Dear Friend, Recently, life threw several personal challenges toward me. What came as a surprise was the awareness of how this inner discord directly affected my outer world, my home. My inner and outer worlds, so intertwined, were reflecting back to me the temporary turmoil of my existence. Normally tidy to a fault, I began noticing areas of clutter and discord. So, I made of list of areas to organize. And felt overwhelmed. So instead, I committed to cleaning and organizing just one area a week while doing my regular cleaning. It feels glorious! Sometimes I tackle more than planned, but even when not, I am able to let go of the need to do more as I see progress — and the peace that comes from organized, simplified, living. I always marvel at how my inner and outer realities reflect back to each other. Like the chicken and the egg, I don't know whether a peaceful inner attitude brings an organized outer self; or, if by keeping my living space clean I create peace. All I know is that it works for me... Cleanliness of home begats cleanliness of mind and feelings of peace. And so, we offer this special issue on organized living with a focus on feng shui. I look at the chest I recently cleared and moved to another area of my dining room and I feel the expansion, the clarity and the plain ole cleanliness of stirring up the healthy energy in the room and creating space.

Community Remembrance Walk Suicide Awareness Survivor Support (SASS), the largest survivor support group in the Kansas City area, found it fitting to hold their annual Remembrance Walk on 9/11 as America remembers the tragedy. SASS, a non-profit group, was founded by Mickey and Bonnie Swade after they lost their 31-year-old son Brett to suicide in December 2004. As many as 25 survivors meet for emotional support and healing the second and fourth Tuesday of the month at Life Dynamics on the campus of Shawnee Mission Medical Center. This year will be SASS’s eighth annual Remembrance Walk to offer support to those who have lost loved ones to suicide. Last year’s walk drew more than 300 participants and is SASS’s only fundraiser. Proceeds help with suicide awareness, education, prevention and survivor support. This year’s walk will honor those who died on 9/11 as well as the survivors of that tragic event. It is for anyone who has lost someone to a traumatic death such as suicide, homicide, fire or accident. The event begins with registration at 8:00 a.m. on Sunday, September 11. The walk will start in Loose Park at 9:00 a.m. with a dove release at 10:00 a.m. Registration fee for the walk is $25.

According to www.Suicide.org, a 501(c) (3) non-profit organization and Web site, suicide claims a life every 16 minutes in the United States. The loss from suicide in Missouri and Kansas City is nearly double that of homicides. SASS’s education program is invaluable in helping to identify the signs of possible suicide. Teen depression is prevalent among teens which can lead to suicide. The National Youth Violence Prevention Resource Center found that almost one in five teens had thought about suicide at some point in their young lives. I
got a big “a-ha” the other day. I’ve long advocated eating food in season for many reasons. It’s fresher and tastier — think winter versus summer tomatoes. It’s often more nutritious than the same food grown in a hot-house or imported from a warmer climate, and usually takes less energy to produce. Food in season helps us deal better with the conditions of that season — consider watermelon on a hot summer day. Steven Gundry, MD offers a more profound reason. Humans evolved eating in season. We’ve been preserving food for only 10,000 years at most. The food of each season sends a particular message to our brain. Fruits send a strong and specific message. Humans and other great apes have a shoulder joint that allows them to reach above their heads and to pick fruits that other animals cannot reach. This allowed us to feast on fruits every summer. The sugars in the fruits were converted to fat, which allowed us to survive the winter when food was scarce. Today, fruits are available all year round. Yet, our brain was long ago programmed to equate anything that tastes sweet with summer and convert it to fat. Our brain hasn’t caught up yet, so grain products like pasta and bread, anything sweetened artificially or otherwise, fruits and even vegetables with seeds in them, which botanically are fruits, trigger the “store fat for the winter program,” as Dr. Gundry says. He goes on to say, “the obesity epidemic today is a direct result of people eating the wrong foods as if they are in perpetual summer… accumulating fat for a winter that never comes.” This realization hit Dr. Gun-

dry, an internationally recognized heart surgeon, so hard that he developed a nutritional program which has helped thousands not only lose weight, but reverse heart disease, diabetes and other chronic conditions. Dr. Gundry himself lost 70 pounds on it. His book, Dr. Gundry’s Diet Evolution: Turn Off the Genes That Are Killing You – and Your Waistline – and Drop the Weight for Good, describes the program. The final phase of Dr. Gundry’s three phase program goes beyond losing weight to promoting longevity. It’s long been known that animals who eat less live longer. It’s also thought that our pre-agricultural ancestors lived longer. Dr. Gundry proposes that we mimic our preagricultural ancestors for whom eating meat and other animal protein was not a daily event. The bulk of their diet came from plants and was generally consumed raw. We are now learning that nutrient-dense low calorie diets activate genes which slow the aging process. Dr. Gundry suggests that eating mostly leafy vegetables, with infrequent animal protein, will activate these genes and promote longevity. Dr. Gundry acknowledges that the last phase may be a stretch for many. However, those seeking to live well until they die may want to seriously consider it.

dversity has recently delivered some pretty powerful punches to individuals, families, communities and the world. Here in the Midwest, tornadoes, floods, droughts and unseasonably cold and hot weather have kept people wondering what will come next. Our neighbors in Joplin, with over one-third of their city destroyed, are teaching us how to deal with adversity. I was amazed and encouraged by the acts of great bravery and courage in the midst of such great challenges. Story after story was told of people risking their lives to save others. Then we began to hear stories of looting, scams being run on people that were so vulnerable and stories of the darker side of human nature. I ask myself, “Which one is the real human being?” And I think the answer is both. The questions for each of us as we face our own personal challenges is, “How will I respond to the strong wind of adversity? Will I be courageous or cowardly?" I am reminded of the scarecrow, the tin man and the lion, led by Dorothy on their search for wisdom from the Wizard of Oz. On the road to Oz each of them faced their worst fears and began learning what they were
seeking. Upon finding the Wizard to be not a wizard at all but a common mortal, they were not disappointed as they realized their journey had brought them to what they were seeking. As I feel overwhelmed with what life throws at me, I have to ask my own question about how I am going to deal with adversity. Suffering, pain, loss, trauma of various kinds strip us of the outer layer of superficiality, some mistaken view of the importance of material things, the past or the future and throws us into the immediacy of the "now." This is our "fertile void," the place Fritz Perls spoke of as the place of real learning. It is a place that seems empty, but is rich in the potential in each of us. Carl Jung spoke often of the need to go into the darkness to find our light; I believe this is what takes the courage. We face the darkness, calling on the help we need, remembering the skills we have to navigate the rapids of change, and we keep going on the road to our own personal Oz. I know a young man who, due to some bad decisions on several occasions, has gotten into serious trouble with the law. He is trying to face the consequences of his actions with a different perspective. It woke him up to the great resources he has inside of himself and the gift of his family and friends. My own personal experience is that I have lost seven

