ExclusivE THE EXCLUSIVE HOTELS and VENUES OFFICIAL MAGAZINE
A Warm Welcome... After the fantastic success of our first two magazines, it gives me great pleasure to welcome you to the third edition of the Exclusive Magazine, a chance for you to get to know Exclusive Hotels and Venues a little better. It’s been a busy period at Exclusive with some very exciting developments – even if I do say so myself. The Spa at South Lodge has been a project in the pipeline for over 5 years, and in December 2016 we finally broke ground. The Spa will be a stunning addition to South Lodge and is designed to make the most of the natural landscape. It will extend over two floors with a third level of outside terracing around the first heated natural swim pond in the country. You can read more about The Spa at South Lodge on page 54. In early 2017 the opportunity arose to purchase The Castle Inn in Castle Combe and we are now landlords of our very own pub! Situated at the end of The Manor House drive, the 12th century traditional English pub offers our guests an extra experience as part of their stay there. Guests can enjoy good quality, modern traditional pub food in a cosy and wholesome atmosphere and of course local and English beers are available to appeal to the discerning beer drinkers. Find out more on page 44. This year we are also toasting a partnership with Ridgeview to bring you a new house pour sparkling wine. Situated at the foot of the South Downs in Sussex, Ridgeview is a family business producing award-winning sparkling wine using traditional sparkling grape varieties and methods. Find out more on page 30.

Her Majesty The Queen and Adolfo Cambiaso
Guards Polo club Experience the thrills of the oldest team sport in the world at one of polo’s most famous clubs. Exclusive Hotels and Venues are proud to share an official partnership with the prestigious Guards Polo Club. With more than six decades of premier polo in an incredible location, Guards Polo Club and polo itself have a wonderful history.
The best place in the UK – if not the world – to see this great game is at Guards Polo Club, situated in the heart of Windsor Great Park in Surrey. Founded by HRH The Duke of Edinburgh in 1955, this Royal Prince remains the Club’s President to this day, watching games from the Royal Box with an expert’s eye.
The one sport that should come with a government health warning is polo. It is said that the only cure for this great game – which originated in Persia more than 2000 years ago – is either death or bankruptcy! Players race along manicured fields of play at up to 40 miles an hour, using only their weight and the speed and courage of their ponies to keep their opponents off the ball.
Guards Polo Club’s success is that it combines an impressive and ambitious fixtures list with a diverse membership, featuring royalty, the sport’s top players, leading amateurs and youth players. Heading up the players’ list is the World’s Number One Adolfo Cambiaso. He has been a 10-goaler – the highest handicap possible in the sport - for over 20 years.
EXCLUSIVE.CO.UK | 11
Although there are only ever a handful of 10-goal players in the world at any one time – currently they are all South American – they can always be found at Guards Polo Club in the summer, playing in the world-class Cartier Queen’s Cup tournament. HM The Queen first presented this trophy to the Club in 1960 and she regularly attends each final. Although the polo season may not be that long - games are played on grass in England from April to September - Guards Polo Club hosts more than 500 games in these five months, more than any other club in the country. Other key fixtures include the Bentley Motors Royal Windsor Cup, Hildon Archie David Cup, Land Rover Duke of Cornwall Trophy, La Martina Varsity Day, featuring Oxford v Cambridge, the Inter Regimental, Tempus Autumn Nations Trophy and the Royal Salute Coronation Cup, showcasing international test matches for both the England men’s and ladies’ teams. Guards Polo Club has 14 grounds, making it the largest club in Europe. It plays at two locations within Windsor Great Park – its original home at Smith’s Lawn, plus the newly created grounds at Flemish Farm, with their spectacular backdrop of Windsor Castle. Guards Polo Club also manages the polo at neighbouring Coworth Park. This world-class club is equally proud of its thriving, non-playing membership. With exclusive entry to the elegant, field-side Clubhouse restaurant and bar, which is managed by the private dining experts Mosimann’s, creators of the wedding dinner for the Duke and Duchess of Cambridge, members can also benefit from an excellent range of members-only events, international fixtures and privileged access within the Park. Not surprisingly, membership of Guards Polo Club is truly coveted, so it might surprise you to learn that non-playing membership fees are less than £500 per year and include badges for both the member and up to three guests. Out of season, Guards Polo Club takes its ethos of providing great sport for players and spectators to a wider audience. Its international programme of events includes tournaments in both Dubai and Argentina, plus an extensive reciprocal arrangement with the world’s top polo clubs.

