Dear Readers Frankly it’s a relief to get to February and March and put January behind us - suddenly there’s so much more to look forward to and the worst of the winter and various flu bugs are over. What are those new things to look forward to? Let’s start with how we can all save £50 a month throughout 2011, according to Surrey Waste! Apparently we can “get healthier, shop smart and cook less” - a pretty good deal in anyone’s view! As if that’s not enough, we learn that good storage is truly life-enhancing according to Katherine Sorrell on Page 26. I only wish I had more of it at home myself! Then there’s Smith Pearman advising us on how to beat the Congestion Charge and the Taxman - no mean feat! And we have yet more advice on “working from home”, which so many of us do now. This year we are proud to have chosen the Surrey Air Ambulance as our Charity of the Year for 2011. Please aid us to help them raise some funds towards their upkeep, as they receive no Lottery Funding and rely entirely on the generosity of the community. Some of you might know that they were not so long ago at the Grace & Flavour garden in West Horsley. Their services are second to none and I do hope you will join us in helping to raise awareness and funding for them throughout 2011. The Surrey Waste Partnership has been running Surrey’s own Love Food Hate Waste campaign since May 2010, aiming to raise awareness of the need to reduce food waste in the county. £12 billion worth of food and drink goes to waste in the UK every year, so the Love Food Surrey campaign aims to show families how they could save up to £50 a month on their food shopping bill, simply by cutting down on throwing away food. We could all enjoy an extra bit of cash after the mad spending at Christmas and reduce the amount of good food being thrown away. This doesn’t mean cutting down on indulgence and fun. If anything, having a well-planned year will leave us with more money in our purses and more time to enjoy ourselves. Why not pledge to waste less food and save more money? Increase your vegetables in your meal planning e.g. by adding some peas into your pasta sauce it will be healthier and more fulfilling.

Cut down on saturated fat like butter, lard or margarine and use alternatives like olive oil.

Buy less biscuits and cakes and make your own - this way you can control the amount of sugar in your diet and it will easier on the waistline!

Shop smart •

Plan and shop with menus in mind as this will be cheaper and prevent impulse buying.

Be ruthless with ‘BOGOF offers; only buy them if you will use them that week.

Buy seasonal - it will taste better and generally be cheaper.

Cook less •

Try not to buy ready meals, instead cook extra, and have some homemade sauces in the freezer for those days when you are pressed for time to cook.

Storage tips •

Incorporate leftovers in your menus for the week, e.g. tomato sauce with pasta one day and the rest of the sauce can be drizzled over fish the next day.

Remember the most important point of all is to enjoy, respect and appreciate the food that you have spent your time and money on, in doing this you will have achieved at least one New Year’s resolution!

The Horsley Directory selects Surrey Air Ambulance as its Charity of the Year Please help us to support this very worthwhile cause throughout 2011

Surrey was one of only a few counties in the UK that did not have its own dedicated Helicopter Emergency Medical Service - HEMS, but this all changed in June 2007! The helicopter was launched by a host of celebrities including Penelope Keith and Bernard Cribbins on June 8th 2007. Responding swiftly to 999 calls, air ambulances are able to deliver a medical crew to the scene of an accident or medical emergency and to transport patients to the nearest major hospital or specialist unit, in a fraction of the time taken by a land ambulance. Surrey has a complete HEMS Service (Helicopter Emergency Medical Service), and employ’s the highest possible clinical standards in pre hospital care. There are currently 18 independent air ambulance operators, all of which are registered charities and funded entirely

by charitable donations, receiving no Government or National Lottery funding. The service, based at Dunsfold Park will be flying fast, direct and unhindered at over 150 miles per hour and the entire county can be reached within minutes. However, the challenge now is to meet the yearly running costs of approximately ÂŁ1.7 million to provide Surrey and neighboring Sussex with an emergency helicopter service, 7 days a week, 365 days a year. Receiving no funding from the National Lottery the charity relies almost entirely upon the generosity of the public to support the Surrey Air Ambulance.

