Time For A Spring Clean By Claudia Leaf I had invited an old school friend around for coffee and was trying hard to make a good impression. Suddenly a shaft of spring sunlight flooded my lounge, making me cringe with embarrassment. With a growing sense of shame I watched as this unforgiving shaft of light slid across the room, showing up the grubby finger marks on the door, the ring marks on my glass table and a thick layer of dust on the mantelpiece.
Whilst period dramas such as “Downton Abbey” have inspired a new generation to revive traditional kitchen skills, it’s questionable whether 21st century householders will be tempted to adopt the cleaning methods recommended by the magazine, which include black-leading grates, whitewashing walls and scalding bedsteads. The Victorians may have excelled at spring cleaning but they certainly didn’t invent it. Some historians believe that the origins of this tradition date back to the ancient Persian New Year, the Iranian Norouz, which falls on the first day of spring. Iranians still practice “khooneh tekouni” – which literally translates as ‘shaking the house’ – at this time.
When it finally landed at my friend’s feet, close to a dirty paw mark our dog had left on the carpet, I saw a look of alarm on her face. “I’m so sorry, I’ve just noticed. Did I do that?” I had a nanosecond to decide whether I should openly confess my domestic shortcomings or keep quiet. “Oh, don’t worry”, I replied. “It’ll brush off when it’s dry.” She left soon afterwards, still apologising. I took a deep breath and realised it was time for some spring cleaning. An article in the Manufacturer and Builder magazine of 1872 (a “practical journal of industrial progress”) describes spring cleaning as “The season of general cleaning, when all the corners and 8
closets are overturned and hidden things are brought to light”.
The Jewish feast of Passover is a religious festival that also hints at a possible origin for spring cleaning. During the holiday the faithful are instructed to refrain from eating any leavened foodstuffs (‘chametz’). The Bible commands that even tiny crumbs must be removed from the house and this results in a ritual hunt for crumbs by candlelight during the evening before the holiday begins.

Christianity has its own spring cleaning traditions. In Greece, householders clean everything thoroughly either before or during the first week of Lent, as a physical manifestation of Lent’s message of spiritual cleansing and renewal. For the ancient Chinese, the concept of New Year cleaning is associated with good fortune. They believed that people should sweep their floors and clean their houses to rid them of any negative influences that may have accumulated during the last twelve months. Householders then locked up the broom for a few days to prevent sweeping away any good luck that might have entered at the turn of the year. When ancient cultures share such similar traditions it’s hard to say exactly when and where the idea of ‘spring cleaning’ originated. However, it’s obvious that the urge to clear away the cobwebs of winter and prepare for the summer months is hard-wired into human DNA. Personally I believe that our seasonal enthusiasm to get busy with a mop and broom is always motivated by the same thing: it’s that accusing beam of sunlight that shows us up in front of guests.