Tee Time at The Manor The Manor House Golf Club, nestling on the edge of the Cotswolds is a true golfing gem. Designed by renowned BBC commentator Peter Alliss and his design partner Clive Clarke in 1992 it is now widely regarded as one of the finest golf courses in England. Set in 365 acres of spectacular Cotswold parkland and bordering the beautiful village of Castle Combe, the undulating landscape provides a great adventure for any level of golfer. Whether it’s a fully active membership, 18 holes with your buddies, a blue chip golf day, a golf society competition or a luxury golf break, The Manor House is the perfect choice. You know you’re in for a fabulous golfing experience when you stand on our dramatic first tee overlooking the waterfall. As you make your way around the course, you will experience dramatic drives into the valley below, nearly 80 troublesome bunkers, the odd water hazard and one of the prettiest finishing holes in golf. Built on a limestone base, the natural drainage of the golf course is truly superb – unless the cold, white stuff is covering the course, we’re open 365 days a year. The mature oak and beech trees that line the magnificent fairways together with the immaculate greens and the River Bybrook meandering through the middle, bring both drama and beauty to this Championship course. Here, Exclusive Magazine gives you a hole by hole guide to the course, full of hints and tips on how to play this glorious course.
EXCLUSIVE.CO.UK | 15
8th Hole
1 BAILEY PAR 4 | 363 YARDS | SI 9 This hole is set on the edge of the mott and bailey fortification. The opening drive needs to carry over a part of this. Once on the fairway, a short iron should remain to a narrow, yet deep, green that can prove difficult to hit. There is little space long and left, so be careful not to over club. 2 DIPPER BRIDGE PAR 3 | 151 YARDS | SI 13 One of several holes that meander their way through the stunning Bybrook Valley. A scenic par 3 that requires a mid to low iron to seemingly generous target. However, looks can be deceptive! The green itself is undulating, so very seldom will you have an easy putt. Hitting the green is very important as the Bybrook is awaiting any stray tee shots. With Out of Bounds long and bunkers guarding the front and right, this is a truly great short hole. 3 HATCH PAR 5 | 600 YARDS | SI 1 The longest hole on the course and only reachable in two by the longest hitters. The hole itself is dead straight and played down a narrow avenue of trees. Accuracy is the key. Well placed fairway bunkers threaten your drive. Plenty of thought must be given to the second shot where a large fairway bunker on the right must be avoided. The green is protected by bunkers to the left and trees right. There is a ridge running through the middle, so hitting the correct level is critical.
2nd Hole 4 DUNSTAVILLE PAR 3 | 220 YARDS | SI 7 A long and tricky Par 3. Between tee and green is a huge bunker and, to the right of the green, two more bunkers. The green itself, which is long and narrow, is set at an angle and slopes from right to left. The tee shot that finds the putting surface is a good one, but the sand wedge is more than likely going to be needed. 5 TRIANGLE PAR 4 | 467 YARDS | SI 3 A stunning Par 4 that would challenge anyone. The hole doglegs to the right with bunkers on the right that only the very long way wish to take on. With trees down the left, grassy hollows strategically placed, additional bunkers, a lake on the right and an extremely narrow green, anyone making par here has performed admirably! Beware – when playing the 5th any ball coming to rest on or beyond the 6th is Out of Bounds! 6 LAKE PAR 5 | 507 YARDS | SI 15 This mid length Par 5 doglegs to the left. The tee shot is played over water, but the mound on the corner can hamper access to the green, which is long and narrow. The large oak tree and the hollow to the right provide protection for the green. A definite birdie opportunity.
5th Hole
7 MACKENZIE PAR 5 | 549 YARDS | SI 5 If the previous six holes tested your accuracy off the tee, then this hole will definitely make you think! The hole doglegs to the left with a drive that must negotiate the avenue of trees. The green can be reached in 2 by the long hitters, but the smart play is a lay up leaving a wedge to the green. This hole will certainly reward players who shape the ball, but beware – the lake on the left is Out of Bounds! 8 STEPPING STONES PAR 4 | 309 YARDS | SI 17 A stunning hole falling back down the valley. The green is certainly reachable from the tee, but will require both distance and accuracy to hit the target. Danger runs up the left side in the form of the Bybrook – beware as in and over the River Bybrook is Out of Bounds when playing this hole. A definite birdie chance. 9 CASTLE PAR 3 | 183 YARDS | SI 11 A testing Par 3 not only because of its length but also due to a raised green that has three levels and is extremely narrow. Avoid the deep bunker at the front of the green.
Halfway House
Be sure to stop off at our stylish Halfway House for a refreshment or two before you take on the final 9 holes. EXCLUSIVE.CO.UK | 17
10 OLD PLANTATION PAR 4 | 378 YARDS | SI 14 Hitting the fairway is paramount due to the mounding on the both sides. The ideal tee shot is one that is drawn, hugging the left side. The green is well guarded with bunkers left and mounds on the right. Beware – Out of Bounds is on the driving range to the left defined beyond the staked trees! 11 SCHOOL PAR 3 | 222 YARDS | SI 6 This is seriously challenging Par 3, especially from the back tee. Although downhill, the hole still plays long, as it is normally into the prevailing wind. With Out of Bounds left, trees right and a green well protected by bunkers, a par once again is a very good score. 12 DOOLITTLE PAR 5 | 498 YARDS | SI 2 One of the most visually stunning Par 5’s you are likely to see. The hole doglegs across a valley, with heavy rough, the River Bybrook, the lake and bunkers to negotiate before you reach the green. Take a fairway wood of long iron off the tee to ensure playing your second from the short grass. The green can be reached in two but it requires a long shot. The green undulates and hardly has a straight putt. The best of luck! 13 BROADMEAD BROOK PAR 4 | 289 YARDS | SI 8 Despite its length this hole plays extremely tough. The tee shot is narrow so a long iron can be used for accuracy, but a driver would enable you to get closer to the green. Again, hitting the fairway is important to give an even stance for your second, but bear in mind that if you can make the carry there may actually be more room to the right than you think. Level par through here and you have done very well! 14 NETTLETON PAR 4 | 332 YARDS | SI 16 Perhaps a bit of respite! The hole doglegs very slightly to the right. Although not a long hole, the fairway is narrow and requires a straight tee shot. Avoid the bunkers and the mounds to leave an approach that gives you a chance of making 3. Anything short will end up in one of the greenside bunkers.
18 | EXCLUSIVE.CO.UK
12th Hole
15 FOSSEWAY PAR 5 | 492 YARDS | SI 12 A par 5 from the black, white and red tees that will test accuracy off the tee, your long game for your second and probably your short game for your third! The fairway is wide, but from the tee it looks intimidating with the trees left and right. Your second requires a carry across two huge bunkers to get on, so a lay up is often the wiser choice. The green is long and has further protection with bunkers right and a grassy hollow left. 16 GATCOMBE
17th Hole
PAR 4 | 402 YARDS | SI 4 A tight Par 4 that doglegs to the right. Take care over your club selection on the tee as the fairway is very narrow. The bunker and trees on the left are to be avoided. A blocked drive behind the trees on the right will definitely prevent access to the putting surface. The approach to the triangular shaped green tests your accuracy. Missing the green will leave a difficult up and down from sand traps of grassy bunkers. 17 BURTON BROOK PAR 3 | 154 YARDS | SI 18 A simply breathtaking hole! The hole drops down 120 feet to two greens which give variation – and both play differently. The right green has the River Bybrook protecting the left side and the front. The left green undulates and has bunkers and water at the back to pick up misguided shots. Club selection and judgement of distance are vital to hit the greens, but please use the Drop Zones if you find the River Bybrook. 18 WOODBURY
18th Hole
PAR 4 | 384 YARDS | SI 10 A classic finishing hole. Often described as the prettiest finishing hole in England! The drive is narrow with trouble left and right. Aim at the large tree and fade or draw to the fairway. The right side offers safety, but the left gives a more direct approach to the green. A four here will definitely hit the spot. You would have a 'fairway' to go to enjoy a better golf break! Whether you choose to stay in our luxurious five star hotel, The Manor House, our quaint Waterfall Lodge overlooking the 18th green, or The Castle Inn in the heart of the village, you will be sure to enjoy the most memorable golf break.

