Just a few thoughts... If you think this past year didn’t affect you in any particular way, it may be time to climb out from under that rock of yours because 2012 was one to remember. It was a year of constant change, political gridlock, heart stopping moments (of both joy and sadness), tremendous accomplishments and eye opening acts that revealed the good, bad and unconscionable traits of mankind. It was the year of super storms, mean spirited campaigns, the Penn State coaching scandal, mass shootings,

Red Lerille’s 50th Anniversary Sunday, January 13, 2013 At the age of 15, Red was a skinny red-haired kid who was inspired by his Uncle Harold’s muscles. Red’s dream was to be Mr. America and to own his own gym. After competing in several competitions and coming home from his four years spent serving in the United States’ Navy, Red achieved his dreams. In 1960, Red won the Mr. America title as well as the Most Muscular award, and in 1963 he opened his health club. With the addition of his wife, Emma Lerille, and their four children, Red has been living his dream ever since. On Sunday, January 13, 1963, he opened a 3,500 square foot club at 4408 Johnston Street, which he named Red Lerille’s Health Studio. He began with a room full of handmade equipment he built in his garage. The first of a multitude of expansions was in 1965, when he moved to a 4,000 square foot facility at his present location on Doucet Road. In 50 years his health club, now called Red Lerille’s Health and Racquet Club, has experienced a metamorphosis to 185,000 square feet on 21 acres and has served over 60,000 members and hired over 3,000 employees. He has had members and employees who have experienced his journey with him for 20, 30, 40 and even 50 years, watching him make a change every month. Today his club, simply known as Red’s, serves over 10 FACE | JANUARY 2013

“In 2009, he bought the Borden’s Ice Cream Shop...to keep the local icon alive and to support momand-pop businesses in the city.”

Red continues to greet his members daily with a “hello” and “goodbye”. In addition to creating this outstanding business, most people do not know of Red’s many other achievements. He is a man of many hobbies, one of such is building and restoring antique planes. In 1971, Red flew one of his planes, a monocoupe 90a, in the Antique Airfield Association’s first fly-in at antique airfield, where his plane was named Grand Champion Antique. When Red is not flying his planes, he can often be found riding one of the four motorcycles he has built with his wife. He and his wife have travelled to every state except Alaska riding their bikes. In more recent years, Red has spent some of his time sharing his wisdom with local business people as well as speaking to the students at the University of Louisiana, his alma mater, inspiring them to never give up on their dreams. He was even awarded UL’s Alumni Association’s Outstanding Alumni in 2002. One of the reasons that Red is so inspirational is because of how much he cares for the community. In 2009, he bought the Borden’s Ice Cream Shop, which is the last Borden’s retail ice cream shop in the United States. He bought it to keep the local icon alive and to support mom-and-pop

Lastly, one of Red’s most recent inspirational events was when he and both his sons rode 500 miles across Spain to experience “the way of St. James” this past summer.

Over the last 50 years, Red Lerille has become a Lafayette icon whose personal dream has contributed to keeping Lafayette one of the fittest towns around. He is looking forward to another 50 years.

Be Your Own Advocate How to feel better in 2013

By: Dr. Kelly Cobb

If you are looking to feel your best both mentally and physically in 2013, it’s best to plan small changes. Making drastic changes will be hard to adhere to over the long haul. Most folks have already heard the ingredients for a healthy life and have good intentions but lack follow-through and just give up on all of it. Who has the time to “get it all in?” Pick one thing for a week or two and do it every day, then add a second thing. The truth is, that with the popularity of plastic surgery soaring, any licensed physician can call himself or herself a “cosmetic” surgeon, so the importance of finding a properly trained and certified provider is essential. When you choose a doctor who is a member of the American Society of Plastic Surgeons (ASPS ®), you can rest assured your surgeon is qualified to perform your surgery. Remember, there is no substitute for an ASPS Member Surgeon.

Pastured Poultry–An Even Healthier Option With New Year’s resolutions of fitness and health, you may be revamping your diet. Conventional, storebought chicken and turkey can be healthy options for the dinner table; however, local, pastured poultry provides an even healthier choice. Pastured poultry is a more specific term than free-range (which is loosely used and sometimes misleading) that means the birds live most of their lives outside in large moveable shelters. This method provides the feathered animals with fresh foraging ground while protecting them from predators and adverse weather. The constant moving of the pens allows the poultry to be raised in an environment where they are not exposed to large amounts of their own fecal matter, resulting in a lower risk of infection and disease. “This pastured poultry system mimics the management intensive grazing systems that cattlemen and shepherds use to produce grass-fed meat. We can control the amount of manure left on the pasture, which allows us to fertilize our grass effectively without harming ground water or other resources,” says Sarah Bailly of Bayou Farm.

Bayou Farm, located in Ville Platte, raises pastured poultry because, according to Bailly, they want to “provide good food to people in an environmentally sustainable manner.”

By Laura Garey

Bayou Farm processes their own chickens and turkeys without soaking the birds in chlorine or injecting them with additives when packaged, like some conventional store-bought turkey. Not a chicken or turkey fan? Bayou Farm will soon have grass-fed lamb and pastured pork. If you are interested in purchasing a fresh or frozen poultry, call Bayou Farm at 337-256-4268 or e-mail them at info@bayoufarm.com. They also sell chicken (whole birds and cuts) every week at the Freetown Farmers Market (421 Convent St. Lafayette) on Wednesdays 2-6 PM, and at the Crescent City Farmers Market (800 Magazine NOLA) on Saturday mornings.

