Being welcomed by the accommodating staff and walking into the restaurant feels like stepping into the sky, with views from Newcastle Beach to the Hunter Valley. Airy furniture, a host of greenery and floor-to-ceiling windows create an atmosphere of luxurious simplicity, letting the glorious brutalist architecture speak for itself. Showcasing distinctly modern Australian cuisine, Roundhouse beats the drum for the Hunter region’s abundance of world-class produce. Working in partnership with local artisans, farmers and fisherman, Roundhouse presents pared-back dishes that celebrate the beauty of the ingredients fresh from the earth and sea. Eighty per cent of the produce at Roundhouse is sourced within a three-hour radius of the hotel, placing it as a leader in sustainable food sourcing and abiding by its ethos of “responsible luxury”. The wait staff and team are passionate and knowledgeable about the sourcing of their produce.