people so far this year — including long-time friends, a mentor and colleague and relatives. One early morning in June, I received word that my 31-year-old niece had died from a seizure. She had serious learning disabilities. She was on disability and spent her time making friends, connecting with others and, of course, being on Facebook. When I received news of her death, I remembered a time when she came to visit me in my new home with her dad. She was about seven at the time. Standing in the front hallway of the house, she exclaimed, “I think this is going to be beautiful.” I wish we could all face our adversity with that kind of simplicity and hope. Exercise for Vibrant Health Nancy Russell, M.D.
R
egardless of your own fitness past or legacy, regular exercise is an absolute necessity if you intend to live well beyond midlife. Vigorous exercise sends positive signals to your entire body that increase your level of human growth hormone naturally. Exercise tells your body to stay vigorous, vibrant, healthy and growing. Sitting on the couch and eating junk food, drinking too much caffeine and alcohol gives your body the opposite message: get old, deteriorate and go into decline. It is that simple. Start somewhere, anywhere with your movement. If you can’t see yourself doing weight training yet, commit to doing some kind of physical activity for 10 minutes a day for 30 days. Here is an example: put on some music you love and dance around your house. No kidding. No excuses. By the end of 30 days or much sooner, you’ll be looking forward to your daily dance. Just this simple exercise will wake up the inher-
ent, irresistible desire to move that lies within each of us, albeit more deeply buried in some than others! Movement is contagious. Today’s dancing around the house will eventually wake up enough of your muscles that you’ll want to do more. Your can always pick up your cat and dance around with him or her, which is weight training, after all! Start very slowly and breathe in and out through your nose to expand your lower lungs optimally. It can take a while to create flexibility in your rib cage, so don’t get discouraged if nose breathing makes you feel out of breath at first. Don’t ever push beyond what is comfortable for your breathing and heart rate. But, every day, ask your body to move a little faster or bend a little deeper. Simply moving your body begins to improve your health and metabolism. If you are starting to move your muscles, you will build muscle. The more muscle mass you have and the more
heat generated from your muscles on a regular basis, the more efficiently you’ll burn carbohydrates and body fat. When you reach a plateau in your fitness and are not losing body fat, you may need to change your exercise regimen. One way to do this is with interval training. Interval training can be beneficial for all fitness levels. It is defined as periods of high-intensity exercise with periods of rest or low-intensity exercise. Here is a basic example that can be used with walking, jogging, elliptical machine or even swimming: start with three minutes of warm up, then three minutes intervals of one minute of moderate to fast activity and then two minutes of slow-to-moderate activity. This threeminute interval, if repeated six times equals 18 minutes, when added to three minutes of warm up and cool down equals 24 minutes. Some physical fitness authorities will tell you 24 minutes of interval training is equal to 60 minutes of regular aerobic exercise. Adding interval training to your current routine can help improve cardiovascular fitness, increase speed and strength, burn more calories, and break through that stubborn plateau. Interval training is beneficial for all types of people and fitness levels. This type of training is especially beneficial for people with blood types O and B, as

these types thrive on a moderate to intense exercise level; while the blood type A and AB tend to prefer a more calming exercise program such as yoga or pilates. Even yoga or pilates could incorporate intervals of faster and slower paces of exercise. We are all unique individuals with varying fitness levels and goals. Take Care Now: Best Yoga for Healing Stress Suzette Scholtes
Y
oga sings in my blood, brain and heart the past 27 years. I hear different opinions on the best yoga poses for healing stress and anxiety. Which poses work? Which poses hurt? How long do you hold? How do you overcome resistance to slowing down? This month I talk to the experts: Judith Hansen Lasater, Rod Stryker and Donna Farhi. I taught a student at the Yoga School who resisted becoming quiet like a too-tired child refusing bedtime. Rod Stryker says in a joking way, "Take all those who walk in to practice restorative yoga and move them into active asana. Then take all those who come in for power or active class, lock the door, and invite them to rest on yoga bolsters." The ancient yogis talk of the doshas that describe your constitution. To know yourself, as Socrates said, is numero uno. Your innate dosha, according to the yogis, is dominant. Water (Vata), Fire (Pitta) or Kapha (Earth.) We have all elements within but one is dominant and they become unbalanced from stress. How do you cope with stress? For me, I rest, eat plenty of organic food and fruits and vegetables and I thrive with yoga, meditation, warm baths, and being in nature. My dominate element is pitta, followed by water. When I am out of balance, my emotions run havoc in my brain. This happens to many. We joke in the yoga world, she or he has become “Vata Deranged.” The only way to know your dosha for sure is have your pulses read by a qualified acupuncturist. You’ll know how to quiet your mind and/or break or manage the stress cycle. Vata is stimulated when the head and brain are the highest part of the body such as at your desk or standing. It’s good to lie down a lot! It’s good to align your head to your tailbone and allow the blood to flow says Donna Farhi, world yoga master. “Sometimes all we can do to cope is breathe, breathe, and breathe while aligning tail and head.” Thus anxiety is best reduced by “low head” poses as in this photo as taught by Judith Hansen Lasater, author of six books and master teacher of restorative yoga. She helped me find clarity in a recent email. She says the most important yoga pose for over-active mind, stress, worry and/or anxiety is waterfall pose. Waterfall Pose or Viparita Karini: First, this student is flexible so she can handle the stretch to the hamstrings and hips. Some beginners cannot, so lower legs go on a chair. No back pain ever in this pose. If low back is tender, no bolster. The bolster pulls towards the waist to lift and nourish the kidneys. Notice how much support we gave this student. Another bolster is behind her legs to ease tension in the hamstrings. Everything is supported: head, hands, arms, back, spine, legs, feet. No body part touches hardness-100% comfort is mandatory. By holding for 15 to 20 minutes, the body moves into para-sympathetic state as opposed to

