward! Both dogs and cats will be $30 to adopt. By adopting a shelter pet, you are also helping a local pet in need. Orange County Animal Services is located at 2769 Conroy Road in Orlando, near the Mall at Millenia. The shelter is open 10 a.m.-6 p.m. Monday through Saturday and 1-5 p.m. Sunday. For more information, please call 407-836-3111 or visit ocnetpets.com.
