Bobby Davro welcomes Hospice shop to East Horsley Recently appointed Patron of Woking Hospice, Bobby Davro came to officially open the East Horsley shop on Wednesday 9th November. The shop is located at 22 Station Parade, Ockham Road South and will be open Monday – Saturday 9am – 4.30pm The Bucks Fizz was flowing and Seth Jackson from The Bakery presented a welcome cake to Bobby Davro and Manager Mary Richardson. This is the 11 th Woking Hospice retail shop in the area and will be vital in helping to support the work of the Hospice. Bobby, who has supported the Hospice over many years with numerous fundraising events said “ I was really honored to become Hospice Patron and this is my first official engagement as Patron. Hospice care is so important in our community which I have seen first-hand after my Mum spent her last few weeks at Sam Beare Hospice in 2010. Hospices are truly wonderful places and the retail shops play a vital role in raising awareness and vital funds to support the clinical services.” The shop has a bright contemporary feel and will specialise in womenswear and accessories, there is a small children’s section including clothes and toys and a selection of books. Christmas Traditions As with many traditions, there is usually a story of how a custom came about. Some sound plausible and some less so. But they almost always have a nostalgic tale behind them and never more so than at Christmas time.

Hanging a stocking by the fire

A long time ago there lived a man who had three daughters. His wife had died some years earlier and now his daughters were of an age to be married. However, at that time in history, the prospective husband’s family would expect to receive a dowry – gifts and money – when their son married. The man was very poor and simply could not afford to do this. Each night his girls would wash and mend their clothes. To enable their stockings to dry they would hang them near the fire. A wealthy man called Nicholas, who lived in the village, had heard of the girls’ plight and one night called by the house after dark. Seeing an open window he sneaked in and put a bag of gold coins in each of the stockings. When the villagers heard of the widower’s good fortune, they too started hanging stockings by their fireplaces. Because the stockings were by the fire this lead to the belief that Santa came down the chimney in order to deliver his gifts. Nicholas did many more secret good deeds – he really was the original benevolent St Nicholas.

Christmas Puddings

Christmas Pudding’s history is not as a dessert at all, but as a savoury meat based dish. In Medieval times all surplus livestock were slaughtered in the autumn so that they did not have to be fed over the winter. The meat had to be preserved however and a pottage was prepared in a large cauldron, the ingredients being slow cooked, with dried fruits, sugar and spices added. It is more likely that the dish was called plum pottage or plum porridge, the dried version of plums being prunes. As meat preserving techniques improved,

the savoury element of the dish decreased, although of course if suet is used a small element of meat may still be included. It was not until the 1830s however that the cannon-ball of flour, fruits, suet, sugar and spices, all topped with holly, made a definite appearance, becoming more and more associated with Christmas. It is said that the pudding should be made with thirteen ingredients to represent Jesus and His Disciples and that every member of the family should take turns to stir the pudding with a wooden spoon from east to west, in honour of the Wise Men.

Christmas Crackers

No Christmas dinner table would be complete without Christmas crackers, and the hats, small gifts and bad jokes are very much part of the tradition. The crackers were believed to have been invented in around 1850 in London, by a sweet maker called Tom Smith. He was often trying to think of new ways to market his sweets and sitting by his fire one night, he thought it would be a good idea if they could make a similar crackle to a burning log as the sweet wrapper was pulled in half. The idea caught on although rather too well as rival manufacturers soon sprang up. Tom Smith’s son, Walter, came up with the idea of including other items and offering different designs as a way of differentiating his product from those of his competitors. The best tradition of all of course is to spend time with your family, and that needs no explanation.

The gadgets that help get 2012 off to a great start

December is Christmas for most of us, but for the fitness industry the season to be jolly is in January. That’s when people take out expensive gym memberships they’ll only use for a few weeks, buy treadmills that will soon be gathering dust in the garage and invest in all kinds of quick fitness fixes. So how do you get help with your new year’s resolutions without wasting money on things you won’t use?