“Pastured poultry... means the birds live most of their lives outside in large moveable shelters.”

No Pain, No Gain? No one seems to admit to making the dreaded ‘resolution’ proclamation these days, but some statistics show that over 50% of people make serious New Year’s resolutions and the majority of those resolutions are related to weight loss and improved health. Unfortunately, the painful truth is that only about 10% of people succeed in their resolutions. What are the chances of NOT falling into the 90% failure rate especially if you are not the traditional treadmill-and-tennis shoes, or gym membership type? The secret may be to find just the right activity that you can actually love for life, and therefore be far more successful than the usual 3-month resolutions keepers. Here are just a few suggestions for activities that provide fantastic exercise for success at weight loss, overall improved health and fitness and ultimately, improved self-confidence.

Martial Arts Martial Arts not only provides a great total body workout but teaches the art of self defense. Martial Arts students find that they better cope with stress, sleep better at night, work better during the day and just overall feel better. They also have a greater peace of mind due to the knowledge and expertise on what to do if faced with a dangerous situation. However, the greatest benefit of martial arts is the increased sense of self confidence it builds to overcome your daily struggles in every aspect of your life.

Martial Arts increases cardiovascular fitness and overall energy, improves muscle tone and greater flexibility, lowers stress levels, increases self-esteem, and improves concentration and focus. Make New Year’s Resolutions that Are Easy to Keep Happy 2013 to you all! It’s the start of a new year. It’s fresh. We have the golden opportunity to make of this year (and of ourselves) anything we would like. Chances are you have begun to shape 2013 with New Year’s resolutions. Here’s help for navigating the start of this year with power, wisdom, and love.

Resolve to add to your life thoughts, activities, and time spent with relationships that make you happy. The hidden danger in New Year’s Resolutions. Did you know there is a hidden danger in New Year’s resolutions? Such resolutions are a perfect opportunity for your Inner Critic to pounce. The Inner Critic is the part inside each of us that does more than criticize. It functions by imposing shoulds (and shouldn’ts) on you and then backing them with emotional pain if you don’t obey. The result: Those resolutions become shoulds that drive you and lead you to feel stressed and then to torment yourself with a barrage of self-criticism for not keeping your resolutions perfectly.

If you’ve made resolutions and are already feeling stressed about them, that’s a sure sign that your inner critic is contaminating them. Watch for these five feelings about yourself. Each is a direct negative emotion inflicted by your inner critic: •

Defectiveness—The inner critic tells you that you are flawed; something is wrong with you. For example, it will say, “You’re just lazy.” Instead of energizing you, such internal verbal abuse (and yes, it is abuse) will sap you of energy to do what would be life-giving to you.

Guilt—The inner critic loads us down with tormenting feelings that we have broken a rule or worse yet, hurt someone. This isn’t a simple feeling of neutral responsibility; it is a feeling of deep pain that wracks us and depletes us of motivation.

• Inferiority—The inner critic compares you to others, always with the message that you are one-down and inferior to them.

Shame—The inner critic whispers that the defectiveness and inferiority we feel (and that it has inflicted) can be seen by everyone. It’s a feeling of embarrassment, and even of humiliation.

Magnified Fear—The inner critic will take any little fear or concern you have and blow it way up into such things as panic, anxiety, and constant worry. It will also take any positive plan you have and predict failure for it.

Can resolutions ever be good for your mental health? Can we ever make resolutions that aren’t inner critic driven? The answer is: Yes! How? You have to look to your Natural Self. Your Natural Self is that source of aliveness inside you. The natural self leads us to think of something we want (for instance, a goal). Then, because it’s something that makes us happy, we automatically have the energy to do it. Think of it this way: when you are doing something that you love, do you have to give yourself a pep talk? Do you have to force yourself to get up and do it? Absolutely not. In fact, when you are doing what you love; that is, what comes from your natural self, you don’t want to stop! The secret to making resolutions that are easy to keep. So, here is the secret to making resolutions that will be easy to keep. Resolve to add to your life thoughts, activities, and time spent with relationships that make you happy. How will you tell if you are following your deep self? • Instead of feeling stressed, you will feel content and enlivened.

• Your self-esteem will rise.

• You will have the feeling that you’re doing it just right.

• Added bonus: Love will flow—for yourself and for others. Here’s a jump-start on some New Year’s resolutions that will support your freedom and your natural self: • I resolve to make my own decisions; to be the executive in my own life. • I resolve to decide whether or not to meet others’ expectations, no matter who they are.* • I resolve not to hold myself responsible for others’ negative feelings, no matter how much they try to persuade me that I am. • I resolve to guide my actions by sparks from my natural self. This new year, follow your natural self sparks! Then 2013 will be a Blissful New Year. Excerpted from Disarming Your Inner Critic by James Elliott and Kathryn Elliott *

The Job Search Within

By Danielle M. Dayries

As you make a fresh start for the New Year, use this guide to begin with an internal job search, to ultimately find your dream job. As you ring in the New Year this year and develop resolutions to better yourself throughout 2013, consider the area of life where you spend around 1/3 of your day‌ your job. Finding an enjoyable job can not only bring more happiness into your life, but also make you more successful in your career. Therefore, it is crucial to bring your job search internally, to find yourself, and then find a job that is right for you.

Identify the specifics. Create another list of specific things you absolutely need in a job and those that you do not want in a job. These can range from the corporate culture, timing, number of colleagues, benefits and pay, or even the dress code. This list is just for your viewing, so be honest with yourself and the little things that might influence your happiness in a job.