Double Take Finding the perfect engagement ring is no easy feat, and for many the thought alone of searching for ‘the one’ can be extremely daunting – your engagement ring will symbolise your eternal love, commitment and the special connection the two of you share together so it’s important to conduct some sneaky research on your partner’s vision and the current styles in vogue. 22 | EXCLUSIVE.CO.UK
Although fashion designers are the driving force behind the constant changing of trends throughout the seasons, it’s their iconic ambassadors who allow the styles to gain momentum across the globe. So it’s no wonder that this pattern extends through to the jewellery world too. For celebrity engagements in particular, the world becomes infatuated with each fine detail of the proposal, from the surprise, location and of course – the ring. It’s this obsession and thirst for copying trends that has fuelled the desire to own the same jewellery as our famous counterparts. However with the media reporting every movement our favourite celebrities make, it’s no surprise that an element of competition has arisen between the stars. Elaborate proposals and extravagant rings have set the bar to impress not only their loved ones but the rest of the world in turn. For most of us though, the possibility of being able to afford a ring worth a few million in this lifetime is an unrealistic fantasy, but that doesn’t mean we’ve been priced out of the market by the elite. There’s an array of gorgeously striking replicas available online to purchase, so that you can share a piece of the magic your much-loved celebrity enjoyed, for a fraction of the price they paid. We’ve compared a few of the most infamous, timeless rings the world fell in love with to similar rings available from Wakefields Jewellers in West Sussex...
KIM KARDASHIAN & KANYE WEST The Kardashian family are dominating the media, minds and hearts of people across the globe, in particular the power-couple Kim and Kanye, whose extravagant proposal to Kim on her birthday in October 2013 has since been broadcast to the world via the family’s hit TV show ‘Keeping up with the Kardashians’. Not one to falter on fine details, Kanye whisked Kim away to San Francisco’s AT&T Park and arranged for a full orchestra to play Kim’s favourite song whilst he made his proposal, with their family and friends watching alongside. However, the ring he presented to her could not be outshone by the emotional magic and surprise of the moment. Known for his impeccable taste and sense of style, Kanye helped to design the flawless, cushion cut, 15-carat diamond ring from Lorraine Schwartz, said to be worth upwards of $1.6 million. The stunning piece fits perfectly with the couple’s lavish lifestyle through its undeniable beauty and contemporary design. Wakefields alternative (left): 18ct White Gold Certificated Oval Diamond Cluster Ring, £8,595
KATE MIDDLETON & PRINCE WILLIAM Kate Middleton took the world by storm in November 2010, when Prince William announced their engagement. Both royalists and patriots alike were overwhelmed with joy to hear the exciting news from the happy couple. From this point onwards, Kate has become somewhat of an icon with her look exuding confident, elegance, style and class; a refreshing update for the royal family, the likes of which hadn’t been seen since William’s mother Princess Diana. The future King of England presented Kate with an incredibly sentimental piece of jewellery, a striking blue sapphire ring which had belonged to his late mother. The ring was estimated to be worth £28,000 when purchased in 1981, but is now valued at £300,000. Featuring a 12-carat sapphire surrounded by 14 diamonds, the ring is undoubtedly an outstanding, timeless piece that’s design marries harmoniously with the quiet, confidence that Kate consistently emanates. Wakefields alternative (right): 18ct White Gold Oval Blue Sapphire & Diamond Cluster Ring, £5,195.
GEORGE CLOONEY & AMAL ALAMUDDIN Infamously gorgeous bachelor, George Clooney, finally settled down with human rights lawyer, Amal Alamuddin in early May 2014. After a string of notably attractive girlfriends, George was reportedly hypnotised by Amal’s beauty, intelligence and sophistication. So it seems only fitting that he would choose a ring which truly encapsulates the pair’s classically, elegant allure and charisma. Selecting a 7-carat, emerald cut diamond engagement ring which is estimated to be worth £415,900, George proved his impeccable taste in jewellery is equal to his own personal style. Wakefields alternative (left): Platinum Four Claw Emerald Cut Diamond Ring, £3,495
MILA KUNIS & ASHTON KUTCHER Childhood sweethearts and co-stars, Mila & Ashton coyly announced their engagement in February 2014. Preferring to keep their private lives out of the spotlight the pair had been slow to comment on the developments in their relationship. However there was nothing bashful about the incredible engagement ring Ashton presented to Mila, the gorgeous piece of jewellery is a very traditional, round-cut diamond mounted on a platinum band. Estimated to be worth at upwards of $250,000, the classic and timeless design of the ring runs parallel with the couples grounded and down to earth personalities – a stunning example of ‘less is more.’ Wakefields alternative (right): Platinum Certificated Brilliant Cut Diamond Cross Over Ring, £2,965.

unadulterated luxury You just have to glance in a bathroom showroom to see the influences of hotel styling. Double sinks, feature baths and huge rain bar showers are becoming the norm and are affordable rather then exclusively accessible to the luxury market, so at Exclusive we have taken the bar and raised it.
The bathroom is often known as the smallest room in the house, however at Exclusive this is certainly not the case. Wow-inducing bathrooms have become as important as the luxury bedrooms in our properties. We perceive them to be a great opportunity to showcase imaginative design given some of the challenges the buildings deliver; the cave bathroom in the Sidelands suite at The Manor House certainly proves this. Beautiful materials and alternative textures, from stone tiling to original timbers create interest. Stunning mosaic tiles mixed with Italian marble cover the under floor heating - there are no cold toes here! The lighting is both subtle and mood enhancing whether you’re enjoying a long relaxing soak in the bath tub or a quick invigorating shower first thing in the morning.

