Halloween. It’s a time when they can dress up as their favorite character and transport themselves into the world of make believe. I know I always chose to be dressed like a princess and to not be scary like my friends, who preferred to shock with blood, gore, and deformities. But it was Photo by D. Roberts Photography all in fun and, after all, we were only interested in how much candy we collected. There are though children and adults in the world who live every day with physical deformities. These individuals are ostracized from society or they suffer from low self-esteem because of their physical appearance. They are only looking to correct their flaws and regain their confidence, as well as just being looked upon as normal. Thankfully there are medical personnel who focus on helping individuals with serious physical deformities to improve the quality of their lives. Rotary Club announces the 12th annual Provision Tour de Tellico on October 7. This “Ride for Charity” raises funds to support a number of charities in Loudon and Monroe counties. On October 7, Tellico Village will be ablaze with colorful bikes and riders as participants of Provision Tour de Tellico wind their way along Tellico Village Parkway and surrounding area highways and byways. The event offers four rides from which participants can choose: 100mile Century, 100k, 50k, and easy 25k. The 100-mile century extends as far south as Athens, and the 100k extends to Madisonville. All rides begin and end at First Baptist Church of Tellico Village, located at 205 Chota Road in Loudon. The donation is $45 per rider. Both online and mail-in registration forms and waivers are available at www.tourdetellico.com. Registration is also available the day of the event. Check-in and registration for the Century and 100k is 7:00 am, warm-up at 7:45, and 8:00 am start. Check-in for the 50k and 25k rides is 8:00 am, warm-up at 8:45, and 9:00 start. Tour de Tellico was the brainchild of Pastor Charlie Barnard of First Baptist Church of Tellico Village and Tom Irmen of Rarity Bay. Prior to moving to Tellico Village, Charlie Barnard had participated in a similar ride while pastoring in South Carolina. “I saw this as an excellent way to bring the church and community together, raise needed funds for local charities, and provide a recreational opportunity,” said Barnard. “Both Judy and I are proud to have worked so closely with Charlie on launching Tour de Tellico and are grateful for both his amazing enthusiasm and inspiration,” said Irmen. The first ride was in ’06, and since that time, the event has raised approximately $120,000 for charity. This year’s ride is again sponsored by Provision Cares Proton Therapy Center of Knoxville. Other major sponsors include the Summit Medical Group, First Baptist Church of Tellico Village, and Community Church at Tellico Village. Under the auspices of Tellico Lake Rotary Club, the funds raised from this event support a number of major charities in Loudon and Monroe counties: Boys & Girls Club, Branches, Good Shepherd, Good Samaritan, Hiwassee Mobile Dental Unit, Imagination Library, and Habitat for Humanity. “Many volunteers are needed to help run Tour de Tellico,” said John Everson, Past President of the Rotary Club. “Besides our members and spouses, several people from our charities come and help with the duties of the day. Becci Twombley is sports dietitian for USC Athletics and Angels Baseball, overseeing the nutrition of 650 collegiate athletes and the 200 MLB and minor league baseball players within the Angels organization. The healthy practices she employs to keep her athletes fighting strong also apply as preventative measures for staying fit and active as we age. “It’s vital at any age to adopt good habits to live a long and healthy life,” said Twombley. “Exercise and move 30 minutes a day, and along with that, pay attention to what you put in your body.” Twombley’s prevention plan against age-related illnesses and conditions starts with a “food first” approach. Diet has a profound impact on two of the leading causes of age-related illnesses and conditions: Inflammation and being overweight. “Maintaining a healthy heart and blood vessels are two of the most important things anyone can do, along with keeping one’s weight under control,” said Twombley. Eating a healthy diet does not need to be a chore. It is all a question of smart choices. Picking the right foods not only makes a difference in health risks, but also positively affects performance throughout the day at work and at home. While the answer is not in a single food or even a handful, adding nutrient-rich foods like these Twombley 18 EVERYTHING KNOXVILLE October 2017

recommends and calls the “All Americans” of the functional food group is part of a winning game plan. Pistachios Pistachios are a multi-tasking nut that has proteins and healthy fats, as well as three types of antioxidants. Those antioxidants help to decrease blood pressure and allow for good muscle recovery. Large population studies show that people who regularly eat nuts, such as pistachios, have a substantial lower risk of dying from heart disease or suffering a heart attack. Pistachios may protect from heart disease in part by improving blood cholesterol levels. Pistachios contain relatively high levels of the amino acid L-arginine, which maintains the arteries’ flexibility and enhances healthy blood flow by boosting nitric oxide, a compound that relaxes blood vessels. They’re also good for the eyes and skin and have been found to positively promote weight maintenance. Cherry juice Twombley serves tart cherry juice to her athletes after their workouts, as its targeted antioxidants help with muscle recovery, improving recovery time. In addition, it boosts sleep quality to help prevent anxiety and stress later on in the day. Greek yogurt Plain Greek yogurt is a nutrient-packed snack that has many health benefits. High in protein, it can boost energy and muscle mass, which decreases as we age. It can also benefit digestive health if it contains

probiotics. Check the label to see if it contains live and active cultures. Beets The deep red root vegetable increases the size of blood vessels, thereby improving the flow of oxygen that can get to muscles and tissues. For anyone with high blood pressure or suffering from cardiovascular disease, this is a good food to include. Milk A good hydration beverage that has protein, vitamin D, and calcium like we often hear, milk also contains electrolytes for good muscle contraction. Salmon and grass-fed beef Both of these are high in omega-3, which is a really good healthy fat profile for overall heart health. They also decrease inflammation in the long term. Inflammation causes a lot of the diseases we fear as we age, whether it’s diabetes or cardiovascular health. Beyond these foods Twombley identifies, the noted nutritionist has more tips for healthy eating: » Look for different colors of foods at different times. Make sure they’re incorporated throughout the day. » Eat often and in a good portion size. » Shop for high quality whenever possible, and pay attention to ingredients. » Maintain balance. Make sure your plate has carbohydrate, protein, and healthy fat in the correct amounts. Add fruits and vegetables to that to get the antioxidants. » Finally, have a plan. Plan out what you’re going to eat that day and stick to it.