Evaluate what brings you happiness. To find a career that you are happy in, you must reflect on past experiences and events to find what brings true joy to your life. Consider your motivators, whether it is being able to express your creativity, gaining approval from others, spending time outdoors, or even being able to control your schedule. Now employ your creativity to find jobs that incorporate this factor. By implementing this aspect in your job search, you might actually want to go into work, or at least fulfill your responsibilities easier.

Envision your future. Now it is time to focus on you future and goals. Where do you want to see yourself in your career journey? What do you want life to be like in 10 years? Answer these questions with pictures, magazine clippings, and words that represent your ideal future. Use these to create a vision board or record them in a journal. Now that you have a clear vision of your future, you will be more likely to make the right choices in life to reach your dream.

FACE | GRACE NOTES

Graceful Posture–The Mark of Elegance Grace Notes are presented to offer you guidelines for graceful living. Grace combines confidence with “unself-consciousness.” Your physical stance and bearing give away far more about your sense of self than you may ever realize. Graceful posture is the mark of elegance and the first impression of who you are. So we ask you: Do you want to be Audrey Hepburn or Quasimodo? One of the first ways to attain grace is through movement. Grace is also a sense of calmness, a state of mind, assuredness and balance. As you develop grace, you no longer fidget or fuss, you no longer move without direction or speak without thinking. Thoughtfulness about your actions will translate into inner confidence as you move gracefully throughout life. The following tips provide a starting point to check your own posture and movements. Corrective Posture Measures • Place feet parallel to one another, two inches apart. • Balance weight evenly between feet; support it halfway between balls and heels of feet. • Place elbows slightly away from body and gently bent. • Relax hands by sides with thumbs at side. • Let fingers fall gently curved, not stiff or fisted, or shoved into pockets. • Tilt pelvis under. • Tighten abdominal muscles by pulling up and in. • Lift chest high by taking a deep breath and exhaling. 24 FACE | JANUARY 2013

• Raise shoulders up, back, and finally down and relaxed • Straighten and lengthen spine and neck. • Hold head high by imagining being lifted up from behind the ears. • Hold chin at right angles to neck and parallel to the floor.

Thoughtfulness about your actions will translate into inner confidence as you move gracefully throughout life. “Pull Your String” The head leads the body in all natural movements. Imagine having a heliumfilled balloon fastened with a string to the top of your head. Close your eyes and imagine this balloon pulling your head up and away from your body while drawing the back of your neck and spine up after it. Walking • The torso should remain straight and face forward. • Relax your knees. This gives you the look of a smooth glide. • Keep the feet pointing straight ahead and two inches apart. • Keep a tiny space between the knees. Knees should never touch. • Establish your stride. The length of your stride should be equal to the length of your foot. • Control hip movements. Hips should not swing side to side. Keeping pelvic bones parallel to the floor will help.

• Hold the shoulders back and down. Up, back, and down will place your shoulders in the correct position. • Hold the head and chin parallel with the floor. • Swing arms gently. Arms should never swing beyond your bottom. • Hold the fingers gently curved with the palms toward and parallel to your sides. Climbing Stairs Men, because they act as our “cushion” if we fall, go behind the ladies going up and in front going down the stairs. • Keep your knees flexed. Do not bend and straighten them as you climb. • Keep your body upright and in perfect alignmen–holding the “pelvic tilt” • Look with your eyes, not your head. • When coming down the stairs, your weight should go into the ball of the foot first, then the heel…that minimizes the “bounce” effect. • Ladies only: point your toes towards the rail (not 90 degrees but at a slight angle) and place at least two fingers on the rail.

By Lynley Jones and Jan Swift

Sitting The very act of selecting a chair and of placing yourself into it should be made up of unhurried, graceful movements designed to make a dignified impression. • Do not be in a hurry to sit down. • Approach the chair slowly and gracefully. • Glance back briefly at the seat. The calf of your back leg should come in contact with the chair. • Ladies only: approach from the side of the chair’s seat. Never “fanny first.”

• Sit on the edge of the chair and slowly ease back, placing your hands on the chair to assist if necessary. • Never cross your knees. Cross your ankles to help keep your knees together. • Allow the arms to fall front and middle and slide easily into your lap as you lower yourself into the chair. • Develop hand poise by placing the hands on the top of the thigh of the leg whose foot is farthest back. Palms down about two-thirds from your knee.

• Don’t fidget. Happy New Year to all from Grace Notes! May this year be filled with grace and elegance for you and your loved ones. About the authors: Lynley Jones and Jan Swift are partners in Grace Notes, LLC, an etiquette endeavor to help further society’s niceties. They may be reached at gracenotesetiquette@yahoo.com.

New Year, New Opportunities Go Red For Women

American Heart Association Celebrates 10 Years of Saving Women’s Lives

For 10 years, as part of the Go Red For Women movement, women have been fighting heart disease both individually and together. More than 627,000 women’s lives have been saved, thanks to the collective energy, passion, time, money and HEART of the 25 million Americans who have supported this movement. But the fight is far from over. “Now is the time to act. Heart disease is still the number one killer of women, and ninety percent of women have one or more risk factors for developing heart disease,” said Donna Arnett, Ph.D., M.S.P.H., president of the American Heart Association. “With the right information, education and care, heart disease in women can be treated, prevented, and even ended.”