New Year’s Revolution One of the best ways to motivate yourself is to keep track of your progress: seeing your performance improve is a great way to keep you on track. Garmin’s Forerunner fitness watches can be a big help: devices such as the FR60 (£119) log every mile and minute, monitoring your heart rate and how many calories you’ve burned as well as the distance you’ve travelled and the speed you achieved. The FR60 can also communicate wirelessly with your computer, enabling you to track performance over time and even share your results with others online. Garmin isn’t the only firm offering to track your progress. The Nike+ Sportband 2 (around £35) is a wristband that includes a removable Nike+ sensor. The sensor tracks your distance, pace, time and calories burned, and when you get home you can upload your data to Nike’s website. Be aware, however, that the battery isn’t replaceable: it’s good for 1,000 hours, Nike says, which means it’s best suited to light use

or training for a specific event such as a 10K or marathon. Nike also makes smartphone apps to track your fitness, as does rival firm Adidas, whose miCoach system is available in mobile phone form or as a stand-alone bit of kit. The miCoach Pacer (£110) doesn’t just track your progress, though: it hooks into your MP3 player and delivers what Adidas calls “realtime audible coaching”: spoken encouragement to get you through your workout. As with Nike’s fitness kit there’s a website that you can use to track your progress over time. If you’d rather do your fitness at home, sticking a Kinect sensor on your Xbox 360 turns the games console into a home fitness hub. Titles such as Your Shape: Fitness Evolved are surprisingly gruelling, while dance games such as Dance Central or Zumba can help you tone up without the tedium of traditional workouts. If your goal is weight loss rather than overall fitness, the Ki Fit might help. It’s not

cheap - prices start at £99 plus 11 monthly payments of £16.50, rising to £129 plus 11 payments of £18 if you go for the premium package - but the combination of an armband monitor and online analysis promises to help shift unwanted pounds by working out how many calories you’ve consumed and how much activity you need to do to compensate for that extra cupcake or pint of Carlsberg. No matter what kind of fitness routine you’re considering, don’t forget the power of music to motivate you. In-ear headphones such as Sennheiser’s excellent IE6 pair (around £64) can replace the gym’s piped music or the sounds of traffic with your own personal soundtrack, and if you’d rather go wirefree and avoid sticking anything into your ear canals then JayBird’s Sportsband 2 headphones (£99) connect to your music player via Bluetooth. If you prefer aquatic exercise to pounding pavements, there’s an option for you too: the Universe NU Dolphin Waterproof Touch music player (£101), as the name suggests, is designed to work underwater.

As you read this we will be taking a break! Having completed our second successful season in the Grace & Flavour garden we have taken a literal leaf out of the garden, and are having a seasonal rest, along with most of the plants and trees. During December and January, access to the garden will remain open as ever, but the structured team days have halted, to resume again in February. As well as giving a bit of a breather to the members and lead organisers, a rest gives us a chance to look back at the year, and take stock. What has been successful and what less so? Whenever I do that I have to be sure I am seated...even after two years’ growing, and three years on the project I am in awe of what has been achieved by our teams – volunteers to a (wo)man. Regular readers and those familiar with the garden will know that we have it split almost in partitions. Outside the walls, along the side of Ripley Lane we have private allotments for East & West Horsley residents (some spare for the former and a waiting list for the latter). Inside the walls on the Western side of the garden we have a large area set aside for ‘the organics’ members who are passionate about, and committed to wholly organic methods. In the rest of the garden the team reserves the right to use non-organic methods as and when deemed appropriate. This article will be far too short to debate the pros and cons of either method – if you are interested then just come along and find out. What is consistent across all three areas though, is that this year has been a roaring success overall, with a variety and abundance of veg that has been very encouraging. There have been challenges of course – blight meant that we lost every single tomato in the garden, and the netting we used to protect some of the veg also kept wasps away...resulting in a

