Being welcomed by the accommodating staff and walking into the restaurant feels like stepping into the sky, with views from Newcastle Beach to the Hunter Valley. Airy furniture, a host of greenery and floor-to-ceiling windows create an atmosphere of luxurious simplicity, letting the glorious brutalist architecture speak for itself. Eighty per cent of the produce at Roundhouse is sourced within a three-hour radius of the hotel, placing it as a leader in sustainable food sourcing and abiding by its ethos of “responsible luxury”.

Whilst enjoying a Coastal Margarita from their extensive cocktail list, one attentive waitress informed that the native plant garnish in the drink was grown and picked just a few minutes away along Bathers Way.
The extensive wine list reveals the incredible breadth of the Hunter region’s wine varietals. Enjoy your fivestar meal with a tipple of a famous Hunter semillon or shiraz, and don’t forget some delicious dessert wine to end the night.
Roundhouse is headed by executive chef, Natalie Bolt, known for her work in the United Arab Emirates, Turkey and Thailand. Natalie says: “We have created a menu that celebrates native Australian ingredients and the world-class produce grown in our region. It’s an exciting new chapter for Newcastle and I’m loving working on the ground with incredible producers and providores.”
During lockdown, Natalie created a tasteful new menu full of beautiful seasonal produce and Australian native ingredients. She continues Roundhouse’s sustainability ethos, working with multiple local suppliers to bring in fresh food, grown locally and without the carbon footprint that comes with long-distance travel requirements. This new menu is one not to be missed. Roundhouse offers a dining experience Newcastle has not seen before.
