pring is in the air - well almost - and Valentine’s Day decrees that every man in the area buys his consort some flowers and chocolates! A great quote I think “ Love is like an hourglass, with the heart filling up as the brain empties.” - Jules Renard Although it’s a cold January day whilst writing to you, it doesn’t stop me looking forward with great enthusiasm to what should be a fairly momentous year all round, given that we have an awful lot going on in the South East from the Spring onwards. Although the pundits are pretty gloomy about the economic forecast - when are they not ? - there is much to look forward to on the local scene in the south east with the Queen’s Diamond Jubilee kicking off in June and the wonderful Olympics 2012 to look forward to in July and August and coming to a backyard near you given the Cycling Route! Unfortunately my fairy godmother has failed in her attempt to allocate me tickets I console myself with the thought that the TV will have the best shots of everything I need to see. With spring around the corner, we have a preponderance of gardeners advertising in the magazine for this edition, so absolutely no excuse for any of you to have an untidy or flowerless border this year! If you know of any event coming up shortly in the area that you’d like other readers to know about please do email it through to us. Madeira means ‘wood’, a name given to the island by the first Portuguese settlers in the 15th century, though they promptly burnt as much of the forest as they could to create arable land. Today the trees are back, 900,000 of them planted in the past decades, and as you approach this rugged but fertile island, dizzying slopes greet you with lush terraces where mango and banana groves compete with vineyards, passion fruit and papaya trees. Pretty as a postcard, Funchal, the capital, is a neat maze of tree-lined avenues with mosaic pavements, shaded squares and outdoor restaurants sweeping around a glistening bay. On these south-facing slopes, life is relaxed and there’s time to wander around the farmers’ market, the steep lanes draped in wisteria, the marina, or look out for the Beatles Boat turned into a restaurant, the statue of Zarco, the explorer who first set foot on the island, or that of Christopher Columbus who married a local girl. Some 2000 feet above the sea, the leafy suburb of Monte offers superb views, fragrant gardens and an iconic church where on August 15th, penitents go up the steps on their knees. Visitors prefer the cable-car but the fun way down is the toboggan, Madeiranstyle, careering down the slope in a giant wicker basket, swung right and left by two handsome guys in white gear and straw hats. Just 36 miles by 14 miles in the Atlantic, closer to Africa than to Portugal, the motherland, this little gem of an island is surprisingly varied. All along the coast, rocks and cliffs tower dramatically above small pebble beaches pounded by the ocean. Experienced surfers head north to ride the

waves but Funchal has gentle options, from coastal and dolphin-watching trips to a romantic twilight cruise on Santa Maria de Colombo, a stylish replica of Christopher Columbus’ boat. Others sail around the Desert Isles, home to wild goats, seals and thousands of sea birds while the ferry sets off for the more distant sister island of Porto Santo and its five miles of golden sands. Back on the main island, small towns and villages are scattered along the shore, Camara de Lobos with its fishermen’s chapel and wooden boats, Calheta and its sugar plant making ‘firewater’, Porto Moniz with its bathing pools hollowed out of an old lava flow or Machico where Zarco is said to have landed. Not so far away, Torch Mountain recalls the great bonfires of the past, warning of approaching pirates, while the world’s second highest sea cliff, Cabo Girao, rises to a staggering 1900 feet and the

windswept eastern peninsula stretches into the ocean, shared by the occasional lizard and a handful of seasoned walkers. Walking on Madeira is exhilarating and pleasant year round. Popular footpaths follow the levadas, the ancient irrigation channels still used to bring water from the humid but sparsely inhabited north to the rich farmlands of the south, with a network of over 800 miles. There are leisurely trails through the ancient laurel forest of the National Park covering two thirds of the island, past gurgling streams and waterfalls, picnic spots and panoramic ‘balconies’ suspended between heaven and earth. But most challenging of all is the mountainous interior and the fabulous but headspinning hike from Pico de Areiro to Pico Ruivo, the highest peak towering above a dramatic moonscape at over 6000 feet. by Solange Hando

How to Sleep Better

Sleep is an essential and involuntary process that is vital for maintaining good mental and physical health. One in four people are thought to suffer from sleep problems at some point in their lives, including deprivation and insomnia.