ROM THE DICTIONARY, the

definition of art is “something that is created with imagination and skill and is beautiful or that expresses important ideas or feelings.” That being said, how do we perceive art? From the time of cavemen, early humans had a need to express themselves and to tell their stories through paintings on cave walls. As humans evolved more and more, artistic talent became more refined. Still, humans have an instinctive need to express themselves through the many mediums that evolved with them. It is something that leaves behind a mark of that person, that says that they were there and this is what mattered to them. It tells a story of their existence.

What do we consider “art?” Some people think that only visual art (painting or photography) meets the definition of art. They also tend to believe that all other forms of art are crafts. The definition of craft is “an activity involving skill in making things by hand.” That implies that crafts include all forms of painting, quilting, carving, woodworking, woodturning, jewelry making, photography, and a variety of other skills not mentioned here. So just what is art and what is craft? I believe that art is anything that is created using your hands and is done with great personal care, vision, and expresses one’s inner feelings. It is time for all artists of all talents and skills to come together and support and encourage one another in our endeavors and to instill in the younger generations our skills and the enjoyment we experience from those skills when we create. Art is something that speaks to the very depths of our souls. When we stop creating and expressing ourselves through our art, we will be doomed to be an emotionally barren society. N O U R continuing e-Mailbag series, here are some new real-life questions and answers to share with you. Q: My husband passed away in his late 50s, and I’m eligible for his widow’s benefit. Should I take it when I turn 60 or wait? Yvonne Marsh, A: Widow’s benefits taken CFP®, CPA before your Full Retirement Age (66) are subject to earnings limits. So if you’re working, be careful of the $16,920 wage limit. If you aren’t working, one strategy is to take your widow’s benefit at age 60 and let your own benefit grow to its maximum at age 70. Then switch and take your own benefit at that time, if it’s bigger. Lots of options are available to widows. Q: My parents paid for a long-term care policy and never used it. I know I should be thinking about one for myself, but it’s hard to pay that premium never knowing if I’ll even use it. A: I hear you! But yet health costs not covered by Medicare are the biggest unknown expense we face in retirement. Consider an asset-based LTC policy, where you fund it as an investment and get a multiplied amount of your investment as tax-free LTC benefits if you do need care and a tax-free death benefit for your heirs if you don’t. It solves the “use it or lose it” problem of traditional LTC insurance. Q: I am 74 and tired of my wife and I paying an extra surcharge for Medicare because our adjusted gross income is just over the threshold requiring the extra charge. Any ideas that could help us? A: My favorite strategy for lowering AGI is using the Qualified Charitable Distribution for your IRA Required Minimum Distributions. The IRS allows you to do your charitable giving directly from your IRA in satisfaction of your RMD and not include that charitable gift in your AGI. For example, if your RMD is $25,000 and you give $5,000 directly to your charity from your IRA, you only have to include $20,000 in your income. And if you don’t otherwise have enough deductions to itemize, this is a perfect way to restore a tax deduction for your charitable giving. very once in a while, usually in the quiet of the early morning hours when I’m the only person in the house that is awake, I get a chance to ref lect on what it is that I do every day. Those moments, sitting in the stillness (in front of the fireplace…sometimes with the AC on), it dawns on me the magnitude of what I have the privilege to do as a career. Sure…you probably watch “Botched’ (as I do occasionally — it’s hysterical) and think that my job as a plastic surgeon is nothing more than a never-ending parade of Michael Jackson wannabes, Human Ken dolls, and Kardashian acolytes. If you were a f ly on the wall, though, you’d see the truth. You’d see the mother of three who wants her body back because she doesn’t feel like herself anymore after having children. You’d see the 20-something who feels insecure about a nose that is crooked or much too large for her face. You’d see the 50-something who feels like he’s 70 and wants his face and neck rejuvenated. And you’d see the scared parents of a child that was born with a birth defect, needing her skull completely reconstructed. And that is all on a random Tuesday in September. The question that I asked myself when I began a career in plastic surgery is, “What is the common thread between each of these patients?” Not the procedures, certainly. Plastic surgery is the last true “general” surgery discipline left. We operate from the head to the feet and on most body parts in between. What these patients have in common is that I am able to help improve the quality of each one of their lives. The mother