The Twickenham suite at Pennyhill Park even has a spa bath big enough for eight people! From Tent to Tv Exclusive welcomes Welsh cook, food writer and TV presenter Beca Lyne-Pirkis to SEASON, the Exclusive Cookery School at Lainston House. Jackie Harmer chats to Beca on behalf of Exclusive Magazine to find out about life before and after being a contestant on the Great British Bake Off in 2013. Beca shot to fame after taking part in The Great British Bake Off in 2013 where she was fortunate to become part of the 13 strong contestants in the show. She was persuaded to take part by her family and friends who clearly recognised her passion and skill in the kitchen. With slight reluctance after recently having her child, her competitive nature drove her to take the opportunity to challenge herself to take part in the prestigious cooking show. With a family of ‘food lovers’, they taught Beca all they knew and this is where her love of good quality, home cooked food started. From Wales, she moved to London and embarked on a career in corporate sponsorship, however, she always harboured a dream to get into the food industry, but had absolutely no idea how to make it happen. She never foresaw her career break would be on a TV screen in front of millions of viewers. As a person who likes to push her own boundaries and learn new skills, the Bake Off gave her a platform to excel with all her talents and fulfil a dream that she had nursed for many years. However it certainly wasn’t without its challenges. Dealing with the stress of baking in front of cameras and coping with criticism in a very public arena week after week can take its toll. But once the semi-final programme aired, to her delight, the phone started ringing immediately with offers of work in the food industry; her dream was now becoming a reality. Beca was thrilled to be offered the opportunity to present her very own cookery show on the Welsh Television Network. Her show has proven to be a great success and is now on its fourth series with a one off Christmas special also commissioned. Beca describes herself as a cook rather then a baker, and it’s clear from the success of her cookery show that Beca has an all round talent for cooking, not just baking. The show allows her to write, present and cook whilst also coming up with unusual takes on the cookery front, most recently with Beca launching a new initiative with Pop Up Supper Clubs. The career opportunities continue to come knocking, including Exclusive Hotels and Venues who after a successful first class, have invited Beca to host a number of their classes at SEASON.

BlAcK TREAclE PuDDiNG REciPE SERVES 6-8 SPONGE 75g Dates, chopped 75g Butter, soft (plus extra for greasing) 50g Dark Brown Sugar ½ tbsp Black Treacle 2 Eggs 1 tsp Vanilla Extract 140g Self-Raising Flour 1 tsp Baking Powder TOFFEE SAUCE 300ml Double Cream 150g Dark Brown Sugar 55g Butter
METHOD Grease an oven dish measuring 20cm x 15cm and preheat the oven to 160C Fan/180C/Gas 4. Place the chopped dates along with 100ml of boiling water into a saucepan over a medium heat. Bring to a simmer and cook for 2-3 minutes until the dates are soft and have absorbed the water. Meanwhile cream the butter and sugar with an electric whisk until light and fluffy. Add in the vanilla and treacle, then the eggs one at a time, and then fold in the flour and baking powder. Whilst the sponge is cooking, make the toffee sauce. In a saucepan place 150ml of the cream, the butter and sugar and heat gently until the sugar has dissolved. Turn up the heat and bubble for 3 minutes until the sauce is glossy. Now add in the remaining cream. Serve the pudding with a heavy slug of toffee sauce and a generous scoop of vanilla ice cream.
Situated in a renovated 17th century well house in the stunning grounds of Lainston House near Winchester, SEASON offers classes as diverse as the perfect dinner party, gluten and wheat free baking, soufflé master classes and of course good old fashioned cake baking. “SEASON offers a unique and thrilling opportunity for enthusiastic amateur cooks to learn and hone their skills,” says Beca. “The high quality bespoke kitchens and state of the art technical gadgets within the school and the stunning location makes SEASON a great place to teach.” When the subject of great traditional British puddings came up, there was quite a discussion about the delicious traditional puds which have seen a resurgence of popularity in recent years. Beca’s own particular favourite is sticky toffee pudding. “It evokes lots of lovely childhood memories, both baking with my mother or grandmother and school dinners where the puddings were always the favourite bit – just the thought of it makes me salivate!” Kindly Beca has whipped up a special recipe treat for all our lovely readers to try out and enjoy. Range Rover velar “Velar is now the compelling, stand-out design in the class, showcasing perfectly optimised volume, powerful, taut surfaces and a stunning silhouette. Gerry McGovern, Chief Design Officer, Land Rover.

The Range Rover Velar brings a new dimension of glamour, modernity and elegance to the Range Rover family. Designed to fill the white space between the Range Rover Evoque and Range Rover Sport, the Velar offers levels of luxury, refinement and all-terrain capability never before seen in the mid-size SUV segment. This is a new type of Range Rover for a new type of customer. Created from a clean sheet using Jaguar Land Rover’s Lightweight Aluminium Architecture, the Velar represents the next chapter of the Range Rover success story. Velar is defined by a visually reductive approach and meticulous attention to precision in every detail, which evolves Range Rover DNA and previews the next generation of Range Rover vehicles. Velar’s design is beautifully balanced, from its powerful proportions to its continuous waist line through to the taut tapered lines of the rear. The generous wheelbase contributes significantly to its elegance while helping to provide a spacious interior. The large alloy wheels – in particular the range of 22-inch designs – optimise the vehicle’s stunning silhouette, while further enhancing Velar’s dramatic presence.

