So those lazy crazy hazy days of summer are now behind us. When the fuss of summer now over, we can welcome in some gentler days when the trees start to turn a wonderful colour and we turn our thoughts towards Christmas. Oh no, I hear you say! Well, I‟m only thinking of the Pantomime ……..and where better to see a great one than at The Yvonne Arnaud Theatre in Guildford who are showing “Cinderella” - why not book your tickets now (see Page 58). At long last the property market seems to be cautiously picking up and Hart Brown have some great advice on HIPS on Page 10. Don‟t forget to look after your home security too - check you are fully covered on Page 25. The Rotary Club of Bookham & Horsley are providing an opportunity for young people to visit USA and Canada, but you‟ll have to move quickly if you want a chance of going - details are on Page 19. The “Greening The Horsleys” campaign is also hotting up and you could consider attending their Launch Event at East Horsley Village Hall on Sunday 17 October to learn more about their activities. Recipe of the month This recipe is a great way to turn boring chicken fillets into something special. Filled with a creamy lemon and thyme ricotta filling, wrapped in bacon then baked and served on a fresh and light spinach salad. Serves 4 Ready in 1 hr 10 mins

Lemon and Herb Ricotta Stuffed Chicken 75g (3oz) ricotta cheese

1.

3tbsp fresh thyme leaves 2tsp finely grated lemon rind 4 large chicken breast fillets, skinned

16 thin-cut rashers of streaky bacon 5tbsp olive oil 2tbsp white wine vinegar

1tsp Dijon mustard Open Day Thursday, 15th October at 10 am

Pinch sugar 100g (4oz) baby spinach and salad leaves 2tbsp pine nuts, toasted

Using a sharp knife make a deep pocket in each chicken fillet making sure not to cut right the way through. Place the ricotta cheese in a bowl and stir in 2tbsp of the thyme leaves and the lemon rind. Season with salt and freshly ground black pepper. Place a quarter of the ricotta mixture in the pocket of each chicken fillet. With the back of a knife stretch the bacon rashers then wrap 3 rashers around each chicken fillet. Secure with a metal skewer. Preheat the oven to 180C, 350F, Gas 4. Heat 1tbsp of the oil in a frying pan and fry the chicken over high heat for 2-3 mins until the bacon is browned, turning once. Transfer to a roasting tin and cook for 35-40 mins until the chicken is cooked through. Cover and leave to rest for 10 mins. Whisk the remaining oil with the vinegar, mustard and sugar and season. Slice each chicken fillet into 6 pieces and arrange on the salad leaves. Scatter over the toasted pine nuts and remaining thyme leaves. Spoon over the dressing and serve immediately.

Is it normal for gums to bleed when brushing?

Is it really necessary to floss?

Is it worth going to see a hygienist?

If you were to touch or brush any other part of your body and it bled, you would correctly assume something was wrong. And so it is with your gums. Bleeding gums are a sign that bacteria are breaking down the tissues around the teeth. Eventually this leads to bone loss around the teeth and then, ultimately, the loss of those teeth. Flossing and the use of interdental brushes to clean daily between the teeth is a totally effective way of keeping the gums in good condition in addition to normal tooth brushing. Good oral hygiene prevents most disease occurring in the mouth. A hygienist will remove the calculus (or tartar) that harbours the bacteria and help you to maintain your oral cleanliness. Demonstrations on how to achieve this are given and records are kept to monitor your gum health. Hygienist appointments are as important as visits to your dentist for maintaining your oral health.