In many ways, this mirrors what happens when we give back to others. The emotional and psychological boost we feel is worth much more than what we give away, whether it is our time, our money, or our service. Plastic surgery, at its core, is about improving the quality of life for each and every patient we come in contact with. Nowhere is this better exemplified than in the field of mission surgery. In the developing world, being born with a cleft lip introduces a whole host of problems that don’t exist here in the US. The child and their family are socially ostracized. Also, children born with a cleft palate are at high risk to starve to death — without help feeding early on, many of these children are unable to get enough nutrition to grow. Without intervention of a host of medical mission organizations, most of these children would never have the chance to live a full life, if they made it to adulthood at all. From day one, my practice has been dedicated to helping fill the need for charity in our community and across the planet, both by example and by inspiring others to give back themselves. For our employees, we provide extra paid time off to participate in mission work of their choosing, as well as a small stipend to offset the cost of travel. For our patients, we created the “For You, For All” program. This program allows you to participate in global medical missions and help children who would otherwise go without the surgical treatment they need. Participation in the program is easy — by choosing to come to our practice, you automatically help without even knowing it. For every dollar you spend — on Botox, filler, skincare, lasers, and even surgery — a portion of that is donated to mission organizations that provide surgical treatment to children in developing countries. Knoxville absolutely loves Texas singer-songwriter, Ray Wylie Hubbard. Any time he performs in the area it’s pretty much always to a capacity crowd. The next most popular Hubbard related event in the area is when he releases a new CD, which he just happened to have done with “Tell the Devil I’m Gettin’ There As Fast As I Can.” It was for that album that I recently chatted with Hubbard for the second time in as many years. Already, the disc is creating lots of buzz. “Well, everybody seems to like it,” said Hubbard. “Like I say, I’m not a mainstream guy. I’m kinda that whole American/Folky Blues thing. All the responses that I got from everyone – they really seem to like it. It starts off with me re-writing Genesis – or paraphrasing Genesis, as a matter of fact – then it goes through all this stuff and ends up with me pleading my case before the court of heaven. “Like I say, I’m kinda old school when it comes to old records, you know? You put it on the first one and it’s sort of like a movie in a way. The idea of doing a single never crossed my mind, ever. I just write the songs and put them together. But to answer your question, people seem to have liked it when it’s been out there. I feel very grateful for that.” Hubbard always touches on the spiritual in a lot of his songs, but this album is pretty spiritual from the first cut to the last. I asked if there was any particular reason for this. “You get to be an old guy like me and you kinda start thinking about your mortality,” he said. “One of the ideas of it is that I hope God grades on a curve. Ha! Ha! I’m not Mother Teresa, but I’m Attila the Hun, you know, so maybe a C- will get me in kind of a cul-de-sac somewhere. But yeah, you kinda get there, but also I’m not very, extremely dogma, but I try to live on certain spiritual principles.” In describing his religious/spiritual views, Hubbard said, “Being honest. Not holding resentment. Showing courage when you need to. Caring. Having some compassion. That’s about it.” As for which cut from the disc he would point to as a calling card for the whole album, he said, “Well, it actually would be the title track, Tell the Devil I’m Gettin’ There As Fast As I Can. That’s the rock and roll fable, you know? That whole idea there’s a musician and he played the Strat and the loud stuff. Was in a cover band, doing the Clash and the

Kinks. Then he got him an old Gibson and a small amp and he began this alt Country thing and then he falls in love with a wild, tattooed woman, which, to tell you the truth, isn’t a fable, is it? It happened to me. That’s kinda the centerpiece of the album. Plus, having Eric Church and Lucinda sing on it – that’s just added frosting to the cupcake, I guess.” When asked what the crowd favorite seems to be, Hubbard said, “Oh, gosh! Well, we’re only doing about four of ‘em, and it’s just kinda new now. I think Lucifer and the Fallen Angels is pretty much root screamin’ rock and roll. That whole idea – pickin’ up Lucifer and some fallen angel and robbin’ a

liquor store and bein’ all that stuff. So I get to put my little digs in there, you know what I mean? But it does rock.” In the last interview with Hubbard, I asked him how he hoped to be remembered and what he hoped his legacy would be, to which he said, “He was a cat who preferred spirituality to religion conversion. I don’t really think about it like that. I enjoy writing any songs where I can contribute to other peoples’ lives. I’d like to see if I can bring joy to someone’s life. When I play a gig, I like to see people laugh, dance, and sing along.” How does he answer that question now? “Ditto. Ha! Ha! Same thing. No, I’m just kidding. That worked then. It works now. It’s the same thing, you know? I just really write these ol’ songs, and somewhere in there it’s seeing what I can contribute rather than just what I can get. So that’s what it comes back to me. CTOBER IS typically a lovely month. I have no idea what it will be this year. Mother Nature is in a bit of a mood, and there has been nothing typical so far. As of now she has spared us much of her wrath, and for that I am grateful. » Have you done your monthly yard walk? If not, head on out and see what’s going on. I will warn you that the insects are putting on a last burst of breeding before winter, and you will likely run into at least one spider web. (Spiders are our friends, so try to not kill them as you freak out.) Fungal leaf spots are on many trees and shrubs, and you may have had a few things pass on to the great compost bin. Take inventory and make a list of what problems need to be addressed. » Let’s talk about those fungal leaf spots. In general, you do not need to treat deciduous trees and shrubs at this point in the year. This is because leaves do not get “fixed.” The plants push diseased leaves off and grow new ones. You don’t want your plant growing new leaves now, because they do not have time to “harden