Volunteering with Komen Acadiana When you think of Komen Acadiana, you may think about a mass of pink ribbons, the Race for the Cure, or one of the many local programs Komen sponsors to help women detect and fight breast cancer. But what you might not realize is that none of these things are possible without an army of dedicated and talented volunteers. Throughout the month of January, Komen Acadiana will be highlighting all of their wonderful volunteer opportunities. Komen Acadiana volunteers help with everything from fundraising, to putting together the Race for the Cure, to teaching groups of women about the importance of early detection. They even have an advocacy committee that helps educate our Legislature about the good work that gets done by our state’s breast and cervical health program. So no matter what your interests or talents, there is something you can do to help in the mission to fight

breast cancer and improve the health of women in Acadiana. And there is a lot of work to be done. Louisiana has the nation’s second highest mortality rate from breast cancer with the poor and minorities particularly at risk. The Acadiana Affiliate of Susan G. Komen was created in 1999 from a group of passionate volunteers who wanted to improve the experience for breast cancer survivors in the Acadiana community and do their part in finding a cure for cancer. Since 1999 Komen Acadiana has awarded more than $2.7 million dollars towards local programs that involve screening, education, treatment, and research. Please consider doing your part: volunteer, fundraise, and register now for this year’s Race for the Cure on March 16, 2013. For more information, visit komenacadiana.org or call 337-993-5745 to make a difference in your community.

Get practical, useful information on how to cook heart healthy meals that the whole family will love, listen to compelling stories of local heart survivors, laugh with celebrity speaker Lucie Arnaz, and walk away knowing what our next step is in leading a long, healthy life. “The Go Red For Women movement has been impacting the health of women for 10 years, and as a result, 330 fewer women are dying

per day,” says Deborah Pierce, Regional Director of the American Heart Association. “We should all feel empowered by this amazing accomplishment and use it as motivation to continue to fight this deadly disease. We can truly make a difference in the lives of the women in Acadiana as we work together to end this mostly preventable disease.” For more information about this year’s Go Red For Women luncheon or to purchase tickets, visit www.heart.org/lafayettegored or email Deborah at deborah.pierce@heart.org

What do you get when you have the Acadiana Symphony and Conservatory of Music, the Boys and Girls Club, and you throw in a building company? The answer is a true Christmas miracle! This December Manual Builders began a long overdue renovation of the central hall of the Acadiana Symphony and Music Conservatory. Manual Builders along with donors Sherwin Williams, Southpark Flooring, and Tod Foreman came together to completely renovate the main hall, which is primarily used as a study area for the many children who practice and learn music at the Conservatory. The Acadiana Symphony and Conservatory provides music lessons to a wide variety of students ranging from private lessons to students from the Boys and Girls Club, as well as members of the ASO Prep and Youth Orchestra groups. The Conservatory also provides music lessons to underprivileged children in an effort to spark creativity and passion in the arts as well as instilling values of hard work, selfdiscipline and teamwork. Along with private lessons, the Conservatory provides instrument specific classes, voice lessons, music theory and Orff instruction (an approach to teaching music to children using poems, games, chants, bells, etc). Mardi Gras: A Worldwide Celebration By Flint Zerangue, Jr.

Mardi Gras is approaching rather quickly this year, February 12th to be exact, and if you are as much of a supporter of the holiday as I am, you’re probably getting your colorful costumes out, chasing down tickets to balls, and checking the dates of every parade in the city! If you asked anyone from Acadiana about Mardi Gras they would ramble on and on about how they caught the best bead of all their friends or why their Mardi Gras is always the best. I say “their” Mardi Gras because this holiday is probably the most dynamic in the world and your experience will vary immensely depending on where you are, what local traditions are being celebrated, what the local cuisine is and even why you are celebrating in the first place. Some of the largest, most well known Mardi Gras festivities can be witnessed at the Rio de Janeiro Carnival in Brazil, Carnaval de Nice in France, Carnevale di Venezia in Venice, Italy, Maslenitsa in Russia and of course Mardi Gras in our native state, Louisiana. Here in Acadiana, Mardi Gras has become a way of life. It’s one of those holidays that can be celebrated by all, whether you’re an adult, child, religious, non-religious, single or married. In particular, Lafayette has been deemed the number one Mardi Gras destination for families looking for a clean-fun festival. That unique characteristic about our city’s celebration (as opposed to less family-oriented celebrations) attracts tourists from around the nation which has a very positive impact on our economy. It’s rather surprising to me given how popular Mardi Gras is and how many of us consider ourselves Mardi Gras experts, how few of us there are who know anything about its history or origin. In mid February, the ancient Romans celebrated the Lupercalia, a circus like festival not entirely unlike the Mardi Gras we are familiar with today. When Rome embraced Christianity, the early Church fathers decided it was better to incorporate certain aspects of pagan rituals into the new faith rather than attempt to abolish them altogether. These rituals included feasts, over-indulgence of wine, and the honoring of the God Lupercus’ gift of fertility by indulging in pleasures of the flesh; they also have a symbolic meaning to the term “Fat Tuesday”. Mardi Gras eventually became a period of merriment that preceded the penance of Lent, thus giving a Christian interpretation to the ancient custom. The first Mardi Gras festivities in North America were held on March 3, 1699. On that day, the French explorers Pierre Le Moyne d’Iberville and Jean-Baptiste Le Moyne de Bienville set up camp on the west bank of the Mississippi River, about 60 miles downriver from what is now New Orleans. On Mardi Gras, the brothers celebrated the 32 FACE | JANUARY 2013

