Dehesa de Extremadura Iberian Route, our hallmark One of the hallmarks of Extremadura is the dehesa. A forest full of holm oaks, cork oaks and other species, a true ecological paradise with nearly one million hectares of area, which represents one of the best-preserved ecosystems in Europe. The dehesas, or how Spaniards called them ‘dehesas’ are found throughout the entire region. The Protected Designation of Origin ‘Dehesa de Extremadura’ certifies the origin and quality of Ibérico hams and protects companies throughout the region. The Dehesa de Extremadura Ibérico Route is an experiential trip that allows the traveller to immerse themselves in the culture of Ibérico, to learn about the ham-making tradition based on artisanal processes, to discover the dehesa with the help of experts and to taste and experience unique flavours and sensations. To put it in a few words, this trip will help you discover the essence of this region, its resources, its culture, its people and, of course, its gastronomy. Take a tour around the region and discover places where tradition and flavour come together to make one of the national gastronomic hallmarks a dream come true.

01 Ibérico Products in Monfragüe
Getting to know the dehesa What is it?
Key information:
In this route you will discover one of our main resources, the dehesa, as well as one of the star products obtained from it. You will learn more about the breeding of the acorn-fed Ibérico pig. You will get to see these animals in their natural habitat and learn about the entire process involved in breeding and feeding these animals, from which Ibérico products are obtained. All this will be done in a private farm.
Duration: 3 hours Group size: 4-6 people Top tip: Wear comfortable clothes suitable for the weather.
After this, you will continue learning about the transformation and drying of Ibérico products, getting to discover the entire process. At the end of the tour, there will be a tasting where you can enjoy and even buy our products.

02 Eating in the dehesa:
Discover and taste Ibérico products
What is it?
Key information:
We will spend half a day visiting a farm where Ibérico pigs are bred. Come join us to learn everything related to their quality standards (feeding, breeding...) and taste a wide variety of cured products and different cuts of Ibérico pork meat made on the grill.

04 The Habitat of the Black Stork
Nature and luxury combined What is it?
Key information:
Visit the countryside and taste different meat cuts and cold meat. In this route around a 50 hectares farm, you will learn about the different steps to obtaining Ibérico meat. You will learn about our star product, the ham, and its drying and aging process. You will get the chance to taste different cuts of ham.
