Rhône Valley With the exception of the wines from Condrieu and Château-Grillet virtually all Rhône Valley whites are made from blends. The base of many blends is still Grenache Blanc, a widely planted variety producing fresh wines with apple-like fruits, often with hints of aniseed. Lebanon Beqaa (Bekaa) Valley is the wine powerhouse of Lebanon, where all the major wineries have their vineyards. Vines in Beqaa Valley are grown at a high altitude of around 1,000m, and hence they can benefit from a unique micro-climate of dry summers, cool nights, and abundant rainfall. Harvest is typically in the middle of September (much later than other southern Mediterranean vineyards). French influences on the wines of Beqaa (and Lebanon in general) are evident in the make-up of the vineyard; included are Cinsault, Cabernet Sauvignon,Merlot, Mourvèdre, Grenache, Syrah, Carignan.

Chile It may be a phrase overused to the point of cliché, but ‘viticultural paradise’ really does apply here: reliably sunny, dry summers, the twin cooling influences of the Pacific’s Humboldt Current and the lofty Andes, and plentiful water thanks to the mountain snowmelt. But Chilean winemakers are increasingly refusing to take it easy, preferring instead to embrace experimentation and to explore more marginal conditions in exciting regions such as Leyda and Elqui – while never losing sight of the quality offered by established Central Valley enclaves including Colchagua and Maipo.

Uruguay Uruguay is South America's fourth most important wine producer although only about 3% of its annual production is exported. Thanks to a substantial immigration from Basque country in South West France in the 19th century, it is one of the world's centres of Tannat vinegrowing. Here it tends to be softer and riper-tasting than in Madiran and can be drunk much younger. It’s the country’s pride and joy, as a single varietal or blended with Merlot, for example.

12 New Zealand's wine industry may only be 23 percent of the size of Australia’s but it makes up for this in quality. Its viticultural heritage dates back to Englishman James Busby making wine on North Island circa 1840, yet it wasn't until 1973 that domestic producers planted Sauvignon Blanc in Marlborough's Wairau Valley; in the 1980s, this success was replicated with Pinot Noir in Central Otago – both are home to world-class examples.

Japan-Sake Sake is a fermented alcohol beverage made from rice, water, koji(enzyme), and yeast, classified in the same category with wine and beer. History of sake dates back to 300 A.D., after the practice of wet rice cultivation was introduced from China. Sake is brewed with an unique fermentation process called "multiple parallel fermentation" where Saccharification and alcohol fermentation occur at the same time. This process gives sake complexity in flavor and a alcohol content up to 18% that is higher than any other fermented beverages in the world. The taste, aroma and quality of sake are dependent on the fermentation process. The amount of rice that is milled is one of the crucial factors taht determine the type of sake that is produced. The more the milled sake rice, the more delicate and clear the flavour of the drink. Junmai Ginjo Sake that is made up of water, koji mold, yeast and rice milled 40% with 60% of each grain remaining.

Port and Madeira Port is a fortified wine. Fortified wines are made by adding a proportion of grape spirit, or brandy, to the wine at some point during the production process. Port is arguably the greatest of all fortified wines and its paramount expression, Vintage Port, ranks alongside the finest produce of Bordeaux or Burgundy as one of the great iconic wines of the world. In the case of Port, the addition of the brandy takes place before the wine has finished fermenting. This means that the wine retains some of the natural sweetness of the grape, making it rich, round and smooth on the palate. One of the fascinating aspects of Port wine is its variety ofdifferent styles, each with its own characteristic flavours, from the intense berry fruit flavours of a Reserve or a Late Bottled Vintage to the rich mellowness of an Aged Tawny or the sublime complexity of a Vintage Port. More than any other wine, Port offers endless opportunities for pairing with food.