Brazil is the ultimate indulgence. A serving of feijoada completa, a hearty meat-and-bean stew widely considered the Brazilian national dish, satisfies even the strongest carnivorous cravings. While Salvador’s street festival is arguably a better party, Rio’s Carnaval is the biggest in the world. Festivities and street parties overtake the whole city for weeks, but the main attractions are the parading samba schools battling it out for supremacy in the Sambódromo, the Brazilian name for the place in which the exhibitions take place. Carnaval de Nice, France February 15–March 6, 2013

traditions of their homeland with masques and processions in the streets. Although they were, at times, prohibited by law, the celebrations were quickly resumed whenever restrictions were lifted or the enforcement of them was lax. In 1875 the state of Louisiana declared Mardi Gras a legal holiday. Ever since then we have been building upon the traditions of the Le Moyne brothers and making them into the Mardi Gras we celebrate today. Did you know that the ever-present colors associated with Mardi Gras; purple, green, and gold represent justice, faith and power. Or did you know that the first “krewe” was the Krewe of Comus, a group of six individuals that saved Mardi Gras after it had gained a negative reputation because of violent behavior attributed to maskers during the 1840’s and 50’s? (Comus also started the customs of having a secret Carnival society, having a parade with a unifying theme with floats, and of having a ball after the parade.) While krewes, king cake, beads, doubloons, and many other traditions have become so deeply enriched in our Mardi Gras culture, countries from around the world have been celebrating Mardi Gras far longer than we have. Their traditions are as diverse and old as the countries themselves; I implore you to experience our beloved and mysterious holiday from other perspectives. Rio de Janeiro Carnaval, Brazil February 9–12, 2013

If you’re planning to give up meat for Lent (and even if you’re not), chowing down beforehand in

Nice’s Carnaval, which dates back to 1294 and today is the largest in France, includes many iconic trappings of a Mardi Gras celebration. Parades of floats topped with papier-maché “big heads” make their way down the Place Masséna. Street performers add to the entertainment by dancing and showing off their unique talents. For the finale, an effigy of King Carnaval is burned and fireworks light up the sky but the centerpiece of the annual festival is the Flower Battle. A tradition of exchanging bouquets and decorating carriages in the 19th century grew into a gorgeous parade of blossom-bedecked floats. Since 2005, the decorations have synced up with each year’s Carnaval theme. Instead of beads, costumed revelers riding the floats toss up to 100,000 flowers into the crowd. Even ganses, a Niçoise variation on fried dough (similar to beignets), get a festive flourish of orange flower water.

mask competition, a candlelit water parade, and elaborate balls mark the season. The marquee event is the Cavalchina Grand Ball at La Fenice, but unless you’re a patron of the arts or of celebrity status, good luck getting a ticket. Maslenitsa, Moscow, Russia March 11–17, 2013

During Maslenitsa, the crêpe-thin golden pancakes topped with caviar, smoked fish, sour cream, butter, or cheeses are the stars. More specifically, they’re considered symbolic representations of the sun in this ancient festival, which blends a pagan rite of spring with pre-Lenten rituals. Also known as “butter week,” in honor of one of the rich foods the church prohibits once Lent begins, Maslenitsa was nixed from the Russian social calendar under Soviet rule. But since 2001, Moscow’s Vasilievsky Spusk has hosted an annual weeklong festival, with food stalls, live music, games, and folk dancing, all fueled by medovukha (a honey-based brew similar to mead). Since security-conscious Kremlin types weren’t keen on burning a scarecrow (the carnival’s traditional closer) in a busy public square, the organizers devised a modern version using video projections and a virtual representation.

Carnevale di Venezia, Italy February 2–13, 2013

The enchanting and elegant Venetian Carnevale is one of the world’s great excuses to play dress-up. The wearing of masks originated sometime during the Republic of Venice, which lasted from the early Middle Ages until 1797. It was a way to maintain the social hierarchy by allowing the lower classes to feel temporarily equal to the aristocracy. By the time the republic fell to Napoleon in 1797, the allure of “anything-goes” anonymity had helped make Carnevale a fashionable tourist attraction and when the event was reinstated in the 20th century, the costumed crowds returned by the masses. The iconic Bauta mask (worn by men and women, often with a cloak and tricorn hat) conceals the whole face but, conveniently, won’t impede gorging on frittelle (doughnuts, sometimes prepared with a sweet or savory filling) or galani (fried pastry). Regenerative surgery refers to the use of stem cells in surgery to regenerate some types of tissue. Stem cells can come from three sources:

Another product which is being studied to enhance fat graft survival and also as a wound-healing product is platelet-rich plasma or platelet-rich fibrin matrix (selphyl). Because of the multiple growth factors in the plasma mixture, it is being mixed with fat prior to injection in deep facial lines and also being used as a filler on its own. At this time, the results of those studies are not available. I am pleased with the results of carefully controlled fat

A small percentage of the fat cells removed with liposuction have stem cell capability (tissue derived stem cells). These fat cells should be removed with gentle technique (liposuction) and then re-injected into the area to be reconstructed, once again with gentle technique. Most plastic surgeons in private practice have found the main use of this technique to be in breast reconstruction (post lumpectomy) or in filling in defects from irregular liposuction, and in face lifts. As we age, we tend to lose fat in the cheek and eyelid areas. This loss of volume is impossible to fill by tightening the skin and muscles of the face and

neck alone. Some patients who present for a facelift do well with fat injections alone. Other patients, and in my cosmetic surgery practice it is 50%, do benefit from having the fat injections along with their facelift. Many of us have noted that our facelift patients who also had fat injections and those with fat injections alone tend to have improved skin texture. The thinking behind this improvement in the skin is that the stem cells in the transferred fat injections encourage angiogenesis (increased vascularity) and more collagen formulation to give the skin a smoother appearance. A lot of research remains to be done on the use of tissue derived stem cells from our own fat cells. Clinically great strides have been made with some excellent results. However, a survey conducted by the American Society of Plastic Surgeons revealed that up to one-half of the fat injected was resorbed. In my own practice, I tell patients we may want to add more fat after a year or two post surgery to get the best result.

