Contents Dear Friends, Foodies, and Hungry People:
Welcome to the annual edition about Eating Well in Kansas City—celebrating whole, seasonal, local, and organic eating. There's a continual need for education on the foods we eat: where and how they're grown; their nutritional values; whether to cook or eat raw; and the types of materials in which they might be packaged. My interest, as someone who loves to grow, taste, and cook a variety of foods, stemmed from an intense interest in the food industry, the effects of factory food on the body, and a pure love of real food. My introduction to the benefits, value, and versatility of real foods came about when I was 18. At the time, I was a new mother and money was tight. I naively thought if I only had $5 in my pocket, I should eat at the local fast food restaurant. Luckily, my sister, Lynn, came to visit and gave me shopping and cooking lessons. She taught me to shop the outer perimeters of the grocery store, seeking out the live, whole, nutritious foods. Then she taught me how to cook on a budget. Bean soups, peanut butter, and other hearty staples gave me the opportunity to feed my family well, for less money. Since then, my focus has broadened to include the importance of local and organic meats, produce, and also water safety (The Environmental Working Group has an informative website at www.ewg.org). Kansas City has an abundance of local farmers providing quality, nourishing meats and produce. We also have a growing number of vegan, vegetarian, local and organic, as well as raw food restaurants to choose from. My hope is that we can all have access to these valuable, life-sustaining, and lifeenhancing food choices. Here’s to eating well…

Find Your Balance, In Yoga and Life BY SUZETTE SCHOLTES
A
sequence in yoga has one move through four “balancing” poses without taking the foot to the floor. It demands great concentration, focus, and core strength. Only experienced students attempt this challenge! A beautiful yoga “sutra” or thread from the father of yoga, Pantajali, in Sanskrit reads, “Sthira sukham asanam” which means to practice the physical poses of yoga with effort and stability but also with grace and ease. “To find ease in yoga is the heart of the practice,” writes Judith Hanson Lasater, the great teacher who brought restorative yoga to the USA with her famous book “Relax and Renew.” Life is filled with duality, thus finding balance is something we all manage. How do we know about happiness if we never experienced sadness? How much do we appreciate the long days of summer compared to the short days of winter? Indeed, we adapt to our ever changing seasons and weather—even the wax and wane of the moon. A few times a month I create one day of minimal computer contact, avoid driving my car, and spend time doing the things I enjoy. I may make a great meal or watch a wonderful film. Or I may read a novel. To find balance, psychotherapist Jasmine Tanjeloff writes that your heart and mind are not being pulled too hard in any direction. Instead, we feel calm, grounded, and clear. The elements which pull us to different directions are both external and internal. Some pay attention to the external such as work, relationships, and activities and little attention to what is going on in the heart and mind. Others may be too reflective. An example: allowing your mind peace with meditation or to fire up with an intellectual challenge. Feeling over-loaded with work this year, I booked counsel with my favorite therapist. What he suggested was effective indeed. He said get to work, then find a big box, and when you choose to stop working, put all your files, etc. into the box and put the lid on it. It may sound silly but this so works! So how do we create balance? Create opportunities for your mind to rest such as restorative yoga or meditation. Give your light and love to others as well as to yourself. Eat, drink, and exercise—and treat