off ” and get ready for winter. What is absolutely crucial, however, is for you to remove those spotty leaves from the ground as they fall. Otherwise the spores are re-deposited into the soil and will emerge again next year to destroy your leaves. » If you have fungal problems on evergreens, it will be beneficial to treat them with a fungicide since those leaves/needles will remain on the plant. » Insecticidal use falls into the same category as the fungicides. It is generally too late to treat deciduous trees and shrubs, but evergreens may need a final dose. There are exceptions to this rule with some plants (fruit trees and roses) benefitting from a dormant oil spray later in the winter, so give us a call or stop by if you have questions. » Fall is a good time to plant larger items such as trees and shrubs. Even though many of them will go dormant in the winter, their roots are still working underground to become established. In fact, 85% of root growth occurs during the cool months! You will need to keep an eye on rainfall, however. October is usually

one of our driest months, so you will need to be prepared to water. » Let me repeat what I always say about water: Don’t trust a sprinkler for trees and shrubs! They are designed for watering grass and flowers and are NOT adequate for larger plants. You don’t know how many times I have heard the words “but I have a sprinkler system” while someone is showing me a photo of a dead plant. That is like drinking 1 tablespoon of water per day and wondering why you are dying of thirst. » I will save you the trouble of research by telling you that our average first frost is around October 23rd. I will also advise you to get hollow stemmed plants like begonias and impatiens up before then, because they turn to mush when they freeze. » If you haven’t planted pansies and/or re-done your fall containers, go ahead! There are some wonderful ideas online. As many of you know, pansies are my favorite because of their long bloom time. Frankly, don’t we all need a little color during the gloomy months of winter? They look beautiful either planted alone or with companions such as ornamental cabbage and kale, grasses, and mums (which you can leave in their plastic container and just switch out). » You may be getting a second round of harvest from your cool-season veggies. Keep harvesting so they will produce longer! » Do you need to pick up the leaves that are falling from your trees? Yes, you need to get them off your grass. What I do (well, Rodney actually does the mowing) is blow the leaves onto the grass, run over them with the mower, and then blow them back onto the beds as leaf compost. Do NOT do this if the tree had disease or insect problems! Get those leaves up and far, far away. » How is your mulch layer? If you don’t have 3” or so, add some. It will keep temperatures and moisture levels stable during the winter. I prefer the natural hardwood and pine needles. Donuts, not volcanoes! » Apply a pre-emergent to keep the weeds from taking over your yard during the winter. » Lastly, don’t forget the birds. Keep those feeders and baths clean and full, but don’t forget to take the birdbaths in for the winter unless they are metal or plastic! Tennessee Pirate Fest October 7 & 8 • 11 am – 6 pm

HIS REGIONAL daytime family-friendly costume-play event will be held at the Tennessee Medieval Faire site in Harriman (550 Fiske Road), just 30 miles west of Turkey Creek. Patrons will feel transported to the fictional town of Port Royale in the Tortugas, circa 1700-1800s. In Over My Head: Designer to the Rescue B Y A S H L E I G H S AW D O N

HIS IS NOT my first rodeo, I fig-

ured. I got this. See, I’ve renovated three kitchens in the past and designed a new one from scratch. No problem. I’d bought a little fixer upper in Knoxville with a 1985 kitchen, which was, to say the least, far from a dream kitchen. The entry foyer opened into a solid blank wall (behind which was hidden the dark, old, depressing kitchen – shut off from the rest of the house but with possibilities). It was full of dark wood cabinetry with what I began calling “Rococo meets Byzantine” style hardware. The kitchen shelving all sagged dangerously in the centers of the shelves. There was no saving any cabinetry or appliances. I’m a cook, so I wanted – no, needed – a fabulous kitchen with massive counter space, storage, and a gas cooktop. None of that existed. No counter space. No gas. And the cherry on top? My house is built on a slab, which means rerouting plumbing and electrical is that much harder. My original objective was to do this as inexpensively as possible by opening up a few walls but retaining much of the original footprint of the kitchen. I began working to lay out my new kitchen myself. Then I read the fine print. If my measurements were off by even 1/4 inch, I’d end up with $10K in cabinets sitting in my garage, which would have to be shipped back at my expense to resize. Oops. I’m a concept person, not a detail person. Maybe I need help. I was brand new to Knoxville and didn’t know anyone in the kitchen design field. I saw Shae Designs’ column in this magazine, called to book an appointment, and fell in love the minute they walked into my foreboding little house. Shae’s energy and enthusiasm coupled with her team’s insights and planning meshed with my creative juices. You might think that three strong-minded, creative people all pitching in on one project would develop friction. Far from it. We thrived on each other’s ideas and the challenges. We were off and running. Shae came back with three different designs. The first two had significant improvements over my original design. I loved them both and was mentally weigh-

ing my odds when they showed me the third design. My concept and my kitchen were about to change dramatically. Why be constrained by the existing footprint? There was so much wasted space and so much that could be done differently. Open your eyes, Ashleigh. The third layout blew my mind. Entire walls removed, the whole front of the house opened to light and air. A huge island and second countertop/bar big enough for several people to cook and prep. But could I afford it? I mean, we’re talking massive changes here. Turned out the third mindblowing design was not the most expensive. I could afford it. Did I mention that their designs were shown in 3D? As we talked and I asked for some changes, they worked their magic, and everything we discussed appeared on the screen. We worked through cabinetry options, and I got exactly what I wanted. With Shae Design’s cabinetry options, I could afford the look without cost overruns. But the process didn’t stop there. I already knew what color scheme I wanted, the old brick New York SoHo flooring I’d dreamed of, what countertop options I would search for, etc. And at every step it became a collaborative effort. They took my requests and improved on them. They referred me to contractors, granite and marble suppliers, and even an appliance store who made my dreams come true – without breaking the bank. I got visits and estimates from their recommended contractors. I could have happily worked with any of the three. Except for one thing. I fell in love again… with Paul Fritts of Ace Home Improvements. On the spot. Then I continued to fall in love with each of

