Greetings to all Ever’man Shoppers and Friends, Hope this edition of the THA finds you safe and with minimal damage from Hurricane Sally. Pensacola and the surrounding areas really took a beating. This was one storm I do not think we were prepared for. Most of us thought it was headed to Mississippi and wouldn’t affect us a whole bunch. As for your co-op, we were closed for two days, but opened both stores Thursday to help our community. We ran on generators for several days while power was being restored. Glad to say, all of our employees and vendors are safe. Things can always be fixed or replaced, people cannot. Huge shout out to the many utility workers (both local and from afar) that worked tirelessly to restore our power, internet and phones. Your help has been greatly appreciated. This year has been hard on all of us. Covid-19 and the storm has caused all of us to leave our comfort zones. Your co-op has continued to serve our community through it all. We have added many cleaning and sanitizing protocols to every department, to keep customers and employee safe. Please know we have everyone’s safety at the top of our list. As you read through this special holiday edition of The Healthy Alternative, notice all of the products and services we have added in the past years. We can supply all of your holiday meal needs from whole dinners to sides and desserts. We can also offer many items needed for those annual holiday parties

Coming very soon, we will have a full Sushi program that meets our product standards. We have partnered with ACE Sushi Company. They will use natural and organic ingredients and only sustainably caught seafood. There will be a full-service offering at Nine Mile, where you can pick from what’s prepared or order a specific item. Garden will have a selection of sushi delivered to the store by 11:00am, 7 days per week. All sushi will be made fresh daily. We are proud to work with the ACE Sushi company to deliver this great product. Several employees have sampled the product and gave two thumbs up. This year, we will again offer our Ever’man Meal in a Bag program to help support local families during Thanksgiving. Last year, we shattered our goal again. We have renewed our partnership with Members First Credit Union of Florida (MFCU). MFCU will also offer the bags in each of their branches. We have set our goal higher again this year. We are hoping to help at least 600 families. MANNA will again be distributing these bags to needy families in our area. Please see more information in this issue of The Healthy Alternative. In closing, watch out for our next Board of Directors election to be held the first two weeks of February. There are three seats open, but we have not finished the slate of candidates yet. Please take the time to read the candidates’ bios in the January/ February Healthy Alternative and exercise your member benefit to vote. We make voting very easy both instore and online. I look forward to working with our current board members along with new directors that may be elected. Have a great holiday season with family and friends. I hope to see you in the store soon.

BOARD PRESIDENT DAVE DEBLANDER What a year it has been. With Covid-19, Hurricane Sally, and the election, it is a wonderful thing to celebrate Thanksgiving and Christmas and say good bye to 2020. Covid-19 was very bad, but it did have its upside, too. Bikes were sold out along with flour and yeast in stores because people were rediscovering what they could do on the home front. The rat race seemed to be temporarily suspended as Americans slowed down, drove less and did more activities at home. I hope you had the time and energy to cook and bake more, take walks and bicycle rides and be with loved ones and appreciate the art of conversation. Now that the holiday season is here, Ever’man has a wide variety of great recipes for you to try out. Whether they are in this magazine, other publications found in your co-op, or from www.welcometothetable.coop , try them out and experience what healthy organic meals can taste like. We also provide “stress less meals,” and great gift ideas, too. If you would like to

donate a healthy meal to a family in need look for our “Meal in a bag” display. Just ask a staff member to point you in the right direction. I’ve always loved Thanksgiving and find it to be one of the most rewarding holidays. It still has great meaning in that we can be thankful, no matter what our circumstances may be. It has not been commercialized or turned into a day of revelry, not withstanding black Friday, like other holidays and its meaning is still impactful. We all continue to have great nutritious food available, two great stores to choose from, wonderful classes to enjoy and so much more. May I also invite you to the class I am teaching and participating in during January, 30 Days to Optimal Health, a 30-day juice flush. This will be the fourth time I have done this “flush,” and I can assure you, the results are amazing. Call or visit the store to sign up if you are interested, I’d love to see you there.