HIPs HIPs Hooray! David Knapp, Partner and Head of Residential Property at Hart Brown solicitors, champions the benefits of a properly prepared HIP when selling your home. Whether you like the idea or not, Home Information Packs, or HIPs as they are more commonly known, are here to stay, at least for the time being, along with Energy Performance Certificates (EPCs). For those of us in the business of helping you buy or sell a house they are now a familiar part of the transaction, despite the many negative press stories surrounding their introduction. Experience to date suggests that some worries are well founded. There is no question that there are still some problems with HIPs but these can be the result of inaccurately completed packs, which is often the fault of the providers rather than the legislation. Here at Hart Brown we believe a properly prepared HIP is a very useful tool when trying to sell a

property, especially if that sale is to go through quickly. The dangers of poorly prepared HIPs means sellers are not protected from the penalties that can be imposed and they are paying for something that has no real value or benefit. It can also hinder the process of a sale. Unlike some providers, our view is a HIP completed with personal searches rather than local authority searches is an example of an inadequate pack as it should include full local and drainage searches to avoid any problems or delays. Geisha By Carole Hallett Mobbs

By far the most common topic I‟m asked about now I‟m living in Japan is about geisha. Many people with far more knowledge than me have written expansively on this fascinating subject. I can give you a brief overview based on a lot of reading I‟ve done and from speaking to a friend who was honoured to spend time in Kyoto with these unique women. Let‟s get the biggest misconception out of the way first: geisha are not prostitutes. The word geisha actually means "arts person", which is exactly what she is. That is her job description. A geisha has undergone lengthy and intense training in many traditional Japanese arts and as such, upholds scores of customs that would have been lost long ago had geisha not existed. She is highly skilled in ancient arts such as traditional dance, singing, playing unique Japanese musical instruments and has a flair for general entertainment. Their services are in demand by businessmen who hire them to attend business parties, where these talented ladies lighten the atmosphere and break the ice enabling the guests to relax enough to do genial business with each other. Becoming a geisha is a long process. Compulsory formal education means all children have to remain at school until the age of 15, so this is the youngest age a girl can start her geisha training. Initially, the new girl will spend her time working as a housekeeper and looking after everyone else in the household. This way, she absorbs the culture and learns by observation. She also attends geisha school to begin learning the required skills. After a while an older geisha will become her mentor and the girl moves up a stage in the hierarchy and eventually becomes known as a maiko. Maiko means "dance girl" and is the name of apprentice geisha. This stage of her career can

last for five or six years as she follows her mentor to all engagements learning the correct way of doing everything from kneeling, making small talk to pouring drinks. The distinctive makeup and gorgeous apparel of both maiko and geisha make them stand out dramatically from the crowds. For Westerners it‟s quite hard to see the differences between a maiko and a geisha. The main distinction is a maiko wears very colourful clothing and elaborate hair decorations while a geisha is more understated. The kimono a maiko wears is vividly coloured with particularly long sleeves; her obi is long and wide with the back tails dangling almost to the ground. A geisha wears an elegant and subtle kimono with shorter sleeves. Her obi is generally tied in a neat box bow. There are many more differences as well, but most are too subtle for us gaijin to recognise. Maiko wear numerous and spectacular dangling ornaments in their hair while a geisha generally has far fewer decorations. Both paint their faces white but there are slight differences. The most noticeable variation is a junior maiko has only a small part of her lower lip painted red; a senior maiko paints the top and bottom lips in the familiar tiny rosebud style. A junior geisha has her lips fully painted while a senior geisha can wear whatever makeup she chooses with a natural coloured base rather than white. The geisha and maiko’s day is long and rigorous, with dance rehearsals and music classes during the day and lengthy client meetings to attend during the evenings. It‟s certainly not an easy job and I hope more young girls take up this important career to keep the old traditions alive. See www.japanory.com for more tales from Tokyo

FEED THE BIRDS

f you spent the year attracting birds to your garden by planting accordingly then you need to provide extra sustenance through the winter months to keep them alive while there is little natural food available. The more types of birdfeeders and foods you offer the more varieties of birds you will attract. A bird table will draw in most birds. All you need is a tray raised above the ground surrounded by a rim with a gap at each corner to allow drainage of rainwater. A roof is not necessary and avoid elaborate designs that are impossible to clean. Positioning a bird table is very important. Obviously you’d like to watch from inside the house so ensure that it is visible from a window. From the bird's point of view they need to feel safe and able to feed undisturbed so don’t put the table near heavy cover and fences where cats could lie in wait for them. A small bush or tree nearby is useful so the birds can use this as a lookout point before settling down to their meal. Some birds, such as blackbirds, thrushes and wrens prefer to eat on the ground. Although you can scatter the seed and other food around directly on the ground, for ease of cleaning you can buy low, large ground feeder trays. Hanging feeders attract smaller birds like finches, tits and sparrows. There are many models available including peanut holders and seed feeders. Seed feeders work on a hopper system with seed being dispensed in small dishes at the bottom of the tube. Water is vital to the survival of wild birds during the winter so provide fresh water and ensure it doesn't freeze over. There's a huge range of commercial bird foods available and what you choose depends on your budget and the birds you would like to attract. However household scraps and ‘ordinary’ ingredients can be used too. Options include

