"I gave my life to become the person I am right now. Was it worth it?" --Richard Bach Dear Friend, Fear and Faith: two words so completely different, yet invariably connected. For me the distinction between faith and fear lies in the feelings associated with each. When filled with fear I experience a hardening of the senses, soul and reality: my shoulders tighten, I fight against my circumstance, teeth clenched. When living with faith I feel release, an acceptance of life and its outcomes. While in a fearbased reality, I dread losing control; faith requires a complete loss of control. When I am in the flow, I take my faith for granted. Life, love and my purpose are perfectly intertwined; my faith is a constant silent partner. I practice my faith through knowingness. I live with the knowledge that everything in my life was, is, and always will be, as it should. One fear emerges and more rise to fill the void. The tension builds and my worries compound to meet the demands. The more I succumb to the fear (lack of faith), the more turmoil I experience. It seems to build to an inescapable climax… and then I remember. I remember that no matter how life appears, All Is Well—then I relax. And a miracle happens. A small one, but it’s noticeable. Then another miracle occurs, and another. Even more quickly than the fears mounted, the miracles compound and I know I am loved. Why must I experience these dramas? I’ve learned that this pattern repeats itself. Hopefully, next time a small fear emerges I will embrace my knowingness before seeking out huge calamities to remind me of my faith. May this month's inspiring articles on metaphysics encourage you to affirm your faith on a daily basis.

ave you lost touch with your dreams? Is your dream recall limited to fragments that fade away as you hurry off into the business and traffic of the day? Relax. Here are some fun and easy ways to renew and refresh your relationship with your dreams:

1. Set an intention for the night. Before sleep, write down an intention for the hours of dream and twilight that lie ahead. This can be a travel plan ("I would like to go to Hawaii" or "I would like to visit my girlfriend/boyfriend"). It might be a specific request for guidance ("I want to know what will happen if I change my job"). It could be a more general setting of direction ("I ask for healing" or "I open myself to my creative source"). You might simply say, "I want to have fun in my dreams and remember." Make sure your intention has some juice. Don't make dream recall one more chore to fit in with all the others. If you like, you can make a little ritual of dream incubation, a simple version of what ancient seekers did when they traveled to temples of dream healing like those of Asklepios in hopes of a night encounter with a sacred guide. You can take a special bath or shower, play a recording of the sounds of nature or running water, and meditate for a while on an object or picture that relates to your intention. You might want to avoid eating heavily or drinking alcohol within a couple of hours of sleep. You could get yourself a little mugwort pillow -- in folk tradition, mugwort is an excellent dream bringer — and place it under or near your regular pillow. 2. Be ready to receive. Having set your intention, make sure you have the means to honor it. Keep pen and paper (or a voice recorder) next to your bed so you are ready to record when you wake up. Record something whenever you wake up, even if it's at 3 a.m. If you have to go to the bathroom, take your notebook with you and practice doing two things at once. Sometimes the dreams we most need to hear come visiting at rather antisocial hours, from the viewpoint of the little everyday mind. 3. Be kind to fragments. Don't give up on fragments from your night dreams. The wispiest trace of a dream can be exciting to play with, and as you play with it you may find you are pulling back more of the previously forgotten dream. The odd word or phrase left over from a dream may be an intriguing clue, if you are willing to do a little detective work. 4. Still no dream recall? No worries. If you don't remember a dream when you

first wake up, laze in bed for a few minutes and see if something comes back. Wiggle around in the bed. Sometimes returning to the body posture we were in earlier in the night helps to bring back what we were dreaming when our bodies were arranged that way. If you still don't have a dream, write something down anyway: whatever is in your awareness, including feelings and physical sensations. You are catching the residue of a dream even if the dream itself is gone. As you do this, you are saying to the source of your dreams, "I'm listening. Talk to me." 5, Remember you don't need to go to sle e p in orde r to dre am. The incidents of everyday life will speak to us like dream symbols if we are willing to pay attention. Keep a lookout for the first unusual or striking thing that enters your field of perception in the course of the day and ask whether there could be a message. Sometimes it's in your face, as happened to a woman I know who was mourning the end of a romance but had to laugh when she noticed that the bumper sticker of the red convertible in front of her said, "I use ex-lovers as speed bumps." After this incident, she had started recalling dreams again, and had several to share in the new class. She had dreamed she was in Washington DC, at a conference on transportation. As we explored this dream, she revealed that she had a friend in Washington and that her current work mostly consisted of arranging conferences. "But I know nothing about transportation — except maybe how to drive the wrong way down a one-way street." When we start paying attention to the dreamlike symbols of the day, we often reopen our connection to the dreams of the night. Learning to Love Vegetables Bethany Klug

I

mpossible, you might say, especially if the vegetables you ate growing up were boiled into oblivion. Or maybe yours were embalmed as canned vegetables or cryogenically frozen. Treated with such disrespect, it’s easy to understand why many of us avoid vegetables, and lose out on the most life-sustaining and disease-preventing food available to us.

Vegetables (and fruits, too) are rich in special molecules called phytochemicals. Phyto simply means plant. Phytochemicals give plants their characteristic color, smell, taste and texture. They help the plant protect itself from disease and predators. We get the same benefit when we eat prope r ly p r ep ar ed v e ge t able s and fruits. Food from animals, such as meat and milk, do not have this effect. The greatest benefit comes from eating a variety of phytochemicals and is as simple as selecting vegetables and fruits of different colors. The array of colors will

make your plate look more appetizing, too. The easiest way to prepare vegetables is to eat them raw. One of my favorite simple meals is a bowl of soup with carrot sticks, celery sticks spread with pumpkin seed butter, sliced fruit and a piece of whole grain bread. Green salad is also easy. Visit your nearest organic farmers market and check out the bounty of baby greens available right now. Toss with some raw walnuts, fresh berries and balsamic vinaigrette. Another way to prepare vegetables is to steam them. Add your vegetables to a saucepan, then add a small amount of water, ¼ the level of the vegetables at most. Bring to a boil — this will happen quickly — then reduce the heat, cover and simmer. Asparagus spears and broccoli florets take about two minutes, sliced carrots, green beans and cauliflower florets five minutes, dark leafy greens like Swiss chard and kale take 15