yourself to something special...like chocolate. Enjoy the “ride” as opposed to pushing yourself too hard. Find ways to enjoy yourself each day, even something as simple as talking to a friend. Reflect upon your life on balance of work and play. Keep that list of goals, but add something that gives you “ease.” Get clear on how to handle the doubts and fears which we all face. My son travels for work and spends long hours at his desk and at the same time works to complete his MBA. He marks time to spend with family. With all this on his plate, I see he remains balanced. He finds time to exercise, takes a night off to share a beer with his buddies, and keeps his sparkling sense of humor. I doubt he might stand on one foot for a yoga pose but then again he just might like the challenge. Suzette Scholtes’ nonfiction writing won the prestigious “Writers Digest” award. Surprise, surprise…now sprouting in the nation’s largest edible landscape our own Powell Gardens producing a knock-out bounty of fruits and veggies
B
arbara Fetchenheir is passionate about ‘her’ garden, Powell Garden’s Heartland Harvest Garden she claims as ‘her baby.’ In the massive 4-season garden, she has coddled an eye-popping array of vegetation dug into 12-acres of superbly managed plots, orchards, and vineyards. There’s so much on view, it’s truly boggling. As the interpretive mistress of the crops for over 20 years, Barbara is a walking encyclopedia of horticulture. She’ll readily admit the joy of this garden, situated at the Missouri barn and silo, is the pleasure of nurturing the lush plants from bulb to stem, seedling to bloom. A sweet path through the tangle “What most people don’t realize is that the garden is edible,” says Fetchenheir who demonstrates various topics from spring through late summer with the Fresh Bites program. As an enthusiastic leader, she’ll show you how to make delicious salad dressings, lead a tasting tour, or whip up a recipe for a fistful of rhubarb and horseradish. And, throughout the journey, there’s always another tendril to inspect. She’ll urge you to walk along the brick paths to inspect the burgeoning orchards heavy with fruit. Growing happily you’ll find Asian pear, hardy kiwis, and apple, peach, cherry, or fig trees. Densely planted raised beds feature onions, jewel-like lettuces, cabbages, peas, and kale. Potatoes, tomatoes, rhubarb, and garlic mingle with wild plums, currants, raspberries, and blueberries. Just a stone’s throw away lays a plot of native wheat. Fragrant herbs border the walkways just south of the Missouri Barn where, enclosed by a wattle fence, various fruit trees, a mini-vegetable patch, and a quick-pick of hardy herbs give visiting chefs an easy way to enhance the Garden Chef series cooking demonstrations. Not far, a true Mediterranean style vineyard appears. Visit in late winter and the vines are sleeping; but, come back in summer, and grapes are ripening. Carry on towards two inventive author’s gardens designed by celebrated garden authors Rosalind Creasy and Barbara Damrosch. They bring their great ideas to life in gardens that demonstrate their personal philosophies of edible gardening. All the while, it’s a heyday for you—the visitor who, like me, never imagines such sweet beginnings pushing up. In addition to the Harvest Garden, Powell Gardens in entirety is an absolute dream. For the price of admission, you’ll get the Harvest Gardens plus a weekend’s worth of exploring other parts of the surrounding gardens. By all accounts, there’s an overwhelming display of nature’s best that waits. Attend an event like the Under a Harvest Dinner, Booms and Blooms spectacular July 4th celebration, Chapel or Barn concerts, Festival of Butterflies, or rare plant sale among just a few.

Amazing Rhubarb Slushy This recipe can easily be made smaller if you do not want to use 12 cups of rhubarb. However, if you do have a lot of rhubarb, Barb recommends making one large batch at a time. Simply store any excess in the freezer so you can enjoy another refreshing treat later.
Ingredients 12 cups chopped, fresh rhubarb 9 cups water 2 cups granulated sugar 1 box (85-gram size) raspberry gelatin 1 6-ounce can frozen lemonade concentrate Carbonated beverage of your choice (ginger ale, Sprite, etc.)
Directions In a large pan, bring the chopped rhubarb and water to a boil. Reduce heat to low and allow the rhubarb to simmer until tender (about 20-30 minutes). Add sugar and stir to dissolve. Pour the mixture through a colander or sieve into a large, freezer-safe bowl. Add the gelatin and frozen lemonade; stir until well combined. Cover mixture with a tight fitting lid and freeze. To serve, use an ice cream scoop to scoop the slush into a glass and add the carbonated beverage. Enjoy! Food and Mood: Eating Your Way to Feeling Good
“Y
ou are what you eat,” has new meaning today. Current research indicates more strongly that nutrition, in the form of food and supplements, plays an influential role in our mental health. Good nutrition is needed for countless aspects of brain functioning. When the brain is fed properly with balanced nutritional intake, the result is amazing. Deficiencies of folate, Vitamin B12, iron, zinc and selenium tend to be more common among depressed than non-depressed persons. Fish oil and folic acid supplements have been used to treat depression successfully. (L. Bodnar & K. Wisner; Nutrition and Depression) In Understanding Nutrition, Depression and Mental Illness by Sathyanarayana Rao, Asha, Ramesh and Rao state “…nutrition can play a key role in the onset as well as severity and duration of depression.” They relate that the same food patterns that precede depression also occur during depression. They may include poor appetite, skipping meals, and a dominant desire for sweet foods. This article contains much more information about the nutritional aspects of carbohydrates, proteins, vitamins and minerals and their contribution to good mental health. This group of psychiatrists, agreeing with a number of other studies, tell us that fish or fish oil (Omega-3 Essential Fatty Acids) is significant in reducing

