The nursery is looking really good in the summer sun. We are taking lots of cuttings at the moment and the propagation benches are already nearly full. There is always plenty to do in the garden even in mid-summer so here is this month’s diary to help you along



Milk and honey brined pork chops

Potato salad with horseradish, lemon and capers

500ml milk 200ml honey Small bouquet of fresh herbs, made with rosemary, thyme and bay 1 small spice bag (made by putting all the spices into a ball or bag) filled with 1 star anise, cinnamon stick, 2cm piece of fresh root ginger, 3 cloves and a few peppercorns 100g sea salt flakes 4 pork chops, untrimmed Any neutral oil, for brushing To serve Mustard of choice & Watercress salad

600g waxy potatoes 160ml sour cream 1 tbsp Dijon mustard ½ tsp honey 2 tbsp finely grated fresh horseradish Grated zest from 1 lemon Flaked sea salt and coarsely ground black pepper 1 small red onion 170g large brined capers, drained Additional finely grated fresh horseradish, for serving (optional)

1.Bring the milk, honey, bouquet of herbs, spice bag and salt to the boil, then remove from the heat and allow to cool. 2.Pour the milk mixture into a shallow dish. Submerge the pork chops in the mixture and refrigerate overnight. 3.Preheat a barbecue, preferably charcoal. Remove the chops from the brine and dry them, then brush with oil and cook on the barbecue until charred all over and cooked through. 4. Allow the chops to rest for 10 minutes in a warm place, then serve with your mustard of choice and a watercress salad.

Wash the potatoes and boil them until soft in salted water. Drain the potatoes and let them sit until they are cool enough to handle. Cut the potatoes into bite-sized pieces. In another bowl, stir together the sour cream, mustard, honey, horseradish, and lemon zest. Season with salt and pepper. Stir the dressing into the warm potatoes and combine thoroughly. Finely chop the red onion and scatter it, along with the capers, over the potatoes. Top with more grated horseradish, if you like

Barbecue chicken skewers

BBQ burgers

6 boneless, skinless chicken thighs, each cut into 4 pieces 2 spring onions, chopped 1 handful flat-leaf parsley 2 garlic cloves, chopped ¼ tsp cayenne pepper 2 tbsp lime juice 2 tbsp olive oil Lime chilli sauce 3 tbsp lime juice 2 tbsp olive oil 3 tbsp finely chopped flat-leaf parsley 2 tsp finely chopped rosemary 1 large red chilli, finely chopped 4 spring onions, thinly sliced

For the patties 1 kg ground beef 3 tbsp hickory bbq sauce 2 cloves of garlic (chopped finely) 1 medium onion (chopped into small pieces) 1 tbsp salt 1 tbsp black pepper To make burger 12 burger buns Dijon mustard Chilli garlic ketchup 400 g tomatoes (cut into rings) 3 large onions (cut into rings) 1 large lettuce head (washed and seperated) 12 slices of cheese (any preferred brand)

At least six hours before cooking (or the previous night). Put the chicken in a ceramic dish or bowl. Put the spring onion, parsley, garlic, cayenne pepper, lime juice and olive oil in a food processor and process to a paste. Rub all over the chicken. Cover and refrigerate for six hours or overnight. 40 minutes before cooking : To make the lime chilli sauce, combine all the ingredients in a bowl. Pour over 125ml (4fl oz) boiling water, stir to combine and set aside. Soak some wooden skewers for 30 minutes. Remove the chicken from the fridge 30 minutes before cooking. Thread the chicken onto skewers, three pieces on each. To cook : Preheat the barbecue grill to high. Cook the skewers for eight to 10 minutes, or until cooked through, turning often. Spoon the sauce over to serve.

1. In a large mixing bowl, place the ground beef, onions, garlic, salt, pepper and the bbq sauce. Mix well together, untill the bbq sauce is evenly distributed through the beef. 2. Scoop a patty portion with your hands and roll into a ball, then gently flatten out to create a circular shape. 3. Cook the patties for 10 minutes one either side for a rare burger, or for at least 12 - 15 minutes for medium. While the second side is cooking, lay a slice of cheese on the patty so that it melts slightly. 4. Heat the burger buns on the bbq for no more than 2-3 minutes and spread the dijon mustard on the bottom bun. Place the burger patty on the bun and add lettuce, tomatoes and onions. you can spread the chilli garlic ketchup on the top bun, or serve on the side.

CRUCIATE LIGAMENT INJURY IN DOGS This sounds very technical, and yes it is, but it’s also one of the commonest types of lameness that we see in dogs – and they can be any age and any breed, so don’t think that you can get away with it…! So, I thought that this month, when the weather’s getting better, and we’re all walking our dogs more, it’s a good time to give this orthopaedic disease a bit more coverage. Now, bear with me, but we need to do some anatomy. Here’s a view of the bones of a canine stifle, which is the equivalent of your or my knee joint, looked at from the front:

The second is traumatic rupture – your dog simply tears it by forcing its leg to do what it shouldn’t: e.g. throwing a ball causing the dog to twist/ turn suddenly with the weight on that leg. Ask a footballer – they know all about such things!