Hidden Algarve Long ago in the Algarve, says the legend, a Nordic princess pined for her frozen homeland until her husband, the King of the Moors, planted thousands of almond trees. The snow-white blossom soon brought a smile to her lips and to this day almost every house in the Algarve looks out to an almond tree. In the lush rolling hills of the interior, the trees herald the first days of spring, flowering among vineyards, orange groves, fig and carob trees. Just a stone’s throw away from the coast, it’s a quiet land of orchards and meadows, meandering lanes and forests and redroofed villages tucked in the greenery, their whitewashed houses topped by filigree chimney pots, in Moorish style, and rooftop terraces where laundry and fruit dry side by side. Goats wander across the road and sometimes a donkey and cart rattle along the cobbled streets. Up there, the cool wooded slopes of the Serra de Monchique are dotted with rivers and lakes, moors and dark forests where rosemary and oleander splash colour in the clearings. The fragrance of eucalyptus and pine follows you along the trails but you find swathes of chestnut and oak and ‘strawberry trees’ whose innocent-looking berries are eagerly collected to make the local firewater. It’s a paradise
for ramblers and birdwatchers hoping to spot goshawks and royal eagles. With a subtropical micro-climate, mountain and sea all in one, the Serra claims over 1000 species of plants but now and then a church bell chiming in the distance betrays the presence of an isolated village, perched on a terraced slope where vegetables and fruit compete for space. The road to the top winds past the spa resort of Caldas de Monchique, once the site of Roman baths and the place where King Joao II came to take the waters in search of a cure, in the late 15th century. Now the emphasis is on beauty and well being, pampering and relaxation. In a deep wooded glen, quaint buildings gather around a shaded square and you are welcome to stroll in the park, quench your thirst and best of all, make a wish at the Fountain of Youth. Beyond this charming watering place, you reach the rustic hill town of Monchique, once a prosperous weaving centre for wool and cloth,
still famous today for a wide range of craft, linen, wicker baskets, tree sculptures, wooden spoons, dried flowers and scissor chairs, invented, some say, by the Romans and so-named because of the way they fold up. All sorts of goods spill out on the pavements but step inside and you may find the shopkeeper quietly nursing her baby while grandma is shelling peas for the family’s supper. Then follow the lanes climbing up to the square and the whole town is at your feet, tumbling down the hillside among camellias, hydrangeas and fruit trees. The panorama is superb but anyone with a head for heights and twisty roads will also enjoy the drive up to Foia, just five miles away and the highest point at nearly 3,000 feet. Standing on the summit, battling with the wind, you feel like the knights of yore surveying the wild rolling lands of the Algarve, from the verdant slopes of the Serra to the coastal plain and the Atlantic glistening like silver on the horizon. ‘The Seven Ages of Tax Planning’ SPOUSE OR CIVIL PARTNER
This is part of our series of articles discussing tax planning at certain periods of life.
Spouse or Civil Partner This article looks at some tax planning opportunities which are generally available to all those who are married or in a civil partnership (this article refers to spouses, but the rules are the same for civil partners). Equalising incomes If spouses have different levels of income and, as a result, are paying income tax at different rates then there may be savings to be made by trying to equalise the incomes. For straightforward salaries there is clearly nothing that can be done, but investments or bank accounts could be transferred to the lower-income spouse. If you have your own business, then opportunities exist for employing a lower income spouse or for creating a partnership or transferring company shares.These should only be done with care as there are complex tax and other considerations to take into account. Equalising capital gains Each person has an annual exemption from capital gains tax of £10,600. If assets are split between spouses so each makes a gain on the sale two exemptions can be used. Transfers between spouses are not subject to capital gains tax so a re-arranging of assets can be done, however bear in mind the income tax consequences and consider inheritance tax as well.
Great care is needed if the asset is a property which is or has been a main residence as there are opportunities for increasing the relief as well as the possibility of losing it! This is a surprisingly complex area which will be looked at in a later article. Equalising estates for inheritance tax It is not actually necessary to equalise the assets of spouses, but it is important to ensure that each has sufficient assets to make gifts to use up inheritance tax exemptions (such as the £3,000 a year) and to make life-time gifts which fall out of consideration for inheritance tax once the giver lives for seven years afterwards. Non-dom spouses Gifts between spouses are normally free of inheritance tax, but there is a serious trap for anyone with overseas connections. If someone has come to the UK from abroad but retains any connections with their original country it is likely they are not UK domiciled (they are one of the so-called ‘nondoms’). Domicile is actually very difficult to change. Such a non-domiciled status can have considerable income tax and inheritance tax advantages (including no inheritance tax on gifts of assets outside the UK), but has one large tax disadvantage: gifts from a UK domiciled spouse to a non-dom spouse are not ignored for inheritance tax but are only exempt up to a total of £55,000. After seventeen years resident in the UK a non-dom is deemed to be UK-domiciled so the problem (along, of course, with the benefits) disappears. However, this can be a serious trap for a couple where one spouse is UK-domiciled and the other is from abroad – even, say, from Ireland.

