EK: There’s no question that Oriental rugs are replacing wall-to-wall carpeting in many American homes. Aside from their obvious visual differences, how do rugs and carpets differ? Kerry:Conventional carpeting is machine made and tufted with synthetic material, although cotton and wool are sometimes used in higher end wall-towall carpeting. Oriental rugs, on the other hand, are created with a specific design, pattern, or motif in mind as well as color scheme. Machine made rugs are made by mechanical means such as on a powerloom or flat bed machine. There can be hundreds of these rugs made exactly alike and therefore be mass-produced, impacting their cost and quality. Handmade rugs can’t be mass-produced. Each artisan pays individual attention to detail, color, pattern, and the motif of each piece of art they are hand-crafting. in history in which it was created. Synthetic rugs are machine manufactured using olefin (polypropolene), nylon, acrylic, rayon, and polyester. Hand-crafted rugs feature natural fibers such as cotton, wool, and silk. Synthetic rugs can often be produced with fibers that can appear to be natural fibers. The consumer can be misled in believing that these rugs are in fact hand-crafted rugs. EK: Does the use of all-natural fibers and organic dyes in the hand-crafting of Oriental rugs require a different cleaning process than that traditionally used on conventional carpeting? Kerry: Because of the use of natural fibers and vegetable or plant dyes, extensive care and steps must be taken in order to ensure that dyes remain stable during the entire cleaning process. Ignoring one or more steps in properly cleaning these rugs can compromise the texture, color, and integrity of the rug. Wall-to-wall carpeting can be cleaned with high heat


and strong cleaning agents. In contrast, Oriental rugs are washed in deionized pure cold water with wool-safe approved solutions, thoroughly rinsed, and hung to dry in a temperature-controlled drying room. EK: Alex Zahir, owner of AZ International, LLC Rug Gallery, whose family has hand-crafted fine Oriental rugs in his native Afghanistan for three generations, expressed his surprise at your extraordinary level of knowledge related to the Oriental rug industry. How did you gain that knowledge? Kerry: Our company is certified by a national certification board called the IICRC. I attend classes annually to learn and keep up with the latest in rug cleaning knowledge and advancements in technology. I am also a wool-safe approved service provider. In addition, I frequently collaborate with Oriental rug specialists like Alex. EK: Why is your level of knowledge of the rug industry important in washing these Oriental rugs, which you describe more as an art? Kerry: You must know the construction, fiber, and dye content to correctly determine your course of action. If I have been given an expensive heirloom rug to clean that has been passed down from generation to generation, then I am required to handle it with the utmost respect and care that the customer deserves. Some people think that rugs are just rugs, when actually they are art that is designed as a floor covering. People who purchase these rugs invest a great deal of time and money in choosing the right design, color, size, and material that is right for their home. Kerry: After visiting several rug cleaning facilities and attending a variety of schools, I came to the conclusion that caring for Oriental and fine area rugs required more than just a carpet cleaning machine. Agitate and dust the rug to remove dry soil 3. Test for dye migration 4. Pre-condition 5. Pre-spot 6. Agitate pre-conditioner thoroughly to loosen soil 7. Submerse in special rug bath of our exclusive pure Kinetico water 8. Extract excess water 9. Transfer rug and cart it into our temperature controlled drying room 10. Clean the fringe 11. Post-inspection and post-vacuuming 12. Roll and wrap for pick-up or delivery Many of these steps are accomplished using proprietary pieces of equipment that we specifically designed to care for your fine Oriental rugs and that are unavailable elsewhere. EK: Does the presence of pet stains and odors mean my Oriental rug is ruined? Kerry: Most rugs can be safely and successfully cleaned in our state-of-the-art rug washing studio. However, the presence of pet urine or other animal accidents can compromise the dyes and degrade the fiber makeup of the rug. 24th annual Winterfest celebration November 12 with festivities in Patriot Park that conclude with the illumination of five million Winterfest lights throughout the city and a fireworks display. The lead-up to the evening’s activities will be the city’s third annual Salute to Veterans Parade on the Parkway. Pigeon Forge Winterfest is a mixture of holiday celebrations, themed special events, and millions of decorative lights. That combination created a new visitor season for Pigeon Forge when Winterfest started in 1990. After the Winterfest Kickoff, businesses throughout the city offer special activities, theaters add a Christmas flair to their shows for two months, and the city itself presents two major special events in January and February – Wilderness Wildlife Week and Saddle Up. Pigeon Forge Winterfest continues through February 28, 2014, offering winter activity throughout this gateway to Great Smoky Mountains National Park. Christmas in WearsValley

Wears Valley wants to take you back in time to the days of old-fashioned Christmas trees, horse-drawn wagon rides, hayrides, and storytelling. Lots of fun awaits you in the Valley during the holiday season. A fourweek long event, Christmas in Wears Valley will begin with a tree lighting ceremony at 6:00 pm on Friday, November 29, in Sevierville. The event will run through December 31st.

November dusk on November 29, choirs will gather at 2881 Wears Valley Road in Sevierville in Wears Valley for a magnificent tree lighting ceremony. A blazing bonfire will warm the night air as choirs warm our hearts with carols. A rich tenor voice singing “O Holy Night” with the words echoing throughout the Valley could cause us to hear the angels’ voices. After the final “Silent Night,” everyone heads to Friendly Falls for “The Best Cup of Hot Chocolate in the South!” Earlier in the day fun attractions, stores, art galleries, and restaurants will be bustling with activity. At the site of the tree lighting ceremony, food vendors will be serving up tasty items like barbecue pork, turkey legs, Philly cheese steaks, smoked sausage, chicken, ribbon fries, funnel cakes, corn dogs, and caramel or candy apples. A tree tour throughout the Valley will feature trees decorated the old-fashioned way. Hayrides, horse-drawn wagon rides, and carolers will liven up the day’s activities. A stop at the manger scene at Wears Valley United Methodist Church will give visitors time to reflect on the reason we celebrate this wonderful season. Wears Valley (population 7,486) is situated in a valley known as Wear Cove, which is nestled beside Great Smoky Mountains National Park. In winter, cars travel between Townsend and Pigeon Forge on Wears Valley Road. Not everyone stops, but those who do discover the part of the Smoky Mountains they have been hoping to find.