– 20 minutes. They are done when their color brightens and their texture is tender-crisp. Eat as is, toss with extra -virgin olive oil or lightly sprinkle with vinegar. Umeboshi plum vinegar, found in the macrobiotic section of your health food store, is especially tasty. Roasting intensifies the sweetness and flavor of root vegetables such as carrots, onions, parsnips, beets, potatoes and celery root. Peel four cups of root vegetables and cut them into bitesize chunks. Place them in a roasting pan with a few peeled garlic cloves. Stir in 1 – 2 teaspoons of grape seed oil, ½ teaspoon of salt and 1 – 2 teaspoons of your favorite dried spice until well coated. Dill is good with beets and parsnips. Rosemary goes well with the others. Cook covered in a 450 degree oven for 30 – 45 minutes until fork tender. Serve as a side dish or make an entrée salad: toss baby greens with balsamic vinaigrette, and then artfully arrange raw walnuts, fresh and dried

fruit, roasted vegetables, and Fantastic Foods whole wheat couscous atop the greens. It's easy to make your own balsamic vinaigrette. Mix in a screw top jar 1 tablespoon cold pressed extra virgin olive oil and 1 teaspoon balsamic or your favorite vinegar. Add ¼ teaspoon brown mustard, if desired. Shake and serve. This recipe serves two to three people. Refrigerate if mustard is used. Enjoy!

Believe it or Not? Jude LaClaire, Ph.D. It is clear, then, that wisdom is knowledge having to do with certain principles and causes. But now, since it is this knowledge that we are seeking, we must consider the following point: of what kind of principles and of what kind of causes is wisdom the knowledge? Aristotle, Metaphysics

W

hat, exactly, is Metaphysics? Webster defines it as the branch of philosophy that deals with first principles and seeks to explain the nature of being or reality (ontology) and the origin and structure of the world (cosmology) and is closely related with the study of the nature of knowledge. Popularly, any subtle or difficult reasoning. The advances in quantum physics, cosmology, mathematics, neurobiology

and neurochemistry do not change the questions of Metaphysics; but, certainly, make our answers quite a bit different. Consequently, some ancient wisdom has been proven false while other beliefs have been supported. The whole process is complex, difficult and, often mystifying. Let’s look at some known facts that will help us in the process of evaluating or re-evaluating our beliefs. The duality of the physical and non-physical, the body and mind, the self and the environment is in question. In The Turning Point, Fritjof Capra, a physicist, states: “The new vision of reality we have been talking about is based on awareness of the essential interrelatedness and interdependence of all phenomena — physical, biological, social and cultural. It transcends current disciplinary and conceptual boundaries and will be pursued within new institutions.”

Candace Pert in her book, Molecules of Emotion, describes the interconnectedness of the body-mind. They operate as a whole and cannot exist separately. The dualistic idea no longer serves us well in looking at our emotions, our bodies, wellness and disease. Researchers from the University of Michigan, Columbia University and the University of Colorado showed in a recent study that people who were experiencing emotional pain from recent breakups had the laboratory equivalent of a hot poker held to the forearm. The researchers noted that in the two brain regions where they discerned overlap during the physical and emotional pain conditions; the intensity of activation in those areas virtually mirrored each other. In other words, people’s response to emotional or physical pain registered in the brain in very similar, intense ways. Herbert Benson, MD, author of The Relaxation Respons,e has been studying the effects of different tools (breath focus, imagery, meditation, biofeedback, etc.) to stimulate relaxation for over 30 years. MRI brain scans indicate that when a person goes deeper into concentration, feeling calmer and more relaxed, changes take place in the parts of the

brain which control a person’s orientation in space and establish distinctions between self and the world. Circuits which track time and self-awareness, become disengaged. The mind-body connection dissolves. The system which regulates relaxation, ultimately controlling the autonomic nervous system, heart rate, blood pressure, metabolism, etc., is activated. Research supports the paradigm of the inseparability of body-mind, self and environment, giving us a vastly different perspective. It moves the locus of control from external to internal. It is up to each of us to develop discernment, based on fact, science and personal experience, about which approaches are helpful in unlocking our amazing potential. Becoming Expert: Technique & Motivation Suzette Scholtes

D

o you ever ask yourself why you are watching a certain news or television program? Because it’s on? To whom do you listen? Do you find pleasure in listening? For richer “quality of life,” the following two steps will help motivate you to learn new things, become more content and release obstacles hindering your growth and success. FIRST “TECHNIQUE”: As my Texas yoga teacher says, “We are fixin’ to breathe now.” It’s so easy I know many of you dear readers may dismiss this. Why? 1. Deep breathing builds an immediate bridge between the body and the mind. 2. Deep, conscious breathing for 1-2 minutes or so allows the four bodies to balance: mental, physical, emotional and energy or “etheric” body. 3. It invites “divine intelligence” into your trillions of cells, releasing the life force called prana or chi.

We are so unique and yet so similar in our human experience. We each must find our way. 4.

It helps to keep you centered and calm. 5. It enables you to use more of both your linear mind and intuitive intelligence. SECOND “MOTIVATION”: Have you heard the statement a noted author shares about the state of your wealth being mirrored in five of your closest friends? Who do you listen to? Do they complain about lack or blame or whine too much? We all do that; we are human. However, if you are my buddy, you seldom will hear me whine or blame. I’ve worked hard on that. I’m very clear to focus my daily intent on ease and positive thinking. I listen to spiritual leaders every day on my iPod or in my car. My CD holder offers vast selections of upbeat, motivat-

ing teachers. My friend, Karen, and I began creating this years ago: •

Write or record a CD of your own personal affirmations. Repeat them many times during the day. Post them by your computer or on the bathroom mirror. One of my students at The Yoga School wrote out his personal goals and affirmed them with conviction. One “intent” included meeting Jack Canfield, famous for his success seminars and Chicken-Soup-for-the-Soul series. That year, he was invited to dinner with Jack, enjoying a fabulous conversation at an elegant restaurant with this grand teacher. Read great biographies of people you admire whether US leaders, Einstein, sports heroes, or anyone who inspires you.