The World of Cosmetic Procedures Finding the new you Who doesn’t want to look their best? Well, according to the American Society for Aesthetic Plastic Surgery (ASAPS), more than 9 million Americans a year choose surgical and/or nonsurgical cosmetic procedures in order to do just that. In an industry that is constantly evolving, what (in the not so distant past) was only available to only the super elite is now readily available and more affordable than ever to the masses. But with so many new procedures available, we thought we’d shed some light on what everyone should consider before scheduling that alluring procedure.

No matter what the procedure, make it a point to be fully informed before choosing a cosmetic procedure or service provider. First, the basics; the terms “plastic surgery” and “cosmetic surgery” are often used interchangeably. Plastic surgery includes both reconstructive surgery and aesthetic surgery. Reconstructive surgery is done to restore a body part that is abnormal due to a trauma/accident or that is abnormal at birth. Aesthetic surgery, more commonly known as 42 FACE | JANUARY 2013

By: Savannah Ludwig cosmetic surgery, is surgery done to improve an already normal body part. It is done to improve or enhance the appearance of an already normal body. Then there are the nonsurgical procedures such as Laser Hair Removal or Botulinum Toxin that are minimally invasive and in most cases show immediate results. There’s no doubt that the field offers a mass array of opportunities that can boost ones self-esteem and overall quality of life. However, before scheduling any cosmetic procedure, take the time to educate yourself on the specific procedure(s) you are considering as well as the risks and possible complications that could arise. Once you’ve researched the procedure(s) of interest, consider the following before proceeding: • Your expectations. Anticipate improvement, not perfection. If you expect any cosmetic procedure to turn you into a movie star, save a rocky relationship, gain a promotion or improve your social life, you’re sure to be disappointed. • Expense. Cosmetic procedures aren’t covered by many health insurance plans. The cost varies depending on the procedure, ranging from hundreds to thousands of dollars. Also consider the cost of any follow-up care or additional corrective procedures.

Rhinoplasty, before and after • Risks. Dissatisfaction is possible after any type of cosmetic procedure as well as complications from the procedure itself. • Recovery. Although nonsurgical procedures may have little to no recovery time, after cosmetic surgery, you may need days, weeks or even months to recover. Understand the physical effects that may be part of your recovery, as well as how the surgery may affect aspects of your personal and professional life. • Psychological changes. Your self-esteem might improve after a cosmetic procedure, but it isn’t likely to relieve depression or other mental health conditions. • Why. Are you considering this procedure to please yourself or someone else?

“...take the time to educate yourself on the specific procedure(s) you are considering as well as the risks and possible complications that could arise.

“There are the nonsurgical procedures such as Laser Hair Removal (shown above)... that are minimally invasive and in most cases show immediate results.” If you are considering a surgical procedure, choosing the right plastic surgeon gives you the best chances of achieving the procedural goals you desire. Start by asking friends or family that may have had a similar procedure performed for a referral then do your homework online to narrow the selected field. Once you’ve established a list of possible surgeons, contact their office(s) to set up a consultation. Be prepared, you’ll want to ask as many questions as necessary to determine if this plastic surgeon and their support staff are right for you. Don’t be intimidated by asking questions, after all, your surgeon is the person who will potentially hold your life (not to mention your looks) in his or her hands. During the initial consultation, you’ll want to ask the prospective surgeon or service provider the following questions (among others) before deciding if they are the right choice to perform your procedure (We recommend taking notes during the interview): • Are you Board Certified? If so, by what board? • How many times have you done this procedure? • What other medical staff will assist with the procedure? • Where will the procedure be performed? • Do you have hospital privileges to perform

When considering a nonsurgical procedure, you’ll want to ask many of the same questions as they relate to your desired procedure, making sure to ask one additional question. • Is the procedure approved by the FDA? the right person for the job. However, you should consider finding another surgeon or service provider if: • the plastic surgeon or service provider tries to convince you to have a procedure that isn’t related to the area or problem you’ve come to them for. • the plastic surgeon doesn’t recommend a preliminary physical examination. • the doctor or service provider refuses to show before-and-after pictures of other patients. • you do not feel you can ask questions freely. • you are not treated courteously or respectfully. • the doctor or service provider is willing to submit fraudulent paperwork to your insurance company. • the doctor or service provider does not routinely perform the desired procedure.