Special events are spread throughout four weekends: November 29-30, December 13-14, December 20-21, and December 27-28. The first weekend is the tree lighting ceremony on November 29. On November 30, professional storytellers will tell you stories that will make your jaws drop. Throughout the four-week event, you can enjoy a tree tour, hayrides, horsedrawn wagon rides, and shopping for a live Christmas tree – all available daily. Storytelling events will be held on Saturday afternoons. Wears Valley consists of unique shops, mom and pop restaurants, art galleries, overnight cabin rentals, bed and breakfast inns, a ranch, and several churches, including Headricks Chapel, listed on the National Registry of Historic Places. Wears Valley turns back the clock. Arriving during the winter season is like entering a Christmas card. Although it is a short drive to nearby busy towns, Wears Valley on a wintry night seems a long way from anywhere. With the often snow-peaked Smoky Mountains as a backdrop, the Valley beckons you to retreat for a while into the serenity of one of America’s most beautiful valleys. Upping the Energy Recent years have seen a huge

increase in foods and drinks designed to increase energy. Among the most popular today are the high-energy drinks that promise to give you a shot of energy and make you perform tasks better. Although there may be multiple ingredients, the two most common for this desired effect are simple sugars and caffeine. These two ingredients can have harmful effects when used on a regular basis. There’s a better way to produce energy and focus. Energy in the body is produced in the same manner as fire. It requires fuel and oxygen. If you’re lacking energy, it’s likely because one of these elements is deficient, at least for the moment. Of course eating simple sugar can give you a quick pickup as it raises the glucose level in the blood abruptly, satisfying the need for fuel. However, the body will make sure this level doesn’t get too high by secreting insulin to remove sugar from the blood. A drop in energy often follows within a short period of time. One way caffeine provides energy is by increasing the amount of neurotransmitters in the body. This results in vasoconstriction, the narrowing of blood vessels. Besides affecting the nervous system, this also allows the heart to pump oxygen more quickly to the muscles, thus increasing our energy. However, this mechanism isn’t meant to be used on an ongoing basis. It’s part of the “fight or flight” mechanism for emergency situations, as when fear causes our adrenal glands to dump these neurotransmitters into the body. Occurrences of this have been known to give people super human strength in times of crisis, but when used on a daily basis, it can lead to high blood pressure and stroke. Studies by Cameron, Field, and Lunt have indicated between a 22-30% decrease in cerebral blood flow correlated with regular caffeine use. Since the receptors in the brain develop a tolerance for caffeine, over time it takes more and more caffeine to have the same effect. Thus the longer you use caffeine, the more difficult it becomes to stop. A better way to have a steady, level supply of blood sugar is to consume whole grains at every meal. Brown rice, barley, whole wheat, whole oats, millet, and rye all provide complex carbohydrates that are slowly broken down as they enter the

bloodstream; therefore, there’s no peak and valley of blood sugar level, just a steady, enduring fuel supply. They also have the added advantage of providing fiber, which is beneficial for colon health. It’s important that whole grains be consumed at every meal so the energy level doesn’t dip. If it does, those doughnuts will be irresistible. Evidence recently acknowledged by the FDA has shown that eating whole grains is a protector against Type 2 diabetes, so there’s more than one advantage. More oxygen is the second component of higher energy. Rather than accomplishing this with caffeine by constricting your blood vessels, try increasing the mineral content. Supplements are one way to increase minerals in the bloodstream. One popular TV commercial of the past called the condition “iron poor blood.” These products can be effective because oxygen is carried in the blood by iron, but it’s also depleted by the lack of other minerals such as calcium and magnesium. You may not be so deficient in minerals to be considered anemic, but it could still affect your energy levels. The most mineral dense foods are those in the category of sea vegetables. Nori (used as a wrap in sushi), kelp, and kombu are just a few of the variety of super foods that can provide us with the minerals that will carry abundant amounts of oxygen to our cells without constricting our blood vessels. Leafy greens are also an excellent source of minerals, and among fruits, raisins are an excellent choice. So the next time you feel your energy sinking and you reach for one of those high-energy drinks, consider the long-term effects. Instead, start the day with whole oats and raisins, include a generous serving of brown rice for lunch, and enjoy a barley stew for dinner. Then watch your energy soar. Nori Rollups › 2 cups cooked brown rice › 2 marinated portabella mushrooms, sliced › Sunflower or alfalfa sprouts › 1 sliced avocado › 1/2 cup medium spicy kimchi or homemade pickles › 4 sheets toasted nori Prepare brown rice: 1 and 1/2 cup water to 1 cup brown rice. Bring to a boil and add a pinch of sea salt. Cover and simmer for 50 min. Let cool. Prepare marinated mushrooms: 2 large portabella mushrooms, sliced. Add 2 Tbsp toasted sesame seed oil to skillet with 1 clove diced garlic. Sauté for 3 min. Add 3 Tbsp mirin or cooking sherry with 2 Tbsp shoyu soy sauce. Cover and simmer for 5 min. Set aside to cool. Prepare homemade pickles: Slice vegetables such as cauliflower, onion, or turnips and place in a bowl. To 1 cup sliced vegetables, add 1/4 cup water and 4 Tbsp ume vinegar and let sit 2 hours before using. Using kimchi in this dish is also excellent. Prepare nori rollups: Break each sheet of nori in half. Fold again to make quarter size pieces. Add 2 Tbsp brown rice to the center of each piece and flatten with a fork. Add a slice of avocado, 1 slice marinated mushroom, 1 Tbsp kimchi or homemade pickles, and a few sprouts. Roll up by folding up the sides.