Grace & Flavour, the community vegetable-growing co-operative at Dene Place, Ripley Lane By now, regular readers here will have seen or even read several articles about the progress of the Grace & Flavour community garden project in the old walled garden at Dene Place on Ripley Lane. This time a year ago I was busily scouting the villages for supporters – and identifying (for which read ‘avoiding’) those whose body language and words said that we had chosen too big a task, and would never do it. The nay-sayers were outnumbered by the supporters by a factor of ten, something I have come to appreciate and love about living in West Horsley. Not that there are many ‘yes-men’ here: I cannot tell you the number of times I have been put through my paces, asked to explain how this project will be self-sufficient, or how it is structured, or to clarify some other important detail. Often the questions are not about the gardening, but about the future stability of this ambitious plan to reclaim 1.3 hectares of once-beautiful Horsley land. You’ll find plenty of support in this village – but you’d better have a sound argument, or a well-trusted group of local people to back you up. This project is blessed with both. So here we are – we have just completed our first weekend of 2011 on the land. Very few are now in any doubt that Grace & Flavour can be a fruitful (if you’ll excuse the pun) community kitchen garden. On Saturday rain was forecast and we had none. Forty-something villagers pitched up and worked their wellies off in both the community garden and the soon-to-be-allotments. Some were clearing rubble from the field, others were spreading ash from the large 2010 bonfires. Others were making tea, or tidying the winter mess away, preparing this garden for Spring. Last year we distributed crops to our active members, to local shops Costcutter and Charles Paine, to wonderful chef Kevin at Polesden Lacey’s restaurant, and also (10%) as a tithe, to those in our community who cannot easily get to buy fresh vegetables. Some of our members made soup for the Salvation Army in Guildford. We were absolutely thrilled with the volume and quality of the produce we grew, and were often running to catch up with the season and the abundance it brought. This year we have a few capital projects to complete – we need a vehicle access and a car park, and we hope to build a safe children’s area within the garden walls. Both East and West Parish Council have worked over the past months to agree terms under which we will be able to make allotments available to local residents – and we hope to have the first available in February. In a survey at the end of last season, when asked what they enjoyed most about involvement in Grace & Flavour over 80% of our members gave the answers below. Beat the Congestion Charge and the Tax Man The new London congestion charge started on 4th January 2011 and if you choose the correct car you will be able to drive in London free of the charge. Boris’s new emissions based system, where cars emitting 100g/km CO2 or less will be exempt (as long as they meet Euro 5 air quality standards) will replace the current ‘technology-based’ approach meaning that the hybrids will no longer necessarily be exempt from the charge, unless they comply with this criteria. The outcome of this is that there are now a number of cars which will qualify to be exempt from the congestion charge with the added benefit that on the purchase of a new car there are significant tax advantages which are:Avoiding the congestion charge New Mini diesel also 74.3mpg and 99g/km of CO2.

• The full cost of the car is allowed against company profits in the year of purchase • The benefit in kind charged on the employee is only 10% of the list price of the car (13% if a Diesel) • There is no requirement for the car to be used for company business or by

any gardeners think they can’t grow fruit in the garden, either because they feel they do not have the space or because they fear that the fruit will be damaged by cold weather in spring. However, it is possible to grow most tree and soft fruit in containers and pots; these will not only take up very little space, but can also be moved under cover in bad weather, if necessary. Container growing also gives all gardeners the opportunity to grow exotic fruit, such as citrus, which cannot be planted out of doors in this country, as well as those like blueberries, which are very fussy about soil. If grown well, container fruits will yield reasonable quantities of fruit but, perhaps as important, they look very handsome on a patio, and can even be used as mini-orchards or moveable components of garden design. Tree fruits grown specifically for pot use are often grafted on to ‘semi-dwarfing’ rootstocks, although the size of pot and the finite amount of compost in it will restrict root and top growth in any event. Any fruit tree variety grafted onto a dwarfing rootstock needs to be grown in a fertile, well-drained soil, such as John Innes No 3 compost, which contains loam and is suitable for plants growing permanently in pots. Blueberries and cranberries need a very acid soil; these should be planted in a proprietary ‘ericaceous’ compost. Citrus are also best in a dedicated citrus compost. Plant the tree into a pot which is slightly larger than the one from which it came, if it is containerised, or big enough to comfortably contain the roots, if it is bare-rooted. (Barerooted trees are planted in the dormant season, while containerised plants can be planted at any time.) With the latter, make sure that the roots are not ‘pot-bound’. If they are badly girdled, return the tree to the retailer; otherwise, tease them out carefully. Put a few flattish stones over the holes at the bottom, then place the tree in the centre, filling in all round with compost. The tree should be planted at the same depth as it was in the nursery, about 5 cms (2 ins) below the rim of the pot to allow for watering.