I loaned to a friend, facing a challenge, a few of my Law of Attraction recordings. They worked for her! She manifested $30,000 of real estate sales the next month. She bought the entire library. fter recently returning from the iMosaic integrative/holistic medical conference in Minneapolis, Minnesota April 6th through the 10th, I want to share a truly amazing experience. There were nearly 1000 physicians and other professionals from all over the country gathering together to distribute up to date knowledge and information about this broad field of medicine. Research data was presented and analyzed. Four national and international organizations were involved in the planning of this historic event in integrative & holistic medicine. The organizations included the American Holistic Medical Association, American College for Advancement in Medicine, American Academy of Environmental Medicine and the International College of Integrative Medicine. The American Holistic Medical Association was started in 1978 by several physicians, one of which is Norm Shealy, M.D. from Springfield, Missouri. I have been involved with the AHMA since 1995 and on their board for 3 years. At the iMosaic conference, there were over 60 exhibitors, 11 pre-conference workshops and over 30 breakout sessions. The pre-conference workshop that I attended was “Anxiety and Depression: Expanding Your Holistic & Integrative Toolbox.” The faculty for this workshop consisted of M.D.’s, Ph.D’s, N.D,’s and an Acupuncturist. It was noted that depression is the number one cause of disability in the United States and there has been a ten fold incidence of depression in people born after World War II. The average person, going to their primary care physician is offered a prescription medication within four and a half minutes of the beginning of the office visit. Integrative approaches to depression included multiple modalities for treatment: Fitness, nutrition and mindfulness techniques. Basic supplements discussed for depression included: multivitamin with vitamin B complex, Omega 3 fish oils, vitamin D3 and probiotics. Other supplements could include: 5-HTP, but not with prescription anti depressants without physician guidance, L-theanine, and SAMe. Exercises discussed were yoga, T’ai Chi and walking and it was stressed that adequate natural sleep is a must. Some kind of meditative process was encouraged such as mindfulness meditation, sewing, cooking, gardening; any thing that helps empty your mind. The Naturopathic Doctor discussed her philosophy which coincides with mine and includes: recognizing the healing power of nature, treat the whole person, identify and treat the cause, educate the patient, emphasize prevention and promote wellness. Modalities of treatment include: diet, lifestyle, dietary supplements, botanical medicine, homeopathy and counseling. Dietary recommendations were a whole foods diet, high quality proteins, cold water fish, lots of vegetables, nuts, seeds, whole grains and fruits; avoid and eliminate food sensitivities as well as refined grains and sugar.

Nationally known, David Riley, M.D. presented information on heart rate variability analysis researched by a company called Heart Math. They have a special type of biofeedback equipment called an em Wave that improves heart rate variability and can give coherence to a person to improve emotional well-being. I have this equipment in my office and look forward to offering this new technology to my patients. The most memorable presentation was by Tieraona Low Dog, M.D., Fellowship Director at the Arizona Center for Integrative Medicine at the University of Arizona and works with Andrew Weil, M.D. Dr. Low Dog spoke on Women’s Health: An Integrative Approach. She discussed toxic chemical exposures, even to infants before they are born, ways to reduce exposure and several websites to keep up to date. The websites include: www.Householdproducts.nim.nih.gov www.ewg.org www.oceansalive.org www.safecosmetics.org. She warned about women with migraines, especially migraines with aura to avoid birth control pills. There is a 2-3 fold risk of strokes in migraineurs with aura and this increases to 8-fold in these women on birth control pills. A birth control with only progestin and not estrogen could be substituted. In discussing menopause, she stated the risk of invasive breast cancer is significantly lower with hormone therapy containing natural progesterone (compounded, bioidentical) than those containing other progestagens (e.g. Provera). Natural progesterone has also been shown to be better for heart health. This monumental conference presented many more presenters and information. As I sort out this new information to add to my diagnosis and treatment strategies for my patients, I plan to offer new approaches to neuro transmitter balance, evaluation and treatment of toxic metals, and new biofeedback tools for anxiety and depression. It is wonderful to have more and more knowledge presented on holistic and integrative medicine and will strive to keep you up to date. Two Simple Steps

W

hat is the one action you could start today that, if you did it consistently, would have THE most positive impact on your health and well being? For me, it involves exercising more days of the week and eating more veggies. I know, I know. I said one action and I picked two, but I really feel that the two are needed in my life. For the past few weeks, my exercise program has dwindled to one day a week. Thankfully, I teach a fitness class or it would likely be zero days of exercising. Coincidentally, I have also had cravings to eat more food than usual and I want to eat processed sugary foods like spelt fruitrageous cookies and organic honey and oats cereal. These are better than the traditional cookie and cereal but I am still consuming very little nutrition when I choose these options. Not only do I notice strange cravings, but I also I feel tired, worn out, cranky and even slightly depressed. It is weird for me to say I feel depressed! Really weird! I am usually very bubbly, happy, passionate and enthusiastic. I know it is time for a change! The main actions I see for me to take in my health and well being are to increase the number of times I exercise each week and to improve the quality of food I am eating. I am committing to exercising five times a week and getting at least three servings of vegetables a day. To support myself in my goals, I signed up for a month of boot camp classes to whip me into shape and get me back into the habit of regular exercise. I went to my first class this morning and I was so proud of myself all day! I also plan to add interval training to my exercise program. If you do not have access to a boot camp, fitness class or gym, interval training is one of the best ways to get into shape. Simply do a challenging activity like running for a minute or two and then do an easy activity like walking for a minute or two, and continue that for 20-40 minutes. In an effort to increase my veggie intake, I plan on eating lots of kale salads and juicing. Actually, my favorite way to get my vegetables is through drinking a green juice. Below you will find my favorite green juice recipe. My favorite green juice (makes 2 servings) 3-5 leaves of kale 1 lemon 1 apple ½ stalk of celery 2 cucumbers