Barley Stew › 6 cups water › 1 cup barley › 3 Tbsp olive oil › 1 bay leaf › 1 cup red lentils › 1 butternut squash, seeds removed, peeled, and cubed. › 1 Tbsp coriander › 1 onion › 1 carrot, sliced › 1 rutabaga cubed into 2-inch pieces › 2 cups chopped cilantro › 1 cup sliced scallions › 3 tsp sea salt or to taste To pot add all ingredients except salt, cilantro, and scallions. Cover and simmer 50 min. Remove bay leaf. Add sea salt and simmer 10 min more. Add cilantro and scallions. Serve warm with cornbread.

Baby Boomers in Denial About Their Hearing Loss “Honey, I can’t hear you” were the

hardest words Jim Cudo ever had to speak. He had known for years about his hearing loss, but when he told his granddaughter he couldn’t hear her, it was time to take action. Jim isn’t alone. A new study from Applied Research shows older Americans are in denial about their hearing loss and the associated social costs. What the study found may surprise you – 72% of older Americans say their hearing is average or better. Not so, say their children, most of whom encouraged their parents get their hearing tested. Joe Simpson “I should’ve taken care of this years ago,” said Jim. His wife, Linda, added, “His hearing wasn’t what it should’ve been. He always found an excuse, like he wasn’t paying attention or was in a

different room.” With the impact of hearing loss so high, why do people avoid the solution? Cost is a factor, but so is pride. Many fear a hearing aid will look awkward or will make them look old. Fortunately, advances in hearing technology are making it easier to address hearing loss in a cost-effective, unobtrusive way. Technology has come a long way. Jim thought hearing devices would make him look weak or would be uncomfortable. Now he has to remind himself to remove them before he takes a shower or goes to bed. “When Jim got his hearing aids, he started hearing things he hadn’t heard for years,” said Linda. “He could hear the wheels on the shopping cart or the birds on our walks.” Jim was thrilled. “I don’t care if you have six grandchildren or just one, they’re wonderful,” he said. “Hearing my granddaughter say ‘papa, you can hear me again’ was worth the world to me.” Hearing loss affects people in a variety of ways. Over time, hearing loss can lead

to anxiety, depression, and loneliness. Untreated, it can turn a physical condition into a psychological one. That’s why it’s so important to seek a solution. Hooray for Small Businesses! e often hear

that small businesses are the engines of job creation in the United States. Their value and the role they play in our economy are sometimes underestimated because they are, in fact, small. But the truth is there’s nothing small about the impact they have on our economy. According to Entrepreneur Magazine, there are between 25 and 27 million small businesses in the U.S. that account for 60 to 80% of all U.S. jobs. So while the landscape of most major cities are defined by the massive corporate offices, stores, and headquarters of Fortune 500 companies (and they tend to get the most attention on Wall Street), it really is the small businesses sprinkled throughout our local “Main Streets” that are playing instrumental roles in our economy. Small businesses employ nearly 68

million people, while Fortune 500 companies employ about 26 million workers. Small businesses have been a driving force behind new job creation, too, generating between 60 to 80% of all new jobs in the U.S. annually during the past decade. Small business owners represent a very diverse group of people from all educational, religious, and ethnic backgrounds and are represented by all age groups. Being your own boss has been an American dream for generations, and that sentiment continues today. According to a recent Gallup poll, a majority of Americans reported that they would prefer to be their own boss, and each year roughly 7% of these “risk takers” take the steps to start their own business. I’m not sure what my favorite season of the

year is. I guess every season we’re about to enter is my favorite. As I write this, brilliant fall foliage and their spectacular palette of colors are descending upon us. There are points and angles everywhere on cardigans… draping, flowing, and falling into soft layers. Ruffles are plentiful, both on pullovers and cardigans, so stop worrying as the temperatures drop about what to wear… we’re heading into the sexiest season of all! Push that wimpy little lightweight sweater to the back of your closet this season and move the newest silhouette, the oversized cardigan, to the front! Choose any length from just below the hipline to just above the knee; it’s the perfect option for cooler days. Pair it with skinny jeans or jeggings tucked into tall boots and

you’re right on target! Because the cardigan is such a bold shape, you can easily carry off stronger pieces of jewelry with this statement… a necklace, layers of chains, and big cuff bracelets are just the right touch! Turtlenecks, also, are very strong again and can be quite stylish when accessorized with the perfect piece of jewelry. Remember, they’re perfect worn alone… perhaps belted or as a cozy layering piece for the cooler days; you’ll see ribbed and flat weaves, many of which are scrunched at the neckline. Bold colors add just the perfect punch. Try hot pink with charcoal, yellow with black, or bright red with winter white basics. So, it’s out with the old and in with the new. Random Acts of Flowers Knoxville Names New Executive Director As the Knoxville-based char-

ity Random Acts of Flowers (RAF) expands around the country, the original branch in Knoxville, Tennessee, continues to serve as the flagship example of how RAF’s mission can positively impact its surrounding communities. With branches opening in Pinellas County, Florida, and Greeneville, Tennessee, in the coming months, Random Acts of Flowers Knoxville is also experiencing its own changes. As many know, founder, Larsen Jay, transitioned from the Executive Director to the CEO of the organization in July to focus on spreading the uplifting mission of Random Acts of Flowers to a national audience. With that exciting news, an individual was needed to build on the success of the organization and to open a new chapter of joy and happiness to those in the Knoxville community. That new chapter in the history of Random Acts of Flowers

