WHAT’S FOR DINNER? TIPS FOR MAXIMIZING LEFTOVERS

LEFTOVERS ARE an easy solution to the common question, “What’s for dinner?” A recent survey found that 72% of Americans identify as pro-leftovers - but how can we cook and store these foods for maximum mealtime “yum” and less food waste? Whether you’re proleftovers all the way or need some convincing, follow the tips below for a more sustainable approach to enjoying meals.
Keep an organized fridge
An organized fridge is key to making the most of your leftovers and limiting food waste. Give your fridge interior a refresh so you can best find food items and develop a system that works for your family.
A recent Bosch survey found that 61% of people believe they would waste less food if their fridge had more useful storage capacity. Utilize flexible storage and shelving solutions (like the FlexBar from Bosch) to make space for taller items so every inch of your fridge interior is maximized.
Label your leftovers with the date they were made, and store them in airtight, glass containers. It’s easy to forget what’s in your fridge until it’s too late - glass storage containers are not only reusable and sustainable, but also allow you to see what’s inside.
Cook meals that you already know will make great leftovers
Many Americans choose their meals based on whether or not they will make good leftovers for future meals. In the survey, Americans noted that eggs and sushi are by far the worst things to keep as leftovers (42% and 33%), whereas soups (79%), meat (62%), and pasta (60%) are among some of the best leftovers. Rather than making that egg frittata for your at-home brunch, consider sweet potato hash browns or cheesy pasta bake that you can enjoy for days to come.
Treat “extras” as a foundation for new meals
For example, repurpose vegetable scraps to make a soup or stock. Toss extra carrots, onions, and the like in a gallon zip-top bag in the freezer. If you prepare twice the vegetables you’ll need for a meal, you’ll have a starting point for a soup or pasta salad later in the week, such as Leftovers Creamy Veggie Soup.
Maximize freshness with the right appliances
You can freeze leftovers if you want to extend their life for a longer period of time. An easy storage hack for leftover soup or sauce is to freeze them in muffin tins or ice cube trays for small portions to easily use for other meals.

While microwaves are handy, they might give your leftovers an undesirable consistency, whereas cooking on the stovetop on low heat maintains its original taste and texture. You can also reheat leftovers on an induction cooktop or in an air fryer for fast reheating that ensures your leftovers don’t have any cold spots.
Steam cooking is another great way to reheat leftovers, as it retains nutrients, moisture, and the original integrity of your food. Try reheating foods like fish and veggies in a steam oven - your leftovers will always come out fresh and flavorful!
LEFTOVERS CREAMY VEGETABLE SOUP

Serves 4
Ingredients:
• 2 pounds vegetables (like carrots, potatoes, parsnips - anything really!) peeled and roughly chopped • 3 tablespoons extra virgin olive oil, divided, plus more for garnish • 3 shallots, chopped (or 1/2 yellow onion, chopped) • 3 garlic cloves, minced • 2 tablespoons minced thyme, plus more for garnish • 2 teaspoons cumin • 5 cups vegetable or chicken stock, plus a little extra as needed • 2 tablespoons unsalted butter • salt and pepper to taste • splash of cream, optional
Directions:
Preheat oven to 375º. Spread carrots (or root vegetable of choice) onto a baking sheet and toss in 2 tablespoons oil. Season with salt and pepper and spread into a single layer. Roast for 25-35 minutes or until fork tender, tossing around 15 minutes into the roasting process. Remove from oven.
Place Dutch oven onto stove over medium heat. Add remaining oil to pot. Add shallots (or onions) and garlic to pot and sauté for 3 to 4 minutes, then add thyme and cumin and continue to sauté for 3 to 4 minutes. Next, add the roasted vegetables and stock to pot, simmer for 15 minutes.
Allow mixture to slightly cool. Carefully pour mixture into a blender (this can be done in batches), add butter, salt, and pepper, and puree - adding more stock if mixture is too thick - and continue to puree until smooth.
Pour mixture back into the pot and adjust seasonings. Simmer for about 5 minutes. Ladle into bowls and drizzle with extra virgin olive oil and fresh thyme leaves. Serve.
AS A NEW “bonus dad,” I’m relatively new to the “dad game.” Still, I’ve been training for it for years... rocking New Balance 1990s, telling bad jokes, judging others’ grilling acumen, and a passion for a well-manicured yard. My beverage suggestions for Father’s Day are going to be focused on what’s on the menu.
BBQ
Even if underwear is labeled “one size fits most,” there is no one-size-fits-all beverage for BBQ. If you’re firing up the smoker, especially if you favor hickory wood, you’ll want to pair it with something that can go toe-totoe with the smoke flavor. My go-to would be a Miller Lite with a lime wedge, but if I’m looking to impress, I will snag a Trousseau. This is one of the few red wines served cold. They have a smidge of citrus. Its herbaceousness can take the place of a beer as a solid summertime BBQ drink. Burgers
There are very few things more dad than flipping burgers over a hot grill. I’m not going to get involved in the debate between cooking over charcoal and gas. The only thing you’ll want to avoid is turning that burger into a coal briquette. Those dads need to turn in their “grill card.” A burger should be big and bold with all the fixings… mayo, bacon, cheese with spicy mustard. There are many flavors in there, but you have to match the wine to the dominant flavor. Most people think of Argentina when they hear Malbec, but the varietal calls Southern France its home. Go with that. • 2018 Antisto Malbec Cahors – Cahors, France ($16.99)
Beer Can Chicken
Beer can chicken is always fun and depending on the beer you’re into, super flavorful. For this pairing, I’d suggest you cook the chicken with an IPA. The hoppiness will bring out the marinade and/or seasoning, and it’ll add another layer of flavor. You can either double down on the IPA or go with a Burgundian Chardonnay. I’d recommend something from Chablis. The minerality would pair well, and the structure of the wine would lead to one hell of a meal. • 2018 Jean Goulley Chablis – Chablis, France ($34.99)
I owe a lot to my dad, and I hope to be as good as a dad as him to my amazing bonus kiddos. Hopefully, I’m well on my way with my beard and a passion for ruling the grill whenever possible. Whatever you choose to drink, toast to good dads everywhere cause you wouldn’t be here without them. Cheers!

