OMANI KINGFISH WITH MO ILEE S AUCE

Chef Minas Madhu from Al Bustan Palace a Ritz-Carlton Hotel gives us his recipe for a delicious Omani Kingfsh dish

Ingredients

For the moilee sauce:

2g Ginger

3g Garlic

15g Onion

2g Curry leaves

3g Turmeric powder

120ml Coconut milk

10ml Olive oil

Salt & pepper

For the fsh g ing fsh

15g Green peas

1g Olive powder

1g Sea salt

10ml Olive oil

Directions:

For the moilee sauce, heat the oil in a pan and add the julienne ginger and garlic, and then cook for two minutes. Add the sliced onion and curry leaves and cook it for another three minutes, then add the turmeric powder and mix it until well coated with the onion mixture. Add the coconut milk to it and cook on a low heat without letting it rapid boil. Season well and strain the mixture through a fne strainer. Keep aside.

Cook the green peas in boiling water for three minutes and strain, add to ice water to cool it down, and then strain again. Peel off the skin and keep aside.

Sear the fsh on a hot griddle on one side for three minutes on a low fame. Finish it for three more minutes in the oven at 180C.

Pour the moilee sauce on to the plate in a circle and place the fsh on the centre topped with olive powder. Add the green peas on the top of the sauce and garnish with green sakura leaves.