There is general consensus that diets with vegetables, fruits, whole grains, fish and seafood, modest amounts of lean protein and little to no processed foods or sugars contribute to better brain functioning resulting in good mental health. Good nutritional habits that begin in childhood will serve us well throughout our lives. They provide technical assistance to students and faculty as they learn about gardening, nutrition and healthy eating habits, plant science and environmental awareness. Every aspect of these two programs helps with mental and physical health. Not only are children learning to grow and eat healthy food but they are getting great exercise outdoors working in a collaborative group effort. As a mental health professional and educator, these programs make my heart sing! It is indisputable that paying more attention to our nutritional life can greatly help our mental health. Every day I faithfully take my Essential Fatty Acids (Omega-3), multi-vitamin and probiotics, along with other supplements for joint health. The nutritional suggestions that assist in healthy heart, lungs and joints also help me fight depression and anxiety. These are habits worth cultivating. Let Food be Thy Medicine: What is the Gut and Brain Connection? BY FABIOLA HART “Let food be thy medicine and medicine be thy food.” —Hippocrates 460 – 370 BC hat do you do when you receive a diagnosis for which there is no cure? A diagnosis that shatters any version of your hopes and dreams for the future? That is what I was faced with in January 2011, when our son was diagnosis with Autism. That day, the world I knew completely fell apart. I had been wondering what happened to our baby. He was born with a near perfect Apgar score. He was giggly, happy and used to respond to his name. His first word was “Elephant,” but by that January day, his words and the sparkle in his eyes were gone. Where had he gone? Our psychologist explained what happened to our son as Regressive Autism. She compared it to what occurs with Alzheimer patients. What she couldn’t explain is why it happened. No wonder the symbol for Autism is a puzzle. Early intervention was our best bet. Our son needed to be taught how to relate to the world around him. He would never be able to do that on his own. Maybe he would talk some day, but there were no guarantees. He would need to be stretched with 40 hours of behavior therapy a week. I was told that was all we
could do for him but that didn’t resonate with me. Early on I made the decision to look beyond my child’s Autism. My goal wasn’t to change or fix him; my goal was to help him function in the world to the best of his ability. In her book, The Autistic Brain Dr. Temple Grandin discusses the danger of “Label-Locked” thinking. She describes an instance when a mother of an Autistic little boy complained to his doctor about his GI distress just to hear him say, “Oh, he has autism. That’s the problem.” Children with Autism more often than not have GI distress; a lot of them are also non-verbal. Since they can’t express themselves through words, they do it through behavior. Imagine the following scenario: A child refuses to eat, spitting up their food and throwing the plate on the floor. That’s what happened in my kitchen, every single day. A behavior therapist said, “That is unacceptable behavior and we need to stop it”. That is the danger with “Label-Locked thinking”. (Dismissing a physiological problem due to a behavior or a symptom attached to a label.) The truth was that our son didn’t only have Autism. His GI was in distress. He was an extremely picky eater, suffering from severe diarrhea. He didn’t sleep well, waking up and pressing his tummy repeatedly with his little hands. He would also completely disconnect himself from the world around him when he ate certain foods. going on in a patient’s gut when they present neurological symptoms. She explains there is a delicate balance of microorganisms that exist in our bodies. They have a symbiotic relationship where neither group can live without the other. They perform a number of vital functions and we can’t live without them. The largest colonies live in our digestive tract in a very diverse and organized micro-world. A healthy adult carries around 4 pounds of them in their gut. One of their key functions is digestion and absorption of nutrients. But they also serve as a protective barrier to our intestinal wall, making sure only nutrients can be absorbed. Ironically, our culture fears these very organisms that are so vital to our health. Today, the Standard American Diet (S.A.D) offers foods that are poor in nutrition and very difficult to digest. The use of chemicals in our soils, water and food supply, household cleaning products, and pharmaceutical drugs (such as antibiotics) are common in our modern world. Unfortunately they are also to blame for disrupting the balance of our gut’s delicate ecosystem. This causes an over-permeability of the intestinal wall; a condition referred to as Leaky Gut Syndrome. There are many studies today that link leaky gut to neurological disorders. Reflecting upon how we were given our diagnosis, it’s evident why parents of those patients suffering from neurological disorders are not given the big picture. We are not told that the way we live in the modern world is destroying our health. I found that most medical doctors don’t know how the gut and the brain are connected in very intrinsic ways. We know nutrients are the building blocks of our bodies, but at the end of the day good