We spend approximately a third of our lives asleep. It is as important to our bodies as eating, drinking and breathing. Sleep helps to repair and restore our brains and bodies. Poor sleep can affect mood, concentration, judgement and reduce our immune system’s ability to fight off minor ailments such as colds and flus. Longterm sleep deprivation can lead to health problems including diabetes, heart disease and clinical depression.

Eat breakfast

Did you know, skipping breakfast can put you on the path to poor sleep? It all starts with eating breakfast within 30-45 minutes of waking, as there is a biochemical link back to our sleep. “Your levels of adrenalin are increased if you do not eat breakfast and your brain starts to shut down non-essential functions including the production of the hormones, serotonin and melatonin,” says sleep expert, Dr Nerina Ramlakhan. “Melatonin is the hormone required at the end of the day to sleep. By skipping breakfast you produce less melatonin and as your adrenalin levels are higher, you will feel more anxious towards the end of the day and therefore less able to sleep.”

Keep a watchful eye on your caffeine and sugar intake

Ensuring you eat healthily and minimise sugary snacks is essential for keeping your brain and body contented. Sugar causes the body to run on a higher energy pattern, which creates highs and lows as the quick-fix energy hit wears off. This, in turn, sparks a need for more sugar in the body via drinks and caffeine. Eating little and often and keeping hydrated with water, herbal teas and fruit juices, while minimising your intake of fizzy drinks and caffeine, will help ready mind and body for sleep. Nerina recommends avoiding caffeine after 2pm each day if you are having trouble sleeping.

Don’t eat too late

Eating your main meal earlier can also help with improving sleep. A large meal can impact on your digestive system and cause heartburn. Leave three hours before having a meal and going to bed.

Make time to unwind

As we rush through each day, balancing a busy lifestyle and juggling responsibilities left, right and centre, finding time for a rest can feel impossible. However, if the mind has no opportunity to process information from the day, it waits until bedtime to recap, when the frantic pace of the day has finally stopped. This results in a poor, restless sleep. Nerina suggests trying to build rest into your day by meditating or power napping. The 15-minute time out from your day will create that internal chemistry that is just right for sleep. Additionally, deal with worries or a heavy workload by making a list of things to be tackled the next day.

Make your bedroom a sleep haven

Create a restful space: your bedroom should be as quiet and dark as possible. “Managing technology is very important as you need a break from TV, computers, emails and mobile phones, before going to bed. Without this break, you are over stimulating your mind and it will be unable to find processing time,” says Nerina. Set boundaries with technology and keep all gadgets out of the bedroom. by Julie Penfold

Progress made at the Grace & Flavour community garden in 2011 was encouraging. If you have yet to see it, please come up and visit one Saturday. You’ll meet your neighbours there and a few new faces too! Apart from a successful harvest, and the wonderful people involved, Grace & Flavour’s success to date has been due in no small part to the support of local organisations such as Tozer Seeds and Challenge Fencing – not to mention our two local parish councils and of course this publication. There’s another organisation we work with, and it’s about that that I want to write – in the hope that I might encourage you to take a closer look yourselves. I expect many readers will already be familiar with, or involved in the Wheel of Care, but wonder if you know about the delivery of our Tithe... A core tenet of the G&F project has been the provision of fresh vegetables to our community. It’s easy to assume that everyone here can hop into a car and whizz off to a supermarket, or pop into one of the local stores but there are plenty of people for whom that’s not the case. We set aside 10% (or close to it) of our produce for those in our villages who do not have easy access to fresh fruit & veg. That may be through illness (chronic or acute), immobility, distance from