The yoga pose creates a healing environment for the body helping to lower blood pressure, taking stress off the physical heart, slow the breath, and manufacturing feel-good neurotransmitters such as dopamine and serotonin. In these yoga poses, “apana” (which abides in the belly) is given prominence and the brain is cooled,” says Lasater, “It pacifies vata while giving you a new perspective. The yogis say Apana-Vayu is situated in the pelvis. Its energy pervades the lower abdomen. The flow of Apana-Vayu is downwards and out. Its energy nourishes the organs of digestion, reproduction and elimination. If this energy is weak from stress, we may feel weak, sluggish, anxious, depressed. When moving within with these poses, we assimilate the nourishment from our food, and the nourishment, love and support of our hearts. Our energy flows free. Last, for ever-increasing calm and confidence, I offer the student positive affirmation, meditation, and breath practice. This cuts anxiety like a knife, promising freedom from the pain of anxiety and the return to love and esteem this detailed yoga delivers.

Aireal Mobile provides a do-it-yourself platform for restaurants to quickly and cost-effectively launch a mobile app, providing on-the-go access to the restaurants' hours, menus, specials, locations, etc. "The people visiting our members (MRA) restaurants are often making the decision of where to eat outside the home while on-the-go and they are increasingly relying on their mobile phone to aid in that decision. Aireal Mobile provides a simple and cost-effective way for restaurants to have a mobile presence and take advantage of this tremendously powerful medium," said Bob Bonney, chief executive officer of the MRA. "Due to cost and complexity we felt like restaurants were being left out of a space (mobile) that has so much potential for them. Our platform has removed those barriers and is allowing restaurants to benefit from the mobile app phenomena at a fraction of the cost," said Tony Caudill, co-founder and chief executive officer of Aireal Mobile. As part of the partnership, Aireal Mobile is offering discounted pricing to MRA members allowing them to create a custom, branded app that provides access to their menus, special offers, event schedule, directions and more anytime/anywhere. In addition, Aireal Mobile provides the ability for the restaurant to keep the
content and graphics in their app up-to-date via their web-based administrative tool. "Mobile is the future. A mobile app is quickly becoming as important as a website for restaurants. This partnership with Aireal Mobile opens up the world of mobile to our members and we are excited to bring them this innovative opportunity to help drive traffic to their restaurant," said Bonney. The MRA also announced today the launch of a free iPhone app where users can search a list of close to 1,200 member restaurants throughout the state. The app, aptly named Dine Missouri, is available as a free download through the iTunes app store (http://airmo.co/dinemo), and is compatible with any iOS device (i.e. iPhone, iPad and/or iPod Touch). Key features of the app include the ability to search by restaurant name, city, area, and cuisine. Users also have the ability to view restaurant menus, make reservations, and receive directions to a restaurant of their choice. "At an economic time where our members are looking to us for additional marketing avenues to promote their businesses, working with Aireal Mobile on a mobile application was an easy decision", said Bonney. "The application is a great resource for Missouri residents, restaurant aficionados, and business travelers alike, and provides the association the ability to promote its members in a non-traditional manner". As a benefit of membership to the association, all restaurant members receive a complimentary listing on the MRA's online restaurant
locator, www.ShowMeRestaurants.com. The Dine Missouri iPhone app is a smaller version of the online site with several of the same features included. Kansas City Center for Urban Agriculture becomes “Cultivate Kansas City” Kansas City Center for Urban Agriculture, a six-year old organization that has helped “urban agriculture” become a household phrase in the metro area, is being renamed “Cultivate Kansas City.” “We’re changing our name for two reasons: first, because our previous name was too long and people could never remember the acronym!” Katherine Kelly, Executive Director and Co-Founder says. “People who knew and loved our work stumbled over our name as they introduced us. Second, we wanted a name that better expresses what we do: we have a big vision for Kansas City and we wanted our name to say that more clearly.” Why “Cultivate Kansas City?” Willoughby Design, the locally-based design firm, shepherded the organization through the renaming and rebranding process. “They do such fabulous and timely work in the commu-
nity,” Ann Willoughby, President and Chief Creative Officer says, “but their own name was a tongue twister and it was confusing because so many organizations in KC use similar acronyms.” The organization was founded with the mission of helping Kansas City grow – literally, to grow fruits, vegetables, and good food and, metaphorically, to help the city grow through farmers and neighborhoods reclaiming empty lots for food production and communities building capacity to address food needs. Since 2005, the organization has helped start more than 40 farms in the metro area. The annual budget has grown from $85,000 in the first year, to more than $600,000 in 2011. This June, Cultivate Kansas City will host its fourth biennial Urban Farms & Gardens Tour, featuring thirty eight sites that are growing food in city neighborhoods. R
ecently, when I returned from a trip, I was asked by several people, "How do you eat while traveling?” I thought I would share what I do so you, the reader, may learn a few helpful tips while on the go. Over the years, traveling fairly often while maintaining a raw food diet has been a good lesson in patience and compromise. These are my tips… I try to bring as much as I can with me. Now this can be a difficult challenge in itself because I tend to pack A LOT and therefore leave little room for anything else. It's always a bet I have with my family as to how much my suitcase weighs when I set it on the scale at the airport. This past trip, a proud 48 lbs. Whew. I always pack at least three apples, a couple of raw food bars, and a handful of nuts. This is just what I keep in my purse! In my suitcase, I usually have the following: a shaker bottle, packets of dried greens (there are a few good brands that I alternate between), plastic bags of protein powder, a milk alternative (currently it's So Delicious sugarfree vanilla milk), chia seeds for my morning pudding, and my vitamins. Now this may sound like a lot, but it doesn't take up too much space. Remember, I can't spare too much of my precious space — I need room for at least five or six pairs of shoes "just in case." Next is the plan of action when I arrive. There is almost always a Whole Foods or other great health food store wherever I am traveling. My first stop after leaving the airport is always to the store. You think after working at a health food store, I'd get my fill, but I can never stay away. I typically pick up some more fresh fruit for breakfast and afternoon snacking. Then I browse