uncooked porridge oats, dried fruits that have been soaked overnight, old bread, cooked rice (without added salt), any breakfast cereal and surprisingly, tinned dog or cat food - meat only though. Blackbirds and thrushes particularly like this as it provides a substitute for earthworms. Remember many birds are fruit eaters so bruised apples and pears can be placed around the garden for them to enjoy. There are a few things that you must never give to birds: milk, salt and desiccated coconut can all kill. Also, never use anything that is sold in a plastic net as these can be extremely dangerous with a bird’s feet easily becoming trapped causing serious injury. Remove the net before putting the contents out. If the food turns mouldy, it means you’re putting out too much for the birds to eat, so reduce the quantities and clear away any stale food immediately. Another drawback of feeding too much is that rats and mice will soon sniff this out and you will have unwanted nocturnal visitors. Unlike humans, birds need lots of saturated fats such as lard in order to keep their tiny bodies warm during the winter chill. Make your own ‘bird puddings’ using household ingredients. Mix lots of seeds and other ingredients mentioned above with enough gently melted lard to bind them together. Pour into coconut shells and hang up as they are, or create moulds from yoghurt pots with string inserted. Leave to solidify before turning out with the string embedded in it ready to hang. Once you establish a feeding routine and place, try not to change it as the birds will come to rely on you for their winter food. Supplementary feeding during the winter ensures the birds will be at their peak condition ready for breeding in the spring. Make Do And Mend Now there‟s a phrase which you may either relish with a touch of nostalgia or recoil from with horror! These words certainly applied to my grandmother, whose knitted jumpers appeared in many different forms (of reducing sizes) across the family before finally reaching the socks and knitted toys stage. For the children of the Sixties, it meant wearing a bigger sibling‟s cast-offs, and mother endlessly turning up and letting down trousers, but more recently, with the advent of cheaper imported clothing it was fast becoming a thing of the past. Credit crunch and climate change and may just be the saviour of this former recycling „art‟. It isn‟t just about scrimping and saving – that sounds so dull. There is something truly satisfying about making something that no-one else has – especially if it has only cost a few pence! The result is ultimately down to the limits of your wardrobe (or the local charity shops) and your imagination. There is one vital ingredient – a sewing machine. Many of us have a sewing machine that rarely sees the light of day, but isn‟t it time to get them out? John Lewis report recent increases in sewing machine sales, and classes teaching basic sewing skills are becoming heavily over-subscribed. One enterprising lady has set up an entire business based on the growing need for people to individualise their clothing, to save money, to recycle, to „make do and mend‟. Sewing machines don‟t have to be all singing and dancing. A decent basic machine is still fairly costly, but there are plenty of good second hand ones – most sewing machine shops have a stock of these which have been traded in and serviced for a reasonable price – not perhaps this year‟s model, but also „make do and mend‟. And what can you do with a machine when you‟ve mastered its use? Use fabric remnants to make your own soft furnishings, remodel old jeans into a patchwork throw for your teenage son, turn suits into shopping bags and little girls‟ dresses into a child‟s playmat or – well, you get the idea. Consider changing all outside door locks when you move home. Fit a BS3621 Mortice Lock to your front door. The bolt must now be 20mm long to meet your insurance requirements. Please check this. Fit a 5-lever BS3621 mortice lock together with top- and bottom-operated bolts to side and back doors. Fit appropriate locks to the top and bottom of French windows and patio doors. The Royal Grammar School celebrates its 500th birthday The Royal Grammar School has been at the heart of Guildford since 1509 when a wealthy grocer called Robert Beckingham funded the setting up of a free school in a property near the castle. His legacy instigated the provision of education for bright boys in the town, irrespective of their background or means. In doing so, Beckingham established the inclusive ethos of the School that is so fundamental to its spirit and reputation today. A 500 anniversary is a significant milestone for any