the shops or any one of several other reasons. Our community has some effective groups serving the people to whom this applies: churches, social groups, good neighbours etc. One such organisation is the Wheel of Care (www.westhorsleywheelofcare.co.uk), which offers help, support, transport and activities that provide exercise, companionship and friendship. Through the long harvest season of 2011, a group of Wheel volunteers came to the garden every Thursday, to collect and distribute freshly cropped veg to almost 30 local households. Top 5 Cars of the Tokyo Show This year’s Tokyo Motor Show was dominated by green technologies and wacky concepts – but among the madness there were some important model launches. The show isn’t one of the biggest. Spread over four halls you can get around it easily in a day – unlike the blister-inducing mass of motors that is Europe’s biggest show in Frankfurt, Germany. However, as the Japanese makers’ home event, it is absolutely packed with innovation. I spent two days scouring the halls and soaking up the culture, but eventually these five emerged as my picks of the show. Toyota GT 86 It’s about time Toyota got interesting again and the GT 86 certainly floats our boat. Rumoured to cost around £28,000 when it goes on sale in the UK, the rear-wheel drive car features a 2.0-litre 197bhp unit and will hit 60mph in seven seconds. It certainly looked good on the stand and was a welcome break from the green concepts doing the rounds everywhere else. Subaru BRZ Subaru has been having a hard time of it in the UK of late, so the BRZ comes as a much-needed breath of fresh air. Jointly developed with Toyota, it’s the sister car to the GT 86, and in the company’s famous corporate blue it looked fantastic. The BRZ has slightly different body panels and interior to the Toyota. Just don’t mention the new, and very bland, Impreza also on display on the stand... Nissan Juke Nismo The Juke has been crying out for a real sporty model and it looks like Nissan may finally answer our prayers thanks to its tuning arm Nismo. This is the first car that’s been given the Nismo treatment and although currently billed as a “concept” it’s highly likely we’ll see it on our roads soon. Exterior and interior tweaks will be matched with a breathed-on powerplant. Mercedes F 125! We’re not big fans of concepts that don’t mean anything, but Mercedes was quick to point out the F 125! showcases the future design direction of the next S-Class. The concept featured fuel cell technology which would give it a range of 1,000km, a lightweight body construction, gullwing doors and a cloud-based infotainment system. But ignore all that, it’s the looks that are most likely to shape future luxury barges from the firm. Hino eZ Cargo Tucked away in the corner of the truck section of the show was this fantastic delivery van. Not only does it look superb, but it showcases EV technology and a clean uncluttered design that would make Apple proud. A spokesman for Hino told us it has a range of 50kms, can charge in six hours and hit 70kph. Trials will take place next year before a decision is made whether to put it into production. Open Sesame Why have several small, dark rooms when you can simply knock down some walls and live in a gorgeous, airy, bright and huge space? But there are eight key issues you should bear in mind when decorating your open-plan home, says Katherine Sorrell A comfortable seating area can be based around a rug and finished with oversized lighting. 1. Creating a focal point While traditional rooms often work around a fireplace or TV, larger, multi-purpose rooms can lack visual focus. By introducing colour, pattern and/or texture on one wall – perhaps above a sofa or behind a dining table – you’ll add character, interest and even drama. The easiest solution is to use a strong paint colour or to hang a large painting, photograph or print, while boldly patterned wallpaper also works well.

2. Using colour Pale colours are generally considered best to emphasise the airiness of large open spaces. But should you go for one shade all over, or choose different colours for different areas? Using the same colour throughout gives an unbroken look and emphasises space, but if one end of the room is to function separately from the other – a living and dining space, a living and work space – you can zone these areas by varying their colour. A tonal scheme, with colour going from light to darker from one end to the other, can be particularly effective.

3. Planning your lighting Use lighting to delineate different areas within your open-plan space, and illuminate different parts to suit

your needs, whether it’s a living area or working space, a kitchen or a dining area. Layer in different types of light in different areas, using a mixture of concealed lighting (in ceilings or under shelves, for example) and eye-catching, over-sized fixtures that suit the extra-large space.