Horsley Football Club Horsley Football Club is located in Surrey and was founded in 1903. Its aim is to provide the opportunity for youths and adults of all abilities to play competitive football in a safe, controlled, and friendly environment. The FA has recently confirmed that Horsley Football Club has been awarded the FA Charter Standard Community Club award of which there are only 460 Community Clubs in the UK out of a total of approximately 40,000 clubs. Life Begins Preparing for that difficult time

When Jeanette Palfry visited her local Registrar’s Office to register the death of her mother, she thought she was well prepared. As required by law, she had made an appointment within five days of her mum’s passing and had brought a copy of the doctor’s death certificate. However, she found that when the Registrar asked basic questions about her mother’s life, grief made her mind go blank. “When mum finally died after a long illness, it felt like the end of a journey,” explains Jeanette. “I was totally unprepared for the new challenges that lay ahead.” The visit was the first of many practical arrangements that would be required, including notifying others of her death. Most people inform friends and family as soon as possible, but they must also consider the deceased person’s official contacts, such as banks, building societies, the Inland Revenue and utilities. Some areas offer a “Tell Us Once” scheme which allows the Local Authority to notify other government departments and authorities about a death, but otherwise it will require individual notifications. The Registrar will issue a certificate for burial or cremation together with a
certificate of registration of death. You will need to purchase copies of this certificate (costing £4 each) in order to inform the relevant organisations, but it may be several weeks before each document is returned. You should therefore buy as many copies as you can afford: the cost increases from £4 to £7 if you have to return to buy more, aside from the inconvenience of having to make another trip. While you are dealing with the practicalities of registration and notification, you will also need to think about the funeral arrangements. If your loved one did not leave clear instructions, you may be confronted by a number of bewildering choices. Cremation or burial? Flowers or donations? Hymns or classical anthems? Making decisions can be difficult at a time when the family is in mourning, but the funeral director will be on hand to offer guidance and advice. If there is a funeral plan in place then the scale of the ceremony will be established in advance. Without prepayment the funeral plans will inevitably be dictated by the
budget available. In their ninth annual report on the expenses associated with dying, leading insurers Sun Life Direct say that the cost of a basic funeral in 2012 was £3,284. Jeanette Palfry believes that a visit to the funeral director when death is expected but not imminent can help relatives get the best out of a limited budget and alleviate distress when the time comes.
“I didn’t want to see the funeral director before mum passed away because it felt as though we were being mercenary,” says Jeanette. “On reflection it would have helped us to find out what we needed to do at a time when our minds weren’t preoccupied by her loss.” While Jeanette acknowledges that it is difficult to make preparations that anticipate a person’s death, she feels it is important to have key information to hand in the event of a bereavement. This includes a detailed note of the individual’s funeral wishes. “I’ve learned from experience that information and forward planning can make all the difference at a time when a family is coping with grief”.

The Horsleys Community Fund Happy New Year !
Following on from the article in the November edition of The Horsley Directory about the Horsleys Community Fund, the Estate Agents Gascoigne Pees kindly arranged distribution of our leaflet to all households in East and West Horsley. I do hope you received your copy – please let me know if you haven’t ! A huge thanks to everyone who sent in a donation over the Christmas period– including the donations passed on to us by Wills and Smerdon from their Christmas raffle! The income generated from your donations will make a significant contribution to the community and charitable needs of our Villages now and in the future. As a Permanently Invested Fund your money will keep on working in perpetuity and ensure that we have the resources to fund initiatives that make a real difference to the quality of life so many of us take for granted in the Horsleys but which are denied to some less fortunate groups and individuals.
Many of our voluntary groups and services are finding that local government funding is becoming increasingly harder to secure. However, as a Community Fund, we are fortunate to be able to access some central government matched funding under their Community First initiative on a 2:1 basis – add in Gift Aid and this really is a good deal! Now is the time to act on those New Year Resolutions !! To date we have been able to make donations of nearly £7500 but still have a desperate need to invest more funds to meet the increasing needs of our applicants now and in the future. Grant applications totalling over £39,000 was unable to be met by the HCF. We are delig hted that the Ladies Captain at the Drift Golf Club has chosen the Horsleys Community Fund as her charity for 2013 - the residents of the Horsleys will appreciate this pioneering initiative for years to come.