Advanced technology is pivotal to the contemporary design: the full-LED headlights are the most slender ever to appear on a production Land Rover vehicle. The flush deployable door handles emphasise Velar’s reductive, sculptured form, and contribute to the low drag coefficient of only 0.32 – this is the most aerodynamically-efficient Land Rover ever produced. Look inside Velar’s interior and you will see elegant simplicity, sophistication and refinement. An unwavering belief in reductionism has been fully employed, with switches being kept to an absolute minimum to help create a calm sanctuary. Design enabling technology has been engaged fully to create the new Touch Pro Duo infotainment system which is the centrepiece of Velar’s interior. Touch Pro Duo features two 10-inch high-definition touchscreens integrated seamlessly behind secret-until-lit surfaces. These slim, intuitive displays work in harmony with the cabin architecture while adding an overall sense of modernity congruent with the vehicle’s exterior design. All of this is equalled by the Velar’s practicality: luggage compartment volume is an impressive 673-litres. Unique in the segment, the Velar offers a sustainable, premium textile seat material as an alternative to leather. The Dapple Grey material was

A Naturally Exclusive Partnership Natural Spa Factory, co-dependent of husband and wife team Jeremy and Emma was established in 2009 to provide spas with a natural alchemy and product creativity that was unrecognised within the industry. In pursuit of naturally inspired, authentic products their ambition was to curate exceptional, bespoke treatments and home spa products, which are now happily making an impression both in and outside the confines of the industry.
The duo’s passion, likened to a chef creating a Michelin feast feels as though it’s poured into every last bottle, pouch and jar that leaves the building and it’s this, plus the couples’ combined expertise, that has meant they have an innate understanding of what works well. Truly independent and not a carbon copy of a large, overly manufactured main stream brand, Natural Spa Factory is nestled on the outskirts of the world heritage city of Bath, with the rolling Somerset countryside as its backdrop. Sourcing botanical and sustainable ingredients like herbs, plants and flowers, to create a beauty banquet for your skin is hugely important, the finest ingredients are also selected for their relationship with the seasons and nature. Coupled with a dose of science means the products work with many spa professionals, now big supporters. Passionate advocates of the good that spas provide, and the people that work inside them, they believe this service led industry has unique qualities that should be expressed through individuality. The partnership with Exclusive Hotels and Venues exemplifies this. Working closely with the team at The Spa at Pennyhill Park, Natural Spa Factory has designed a custom range of 30 products to perfectly complement The Spa’s settings, ethos and treatments. All the handcrafted products refrain from using as many synthetics as deemed reasonable, without denying the product its ability to do its job or create the magic. They all come with Natural Spa Factory’s not very secret ingredients: inSPAration, innovation, honesty and the reassurance that they are never tested on animals. If you’re visiting the The Spa at Pennyhill Park, an opportunity to explore the experience really is a must - natural, botanical and effective treatments, with superlative service. Our recommendation? Well this is tricky, but why not try the signature body scrub treatment with three scintillating options, followed by a delicate yet nourishing gold facial. The Great coffee Adventure In 2005 Grant Lang created the world’s first solar and wind powered art covered coffee cart after buying an Indian tuk tuk with a student loan cheque. It was from this small yet remarkable cart that the Mozzo® adventure began. After a few years based in the South East spreading the Mozzo magic and bringing together coffee, art and community, Grant semi-retired the cart (although it still makes special appearances!) and instead began focusing on roasting and sharing Mozzo’s own high quality coffee blends. Thanks to the passion of the Mozzo Masters, their personal customer service approach and the quality of the coffee, Mozzo was soon infiltrating discerning high end venues across the capital. Of the adventure so far Grant remarks, “Our journey thus far has been extraordinary. In founding Mozzo I set out to build a business whose success will be measured by the commercial, social and environmental contributions it makes and we remain committed to creating a positive impact in whatever we do.” From their home at Mozzo World (The Roastery) in the heart of Southampton, Mozzo small batch roast a series of Espresso and Filter blends using some of the finest coffees available. Their house range of coffees, the Mozzo Label Series, deliver consistent taste profiles year after year while the Mozzo Origins collection showcases the individual talents of the coffees within their own Community2Community Fund™ (C2C Fund™) program. Exclusive Hotels and Venues and Mozzo Coffee started their partnership in 2016, with a passionate shared objective to offer guests the very best coffee experiences at all points across the business. With Exclusive Hotels and Venues visitors being some of the very first to experience the new selection, 2017 sees Mozzo launch their new capsules range. Offering a choice of 4 delicious capsules, all packed and roasted in the UK, the range consists of 2 carefully crafted espresso blends, a high quality Swiss Water® process Arabica Decaf capsule and an exclusive single origin coffee from Mozzo’s C2C Fund™.
66 | EXCLUSIVE.CO.UK
THE COMMUNITY2COMMUNITY FUNDTM Inspired by a visit to the DRC in 2014, the following year Mozzo set-up the Community2Community Fund™ (c2cfund.org) to enhance the positive impact made within the coffee value chain by all those choosing to purchase Mozzo. Initially investing 5p per kilo of coffee sold into the C2C Fund™, with the launch of coffee capsules in 2017 Mozzo has now increased the Fund contribution to include a further 1p for every capsule sold. Focused on initiating and supporting the progressive development of marginalised coffee farming communities, the C2C Fund™ is currently working with Twin Trading to support Muungano, a start-up coffee cooperative in the DRC, Lake Kivu region. Muungano, meaning togetherness in Swahili, is the guiding principal of the cooperative located close to the shores of Lake Kivu in eastern DRC. In one of the poorest countries in Africa, and without so much as an office or computer to their name when Grant first visited in 2014, Muungano had one thing up their sleeve... sensational coffee! Muungano’s farmers have the perfect conditions to produce top grade speciality washed-Arabica coffee and they are committed to improving quality. Since that first visit, the C2C Fund™, together with Mozzo’s social enterprise partner Twin Trading, has so far built Muungano their first office, employed 7 full time staff as well as employing 6 temporary Field Officers (Agronomists), built a cupping lab & quality control facility as well as 10 drying tables. More recently, the main washing station that was badly damaged by landslides in 2016 has been renovated and more drying tables have been built. In addition, 2017 has seen an internet line installed through satellite enabling much more efficient communication. Visit c2cfund.org to learn more about the work of the C2C Fund™. You can also discover more about Mozzo and treat yourself to some positive impact coffee capsules at home via mozzocoffee.com
H2O Respected water expert Tommaso de Cristofano, is the Restaurant Manager at The Pass at South Lodge, an Exclusive Hotel. Here Tommaso shares his passion and knowledge about the diverse flavours and merits of water. We hear a lot about staying hydrated in this hectic world of 21st century stress and pressure. People walking around carrying bottles of water have become common place. Water is the source of life both for humans and for all of our food sources. We cannot live without it, it is essential for our health and wellbeing. It would not be too greater claim to say that water sustains us – we can live without food for many days, but not without water. Tommaso explains how he was introduced many years ago in his home country of Italy to a water menu at a restaurant. Now, having spent over
68 | EXCLUSIVE.CO.UK
14 years earning his credentials in fine dining restaurants around Europe, he brings his extensive knowledge of water to The Pass. The Pass offers a water menu put together by Tommaso himself where guests at the hotel can enjoy the water delights from his top list. Tommaso explains how it is a great misconception that water has no flavour. All water has to be examined from a temperature, texture and flavour point of view. Water is never flavourless and an expert can distinguish natural waters apart, just like wine, and all have a high natural mineral content. For example, Voss water, which is Norwegian, has a high mineral content as it emerges from a natural underground source and is protected from pollutants by rock and ice. It has a very metallic flavour which dries your tongue and palate. The water Tommaso would recommend as having the highest mineral content would be Vichy Catalan. Discovered in 1881, it emerges from
the ground at 60 degrees celsius. It should be served at this temperature to appreciate its true uniqueness. For many years it could only be bought at pharmacies until after the end of the second world war when it was often recommended as a natural and safe remedy for many health conditions. Tommaso’s favourite waters are naturally sparkling. The very best, in his opinion, is Badoip, which was discovered in 1778 in France and offers a distinctive fresh and lightly, salty taste. Another water top of Tommaso’s list is a Danish water known as Iskilde, an artisium water that comes from 60 metres below ground and emerges through quartz rock. The water is highly oxygenated and if you shake the bottle it may well appear to go cloudy, but once poured it has a delicious silky texture with a sweet flavour.
EXCLUSIVE.CO.UK | 69
Like any good Sommelier, Tommaso is an expert at pairing water with food, and can confidently recommend a water to complement the dishes served in The Pass. Tommaso explains, “This stunning dish called #SAMO by Ian Swainson, Head Chef of The Pass, is inspired by Basquiat and consists of suckling pig, stinging nettle puree, black garlic, and truffle cream sauce. I would pair it with the Vichy Catalan naturally sparkling water. This water has a very big mouth feel with large bubbles which enhances the richness of the dish. The minerals in the water play an important part when served with this dish, they give a very distinctive flavour similar to that of salt which works really well with the soft roasted pork. They also balance the iron flavors from the nettle puree as well as the aroma from the truffle. As a wine comparison I would reach for a rich red wine. I look forward to welcoming you to The Pass and sharing my knowledge and passion with you.

