White wine France Alsace Alsace is one of the great, under- appreciated treasures of the wine world. Rhône Valley With the exception of the wines from Condrieu and Château-Grillet virtually all Rhône Valley whites are made from blends. The base of many blends is still Grenache Blanc, a widely planted variety producing fresh wines with apple-like fruits, often with hints of aniseed. The future for southern Rhône whites appears to lie with Roussanne, Marsanne and, increasingly, Viognier.

Chile The Old World envies Chile for its low costs, lack of vine pests and diseases and its dependably dry, warm summers. Much of the New World, and Australia in particular, envies its plentiful and regular supply of water from the melted snow of the Andes. But for much of the 20th century, winemakers would not have been tempted to join their Chilean counterparts in what was effectively a wine cultural vacuum. Languedoc-Roussillon Over the last 25 years the fortunes of Languedoc-Rousillon have drastically improved due to the introduction of the Vin de Pays classification in 1979. This in turn has led to extensive replanting on better sites, a drastic reduction in permitted yields and a reduction of the dependence on the ubiquitous Carignan grape for international varietals such as Cabernet Sauvignon, as well as continued investment from the Bordelais and others.

South & Islands Italy’s ‘boot’ enjoys geographical and climatic diversity: from the mountains of Campania to the rocky shores of Puglia by way of the sandy beaches of Sicily. The styles of the wines themselves are as diverse as the topography: pure, aromatic whites from Avellino, robust reds made from Anglianico and the intense sweet wine from Pantelleria. Sicily’s mountainous terrain with lean soil, intense summer heat, and scarce rainfall make it ideal for viticulture, enjoying a long, hot ripening season and elevated vineyards.

Spain Spain is like the wild, wild west when it comes to wine. Unlike France, where individual plots of land have been set aside for centuries as the best spots for winemaking, producers in Spain are still out searching for new terroirs, new regions and new (old) indigenous grape varieties that have been pushed aside in favor of commercial winemaking. In the 1970s, Spain’s winemaking reputation was for poor-quality bulk wine. Today, regions like Priorat, Montsant and Mallorca are eclipsing the better-known regions of Rioja and Ribera del Duero.

Lebanon Beqaa (Bekaa) Valley is the wine powerhouse of Lebanon, where all the major wineries have their vineyards. Vines in Beqaa Valley are grown at a high altitude of around 1,000m, and hence they can benefit from a unique micro-climate of dry summers, cool nights, and abundant rainfall. Harvest is typically in the middle of September (much later than other southern Mediterranean vineyards). French influences on the wines of Beqaa (and Lebanon in general) are evident in the make-up of the vineyard; included are Cinsault, Cabernet Sauvignon,Merlot, Mourvèdre, Grenache, Syrah, Carignan.

Uruguay Uruguay is South America's fourth most important wine producer although only about 3% of its annual production is exported. Japan-Sake Sake is a fermented alcohol beverage made from rice, water, koji(enzyme), and yeast, classified in the same category with wine and beer. History of sake dates back to 300 A.D., after the practice of wet rice cultivation was introduced from China. Sake is brewed with an unique fermentation process called "multiple parallel fermentation" where Saccharification and alcohol fermentation occur at the same time. This process gives sake complexity in flavor and a alcohol content up to 18% that is higher than any other fermented beverages in the world. The taste, aroma and quality of sake are dependent on the fermentation process. The amount of rice that is milled is one of the crucial factors taht determine the type of sake that is produced. The more the milled sake rice, the more delicate and clear the flavour of the drink. Port and Madeira Port is a fortified wine. Fortified wines are made by adding a proportion of grape spirit, or brandy, to the wine at some point during the production process. Port is arguably the greatest of all fortified wines and its paramount expression, Vintage Port, ranks alongside the finest produce of Bordeaux or Burgundy as one of the great iconic wines of the world. In the case of Port, the addition of the brandy takes place before the wine has finished fermenting. This means that the wine retains some of the natural sweetness of the grape, making it rich, round and smooth on the palate. One of the fascinating aspects of Port wine is its variety ofdifferent styles, each with its own characteristic flavours, from the intense berry fruit flavours of a Reserve or a Late Bottled Vintage to the rich mellowness of an Aged Tawny or the sublime complexity of a Vintage Port.