his crew. They are true craftsmen and artisans, and they’d worked with Shae so often that they could complete her sentences. I won’t tell you that the renovation was flawless. Like any renovation, we had hiccups. Some big, some small. But none that could not be modified with a little creative thinking and Paul’s crew innovatively making changes on the fly to make dreams come true. We added severa l desig n elements, additional storage in two other rooms, and storage/display ideas for special pieces that added elegance and grace. These were huge changes, and still we stayed pretty close to budget. As my new kitchen evolved, I was ecstatic. It was worth eating off a card table, cooking on a baby Weber grill, and washing dishes in the bathtub for seven weeks. My kitchen is the center of my home, and every room that surrounds f lows seamlessly. It is the perfect solution, and if I do say so, a showplace. People are slack-jawed when they see the finished product. So am I. My kitchen and dining are ideal for entertaining, gathering, friends perched at the bar, on the window seat, with wine and laughter and camaraderie. Thank you Shae and everyone at Shae Designs. Every single one of you has been a delight to work with. In fact, Shae Designs is our go-to favorite. Not just for cabinetry, but furniture, accents, lighting, and advice. mountainous regions of Brazil and Paraguay, Stevia rebaudiana is a tropical perennial herb that has gained wide popularity in recent years as an alternative sweetener. Stevia contains compounds that taste sweet but have almost no calories and do not affect insulin levels the same way that simple sugars do. Though it has a long history of use in South America and many other regions, the FDA only recently approved it as a “Generally Recognized as Safe” substance here in the United States. When that designation was granted in 2008, food manufacturers were able to begin adding it to their products, and since then, it’s become more common. You can find liquid or powdered versions in the grocery store or, better yet, you can grow and preserve it yourself. Best planted in rich, well-drained soil with full sun exposure, stevia matures to about two to three feet tall and wide and 54 EVERYTHING KNOXVILLE October 2017

bitter aftertaste. A plant that was set out in late April should have a nice crop of leaves by early summer, and these can be preserved either by drying or by making a liquid extract. The glycosides that give stevia its sweet flavor are quite potent, and you will need to experiment with how much to add for your taste. At UT Gardens in Knoxville, you will find this sweet herb growing in the perennial beds in the kitchen garden. is generally pest and disease free. Though perennial in its native land, it is only hardy to about 15 degrees Fahrenheit and rarely survives Tennessee winters. It is readily propagated by semi-ripe cuttings, which can be overwintered in a sunny window indoors. You can also pick up a replacement at your local garden center each spring. Like many herbs, the flavors intensify later in the season as temperatures increase. Leaves harvested in mid-June will have a less

OR THE FIRST-TIME Alaska visitor, stepping aboard a train bound for the wilderness is the beginning of a journey filled with adventure and surprise. The trip might start like any other. The train pulls away from the downtown station, the sound of metal wheels on rails building to a steady rhythm. Secure in a comfortable seat, countryside begins to open all around. But within minutes, you realize the trip north from Anchorage toward Fairbanks is special. Around each curve, the majesty of glaciers, mountains, or Alaskan wildlife comes into view. A moose might be grazing near a stretch of braided river. The blue of a glacier peeks out from under melting midsummer snow on a mountainside. A view of Denali, North America’s tallest peak, emerges in the splendor only afforded by the routes traveled by Alaska’s trains. A traveler might then retire to a dining car, enjoy a meal of Alaska salmon served on china and linen, and contemplate all he or she has witnessed. Welcome to Alaska and a train trip like no other. The largest state’s train system has the distinction of being one of the last remaining “flagstop” train systems, where passengers can stand by the side of the track in vast wilderness and hitch a ride. But the trains that chug through Alaska offer something 58 EVERYTHING KNOXVILLE October 2017

See Alaska by Rail else unique in the country: Access to wilderness and wildlife most urban travelers only dream of seeing. Alaska is one of the few places in the country with a working railroad that hauls both passengers and freight daily. Only a third of Alaska is accessible by car; the train offers options that go beyond what a highway traveler might see. The 91-year-old system runs through Alaska from tidewater at Whittier and Seward north to Anchorage, then through the heart of Alaska to Fairbanks, the commercial hub for northern communities. Most of the tracks are surrounded by wilderness. Long stretches of the railroad parallel the rugged coastline of Southcentral Alaska, offering spectacular panoramas – all at a pace that recalls the beginning of the 20th century and the Alaska Railroad. The state’s rail system began with a $35 million appropriation from Congress to haul coal out of the Matanuska Valley north of Anchorage and open up the Interior region to development. With only the most basic tools on hand, workers completed the track in 1923, overcoming obstacles and conditions that would seem impossible even by today’s standards. It was joined together with a sledge hammer and golden spike by President Warren G. Harding on July 15, 1923, in

Nenana, then one of the state’s largest cities. Every year more than 400,000 people ride the Alaska rails, whether for a practical means of getting around parts of the state or for the sheer romance of it. Seeing Alaska from the comfort of full-service, glassdomed cars with oversized coach windows is breathtaking. The 12-hour trip north from Anchorage to Fairbanks threads through Denali National Park & Preserve and features seemingly endless views of mountains, wildlife, and rivers. Onboard guests enjoy the hospitality and amenities that originally gave train travel such a decadent reputation. Cocktails and other beverages are served throughout the day. Gourmet meals feature a hearty slow braised pot roast or a selection of fresh Alaska seafood entrees. The vast amount of scenery flashing past is almost overwhelming in scope, so the railroad provides easy-going, knowledgeable guides to narrate the trip. Travelers learn the natural history and Alaska Native culture of the region complete with anecdotes featuring the sourdough characters who left their homes to stake their fortunes here more than 100 years ago. For those who want to spend more time exploring the stops along the Alaska Railroad, a five-night itinerary works well.