Taittinger comtes de champagne TiMElEss clAssic
Taittinger Comtes de Champagne Blanc de Blancs 2006 “A smouldering, complex, steely yet floral, toasted-almond jewel Jane Macquitty, The Times (Luxx), 3rd December 2016
Crayeres
Champagne Taittinger is well known for the quality, finesse and elegance of their Champagnes, but their Comtes de Champagne Blanc de Blancs is in a league of its own. It is the Champagne House’s top prestige cuvée, the pinnacle of their range, made with precision and great attention to detail… not unlike the fine engineering that goes into making a high performance car, maybe an Aston Martin for example. The name Taittinger has been synonymous with fine Champagne since 1931 and today it remains the only leading Champagne House to be owned and actively managed by the family named on the label, headed up by Pierre Emmanuel Taittinger, along with his daughter, Vitalie and son, Clovis. This brings a passion and focus on quality which is second to none.
“The family aspect is crucial. It is a philosophy, and a guarantee. We sign all our bottles – a great responsibility” Pierre Emmanuel Taittinger
Abbey. These magnificent Taittinger cellars hewn into the limestone bedrock were awarded UNESCO status in 2015. Stretching underground for several miles, these cellars are central to the ageing process of Taittinger Champagne and have many a story to tell. It is here that the bottles of Comtes de Champagne, gently slumber; turning occasionally in remuage* - ensuring the finest results after eight years or more of bottle ageing. A visit to see the various vintages gently maturing in these peaceful impressive cellars is certainly worth the trip. This final part of the recipe guarantees a delicate and sophisticated wine, bubbling with layers of complexity and depth. 60 YEARS – A TREND IN THE MAKING The story of this fine wine can be traced back to 1952 and at the time it was considered radical to make a delicate, fragile Champagne from just the Chardonnay grape – the fashion at that time was for heavier, robust styles. Taittinger began a trend for an elegant, sophisticated, fresh style. The family created this rare and precious cuvée as a homage to the Comtes (counts) de Champagne, the lords of the SaintNicaise Abbey, and to Thibauld IV in particular, the conqueror who was driven away from the Champagne region on a crusade as the result of a forbidden love. He eventually returned from the Holy Land, bringing with him two treasures. The first, a vine, the ancestor for the Chardonnay now grown in Champagne and the source for this Blanc de Blancs; and the second, a rose, the Damascina which ultimately became the source of the mother of all the roses that flower in Europe. The Taittinger crest bears an image in memory of the famous Thibauld, the seal marking each bottle. Presented in a unique 18th century antique style bottle, this timeless classic has superb ageing potential and over time matures into a rich, complex beauty but retains the distinctive Taittinger style of elegance and lightness together with a beguiling minerality and extraordinary never ending finish.
Taittinger Reims
A CLOSELY GUARDED RECIPE This hand crafted cuvée is made in limited quantities and only when the harvest is of exceptional quality and worthy of a vintage year. As a Blanc de Blancs it is made entirely from Chardonnay grapes which come from 100% rated vineyards. ‘La crème de la crème’, they are known as the Grand Cru. Taittinger select their fruit from the Grand Crus of Avize, Cramant, Chouilly and Le Mesnil-sur-Oger in the Côte des Blancs, each Cru brings a specific characteristic to the blend such as minerality, structure or fruitiness. It is the skill of the Chef des Caves, Loic Dupont to blend the wines produced from these villages when he considers the vintage to be good enough, to make the best possible Chardonnay blend. Once Loic has carefully shaped the wines they are then left to slowly mature on their lees, some 18 meters deep underground in the 4th century Roman cellars which once belonged to the Saint-Nicaise
Perfect on its own as the ultimate aperitif, it also makes a dinner fit for a king when matched with lobster and a simple melted butter sauce or grilled Dover Sole. A Champagne to share, propose with, toast to love and success, or to simply be selfish with. A classic for any time or occasion. *The gradual turning and inversion of the bottle to bring the sediment into the neck of the bottle prior to their removal.

