The grapes are grown in the Galilee region of Israel, harvested manually and aged for 14 months in oak barrels. Pairs well with: Stilton, cheddar or smoked gouda. #2 Capcanes Peraj Petita 2012 For Peraj Petita, Capcanes selects the best grapes from its indigenous varieties of Garnacha, Samson and Ull de Llebre. The grapes are harvested from ancient vines up in the mountains. Peraj Petita exhibits lively fruit and seductive aromas of red berries and cherry. It reflects the terroir and great varieties of the area. On the palate, this wine provides a pleasant and fruit-heavy exposure with a distinguished and long finish. Chateau Giscours Margaux expresses an exceptional finesse and elegance through its well balanced and classic composition. The blend is 60 percent Cabernet Sauvignon, 32 percent Merlot, 5 percentCabernet Franc and 3 percent Petit Verdot. Pairs well with: Smoked salmon. #26 Binyamina Cave 2010 Binyamina Cave is a blended wine (65% Cabernet Sauvignon, 33% Merlot, and 2% Petit Verdot). The grapes were harvested in the choicest vineyards in the Upper Galilee and underwent meticulous production processes. Aged for 24 months in French oak barrels. Pairs well with: Aged steak and hearty roasted vegetables. #27 Covenant Red C Cabernet Sauvignon 2012 Covenant "Red C" Cabernet Sauvignon is rich and opulent, yet accessible. The wine has a highly vivacious character with ripe, round, black cherry, blackberry and herb flavors couched in firm acidity and soft, supple tannins. The finish is long and lush on the palate. #35 Domaine du Castel Rose du Castel 2014 Winemaker, Eli Ben-Zaken, crafts this wine by allocating a portion of premium grape varietals – Merlot, Malbec, and Cabernet Franc – destined for the winery's flagship wine, Domaine du Castel Grand Vin. The grapes are picked early to ensure that the resulting wine has enough acidity to offer the crisp and tart nature of a rose that is expected. This rose in best at it's youth and not intended for cellaring. Pairs well with: Muchroom quiche. #36 Psagot Cabernet Sauvignon Single Vineyard 2013 Comparable to a cru classe Bordeaux or cult Napa Valley red, the deep purple color foreshadows the dark berry and blackcurrant aromas that are framed by the richest vanilla of aging in premium barrels. Hand-picked in small containers, the grapes are rushed to the winery to ensure maximum quality. This wine has a rich nose of blueberries, guava and pears. It is well structured, balanced and lingers in the mouth. The very cold fermentation preserves the crushed flower petal and dried fruit qualities characteristic of this variety. It exhibits floral, melon, lemon zest, peach and tangerine notes complemented by hints of fresh mint. Medium-bodied. Pairs well with: Spicy Chinese chicken wings, bubbling cheese fondue or fish braised in a spicy tomato sauce. #61 Segal's Special Reserve Cabernet Sauvignon 2011 The wine underwent a protracted post-fermentation maceration on the skins of its grapes, grown in the unique climate of the Upper Galilee. It was also aged for 14 months in a mixture of French and American oak. Segal's Special Reserve is rich, complex and balanced, and continue to improve for many years. Pairs well with: Braised lamb or venison. #62 Baron Herzog Pinot Grigio 2013 This Pinot Grigio from California is classic in style with a perfect balance of acidity and aroma. It is full-bodied, bold, concentrated, and with layer after layer of aromas and flavors that linger on the tongue. Look for currants, cherries, plums, and spices on the palate, with hints of cedar.
