A culinary expedition for epicureans devoted to traveling in style. You’ll explore the tip of the Baja Peninsula, a hotbed for culinary excellence. This region is admired not only for breathtaking coastal views, but also for its ‘choyera’ fare, a term referencing the blending of rich traditional history with modern gastronomy.
Give farm-to-table a new meaning as you tour local farms dedicated to unlocking sustainable farming in a desert environment and learn about efforts to preserve native planting. Each day you’ll get your hands dirty: harvesting herbs for a refreshing cocktail, learning the basics of ecologically responsible gardening, and chopping ingredients during cooking classes with local chefs. At the end of the day, you can explore the night scene or settle into your treehouse suite, beautifully constructed from reclaimed materials. From traditional ranch style meals to Michelin awarded fare, this is a gastronomic journey like no other. Your taste buds will thank you.

Here, you’ll settle into your private casita with outstanding views of the Pacific Ocean. Relax by the pool while you wait for other ethical roamers to arrive Meet your hosts and prepare for your gastronomic adventure ranging from Baja’s endemic flavors to modern ‘choyera’ cuisine
In the evening we’ll congregate for happy hour and discuss what’s to come over a meal prepared in the traditional rancheros style
The Sierra La Laguna Biosphere Reserve is one of Baja's most beautiful but least explored areas We’ll select a hike with spectacular views and swimming holes. For lunch, we’ll picnic by waterfalls, enjoying traditional fare made with ingredients from local gardens Head South to your new base camp in San Jose del Cabo, a lush sanctuary set on 25 acres of greenery.
In the evening we’ll congregate for a meal prepared by your resort’s Michelin Green Star culinary team.
Begin your day with a light breakfast, then grab a beach cruiser for a garden and landscape tour of your resort complete with an introduction to the property’s animal sanctuary where you can socialize with puppies and baby goats at your leisure.
Roll up your sleeves for a cooking class designed by Green Star Michelin Chef, Arturo Rivero and savor the fruits of your labors.
Close the day embraced by the luminous ambiance of top-rated Chef Javier Plascencia’s new restaurant.
Early riser? Take a trip to the waterfront where kitchens are hand selecting the day’s fresh catch from local fishermen
After a light breakfast, head out to our founder’s favorite farm: Los Tamarindos. Discover how they are improving agricultural methods to conserve water and increase sustainability. The farm is the gastronomical dream of Chef Enrique Silva, a pioneer of Mexico’s Farm-to-Table Movement You’ll harvest your own ingredients before donning an apron in his outdoor kitchen.
Wend your way through San Jose del Cabo’s gallery district during the town’s famous
Embark on a native plant tour with a local herbalist The garden you traverse directly supplies the property’s Michelin Bib Gourmand and Green Star awarded eatery.
Grab a round of tacos in town before spending the afternoon as you please! Opt to recover from last night’s debauchery at the spa, take a dip in the pool, or keep the party going in Cabo San Lucas!

And trust me, eat my waythroughMexicoCityIdid!
Each State of Mexico has a unique flare and set of flavors. Culinary epicureans flock to Oaxaca for mole, Jalisco is known for the molcajete, and my personal favorite dish in Michoacán is the escamoles, a prehispanictreatofguijeraantlarvaesautéedinhazelnut butterandtheherbapazote.Likewise,Bajahasitsown foodiescene.It’samixofoldworldtraditionandflashy moderntechniques Thetwoblendtogetherbeautifully tocreateBaja’smouth-watering‘choyera’cuisine
The endemic flavors are pronounced, in part, because isolation preserved its distinct tastes for so long Although the Spanish began colonizing what is now Mexico in 1519, the indigenous hunter-gathers mostly sawonlypiratesorpassersbyuntil1683.Itwasthenthe Spanish king, concerned over these pirates, instructed the region be settled by Jesuits, a religious order of Catholic priests. The Jesuits’ approached the land on theirownterms,seekingoutadifferentkindofsoldier whoseskillsbettersuitedtheireconomicmission:ones with ranching and farming abilities and a focus on family. This isn’t interesting to me simply because my adolescence was shaped by Jesuit ideologies (I even graduated from a Jesuit University) It’s relevant because this unique history heavily influenced the foodsandcultureofBajaCaliforniaSur.
The people who fit the Jesuit’s criteria and ultimately filled the ranks came from two populations First,wereAndalusianfarmers Atthe time,SpanishAndalusiawaspredominantlysettled byMoors,ArabsandMiddleEasternerswhobegan arriving there in the 8th century during the Moorish conquests Second, were descendants of the Moors, Arabs and Jews who were forced to leaveSpainforthe‘newworld’duringtheChristian reconquests in the 15th century. Both groups brought Middle Eastern flavors to Baja including olives, grapes, lentils, date palms and alfalfa manyofwhichcontinuetoflourishtoday.
You’ll also find Bedouin cultural values alive and thriving in Baja Their spirit of hospitality, hard work, and honor make Baja a friendly and relativelysafeplacetovisit.
Then, fast forward to 1956, Cabo’s first hotel was built:thefamousOne&OnlyPalmilla.Hollywood’s elite and snowbirds alike found a relaxing breath of fresh air in Baja’s beach and desert landscapes Since, the region has transformed into a tourist paradiseandaplaygroundforworld-classchefs.