At Exclusive Hotels and Venues, we understand that many of our guests are pet owners and that a break away just isn’t the same without their four-legged companion next to them. We love welcoming waggy tails and take pride in making their stay just as special as their owners, with their very own bed and treats to enjoy. Here are a few top tips to make sure they reach us safe and sound - or should that be safe and hound? Lead, collar and ID tag. It’d be awful if your dog was to get loose in an unfamiliar location, but without any form of ID it’d be a disaster! Ensure your dog is ID’d so if the worst was to happen, they can be returned safe and sound. Food, water, bowls. Bring along a sufficient supply of the food your dog is accustomed to eating. Plenty of water, for the journey is a must. Always bring more then you think you’ll need just in case the traffic is not your friend that day! Blankets. Bringing a favorite blanket that reminds your pet of home can aid a calm journey and a quick settling period into hotel life. Plan your stops. Always plan ahead where you can take a rest stop to stretch legs and do any doggy business! Train Travel. If travelling by train, check the rail carrier will accept pets before you purchase your ticket. Taxis. If you require a taxi at the other end, check in advance they accept dogs as this can be at the driver’s discretion. Once you arrive at one of our stunning properties, we’re confident that your furry friends will enjoy their stay with us just as much as you will. We have local walks at the ready to recommend and acres and acres of grounds, woodlands and parklands to explore. If you’ve forgotten your walking boots, fret not as we have wellies at the ready. After a long walk, there’s always time to curl up and take a well deserved nap in front of an open fire whilst you have a spot of afternoon tea - how very British! We look forward to welcoming you and your special companions.

Perpetual calendar Patek Philippe is the creator of many of the world’s most complicated timepieces. As the undisputed expert in the art of watchmaking the company has over 100 major patented innovations and the largest collection of complicated watches in regular production. The perpetual calendar is included in this vast array of complications.

A perpetual calendar displays the day, date and month of the year on a watch whilst automatically taking leap years into account. Pope Gregory XIII corrected the previous Julian calendar in 1582 by adding leap days according to a different rule ‘century years are no longer leap years unless divisible by 400.’ This brought the civil calendar year closer to the duration of the solar year which is around 365.24218 days long. The perpetual calendar understands this correction and displays the information accordingly.

Company founder Jean Adrien Philippe has long linked perpetual calendars to Patek Philippe since the patent of the mechanism in 1889. The Ref No. 97 975 introduced in 1925 was the world’s first perpetual calendar wristwatch and the innovation established the company as the master of the complicated wristwatch. Today the device remains just as popular with two ways of reading the classic grand complication. Reference 5496R-001 uses apertures to display the day and month whilst use of sub-dials on something like the Reference 5140P-013 is an alternative. This watch is key to the Patek Philippe perpetual calendar family as it houses the self-winding 240 Q movement. At a mere 37.2mm thin you must admire the ability to fit the complication into this ultra-thin movement. In 2016 Patek Philippe introduced a new range of perpetual calendars featuring this ultra-thin movement in a newly refined case. In recent years there is a growing interest not only for ladies mechanical watches but for ladies watches with complications. With ladies watches such as the perpetual calendar Patek Philippe are answering a fast growing desire for additional functions and answering the demand for ladies’ wrist grand complications. Ref. 7140R launched in 2012 is ladies first perpetual calendar with ultra-thin self-winding movement. www.mallory-jewellers.com www.berrysjewellers.co.uk