It was her father’s strong resolve and unwavering work ethic in building his business that Spell inherited and made her the strong woman that she is. At the age of three, Spell had to overcome the effects of rheumatic fever, a long-term fever which impacts the heart and muscular system profoundly. “The doctor recommended ballet to strengthen my legs, and it helped” states Beverly Spell. “Mrs. Betty Miller was my first teacher,” Beverly continued, “I don’t remember when I fell in love with ballet, but by the age 6 my mother tells me I was dancing and twirling everywhere.” A deep love was kindled, and a dance career was born. As Beverly grew, her family managed to adjust for her increasing need for more advanced training. “My brothers and parents sacrificed a lot so I could take lessons,” she notes respectfully. She began lessons with Merry Joy Gerami and Corrine Cornay at age 8. When I was 11, my teachers brought in a guest teacher, Gwynne Ashton, former ballet mistress of Royal Winnipeg Ballet. Beverly trained with Ashton until she was 15, when her mentor moved to the National Academy of Arts in Illinois. Beverly and her parents spent the next year traveling back and forth to Lake Charles four and five days each week 60 FACE | JANUARY 2013

for training. The following year, when she was a senior in high school, Beverly was accepted to the National Academy of Arts, a boarding school for professional-track dancers and musicians. This move reunited her with Mrs. Ashton. Beverly pushed herself constantly, spending summers in her teen years training in New York City. She was awarded a Ford Foundation Scholarship to study at the School of American Ballet when she was 12 years old. The following two summers were spent at Harkness Ballet studying on scholarship. Beverly graduated from the now-closed National Academy of Arts in 1976. “That same year, I auditioned for Houston [Ballet] but didn’t make it.” Crushed and feeling like a failure, Spell walked away from years of hard work. I felt like I had disappointed my parents so much by not pursuing this after they (and my brothers) had sacrificed so much to allow me to travel and study what I loved. Up to that point [trying out for the Houston Ballet], everything I did had to do with dance. It was part of who I was. I loved expressing myself through dance, becoming one with the music. I could dance all day and still want to dance more. ” “Dance had become a negative in my life.” No longer serving as the positive maxim she was reaching for and investing all of her efforts toward, dance became a constant reminder of her perceived failure. Spell walked away from the dance world then and immersed herself in college. “I just decided I wanted to have a normal life. I was always struggling to be thin enough, and even though I was very thin, all those type of things typical with dance haunted me.” In addition to those issues, she also realized how difficult it would be to continue to live away from home and family in a large city if she continued to train to be a dancer. “God is the one who has put so many wonderful people in my life. I believe that part of my success is due to the people He has surrounded me with.”

Upon returning home, she was reunited her with a childhood friend, Carrol Spell, Jr. “Our families attended the Methodist church together.” He was 3 years older, her brother’s age. “Carrol and I started dating while I was attending USL and he was in law school at LSU. One month after we started dating, he took me to the ballet in New Orleans. It was a performance of The Nutcracker starring two Russian defectors, Galina and Valery Panov. This is when I came to a very important realization: I was trying to ignore a very important part of my life - dance.” On and off through marriage and starting a family, Spell found ways to return dance to her life and danced for a local civic ballet company. At that time, my first son was born, and thank goodness for my mom and mother-in-law! I don’t know what I would have done without their help,” Spell shares. “They made it possible for me to dance and teach by watching Joe (eldest son).” Things changed dramatically with her second pregnancy. Beverly had returned to school to major in exercise science but the difficulties with her pregnancy put that plan on hold. “I became pregnant with my youngest son and was put to bed due to pregnancy difficulties. Benjamin was born very premature and there was no chance of me going back to school with a sick baby. I took a break from dance and focused completely on my family.” After Beverly’s break from dance to care for her children, she then began teaching on and off in several local dance schools while raising her boys and taking personal notes along the way. In 1998 she and her husband opened The Ballet Studio in Milton, next door to his law office. Beverly spent much of her time over the next few years studying with Finis Jhung, the New York based, 75-year old ballet virtuoso and dance aficionado who now considers Beverly one of his finest students. Beverly spent her time with Jhung honing her skills and improving her teaching methods in order to provide her students the highest quality ballet instruction. “In 2003, Lisa Michaels, [previous] owner of the Leap ‘N Learn Company and dance curriculum contacted me about buying her company. She stated that she felt that I was the one who most understood what she wanted to do for

children. I immediately called Finis Jhung to see if he thought this was the right move for me. He said that I would be a fool not to.” Jhung, who now teaches at Alvin Ailey Dance Theatre, was very supportive of her endeavor. “Beverly has a very intelligent approach to dance: she is health-minded, which means she is always doing what’s really important and what works,” Jhung explains. “She has an instinct for how the body works and moves, and is not distracted by what a student’s body or perceived limitations are. So, for her to do this for children, I said, ‘Absolutely!’.” Beverly knew she could also count on her daughter-inlaw, Dr. Annie Wingate Spell, PhD in child psychology. “Annie and I spent hours at the kitchen table discussing my classes, how the children learn and strategizing on how to make my curriculum better and more effective. I knew before I bought the company that we could make Leap ‘N Learn bigger and better.”

“Beverly really is giving back to the dance community here in Acadiana and around the country.” Armed with the backing of her husband, Carrol; and her mentor, Finis Jhung who has clear respect for her curriculum; Beverly’s own extensive knowledge in classical ballet training and Annie’s psychological learning approach; Beverly bought Leap ‘N Learn and started her new quest. Beverly and Annie collaborated to modify and increase the existing curriculum to include current research about how children learn. “Children learn differently - you have to be aware of what those differences are. The way you do that is to teach to as many different modalities as possible, ‘reaching all the little fishies in the sea,’ as Annie always puts it,” shares Beverly. “We call it wholebrain thinking and dancing; incorporating as much of right and left brain at the same time, so the more you can pull from both sides of the brain, the greater they will be able to recall this later on.” Continue reading

