Hey there!

Spring is finally here, and our stores are bursting with fresh as well as local delicacies in every aisle.

Not only has the season changed, but we have also welcomed a lot of change here at Fairway. We recently opened our new cooking school, The Cooking Place, in May in our flagship store on Broadway. This store also received a facelift with new lights, wayfinding signs, and a beautifully renovated Café. One thing though is not new. Our long-standing commitment to providing the freshest, most locally available food anywhere.

And with barbeque season upon us, there is no better place than Fairway to get what you need for the ultimate weekend cookout. Whether it’s crisp, succulent produce, tender and delicious angus steaks, charcoal, bibb lettuce, freshly baked bread, organic ice cream, or a catering order for a summer get together, we have the best of the best.

We go above and beyond delivering fresh every single day. Our team members work hard to give you the best fooding experience possible by waking up at 4 am to bake bread, restocking our produce twice daily, and hand-slicing smoked salmon to order.

Reeves Farms

Baldwinsville, NY The Reeves family has been farming since the late 1800's. Today the farm is operated by brothers, Brian and Mark Reeves along with several other family members. They produce a wide variety of organic and conventional produce including strawberries, summer squash, peas, blueberries, tomatoes, sweet corn, peppers, eggplant, and winter squash.

Hepworth Farms Milton, NY

Hepworth Farms, established 1818, is a seventh-generation family farm. The farm is located on the Hudson River approximately 75 miles north of New York City. After graduating from Cornell University in 1982, farmer Amy Hepworth assumed leadership and began the process of dechemicalization, transitioning from standard farming practices to a "whole systems approach."

They specialize in tomatoes, peppers, eggplants, zucchini, cucumbers, and many varieties of greens. The farm is operated by Amy, her twin sister Gail Hepworth, and Gerry Greco.

Catalano Farms Salem, NJ

Catalano Farms has been operating for approximately 33 years and specializes in asparagus, green and yellow squash, peppers, cucumbers, and Kirby and sugar babe melons.

Murray’s Omega 3 Chicken | Fallsburg, NY Murrays Chicken was started in 1992 after many years in the poultry business after seeing the direction the industry was headed. They wanted to get back to basics--to provide a clean, healthy chicken that you would be proud to serve to your children. In order to achieve this, Murray’s chickens are never administered antibiotics and are fed a vegetable-based diet free of animal fats and animal byproducts. Their chickens are grown slowly on small family farms and were the first in the industry to be given the certified Humane label.

Brooklyn Cured Sausage | Brooklyn, NY Over the years, Scott Bridi has left lots of delicious pork in his wake. From running Gramercy Tavern's charcuterie program to heading up Marlow & Daughters, this Brooklyn-born chef's resume is grease-stained with some of the city's best sausages.

Now Bridi's started on his own with Brooklyn cured sausage. His commitment to small batch production shows through in the delicate seasoning and perfect texture of products like the zesty lamb sausage with black olives and smoke pork belly rillettes.

Radient Pig Craft Beer | New York, NY Radiant Pig Craft Beers began as a pipe dream for a couple of home brewers in a small Manhattan apartment. After years of perfecting recipes, countless hours of researching (drinking beer) and a ton of trips to Brooklyn fetching ingredients, they finally got their very own brewing business off the ground. In February 2013, they brewed their first commercial batch of our flagship beer, Junior.

Grilling season is here

GRILL LIKE A PRO WITH THE JUCIEST GRILLING TIPS FROM LAND TO SEA. SHELLFISH Shellfish such as Clam, Mussels, Oysters, Steamers, cockles, etc. are easy to cook on the grill.

Here’s a foolproof recipe: Start by cleaning and soaking the shellfish as needed in water to get rid of any sand or grit. Once clean, put the shellfish in an aluminum tray and make sure the tray is not more than ¾’s of the way full. The shellfish will open and take up more room when cooked.

Add the following to every 2 lbs of mussels, steamers, cockle or 2 dozen medium sized clams, oysters.

• ¼ cup olive oil

• 1 tsp. fresh chopped parsley

• ¼ cup butter

• 1 cup water

• 1 tbsp. chopped garlic

Cook on medium heat and simmer in the aluminum pan stirring occasionally. Cook until the shellfish opens approximately 7-10 minutes after broth begins to simmer. Larger batches may take slightly longer. Once cooked, pour broth in a separate bowl and enjoy.

PRIME GROUND BEEF MAKES THE MOST MEMORABLE BURGERS! HERE ARE SOME TIPS TO MAKE THE JUCIEST BURGER: • Use ground beef with 15 percent fat--this will help keep the burger moist when grilling.

• Season the ground beef with salt and pepper to taste.

• Start with a very hot, clean grill.

• The perfect grilled burger should only be flipped once.

• Never squeeze or flatten the burger, we want to keep those juices in.

• The USDA advises the internal temperature of ground beef or chicken to be at least 160 degrees before eating.

• Always use a meat thermometer.

USDA PRIME BEEF IS AN EXCELLENT SELECTION WHEN CREATING THAT PERFECT STEAK. Prime beef’s increased marbling of fat keeps the steak juicy while grilling and also increases the taste profile of the steak. Prime boneless shell steaks and prime bone-in rib steaks are a personal favorite.

FOLLOW THESE TIPS FOR MOUTHWATERING STEAK: • Thick steaks are great seasoned with kosher salt and black pepper. A ½ of tsp. each per LB., refrigerated 1-2 hrs.

• Pat the meat dry, then salt and pepper • Thinner steaks like hanger steak, flank, and skirt should be marinated and refrigerated 1-2 hours.

• Take out of the refrigerator 20 minutes prior to grilling.

• Start with a very hot, clean grill.

• Sear 2 minutes on each side for 1 inch thick steaks, then cook the rest of the way using a meat thermometer • Sear 3-4 minutes each side for 1 ½ - 2 inch thick steaks, then cook the rest of the way using a meat thermometer

RARE: 115°–120°F MEDIUM RARE: 120°–125°F MEDIUM: 130°–135°F MEDIUM WELL: 140°–145°F WELL DONE: 150°F AND ABOVE

• Searing the meat creates caramelization for better flavor which helps create that perfect steak.

• Always use a meat thermometer.

• Leave it alone on the grill. Do not poke, flatten or flip often.

• Let it rest for 10 minutes after it comes off the grill.

• Slice it across the grain once cooked.
