What is clean food anyway? What is KSFL FOOD? I share a vision that our town needs to be healthier and have a choice when decisions are being made on eating out. Dieters notoriously hibernate when “on a diet”.We have an obesity epidemic and the government has requested that businesses by 2020 have a responsibility to assist reducing waistlines nationwide that includes our children. Mixed Smoked Fish Cocktail

Main Course

Serves: 4 Prep: 15 mins

A delicious entrée to whet the appetite and keep everyone wanting more! Serve with champagne

Hot and spicy, this piri piri chicken dish is tossed with lemon and thyme to add more flavour • 3 chicken breasts, skinned and sliced into chunky pieces • generous splash of piri piri sauce to taste • 3 lemons (juice of 1 and 2 sliced) • handful of fresh thyme, finely chopped • few leaves for garnish • 2tbsp olive oil • 3 peppers (1 red, 1 yellow and 1 orange) deseeded and cut into chunks

FOR THE DRESSING: • 50ml/2fl oz crème fraîche 1-2tsp hot horseradish • Juice of ½ lemon

Method

2. Divide watercress and pea shoots between wide-neck champagne glasses or small serving dishes. Layer up salmon and trout with radish, then drizzle over a little dressing. Sit a prawn on edge of each glass to finish. Serve with a glass of champagne.

Piri Piri chicken

• 85g bag of watercress, roughly chopped • 100g pack of pea shoots • 150g pack of smoked salmon • 300g pack of hot-smoked trout • Handful of radishes, trimmed and finely sliced • 100g pack of large ready-cooked tiger prawns • Bottle of chilled champagne, to serve

1. First, make dressing: mix together crème fraîche, horseradish sauce and lemon. Season well with plenty of freshly ground black pepper.

1. Add chicken to a bowl, add piri piri sauce, lemon juice, thyme and half olive oil. Season with sea salt and freshly ground black pepper, toss together and put to one side. 2. Heat a little of remaining oil in a wok or frying pan.Add lemon slices and toss around pan for a couple of mins until pale golden. Remove and put to one side. 3. Add remaining oil to wok or frying pan and when hot, add chicken and cook for about 10 mins.Add peppers, stir around pan and cook for a further 5-10 mins until chicken is cooked and peppers are beginning to soften.Taste and season again, if needed.Transfer to serving dishes and top with lemon slices and fresh thyme leaves.

Easy Amaretti Trifle Serves: 4

Prep: 10 mins This divinely decadent festive Italian trifle is ready in just ten minutes! Ideal for making your loved one this Valentines

• 200g/7oz raspberries • 200g/7oz blueberries • 8tbsp amaretto • 150g/ 5oz amaretti morbidi biscuits • 200g tub Greek yogurt • 150ml/1⁄4 pint double cream, whipped • 2tbsp golden caster sugar • 500g tub fresh vanilla custard

Method: 1. Reserve 6 raspberries then put remainder in a large jug with blueberries. Pour over amaretto and leave for a few mins. Reserve 3 amaretti, then crumble remainder into bases of 6 glasses. Gently stir Greek yogurt, cream a2nd sugar together. 2. Spoon amaretto and half of fruit over amaretti biscuits. Pour over half of custard, then sprinkle over remaining fruit and pour over remaining custard. Dollop on cream mixture, then top with reserved raspberries and crumbled amaretti biscuits.Voila! Your Italian trifle is ready to serve!

Planning your first Ski Holiday this half term? Here is a list of essential ski holiday must haves… Thermals – Invest in a good set of base layers.You don’t have to spend a fortune however make sure you’re buying the right thing for the job. Do remember that cotton is an inefficient base layer and won’t keep you warm.

Layers – It’s all about layering up.You can always remove layers to cool down but it’s very hard to warm back up once you get cold on the mountain.