As superstitions run high at the start of 2013 with the ominous number ‘13’, the chance of an asteroid in February and not forgetting the fact that the world should have of ended by now, you would be forgiven for thinking that the 2013 property forecast would be looking rather glum, but Sally Asling Lettings Director for SurreyLets says this is absolutely not the case. “2013 started very briskly with no sign of any change, and whilst we have a range of property available, there is simply not enough property available in the rental market to satisfy the high demand. In these market conditions property, albeit it a flat, starter home or spacious family home, shall let very quickly. In the Horsleys the main demand is for family homes between £1700pcm and £3,000pcm, although in this area all property ranges have demand that outstrips supply. In Effingham and Bookham smaller family homes in the catchment area for the schools are in exceedingly high demand, between £1450pcm and £2500pcm. We expect the demand to push rentals up slightly, however, due to affordability and austerity measures, overall prices are not vastly increasing, however the high demand will mean properties are turned around quickly reducing void periods”. The sales market however is expected to be effected by the notorious bad luck of the number ‘13’, with critics warning that in some parts of the country, such as Scotland and the North, property prices may dip by up to four per cent. 2013 activity will probably mirror the last 5 years of lower than normal sales transactions but experts have indicated that Commuter areas of the South of England are expected to outperform as they meet the needs of growing London families that are looking to migrate out of the city. In the City though,
the Governments changes to Stamp duty has adversely affected the sales market and with the proposals to introduce the annual charge and changes to capital gains tax for properties over two million pounds, the market will be slower. Of course, in certain parts of the country, it is good luck for those potential property investors with the money to invest or the savvy purchaser looking for a good deal. Sally Asling states, “Landlords looking to expand their portfolios should do so now. The lettings market is very active with a high demand and there are some deals too be had on purchases in certain areas”.

Get Motivated! We can all feel de-motivated at times, so if January has passed you by without starting any of those New Year resolutions, turn February into the month you take some positive steps to regain control. Trying to achieve all that you want in the coming year may feel like an impossible task and it can lead to feeling totally de-motivated. Motivation is key to our creativity, productivity and happiness. When we are motivated we feel like we can take on any challenge, meet any deadline and work through any problem to achieve our goal, whether that’s personal satisfaction or public recognition for a job well done. But once demotivation sets in, then even the smallest task can seem insurmountable.
Set small goals
If you’ve given yourself a big goal this year, such as losing a large amount of weight or changing jobs, break it into small, short term goals. Give yourself weekly targets – losing 5lbs or re-writing your CV - and then congratulate yourself on achieving them. By doing this you are building up positive ‘credits’ in your mind, keeping you going for the following week.
Be inspired
Richard Branson has had a few business failures which he’s written about in his autobiographies. But these set-backs didn’t stop him - he
just tried again. It can be really uplifting to read about other people’s successes. There are also a lot of self-help and business books available which can help you to think about what you do and don’t want. A good one to start with is the international best-seller, Who Moved My Cheese? (Dr Spencer Johnson, Vermilion)
Stay focused
Don’t give yourself too many goals to aim for at once. Focus on one, work out how best to achieve it (in small steps, if needed) and work your way through it before starting on your next goal. Diffusing your energy by trying to change too many things at once will just mean you are less likely to keep up your motivation. So prioritise, write yourself a list and start with number one.
Talk about it
A great motivator is other people. If you tell people that you’re going to start writing that novel this month or apply for the local half marathon, you’re much more likely to do it. Talk to friends, family and work colleagues - their gentle nudges or encouragement will help to keep you on track. Putting up little post-it notes to remind yourself of your goals
and why you want to achieve them will help keep you motivated and on track, too.
Reward yourself
For every achievement, however big or small, reward yourself - you deserve it.
Reject negative thoughts
How many times do you find yourself saying ‘I can’t do it’, ‘it won’t happen’, or ‘it’s too hard’? Negative thoughts can really bring you down, so give yourself a buzz word or mantra to repeat immediately when a negative thought pops into your head. ‘I’m doing it.’
Look at the positive
Starting to exercise, cutting down on unhealthy food, changing jobs, starting your own business. None of these are easy. Accept that there will be set-backs and bad days or bad weeks. But keep looking at the positives - what did you manage to achieve this week, or how are you going to do better next week? So plan ahead, have lots of small goals to help you reach your big goal, accept there will be set-backs and look at how other people have done what you would like to do. And keep going - you’re doing great!