round this time of year I think “celebrations!” Many people in my family and friends have birthdays and anniversaries in the month of May, mine included. We also have the celebration of Cinco de Mayo this month. So, it seemed appropriate to combine them all in one giant, yummy celebration of vibrant, delicious food! Last month I provided you with the recipe for Fiesta Mango-Jicama Salsa. This month I want to show you a little more about how to make a raw vegan entrée adding to that earlier recipe. This main dish recipe is a family favorite. It is tasty, festive, and full of nutrition. So many times people think only of lettuce salads when they think of raw vegan cuisine. In fact, very few people would even think of the word “cuisine” when and if they think of raw vegan foods. Many of the recipe favorites with which we grew up can be translated into healthy enzyme rich, nutritionally abundant, live and whole food versions. To help you along with a favorite recipe translation I’ve chosen to give you a recipe that I believe you and your family will enjoy and be nourished by.

Cinco de Mayo Taco Salad 1 C sun-dried tomatoes, soaked overnight in enough pure water to cover. Drain and reserve soaking liquid 1 C each Sunflower seeds and Brazil nuts, soaked for 2-3 hours in enough pure water to cover. Nama Shoyu (or soy sauce) 1 t Cayenne or hot sauce 1-2 T Agave nectar ½ C fresh tomatoes 1 t chipotle powder (or less depending on the fire power you like) Blend the nuts and seeds first in the food processor. Scrape down sides and blend until ground well. Next add all the additional ingredients in a food processor until the consistency of cooked taco meat. To serve, shred Romaine lettuce and place in a large decorative bowl. Place Taco Meat in the center and spread it out. Top with Fiesta Mango-Jicama Salsa. I

n March, I decided to sign up for a Juice Fasting Retreat led by wonderful friend Karen Kipp (www.poweryour journey.com). She is a reflexologist and also an expert when it comes to juicing and fasting. When she told me about her retreat I immediately thought to myself, Yes, this is just what I need to kick-start my body for the Spring!. So on April 1, I headed south to the Light Center in Baldwin, Kansas (just south of Lawrence) for a weekend getaway with 14 other women. When I arrived at the retreat house, I remember thinking to myself, Ok Tracie..you can do this. Just as I was thinking this, my best friend who dropped me off commented, "Sure you want to do this?" I gave him a half smile and said, yes, it will be fun! I was determined to have this weekend away for healing. He said, "OK, have a great time" and drove away. So there I was out in the middle of the country about to walk into this old barn that was rebuilt into a retreat center. I gathered my bags (I tend to pack quite a bit...even for 2 days) and walked inside. From the moment I stepped through the doors of the remodeled barn, I immediately knew it was going to be a good weekend. From the smells of the old building, the décor on the walls to the voices of all the women chatting, I knew I had made a very smart decision to be there. I joined the rest of the group at the foot of a long rectangular table and we started chatting about the evening with some raw cocktails (pure juice of course) and discussed what we were going to do over the course of the weekend. We got to know one another and all shared about our experiences thus far with juicing and what we were looking forward to throughout the retreat. We were all coming from different places and points in our life but the common denominator was that we were all there to cleanse. By the time my friend picked me back up at noon on Sunday, I was a different person. I can’t even express enough the powerful healing my body had over that two-day period. By not eating anything but fresh, organic vegetable juice, my digestive system had a chance to slow down and essentially take a break. When you allow your body to do this, you are able to use the energy you would normally expend on digestion (a 24/7 job) to be focused elsewhere. And boy was it focusing on other things. I had so many creative ideas, so many things racing through my mind that it was hard to really gather all my thoughts. Not to mention how great my body felt physically. For the first time in

awhile I didn’t have any bloating, I wasn’t thinking about food and I felt a great calmness come over my whole being. It was such a different feeling, but I knew I liked it and hoped it would last. I was feeling so great that I decided to continue the juice fasting for a couple more weeks. I am writing briefly about this experience for 2 reasons. One, for you to consider giving your body a cleanse to see how great you will feel and two, to really emphasize the importance of how your body can function and heal with the absence of food for the shortterm. Karen kept repeating over the weekend this little reminder, what do animals and kids do when they aren’t feeling well? They stop eating. Why do they stop eating? Because this gives their bodies a chance to heal. Think about that for a minute and see if that thought leads you to experiment like I did. My favorite green smoothie recipe and the one I use almost every morning now is below.

s a family that eats a high raw vegan diet we are often asked, “Where do you eat out?”. The truth is that we don't eat out often. But, when we do, we love Eden Alley, FUD, Seed Cafe, The Mixx, Blue Koi and even eat at Chipotle on occasion. We try hard to support local organic businesses as much as possible. But the meals away from home that we enjoy the most are our own local raw vegan potlucks. My family and I have a small business called Green St. Goods and our friend Kat Bowie owns The Struan Center in Westport. Collectively we organize and operate the Kansas City Raw Food Union. We offer two potlucks a month one in Westport on the 1st Sat of every month and one in Lee's Summit on the 3rd Sat. of every month both at 2pm. We also have a video with many pictures on You Tube. The potlucks offers us a chance to have a great healthy meal with our friends. When I first started the potluck we host in Lee's Summit it was with just my friend Megan, her mom and I and now we have over 40 people attending! I usually use the walnuts because I have them on hand more than cashews. Blend all the ingredients in a high speed blender til very smooth. I usually blend it for awhile, then let it sit for a bit, then blend it some more letting it just slightly warm. I do this 3 times usually... Easier on your blender and it aerates the mixture. Taste it...decide if it needs anything else...also at this point you could separate the mixture into two batches and flavor one with with any flavored oil, I use mint a lot. Then put the mixture into a bowl that will fit into your freezer. Let the mixture harden for three hours. Place 3 tbs of whichever powder you are using into a bowl or I use a small plate. Now this is the part that takes a little practice...I use a melon baller in a cup of hot water to scoop out little balls of the mixture. Place 3 balls of the mixture onto the plate or bowl and roll them around in the powder to coat them. Place them into a container to place back into the freezer. You want to get them back into the freezer as soon as possible. I usually wet the melon-baller between each scoop. That's it. Just keep them frozen until you serve them or just eat them straight out of the freezer. This recipe makes approximately 30-40 truffles.

