Greetings Members and Patrons, Hope this edition of the THA finds you and your family well. The last 18 months has been hard on all of us. At both stores, we have worked very hard to keep both our customers and employees safe and healthy. Here at Ever’man we believe good food and supplements help to build strong Immune Systems which in turn protects our bodies from virus and disease. This has also been a very rainy year. The last time I checked, we had recorded over 96” of rain this year. That is a lot of water to deal with. The excessive rains have been very hard on our local farmers. We have not received much to sell in our stores this year. Please keep our local farmers in your thought and prayers. Hopefully the fall crops will be better. The last few days have seen some sun and cooler temps. I hope this trend continues. We are due some better weather. The holidays are fast approaching. Ever’man is ready to help you with our Stressless Meals. Let our cafes do the cooking for you this year. We will have cooked entrees, sides, dressing, gravy and desserts. Stop by the cafe and pre-order your needs today. Throughout the store, we have everything you need to make your special meal at home. This includes fresh organic produce, free range and grass fed meats, fresh dairy, milk, eggs and other bulk and packaged grocery items. Our staff will be here to answer questions and support you throughout your shopping trip. Please call on us when needed. We will also be doing our annual food drive “Meal in a Bag” along with help from Members First Credit Union. Our goal this year is 800 bags. That is an amazing number. I remember the first year’s goal was 50 bags. Watch for the Meal in a Bag display in both stores and purchase a bag or two to help a person in need. Bags will again be $20.00 each with a value of double that much. You may have heard or even attended, as we recently had the Grand Opening of our new Educational Center on Nine Mile. The building was constructed at the same time as the store, but we waited to finish the room due to budget constraints. We have now finished the building and will be ramping up classes soon. Please make plans to attend an upcoming class. In closing, watch for our next Board of Directors election to be held the first two weeks of February. There are three seats open, but we have not finished the slate of candidates yet. Please take the time to read the candidates’ bios in the January/ February Healthy Alternative and exercise your member benefit to vote. We make voting very easy both instore and online. I look forward to working with our current board members along with new directors that may be elected. Have a great holiday season with family and friends. I hope to see you in one of the stores soon.

A WORD FROM OUR PRESIDENT OF THE 2021 BOARD
With the refreshing fall weather and cool breezes finally upon us, we are cognizant of why we love living here. I love the holiday season coming up too, especially when I don’t have to freeze to death. My grandchildren would probably disagree because they have never seen snow, they are 12 and 10, and they dream of a white Christmas. Having lived up north for 38 of my 70 years, the snow and cold remind me of shoveling the driveway, having wet, frozen feet while sloshing through snow getting to my car and other such pretty pictures. Some people love it though, and it illustrates how we are all different. I never could understand the people who would be ice fishing on Lake Monona in Madison, Wisc. when the temperature was below zero. I can remember driving to work once to the organic bakery my wife and I owned at 4 a.m. in the morning, and it was 26 below zero and there was a young lady out jogging. I guess that type of weather can make a hardy society. I digress, but these remembrances make me love our Pensacola area even more!! All that being said, the holidays are coming up and will be here before we know it. The reminders do get earlier and earlier, don’t they? I was in Lowe’s around the middle of September, and they already had their fake Christmas trees displayed! At least I didn’t see Santa greeting the kiddies. Here at Everman’s the staff is already preparing the orders for all your holiday dishes and treats. As herd immunity begins to take over and we can once again get together with family and friends, we can appreciate being with those we love and care for and acknowledge the simple joys in life. Covid has probably changed us forever but there have been some good lessons learned from these difficult times. One of the biggest lessons is enjoying our home life and taking walks, biking and maintaining or starting a healthy lifestyle. I hope you have had the opportunity to visit our Nine Mile Rd. store. It is beautiful and with that area growing in all directions, people are discovering the store and loving our “destination that happens to sell groceries too.” The new Education Center just had its grand opening, and we invite you to check out the many classes that are already taking place. Sign up for a cooking class, yoga or one of our many educational classes. The room is beautiful and has large windows where you can view our fire pit and walking track. How many grocery stores have trees and fire pits and walking tracks? None that I know of besides Everman. We are the store you can trust to purchase your holiday food needs. If you are shopping for the holidays, your everyday needs or coming by to eat lunch, dinner, sushi, get a smoothie, gelato or any other reason, our friendly staff is ready to serve you. All the best to you from all of us at Everman.