Enzo already feels human - he watches television and listens carefully to everything his master tells him. Through watching and listening, Enzo has gleaned that his human family is in trouble and he must do everything in his power to fix them. ‘Heart-warming’ doesn’t come close.

Wake Up and Smell the (Overpriced) Coffee... Looks delicious... and at £478, what a steal!
Most people have an opinion on downloading music. ‘It’s killing the industry’; ‘it’s terrible for bands’; ‘it devalues the art’. As a musician myself, however, my gut instinct is to swing in the opposite direction. Allow me to explain. A poster has been circulating recently on Facebook on the subject of the price of coffee versus the price of music downloads. ‘Why is it that people are willing to pay £3.50 for a cup of coffee,’ it asks, ‘but won’t pay 99p for a song…?’. I’ve seen this pop up a number of times in my news feed, and I rather think it’s time I stuck my oar in. Apart from anything else, if you buy coffee from Starbucks then you are unquestionably an idiot (I include myself in this sweeping generalisation, so don’t be offended). The markup on high street coffee is obscene. Okay, maybe if you’re buying a caramel macchiato or a vanilla chocciplonko or some other thinly disguised pudding-in-a-cup that it’s time-consuming to recreate at home, maybe then it’s excusable… but common-orgarden filter coffee? Daylight robbery. Anyhow, with that out of the way, let’s get down to the real business at hand. The music industry, and the internet.

The chorus of disapproval on this subject normally focuses on how ‘unfair’ it is that the kind of revenues bands enjoyed in the ‘70s and ‘80s have dwindled so dramatically. Is it fair that consumers happily lavish vast amounts of money on staggeringly evil, taxdodging, impoverished-beangrower-exploiting corporate juggernauts like Starbucks when they refuse to scrape together a few pennies for a piece of art crafted by hard-working, honest-faced musicians that will make your heart swell and remain with you forever…? Is this ‘fair’? Probably not. But is it happening? Definitely. Here’s the rub - you can’t change people’s habits. You have to respond to them. It’s not surprising that the major label bosses condemn technology for affecting record sales, but consider this - do the telecommunications companies who previously made tens of millions a year on international phone calls think Skype is fair? Doubtful. But have you used Skype? Brilliant, isn’t it? The simple truth is that industries move on. Once upon a time you could scrape a living lighting gas streetlamps or setting the pins at bowling alleys. Heck, in the Triassic era you could probably make a
pretty penny selling iguanodon rides to toddlers. But just like the human race, industries evolve, and indeed we only need to go back 150 years to reach a time before it was even possible to record music. So, if you’re in a band and you’re reading this, before you complain that people buying coffee instead of your latest track is unfair, remember that in 2013 you can publish a music video in seconds. You can promote your gigs at the touch of a button. You can record an album without ever leaving your bedroom. And most of it costs you next to nothing. In short, quit whinging and go write a new record. If you work hard enough, it could be on Spotify within the week. Where, as a premium member, I very much look forward to enjoying it. “With Valentine’s Day, Mother’s Day and Easter falling within the next 7 weeks, we’ll be rushed off our feet to mark the occasions and offer our customers some real treats,” explains shop manager Mary Richardson. So if you’re looking for something unique to give your loved ones, why not visit the shop?
“Our customers often pick up unexpected bargains and some are even new and still in their original packaging,” says Mary, who along with her dedicated team of volunteers has been busy receiving donations since the beginning of the year. “With all those unwanted
Christmas presents coming in, spring is definitely one of the best times to pick up some great buys,” explains Mary.