harcuterie Board Whether you are looking for a perfect treat for family gatherings, an accompaniment to show off at girls wine night, or a late-night snack, charcuterie boards are a go-to choice for every occasion! I have to admit that the first time I attempted to make a charcuterie board, I was a nervous wreck. I spent hours at Ever’man looking through the cheeses, meats, crackers, fruits, and spreads, trying to make sure every flavor and texture was harmonious. However, the more time I spent making charcuterie boards, the easier the process became. Spending lots of time researching websites and blogs helped me become less obsessed with my board being perfect and more focused on how to create an experience for myself and my guests that would allow everyone to get creative without breaking the bank. Below are five simple steps to help you create your perfect charcuterie board. 1) Big Guys Go First - I always start my boards by placing my most substantial items first, like cheeses. When selecting your cheeses it is smart to have at least three different kinds, and I usually choose from any of the following: - A soft, creamy cheese, such a Goat Cheese, Brie, Mozzarella, or Camembert. - A firm cheese, such as Parmigiano-Reggiano, or Manchego. - An aged cheese, such as beautiful aged sharp Cheddar or Gruyere. - A Blue Cheese, such as Gorgonzola or Roquefort. As I select my cheeses, I like to call these your terrific trio because, ultimately, this will be the foundation of your board. 2) Spreading The Love - On every board, you must have the key ingredients of meat and cheese. However, the real stars are the small bowls filled with spreads, dips, or olives. These additions will create yet another dimension to the flavor and color of your board. 3) The Art of Meat - Although the charcuterie board has become a staple in many homes, most people don’t know what the French word “charcuterie” means. Put simply, charcuterie is the art of preparing and assembling cured meats and other meat products. You can include meats such as pepperoni, salami, ham, and my favorite: prosciutto.

4) Fresh is Best - I don’t know about you, but the moment I think of cheese, fresh fruit also comes to mind. Not only is fruit a beautiful accompaniment to a sometimes mild cheese, but it is also a great way to add life to your board without breaking the bank. Even though I prefer fresh fruit, don’t be afraid to add dried fruit elements as well.

5) Give it some Crunch - Adding items such as nuts, crackers, or toasts allows you to create a contrast in textures as well as neutral flavors for yourself and your guests. Including smaller nuts is also a great way to fill any space that you may find on your board. When it comes to making a charcuterie board, there is no right or wrong way. All you need to remember is to have fun with the process and don’t be too hard on yourself. Just follow these five simple steps, and you will be creating delicious charcuterie boards in no time! La Riojana By: Agustin Ona

History La Riojana is a farmer-owned co-op in northwest Argentina that has over 500 members, most of whom are small-scale grape farmers with less than seven acres of vineyards. Many of these farmers come from families that have been part of the cooperative since its beginning in 1940, when wine growers from Italy first immigrated to the area of La Rioja in northwest Argentina and decided to come together to make wine.

Fair Trade La Riojana was the first Argentine winery to become fair trade certified in 2006 and has grown to be the largest fair trade wine producer in the world. Since 2006 their co-op has generated approximately $15 million Argentine pesos of support to their members, workers, their families and their local communities. The cooperative guarantees the purchase of grapes at fair prices, resources for transportation of grapes from the vineyard to the winery, access to credit and an emergency fund, profit distribution, free technical assistance, economies of scale for the purchase of diesel and other inputs, collective frost insurance and a policy of one member, one vote regardless of their production size. The co-op reinvests any remaining profits into community projects and infrastructure improvements for the farmers. One of the most important projects was to establish a fresh running water facility, including a 525 ft deep well, for members and workers living in the village of Tilimuqui who had to endure desperate summers, with temperatures as high as 104 degrees Fahrenheit, without a regular water supply. The fair trade premium raised

by sales of La Riojana’s wines has also enabled them to build a new secondary school, giving the children of their workers and members access to a free technical secondary education, as well as the children living in the wider local community. More than 600 children studied at this school. Actually, a new ambition project is starting to take shape. A Health Center is now under construction in Famatina Valley Region, near 5 small towns without any hospital. In March of 2020 the builders worked hard under the heat of the Argentine sun to complete the metal framework and roof over the second section which includes the main entrance and reception area. Once the roof was completed, work began on installing the metal framework over the consulting rooms section which is where things stand today. Unfortunately, due to the outbreak of the worldwide COVID-19 pandemic and the recent lockdown imposed by the Argentine authorities, building work on the health centre had been paused for almost 6 months in order to protect the health of the team on site. In September La Riojana restarted the building work and hopefully will not stop anymore until people can have medical attention near their homes.