UT Gardens Plant of the Month:

Pineapple Sage Salvia Elegans ‘Golden Delicious’ Pinch and sniff the leaf on any pineapple sage and you will understand why it has long been a beloved member of herb gardens. The sweet, slightly tropical scent is a good clue to its culinary uses. Commonly used to add fragrant dimensions to teas or fruit salads, you may also wish to add it to jams or jellies or even to flavor pound cakes or shortbread cookies. This tropical essence was the plant’s best quality, since it is otherwise a rather dull member of the landscape for most of the season. Enter ‘Golden Delicious’, a form with bright lemony foliage, discovered in Illinois in 2001. This gorgeous plant rivals coleus for landscape appeal. Plant it in well-drained soil, in full sun, or where it may get a bit of afternoon shade. Too much shade will dull the golden color. As the weather cools in mid to late fall, the brilliant red flowers spring from the terminals, proving irresistible to hummingbirds and butterflies. The plant will mature at two

to three feet tall and wide. This salvia is native to Mexico and Guatemala, found in naturalized colonies at high elevations. Where it is winter hardy, it can become a woody sub-shrub. Generally considered to be a zone 8 plant, pineapple sage cannot be considered perennial throughout Tennessee, but is occasionally reported surviving our milder winters. To enhance your chances of it returning, mulch it deeply, but with a light fluffy covering of leaves or straw. A heavier mulch may keep its crown too wet for survival. Should it not return, this rewarding, easily grown plant is well worth replacing. At the UT Gardens in Jackson, a lovely mass planting can be found in the large berm just south of the turf wheel. Education Center in Jackson. The UT Gardens includes plant collections located in Knoxville, Jackson, and Crossville. Against All Odds With the Thanksgiving season upon us, my wife Christina and I wanted to do something different for this month’s article. Bear with me while I give you a little background during the last five years. I was working as a restaurant manager, and my wife was home raising our three children. I had worked every holiday and most weekends for years, while Christina and the kids did outings alone for the most part. We were both ready for a change. When we started this company in fall

2008, we were hopeful despite a dismal economic climate. We knew that this business was our calling, so we took our life savings, leveraged all we had, and plunged into a new career. The first few months were challenging to say the least. When you start a new

business, obviously you need new clients, and we were waiting for our phone to ring. Days went by without a single call. With our savings drained and very little business, we wondered if we were going to make it. More than once we considered putting the new business on a backburner, but we never lost faith that eventually it would support itself. We considered taking on borders, downsizing, and taking second jobs. But miraculously, slowly, the phone started ringing. One of our first clients was a pizzeria. They were also feeling the brunt of the recession and asked if they could pay in part with pizza credit. So we ate pizza for the entire next week (lunch and dinner!) and were thankful for it. Most of our friends and family were truly concerned for us but remained supportive. Some of them babysat so Christina could accompany me on midnight cleanings. Another friend invited us to brunch many Sunday afternoons after seeing the unfortunate contents of our refrigerator. We even received a gift card to a local grocery store that literally put food on our table for two weeks. We laugh as we look back now, but it was a truly humbling experience.

After scrambling to make ends meet, many of the prospects we had been talking to for months started calling all at once. We went from virtually “no business” to working 12-hour days, five days a week in the span of a month. that stores have been getting ready for Christmas since June, but I still feel as if fall and its mean cousin, winter, have snuck up on me. Where does time go as we get older? I know that this is the time of year when landscaping work slows to a halt in most households, but there are still some things that can and should be done. ›› Take a walk while it’s still nice outside. November has some wonderful weather, and you should take advantage of at least one day and look around in your yard. You may decide on some things to put on your Christmas list! A tree? A fountain? A bench? ›› Look closely at your plants, and see if there are insects and/or fungal problems. You won’t need to treat them now, but you need to be aware of them so you can get a jump start on treatment next spring. ›› If you lost some plants this year, you can continue to replace or install trees

and shrubs right up until the ground freezes. Planting now gives the tree or shrub a head start on root development. ›› You can still plant pansies and violas. The “Cool Wave” pansies are trailers that look very pretty in containers and sprawling across the ground. ›› Keep containers looking fresh by switching out plants as they fade. You can also switch from plants to greenery for the holidays. Don’t be afraid to use things like birdbaths, broken pots, shoes, or kitchenware as planters. If you need some suggestions, stop by and see us. If you don’t want to keep your containers out through the winter, dump the old dirt into your flower beds to add nutrients. ›› Keep pulling or spraying weeds. You’ll need to read the directions on your herbicide if you’re spraying, because most are ineffective in cold weather. If you haven’t applied a pre-emergent herbicide (weed