very dense infestation if whitefly: the wasp is a natural predator but couldn’t get at them! Just one of the lessons learned for next year. On the allotment side of the project there have also been some impressive successes, and a few expensive lessons (amazing what damage a pigeon can do to un-netted veg), but the pace and enthusiasm after the late start in April have been quite something to see. So in summary, with two head gardeners, two subcommittees, a talented and/or willing bunch of members and two seasons under our belt we are all feeling confident about being able to grow and reap a decent harvest at Grace & Flavour in coming years. There are plenty of other things planned as well though. As an example, Rob and his team have made a great start on ‘The Terrace’ – and area which will be fenced in part to form a safe place for young children’s and an easily accessible mini-garden for those who are not quite so physically able as our diggers and planters. We also intend to re-build our potting shed this year so that we have an area for members to sit in some comfort, out of the rain. It will be a multi-purpose space giving us storage for the veg, somewhere to make tea, a disabled loo and somewhere the various admin and ‘sitting’ tasks can be done. Thanks to Guildford Borough Council we have enough money to make a really good start. So quite a year in all. We have found several new members from this magazine, so if you are someone who has been reading for a while, would like to know more but have not yet been down to have a look, let me encourage you to pop along in February. Whatever your skill or physical fitness level you’ll find there’s a job to do, a contribution to be made and a warm welcome to be had.

Don’t be late! The Penalties are Great! In past years you could sometimes afford to be late with your tax return, especially if you didn't owe any tax as penalties were cancelled if there was no tax due. But no longer! Personal tax returns for the year ended 5th April 2011 are due by 31st January 2012, which usually arrives faster than anyone thinks.

Late payment surcharges If you owe tax for 2010-11 on 31st January 2012 you will also be charged interest on late payment (on a daily basis) as the funds have to be cleared funds on 31st January. Tax that is thirty days late will be charged an extra 5% surcharge. A further 5% surcharge is charged on tax that is six months late and again when it is twelve months late. These are in addition to the interest and any penalty for a late return.

It all started with a late tax return...

Late return penalties If your return is submitted late, you will automatically be charged a penalty of £100, regardless of whether any tax is due, has been paid or even if you are due a repayment. For a return that is three months late, additional penalties at £10 a day accumulate up to £900. Once six months late there is a further penalty of £300 plus 5% of the tax, and this is applied again once the return is twelve months late (but it can even be 100% of the tax instead). So the penalty for being six months late is £1,300 plus 5% of the tax!

A day in the life of… Surrey Air Ambulance Chief Pilot, Captain Steve Wood. As a Horsley resident, Steve Wood is proud and privileged to fly his local Air Ambulance and serve the community in which he lives. In a reversal of roles, his first flight in a helicopter was in an Air Ambulance after an accident while racing a motorbike on the Isle of Man in the 1980s.Like most patients, he has no recollection of his journey to hospital but it sparked his interest in aviation.

He started his working life as a telephone engineer for British Telecom after leaving school, then set up his own telecoms company. Running his own business allowed him the freedom to train for his private pilot’s licence and in the early 1990s he had a trial lesson in a helicopter. He said: “I didn’t understand any of it and was baffled by everything going on but I just put that down to it being a one-off opportunity to have a lesson. The instructor rang me back two weeks later and said there had been a cancellation but I had no intention of going back. I did go back, had another lesson and decided at that point that I wanted to fly for my career. I didn’t want to spend the rest of my life drilling and feeding cables through holes. I bought a five per cent share in a Robinson R22 which helped me build hours towards my commercial licence.” Steve landed his first flying job as an instructor at Redhill Aerodrome and then enjoyed a spell flying Super Pumas over the North Sea “but the only exciting part was taking off and landing on the rig”. He also worked for the Forestry Commission in Scotland, chasing deer across the Highlands as part of culling and survey work.

At the National Grid, he was responsible for lowering engineers down to work with live lines during power line construction all over the UK – real precision flying. He then joined British Transport Police examining and instructing pilots but manning the controls of Surrey Air Ambulance has been the highlight of his career so far. He joined the life-saving helicopter six months after it was first launched in June, 2007, at Dunsfold Park near Guildford. “Most Air Ambulance pilots are ex-military but I’m quite proud of my heritage as a former telephone engineer, “ says Steve. “I suppose it was my rite of passage, having been airlifted all those years ago,” he said. “But it’s the pinnacle for a pilot as you get to land where you like depending on the safety aspect. I also get to go home every night and see my family. “It’s very unusual for a helicopter pilot doing this type of work to live only half an hour away from where they work as most of them have to stay in digs.” Between them, Steve and fellow Pilot Pete Driver have flown more than 3,000 missions since Surrey Air Ambulance first took flight. Their shifts comprise of four days


on and four days off to give them the rest they need and Steve spends his spare time meddling with his collection of old bangers and motorbikes. He can fly a maximum of two hours at any one time during daylight hours from 7am to 7pm in the summer and 8am to 6pm in the winter.