Sustainability, Organic and now Biodynamic Production

La Riojana became certified as an organic producer in 2000 and has grown to become one of the country’s largest producers of organic wine, with more than 850 acres of organic grapes. Now they are expanding to have Biodynamic wines, this year being the first harvest of Malbec, Torrontés, Cabernet Sauvignon, Bonarda and also biodynamic Olive Oil. La Riojana is committed to working with their members in a way that is not only sustainable to their way of life, but also the health and future of the land, the environment and the soils from which they make their wine. They were one of the first Argentine wineries to introduce a carbon neutral program for their entire wine-making process from grape to bottle.

Co-op to Co-op

Several years ago, the National Co-op Grocers (NCG), began working with La Riojana to establish a direct co-op to co-op supply chain, which enables us to offer high-quality wine at a great price and still pay a fair trade premium to the winery and the grape growers. INGREDIENTS Organic seedless red grapes Fresh rosemary Garlic salt Black pepper Goat cheese Bread or cracker of your choice

PREPARATION Preheat oven to 450°F. Line a baking sheet with parchment paper. Carefully toss the grapes with olive oil, salt, pepper and a small amount of chopped rosemary. Roast for 10 minutes. Serve warm on crostini or cracker, spread with a light layer of goat cheese. Garnish with rosemary twigs.


Cranberry Pecan Skillet Stuffing

INGREDIENTS

PREPARATION

4 to 5 cups vegan multigrain bread, cut in 1/2- to 1-inch cubes and toasted 2 tablespoons olive oil 2 garlic cloves, peeled and minced 2 cups onion, diced 1/2 cup carrots, diced 3/4 cup celery, diced 1/4 cup green bell pepper, diced 1 cup button mushrooms, sliced 1 teaspoon dried sage 1 teaspoon dried rosemary 1 teaspoon dried thyme 1 1/2 cups vegetable broth 1/3 cup dried cranberries 1/3 cup pecans, chopped 1/2 teaspoon salt 1/4 teaspoon ground black pepper

Preheat oven to 375°F. Heat 2 tablespoons olive oil in a large iron skillet over medium-high heat and sautÊ the garlic, onion, carrots, celery, and green pepper for 5 minutes. Add the mushrooms and dried herbs and continue to cook for a few more minutes until mushrooms are tender. Stir in the vegetable broth, cranberries, pecans, salt, pepper, and toasted bread cubes. Cover with aluminum foil and bake for about 30 minutes, then uncover and bake another 5-10 minutes. Let the stuffing sit for 15 minutes before serving.

Maple and Dried Fruit Stuffed Baked Apples Baked apples are one of those old-fashioned desserts that should not be forgotten. Simply core whole apples and fill the cavities with crunchy nuts and chewy fruit, then baste them with cider and maple syrup for a timeless delicious treat.

INGREDIENTS 1/4 cup light brown sugar, packed 1/4 cup dried cherries, chopped 4 medium dried figs, chopped 2 tablespoons sliced, almonds 2 tablespoons pecan pieces, chopped 6 large apples 3 tablespoons unsalted butter, cut into 6 equal pieces 1/2 cup apple cider 2 tablespoons maple syrup

PREPARATION Preheat the oven to 400 degrees F. Place the sliced almonds in a small sautĂŠ pan over medium heat and toss, moving constantly over the heat until lightly toasted, about 5 minutes, cool and chop. In a small bowl, mix together the brown sugar, dried fruit and nuts. Cut off the tops of the apples with a paring knife, to make a little lid like on a Jack-O-Lantern. Set the apple tops aside. Remove the cores of the apples without cutting through the bottom using a small melon baller or paring knife. If using a paring knife, cut a circle straight down. Use the tip of the knife to cut the core into pieces, angling across the cylinder to disconnect the pieces from the bottom and pull them out.

Place the apples in a baking pan or casserole dish and stuff the cavities with the fruit and nut mixture. Place a piece of butter on top of the mixture. Mix the apple cider and maple syrup together, pour into the bottom of the baking pan and bake the apples, uncovered, basting every 10 minutes, until they are tender when pierced with a paring knife, 30 to 40 minutes. Carefully place the reserved apple tops on the apples at 20 minutes. When the apples are tender, transfer them to a serving platter and cover with foil to keep warm. Pour the pan juices into a small saucepan and bring to a boil over high heat. Simmer the mixture until it becomes syrupy and reduces to a sauce, about 10 minutes. Serve over the apples.