school, and the RGS intends to celebrate in many areas of school life. Concerts, art exhibitions, sporting events and talks by Old Guildfordians will contribute to a truly memorable year for the School and the Guildford community. The history of the School is fascinating. Founded at the start of the reign of Henry Vlll, it survived turbulent times and underwent a further period of uncertainty after 1547 when Edward Vl abolished chantries and chantry property. The ‘free school’ in Guildford lost its schoolmaster until the ‘Mayor and Approved Men’ of Guildford petitioned to the King for more endowments in order that the School might continue to operate. Its future seemed more secure when Edward Vl granted the School a Royal Charter in 1552, establishing it as the Free Grammar School of King Edward Vl for the education of ‘boys and youths in grammar’. In 1555, the Mayor and Approved Men of Guildford purchased the School’s present High Street site with financial help from major benefactors whose names are still gratefully remembered at the School today. In the 1600s the School followed a set of statutes which included the clause that ‘no child within the town who was worthy of admission should be refused admission’. Entrance was by examination and education was free, but parents had to pay towards wax candles, brooms and rods. Older boys had to speak in Latin, unless given permission by a teacher to speak in English.A massive fire in 1962 caused widespread damage but the spirit of the School remained indefatigable and when it was granted independent status in 1977, it was the beginning of a new era. The School expanded to include more than 800 boys, new subjects were introduced and exciting developments were made in drama and music. Walking past the School gates on any week day in term time, there is a buzz and vibrancy about the School that permeates into the town. The RGS continues to be very much a part of the Guildford community and many of the events during the quincentennial year will be open to the public. Justifiably proud of its academic results and its long established ethos of inclusion, the School welcomes friends old and new through it old Tudor doors and invites them to share in this momentous period in its history. Eat Out Eat Well in Surrey Eating out or grabbing a takeaway increasingly plays an important part in our lives, with the average person doing so at least once a week. Now consumers can have confidence that there are healthy choices available at restaurants and takeaways in Surrey with the launch of the Eat Out Eat Well scheme. The Eat Out Eat Well Award has been developed to reward caterers throughout Surrey who make it easier for customers to make healthy choices. It has three levels – Bronze, Silver, and Gold, and is symbolised by an apple logo in the shape of a heart. The level of award is based on a scoring system that takes into account the type of food on offer, and the cooking method. . Peter Denard, Head of Surrey County Council‟s Trading Standards, said: “To encourage our local takeaways to serve nutritious and delicious food we have devised our 'Eat Out Eat Well' campaign in partnership with district and borough councils, the Department of Health, NHS Surrey and the Food Standards Agency. “Obesity is a growing concern for everyone, and is financially crippling our health

and public services. We all like to eat out or grab a takeaway and this scheme is not about being a nanny state, but about giving consumers more choice. "Our healthy eating award scheme will reward and promote those that provide nutritionally balanced dishes.” Eat Out, Eat Well is being piloted in Guildford, Elmbridge and Spelthorne and eventually will be rolled out across the county. Awards will be given to those outlets and caterers who demonstrate they are committed to:  food hygiene  providing customers with information about menu ingredients  offering healthier menu choices using more fresh produce. Pam Naylor, South East Healthy Weight Manager, Department of Health, added: "I think this initiative is an important step forward in the fight against obesity in Surrey. As part of the Change4Life movement we are working hard to make people eat well, move more and live longer. I hope this award will encourage food outlets across the county to think healthy when preparing dishes and help us in the fight to make Britain's food not only tasty but also healthy." The Eat Out Eat Well award is currently being piloted in the Surrey area and it is hoped that the scheme will eventually be rolled out to other authorities in the South East. It is managed by Surrey Trading Standards in partnership with Environmental Health.