Goggles/ sunglasses – Protecting your eyes is an absolute must and it pays to spend a bit more on

Socks – Get ski specific thermal socks, nobody likes cold toes! Avoid anything with seams around the shins, as your boots will press into them all day long. Gloves/ mittens – There’s a huge range of gloves out there that do some wonderful hightech stuff.The important thing though is to get comfortable ones that fit properly and will keep you warm. Mittens are generally warmer than gloves, but can restrict your movement. Snow boots – It is imperative that you take a good pair of boots with you; converse, heels or ballet flats are not going to do the job. Save them for inside and bring a sturdy pair of waterproof, warm boots that reach above the ankle and have good grip on the sole.You’ll be contending with icy slopes, stairs, snow drifts and slush. Swimsuit – You just never know when a hot tub opportunity may arise! Sun cream – The sun is very strong and the higher you go in altitude the higher the factor needs to be. At 2000 meters a factor 30 sun cream only protects the skin at factor 15. Minimum factor 30 for adults and 50 for children! You’ll see a surprising amount of sunburn on the slopes… Lip balm and moisturiser – Your skin will dry out at altitude like you’ve never seen before, put a lip balm in every pocket and moisturize religiously. Hats – Big giant knitted colourful bobble hats are a necessity.That’s just a fact, and handy for hiding helmet hair. Outer wear – Obviously the most important thing is to look cool on the mountain! I’m partly kidding but it’s worth remembering that you will be wearing your ski gear a lot and it will become the means by which people recognize you.Avoid all white, it gets dirty quickly and you will blend into the snow, which can be dangerous. Don’t be afraid to stand out with bright colours and clashing patterns, trust me you’ll see all possible combinations on the mountain. Check your gear’s waterproof and breath-ability

good goggles or sunglasses as the sun is very strong and reflects off the snow.You can get goggles with lenses for bright days and ones for overcast days, but generally when starting out go for an orange or pink ‘universal’ lens that will serve you in all conditions. If you wear sunglasses make sure you have decent ones that filtering out the harmful rays.Those freebie fake Ray-Bans might look cool but they’re not going to do the job on the mountain. Helmet – Get a helmet! Whether you rent one or buy one I don’t care, so long as you wear one every time you hit the slopes.There is no stigma attached, it’s no longer ‘un-cool’ to protect your head, the pros wear them, they sell colourful funky ones that you can hook your headphones up to them, you can get fur-lined ones that keep your head toasty warm

and you can sticker them up with all kinds of daft things, helmets are cool, wear one, full stop. If you’re do decide to buy a helmet and you have goggles already, make sure you try them on together. Your helmet and goggles should fit seamlessly together and not leave a big gap across your forehead – that is un-cool and also lets the wind in. Equipment – Unless you have money to burn I highly recommend renting your equipment to begin with, that way you get to figure out if you’re actually enjoy the sport.You can switch easily between skiing or snowboarding, try out a range of sizes and styles before committing to anything. Don’t be afraid to go back to your rental shop as your level progresses to request different kit and ask the ski technicians for help and advice. Protective snowboard gear – As mentioned before helmets are a must, but as a snowboarder you also have the option of wrist guards, knee and bum pads. In the beginning you will fall a lot on your bum and knees. Padding can save you some serious bruising and make you much more likely to continue the next day. Lessons – If it’s your first time on the slopes I highly recommend taking lessons, and pre-book them beforehand to avoid disappointment if there is no availability in resort. No matter what your level though, it’s always good to get a lesson in resort to help polish off your technique or get out of those bad habits. That’s the basic essentials covered, now it’s up to you what you want to bring for off the slopes. Remember resort style tends to be very laid back and casual, think jeans and hoodies rather than shirts or heels, but mainly just get out there and enjoy! Ashley Wall at Falmouth Wave

We have had a very busy month on the nursery. Over the Christmas break and into the New Year we cleared a large

area of invasive bamboo so we can increase the sales area of the nursery. This is an on-going project having spent much of last year clearing, cleaning and improving the nursery. We have loads of new stock growing on nicely inside the polytunnels which is starting to become ready for sale. There are some fantastic Sweet Box (Sarcococca confusa) plants that are ready. They give of a beautiful scent which fills the air. The fruit trees and bushes have been selling well and we still have a good selection, particularly varieties which originate from Cornwall and the South West. The new gardening season is getting close so here is this month’s diary to help.