The spring stock will arrive in store at the middle of March, and as it has been collected since last summer, it will be the best key pieces that are put on sale first. The shop raises vital funds for the Woking Hospice, which helps care for patients and their families locally. If you want to support the hospice you can donate your unwanted goods in store, or why not give some of your spare time and help out yourself? The Better Life The Zen of Chickens You can learn a lot about life from a chicken. Behind that beak and those golden eyes lies a creature bristling with poultry wisdom. Here’s a sample of what I’ve picked up from both Sweet Pea and Pepperoni. Be in the moment. Chickens seem to have a very short attention span, unless they’re on the trail of a worm. However, they’re actually demonstrating an ability to detach from the superficial, which – to a chicken – is anything inedible.
learned early on that it’s wise to keep out of the path of a broody, moody hen. She also discovered they can run surprisingly fast and launch themselves at unwitting felines. Me? I learned that the term ‘an affectionate peck’ doesn’t apply to poultry.
Be curious about the world. Chickens are life’s little explorers. They can find that hole in the fence which I blocked with some feeble bamboo canes and never got round to repairing properly, the last wild strawberry, or a snail who thought hiding behind the coop was a foolproof survival strategy.
Make time to relax. When they’re not eating, advertising their egg-laying prowess, playing tug-of-war with snails or enjoying dirt baths, chickens like nothing better than sitting still and watching the world go by. Or, if it’s a sunny day, a spot of Chicken Yoga might be in order. You can forget about downward dog, cat posture or doing the cobra. For chickens, the yogic routine is a few luxurious wing stretches, some flexing of the neck and then it’s time to sprawl out in the warm. And if it’s cold outside? They snuggle up together in what I call the ‘tea cosies’ posture.
Celebrate your successes. The commotion a chicken makes before, while and after laying an egg is surely one of Nature’s cruellest jokes. Short of ringing a dinner bell, it’s the most efficient way of summoning any fox within a two-mile radius. Despite that, I defy any smallholder not to be impressed at the ‘scraps, grain and grit in, followed by egg and fertiliser poop out’ magic trick performed most days. Be how you feel. Our cat
Eat your greens – and give peas a chance. Impressionable children the world over would have no qualms about devouring chard, lettuce or spinach (to name but three) if they had a chicken for a role model.
And, being life’s gourmet connoisseurs, chickens will also happily try tomatoes, grapes, porridge, roast potatoes, bananas, raisins and spaghetti. Although someone we once met, who declared that she fed her hens leftover bacon and eggs did, I feel, overstep the mark a little. The early bird really does get the worm. Although the slightly delayed bird may succeed in taking it off you, if you don’t pay attention. Opportunity not only knocks, it grabs too. Care for your environment. Once again, chickens lead by example. Whether it’s pulling up the weeds*, providing some essential pest control or aerating the soil, chickens are constantly on the lookout for ways to contribute. * A word of caution - an unchecked chicken gets a little over enthusiastic in its garden duties! Play to your strengths. Chickens don’t fly or glide and their singing isn’t up to much. But...they don’t waste food, or an opportunity, and they make eggcellent companions. By Derek Thompson