Trees on dwarfing rootstocks will need staking since they don’t make extensive root systems. A bamboo cane and small tree ties are often sufficient; check them from time to time to see they are not biting into the bark. Put the pot onto pot feet or bricks, so that water can drain out freely. Repot every year in autumn, into a slightly larger pot each time, until you have reached about 37.5 cms (15 inches) for gooseberries, say, and 45 cms (18 ins) for apples. Investing in a pot trolley makes sense if you need to move pots under cover in winter. A watchful watering and feeding regime is essential if the plant is to thrive and produce fruit, which sets and comes to maturity. The main cause of fruit drop is uneven or insufficient watering. Mulch the surface of the compost in spring, and use a high-potash liquid feed frequently once the fruits have formed. Little water is required in winter, because the plants are dormant. Hardy fruits, such as apples and pears, can remain outside in the winter, but the roots are vulnerable in very cold weather, so the containers should be enclosed in bubble wrap (leaving the top clear for watering), and put in a place sheltered from freezing winds. Conversely, in very hot weather in summer, roots of any plant in a pot can be damaged by heat, so place the containers in the shade during heatwaves. © Ursula Buchan, 2010

Good storage is truly life-enhancing – it will make your home more spacious and attractive and, while you’ll still have to make the effort to put things away, it will be a darn sight quicker and easier to do. It’s easily said, but absolutely true, that you can never have too much storage; in real life, a good aim is for about 10-20% of each room (give or take, depending on the room) to be given over to storage of some type or another. The two chief options when it comes to storage are tailor-made and built-in, or offthe-peg, free-standing pieces. The former is often neater, takes up less room and is ideal for awkward spaces, but can be costly and can’t be taken with you when you move. The latter is portable and (often) less expensive, but tends to be bulky and must be chosen with care to co-ordinate with other furnishings. Built-in storage can be fitted into any suitable alcove, such as either side of a chimney breast or beneath a bay window, or could stretch from wall to wall. It may take the form of open shelves, cupboards, drawers or whatever you design to suit your needs. To keep the costs down, use inexpensive materials such as pine, chipboard or medium density fibreboard, and finish with primer, undercoat and eggshell paint. Large, free-standing storage is available at prices to suit every budget, from high-street bookcases to antique Oriental chests to modern designer sideboards. If a cheap piece is the right size and shape, you can often hide an ugly veneer with a coat of suitable paint, while second-hand finds can be transformed by stripping, painting and changing pulls, knobs or handles. Then there are the smaller pieces – boxes and baskets to tidy awkwardly 26

shaped stuff that won’t fit anywhere else; hooks and hanging rails; and specialist items such as toy tidies for the bath, sock organisers or jewellery rolls. It’s all out there, and you simply need to decide on a budget and consider which options work best for you.

Ten golden rules of storage 1. Don’t store items you no longer need. Regularly assess what’s vital to your life and, if something’s not, sell it or give it away. Freecycle is a global organisation dedicating to keeping good stuff out of landfill – sign up to your local group at www.freecycle. org and you’re likely to find a taker for most things. 2. Possessions that are used only occasionally (Christmas decorations, ski equipment) can be stored in attics, basements, sheds or the backs or tops of cupboards, reserving easily accessible storage space for the stuff you need to get at all the time. 3. Don’t place heavy items higher than shoulder height or lower than knee height.

STUFF IT(continued from page 26) 4. Stacking boxes look great and save space – but if you need to get at the contents quickly and easily, don’t put them in the bottom boxes. And underbed boxes work far better if they’re on wheels. 5. Don’t be afraid to adapt storage that was originally designed for other uses. Plan chests, lockers, hanging racks and so on can be bought at offi ce-supply companies, shop display outlets or second-hand shops. And multi-functional furnishings are great: dining or coffee tables with drawers, beds with deep drawers, bench seats with lifting lids; even some basins and baths now have slim drawers or cupboards built-in. 6. Use every inch of space by building storage above doors and windows, high up on walls, in alcoves, under sloping ceilings and beneath bay windows. You can even fi t shelves or cupboards into disused fi replaces, while wall racks or ceiling pulleys can be used for bikes or similar items.

7. Avoid open-shelf storage anywhere visible unless you’re totally confi dent in your ability (and that of the rest of your family) to keep what’s kept on them tidy and dust-free. If not, have cupboard doors fi tted or, at least, put things into attractive, matching boxes or baskets (labelled if necessary) on the shelves. 8. Store small things in small containers (Lego, toy soldiers, beads) and large things in larger containers. It really works. 9. If things keep ending up in the wrong place, consider whether it’s your family being untidy or the fact that the stuff would be better stored elsewhere. It might be a good idea, for example, to keep toys in a cupboard in a kitchen rather than upstairs in a child’s bedroom. 10. Finally, plan storage with military precision – it’s tedious but really worth spending a couple of hours adding up exactly what’s going to go inside each space and how much room it will take up.

