A bright, crunchy and tangy coleslaw is always a treat, and when it’s full of bright orange and yellow colours it’s even more appealing. If you can’t find any yellow beetroot or carrots, just replace them with ordinary orange ones — it will still taste lovely. If you have some macadamias left over after preparing the dressing, sprinkle them over the salad before serving. You don’t have to use all the creamy mayonnaise, as it’s delicious on other salads or as a dip, too. Adding fresh coriander helps the salad become even more brain friendly, as coriander is thought to be a very effective mercury detoxifier, a heavy metal that is particularly damaging to brain tissue.
Combine all the ingredients in a large bowl. Pour over the dressing to taste, tossing until well combined.
½ cup fresh coriander (cilantro), finely chopped
Lemon Macadamia Mayonnaise ½ preserved lemon, seeds removed ½ cup olive oil ½ cup fresh, raw macadamia nuts ½ cup cold water 1 large garlic clove salt, to taste
Add all the ingredients, except for the salt (as preserved lemons are already quite salty) to a powerful blender. Blend well and then taste to see if the dressing needs any additional salt. You may need to add a little extra water if the macadamias are not very ‘oily’ and the mixture doesn’t become creamy enough. The oil content of the macadamias depends on their quality and the season. The mixture should be creamy and slightly thick, but still pourable. Variation Add 1 teaspoon of antioxidant-rich turmeric, which has many great benefits for the brain, to the basic mayonnaise recipe. It turns the mayo a gorgeous golden colour, as well as adding extra nutrients to this crunchy coleslaw.