through their salad bar and get a large fresh salad to keep in the fridge as another meal option. Different stores have different things to offer so I always walk down the isles and see what fun new products are available. Sometimes I pick up a few more food bars to try out something new. I almost always get some bottles of coconut water and kombucha. Occasionally, I will pick up some dark chocolate to have on hand in case I get a sweet tooth. It helps to snack on this when there are other tempting things around that I know I don't want to eat. However, I will say since I started my chocolate business it's hard to eat anyone else's. I’ve spoiled myself with great tasting chocolate...and in my opinion, the most healthful. By now I am pretty well stocked up on good, healthy, mostly raw options so I feel good about my choices and about getting settled in wherever I am staying. The next step is to relax and remind myself...I'm on vacation...so enjoy and indulge little.

Chia Seed Pudding *¼ cup chia seeds, soaked overnight in 1 cup water *Pinch cinnamon *1 scoop protein powder (currently I have been using Garden of Life’s Raw Protein) *1/2 cup coconut milk I place the chia seeds and water in a 16 oz. glass jar with a lid and set in refrigerator. In the morning when I am ready to eat, I add the cinnamon, protein powder and coconut milk and shake up. Enjoy! Very filling and satisfying and gives you plenty of protein, fiber, omega’s and tastes wonderful! Sometimes I add a dash of stevia powder, but just a tiny amount. n the May issue, I wrote about my commitment to exercise five days a week and to eat at least three servings of vegetables a day. In general, I’ve been honoring my commitment. I’ve even been drinking green juices at least several days a week. I have noticed changes in my body and one in particular was unexpected: I do not have as many body aches and I don’t need to see my chiropractor as often. With increased physical activity, I somewhat expected my chiropractic visits to increase. It seems my body is naturally aligning itself as I exercise. In the June issue, I wrote about my co-worker's reactions to their health assessments. I am happy to report that one co-worker has removed fried foods from his diet and has made other changes in his life that has resulted in a two pound weight loss per week. He previously made fun of me for what I eat; but, now asks me questions and shares with me when he is proud of the choices he is making. Aside from updating you, there is another purpose for my recap. Even though I had a good health assessment, and have increased my exercise and intake of greens, my body is telling me I need to change something else. Within the past week, I have had small rashes. I love the general size of my body, but I’m storing fat in weird ways; and, I

A part of me wants to keep doing what I’m doing and wants me to stay in my comfort zone where I don’t change anything. I don’t want to suffer by giving up wine or occasional desserts; but if I’m honest with myself, I’m already suffering in my energy levels, skin rashes and the way my body doesn’t look compared to how it could. I have been inspired by several people recently to pursue this path. One friend, who indulged in wine as often as I do, gave it up in order to increase her chances of becoming pregnant. She has lost weight and looks amazing! Another friend went to the Tree of Life in Arizona and was on a whole food/lots of juicing/ no-sugar cleanse for 90 days and has gone off all her medications. Patricia Moreno, has eliminated all sugar except fruit. She is also starting to lead teleseminars to support people in eliminating sugar. I saw her for the first time in six months and her physical transformation is what took me from the contemplation stage to the action/commitment stage. I am grateful for these friends who have provided me the inspiration and courage to take this step by being examples of what is possible when healthy changes are made. I’m going to commit to a massive sugar reduction for three weeks. The only sugar I plan on having is from fruit and a maximum of three glasses of wine during the time. Cool Summer Cocktails

o what could a raw vegan drink while everyone else is having a Strawberry Daiquiri or beer or other summer cocktail? Everyone wants to be able to celebrate with yummy tasting beverages, especially if surrounded by others enjoying cool looking drinks. Though some do choose to drink wine, alcohol is not actually a part of the Raw Vegan world. Here are some really great drinks that are non-alcoholic; and, if sugar is an issue, can also be made sugarfree. In a previous issues I gave the recipe for Dr. Kat’s Vacation in a Glass Island Sunrise Mojito (Eating Well Fall 2010), in this issue I suggest three drinks that you will love and your non-Raw Vegan friends will envy and ask for! This year I have become aware of a drink that has been around for a very long time and is my current favorite. Chi-ChiChi-Chia (everybody…sing along now). Remember Chia Pets? Well, those fun little seeds that after adding water became the scalp of a whole set of green Chia hair for some terracotta critter are actually very nutritious and fun to eat as well. Huh!!?! Dr. Kat you always come up with such really weird stuff. What are you talking about now?! So, okay, some things are a bit weird, but it is only because our “modern” mind has made it that way. Though most of us became aware of chia seeds because some entrepreneur made us believe we weren’t cool without a Chia Pet, chia seeds have actually been around for centuries. And, (gasp) they were eaten! Especially in the Mayan and Aztec cultures, runners would eat these seeds because of the sustaining protein punch that would get them through long runs between villages. In more modern times there is growing empirical data of the benefits of chia seeds in the diets of those people with diabetic conditions. PLUS, they are fun to drink, sorta like a bubble-tea you can make at home. Chia Fresca is an ancient drink that I make into a modern day sugar-free drink by adding stevia instead of sugar. Next on the list is Watermelon-Mint Cooler. Juice a small watermelon (rind and all), add a large handful of mint, juice of 2 lemons, and serve with some sparkling water in a beautiful glass. Third is a Frozen Strawberry Daiquiri which, sans alcohol, becomes a delicious drink that everyone, including the children, can enjoy. Hope you enjoy these recipes and will feel the aliveness and health of these drinks for a Raw Vegan Celebration of Life this Summer. Yum! Who says being a Raw Vegan is not tasty?!! And, go ahead…tell me you can get that Chi-chi-chi-chia song out of your mind! Ha!