The trip begins in Anchorage, Alaska’s largest city. With almost 300,000 people, Anchorage is a popular urban setting with all the advantages of a much larger town. But such stunning views and abundant wildlife surround no other city in America. The waters of Cook Inlet meet the steep foothills of the Alaska Range. Just minutes east of downtown, the pristine wilderness of the Chugach Mountains begins. Heading south from Anchorage, the train winds through the wilderness heading toward Seward. Glaciers are visible from the track, as well as spectacular marine wildlife. The train travels to Seward in Resurrection Bay, where travelers will then board a boat and take a tour of Kenai Fjords National Park. Guests will then stay the night in Seward. The next day travelers will experience the “real Alaska” and will be able to go on a sled dog ride, enjoy lunch at an Alaska roadhouse, and get a breathtaking view of Exit Glacier. After the full day of activities, guests enjoy a scenic train ride back to Anchorage where they will spend the night. The following day travelers will head north out of Anchorage, passing through the Matanuska Valley, known for scale-busting vegetables grown under the midnight sun. Continuing north, train travelers can catch what is often the highlight of their trip: The first spectacular view of 20,310-foot Denali. From each bend in the railroad, Denali shows off its different faces and angles, making it one of the most photographed mountains in the world. And if the sight of the highest peak in North America isn’t enough, the route affords views of several of the 20 highest peaks in the country. Travelers will end the day by doing a flightseeing tour of Denali and staying the night at another Alaska roadhouse in the charming town of Talkeetna. On the final day, travelers will go on a 130-mile roundtrip adventure through Denali State Park and into “Devil’s Gorge.” Closer to the ground, blue-green spruce forests, crystal rivers, and wildflower meadows roll past. All along this route there is an excellent chance of seeing wildlife, including bears, moose, Dall sheep, caribou, bald eagles, red fox, beavers, and the state bird, the ptarmigan. Conductors frequently slow the train for photo opportunities, and the tour guides are well versed in each species. After touring Denali State Park, the train returns travelers to Anchorage for a final overnight stay in the Last Frontier. Travelers looking for a shorter excursion from Anchorage should consider a trip south to Seward or Whittier. A four-hour trip from Anchorage takes passengers along the Turnagain Arm of Cook Inlet to the port city of Seward. Established in 1903 by railroad surveyors as an ocean terminal and supply center, Seward has a frontier-town atmosphere with homes and buildings dating back to the early 1900s. The Kenai Fjords National Park offers coastal cruises past tidewater glaciers, whales, nesting seabirds, fur seals, and sea otters. Visitors can explore the Alaska SeaLife Center, with glass tanks that make viewers feel like they’re under the sea. Visitors can also take a 2.5-hour trip from Anchorage to Whittier on the “Glacier Discovery” train, allowing passengers access to the many tours available in Prince William Sound and the massive tidewater glaciers the sound is known for. Daily seasonal service from Anchorage to Seward and Whittier operates from mid-May to mid-September. The Alaska Railroad offers limited winter service between Anchorage and Fairbanks. New Exhibitions Opening at the Emporium Center on October 6

Alliance is pleased to present five new exhibitions at the Emporium Center in downtown Knoxville from October 6-27. A reception will take place on Friday, October 6, from 5 to 9 pm as part of First Friday activities downtown to which the public is invited to meet the artists and view the artwork. Knoxville Shimmy Mob and the UT Electroacoustic Ensemble will perform during the reception. Most of the works are for sale and may be purchased through the close of the exhibition. Te n n e s s e e A r t i st s A s s o c i at i o n : The Fall Juried Show: 43rd Fall Art Exhibition in the Lower Gallery The Tennessee Artists Association (TAA) will feature original art by more than 20 Tennessee artists, including oils, watercolors, acrylics, pastels, photography, and mixed media. The 43rd Fall Show is juried by Connie Gaertner. TAA was founded in 1972 and is a civic organization of fine artists with 50 members. TAA encourages each individual artist to grow and develop through fellowship with other artists, educational programs, and opportunities to exhibit and sell art, and it serves the community through classes. The Arrowmont Experience in the Balcony Gallery The Arrowmont Experience will feature work by its current Artists-in-Residence, Max Adrian, Emily Culver, Elyse-Krista Mische, Paige Ward, and Xia Zhang. The Artists-in-Residence Program provides early career, self-directed artists time, space, and support to experiment and develop a

new body of work in a creative community environment. Each year five artists of different media are selected for the 11-month program, which begins mid-June and continues through late May of the following year. Participants receive exhibition opportunities, teaching experience, professional development, and a private studio. Arrowmont’s artists-in-residence will showcase contemporary, craft-based works using a range of media, including ceramics, fiber, mixed media, drawing, and installation. The exhibition will also include a small selection from Arrowmont’s permanent collection, which includes nearly 1,000 works in a variety of arts and crafts media. Made by the hands of current and past Arrowmont instructors, individuals from the settlement school’s days, and past artists-in-residence, the works represent the arts and craft school’s history, present, and future.