Meal in a Bag By: Ellen Bell As if the holidays weren't already an exciting time of the year, we here at Ever'man are even more excited because it is during this time that we can give back to our local community that has given so much to us. From its twists and turns, highs and lows, success and failures resulting from COVID, Hurricane Sally and so much more during 2020, this year has been an incredibly eyeopening experience. However, I believe these unfortunate situations have only solidified our mission and values as a Cooperative to give back to our local community through education about health, nutrition, and environmental issues; Supporting Responsible, Local Agriculture, and Small Business, but most importantly, allowing access to healthy, natural foods and products at the lowest possible price. Since 2017, Ever'man has partnered with another co-op within our community, Member First Credit Union, to provide our Meal in a Bag Program to support local families in need during the holidays. For the small donation amount of $20, a bag of food purchased at Ever'man, Member First Credit Union locations, or online, will be delivered

to Manna Food Pantry and distributed to help prevent anyone from going hungry during the holidays. Each bag includes holiday staples, canned goods, brown rice and pasta, and enough supplies to make a nutritious meal. This collaboration is just one of the many ways Ever'man is able to increase access to healthy, nutritious food and make the co-op an option for more people in our community. For some, this year has had many life-altering effects, and as a community, it is our responsibility to ban together by lifting each other up. While Ever'man may not have the ability to control the unpredictable 2020, we do have the ability to make sure everyone has access to a hearty meal come Thanksgiving Day. The Ever'man Meal in a Bag program runs through the entire month of November right up until Thanksgiving. During any shopping trip in November just ask the cashier to add a ‘Meal in a Bag’ donation to your groceries or donate on Eventbrite or thru Facebook events. Holiday Meal Makeover

A celebratory dinner should be exactly that: a time to share delicious food with family and friends. While many people wish to serve traditional family favorites, for most, there's still plenty of room to liven up your holidays with a few new flavors, local foods, and even nutritional boosters. Here are some ideas for making your holiday meals fresh, easy, and fun. Consider a slightly new twist on the centerpiece of many a holiday meal, the turkey, by choosing a local, heritage breed, and/or brined turkey (these are very popular items at many coops; some co-ops offer pre-ordering for customers to ensure availability). Heritage breeds are typically moister and more flavorful than commercial turkeys. For more information on heritage breeds and general turkey tips, check out this turkey tutorial and turkey roasting tips. Give that classic green bean casserole a makeover with fresh green beans, a spritz of lemon, and a topping of toasted pine nuts. Boost the cranberry sauce with a handful of fresh or dried fruit and a dash of cayenne. Use brown rice or quinoa as the basis for your turkey-day stuffing this year, and toss in some walnuts and chopped local apples. Instantly transform the typical fare with seasonings: spice your eggnog with cardamom instead of (or as well as) cinnamon this year, and sprinkle tarragon on plain mashed potatoes. Or add some festive flavors to an otherwise ordinary recipe, like these Eggnog Spiced Sugar Cookies. Make gravy like Grandma (or your favorite cooking show chef ) if you like, but don't feel obligated! There are some topnotch, healthful cooking mixes available that are especially helpful this time of year. You'll find delicious, organic gravy mixes, dessert mixes, and seasoning blends for salad dressings and dips at your co-op.

Bring the unexpected to the table by adding an entirely new recipe or two to this year's menu. Paleo Sweet Potato Casserole or a Wild Rice Stuffed Squash are two great options that use seasonal vegetables in new combinations. Focus on just one or two "special" dishes to complement your main course—especially if you're serving appetizers, a couple delicious sides are all you really need and will allow you to spend more time with your guests. Great dishes needn't be complicated made-from-scratch recipes, either. Purchase some strikingly flavorful, easy-toprepare foods to serve alongside the usual. A plate of Brie with Orange Preserves and Almonds would be a memorable addition to any menu. Unless you adore kitchen duty, never refuse a guest's offer to bring food -- and remember you can count on your grocery store for prepared foods, too. Visit the bakery department for lovely desserts (you may want to order pies, cheesecakes, and other specific favorites ahead of time). While you're there, choose some cranberry date scones or pumpkin pecan muffins to treat family and/or guests to special breakfast fare. You may even consider picking up a couple of extra quick breads to give as gifts! If you'll be hosting guests for more than just the main meal, look to the deli for speedy main course items and sides (like lasagna, smoked salmon, wheatberry salad, golden beet and kale salad, or roasted root vegetables). Don't forget to stock up on some local wine and beer, too. Pair a good beverage with an array of cheeses or cookies for an instant party when unexpected guests arrive! It takes just a little planning and a good source for great food to pull off a wonderful holiday meal—something full of tradition, genuine nourishment, and good will. Vegan Pumpkin Cheesecake Vegan Pumpkin cheesecake is made with cashews, sweetened by maple syrup, and has all the pumpkin pie flavors you love! INGREDIENTS 1 cup dates 1/2 cup oats 2 TBS maple syrup pinch of salt 1 1/2 cup soaked cashews 1 lemon juiced 1 TBS flax seed ground 1/2 cup full fat coconut milk 1 TBS pumpkin spice 1/2 cup maple syrup