The helicopter often lands on motorways, golf courses, school playing fields, and sometimes private gardens – as long as it’s big enough and safe to do so.

Along with the specialist doctor and critical care paramedic he loads the helicopter with the medical kit and checks its weight and balance. He said: “The landings are the most challenging tasks as I have to negotiate with Air Traffic Control and work out the best spot closest to the patient. Landings are described according to how far away from the patient they are – Alpha being the nearest, followed by Bravo and Charlie. I then have to work with the doctors and paramedics to decide which hospital is the most appropriate for them which is often the major trauma centres in London.

The Helicopter Emergency Medical Service (HEMS) has an exemption on its air operator’s licence which allows them to land anywhere to save lives. Strict limits from the Civil Aviation Authority (CAA) are followed and flying conditions are dependent on the height of the cloud base and visibility at certain levels. Sometimes conditions will be perfect at the scene of an accident or medical emergency but the helicopter could be “weathered in” at the base and therefore unable to fly. But the final decision on the tasking of

“Keeping control of a situation also requires diplomacy, compassion and empathy.

Few people realise what an Air Ambulance does until they have a need to use it. Even fewer people realise that we rely almost entirely on the generosity of the local community.” Being a high-profile charity, Surrey Air Ambulance attracts a lot of visitors for cheque presentations and Steve is always happy to greet them and pose for photographs. In July, he and his partner Rebecca joined the fundraising side themselves when they took part in the charity’s first-ever Double 100 bike ride which started and finished at the helicopter base. Fellow crew members and former patients were among more than 80 cyclists who took part and raised more than £20,000 to help keep the helicopter flying. Steve added: “I get real job satisfaction when the patients we airlift come to visit the base to say hello and thanks. It can be very emotional but we’re in the business of saving lives.”

Sachertorte 150g unsalted butter, softened 150g caster sugar 1 tsp vanilla extract 6 large eggs, separated 150g plain chocolate, melted 75g ground almonds 50g plain flour, sifted FILLING AND ICING 140g plain chocolate 5 tbsp strong black coffee 150g icing sugar, sifted 6tbsp apricot jam, warmed and sieved 50g milk chocolate, melted

Preheat the oven to 180C, 350F, Gas 4. Grease and base line a 23cm (9in) spring-form tin with greaseproof paper. Place the butter, sugar and vanilla extract in a large bowl and beat together until pale and fluffy. Gradually beat in the egg yolks then stir in the melted chocolate. Fold in the ground almonds and plain flour. Whisk the egg whites until stiff. Beat about one third of the whites into the chocolate mixture then gently fold in the rest with a metal spoon. Pour into the prepared tin. Bake for 40-45 minutes until firm to the touch. Cool for 10 minutes then turn the cake out onto a cooling rack and leave to cool completely. To make the filling and icing, place the chocolate and coffee in a heatproof bowl set over a pan of simmering water and leave until melted. Stir until smooth then gradually beat in the icing sugar to make a smooth thick icing. Halve the cake horizontally and sandwich back together with some of the apricot jam. Spread the rest of the jam over the top and side of the cake. Spread the icing all over the cake, smoothing it gently down the sides with a palette knife. Leave in a cool place for 2 hrs. Spoon the milk chocolate into a small paper piping bag and pipe ‘Sacher’ on top of the cake. Leave until set.

It’s that chilly time of year when sniffles and bugs are all around us. It can make for a miserable Christmas and prevention is better than cure so learn how to boost your immunity and ward off winter bugs.