FLU SEASON 2021: WHAT YOU NEED TO KNOW Though Flu and COVID-19 are different viruses, they have very similar symptoms. Both viruses are very contagious, and it can be days before any symptoms appear. You CAN have both viruses at the same time. There are tests that will check for flu A and flu B, as well as COVID-19. ProHealth offers a combo rapid test that will determine if you currently have the flu and/or COVID-19. Flu and COVID-19 have vaccines that you can get at the same time. Flu 2021: The CDC estimates that 38 million illnesses were associated to the influenza in 2019-2020. Flu vaccine: The vaccine will not prevent COVID-19 and will NOT make you more susceptible to COVID-19. If suspected or confirmed COVID-19, you should reframe from taking the flu vaccine. The composition of the 2021 flu shot has been updated to protect against four different flu viruses. Flu test: You can get tested to determine if you have the flu. Testing is available for both flu A and flu B. COVID-19 2021: At this time, the CDC estimates 219 million cases of COVID globally. COVID-19 vaccine: Pfizer (FDA approved), Moderna, and Johnson & Johnson.
COVID-19 test: There are a range of testing options now available to determine what you need to know about COVID-19. ProHealth offers options to determine live COVID-19 infection, your current level of antibodies, travel requirements, and much more. COVID-19 symptom that differs from the flu: Change or/loss of taste and/or smell. Why should I get a flu shot? To protect yourself, your loved ones, and others from a potentially deadly virus, with the added benefit of decreasing the likelihood that you'll contract both COVID-19 and the flu at the same time. Additionally, herd immunity can help lessen the outbreaks of flu season 2021. Medical Help When You Need It: ProHealth offers rapid flu A, flu B, and COVID-19 antigen test as a bundle with a discounted price of $80. One nasal swab will be used to test for all three viruses. ProHealth offers the flu vaccine at all 7 locations at the price of $37. ProHealth can come to your business to administer flu shots if you have 10+ people (minor additional fee for LESS than 10 people). We now offer seven different types of COVID-19 testing, with pricing starting at $65. Visit ProHealthFL.com to find a THE HEALTHY location near you.ALTERNATIVE | 7

Mandarins covered with chocolate and pistachio INGREDIENTS 6 mandarins, peeled 4 ounces dark chocolate, roughly chopped ¼ cup pistachios, shelled and finely chopped
NUTRITION INFORMATION YIELD: 60, SERVING SIZE: 1, CALORIES: 17
INSTRUCTIONS Line a baking sheet with baking parchment (make sure the sheet fits in your fridge). Transfer roughly chopped chocolate into a heat-proof bowl and place it over a small saucepan filled with about ½ cup (120 milliliters) of water. On medium-low heat, melt the chocolate. Use a spoon or spatula to speed up the process and to avoid uneven melting. Turn off the heat. Take a mandarin segment and dip it in the melted chocolate. Place it onto the baking sheet and repeat until you have used all mandarins. Sprinkle with chopped pistachios and refrigerate for 15 minutes or until the chocolate is set. COOKING FOR A CROWD
Paleo Thanksgiving Tips: •Grain-free baking is now quite accessible with coconut and almond flours. •You can replace starchy mashed potato recipes for a cauliflower ‘mashed potato’ alternative. •Make grain-free pumpkin pie utilizing almonds or pecans for pie crusts, and honey to add sweetness if desired. •Make a whole-food, breadless stuffing.
Gluten Free Thanksgiving Tips: •Almond or coconut flour crusts both make for a wheat-free, high -protein alternative to wheat. •Or, premade Kinninnick gluten-free pie crusts from the Ever’man freezer section are an easy substitute. •Bob’s Red Mill All Purpose Gluten Free flours can easily substitute for wheat flour. •Udis and Rudis offer a great selection of gluten-free bread options, if you don’t have time to make your own.
20 | THE HEALTHY ALTERNATIVE
A Vegan Thanksgiving: •1 tablespoon ground flax mixed with 3 tablespoons warm water makes a wonderful egg replacement. •Or, you can buy Follow Your Heart’s vegan “egg Replacer.” •Make whipped cream by refrigerating a can of full fat coconut milk overnight, draining the liquid, and then whipping the remaining cream. •Lentil Shepherd’s pie is a good vegan option. •Butternut squash can be a great cheese replacement in mac and cheese recipes. •Nutritional Yeast is another great way to add a cheesy flavor, without dairy.
A Vegetarian Thanksgiving: •Create stunning meatless main courses with stuffed butternut squash, a homemade lentil loaf, or even Tofurky. •Make a festive quinoa salad featuring lots of green and red vegetables, and add cranberries for sweetness. •Roasted organic, seasonal veggies is always a simple, crowd pleasing side dish. Kids Christmas Tree Ingredients 8 oz cherry tomatoes 2 English cucumbers 2 slices of yellow cheddar cheese 3-inch bamboo skewers mini star cookie cutter
Instructions: To prep: Using a very sharp knife, or a mandoline set on the thickest setting, carefully slice your cucumbers into 1/4-inch slices. Sprinkle each slice with a tiny pinch of salt, to help it bend when creating your trees. Meanwhile, using a mini star-shaped cutter, cut stars from the cheese slices. Slice your cherry tomatoes in half to create the bottom of the trees. Pat your cucumber slices dry with a paper towel before assembling your trees.
To assemble: Start at one end of the cucumber slice and gently fold it back and forth; begin with small folds and gradually bigger folds with each one, until you have created a pine tree shape as shown in the photos. Insert a skewer through the middle to thread it from top to bottom. Separate and arrange the folds gently, to make them look more authentic. By: cleanfoodcrush.com 28 | THE HEALTHY ALTERNATIVE