H
ave you every wondered about the saying, “cool as a cucumber?" Well, it's true the cucumber is very cooling. It's probably because they are 95 percent water and the rest is filled with electrolytes, vitamins and minerals. It is a very good source of potassium, which is a heart friendly electrolyte that helps reduce blood pressure. Cucumbers also contain unique anti-oxidants in good ratios such as ß-carotene and A-carotene, vitamin C, vitamin A, zeaxanthin and lutein. These compounds help act as protective scavengers against oxygen-derived free radicals and reactive oxygen species that play a role in aging and various disease processes. Cucumbers have a mild diuretic property probably due to their high water content, which helps in checking weight gain and high blood pressure. Cucumbers surprisingly have a high amount of vitamin K, which has been found to have a potential role in bone strength by promoting osteotrophic (bone mass building) activity. It also has an established role in the treatment of Alzheimer's disease patients by limiting neuronal damage in their brain. The cucumber is one of the oldest cultivated vegetables, and is believed to have originated in the northern plains of India. The plant is a creeper, just like other members of the same family such as gourds, melons, squash and zucchini, etc. Eating, drinking and using cucumber topically are good for your skin. Slices of cucumber placed on the eyes are a common remedy for puffiness and wrinkles. The water that comes out of the cucumber can be used as a moisturizer and is often added to many beauty products. I have also heard that it's great to mix with aloe vera gel to soothe sunburn. Other than enjoying cucumbers plain and adding them to your salads, here are a few recipes that I know you will enjoy...
1/2 cup water 1/2 Tbs lemon juice 1/2 tsp crushed garlic (1 clove) 1/4 tsp sea salt and a pinch of white pepper 1/2 ripe avocado, chopped 1 Tbs extra virgin olive oil 1 Tbs minced fresh herbs, or 1 tsp dried (I use parsley) Place the lettuce, cucumber, water, lemon juice, garlic and salt in a blender and process until smooth. Add the avocado and olive oil and blend again until smooth. Add the herbs and blend briefly to mix. Serve immediately. For a chilled soup, refrigerate for 2 hours before serving. If you want a soup that isn't so smooth, I add chopped herbs, cucumbers and sometimes--even tomatoes. Photo by Jace Van Benthusen

Raw Refrigerator Dill Pickles 4 - 6 medium pickling cucumbers (I used English seedless cukes.) Slice thinly and add to a glass container. (I used a mandoline (with a wavy blade) to slice.) Layer the slices, lightly sprinkling good whole sea salt on each layer Let sit for a couple of hours, then drain the water that is collected. Place cucumber slices into a quart jar. Add: 1/4 cup diced onion 1/4 cup apple cider vinegar 1/2 tsp. brown mustard seed 1 Tbs. dill Pinch of dill seed
Then fill the rest of the jar with water. Let set overnight for best flavor. Since the cucumbers are raw, you will need to eat them within a week or so. Enjoy! If you want a bread and butter pickle add some sweetener like honey, agave, coconut sugar or sweetener of your choice to taste. Add a little turmeric powder and omit the dill and dill seed. Both are really good! Eat them as a snack, in a salad or on your favorite sandwich.