4. Choosing a floor Choosing flooring for a multi-purpose space such as an open-plan cooking/dining/living area can be tricky, as the kitchen area needs to be able to cope with splashes and spills, while you’ll want the sitting area to feel cosy and comfortable. You have two choices: either run the same flooring throughout for a sleek, flowing look, or choose a variety of types of flooring which will differentiate between areas. If you go for the former option, consider stone or wood, both of which can be softened with rugs where necessary, or consider high quality vinyl, which is spill-proof and forgiving underfoot.

5. Separating spaces Not all open-plan spaces need to be entirely open all of the time, so for truly flexible living it’s advisable to include some sort of flexible division. In a period property, panelled doors that can be folded back against the walls when not in use are perfect; in a more modern house a moveable screen, or perhaps ceiling-mounted panels (on a track) that can be pulled to one side when desired, would be enormously useful.

6. Linking spaces Open-plan kitchen/living areas are ideal for entertaining, but how do you successfully blend the spaces seamlessly? One solution is to continue the style of your kitchen units for storage used in nearby areas, choosing a design that looks as good for a TV stand, say, as for a cutlery drawer. Versatility is key and you should consider not just colour

Relieving Pain Naturally Health experts advise that natural alternatives to over-the-counter pain relief are often the best solution. Julie Penfold looks at natural pain relief options for common health complaints. It’s an instant reaction for so many of us when pain first strikes; we simply take something to relieve our symptoms. Popping a pill is frequently our default setting and our usual answer is to take paracetamol, ibuprofen or aspirin to relieve symptoms – the most popular overthe-counter painkillers. The main pain-killing ingredient in aspirin is salicylic acid, which is found naturally in the herbs willow bark, poplar and meadowsweet. While willow bark and poplar are only available via a herbalist, meadowsweet can be found in natural health stores. Meadowsweet can be drank as a tea and is very effective at tackling pain fast, says natural medicine practitioner, Susse Wedel. “For general pain-killing use, ginger, turmeric and cayenne pepper are very good options. You can ingest these by adding to a hot water drink or sprinkling on food as and when required,” adds Susse.

Tackling Headaches

For headaches brought on by stress or tension, the herb rosemary is Susse’s top tip for relieving nervous tension, and just inhaling the aroma can help to ease tension. Rosemary essential oil can also be rubbed directly onto the temple for instant relief. Lavender and chamomile are two of the best relaxation herbs around and are a super option for easing headache pain. As stress headaches are commonly caused by a constriction of blood vessels in the head, rosemary and lavender can help to ease this pressure. These herbs are all available as herbal teas and are equally effective when consumed as a drink. Herbs which have an affinity to the head tend to have a high content of calcium, magnesium and potassium, which are all naturally powerful against headache pain. For migraine sufferers, ginkgo can help to provide relief from painful symptoms. Drinking plenty of water and cutting out stimulants in the diet such as caffeinated drinks, sugar, tobacco and chocolate can also help, as these foods can trigger migraines, as well as prolonging them.

Muscle Strain

Adding several handfuls of fresh thyme to a bath can be an effective alternative to over-the-counter pain relief for muscle strain, as thyme eases both muscular and rheumatic pain. St John’s Wort oil and rosemary oil can also help to ease muscular aches and pains. Foods containing magnesium such as wholegrains, bananas, spinach, broccoli, tofu, nuts, seeds, beans and pulses

can also assist in minimising painful flare-ups.