FINDING BEAUTY, HEALING, AND FRIENDSHIP IN Franklin

“MY HUSBAND just retired from the military, and after being stationed in Southern California for 20 years, we made a crazy decision to move across the country, buy a farm, and build a naturebased glamping retreat.” That was my introduction to Jessica Merritt, founder of Nurture + Nature Retreat in Franklin, NC. The Merritt family also began Special Liberty Project, a non-profit that works to connect Gold Star Kids and Families, Wounded Warriors, and Veteran Suicide Spouses to the healing benefits of nature.
Jessica mentioned in her first message to me that she had been following along with my travels and wanted to know if I would be interested in visiting Nurture + Nature Retreat and possibly consider helping to share my experience. Two of the things I’m most passionate about are folks that chase their dreams and giving back to our communities, so less than a week later, I was making my way to Franklin, NC, for the first time.
I began my journey to Franklin with a sunrise at the top of the Great Smoky Mountains National Park, explored the Kephart Prong Trail when I reached Oconaluftee, had breakfast in Cherokee, and then rolled into Dillsboro, NC. It was there that I finally met the beauty of the Tuckasegee River and wondered to myself why I had not taken time to visit the area in the past. I slipped into Sylva, NC, where I found delicious grub at Lucy in the Rye, a never-ending selection of vintage books at Harry Alter Books, a chill vibe at Innovation Brewery, the location of the Jackson Arts Market, and many other spots that I did return to months later after my quick stop during my search for Franklin. After falling in love with Sylva, I knew once I reached Franklin that I would have to check out the downtown area, and I wanted to pick up a gift for the Merritt
family. And, just as I suspected, Franklin was another mountain town filled with charm, hospitality, history, and an ambiance that would make anyone feel welcome. A large mural of signatures from Appalachian Trail thru-hikers that had passed by on their way to Maine and Springer caught my attention, as did the mention of gems that seemed to be around every corner. Lazy Hiker Brewing, Scottish Tartans Museum, Ruby City Gems & Minerals, and Brooklyn Bagels stood out. I found the perfect gift at Blackberry Market Boutique and Gifts, then headed out for a 15 minute drive to the Merritt’s Nurture Nature Retreat.
Going to the Mountains is Going Home As I drove down the gravel road in the Nantahala National Forest to Nurture + Nature Retreat, I felt as if I was going home. My mind became clearer, joy flooded my heart at the sight of wildflowers along the way, and my spirit was overcome with peacefulness. When Jessica and her friend greeted me, it seemed as if we were old friends seeing each other for the first time in years. As I approached the glamping tents, campfire area, barn, farm animals, and my home for the night, I knew that I had discovered a place that would stay with me for many years to come.
Buddy the mini-donkey made me laugh, the Nantahala National Forest that borders the property called me to explore, the Merritt family inspired me, and the glamping tents were far more beautiful than my pop-up Kelty tent that I often use when camping. I toured the property and heard countless stories of the incredible work that Nurture + Nature Retreat and Special Liberty Project does in the lives of those that truly need a connection with a community and nature. A delightful dinner was served around a cracking fire, we made dream catchers out of grape vines, and as the sun sank into the horizon, I found myself in a new favorite place. A place of beauty, nature, healing, and, most of all, hope.
The primary reason for Nurture + Nature Retreat being created was to provide a safe haven in nature to welcome Gold Star Families through the Merritt’s non-profit, Special Liberty Project. However, this little piece of heaven in Southern Appalachia is also available as an AirBnB. You can also sign up for one of the themed all-inclusive nature retreats that Jessica hosts throughout the year. In late May, I co-hosted a Wildflowers & Honey retreat, with all funds going towards sponsoring retreats for Gold Star Widows. On June 8th - 10th, The Art Studios of the Smokies from Sevier County will be joining Jessica for a Nature & Art Retreat. Yoga, autumn, and equine are a few other focus points that guests have been immersed in while visiting Nurture + Nature Retreat.