nutrition doesn’t sell medicine. Our family embarked on the GAPS diet and completely changed our lifestyle with a mission of healing our guts. Today we avoid foods with ingredients we can’t read; we cook our meals daily and eat local and organic as much as possible. We changed the way we clean our home and tend our garden by avoiding toxic chemicals. The healing wasn’t instantaneous for us but it came over time. Today, our little boy is happy, he is talking; he has friends that care for him. He is in school and works independently in a mainstream classroom. The more we worked on healing his gut, the more we saw gains in his language, attention span and cognition. A coincidence? I don’t believe in those. A miracle? Some would say so. I say it was a blessing. We learned that the way we live in the modern world was not working for our bodies. Our recipe for success: heal the gut and the brain will follow.

Livestock were not constrained to an indoor factory or in a cage they could not move in, nor pumped full of hormones or antibiotics. Because food has been so altered from its original state, your taste buds are confused from the toxic overload of chemicals and flavor enhancers. As a result, most people don’t remember how amazing real foods taste anymore. We expect food to be cheap, quick, and to taste exactly the same every

time we purchase it. The toxicity of chemically-processed foods may create undesirable symptoms in your body. Unnatural food-like substances (a.k.a. frankenfoods) can aggravate and contribute to a range of common illnesses and diseases, such as:

How to remedy this? There is not just one way to eat for everybody, as we each have a deeply personal and emotional connection with the foods we love and crave. I don’t endorse diets, counting calories or avoiding fats or carbs. By restricting certain foods, you may think you are being “good,” but that only lasts until you have an insatiable craving and desperately want that ‘forbidden food’ again. Instead of eating just one special treat, you may find yourself gorging on it like you have been starved for days. Why did this happen again? It often happens because you felt deprived, or your blood sugar dropped too low. Upgrading to nourishing food leads you to make healing changes that become a way of life and not just another fad diet. Truly nourishing foods are absolutely delicious and contribute to great health! You can have a nourishing relationship with food, and create a ‘win-win’ with it. Most of all, it’s important to understand the ingredients in your food. Begin by reading all of the ingredients on the label. The ingredients will tell you if that food is healthy or harmful! Reading ingredients will also teach you to understand the difference between “real” food (fresh, natural and nourishing) versus “fake” (chemically-processed, moodaltering, inflammation and disease promoting) food-like substances. each and every ingredient on packaged food and drinks. If you don’t understand an ingredient, look it up! You may be surprised at what you find. The wonderful part about your journey to healthier eating is that you are not alone. There are so many food makers out there who want to bring you clean foods. Yes, it may cost a little more now, but in the future it will save you a ton of money as well as your health! You have a choice; you can either pay the farmer today or the hospital bills later. It’s much more expensive to be sick, go to the doctor and not have the quality of life you deserve, than it is to become a smart shopper at the market. Look for your favorite organics that are on sale and stock up. More chain markets are expanding their organic sections, and this is a good thing! Although it may seem like an unusual thing to say, I feel grateful for my past illnesses. If I had not gone through a variety of health problems, I would not have made significant changes to a healthier and more nurturing way of life. I’m glad that I found ways to heal myself naturally, and you can too! Chronic illness and food addiction may be in your life for a reason, listen to what your symptoms are trying to tell you instead of masking