killer) in more than 120 days, you need to apply it now. They only last for about four months. ›› Get spring flowering bulbs in the ground by the end of the month. Pick several varieties of bulbs with different bloom times to extend your color. You can also start forcing bulbs for indoor arrangements, or put bulbs in containers and plant pansies on top. ›› Those of us with perennial beds now have a bed of ugly, dead stalks. Most perennials can be cut back, but there are a few that you should leave alone. Homestead Verbena and some of the Salvias have a hollow stem that allows water to enter and freeze if they’re cut back. Don’t cut them until they start greening up in the spring. ›› It’s a good idea to mulch, especially if the rainy spring prevented you from spreading it earlier in the year. Mulch protects plants from the winter freeze/thaw cycles. Don’t apply it too thick around trunks or on top of perennials. You want to protect your plants, not suffocate them. ›› If you have a few trees and a mulching mower, run over the leaves so the clippings will help fertilize and protect your grass. ›› You should drain your lawnmower for the winter. It’s also a great time to get the blades sharpened. You should also clean and oil your hand tools so you won’t have to buy new ones next spring. ›› Seasonal birdbaths need to be drained and stored. Don’t leave clay, concrete, or ceramic birdbaths outside, because they absorb water and crack when it freezes. Plastic or metal birdbaths can stay out year round and will need to be kept clean and filled. If it gets really cold (below freezing), you can add a heater, and turn your birdbath into a little birdie spa. ›› Don’t forget to keep your bird feeders filled and clean. ›› The great holiday countdown has started. Some people have probably finished shopping! If you aren’t one of those early birds and still have things to buy, don’t forget about some of the really cool things we have. Knoxville Civil Air Patrol, Composite Squadron 1 The Civil Air Patrol might well be the best kept secret in youth programming r i g i n a lly a

group of patriots who volunteered to use their personal aircraft to patrol our coastlines against aggressors in World War II, it became an official organization on Dec 1, 1941. Initially focusing on locating German U-boats (it found 173, dropped bombs on 57, hit 10, and sank two), it has changed in its emphasis through the years to its current complement of missions as the Official Auxiliary to the United States Air Force. We are blessed to have two Squadrons of CAP in the Knoxville area providing Emergency Services (Search and Rescue, disaster relief ), Aerospace Education, and Cadet Programs. It is this last one that is such an amazing asset within our communities but has for the most part gone unnoticed. The Civil Air Patrol has an active program for youth aged 12-18. The program is sanctioned and overseen by the Air Force but does not require any commitment at all or even long-term desire to participate in aerospace careers. The components of the Cadet program include Leadership Education, 56

Physical Fitness, and Aerospace Education. Cadets have opportunities to fly and learn in CAP aircraft under the supervision and mentoring of CAP certified pilots. They learn military customs and courtesies such as marching, wear of a uniform, and respect of others. Depending on the unit they may camp, learn survival and search and rescue skills, study on flight simulators, and many other activities. CAP also provides more intensive training environments such as summer encampments and National Cadet Special Activities. Two of the members of TN-008 Squadron (The Black Knights) spent two weeks this summer in Oshkosh, WI, at the EAA Venture air show. They not only got to meet exceptional pilots, including some heroes in the aerospace field, but they worked the show! They helped marshal aircraft as they moved to and from runways and helped locate errant locator beacons, which would activate on rough landings or through other inadvertent means. While these two were gone, cadets from TN-008 and TN-148, the two Knoxville squadrons, went to the Lost Sea and spent the night doing their extreme caving crawls. Similar in many ways to a scouting or JROTC program, CAP has the added

dimension of having a real world mission. Training is based on Air Force and FEMA guidelines, resulting in real world certifications and availability (at the parents’ discretion) to participate in actual missions. Members of the Black Knights had the opportunity to help with disaster relief efforts during the Greenville, TN, tornados (earning a Presidential Disaster Relief Ribbon) as well as helping with the Red Cross efforts during a severe storm at Cades Cove. While not trying to draw youth from other excellent programs, CAP is directly synergistic with JROTC programs in high school and is open to boys and girls starting at age 12. The senior leaders are extensively background checked by the FBI and are all dedicated to helping this next generation grow up with the values inherent in the Armed Forces of our United States. Fulbright Scholar Grant Recipient Wanda Costen’s career has taken her many places – most recently to Jamaica, as she’s been awarded a Fulbright Scholar grant for the 2013-14 academic year. She’s currently living in Jamaica, researching gender inequality in the hospitality industry. “Being awarded the prestigious Fulbright is an incredible honor,” said Wanda, an associate professor of retail, hospitality, and tourism management at the University of Tennessee, Knoxville. “When I began the proposal process in August 2012, I hoped, but really couldn’t imagine, that I would develop a study that would be worthy of such a prominent award. Receiving the Fulbright will significantly enrich and enhance my academic career and provide me the opportunity to potentially impact the status of women in a key industry of this developing country. This study exemplifies the kind of research I had hoped to conduct when I completed my sociology doctoral program in 2001, and I am most grateful for this unique opportunity.” Wanda joined UTK in 2005 as an assistant professor. She earned tenure and was

promoted to associate professor in 2010. Before becoming a professor, she worked for 10 years in business management, including working as HR director for the western region of the business services segment of ARAMARK Services, Inc. “It was here that I was exposed to the hospitality industry,” she said. “In my role as HRD, I was responsible for recruiting management talent for the region. Assuring a happy holiday for the four-legged kids will help assure a peaceful time for the entire family. Here are tips to consider when leaving the family pet behind. Trial run: Tour the kennel. It should look comfortable and cozy, smell fresh, and be clean. Most of the dogs should be anxious to meet the kennel staff. Remember that the barking you may observe is because you’re a stranger in that kennel. The barking is not a constant occurrence. Observe the kennel staff. Are they friendly with the dogs? Consider a couple days of daycare if your dog has never boarded before. Don’t indulge your pet: Don’t over-

compensate with lots of extra attention prior to the kennel stay. The extra attention will make your absence more impactful on your pet when you’re gone.