G

luten-free seems to be the new buzz word at the grocery stores and restaurants these days. Almost any type of packaged product has a gluten-free alternative and gluten-free menus are becoming more available. So, why all the fuss about gluten and why are all these people going gluten-free? Cultivated grains are relatively new on the evolution of the human food list; only about 10,000-12,000 years. Prior to agriculture ramping up, native grasses and seeds along with fruits and vegetables made up the carbohydrates consumed by non-North-American peoples. Due to the newness of cultivated grains, especially wheat, a very large percentage of people don’t have the ability to digest or process grains. This inability to process grains leads to a breakdown in the digestive system organs frequently followed by a breakdown of the endocrine organs. Many medical researchers are now finding 150-200 diseases may be linked to gluten intolerance. Gluten intolerance is a bit tricky to diagnose as there is no one symptom of gluten intolerance issues. Gluten intolerance may be asymptomatic, it may include a list of many symptoms, or it may be the pre-cursor to many inflammatory or auto-immune diseases. Some of the symptoms/diseases currently found to likely be attributed to gluten sensitivity or intolerance are: Irritable Bowel Syndrome (IBS) or Irritable Bowel Disease (IBD) or leaky gut Sinusitis or Sinusitis like symptoms Allergies or Asthma Puffy eyes/bags under the eyes Various muscle or joint pains throughout the body Skin rashes known as Dermatitis Herpetiformis Feeling tired /chronic fatigue Gas, bloating, or frequent diarrhea or constipation Anemia Unexplained weight gain / weight loss issues Persistent headaches Osteoporosis Diabetes Thyroid issues Neurological issues Lupus Rheumatoid Arthritis Crohns disease Multiple sclerosis Celiac Disease The main disease recognized and diagnosed by mainstream medicine as being gluten intolerant is Celiac Disease. It is a disease of the gut and an auto-immune disease. The major cause of the gut issues is a reaction to a storage protein. These storage proteins, referred to commonly as ‘gluten’, are found in all grains. These proteins are slightly different in each grain; gliadin in wheat, hordein in barley, secalin in rye, avenin in oats, zein in corn, and oryzenin in rice. It is the amino acid sequences in particular of wheat, barley and rye that cause the auto-immune reactions in Celiac disease. However, some Celiacs’ are intolerant of all grains containing gluten: rice, corn, wheat, rye, barley, millet, sorghum, oats. When a person with Celiac disease consumes gluten their intestinal track is damaged. The villi, which are finger-like protrusions in the intestines, flatten out. The

villi are nutrient grabbers. When you digest your food, they extract the nutrients into the bloodstream to feed your body. Once the villi are flattened, they can no longer do their job so the body doesn’t have any way to extract nutrients from the food eaten. In children, malnutrition/starvation, bloat, bone deformation, and stunted growth can occur. In adults, the same issues can be present along with fragile bones that break easily. Other symptoms may include depression, anxiety, and irritability. Vitamin and mineral deficiencies can lead to bloating and hormonal imbalance. Also, gluten contains peptides that are morphine like substances which cause cravings for more gluten/carbohydrates. With the body in this much imbalance, it is really surprising insulin resistance, diabetes, cancer, and many other of the chronic diseases and autoimmune diseases are more prevalent in today’s world? Diagnosing gluten intolerance is not always easy and frequently can take a while. Many of the blood tests don’t show the anti-gliadin or anti-gluten antibodies as these actually reside in the gut not the blood. Other tests such as an internal biopsy, anti-gliadin stool test, or a DNA test are more reliable. Getting off the gluten can be more challenging that just buying gluten-free bread or crackers at the store. Gluten can be hidden in many other products so check the labels or contact the manufactures: vitamins, prescription drugs, self care products including make-up and toothpaste, cleaning products, envelopes, stamps, deli meats and sausage, salad dressings, soup bases, soy sauce, french fries, spice mixes, mustard powder, self basting turkeys, hydrolyzed plant protein, hydrolyzed vegetable protein, monosodium glutamate (MSG), textured vegetable protein (TVP), blue cheese, malt, beer, imitation crab, graham, spelt, kamut, or even chewing gum (wheat starch or flour may be used in the packaging). Even the safe flours like potato or tapioca, bean can become contaminated if they are milled or processed in a facility that processes wheat, rye or barley grains. A call to the manufacturer will tell you if they have a facility dedicated to gluten-free grains only. Some people can tolerate grains containing gluten other than wheat, rye, barley, triticale, spelt, and kamut (oats, corn, millet, sorghum, teff, rice). Others can only tolerate the pseudo cereals/grains which are seeds and grasses as long as they are not cross-contaminated by manufacturing in a facility with gluten containing grains (amaranth, buckwheat, quinoa and wild rice). If you are gluten free, being prepared for social situations is a must: • Do your homework - know what does and does not contain gluten. • Plan ahead - if you are attending a party and are unsure of the menu, prepare and bring a dish to share, or eat before leaving home. Call a restaurant or hotel ahead of time and talk with them. Be sure to let food preparers know food prepared on the same surface or with the same utensils as gluten will cause cross contamination. • Be creative - experiment with gluten-free alternatives.