Boosting Immunity On average an adult can experience colds two to four times every year, while a young child can experience anything from three to eight colds over the same period, with the worst times for susceptibility occurring during winter. Tweaking your diet is key to boosting your immunity, as vitamins and minerals, naturally found in fruit, vegetables, nuts and seeds, all play a huge part in cold-proofing your body. Increasing the amount of fruit and vegetables in your diet, each packed with essential vitamins and minerals, can help to improve immune function. Foods rich in vitamin A, a powerful antioxidant that plays a key role in the body’s immune system, include orange and yellow fruit and vegetables such as apricots, mango, sweet potato and carrots. Vitamin C is a super immune and all-round health booster that can also be effective in minimising asthma symptoms. Dietary sources of vitamin C include kiwi, strawberries, oranges, tomatoes, steamed broccoli and green peppers. Did you know – raw green pepper actually has higher vitamin C levels than many fruits. Vitamin E is another great immunity booster due to its high antioxidant levels. Fruits such as berries are antioxidant-rich so fill up on these at snack or dessert times whenever possible. Vitamin E enriched foods include avocado, carrots, almonds, Brazil nuts and sunflower seeds. Zinc is an important immunityboosting addition to the diet that helps to reduce the amount of time you have symptoms for, if the early signs of a cold are already present. Zinc can also help you to recover

more quickly. Foods rich in zinc include dark leafy greens, pumpkin seeds, tofu, lentils and sesame seeds. Omega-3 oils which are naturally found in oily fish varieties plus vegetarian-friendly options such as flaxseeds, linseeds, almonds and walnuts, can also help to boost immune function, reduce our susceptibility to infections and reduce the inflammation associated with colds. It may not be the most obvious, or the most popular smelling food, but garlic is a fantastic natural antibiotic, which has anti-viral properties due to its active ingredient allicin, which is effective in opening up airways and easing allergy and asthma symptoms. Try to minimise your intake of refined food items such as white bread, white flour, white rice and white pasta as these can depress the immune system and increase your susceptibility to cold viruses. If you struggle to eat a varied colourful diet, or would simply prefer to have the reassurance of a daily supplement to ensure you have healthy levels of essential vitamins and minerals in your body over the colder months, opt for a good quality multivitamin and mineral supplement. However, experts warn that although multivitamin supplements will help to fend off cold infections, they will not replace all of the immuneboosting benefits of a healthy diet. Leading a healthy lifestyle, being physically active and getting a good quota of sleep can additionally help to boost your immunity. Don’t fall into the habit of using the cold weather as an excuse to stay indoors. Alleviating winter blues The darker days and nights caused by the shorter daylight hours of winter can have a huge effect on how we feel. If you find yourself wanting to eat and sleep more during winter or are less eager to get out and socialise, tips to alleviate the winter blues are at hand, writes Julie Penfold. If you feel a dip in mood and a lack of enthusiasm during winter; you are not alone. Our internal patterns of sleep, appetite, sex drive, temperature, mood and activity all rely on natural light cycles. Experts recommend getting more light into our lives to help alleviate symptoms. Getting outdoors each day is crucial to tackling winter blues as it increases our exposure to sunlight and can positively impact on our mood. Exercise and laughter both stimulate and boost endorphins, those wonderful feelgood chemicals in our bodies that help to lift our mood. Make a point of spending time with people who make you smile. It is also important to eat well during the winter. Over two million people in the UK are affected by Seasonal Affective Disorder (SAD). The low levels of light during the winter months can cause a range of symptoms from slowing down and lacking energy, right through to severe depression. Other symptoms include feeling gloomy, lethargic and experiencing feelings of being unable to carry out our normal routine. Not wanting to go outdoors, loss of libido and craving sweet carbohydrates are also indicators of SAD. Light therapy has been shown to be extremely helpful for many sufferers and is very easy to use in the form of a lightbox which mimics natural sunlight and can be used daily. “If you have any of these symptoms, even on a mild scale, these are all indicators of SAD,” says Carol Barksfield, managing director of SAD Lightbox Company (www.sad.uk.com). “Using a lightbox is a natural and successful treatment for SAD.”