L
iving or “raw” foods are those that have not been heated above 118 degrees Fahrenheit. This is the commonly agreed-upon temperature when plant-based ingredients begin to break down and lose essential vitamin and mineral content, as well as enzymes. Pure and simple, raw foods are natural foods in their natural state. In addition to the breakdown of enzymes and nutrients, many modern-day cooking methods actually create by-products during the heating process that have been found to be toxic.
How was this food prepared? The golden rule in choosing good, nourishing food is finding items that are local, fresh, organic (without pesticides), and grown from a healthy vital plant of some sort. In general, this includes all fruits and vegetables in their natural state, nuts and seeds, grains, herbs and spices, superfoods, and products minimally processed from any of the above-listed items. These are all whole foods. A nice raw nut, for example, makes a fantastic raw butter. But if you roast the nuts, then add iodized salt and some preservatives, you’ve just created a product that could very well be hazardous to your health. The average jar of peanut butter contains unhealthy levels of saturated fats and iodine, along with bleached white salts that are toxic in the bloodstream.
Raw foods are primarily plant based. Fruits, vegetables, nuts, seeds, and sprouted grains are the basis of this culinary lifestyle. In addition, living-foods enthusiasts oftentimes make use of high-grade minerals and other superfoods as a way of restoring balance. Juicing is an effective alternative-health remedy and is currently being used in several cancer-treatment centers worldwide, with incredible life-enhancing results. A high-nutrient-density diet goes a long way toward maintaining overall health, and living foods are at the top of the scale in terms of nutrient density and purity. Living foods are not a new idea; in fact, many would counter that this is the oldest notion of how to eat. The Bible contains several references to living-food preparations; early texts discuss the heating of plant-based ingredients and “cooking” using the energy of the sun. In many ancient cultures where longevity of life was enjoyed, there was also a focus on fresh, living foods. This style of eating can help you reach and maintain your health goals, for three main reasons: 1. The living-foods lifestyle encourages a very lowtoxin diet, with a focus on the function of every food and how it is helping you achieve health. With living foods, there are simply no fillers, preservatives, or unneeded additives that do not benefit your body in some way. As a result, the living-foods diet is largely alkaline forming. Disease cannot live in an alkaline environment; it must have a toxic acidic one to thrive. Picture the pH test strips from your high-school chemistry class. On the pH scale, 14 is totally alkaline, 7 is neutral, and 0–6 is acidic. The body should be anywhere from neutral to moderately alkaline to prevent disease. 2. Raw foods constitute a plant-based diet, which has been proven to maintain strong vital organs and bodily function. Overall health has been shown to drastically improve in direct relationship to how much plant-based eating you’re doing. From providing essential proteins, amino acids, minerals, and vitamins to detoxifying the body where necessary, this eating style serves to keep you in balance. 3. Living foods have the power to heal the body by reintroducing essential vitamins and minerals, as well as enzymes—the catalysts that break down food into a usable state. With a diet rich in enzymes, your body isn’t overwhelmed with the breaking-down process (called assimilation) and has time then to go about the business of maintaining a vital system and promoting health.
Really, what you have to consider when making choices at the grocery store are the following questions: 1. What is the food product itself? It should be fresh, organic wherever possible, and a whole food from a plant source. Tomatoes and avocados are perfect examples of fresh, whole foods.
Whether you’re looking to move into a more energetic space, restore overall wellness, achieve a vibrant lifestyle, or find alternatives to processed foods and their associated health conditions (ulcers, indigestion, headaches, chronic fatigue, and depression have all been linked to diet), living foods could prove to be a very viable option for you . . . and even serve to heal you completely. Trying the living-foods lifestyle, even if for only one day or one meal a week, will start to give you an idea of what is possible. Keep in mind that this is not an all-ornothing proposition. Choosing to add even one more component of living nutrition to your daily eating plan will begin the process. The best choice you can make for the health of your body and mind is to take control of your diet one bite at a time. Go back to the basics of health, and add in more of the good stuff. What Is the Good Stuff? No matter what your current diet, it’s easier to add something new—more of the good stuff—instead of being focused on what to take away. Deciding which items are right for your body or are important for nutrition can be a challenge. Here is a list of questions to consider when evaluating whether a food selection really constitutes the “good stuff”: Where did this food come from? Can it grow from a tree? (Picture a tree full of cheese puffs or Oreo cookies and you’re on the right track.)
2. How has it been treated? If it has been cooked, there could now be many toxins entering into the picture. To make a cooked product shelf stable, a preservative of some sort typically must be added. Preservatives act the same way in the body as they do in the food itself and can be easily stored for years, blocking your absorption of important nutrients, until released during a cleansing process. So although a tomato is a good choice, tomato sauce in a can is probably not. The can contains harmful metals, and the contents have been processed and may include up to 14 different unnatural ingredients just to increase shelf life. Look into the ingredients list, and also the processing. If it’s not very “vibrant,” then it does not equate to vibrant health for you! 3. Where does it come from? Processed crackers, for example, come from a box with a side label that lists 10 to 20 ingredients you may have never heard of before (enriched flours, dioxides, and so on). Bags of potato chips line the shelves, and while it is very tempting to reason that a potato once came from the earth and is therefore “natural,” don’t take the bait. You know that fried oils are not natural; that ground potato flakes, which are the starter for many brands of commercial chips, are treated with chemicals to alter how they look; and that preserving agents are anything but wholesome. 4. What are its health benefits? Food should taste great, but it should also be functional. Ask yourself what you’re getting out of every bite. Food is fuel; you want top-notch ingredients for top-notch performance. There are plenty of complicated things in this world and food should definitely not be one of those. I believe the best diet is real, whole foods and I’m fairly certain that anyone on the planet can cook a tasty meal. Avocado Sunflower-Seed Collard Wrap Makes 2 wraps Avocado-Dijon Spread: 1 small avocado, mashed (adjust ingredients acordingly for larger avocado) 1 ½ tsp. Dijon mustard ¼ tsp. cumin ¼ tsp lemon juice Dash of cayenne pepper (optional) Salt and pepper to taste Filling: ½ cup raw sunflower seeds ½ cup cooked rice or chicken ½ cup diced tomatoes, deseeded ¼ cup shredded cheese 2 Tbsp. shredded radish Extra dash of salt and cumin

Wrap: 2 collard leaves (dipped in boiling water for 60 seconds) Blanch your large collard leaves in boiling water for 60 seconds as this will make the texture perfect for a wrap. Dry it off with paper towel. Mash all spread ingredients and stir together to form a paste. Split all ingredients evenly into two wraps. Add dressing first and then remaining ingredients. Wrap up like a burrito and enjoy!

Serves 2-4 4 Tbsp butter or Olive oil 2 1/2 cups turnips, chopped small 2 1/2 cups cabbage, chopped small 2 cups loosely packed greens, coarsely chopped (bok choy, turnip greens, swiss chard, etc) 1 tsp each of onion powder, Jamaican jerk seasoning, garlic powder 1/2 tsp turmeric 1/8 tsp cayenne pepper (optional) Salt and pepper to taste Heat wok or large skillet to medium heat. Add butter or olive oil and turnips. Stir until turnips are coated in oil. Add all spices and stir to coat turnips. Stir frequently for about 3-4 minutes as turnips soften. Finally add cabbage and greens and stir for an additional 3 minutes to soften. Serve alone or on top of a whole grain such as rice, barley, or quinoa. *For a simple afternoon snack, thinly slice turnips and radishes to dip in peanut butter or my Avocado-Dijon spread.

Creating our Inner Sacred Space The Ascension Attitudes By Almine
S
tates of praise have been employed for eons by those made holy by association. As an ascension attitude, it needs to be tempered by experience. It is not enough to withdraw from life to spend our days singing songs of praise to God. We are here first and foremost to explore the unknown and any attempt at escaping what we have undertaken to do, carries with it a penalty. To shirk our duty and highest calling in favor of retreating into ecstatic states of praise yields a form of praise that is not tested and strong. That which has been sheltered is seldom robust, for it has not been honed by experience nor polished to a high luster by adversity. It is easy to feel praise in the hallowed sanctuary, but can we find the perfection hidden behind the appearances in the timeravaged faces of the beggars lining a city street? There is no redundancy in the cosmos. If there is a beggar in the street, there is also the need for him to be there. Is it the result of his consistently avoiding his next step that such painful forced change is his lot, or is it perhaps that he is solving a profound portion of the mystery of beingness that requires such a drastic mirror of that which God is not? It could be that a great master has undertaken to play this role to either shed light where there is despair or to give us the opportunity for compassionate understanding. Whatever the reason may be, there will be ample cause for praise if we change our focus from appearances to indwelling life. Praise fills the cells with light and our footsteps become a blessing to the earth. All life we touch responds with increased growth to such a life affirming frequency. Filled with praise, we also become filled with increased light and life force, and then in the twinkling of an eye, the lightning flash of immortality changes us into an Ascended Master. Gratitude If true happiness lies in being happy with what we have, rather than being