Synthia Clark: Anthropomorphize in the Display Case With a background in photojournalism, Synthia Clark is an award-winning photographer with a focus towards what she calls “the little things.” To Clark, these are the obscure, usually unnoticed details all around us. In this exhibition, she focuses on finding faces in our surroundings. When she isn’t completing coursework towards her MS in communication studies or working at the University of Tennessee, Clark displays her work in various outlets and enters photo competitions. From tree bark in her hometown of Rockwood, Tennessee, to faded graffiti in the alleys of Bergen, Norway, she has traveled to

parts of the world photographing the minute details for which she has a passion. Richard Jansen: Painting with Light on the North Wall

Richard Jansen Photography has been Richard Jansen’s passion since 1970 after he returned home from Vietnam. As a freelance photographer, his motivation comes from his surrounding world. Scenic and landscape photography is his main area of interest, and he enjoys the spontaneity of creative photography. After his experience in Vietnam, he realized how much he had taken for granted in his environment. “I began to look beyond the everyday routine views and became a very visual person, which thus transformed my way of seeing and understanding the world around me,” he said. Melanie Fetterolf: The Love of Nature in the Atrium The Love of Nature Painting series reflects a spiritual belief by the artist that a higher power has a hand in all that we do. The paintings are begun by hand, then given to nature (rain), and finally finished again by the artist. The paintings are a study of the juxtaposition of color and line, an experiment in the use of texture, and the abstract, uncontrolled nature of falling rain. They reflect a need by the artist to let go of control and allow the random and chaotic nature of the technique to create beauty. Local art educator and watercolor specialist, Melanie Fetterolf, has displayed at the Davis Gallerias, Smoky Mountain Arts, and the Center for Peace. 2017 Preservation Conference to Be Held on Haley Farm in Clinton

HE 2017 East Tennessee Preservation Conference w i l l b e h e l d o n Fr i d ay, October 27, in Clinton. The all-day event will take place on the Children Defense Fund’s Alex Haley Farm for the first time. Highlighting local preservation stories and strategies, this year’s conference will dig deeper into both African American history and youth engagement. A tour of the farm will be included as part of the day, and that evening will feature the 2017 East Tennessee Preservation Awards. The beautiful 157-acre farm that once belonged to Pulitzer Prize-winning author, Alex Haley, will make a perfect setting for this year’s conference. Since 1994, the Children’s Defense Fund (CDF) has owned and managed the property. Located just 23 miles north of downtown Knoxville, the CDF Haley Farm has hosted tens of thousands of leaders across age, discipline, faith, and race for robust discussion, sharing of best practices, training, and spiritual renewal. The grounds of CDF Haley Farm include a main meeting lodge, guest cottages, the Langston Hughes Library, and the RiggioLynch Chapel. The Langston Hughes Library is a private, non-circulating, 5,000-volume reference collection and reading room. Dedicated in 1999 in honor of one of America’s most important and prolific writers, the library is used by children’s advocates, spiritual leaders, educators, civil rights leaders, authors, illustrators, publishers, scholars, teachers, librarians, and students who come to Haley Farm for training, leadership development, reflection, and inspiration. The reading room is named after acclaimed poet and novelist, Dr. Maya Angelou, and renowned historian, Dr. John Hope Franklin. A sitting area is dedicated to civil rights heroine, Rosa Parks. The Riggio-Lynch Chapel was made possible by the generosity of Barnes & Noble Chairman, Leonard Riggio, and his wife, Louise Riggio. After the events of September 11, 2001, Mr. Riggio felt the need to do something to establish a place for people to find comfort and peace and to be renewed and strengthened. The chapel resembles a huge ark carrying all of the world’s children to safety. Award-winning Vietnam Veterans Memorial designer, Maya Lin, designed both

the Langston Hughes Library and the RiggioLynch Chapel. Self-Employment Beyond Virtual Reality B Y TO M I R M E N

EVERAL YEARS AGO I

attended a luncheon that featured a retired Air Force General who shared with us his decades-long military career. What I remember most about his experience was how he invested years of personal effort positioning himself for a much coveted career within the Pentagon. He went on to discuss his disillusionment with his newfound Pentagon position, where he had once hoped to be able to make a genuine and lasting contribution. He suggested that if a totally dedicated individual invested their entire career at the Pentagon, working 24/7, their contribution would likely go unnoticed. I think this general’s observations may also accurately describe how many professionals who have worked in the nation’s largest corporations must feel about their careers, a feeling that despite devoting

one’s entire energy to a cause, that very few substantive changes resulted. I believe this common sense of frustration frequently serves as a catalyst for those individuals departing the corporate world and instead pursuing careers in the world of small business. One advantage resulting from a selfemployment career, although it can also be frustrating at times, is that our responsibilities range from those of a CEO to those of building maintenance. Regardless, selfemployeds are treated to a front row seat for most every decision they make, unlike their large corporate counterparts. Leading a small business is an incredible learning experience that includes a great many moving parts, requiring that you wear a multitude of hats, including management, marketing, finance, legal, production, and a host of others. The experience can be

exhilarating for most and perhaps a bit overwhelming for others. You are afforded an opportunity to see the “big picture” rather than the limited view offered in a larger corporate environment. Small business owners typically make important decisions in far less time then would have been possible in the corporate world, allowing them to take greater advantage of opportunities in a more timely manner when the greatest upside potential for success exists. True, we don’t have many of the other perks offered by the major corporations, but self-employment offers you a front row seat to where the real action is and places you squarely on the competitive playing field – an experience that those in the corporate world can only fantasize about. Self-employment offers you a level of reality that simply doesn’t exist in today’s corporate realm.

