First there were rice and soy milks, then almond and coconut came along. It seems like every day, someone has found a new food to turn into a creamy beverage. If you’re a non-dairy drinker, there’s never been a better time.

OAT MILK Oat milk has already made waves in the barista world—latte makers love this stuff for the way it produces a silky, velvety foam. Now, consumers are starting to catch on to its all-around wholesomeness. Thick and creamy with a gently sweet flavor that will remind you of cereal (in a good way), it fits seamlessly into any morning breakfast routine.

MACADAMIA MILK Macadamia nuts have a wonderful butteriness thanks to their high concentration of healthy fats, which translate into an absolutely delicious milk. This is the sort of beverage that you’ll have no problem drinking on its own. But it also works seamlessly as a replacement for dairy pretty much anywhere you need it—it makes creamy smoothies, silky soups, and brings out the flavor of coffee.

WALNUT MILK For something more adventurous, walnut milk brings its own toasty and deeply nutty flavor —it tastes like fall in bottle. Stir it into oatmeal and porridges for a deeply rich flavor or blend it into shakes and smoothies for a creamy roundedness. Walnut milk has plenty of nutritious benefits, too, like an abundance of omega-3s, iron, magnesium, and B vitamins.

PEA MILK Pea milk is touted as an eco-conscious choice: because it’s obtained from yellow pea plants, which are grown in rainy areas and require little to no irrigation, it has far less impact on the environment than nuts or traditional dairy. Plus, it’s rich in protein, iron, and calcium. And it definitely tastes perfectly delicious and creamy, with a lighter, skim-like consistency.

CHILI VERDE PERFECT FOR YOUR GAME DAY CROWD! SURE TO BE A CROWD-PLEASER, THIS RECIPE MIGHT TAKE A LITTLE WORK, BUT IS EVERY BIT WORTH IT AT THE END.

Ingredients: Green Sauce

Chili

1 pound tomatillos, husked and rinsed

5 pounds pork shoulder, cut into 1 ½ inch cubes

2 green bell peppers, halved, stemmed, and seeded

2 teaspoons kosher salt

1 pound Anaheim chiles, halved, stemmed, and seeded

1 tablespoon vegetable oil

2 jalapeño peppers, halved and stemmed

1 large onion, diced

½ cup cilantro leaves and stems

½ teaspoon kosher salt (additional)

1 teaspoon kosher salt

4 cloves crushed garlic 1 tablespoon ground cumin 1 tablespoon ground coriander 1 tablespoon dried oregano 1 tablespoon brown sugar 1 cup chicken stock or water

Equipment: 6 Quart (or larger) slow cooker

1 cup crushed tortilla chips Juice of 2 limes A couple dashes of green hot sauce

Instructions: 1) Make the green sauce. Spread the tomatillos, Anaheim chiles, bell peppers, and jalapeño peppers skin side up on a baking sheet. Broil until they are blackened in spots (about 5 minutes). Flip the tomatillos and broil until they are browned on the other side and the skins of the peppers are blackened all over (another 5 minutes). Remove the baking sheet from the oven and let the pepper cool, then peel the skin and discard.

Pour the contents of the baking sheet into a blender or food processor, including as much of the liquid as possible. Add the cilantro and the teaspoon of kosher salt, then blend until smooth, about 30 seconds.

2) Brown the pork. Sprinkle the pork with 2 teaspoons of kosher salt. Heat the oil in a fry pan over medium-high heat and brown the pork in two to three batches. Cook each batch for six minutes, browning it on both sides. Transfer the pork to a bowl with a slotted spoon to leave as much fat behind as possible.

3) Saute the aromatics and toast the spices. There should be 2 tablespoons of fat in the pan—add more oil or pour out the fat to get to 2 tablespoons. Add the onions to the fry pan and sprinkle with ½ teaspoon of salt. Saute the onions until softened and starting to brown around the edges (about three minutes), scraping occasionally to release the browned pork bits. Make a hole in the middle of the onions and add the garlic, cumin, coriander, oregano, and brown sugar. Cook until you smell the garlic and spices, about one minute, then stir in the onions. Add the chicken broth and green sauce and bring to a simmer.

4) Slow cook the chili. Transfer the contents of the fry pan to the slow cooker. Stir the pork, pork juices, and crushed tortilla chips into the slow cooker. Cover and cook on low heat for 10 hours, or high heat for 5 hors.

5) Serve the chili. Stir in the lime juice and hot sauce. Add more salt and pepper to taste. Serve with tortilla chips, sour cream, and more green hot sauce.

Here’s a little Q&A with our CEO, Abel Porter.

How did this start?

About six months ago Tom Baldwin and I had this idea and we are so happy it came to fruition in such a short amount of time. From beginning to end, both of our teams have worked very diligently in bringing the vision to life.

Why did you want to partner with Benihana and Haru Sushi?

When you put three iconic NY brands together—Benihana, Haru Sushi, and Fairway--you create a great combination for a fooding experience. It’s a powerful experience and stays true to who we are as a company: The Place to Go Fooding!

What’s your favorite menu item?

I love the eel sushi from Haru. I also like the shrimp, chicken, and beef combination bowl. My favorite Sur La Route item is the sticky bun and the new salad combinations are a great option for a quick and easy lunch.