Land Rover Freelander What is it? Land Rover’s perennial compact SUV given a little wipe over with the flannel to freshen it up. The changes aren’t huge inside or out, but they’re enough to give it a new lease of life. The talking points on the outside are some smart new headlights, new rear taillights that look like dumpy red snowmen, and a more striking grille. Inside it’s had more attention with an Evoque-ess makeover.
What’s under the bonnet? There are two diesel units which are both 2.2 litres in size but with different power outputs, 147 bhp and 187 bhp, they both offer four-wheel drive. There’s also a 150PS version in two-wheel drive form, but quite why you’d opt for that we have no idea apart from its lower CO2 emissions. We tried a brilliant 2.0-litre petrol engine too on our road test in Canada, but sadly this won’t be coming to the UK. In fact, it was actually our pick of the bunch.
What’s the kit like? It’s on the inside where the manufacturer has really

gone to work. The centre console is new and the old Terrain Response dial has been swapped for buttons from the Evoque. A new instrument cluster has been installed which has a five inch display that offers the important details. It now has keyless go, a brilliant hitch assist that helps drivers line up their tow bar and clever voice activation. There are three new colours to choose from paint wise and the stereo system provided by Meridian is nothing short of extravagant.
Any rivals? There are lots, and that’s the problem. Audi Q5, BMW X3, Volvo XC60 and VW Tiguan all represent very talented and capable alternatives to the rugged Brit. All are newer than the Freelander and are tough competition to the Land Rover.
Is it any good? If you were hoping for a whole new car, you’ll be sorely disappointed. This revision is a nip and tuck at best bringing its styling into line with the other, newer models in the range. However there’s no denying that the Freelander is extremely capable off-road
– some of the terrain we tackled on the launch was positively frightening and it sailed right through it.
What’s our verdict? The revisions inside bring the Freelander up to date, but we had rather hoped they’d have done more with the exterior. The new lights are striking, but nowhere near as bold as its sister cars which is a shame, however its capability off road can’t be doubted and despite its age we still think it’s a rugged alternative to some often rather boring Germanic offerings. It’s worth a look for the pony-pulling set.

Horsley Recipe of the Month
Satay Vegetable Skewers Serves 4
Ready in 30 minutes If you are short on time but still want a flavoursome supper then try these delicious vegetable kebabs with a lovely spicy peanut sauce and spring onion noodles. For non-veggie kebabs replace the aubergine with cubes of lean pork or chicken fillet and cook for 15-20 minutes until the meat is cooked through and lightly charred.
Ingredients: • 100g crunchy peanut butter • 25g creamed coconut, chopped • 1/2 tsp chilli powder • 1 garlic clove peeled and crushed • 4 tbsp soy sauce • 3 small peppers (red, green and yellow), deseeded and cut into 2.5cm pieces • 4 thick slices of aubergine • 1 large red onion, peeled and cut into slim wedges • 3 tbsp sesame oil • 4 nests fine egg noodles • 4 spring onions, trimmed and finely sliced
Tip: If you don’t have a griddle pan cook the kebabs under a pre-heated grill or use a heavybased shallow frying and add a little oil.
Place the peanut butter, coconut, chilli powder and garlic in a small pan with 180ml water. Heat gently, stirring all the time, for 2-3 minutes until the coconut has dissolved and the sauce has thickened. Remove from the heat, stir in half the soy sauce. Thin down with a little more water to get a pouring consistency, if necessary. Par-boil the peppers in a pan of boiling water for 2 minutes, drain well and pat dry with kitchen paper. Cut the aubergine slices into quarters. Thread the peppers and aubergine onto 8 pre-soaked wooden skewers with the onion wedges. Preheat a cast-iron griddle pan until almost smoking. Whisk 2 tbsp of the oil and remaining soy sauce together and brush all over the vegetable kebabs. Cook the kebabs on the hot griddle pan for 6-8 minutes, turning frequently until tender and lightly charred. Meanwhile, cook the noodles in a large pan of boiling water for 3-4 minutes until just tender. Drain well and toss together with the rest of the sesame oil and the spring onions. Serve the kebabs on the noodles and drizzle over the satay sauce.