Spectacular Bike

show on uni campus A new fantastic event this spring is the South West Cycle show in conjunction with the Urban DH championships at Penryn Campus on Sunday 19th April. Carrick riders our local mountain bike club is organising the third downhill race at the university which will have over 100 riders to be timed on a pre laid out track which includes jumps, a lot of DH steps and other thrills and spills, really exciting to watch. To back it up this year we have organised a cycle show attracting a number of retail and trade stands to entertain you featuring lots of key brands to wet your appetite such as TREK,Transition, FELT, Saracen, Specialized,

BITE WOUNDS AND OTHER NASTIES! It’s generally held that getting bitten / clawed / kicked / trampled and otherwise assaulted by one’s patient is pretty much always something to be expected in a vet’s life. Yes indeed it is, yet a surprising number of owners also seem to be clawed or bitten, especially by their cats, but are unaware of the potential nasty consequences. CAT SCRATCH FEVER Cats’ mouths are particularly unpleasant places where large numbers of bacteria live quite happily – they don’t affect the cat as such, but thrive on the food debris there, and don’t appear to invade the rest of the cat’s body. The one in question here rejoices in the name Bartonella henselae, (try saying that after a glass or two!), and if it gets through your (or my) skin via a very cross cat biting you, it can start to cause what in some cases can be a very nasty infection. These bacteria are also present on the underside of the cat’s nails, so again, if you are scratched to the point when you bleed, there’s a chance that the Bartonella bacteria will cause an infection. Scarily, too, these bacteria may also be present on cat fur, so it’s possible to contract the disease from petting a cat and then rubbing your eyes. Kittens are more likely than older cats to carry the bacteria and to transmit the infection to humans.

SIGNS OF INFECTION In people who have a normal immune system, cat scratch disease is usually not that serious an illness. A small papule (a little raised lump) may develop at the site of injury within 10 days, and you may also feel quite ill with a fever, nausea, vomiting, and generally tired with no stamina.You might also start showing enlargement of your lymph glands, the wound might get worse, and you may get more lumps flaring up at the injury site.

All rather worrying – and not really something that you’d be expecting. We all get scratched and bitten at some point after all! TREATMENT However, the good news is that most cases of cat scratch disease sort themselves out without any further treatment, as your immune system gears itself up to kick the bug out of your body – even though this may take a few weeks or so. But if that’s not happening and the symptoms persist, it’s time for medical advice and your GP may prescribe antibiotics. These are given until the skin lesions resolve, sometimes as long as three to four weeks. Obviously, if you’re on any medication for another sort of

condition, or you know that your immune system is not quite what it should be, this bug can cause far more severe problems – and fatalities have been reported. PREVENTION!! The best way to prevent cat scratch disease is to avoid situations in which you might be bitten or scratched by a cat. Don't play roughly with a cat, and don't force your attentions on a cat who clearly does not welcome them – and most importantly, if you have any problems giving pills to your cat and you are worried about getting scratched / bitten by your very cross cat, talk to your vet! There may well be other ways around pills such as longacting injections for instance. Or, use a pill-giver, which is great device!! Again, ask your vet – in our practice, nurses can show you how to give your cat a pill safely and effectively.Well, nearly for nearly all cats anyway!

In any case, wash your hands thoroughly after playing with a cat. If you are bitten or scratched, wash the affected area well with soap and water. Cats should never be allowed to lick open sores or scratches on your skin. It is not known exactly how cats acquire the infection. Since the Bartonella bug has been found in fleas, many people

believe that cats get the bacteria from fleas – so controlling fleas is also recommended as a way to help prevent infection. If you are bitten or scratched by a cat and then develop any symptoms of cat scratch disease, contact your doctor immediately. And the motto of this month’s column is ‘DON’T MESS WITH CATS!’ HORSE BITE WOUND On the same topic, just recently I was bitten quite badly by a horse. Not its fault, as I did have my hand in its mouth and I was trying to extract a fairly large incisor tooth – but even so….

I got a deepish wound on a finger and it started to swell quite aggressively, and, more to the point, after 24 hours my usual treatment of red wine and Brufen failed to work. When the swelling had reached my wrist I felt it was time for a more expert opinion, so at 7.30pm on a grotty January evening, I went to Falmouth Minor Injuries Unit where the nurses were just absolutely brilliant – so an enormous thank you to them for their expertise and sense of humour! But it just shows that it’s not necessarily just cats – herbivores can give you a nasty bite too!!