Don’t take stuffed beds or Styrofoam mattresses to the kennel. Old blankets and soft rugs are best. The kennel you select should provide safe, sanitary, comfortable beds. Christmas in the City Christmas in the City is an annual celebration in Knoxville that includes two months of events, parades, ice skating, and more! The festivities begin on November 1 and continue through New Year’s Eve.

he Regal Celebration of Lights, presented by Regal Entertainment Corporation, kicks off the Christmas in the City festivities. The lighting of the 38-foot-tall Christmas Tree will take place on Friday, November 29, at 6:15 pm in Krutch Park Extension. Free activities include pictures with Santa Claus, face painting, balloon art, train rides, and marshmallow roasting. Additionally, the city is asking dozens of businesses and organizations to turn on the hundreds of brightly lit rooftop Christmas trees adorning buildings downtown and across the city at 6:15 pm. “Up on the Rooftops” began in 1995 with 11 lit trees and has grown to include more than 400 trees. After the lighting of the Christmas tree, the WDVX Holiday Ho-Ho-Hoedown will begin on Market Square at 6:30 pm. There will be performances by Freddy Smith and his Christmas Chicken, Step Above Dance School, and the Streamliners String Orchestra.

Knoxville’s Holidays On Ice, presented by Home Federal Bank, opens on Friday, November 29, at 10 am and will remain open, rain or shine, through January 5, 2014. (It will be closed Christmas day.) Make a gingerbread house with the Austin East Culinary Arts Department. Feel free to take a nightly self-guided tour through the park from November 29 through January 1.

The city will be hosting a “Window Wonderland” window decorating contest for downtown businesses to coincide with this year’s theme of “A White Christmas in Knoxville.” Downtown businesses will have decorated window displays that the public will vote on from November 29 through December 14. Voting will take place on the City of Knoxville Office of Special Event’s Facebook page. Those who are interested can view the participating businesses in a flyer that will be distributed throughout downtown. Get your second edition of the commemorative Christmas in the City ornament. This limited edition souvenir will be available at Tea & Treasures, located on Martin Mill Pike in South Knoxville. The ornaments portray Market Square and Holidays on Ice during the holiday season. Ring in the New Year on Market Square, and watch the ball drop at midnight. Celebrate the end of 2013 and the beginning of 2014. Holidays on Ice will remain open until after midnight, and the bars and restaurants downtown will be open, with some offering live music. Cades Cove TRAVEL TENNESSEE :

Cades Cove is a broad, verdant valley surrounded by mountains and is one of the most popular destinations in the Great Smokies. It offers some of the best opportunities for wildlife viewing in the park. Large numbers of white-tailed deer are frequently seen, and sightings of black bear, coyote, groundhog, turkey, raccoon, skunk, and other animals are also possible. he valley has a rich history. For hundreds of years, Cherokee Indians hunted in Cades Cove, but archeologists have found no evidence of major settlements. The first Europeans settled in the cove sometime between 1818 and 1821. By 1830, the population of the area had already swelled to 271. Cades Cove offers the widest variety of historic buildings of any area in the national park. Scattered along the loop road are three churches, a working grist mill, barns, log houses, and many other faithfully restored 18th and 19th century structures. An inexpensive self-guiding tour booklet available at the entrance to the road provides in-depth information about the buildings and the people who built and used them. An 11-mile, one-way loop road circles the cove, offering motorists the opportunity to sightsee at a leisurely pace. Allow at least two to four hours to tour Cades Cove or longer if you walk some of the area's trails. Traffic is 66

heavy during the tourist season in summer and fall and on weekends year-round. While driving the loop road, please be courteous to other visitors and use pullouts when stopping to enjoy the scenery or view wildlife. A visitor center (open daily), restrooms, and the Cable Mill historic area are located halfway around the loop road. Numerous trails originate in the cove, including the five-mile roundtrip trail to Abrams Falls and the short Cades Cove Nature Trail. Longer hikes to Thunderhead Mountain and Rocky Top (made famous by the popular song) also begin in the cove. Several designated backcountry campsites (camping by permit only) are located along trails. Only bicycle and foot traffic are allowed on the loop road until 10 am every Saturday and Wednesday morning from early May until late September. Otherwise the road is open to motor vehicles from sunrise until sunset daily, weather permitting. A campground with 159 sites is open yearround in Cades Cove. Tents and RVs up to 35 feet can be accommodated in the campground.

Historical Structures in Cades Cove

Cades Cove is an isolated valley located in the Tennessee section of the Great Smoky Mountains National Park. The valley was home to numerous settlers before the formation of the national park. Today Cades Cove, the single most popular destination for visitors to the park, attracts more than two million visitors a year because if its well-preserved homesteads, scenic mountain views, and abundant display of wildlife. The Cades Cove Historic District is listed on the National Register of Historic Places. The National Park Service currently maintains several buildings in Cades Cove that are representative of pioneer life in the 19th century Appalachia. By the time the cove was incorporated into the park, most residents lived in relatively modern frame houses rather than the log cabins that predominate among the buildings preserved in the cove. 5. The Myers Barn

Constructed in 1920. The Myers Barn is a more modern looking hay barn located along the trail to the Elijah Oliver Place.

1. The John Oliver Cabin

Constructed c. 1822-1823 by the cove's first permanent European settlers. The Olivers spent the winter of 1818-1819 in an abandoned Cherokee hut and built a crude structure the following year. The Oliver Cabin was built as a replacement for this first crude structure, which was located a few meters behind the cabin.

2. The Primitive Baptist Church

Constructed in 1887. The church was organized as the Cades Cove Baptist Church in 1827 and renamed "Primitive Baptist" after the Anti-missions Split in 1841. The Olivers and Russell Gregory are buried in its cemetery.

3. The Cades Cove Methodist Church

Constructed in 1902. Methodists were active in the cove as early as the 1820s and built their first meeting house in 1840.

Current building constructed in 19151916. The church was formed from a small faction of Cades Cove Baptists in

Built by Peter Cable in the 1840s and acquired by Dan Lawson (1827-1905) after he married Cable's daughter, Mary Jane. Lawson was the cove's wealthiest resident. The homestead includes a cabin (still called the Peter Cable cabin), a smokehouse, a chicken coop, and a hay barn.