SERVINGS: 9

PREPARATION Soak cashews in 2 cups of water overnight. You can opt for the quick soak, which is pouring boiling water over the cahsews and soaking for 15 minutes. Drain the water, and set the cashews aside.

TIPS AND TRICKS

In a blender, combine the dates, oatmeal, pinch of salt, and maple syrup. Blend to combine. The dough will form a ball.

Forget to soak your cashews? Quick soak them by boiling water, placing the cashews in the boiling water, remove from heat, and let sit for 15 minutes.

Line a muffin pan with silicon or paper inserts. Using a tablespoon to measure, scoop out 1 TBS worth of crust to each insert. Oil your hands with coconut or olive oil, and press the crust so it is flat and even.

Use Pumpkin Spice Maple Syrup– This stuff is the absolute best! If you can’t get your hands on this, then make sure you are using pure maple syrup.

In the blender, combine cashews, pumpkin, coconut milk, juice of 1 lemon, flax seed, and maple syrup. Mix until the texture is smooth. Fill each muffin insert until it is almost full. Place muffin pan in the freezer for two hours. Keep in the freezer until ready to serve, and let thaw for ten minutes. Return the uneaten ones to the freezer for storage! Mangia!

Freeze for 2 hours. This will firm the cheesecake up. When you want a mini cheesecake, take it out of the freezer and let it thaw at room temperature for 5 minutes.

Roast Turkey Hash Total Time: 30 minutes Servings: 4

What to do with Thanksgiving meal leftovers? This turkey hash is perfect for any meal of the day. For a vegetarian version, simply skip the turkey or substitute it with veggie leftovers.

INGREDIENTS

PREPARATION

2 tablespoons vegetable oil 1 1/2 cups diced roast turkey 1 cup diced onion 1 cup diced red pepper 1 cup diced boiled or roasted potatoes 1 cup diced cooked butternut squash 1 teaspoon dried sage 1 teaspoon garlic powder Pinch of cayenne pepper 2 tablespoons water Salt and pepper to taste

In a large skillet, heat the oil over medium-high heat. SautĂŠ the onions and peppers for 6-8 minutes until they begin to soften. Add the spices and sautĂŠ for another minute. Add the potatoes, squash and turkey. Adjust the heat under the skillet to very hot. Slightly mash the mixture in the skillet and let it brown for several minutes before stirring. Slightly mash the mixture again, and let sit for another few minutes to continue browning thoroughly. Add the water and scrape the brown bits from the bottom of the pan. Cook another minute until the water is absorbed. Add salt and pepper to taste.

DIY Lip Balm There is nothing like the proud thrill of a successful DIY project. Whether it’s learning to whip up a fun, funky lunch, making your own haircare products or mixing up a soothing facial out of nourishing ingredients from your kitchen, the rewards last long after the project is finished. Why not try a classic DIY project: making your own lip balm!

A beautiful smile, naturally

way you like it, you can control the ingredients and use simple, healthy ones (no petroleum found here!). You should be able to find most of the supplies you need for this project in your co-op’s health and body care section, or online in larger quantities. A local craft store is another good place to look, especially for tins and tubes to hold the finished product.

Making your own lip balm is beyond easy; in fact, you might even know several people who have already given it a whirl. DIY lip balm is great because not only can you make it just the

Makes 4 ½-oz. tubes.

Melt beeswax, shea butter and oil together in a small bowl in the microwave. If you don’t have a microwave, use a double boiler or a heat-safe bowl over simmering water. Stir until ingredients are liquid, then add essential oils and optional honey. Mix well. Transfer to a large eyedropper, syringe, or container with a spout, and divide liquid among four ½ ounce lip balm tins, jars or tubes.

DIY Body Scrub with Essential Oils Your skin is your body's first line of defense against a host of tough customers—sun exposure, pollution, hot days and freezing cold temps. It's important to take good care of your skin so it can take good care of you.