It helps us value the little joys of the moment rather than wait for the large windfalls, and in doing so we learn to appreciate life. Life consists of the small treasures like the quiet oasis of the undisturbed moment with a cup of tea that allows us to return to the inner world of contemplation. Life is the succession of the footsteps of time for us to make of them what we will. We can either turn them into the weary tread of drudgery or lighten their gait with gratitude. The cherishing warmth of a favorite quilt on a dark, rain-drenched night; the moment of feeling the coming of spring in the air; the rosy cheeked pleasure of rocking a little child to sleep, eyelids weighted by the adventures of her day—all these treasured moments through awareness become
ample reason for a heart to brim with gratitude. Not only does gratitude bless us with joy, but also with increase. One of the most concealed laws of supply is that gratitude opens the floodgates of heaven, increasing anything it focuses on. Would we wish to increase our health, our abundance, and our abilities? Then the place to begin is in grateful acknowledgement of whatever allotted portions we already have. Instead of seeing how small the supply is, let us focus in appreciation and joy on how much it means to have it. With each dollar we spend with sincere, heartfelt gratitude, many more will find their way into our pocket. Like the other ascension attitudes, gratitude is life affirming to all who come in contact with it. Indigenous peoples have always known that nature responds favorably to gratitude;

that species thrive and evolve under the grateful recognition of man. Gratitude sanctifies not only the giver, but also the recipient. The true testing of a grateful heart is found in the challenges life brings. Inclusiveness demands that gratitude, like the sun or the life giving rain, not deem one as worthy and another as not, but shed its radiance on pain and pleasure alike. It takes in-depth insight to probe behind the appearances and extract the eternal truth that God sends nothing but goodness. He sends gifts or challenges, but challenges are themselves gifts in disguise and worthy of gratitude. When this principle is applied, it soon becomes apparent that the faintest glimmer of gratitude from the heart begins to unravel the illusion concealing the gift of insight challenges hold. If we can master the ability to be grateful in all circumstances the transfiguring power of gratitude will shine forth, changing the cells of the body into spiritualized matter. ow that you’ve created your sanctuary at home, where you feel safe, comforted and nurtured, what happens when you must venture out beyond those walls? If you spend a lot of time in your car traveling for business or pleasure, or if this summer gratefully entails a vacation involving a hotel or R.V., or if your future entails life in a dorm room, what happens then to your sense of sanctuary? What steps can you take to bring a sense of safety, comfort and connection wherever you may happen to be? That’s where “Feng Shui on the Go” principles come into play. Feng Shui is all about creating harmony between you and your environment—no matter where you are. When you move away from home’s safe, supportive environment, it’s important to know exactly what small specific steps you can take to assure that you remain in harmony with your surroundings. HEALTH & SAFETY Your health and safety is job one. Whether in your car, hotel room, R.V—or even dorm room or hospital room—any time when away from home, you MUST feel safe. Hang wind chimes or a bell on the door knob inside your room or RV. Not only does it alert you when someone enters the room, but when hung with intention, it can serve to sound the space to life and disperse stagnant, negative energies. Assure that your radio, iPod or MP3 player is not playing at a level that drowns out what’s going on around you. Balance your need for entertainment with your need to remain ever vigilant about your surroundings (especially police sirens) AND, no less important, to save your ear drums. Hang a red string from your steering wheel and use Three Secrets Reinforcement (action, thought and word) to set the intention that you are "always headed in the right direction." Hang a faceted crystal from the center of your room (or placed on a stand) when away from home, to balance and harmonize disparate energies in the space. Beyond safety, Feng Shui on the Go principles are the same as those noted in the new Friskies cat food commercial; namely, “Feed Your Senses.” After safety, focus on comfort (smell, taste and touch) and connection (sight and sound). COMFORT: SMELL Utilize the powerful vibrational shift of
essential oils. More than just fragrancing, PURE essential oils (with no additives) work on a cellular level to affect the bloodstream. Choose the scent/vibration that matches your intention: Lavender, Hope, Joy, Motivation, Peace & Calming, Harmony, etc. Many single oils and blends are available and it takes just one drop on a cotton ball, tucked into an air vent in the car or room, to work wonders! Other options include room sprays or plug-in’s, cut lemons/limes/oranges, scented candles and/or incense. COMFORT: TASTE Experience the tastes of home, by making a list of your favorites and remembering to take a few with you, or buy some on the road. Being away from home can be challenging, so small treats can really lift your spirits. Invest in the finest chocolates, gourmet coffees, whatever speaks to you. Small, but mighty measures, can surely transform your day on the road. COMFORT: TOUCH Surround yourself with the textures of home. Take your favorite quilt or blanket with you, even to the hospital! And throw in your cervical pillow, lumbar support, knee wedge, body pillow, etc. CONNECTION: SIGHT Wherever you are, assure that the views surrounding you are pleasing. Bring along your favorite poster, picture or wall hanging so that you are inspired by what you see. Or post affirmations around you, using the walls as billboards. Think of these as “previews of coming attractions!” Don’t let mirrors cut your body in two. For the hotel room, bring along a large piece of fabric (48”x60” or more) to cover the mirror in the room and calm chi. Your sleep will be ever more restful and regenerative. Fresh flowers are fantastic for lifting the energy of any space. Even ONE stem can brighten your day and put a smile on your face. Flowers are well worth the effort when away from home. (Not a surprise to us that some new cars come with vases carved into the dash!) CONNECTION: SOUND Pay attention to the sounds you hear from your home away from home. Pick music to play on your radio/MP3 player that suits your intended state. Set the tone you want, when you want it. Pray. And tune in for a response. Sacred
speech such as mantras—not the same as affirmations — set a spiritual vibration. Esteemed Feng Shui Master David Daniel Kennedy writes in Feng Shui for Dummies: “Correctly used, a mantra (or prayer; also called “sacred words of power”) uses sounds or words to take you beyond the conscious mind and connect you to your spirit, where the majority of your power resides.” One mantra that’s particularly effective: The Six True Words (also called the Mantra of Compassion: Om Ma Ni Pad Me Hum). Kennedy writes: “This mantra has the power to improve luck, uplift your mind, correct negative thoughts, enhance wealth and prosperity, and help you perform better in your daily life.” What more could you ask for?