6. The Elijah Oliver Place

Constructed in 1866. Elijah Oliver (18291905) was the son of John and Lucretia Oliver. His original farm was destroyed during the U.S. Civil War by Confederate marauders. The homestead includes a dog-trot cabin, a chicken coop, a corn crib, and a crude stable.

7. The John Cable Grist Mill

Constructed in 1868. John P. Cable (1819-1891), a nephew of Peter Cable, had to construct a series of elaborate diversions along Mill Creek and Forge Creek to get enough water power for the mill's characteristic overshot wheel.

8. The Becky Cable House

Constructed in 1879. This building, adjacent to the Cable Mill, was initially used by Leason Gregg as a general store. In 1887, he sold it to John Cable's spinster daughter, Rebecca Cable (1844-1940). A Cable family tradition says that Rebecca never forgave her father and refused to marry after her father broke off one of her childhood romances. Various buildings have been moved from elsewhere in the cove and placed near the Cable Mill, including a barn, a carriage house, a chicken coop, a molasses still, a sorghum press, and a replica of a blacksmith shop.

Constructed in 1895-1896. This cabin, located on Forge Creek Road near Chestnut Flats, was built by Matilda "Aunt Tildy" Shields and her second husband, Henry Whitehead (1851-1914). Sheilds' sons from her first marriage were prominent figures in the cove's moonshine trade.

Built in the 1880s by the descendents of Revolutionary War veteran William "Fighting Billy" Tipton. The paneling on the house was a later addition. Along with the cabin, the homestead includes a carriage house, a smokehouse, a woodshed, and the often-photographed double-cantilever barn.

Appalachian Heritage Open for Business in the Smoky Mountains

Explore the Heritage of the Smokies The Great Smoky Mountain Heritage Center offers firsthand experiences in the history of the area through an interactive and educational tour of the facility that showcases how the area has evolved from 5,000 B.C. to 1930 through Native American inhabitants to European settlers. Offering visitors a glimpse into 7,000 years of history, the Great Smoky Mountain Heritage Center demonstrates Native American and pioneer lifestyles through pottery, hunting, cosmology, medicine, music, games, and trade. The Heritage Center contains 11 historic outbuildings, two galleries featuring Native American and pioneer living, a Transportation Gallery displaying the evolution of the region’s travel, a 100-seat auditorium, and a 500-seat covered outside amphitheater offering a panoramic view of the Smoky Mountains. Headed by Colonel W.B. Townsend, for whom the town was later named, the Little River Railroad and Lumber Company brought new industry to the Townsend area and Blount County, providing new jobs and communication to the outside world. However, the railroad was stopped in 1938, after the Great Smoky Mountains National Park was developed. Yet, its legacy lives on through The Little River Railroad Museum – a non-profit organization that preserves the history of the railroad and lumber company as well as the town of Townsend. Tucked away in the foothills of the naturally majestic Smokies stands the oldest school in the state and one of Blount County’s historical treasures. Built two years before Tennessee became a state, the one-room log schoolhouse 70

is named for Sam Houston, a statesman and pioneer from East Tennessee. Visitors to the Sam Houston Schoolhouse can also see a number of reading materials from the 19th century, including books of the Iliad, which Houston used to educate himself. Tuckaleechee Caverns, which means “Peaceful Valley” in Cherokee, takes a onemile trip through the cool, damp cave. They file past formations that have been there for thousands of years. As visitors tour the quiet underground attraction, they can hear calcite dripping from the stalactites and look on in amazement at the formations jutting from the floor and ceiling of the cave.

Digital Firewalls Increasingly I’m observing a

growing number of potential new clients electing to do business exclusively by email. In fact, many of these clients do not provide a contact phone number, which is important when following up. I certainly understand the need for greater efficiency in business, particularly since this last recession. Conducting business via email and text messaging are certainly expeditious, but doing business digitally can also be problematic, creating a type of firewall that could result in your small business being viewed as just one of many generic alternatives available to your potential new client. If you offer a value proposition that successfully differentiates your business from your more generic competitors, then doing business via email and text messaging will require you to rethink your existing strategy, which has likely been based on the strength of the successful relationships you have cultivated over time.

Now, I’m not suggesting that you abandon the years of personal relationships that today still remain the foundation of your small business. Just be prepared for doing business with potential new clients who may prefer to do business “digitally,” where it’s more difficult to successfully differentiate yourself from your competitors who likely receive the same Request for Proposals that you receive. No, I don’t know where this is heading or what the future holds. Only time will tell. But I will tell you that I’m contacted by at least a half dozen or more businesses every year, requesting that we help them leverage their businesses with our existing customer base. I’m generally of the opinion that they’ve exhausted their online options, social media, etc. and are attempting to capitalize on the personal relationships we have cultivated, which are the cornerstone of our success. I don’t wish to sound pretentious. If there

were a shortcut to success, we’d be all over it. While today’s digital world has fundamentally changed nearly every aspect of our business, I simply see no alternative to the relationships to which we owe our success. Again, if you have built a small business that has successfully differentiated itself f r o m i t s p e e r s, then today’s digital communications may represent a potential firewall, but not one that can’t be overcome. The same creativity that differentiates you from the competition will help you to once again successfully differentiate yourself in our new business environment that is increasingly growing more dependent on 30-second communications.

the voice. My husband and I are working towards budgeting and financial planning, so it’s at the forefront of my mind every day. Fiscal cliffs, government shutdowns, and rising debt ceilings have dominated the news for months. While it can be impossible for the average citizen to navigate reports well enough to understand government funding, basic understanding of math can offer simple wisdom in being successful in building businesses. Debt is a crisis not only for our government, but for a majority of people. According to National Debt Assistance: » Americans carry approximately $5,800 in credit card debt from month to month. If they make only minimum payments on the debt, it would take 30 years to pay off the balance and cost an extra $15,000! » More than 40% of U.S. families spend more than they earn. » The average family has 13 credit cards or other types of payment cards. » 92% of American families spend their disposable income on debt payments. » 96% of all people will retire dependent upon the government, family, or charity.