How can I tell if my pet has a cruciate ligament injury? They limp – when it’s traumatic then they’re suddenly pretty lame and tend just to tip their foot to the ground. Or the limp may just get worse when the ligament is simply giving up.

So what is happening inside an affected joint?

It all looks frightening, but essentially, the bottom end of your – and your dog’s – thigh bone (femur) simply rolls on the top of the shin bone (tibia) – and there’s nothing holding the whole thing together other than a fancy set of (very strong) ligaments, with pads of leathery material, the menisci, between the two bones. The cranial cruciate ligament is inside the joint and stops the shin bone sliding forwards over the thigh bone each time you put weight on it when you take a step forwards.

OK – so why does it rupture? There are two main reasons. The first is that the ligament simply degenerates like fraying rope – basically, it’s past its sell-by date. Certain breeds are affected, particularly Labradors, Rottweilers, Boxers, West Highland

Apart from the pain – think sprained ankle and then some – if it’s left untreated, arthritis will come on quickly, and what started off as an injury will turn into a painful disease for life – repeat, for life. Look at these X-rays which show a sideways view of the stifle / knee joint, and the difference between the normal and the arthritic joint: the arthritis has loads of extra bits of new bone formed, the cartilage has turned to sandpaper, and the whole thing just hurts to move… Left: Normal joint l Right: Arthritic joint

And what’s the treatment for this problem? Well. Non-surgical management is only recommended where a general anaesthetic or surgery is going to be a problem – but you could improve things with physiotherapy, exercise modification and anti-inflammatory pain killers. But, the best treatment is surgery. After all, something’s broken, so you’ve got to fix it – and medicines just won’t do that. What’s called a TTA (Tibial Tuberosity Advancement) is the best technique, which alters the angle of the front of

the shin bone by inserting an implant into the bone, to adjust the forces through the joint. You can see here a wedge place into it, forcing the front forwards, which reangles the whole joint and works a dream! This is the gold standard for treatment of cranial cruciate ligament rupture and we do it frequently at Rosemullion. More to the point, our cases are not discharged that day, with the risk of any immediate post-operative complications left to you, the owner to sort out, but are carefully monitored by our 24/7 on-site nursing staff, until we’re happy for our patient to go home.

Aftercare is crucial too Immediately after surgery the patient will not be using their leg – well, you wouldn’t would you! However, walking should improve as healing takes place over several weeks, though some small breeds may continue to be “skipping” for a longer period of time. Pain relief is essential, usually with opiates and anti-inflammatories. Exercise must be restricted to start with, whilst preventing activities such as running and jumping –as one of the chief problems we face is that dogs feel too good too quickly! Hydrotherapy may be recommended from 6-8 weeks post-op, as it can significantly improve the quality and rate of healing following surgery, so increasing the chance of successful return to full fitness. It can help relieve pain, swelling, and stiffness by increasing the range of motion in joints and rebuilding muscle. Let’s hope it never happens, eh? – but if it does, there are usually the ways and means to resolve even the most damaged joints, so all is not lost!

A message from the Mayor Welcome to the programme for Penryn Week 2017, I hope you will agree their is a good mix of events and we hope to see many of the residents attending and enjoying themselves. The small Penryn Week Committee have worked hard to put the programme together and to co-ordinate events to ensure that there is something for everyone. New for this year is the Flower, Produce and Craft Show, with classes that are suitable for all ages to enter. The mummification of the dead is one of the rather disturbing mysteries for which ancient Egypt is famous. Why was such effort made over thousands of years to preserve bodies from which life had departed? Death was not considered to be the end, but a dangerous journey. Learn how bodies were prepared over a 70 day period and what spells and amulets were added to the body so that it could last for eternity. Mummification was a long and costly, process therefore several grades were provided, expensive, medium and cheap. 20th century cinema has often bought mummies back to life but that would be very difficult with your brain removed through your nose with a metal hook!

WALK. PENRYN HERITAGE TRAIL. 11th July Meeting at Penryn Temperance Hall - 2.00pm The walk is based on the guide produced by Penryn Museum and will guide you around the heart of the ancient town of Penryn. The beginnings go back to Mesolithic times (5,000 BC) and several Iron Age settlements. But Penryn town is really put on the map with the granting of two charters and the founding of Glasney Collegiate Church of St. Thomas and the Virgin Mary in the 13th century. The walk will concentrate on the people that created this wealthy and vibrant community. In the 14th century local residents complained that the town was ‘full of foreigners’ and in the 16th century Penryn was described as a ‘Great Town’ and was the same size as Truro. The walk will take approximately 1 hour and can be hilly.