Remove the Clutter From Your Life By Rose Bringus

iving consciously is not a choice, it is a necessity! If we want to live happy and healthy lives, we must take physical action to make positive changes and progress. A healthy and ethical diet, a successful meditation practice, or a prosperous career--it is the ability to put knowledge into action that allows us to reap the benefits we desire. The practice of feng shui instructs that we must actively get our minds, bodies, and souls in harmony with our living spaces. According to author Denise Linn in Feng Shui for the Soul, our living space is a reflection of our personalities and our interactions with the world (Linn, 21). She also teaches that every item in each room should have a purpose that compliments the energy of that area. Karen Kingston, author of Clear Your Clutter With Feng Shui, believes that clutter can greatly impede energy in a space causing it to become stuck (Kingston, 5). If clutter is causing you to feel stuck, how can you progress in ways that will get you closer to your goals? What can you do to get your home to a place where it will allow you to make the changes you desire? Consider the process of shapeshifting. To do this you imagine you are an object in the room. This will allow you to unearth any hidden feelings or emotions you may have associated with the object (Linn, 3). Shapeshifting can be a powerful way to establish your true feelings about items in your home–negative, positive or otherwise. Individuals often place a strong emphasis on holding on to physical objects that are no longer needed, unaware of the detriment this can cause mentally and physically. You must recognize what brings positive energy into your life--these items should stay. You should remove those objects that impede creativity or bring negative energy into your home. This will give your mind and heart a new space to fill with whatever brings joy to your life. Allowing only the things that are good for your mind and body into your home can be challenging these days. Karen Logan, author of Clean House, Clean Planet says, “an estimated 2 to 5 million exposures to household poisons occur every year, and a significant amount of them involve household cleaners” (Logan, 9). According to Logan, dangerous chemicals are marketed to you and your family by large companies without accountability for labeling. These companies are motivated by profit and often register their products based on falsified research. You must be informed about products you purchase to ensure the manufacturer views your health as a priority. Luckily, with minimal cost and supplies we can make products ourselves
When you have purged your home of unnecessary papers you are ready to set up a system for incoming paper. that will reduce the amount of harm done to the environment as well as protect the health and safety of those we love. Try these natural recipes Karen Logan provides in her book: Use plain club soda in a spray bottle as a window cleaner. Spray some lemon juice on a stain and leave in the sun instead of using bleach. Mix vinegar, water and your favorite essential oil to make a floor cleaner that will be safe for your family. Home made cleaning supplies not only protect your health, but they also keep some money in your pocket! According to expert financial planner David Bach in Go Green, Live Rich, the average U.S. household spends $600 a year on 40 lbs. of chemical cleaning supplies. While you cannot reuse many of the bottles used for store bought cleaners because mixing chemicals is dangerous --you can reuse the bottles used for natural cleaners. So you have found a way to live harmoniously with your surroundings, help preserve your health and the environment, save money, and reduce manufacturing. Your home is simple, inviting, and free of potentially harmful substances. But something is still creeping in, making itself comfortable, and messing up your flow. What is it? Paper! Peter Walsh in It’s All Too Much, gives us some tips on how to improve your home office area. A very important step is to clear all horizontal spaces like desks, counters, tables, etc (Walsh, 141). This will help you physically and mentally take on new tasks such as bill paying, shopping lists and tax preparations. Keep in mind that piles cannot grow if they never start (Walsh, 141). To sift through existing papers, you can use a couple of bins and a good distraction such as the TV or a book on tape. Find out what you can toss by visiting www.irs.gov (Walsh, 151). When you have determined the papers that can go, put them into either the bin for shredding or the one for recycling. When each bin is full you must either take them to be recycled or get them into the shredder. When you have purged your home of unnecessary papers you are ready to set up a system for incoming paper. Aim for having three categories: recycle, shred, and papers that require action. Papers that must be filed should be purged at least once a year. Remember “80% of what goes into a filing cabinet never sees the light of day again.” (Walsh, 148) Keeping your home free of unnecessary clutter will allow you to have a free flow of creative energy. An organized home benefits your productivity, creativity and physical energy. Your health, mental clarity and relationships will all improve as a result of a beautiful and functional environment.

In addition to the environment and the directions, referred to as the space, there is also the effect a space has in time. The Chinese discovered that the quality of time changes every 180 years, every 20 years, every year, every month, day and every hour. One aspect of time presents the potential of being “locked out” of prosperity or good health for a 20-year period, meaning it becomes nearly impossible to make positive strides without knowing the proper cure. This shows how our environments can really shape events in our lives. In fact the Chinese believe that Feng Shui has more affect over us than our own hard work or karma, ranking third only to our destiny (determined at the moment of our birth), and luck. This time/space factor creates a complex formula that mathematically specifies identifiable characteristics of any given space. Classical Feng Shui provides the kind of analysis used to build empires. So how do you create balance once you have that information? Many believe that it’s with crystals, mirrors and lit-
tle Chinese trinkets that just don’t fit into our American decorating style. While studying Classical Feng Shui in China, I discovered that these items are really just folklore remedies. The ancient Feng Shui Masters simply used the five elements of water, wood, fire, earth, and metal to balance each environment individually, just as an acupuncturist would balance the human body. Correctly placing these elements within and around a structure harmonizes the environment so that life simply runs more smoothly. Once a space has been balanced, be it a home, business, or land, usually all that is needed to maintain the balance is an annual "tune-up". However, many clients call whenever there are changes in their lives: remodeling, new employees, money or relationship issues, disharmony of any kind, and Classical Feng Shui comes to the rescue.