Why not pamper your skin with an easy DIY body scrub? All it takes are a few simple ingredients from your own kitchen and your local co-op. While body scrubs are great in the shower, they’re also good for quick spot applications on your hands and feet. Use at the sink, or take a basin of warm water and a towel to a favorite spot, like the den or patio, for a mini spa treatment.

Basic formula and function

Start with the basic formula: something scrubby + skin care oil. For scrubby ingredients, use food-grade, biodegradable ingredients like sugar, salt or coffee grounds (before or after brewing). These will exfoliate the skin, removing dry, dead and dull-looking skin cells and helping to prevent clogged pores. Incredibly, your skin will respond by generating new, fresh skin cells more quickly. Isn’t Mother Nature wonderful? Next, choose plant-based oils that nourish the skin and provide lubrication for the scrubby ingredients. Sweet almond oil is a great choice, with its rich texture and skin-hydrating properties.

Up your game with essential oils

Add your favorite essential oils to the mix and take the benefits of your scrub to a whole new level of luxury and efficacy. Not sure where to start? Try this recipe featuring refreshing, vitalizing peppermint and spearmint, and cheering, uplifting sweet orange. This clarifying, energizing scrub will leave both you and your skin feeling invigorated and refreshed, while the coffee/sweet orange aroma evokes warm comforts of snuggling by the fire. Ingredients 4 tablespoons granulated sugar 1/2 tablespoon coarsely ground coffee 3 1/2 tablespoons Aura Cacia® Sweet Almond Oil 30 drops Aura Cacia® Sweet Orange Essential Oil 9 drops Aura Cacia® Peppermint Essential Oil 9 drops Aura Cacia® Spearmint Essential Oil 4-ounce wide-mouth jar

Preparation

In a mixing bowl, combine all ingredients and stir until well blended. Transfer to wide-mouth jar. To use, scoop scrub out of jar with fingertips and apply to skin using gentle circular motions. Rinse with warm water and pat dry. Note: For a sweeter, more citrusy aroma, substitute bergamot (bergaptene-free) essential oil for the spearmint. For a more meditative, calming aroma, substitute frankincense essential oil for the peppermint and spearmint.

Gingerbread Cookies INGREDIENTS 1 1/2 cups unbleached flour 1 cup whole wheat pastry flour 1/2 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon ground ginger 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1 stick unsalted butter, softened 1/4 cup light brown sugar 1/2 cup molasses 1 large egg

Royal Icing

2 cups powdered sugar, approximately 1 large pasteurized egg white* (see Notes below), or 2 1/2 tablespoons meringue powder 1/4 teaspoon lemon juice 2 tablespoons water, approximately

PREPARATION In a large bowl, combine the unbleached and whole wheat pastry flours, baking soda, baking powder, salt, ginger, cinnamon, nutmeg and cloves. Whisk to mix well, reserve. In a stand mixer or a large bowl with an electric beater, cream the butter until soft. Add the brown sugar and beat, scraping and mixing until wellmixed. Add the molasses and beat, scrape down and add the egg, beat again until thoroughly combined. On low speed, stir in the flour mixture. Divide the dough into four pieces. Form a rectangle of each and place between sheets of parchment and roll out to 1/4-inch thickness. Stack the dough rectangles, separated by parchment paper, on a baking pan and wrap tightly, chill for three hours, or up to 24 hours. Preheat the oven to 350â °F. Carefully remove the parchment from the top of each dough sheet, lay the dough on the counter and use cookie cutters to cut shapes. Use a thin metal spatula to transfer cut cookies to a parchment-lined baking sheet. Leave an inch of space between the cookies. Press the scraps of

dough together and roll out again; cut cookies. Bake for 6 minutes, then switch the position of the pans between upper and lower oven racks and bake for 6 minutes more. These cookies are a tad thick, so you might need another two minutes to get them crisp. When cookies are slightly puffed and look dry, cool on racks on the pan for five minutes, then transfer to the rack to cool completely. When the cookies are cool, mix the powdered sugar with egg whites or meringue powder in a stand mixer or a large bowl with an electric beater. Gradually mix in lemon juice and water, a tablespoon at a time, to make your desired consistency. To pipe on the icing, transfer to a piping bag with a small round tip, or use a zip-top bag with a small corner cut off, and use to draw outlines on the cookies. Allow icing to dry, then store, tightly covered, for four days, or freeze for a month. If raw eggs are used, eat or freeze within 24 hours.