Menstrual Pain

Ginger helps to relax the uterine muscles and stops painful cramps, spasms and contractions. Drinking a ginger herbal tea, or creating your own tea by grating ginger and adding to hot water, can provide fast relief from severe period pain. As an additional tip, Susse recommends topping up with hot water regularly as this renews the active pain-killing properties and provides longer relief. Raspberry leaf tea is also effective for balancing hormones, relaxing muscles and relieving menstrual cramps. To ease bloating and premenstrual tension symptoms, Susse recommends yarrow tea. Other super relievers for period pain include: chamomile as it is high in calcium, minerals and contains muscle relaxant properties and valerian as this helps to reduce cramping and relaxes stomach muscles. In addition, taking a vitamin B6 supplement can also help to tackle muscle spasms associated with period pain. by Julie Penfold

Herb of the Month - Thyme As a native of the Mediterranean region, thyme grown in this country needs to be in a sunny spot. Like many herbs it is easy to grow and is better in poorer, dryer soils as moist, nutrient rich conditions will cause it to lose its compact shape. Even given ideal conditions, thyme will start to be become woody after a few years and will produce fewer leaves. When the plant reaches that point it is best that it is divided and replanted. Thyme is both pretty and aromatic so is ideal at the front of a border, particularly where passers-by will brush against it. However its flowers do attract bees and butterflies so take care not to let it overhang the path too much. In general thyme is best in strong flavoured dishes, particularly anything with red meat. It is ideal in soups, casseroles and stocks as it is one of the few herbs in cooking which can be added early because it doesn’t lose its flavour when cooked for some time. Lemon thyme has a mild lemon flavour and is fine with chicken. Thyme from the garden can be used all year round although obviously there is little growth in the winter months so you have to take care not to over harvest it. If you have an excess in the summer, the herb can be both dried and frozen for out of season use. The fresh leaves are much more pungent than dried ones though so use it sparingly.

The aim of the competition is to highlight the inspiring organisations throughout Surrey and the amazing work they do, which makes a real difference to the lives of local people. The photograph will be displayed as part of the ‘Celebration of Giving’ exhibition at the Guildford Cathedral on 17 January – 21 February. Do come along and support your community and view work carried out by other communities too. You may well have seen the Horsley Community Bus around and about the locality. Its role is to provide transport for anyone in the Horsleys and surrounding area who would benefit from its affordable and accessible, door to door service. It is a charity run entirely by local and friendly volunteers. There are regular weekly shopping trips through the villages and to supermarkets in Cobham, Woking and Brooklands. It also provides lunch runs to St Martin’s Court, pleasure trips for local nursing and residential homes, and trips to the East Horsley Library. When not otherwise in use, it can be available to individuals or groups for specific journeys. This is a vital service serving the community and relies on its patrons to stay in service – so please do consider using us.

Horsley Directory Recipe of the Month Here’s a delicious winter warming mid-week supper that can be rustled up in less than 40 minutes, We’ve used chicken fillets, but you can use cheaper boneless chicken thighs or try strips of lean sirloin steak or pork fillet instead.

Chicken Goulash 2 tbsp sunflower oil 600g skinless chicken fillets, thinly sliced 1 red onion, peeled and chopped 200g button mushrooms, wiped 1 tsp smoked paprika 2 tsp plain flour 150ml passata (see tip) 150ml chicken stock Salt and freshly ground black pepper 4 tbsp soured cream Boiled potatoes, to serve Fresh chopped parsley, to garnish

Heat the oil in a large deep frying pan. Add the chicken and onion and fry over a medium-high heat for 3-4 minutes, stirring occasionally until both are lightly browned. Add the mushrooms and fry for a further 2 minutes. Mix together the paprika and flour and stir into the pan. Cook for 1 minute then gradually stir in the passata and stock. Season with salt and pepper. Bring to the boil, then reduce the heat to a simmer and cook for 8-10 minutes, stirring occasionally, until the sauce has thickened and the chicken is cooked through. Serve topped with soured cream and boiled potatoes. Sprinkle over the chopped parsley to garnish.

TIP

Passata is simply ripe tomatoes that have been pureed then sieved to remove any skin and pips. You’ll find it in jars near the canned tomatoes in the supermarket. You can use a small can of chopped tomatoes instead - just whizz in a food processor or with a hand blender until smooth.