Easy luxury Based in Suffolk, EPOC Handcrafted Beds has been designing and making high-quality beds and bespoke mattresses for the past 68 years. “It’s not about showing our customers what we make, it’s about making what they want,” says Colin Payne, Director of EPOC Handcrafted Beds. This is no idle boast, with the company being one of the finest manufacturers of bespoke divan beds and mattresses in the UK. “Beds are our passion,” explains Colin. “Not just any bed, mind you, but beds that fit the customer perfectly. It doesn’t matter to us what size, shape, mattress tension, storage arrangement or fabric the client wants to use – the answer is ‘yes’.” For that matter, it doesn’t matter where a customer is based either. The Suffolk-based company has shipped beds as far afield as the Bahamas, the south of France, the USA, Qatar and Dubai. It doesn’t even matter how many beds a customer requires, EPOC Handcrafted Beds has kitted out many a luxury hotel, as well as clients with multiple properties.
“The service received from EPOC Beds has always been highly professional and efficient and the products are consistently of a very high standard. I am sure we will continue to work together in the future.” Danny Pecorelli, Managing Director, Exclusive Hotels and Venues
BESPOKE BEDS The key to the enduring popularity of an EPOC bed is the quality of the materials and the quality of its finish. The firm’s mattresses are hand-filled and hand-stitched at its headquarters in Suffolk – customers can even go and view the beds being made. Mattress fillings comprise only the highest quality natural materials: coir, hair, cashmere, lamb’s wool, mohair, silk, wool and bamboo. These are matched with a spring that produces the exact tension sought by the customer – even if that means more tension on one side than the other. Then there’s the shape of the bed, which EPOC can customise as required. “We spend more than a third of our life asleep, so an EPOC bed is one of the best investments our customers will ever make,” says Colin. “We are very proud of the products we make and of the level of customer service we provide.” A discerning clientele of high-end interior designers and hoteliers are already in on the secret. Other customers come via word of mouth with a host of specific needs. A recent customer, for instance, wanted to sleep on exactly the same bed in each of the four properties that he owned. Another ordered an 8-ft diameter round bed to fit the centre of his daughter’s room, which required a specially designed and upholstered headboard. Yet another, who lives in a castle in Scotland, wanted a taller than average divan to fit into his four-poster bed. Not all clients are residential. EPOC recently made a bespoke bed deliberately designed to fit into the low-ceilinged corner of a hotel room. In fact, some customers discover EPOC beds thanks to a wonderfully restful night’s sleep enjoyed in one of the many five-star hotels to which the company provides beds. AN ENGLISH INSTITUTION Established in the East End of London by Joseph James Cope in 1949, EPOC was founded with one overriding ambition: to build the finest hand-made beds possible. Some 68 years later, this ambition remains the same. “With today’s technology we could make beds quicker, cheaper and in greater volume,”says Colin, “but we don’t. Although times and manufacturing techniques may have changed, at EPOC we still use traditional methods passed down from generation to generation. Hard work and a real passion for what we do has given us an enviable reputation within the industry. “Handmade beds are not only our business – they are our passion.” www.epocbeds.co.uk

The Gift of Giving Who doesn’t love to receive a gift card or gift experience voucher for something they have dreamed of buying or doing but perhaps not felt confident to spend that amount of money on themselves!
In this busy 21st century world the trend for giving a gift card or an experience voucher is ever increasing. Instead of choosing to give a physical gift, the convenience and reduced risk of picking the wrong thing, are very attractive to buyers, however shop or product cards can be quite impersonal therefore the market for gift experiences has grown significantly over the last few years. Treating someone to an activity they have always wanted to do or to give them a treat at a time of their own choosing is just perfect for some. So how and where did our love affair with gift cards begin? The first gift ‘token’ was created specifically for books. In the 1920’s a gentleman by the name of Harold Raymond, an English publisher, spotted a gap in the market for sales of books. One Christmas he noted that out of a collective total of 119 gifts only 3 were books. His idea was that by introducing a coupon which could be prepaid and then used by the recipient to purchase their own choice of book, it took

the risk out of books gift giving. By 1932 the original idea had been developed and the first ‘Book Token’ was created. A canny high street retailer of that period recognised the success of the idea and in 1936, Boots launched their own version and renamed it the Boots Gift Voucher. It could only be used to redeem its value in the Boots stores but it was the start of the expansion of the voucher. It took until the 1960’s before the next leap forward came onto the market with the introduction of Green Shield Stamps. Another British sales promotion which rewarded shoppers with stamps that could be collected and then traded in for gifts from a catalogue or from affiliated retailers. After a successful few years it suffered when a major retail chain ceased to use it as part of their price cutting policy. In an effort to remain in the market place Green Shield allowed customers to buy from the catalogue with a mix of stamps and cash, but soon after the catalogue became cash only and the operation was reshaped, rebranded and became Argos.
Cellar Experience at South Lodge
Spa Experience at Pennyhill Park
In 1982 the High Street Voucher was launched with the Christmas saving customers in mind and has grown year on year with recipients now having over 20,000 stores, restaurants and attractions to redeem the vouchers in. In 1997 Asda introduced the first plastic gift card in the UK. By 2008 52% of vouchers purchased were paper verses 48% plastic gift cards. The latest recorded figures show the rise in plastic gift cards to 72% verses 20% for paper vouchers. Historically, paper vouchers held a monetary value and therefore had to be kept safely. However new plastic cards can be displayed in-store as the value is added to the card once they have been charged at the till. Stores stocking multi-retailer cards have increased their one stop shop appeal to the consumers.
The next development of the gift voucher is the rise in the gift card apps like Gyft which has even greater appeal of instant gifting in our technology led and time saving 21st century world. Now we are seeing the increase in experimental gifts with many companies offering a significant range of exciting options – classes to learn something new, going somewhere different or spending leisure time in new and exciting ways. At Exclusive, we offer an extensive range of gift vouchers, and have seen a steady increase in the purchase of them. Christmas is our busiest time for gifting and we take great joy in knowing our vouchers including cookery classes, golf lessons, falconry, cellar experiences, luxury stays, and of course our most popular of all, afternoon tea are being excitingly opened on Christmas Day.
