For carrots • 1 ½ lb. carrots • 2 tablespoons Alter Eco Mascobato Cane Sugar • 1 tablespoon fresh lemon juice • 2 teaspoons sweet paprika • 1 teaspoon ground cumin • 1/2 teaspoon cinnamon • 1/4 teaspoon cayenne • 1 teaspoon salt • 1/4 cup olive oil (Try Canaan Fair Trade’s peppercorn-infused Organic Extra Virgin Olive Oil for an extra kick!)

• 3 cups Eighth Wonder Mountain Violet Sticky Rice, soaked overnight in water and drained • 2 cups canned or fresh coconut milk • 3/4 cup Alter Eco Mascobato Cane Sugar • 1 teaspoon salt • 4 ripe mangos (or substitute sliced ripe peaches or papayas)

For sandwiches • 12 slices multigrain sandwich bread • 6 oz (3/4 cup) soft goat cheese • 3/4 cup Canaan Fair Trade Organic Green Olive Tapenade Prepare carrots: Whisk together sugar, lemon juice, spices, salt, and oil in a large bowl until sugar is dissolved. Slice carrots diagonally approximately 1/16 inch thick. Cook carrots in a medium pot of boiling salted water until tender but still crisp, about 45 seconds. Drain well and toss with dressing. Cool to room temperature, stirring occasionally, then marinate, covered and chilled, at least 4 hours. Tip: You can marinate carrots for up to 2 days before serving.

Steam the sticky rice until tender. Meanwhile, place the coconut milk in a heavy pot and heat over medium heat until hot. Do not boil. Add the sugar and salt and stir to dissolve completely. When the sticky rice is tender, turn it out into a bowl and pour 1 cup of the hot coconut milk over; reserve the rest. Stir to mix the liquid into the rice, then let stand for 20 minutes to an hour to allow the flavors to blend. Meanwhile, peel the mangoes and slice thinly. To serve individually, place an oval mound of sticky rice on each dessert plate and place a sliced half-mango decoratively beside it. Top with a sprig of mint or basil. Stir the remaining sweetened coconut milk thoroughly and serve it on the side in a small dish with a spoon so that guests can drizzle more coconut milk according to their taste. Rice keeps well for 24 hours in a covered container in the refrigerator. Steam or microwave to rewarm.

Assemble sandwiches: Spread tapenade on 6 slices of bread and goat cheese on remaining 6 slices, then sandwich carrots between.

Crunchy Quinoa Granola Adapted from a recipe by Hungry Hungry Hippie

Wonderful textures and just the right amount of sweetness—this granola will instantly become a morning favorite. Alter Eco’s Organic Royal Rainbow Quinoa adds depth, crunch, and protein, too! Yield: Approximately 6 cups INGREDIENTS • • • • • • • • • •

1 1/2 cups rolled oats 2 cups puffed wheat 1/2 cup uncooked Alter Eco Organic Royal Rainbow Quinoa 1 cup slivered almonds 1/2 cup sweetened coconut flakes 1 tsp cinnamon 1/2 cup coconut oil 1/2 cup maple syrup 1/2 Tbsp vanilla 1 cup Level Ground Trading Dried Golden Berries

Preheat oven to 225. Mix together the oats, puffed wheat, quinoa, almonds, coconut flakes, and cinnamon. Heat the coconut oil until the oil is liquid and mix with maple syrup and vanilla. Pour the liquids over the dry ingredients and stir gently. Spread mixture over two cookie sheets lined with parchment paper. Bake for 60 minutes, then remove and let the granola cool. Mix in the golden berries, breaking up any large chunks. Granola will keep in an airtight container for up to three weeks.