Recently I had lunch with a friend with whom I attended the Institute for Integrative Nutrition. Our conversation turned to gluten and she related this story to me. Her college–age daughter was diagnosed with celiac disease when she was nine. At a recent restaurant visit she was asked by a restaurant employee, “Is the gluten-free request an allergy or a preference?” Makes you wonder, do they think being gluten-free is some type of a fad diet or about the degree of care in the food preparation. So for those still wondering … gluten allergies, gluten sensitivities, and gluten intolerance are not a fad diet nor are they a preference; they are a necessity. If a friend or relative is diagnosed with Celiac Disease or gluten sensitivity, make sure you understand exactly what degree of careful is required. For some people, even a small crumb of gluten can be life-threatening enough to send them to the hospital.

Thai Quinoa Prep Time: Cooking Time: Yields: Ingredients:

5 minutes 15 minutes 4 servings 1 cup dry roasted quinoa 2/3 cup coconut milk 1 cup water Pinch of salt ½ cup red pepper, diced 2 cloves garlic, minced 3-4 drops toasted Sesame oil

Rinse quinoa Bring coconut milk and water to a boil. Add quinoa, salt and garlic. Bring back to a boil, cover and reduce heat. Cook for 12-15 minutes. Remove from heat, stir in red peppers and sesame oil. Let sit covered for 5 minutes then serve.

I

f you've been wondering how to make raw flax seed crackers or just looking for a good basic easy, healthy raw flax seed cracker recipe then I'll make it easy for you. As a nurse, amateur chef and raw foodist vegan I've been making raw food recipes for a decade and have made many different types of flax seed cracker recipes. I'm, going to show you the simplest and fastest way to make flax seed crackers. There are many different types of raw food flax seed cracker recipes but starting with something simple and then adding spices or ingredients can make it much more flavorful. Flax seed crackers are dehydrated crackers. Usually a dehydrator is needed, although you can try to make them in an oven and keep it under 120 degrees - if it has a fan in back. However that can take quite a few hours and would be a major drain on your electric bill. And I don't recommend it it may be too hot and damage the enzymes that dehydrating at a low temperature is supposed to preserve. Dehydrators use very little energy. If you're eating raw foods now and don't have a dehydrator you definitely should get one. I find it an indispensable piece of equipment for raw fooders. It will give you much more in the way to choose from in terms of the number of raw food recipes you can prepare. I make many different raw recipes in the dehydrator—for example, cookies, other types of raw crackers, raw pizza, raw crepes, mushroom appetizers, appetizers, raw onion bread and much more. Invest in a dehydrator if you can. Get the big square one with the fan in the back, because those are the best and will not heat the food. The 9-tray Excalibur is the one I use. Okay for the simple, easy, basic raw flax seed cracker recipe see below. However it is bland and I would suggest my follow-up variations for the best and most flavorful crackers.

Ingredients: flax seeds and pure unfiltered water 2 cup flax seeds soaked for 5- 8 hours or overnight - not ground up or you can use 2 cups of flax seeds unsoaked ground in a food processor 2 tsp sun dried sea salt 2 1/2 - 3 cups or more of pure filtered water Mix together in mixing bowl and add more water if necessary. It should be very moist. Don't worry - it does not have to be perfect. They always turn out. Spread onto dehydrator trays about 1/4 inch thick. Use a pizza cutter to cut into squares. Dehydrate at about 95 degrees for 1224 hours or until they look dried and crispy. About half way through the process, re-score with the pizza cutter and place another tray on top and flip over and continue dehydrating. Now this is a very basic flax seed cracker recipe. But you'll want to add spices or additional ingredients to make them flavorful. Otherwise they will be bland. Optional: 3 teaspoons of Italian seasoning for a more pizza-like cracker or add 3 T caraway seeds for a caraway seed cracker or add 4 dates for a sweeter cracker or add 1 T coriander seeds or add 2 cups of unsoaked sunflower seeds that have been ground up fine in a food processor or any combination of any of these. You can also add 5 stalks of celery or the pulp from juicing carrots instead of some of the water as long as your final mixture is a little moist. Now you know how to make raw flax seed crackers. Follow these simple directions and make sure to add the variations for the best flax seed crackers. There are many other raw food diet recipes you can make with or without a dehydrator. And even more variations of crackers.

f you're looking for a healthy alternative to cooked berry pies or even cooked desserts that are laden with unhealthy fats and sugars, why not try my live-food, free, easy, raw berry pie recipe. Many people are gradually making the switch from cooked desserts and cooked foods which are causing so many of our health problems today. It doesn't matter if you're a raw fooder or eat the standard American diet; you'll love this raw berry pie recipe and know that you're doing your body good in the process. In fact making a raw berry pie does not require turning on the oven and can be made in virtually minutes. I have often timed myself and can make this pie in ten minutes or less if the ingredients are assembled. Equipment: food processor.

Helen's Best Raw Berry Pie 12 organic medjool dates 1 cup raw pecans 4 cups fresh or frozen blueberries, blackberries or boysenberries 2 bananas For the crust put 1 cup of raw pecans in a food processor and grind until fine. Add 8 pitted organic medjool dates and process until mixed fairly well. Place into a 9-inch pie plate. For the binder mix two bananas, 8 berries or so for color and 4 medjool dates in a food processor—use the same food processor—don't need to

wash it. Remove to large bowl and carefully fold in 4 cups of fresh or frozen or partially frozen blueberries, boysenberries or blackberries. Spread berry-binder mixture on top of the crust. Decorate with boysenberries or blackberries around the edge of the pie. Refrigerate. This live or raw berry pie is a family favorite and one I have served on many occasions to company who are not aware they are eating something healthy containing all the vibrant nutrients - nothing cooked out. This pie is really good with boysenberries too. You can also slice some fresh kiwi on the top or other fruits that won't turn color. One nice thing to know about fixing any raw food recipe is that you can eliminate, substitute or add ingredients easily and it will still taste delicious! In this vegan or raw food diet recipe - you may only have one banana on hand for example or you can make half the recipe. You can substitute the pecans for a mixture of one half cup pecans and one half cup walnuts, or all walnuts. If you live in an area where you have tons of wild blackberries you can make this pie for pennies. Pick blueberries cheaply in the summer and freeze them for year-round use, although fresh berries are always the best. You can make raw berry pies with this free raw food recipe year-round and you'll feel good too knowing you have served your friends and family something that will help them better their health and help them lose weight if they need to too.