believes students should be the sole reason for any decision made in education, and she plans to advocate for that belief as a member of the Tennessee Educator Fellowship. “I am over the moon that I have been selected for this fellowship,” said Davis, who is one of four Knox County teachers selected for the fellowship. “I am so excited to be able to represent my students and give them an active voice in educational policy and decision making.” Davis is entering her fifth year teaching social studies at West High School. She completed her professional year-long teaching internship at West while working on her master’s degree then was hired to start teaching afterwards. “I have wanted to be a teacher since the day my older sister came home from kindergarten,” she said. “I have always found building relationships, sharing knowledge, and creating a culture of community an extremely important and impactful part of our society. As I have begun teaching, the essence of community and relationships 64 EVERYTHING KNOXVILLE October 2017

have only become that much more important to me. I have learned that the more education you have, the more access you have. The relationships we build as educators are crucial in giving as many students from all backgrounds as much access to education as possible.” Davis earned both her bachelor’s and master’s degrees from the University of Tennessee, Knoxville. “The best thing about my job is the relationship building with students,” she said. “So many students need someone in their corner, someone to cheer them on. I love being their cheerleader. I love when I am teaching and that light bulb goes off for the first time or when a student who has barely spoken in class contributes to class discussion. Building relationships and seeing students grow into amazing people is the absolute best part of our job. We are so, so, so lucky to be educators.” Davis’ days are spent teaching classes, grading, lesson planning, emailing parents,

She arrives at school around 7 am and stays until 5:30 pm. “Our students are often faced with challenges and go through struggles that, as adults, we may have never experienced,” she said. “Many of my students have never had a strong, positive influence in their lives, therefore making it very difficult for them to properly advocate for themselves. The challenge comes from meeting the student where they are, finding out what motivates them, and letting them know that you are going to be their champion.” Davis looks forward to networking with other teachers around the state and representing students of all backgrounds, socioeconomic statuses, and learning abilities. “We can only keep improving if we keep striving to do so, and I think this fellowship will allow for this,” she said. “I am so excited!”

LOVE BEING a Volunteer! What a

great state we live in and what greater compliment can we be given than to be home of the volunteers. Ladies and gentlemen are always engaged in a cause that is bigger than themselves. I hope that we all sacrifice (give up something of value for something of greater value) a little time each month to help lift the burdens of others. What is our cause? What is our passion? What burdens have we made lighter this week? Ladies and gentlemen, what a privilege it is to be able to help build, protect, comfort, and restore people’s lives. Knoxville has countless organizations that are doing amazing work right here in our backyard, but they need help. All the

good intentions in the world, and even all the money in the world, cannot heal the way two hands, a sympathetic heart, and a spirit of giving can. Do our children watch us serve others regularly? Are we raising a generation that looks at the goodness of their life as a responsibility? We live in our nice homes, and we have garages and closets that are so full of stuff that we want to build bigger homes and bigger closets to fit more stuff in. But are we also showing our children by our example that because we have been given a lot, we must be generous givers? Do we want to be happier? Do we want our children to be less selfish and more compassionate? Show them what giving looks like. Find an organization that you

can give of your time, then share your experiences with your children. Find an organization where your children can volunteer as well and spend some time as a family in service. The only way to truly teach our children that people are more valuable than all things is to allow them to watch us put everything to the side to serve others. May we each live worthy to call ourselves a Volunteer and to wear our orange and white with pride.

Though your first thought might be to reach for the heaviest, richest formula you can find, it’s important to think about your skin type. If you break out easy, it might be wise to avoid a heavy cream. Generally speaking, creams are heavier than lotions, which are heavier than

gels. Dr. Doppelt stresses that the ingredients in a product are more important than the viscosity. For example, those with acne-prone skin likely want to avoid moisturizers with oil or petrolatum. » Keep showers and baths short. Even though a long, hot bath or shower might feel like a good way to warm up on a cool day, it’s not good for your skin. Dr. Doppelt frequently reminds his patients that water is not hydrating for the skin, and exposure to hot water can strip the skin of its natural, protective oils. If your skin is very dry, consider cleansing with a mild hydrating cleanser and apply a moisturizer all over your body after your shower. » Hydrate from the inside out. It’s true: You are what you eat. Make the most of the diet-skin connection by eating foods high in water content to hydrate your skin from the inside out. Think about adding fruits and veggies like celery, tomatoes, zucchini, apples, oranges, and melon to your diet. Additionally, foods high in zinc and vitamin C can support your body’s production of skin-saving collagen and elastin. If you must wash your hands frequently (more than a dozen or so times a day), consider substituting a hand-sanitizer gel or wipes for some of the soap-and-water sessions. This will limit your exposure to the moisture-zapping hot water. If your hands are still dry and chapped even after less washing and more moisturizing, consider making an appointment with Dr. Doppelt, as your chapped skin might be caused by a condition like eczema or psoriasis.