Regardless of whether you own a business or work for one, making money means working hard. My first job was an entry position at a bank, and my take-home pay was less than $800 a month. My budget was tight, and I got paid once a month. Back then credit was not second nature; I had no choice but to live within my means. I’m thankful now for the lesson then. Our daughter recently turned 18, and she receives credit card applications in the mail weekly. How can a student with no job become a target for credit card companies? Debtors spend millions drafting marketing plans that make others want to buy things, even if they can’t afford it. The hidden fees and high interest rates are in small print; the focus is on getting what you want when you want it. Financial guru Dave Ramsey has authored books and enrolled thousands of people into Financial Peace University, teaching Biblical truths and practical advice on getting out of debt. “Act your wage,” he tells students. “We buy things we don’t need with money we don’t have to impress people we don’t like.” Millions have taken the class and are pursuing debt-free living. Being successful in business means making

the numbers add up so you can work towards being profitable. This can mean sacrifice now so you can reap rewards later. It takes time; increasing your earning capacity can take years of sacrifice and resume building. Application of smart thinking and understanding the importance of budgeting and forecasting has become easier with so many software applications that can help. Basic math includes common cents. Make sure your numbers are working for you, or they are likely to work against you. We are not likely to become President of the United States, but we are each CEOs of our own money. Passive Aggressive Mother-in-Law? How to Beat Her at Her Own Game L ast month I wrote about passive aggressive daughters-in-law and how a mother-in-law can better handle this type of in-law. This month it’s the daughters-in-law who will get some help to deal with their passive aggressive mother-in-law. Do you have a mother-in-law who says she is “fine” or who says nothing at all, but then starts in with obvious pouts, loud, heavy sighs, and those undermining “accidental” oversights? No matter what she says or doesn’t say, her actions are screaming the real truth – she’s not happy with you. This is called passive aggressive behavior, and it’s not your imagination – it’s very real! Dealing with this behavior (passive and unassuming on the surface, but nastily aggressive toward you underneath) can be incredibly difficult, draining, and frustrating. As a daughter-in-law it may not feel like it, but you really do have an advantage. I tell you this

not so you can best your in-law, but so you can feel less helpless and start to see the situation in a different light. Fortunately, I have some specific strategies for dealing with passive aggressive mothers-inlaw. After all, it takes two to play, so if you change the rules on your mother-in-law, it’s impossible for her to keep up her frustrating behavior.

Here’s how to shake things up: 1. Shift the power from her to you with

humor. When she tells you she is “fine” but then goes into drama mode, give a goodnatured chuckle or laugh in that inside-joke kind of way that tells her you know exactly what she’s doing, but you’re going to ignore the behavior. This allows you to give her a message loud and clear without outwardly challenging her. 2. Play naïve. Take her at face value. Assume that unless she says something directly, she really is fine with whatever you

said or did. After all, she can’t assume you’re a mind reader, right? When she can no longer count on her behavior to get her way, she will be forced to either admit how she feels or to sit back and do nothing about her contrary views. The more you practice these tips, the easier it will get and the faster your passive aggressive in-law relationship will turn to one of mutual respect – and, who knows, maybe even affection. Embarrassment: An Etiquette No-No This month I’m going to discuss a subject I believe we can all probably improve on – using embarrassment to try to persuade others to perform or meet our objectives. I work with teenagers, and oftentimes, when I ask them questions about their lives, they share things about school, family, and relationships. One issue they share with me a little too often, meaning it’s happening a little too often, is adults using “embarrassment” in order to get teens to do things, behave better, study harder, perform at higher levels of achievement, etc. Recently a teen shared a situation that happened in her math class. She said that her teacher called on a young lady to answer a question. When she didn’t know the answer, the teacher reportedly became frustrated and asked the student to stand up and explain why she didn’t know the answer. The teacher said she was going to write a three-page essay explaining why she didn’t know the answer and then informed her that she needed her mom’s phone number so 74

she could call and discuss this with her. She capped off the lecture with, “It looks like you need to go back to middle school.” Perhaps some of these details would be reported differently from a different witness to the event. I don’t know, because I wasn’t there myself. However, here’s what I do know. It is NEVER productive to humiliate and embarrass others when trying to inspire them to perform better. If showing good manners means that we act and speak in a way that shows value to others, then embarrassing them would be the complete opposite of that goal. Once we engage in this type of behavior, we lose the respect of those around us. Without respect, we can’t motivate others, people don’t care whether they please us or not, and we can’t inspire people to want to change. We cripple our ability to lead others to succeed when we don’t have their respect and admiration. We all have wonderful memories of teachers, youth leaders, and adult friends who truly inspired us, made us want to work harder,

study more, and achieve greater things. What was so special about them? For me, they were the teachers, leaders, and parents that I knew cared about me and wanted me to achieve, learn, and grow. They bent over backwards to help me succeed. Whether we’re teaching, parenting, or working in any position of leadership, we must ask ourselves why we’re here. Do we really care and want to help, inspire, motivate, and change? If so, remember to always use respect and kindness when speaking to others, regardless of our age or their age. If we desire to have respect and honor from others, we must give respect and honor to those around us. We’ll never receive what we’re not willing to give.