T

he use of color, crystals and positive affirmations are powerful tools for bringing balance into our lives. We have the 7 colors of the rainbow and the many shades and variations in between to work with. Color is a vital part of our body, mind and spirit. According to eastern philosophies, we have chakras within our energy field which are spinning wheels of light. These energy centers are responsible for regulating the functions of many levels of our being. Each chakra has a color associated with it. There are seven main chakras. It’s empowering to use colors and gemstones with a positive affirmation. Here is list of affirmations for each color, chakra and gemstone for your use in daily life. The first chakra is the Root Chakra. Its basic color is red. A gemstone for the root is garnet. The Gem Spot Affirmation is: “I live life fully and completely. My passion for life fills me with joy and enthusiasm. I am strong and healthy. I take action and move forward. I am safe, secure and grounded.” The second chakra is the Navel or Sacral Chakra. A gemstone for the navel is carnelian. The Gem Spot Affirmation is: “My imagination is active conjuring up creative ideas as I play and relax. I embrace fun times and trust in the relaxed flow of the day. When I relax, great ideas jump into my consciousness!” The third chakra is the Solar Plexus. A gemstone for the solar plexus is citrine. The Gem Spot Affirmation is: "I am powerful beyond belief. My magnificence shines through for all to see. It is safe for me to be powerful in loving ways! I have the courage to be all that I can be." The fourth chakra is the Heart Center. Gemstones for the heart are green aventurine or rose quartz. The Gem Spot Affirmation is: “Compassion, kindness and love are mine. I am tolerant of the differences between my beliefs and the beliefs of others. I am nurturing and accept nurturing from others.” The fifth chakra is the Throat Center. The Seven Spiritual Bodies By Lauralei

eincarnation and our current physical life are generally represented in linear time as past, present and future. In reality, a more accurate representation would

be a circle. As an analogy, consider a circular pan filled with water, at rest and still, to represent all possible lifetimes. Now imagine a single very large droplet (a soul) into the center of the pan, which in turn animates and creates ripples in all the water in the pan. The first waves are the most forceful and represent the early lifetimes of a soul. They have the biggest waves, because a new soul has great enthusiasm to jump into its early incarnations and experience all it can. Everything is new and everything is a learning experience for the soul. Additionally, that initial thrust of the droplet into the center of the pan, will also cause some of the water to spill over onto the floor outside the pan. This spilled water represents the spiritual parts that do not incarnate, and remain in spirit form. The next set of kinetic waves, reacting from the first waves, are still strong, but not as forceful. These are more selective lifetimes that contain pre-planned experiences. We are no longer a “blank slate” or a new soul. We have the need for very specific experiences that will provide the spiritual growth and knowledge required to complete our paths and achieve our next spiritual level. The final smaller, barely-there waves, gently moving to the outer edge of the pan represent the last and final phases of our incarnations. The experiences of these lifetimes must be very exact. These small waves symbolize a soul ready to complete its karma and end its physical journey. When the waves stop and the water becomes still, our time here is done; our cycle on the Physical Plane is complete. Our soul has achieved its goals and understands the unique purpose for which it was created. Now, let’s return to the water that spilled out of the pan-the part of us that doesn’t incarnate. Besides the physical body, which is the water inside the pan, each soul has seven aspects of itself, all interacting with the physical self, and all having additional experiences on additional spiritual planes. Each of these seven bodies has a unique function, its own energy field or aura, and each are connected to our higher self or oversoul. There are many names for these other aspects, I refer to them as: the Physical Body, the Emotional Body, the Mental Body, the Astral Body, the Causal Body, the Etheric Body and the Celestial Body. Most of us are consciously aware of our physical, emotional, mental bodies; and, some of us, our astral bodies. The above are the primary bodies we use during our stay in the physical world. So, while on Earth, we have the Physical Body through which we obtain sensory experience, the Emotional Body which interprets and assigns a quality of feeling to those experiences, the Mental Body which reasons, processes and evaluates those experiences and the Astral Body which is responsible for creating those experiences.

When the waves stop and the water becomes still, our time here is done; our cycle on the Physical Plane is complete. Our soul has achieved its goals and understands the unique purpose for which it was created. When on the second or physical plane, our Physical Body should be the focus of our physical lifetime; it should be the only body operating in the physical realm, with the higher self directing from the upper planes. When we allow our Emotional Body or our Mental Body to be in control of our physical experience, we live lives focused on sensory experiences, caught up in our emotional and mental reactions to them. This can create huge imbalances in all our spiritual bodies, limit our spiritual achievements and prolong our cycle of karma. The Emotional Body resides between the Earth Plane and the third or Astral Plane. Both the Astral Body and the Physical Body use the emotional body to assign a quality to an experience. It usually travels freely between the two, absorbing energy it needs from kinetic energy on the Astral Plane. The Emotional Body has a long memory, because it never dies—this is evident when we initially meet someone and immediately have a strong reaction to them. This is its function, to be one aspect of evaluating the physical existence. Emotions transcend spiritual levels. When we die, our emotions remain intact. We always have, even in spirit form, the ability to feel love, anger, sadness and joy. The Mental Body, which exists on the fourth spiritual plane, evaluates our life experiences and the impact they make for the collective karma of our soul. Additionally, it will measure the amount of spiritual growth attainable through future physical experiences. It makes sure our collective soul utilizes every moment of physical life as effectively as possible. This makes the Mental Body a very important aspect of who we are. The next body, the Astral Body is an energy duplicate of the physical body and is the link between the physical plane and the Astral Plane. The Astral Body is nourished and absorbs energy from that plane, when we sleep. Also known as the light body, this part of us, plans and creates physical life interactions and events with other souls to further spiritual growth. This explains why we have a dream about someone and then run into them the next day. Our Astral Body is responsible for setting up that meeting, as well as many others. A healthy Astral Body initiates strong communication between the conscious and unconscious parts of our mind. If our Astral Body is anchored in the physical realm, then we are more or less walking blind, without guidance and victims of circumstances. EVOLVING… A GUIDE FOR CONSCIOUS LIVING