Spice of Life - Cardamom Cardamom is the second most expensive spice in the world and originates from southern India where it grows wild in the forests. The seeds come from the pods of a ginger-like plant Elettaria cardamomum. It is very popular in the Arab world with cardamom coffee being a prestigious symbol of hospitality. It is also more popular in Scandinavian countries where it’s used more than cinnamon. An essential ingredient in most Indian cooking, cardamom features highly in curries and pilau rice dishes. It is also added to pickling mixtures, especially for pickled herrings, and adds warmth to winter alcoholic punches and mulled wines. Seeds can be bruised and toasted in a pan before adding the main ingredients, or ground with other spices as required. The tiny, brown aromatic seeds have a pungent camphorous taste and are often chewed as a tooth cleaner and breath freshener. Although cardamom is not generally used in Western medicine it is used to flavour preparations for digestive problems. It has been used as a digestive since ancient times. Like many spices, cardamom has been attributed with aphrodisiac qualities and in ancient India it was regarded as a cure for obesity. The Greeks and Romans used it as a perfume.

Cheap and Cheerful How to get high-tech kit without paying high prices

W

henever a new gadget comes out - a new iPhone, for example, or a fancy laptop - the press coverage tends to miss out one little detail: the gadget is usually incredibly, ridiculously expensive. Do you really need to pay that much for your high-tech kit?

Cameras The answer, of course, is no - and that doesn’t mean you need to compromise, or end up with gadgets that don’t do what you want them to do. If you can live without the ability to make 3D photos, you can pick up a perfectly good, brand new Sony compact camera for as little as £60. Our pick, the DSC-120 camera with 7.2 megapixels, a clever image processor and anti-shake technology is just £118 new half the price it was just a year and a bit ago. The same applies to cameras from other firms: if you don’t go for the very latest models you can get a cracking camera for a decent price.

Laptops Laptops are another area where it pays to be patient. Firms such as Morgan Computers (www.morgancomputers.co.uk) and EuroPC (www.europc.co.uk) sell a wide range of endof-line machines, which are models that work perfectly well but which have been superseded by slightly newer versions. They also sell refurbished machines, which were returned to the manufacturer, fixed, and put on sale at a vastly reduced price. Expect to save 20% on end of line stock and considerably more on refurbished stock.

Music Dedicated devices such as MP3 players can be cheap too. Where Apple’s iPod Nano starts at £149 for the 8GB model, you can pick up SanDisk’s 8GB Sansa Clip for £38.99 at Amazon, a saving of nearly £80 on the RRP. It might not

be as pretty or as cutting-edge as the iPod, but does that matter when it’ll be spending most of its time in your pocket? If you do fancy something more stylish, though, the Creative Zen 16GB does video too and still costs less than the iPod at £69.99, while Sony’s very impressive E Series network WalkMan with voice recording (model NWZE444B) is currently £59.97 for the 8GB model.

Working from home What women know by Ted Bruning

Y

ou learn a lot, working from home. Nobody does anything for you. It’s never anybody else’s turn to make the tea. There are no secretaries to do your photocopying and make sure you don’t run out of stationery and book your hotel. There’s no postroom to frank your letters. There’s no IT manager to tell you to turn it off and turn it on again. You have to learn that (a) these things have to be done and (b) they don’t do themselves. Basically, you’re on your own. But none of the office management functions you used to take for granted are particularly big deals. They’re not hard to learn. What is hard to learn is something that women have always known, and that’s how to run a household. I should stress that by “women” here, I mean the traditional stay-at-home wife-and-mother kind of woman, a breed that has pretty much vanished. Personally, I hardly know any traditional stay-at-home wife-and-mother women: few of my friends could pay their mortgages without two salaries. My own wife works full-time – more than full-time, actually – as a teacher. And what that means is that, in common with many other men who work from home, I’ve had to take on the role of Domestic Operations Manager (that’s male-speak for “housewife”) myself. Most of it is pretty routine – the school run, the washing, the dishwasher, the top-up shopping, the dinner; the trick lies in fitting it all in round the incidental necessity of running a business and making a living. (And of course, I’m not so feminised as to be trusted with anything as complicated and skilled as the cleaning. The Cleaner does that. And she’s a woman). But there is one area of expertise that fills me with admiration for all those generations of women who’ve had to master it, and makes