Because of her intimate knowledge of working with children from years of teaching, Beverly knew how she wanted to make dance approachable for every student. Using music, movement, writing on a white board, showing them a picture, reading a story that illustrates the dance concept are just a few of the tactics within the Leap ‘N Learn program. “It’s using all of these parts that give Leap ‘N Learn such success with a broad range of learning styles.” Ultimately, ballet teachers all over the world would use Beverly’s Leap ‘N Learn program in their studios to teach ballet to children. The finished product (actually a misnomer because Beverly is constantly adding to the Leap ‘N Learn curriculum) was rolled out in early 2004 with their first presentation at a workshop for Finis Jhung in New York. Beverly and Annie presented the curriculum and continue to present at all major dance teacher conventions and trade shows. There are over 1,400 customers worldwide using the wildly successful Leap ‘N Learn curriculum including Oklahoma City University whose dance department uses the Leap ‘N Learn program in their pedagogy program to teach future ballet teachers. In addition to conventions and trade shows to promote the program, Beverly and Annie conduct teacher workshops throughout North America including the Alvin Ailey Dance Theatre where her staunch supporter, Finis Jhung now instructs. There is also an annual workshop held here in Lafayette and this past summer, the local workshop drew teachers from the US, Canada and Japan. Finis Jhung was not the only one to recognize Beverly Spell’s talent for making the high art of classical ballet approachable to the very young, so did Mattel-owned HIT Entertainment, owner of Angelina Ballerina. At the time, ballet studios across North America could apply for approval to utilize Angelina Ballerina branding in their own marketing. HIT Entertainment approached Beverly in 2011 with an offer to submit a proposal to them as to what she would do to create an actual dance curriculum for their Angelina Ballerina product. Beverly was awarded the contract to develop the curriculum using their marketable character in a freshly customized version based on the foundations of the successful Leap ‘N Learn curriculum, The Angelina Ballerina Dance Academy program. 112 64 FACE | JANUARY 2013

ballet studios in North America are currently Angelina Ballerina approved and utilize the Angelina Ballerina Dance Academy Program to teach in their studios. Several other projects are in the works in conjunction with this opportunity including summer camp programs, a new birthday party program as well as collaboration with Scott Killian, a ballet composer who has also worked with Finis Jhung, to compose the accompanying music for the Angelina Ballerina program.

“Life begins at the end of your comfort zone. At 54, I am definitely extended beyond that comfort zone, but who I am is a sum of my past.”

Giving back locally, and on a larger scale at the university level, the diverse artist-turned-university-instructor began teaching dance pedagogy through the University of Louisiana’s dance department this past fall... to her competitors. “It’s very easy to get caught up in ‘the sequins’,” laughs long time friend and cohort , UL dance Professor Kenneth Jenkins. Instead of the common replication mode of teaching dance in a competitive manner, Jenkins expresses his gratitude for Spell’s hallmark openness and generosity in sharing the intellectual work she has vested in Leap ‘N Learn with her UL students taking her dance pedagogy class, calling her “courageous to make a stand in this area.”

“She instructs not only the physicality of dance but the psychology and physical parameters of individual students.” “Beverly really is giving back to the dance community here in Acadiana and around the country,” Jenkins explains referring to the more than 1400 studios around the world using her curriculum. “Her insistence on quality over quantity ensures that she never has become involved in the competition circuit or the ‘trick du jour’.” Spell is equally as comfortable among adults as she is with children. “She instructs not only the physicality of dance but the psychology and physical parameters of Continue reading faceacadiana.com | FACE 65

individual students. There is a difference in how to instruct 3, 7, 10, 18 or 50 year old students and their needs. She really has synthesized technology and psychology,” Jenkins explains.

This past year in particular has had its tragedies and triumphs for Beverly as she lost her father and gained a grandson, opened a new studio and was awarded the Angelina Ballerina Dance Academy Program license. In keeping with her steady optimism and energetic momentum, she and her siblings stood by their mother closely through her father’s illness. That moment of loss was not a stumbling block for Spell but instead an anamnesis of the model of industrious drive and diligence to faith and family that were the traits she inherited from her father whom she attributes in large part to the level of accomplishment and success she has experienced. “God is the one who has put so many wonderful people in my life. I believe that part of my success is due to the people He has surrounded me with. I never could have worked as hard as I did or known what sacrifice it takes to accomplish anything had it not been for my parents and brothers and the sacrifices they made for me to study dance.” Her dancer’s posture punctuates this statement with a natural nod of determination.

Beverly’s past is one of determination and ambition and she shares those strengths with dancers of all ages. Walking into an adult ballet class at the new Ballet Studio location in Lafayette renders those same feelings of fantasy grounded with reality, routine and rigor. Poised front and center, the relaxed Beverly Spell captivates her class of adult dancers ranging in age from 20 - 70. She accomplishes this not with sparkle and drama but with approachable grace, confidence, command, and humility. Outfitted in her trademark teal t-shirt with cutout ballet neckline and black capri leggings, Beverly charges her students with an upbeat string of French dance positions as their warm up opens to a contemporary soundtrack of blended classical music for advanced beginner ballet students.

“Beverly has a very intelligent approach to dance... she has an instinct for how the body works and moves.”

“I feel like this sums it up: Life begins at the end of your comfort zone. At 54, I am definitely extended beyond that comfort zone, but who I am is a sum of my past.”

Her beryl blue eyes flash with the brilliance that more than 30 years of devotion to classical ballet and education reflect. From her relaxed yet perfect posture, Beverly calmly and charismatically casts her spell on her students who slowly conform to the relaxing music, stretching and bending as the music crescendos and falls.

“It’s real life. We are not crafting prima donnas,” she shares. “What I do in my work is motivated by my core beliefs that everyone has the right to dance. Everyone can benefit from dance, so we are going to learn about life through dance.”