Now, we look at the spiritual bodies some may not be aware that they have. The first one, the Causal Body, is also known as the Upper Mental Body. This body evaluates karma. It evaluates the need for the soul to continue reincarnating and it understands the necessary path to take to be free from karma. When we meditate, pray, or slip into any kind of altered state, our experiences are translated through the Causal Body. When there is a spirit or soul with a strong connection to their Causal Body, that spirit radiates love and light. They are givers of energy, we feel good when we are near them. The Causal Body is the link to our Etheric Body, informing it when karma and missions are completed. The Etheric body, when housing a master soul, can change spiritual planes at will, appearing solid or less dense as required. It does not need to go through the birth process to become physical. In simple terms, the Etheric Body is our soul’s meter, conscience or moral compass. Truth changes, it is not constant, which makes right and wrong subjective to each soul. No two people have the same purpose for creation; so, no two people have the same path, the same lessons or karma. If everyone were to commit the same action, some would have a large bag of karma, as a result; some have smaller bags and some souls have none. It is the evolution of the soul, the experiences of the soul, the learning and knowledge of the soul, and the interconnections of each soul to its other bodies that determine the karma associated with an action. The Etheric Body comprehends God’s unique purpose for each creation. It knows why each soul was created, what purpose it has and how that purpose is best discovered and revealed. It measures and tests the growth rate of the soul and determines if that soul is worthy of advancing to higher levels. All moral judgments and all moral understandings come from the Etheric Body. The seventh spiritual plane is home to the seventh spiritual body, called the Celestial Body. It is the part of us that always remains with God. Part of our soul always vibrates in God’s presence, for which there are no physical words to describe it. Only a handful of souls every decade, make it here consciously. The Celestial Body’s main function is to sustain the flow of energy to the entire soul system. Additionally, it repairs, rebuilds or strengthens communication between all of our various bodies. The Celestial Body monitors all the other bodies and decides if any of them have become damaged—and whether or not to continue with the current incarnation. It may decide to end the physical life and put the Emotional, Mental, Astral and Causal Bodies into a deep state of rest. While these bodies are unconscious, it will repair, reprogram and re-plan the path for its progression. When we have completed the task for which we were created, our Celestial Body absorbs the energies of any of our remaining bodies. We vibrate only to light, serve light and produce the light of all that is. .


End of Times or

he December 21, 2012 date is gaining ground in the media. There are countless books, websites, magazine articles and newspaper headlines that debate its meaning with enthusiasts in two camps—those who forecast an apocalyptic end of time and those who see a coming renewal—a rebirth of consciousness. December 21, 2012 is the end date of the sophisticated, longcount calendar created by the ancient Maya in Central America. There are texts and traditions that have come down to us from the Maya that suggest that this is not just the end of a calendar epoch but the end of an entire age of the earth and that everything that has been built and accumulated in the last 5000 years will come to an end. According to the Maya, time is not linear like we think today— past, present, future; but, rather cyclical in nature which quite literally means that what goes around, comes around. The Maya saw repeating periods in history just over 5000 years in length—periods of time that would be repeated through a series of World Ages with highs and lows with beginnings and endings, apocalypse and renewal. The Maya were extraordinary astronomers—they were able to

foretell heavenly phenomenon centuries into the future. Carlos Barrios, a Mayan Elder, ceremonial priest and spiritual guide of the Eagle Clan, says that at sunrise on December 21, 2012, for the first time in 26,000 years the Sun rises to conjunct the intersection of the Milky Way. Some observers say this alignment with the heart of the galaxy in 2012 will open a channel for cosmic energy to flow through the Earth, cleansing it and all that dwells upon it, raising all to a higher level of vibration. Carlos reminds us: "This process has already begun. Change is accelerating now and it will continue to accelerate. If the people of the Earth can get to this 2012 date in good shape without having destroyed too much of the Earth, we will rise to a new, higher level. But to get there, we must transform enormously powerful forces that seek to block the way. There's a diversity of cultures and opinions, so there is competition, diffusion and no single focus." Carlos believes the dark side works to block unity through denial and materialism. It also works to destroy those who are working with the light to get the Earth to a higher level. They like the energy of the old, declining world of materialism. They do not want it to change. They do not want unity.

They want to stay at this level and are afraid of the next level. He goes on to say that this dark power cannot be destroyed or overpowered. It's too strong and clear for that, and that is the wrong strategy. The dark can only be transformed when confronted with simplicity and open-heartedness. This is what leads to unity. Being as spiritually starved as we are and subject to such a terrible world around us, we are looking for explanations. We all know there are earth changes taking place—polar caps are melting and global warming is everywhere and this is a solar system wide phenomenon—the polar caps on Mars are melting, the outer planets are more luminescent which means they are heating up so something is definitely happening. Whether or not we consider the changes on earth and in our solar system as evidence of a physical real world climax in 2012, many

believe that there is a coming shift in human consciousness. We are beginning to realize that we are no longer just physical bodies on a hard physical earth. We are energy and everything is made of energy; and, our consciousness keeps growing and we use more and more of our consciousness. In order to experience a rebirth and not destruction; however, it will be necessary to sweep away the old before something new— something more positive— something more hopeful—a new guiding spirit for the next 5000 years emerges. We preside over this change and it is our own choice with what we do with our own consciousness that will govern whether that change is for good or for evil.

Sagittarius (Nov. 22 – Dec. 21) You’ll have a blast this month! You might start a new relationship, discover a fun hobby, or just have great times with friends.
