The Billiard Bar The Billiard Room was built in 1883, with the rest of the original house. The windows overhead once lit the Billiard table which was used and enjoyed by the Godman family. They now illuminate our beautiful Murano glass chandeliers which were designed to represent our Italian heritage. When the house became a hotel in 1985, The Billiard Room became a private dining suite. It was used for weddings and meetings right up until 2008 when it was then redesigned as a bar. The former Library Bar then became an extension of The Camellia Restaurant. Our current bar and menu blends the heritage of this beautiful room with the trends and styles of bar-goers of today. The cocktail menu offers a journey through South Lodge History whilst the remainder of the drinks selection aims to show off our array of spirits, liquors and other drinks. The team are always on hand to offer recommendations on food and drink. But their main purpose is to make your stay as comfortable and as enjoyable as possible. As part of our environmental policy and the need to reduce plastic in our oceans, we no longer provide plastic straws and stirrers as a standard. To become more environmentally friendly we have introduced our new wheat straws to accompany beverages served across the Hotel
Weight and Measures Act 1985 Gin, Rum, Vodka and Whisky are offered for sale and consumption on these premises in quantities of 35ml or multiples there of. Fortified wines are offered for sale and consumption in quantities in 70ml .

The Cocktail List Our Cocktails have been crafted based on the Journeys of Sir Frederick DuCane Godman, and his travels around the world to document the flora and fauna of the countries he visited. Between 1861 and 1872, Frederick visited Jamaica, Belize, Guatemala and Central America, where they specialised in the fauna and flora, it was during these travels that the seeds for their later work, the Biologia CentraliAmericana, were sown. In 1865 Frederick travelled to the isolated islands of the Azores, subsequently publishing a volume inspired by his travels entitled The Natural History of the Azores in 1870. His travels continued the following year with expeditions to Madeira and the Canaries, about which he wrote articles, published in IBIS. Inspired by Godman’s travels we have created this cocktail menu for you to enjoy. Cheers!

The History of the Godman Family The present house was built by Frederick Du Cane Godman in several stages. He built a modest dwelling in 1883 taking time not to disturb the magnificent camellia between the dining room windows. The last of the substantial additions started in 1911 when the drawing room wing was added. He was educated in Eton before going up to Trinity College in Cambridge. At Cambridge he was associated with the foundation of the British Ornithologists’ Union and fascinated by all aspects of natural history. In 1916 he explained the impact of his first expedition to Guatemala 57 years earlier to the zoological Society. It was the revolution in thought produced by the publication of the ‘Origin of Species’ by Charles Darwin. By 1876 Godman’s collection, by both purchase and incorporation, had assumed comprehensive proportions. He conceived the idea of publishing ‘Biologia Centrali Americane’ This was a monumental classification of the natural history of the sub-continent, which took him 20 years to complete. 50,263 species were described; over 19,000 of them were new.