me think that the correct form of the verb “to master” ought to be “to mistress”. I refer, of course, to emergencies caused by malfunctioning domestic appliances. I was shocked to discover, when I started working from home, that appliances ranging from the toilet to the dishwasher and all items in between don’t always work as they should. And when they stop working it’s inevitably catastrophic, usually involves either improbably quantities of water or a worrying smell of burning, and always demands your complete and undivided attention. I was even more shocked to discover that the worst thing to do in an appliance emergency is open the Yellow Pages. Twice I’ve been badly ripped off, both times by the local agents of national franchises whose disastrous incompetence turned out to be bolstered by cast-iron call-out contracts. Your ability to cope with these emergencies, in the long-lost days of traditional stay-athome wife-and-mother women, depended on successful networking. It involved wives and mothers chatting to other wives and mothers at coffee mornings, bus-stops, school gates, Post Office queues and so forth, and comparing notes on trustworthy local tradesman whose wives, children, dogs and addresses they knew personally, and who therefore wouldn’t dare deliver anything less than prompt and efficient service. Those days, I suppose, are gone. My alternative has usually been to go down the pub and, after a pint or two, ask if anyone knows a good plumber. Someone always does (it’s usually his brother-in-law), but by that time the kitchen is under three feet of unidentifiable slime. There is, of course, another way, and that is to make sure there’s always a copy of this very organ next to the telephone...

Porsche Boxster Spyder

W

hat’s white, has two protruding humps and goes like the clappers? No, not Katie Price, silly, it’s this of course, the Porsche Boxster Spyder. Sorry, that really was uncalled for, especially when we’re in the presence of an all-time great… because that’s exactly what the Boxster Spyder is. At fi rst some people might fi nd it hard to work out what the point of it is. Porsche has stripped it of most niceties – like door handles – and it does without an electric roof, replaced instead by a rudimentary piece of canvas and cling fi lm stapled to the bodywork. Even Porsche admits only around 100 will fi nd homes in the UK each year. But then you get behind the wheel and everything instantly makes sense. This Porsche is a driver’s dream and on the incredible Welsh roads where we tested the Boxster it was a sheer delight. At fi rst it feels twitchy, on edge, alive. The steering has so much feel, it’s light and wriggles in your hands – and that takes some time to get used to. But settle in, tune into the 48

sensations and feedback this stunning Spyder is transmitting and it rewards you with a drive of your life. Power comes in linear and fast. That 3.4-litre, 320bhp unit is a gem and, coupled with the Spyder diet, produces impressive performance fi gures. The sprint to 60mph is dispatched in 5.1 seconds and the way it translates that power into forward momentum so easily will have you beaming from ear to ear. What makes the Spyder so good is the fact it can utilise every single one of its 320 horses, effi ciently and effectively. Higher-powered sports cars will out-drag it on the straights, but point the Porsche towards some twisties and it’ll keep up with pretty much anything. We just wish it sounded more potent – the sports exhaust option is a must. However, it’s not just about what’s under that shapely hood. This car looks positively stunning too. In the ice white paintwork our test car came in, it was a crowd-gatherer and those two rear humps behind the headrests have a distinct air of Carrera GT about them.

We even managed to nail taking that ‘roof’ off. Yes, it is more complicated than an electric set-up, but with practise we got the process down to about two minutes. Fair enough that’s not exactly quick – and you wouldn’t want to get caught in a downpour – but the hood is where Porsche has achieved most of the weight saving. The biggest problem we can see with this Porsche though is the name. The ‘Boxster’ part in its title just doesn’t fit. This car is good enough – and unique enough – to have earned its own name altogether. It’s a brilliant piece of engineering and one of the all-time Porsche greats – why then, hasn’t the maker christened it properly? By James Baggott, editor of Car Dealer Magazine (CarDealerMag.co.uk)

Recipe of the month Fresh tuna steaks have a lovely firm and meaty texture and a delicious not-too-fishy flavour. Take care not to overcook the steaks as the flesh can quickly dry out and make sure your skillet or griddle pan is really sizzling hot before you start cooking.

Serves - 4 Ready in 20 minutes

Seared Fresh Tuna with Warm Bean Salad 4 fresh tuna steaks

1.

Brush the tuna steaks with some of the olive oil and season with plenty of freshly ground black pepper and a little sea salt. Heat a cast iron skillet or griddle pan until very hot and cook the steaks for about 2 mins on each side.

Meanwhile, heat the rest of the olive oil in a frying pan and fry the red onion for 3-4 mins. Stir in the beans, parsley, coriander and lemon juice and cook for a further 1-2 mins until heated through. Season to taste with salt and freshly ground black pepper.

3.

Divide the bean salad between four serving plates and top with the tuna steaks. Serve immediately garnished with lemon wedges.