them with medications. Every little change, shift and new ritual around food is a success! The best way to dive in is to begin with breakfast. Restoring Your Health…One Bite at a Time How a Grain-Free Lifestyle Could Benefit You
W
hen I tell people that I eat grain-free, they are usually perplexed, have never heard of it, and wonder how in the world someone can live grainfree. Most people are familiar with glutenfree eating and have a pretty good understanding that you eliminate the gluten that is found in traditional wheat products. In contrast, grain-free eating is the elimination of all grains including wheat, corn, millet, barley, rice, and oats. My journey of grain-free eating started from a significant health crisis in my life. After being diagnosed with severe ulcerative colitis, I found traditional treatment options were limited to drugs and eventually surgery. I took a plethora of prescribed drugs over a two-year period and at the end found myself in worse shape than when I started. Throughout my illness, multiple doctors told me time and time again that food had nothing to do with my digestive disease. This doesn’t make much sense when you really think about it! I began my own research looking for alternative methods of healing, and what I found was a large number of people who had put themselves into remission from Ulcerative Colitis and other auto-immune disorders by removing all grains, most dairy, sugar, and processed food from their diet. I took a leap of faith and decided to try this new way of eating. You can read my entire story of illness, recovery, and remission on my website. It wasn’t an overnight fix, and it wasn’t easy, but within a year, I was healthy again, and within 2 years, I was in remission and drug-free all by changing the way I ate. Many times, it takes some kind of health crisis for people to wake up and realize they need to make significant changes in their lives. I think there is a silver lining in most all things we experience, and for me the silver lining is that I eat healthier than I ever did prior to my diagnosis and so does my family. If you haven’t read “Wheat Belly” by Dr. William Davis, please put it on your reading list, especially if you are interested in trying a grain-free lifestyle. He writes about how wheat crops are grown today and how differently they were grown even 20 years ago. The genetic codes of the plants have been changed to make the stalk shorter, more resistant to insects and disease. These
changes certainly aren’t benefiting our health. Dr. Davis states, “there has been a 400 percent increase in celiac disease since 1948.” As rational thinkers, we have to associate some of the health issues we are having in our country to the differences in how we grow our crops. Let’s talk about some of the reasons you might want to try grain-free lifestyle. Relief and/or remission from autoimmune disorders such as Ulcerative Colitis, Crohn’s Disease, Celiac Disease, Rheumatoid Arthritis, Hashimoto’s disease and many more. Weight loss, which for some people isn’t just 10 pounds; there are people who have lost more than 100 pounds by eliminating wheat and grains. Relief from skin disorders such as eczema, rashes, acne, etc. Potential relief from anxiety and depression. Brain Fog disappears. More energy to live your life. My previous daily diet included grains at almost every meal so the transition to grain-free eating was not easy. I was also cooking for my family with three small children, which made the challenge even greater. I approached this significant lifestyle change with baby steps. I could tell things were changing inside my body for the better after just the first two weeks of eliminating grains, processed foods, most dairy, and sugar. These changes gave me the hope and inspiration to continue on this path. Helpful tips for your grain-free journey to better health: This is not a fast food, drive-thru lifestyle; grain-free eating is about being prepared. I can’t, and don’t, grab food on the go anywhere, so I always have food prepared at home and ready to pop into containers if I need to take something with me. Keep a well-stocked pantry and refrigerator. I keep a large container of almond flour in my fridge so it’s handy for my weekly baking. Grill and prepare extra meat and veggies on the weekend so I can throw salads together and make quick meals during the week. Experiment with recipes until you find things that satisfy and nourish you. Become a label reader and don’t eat

any ingredient if you don’t know what it is. Stick to unprocessed and mostly organic food when possible. My best advice for each of you is to become an advocate for your own healthcare. Do your research and listen to your instincts about what is best for your body. Find doctors and healing practitioners you are comfortable working with and who listen! You might discover as I did, if we give our bodies real, whole foods, they are truly miraculous at healing. Most of all, I want to give you hope that you can get your health back and live a full, vibrant life! I want to share my recipe for Easy Grain-Free Bread. This bread is really simple to make and tastes great! It slices beautifully and you can toast or make anything you would with wheat-based bread.
Grease a 9x5 loaf pan with oil and insert parchment paper. Scoop creamy cashew butter into a food processor, powerful blender, or use a bowl and mix well. Add other ingredients, melted butter or ghee, apple cider, baking soda, and sea salt. Pulse until batter is well mixed. I use a spatula to mix and make sure cashew butter is incorporated into batter. Pour batter into the 9x5 prepared loaf pan. Bake at 350 for 38-42 minutes. Start checking bread at 38 minutes and pull out when tester is clean. Remove from oven and let cool in pan for 15 minutes and then lift bread out to cooling rack for an hour. Store bread wrapped tightly in plastic wrap in the fridge or it freezes nicely too.
