Roasting the Perfect Chateaubriand Of all of our 12 roasts for the holidays, Chateaubriand is perhaps our most sumptuous and extravagant choice. Even if you don’t otherwise tend to cook fancy food, a holiday dinner is where it's fun to pull out all the stops. Turkey? We had enough of that a month ago for Thanksgiving…not to mention sandwiches and soup for days afterward. For the most important family gathering of the year, we prefer to impress with this succulent and flavorful roast. Chateaubriand is the most tender and luscious center cut of filet mignon, and is usually roasted and served alongside potatoes and a sauce (appropriately named chateaubriand sauce) usually made with shallots, beef or veal stock, white wine, tarragon, and butter.

Here are some tips for the perfect preparation: Season It Place the Chateaubriand in a roasting pan and rub with salt and pepper to form a crust. Add garlic and other seasonings to your taste.

Roast it Our biggest tip when roasting meat is to use a meat thermometer. Every cut of meat cooks differently depending on thickness and how your conventional oven heats. We love roasting our Chateaubriand with the High/Low technique. Here’s how to do it! • Preheat oven to 425 degrees. • Sear Chateaubriand on center rack for approximately 15 minutes. This creates a “coat” around the tenderloin. • Reduce the oven to 350 degrees and use a meat thermometer until the roast is at the desired temperature.

Roast to Desired Doneness Always temp your roasts! We cannot recommend this enough. Check the internal temperatureby inserting your meat thermometer halfway into the thickest part of the meat. To prevent overcooking, stop cooking 5 degrees below your target temperature. • Rare: Very red, warm center 125 degrees • Medium: Pink, warm center 130 degrees • Well: Very warm center 145+ degrees

Rest It Transfer meat to clean platter. Let it rest, uncovered, and don’t slice it until you’re ready to serve it. This allows the juices to stay in the meat. Allow the roast to rest for 5-10 minutes.

Spaghetti and Italian Meatballs

Plant based and Irresistible

INGREDIENTS: 1 Package Impossible Burger 1 Yellow Onion 2 Tablespoons Thyme 2 Tablespoons Oregano 2 Tablespoons Fresh Basil 5 Cloves Garlic 2 Tablespoons Breadcrumbs 1 Egg (Optional) 1 Teaspoon Crushed Red Pepper 2 Tablespoons Olive Oil 28 Ounce Can Of San Marzano Tomatoes 1 Pound Spaghetti 1/2 Cup Grated Parmesan Cheese Salt And Pepper To Taste

1. PREP YOUR INGREDIENTS Preheat the oven to 425° F. Dice one yellow onion. Remove the stems from the fresh herbs and finely chop (thyme, oregano, basil).

2. MAKE THE MEATBALLS In a bowl, combine the Impossible™ Burger, 1/4 cup of diced yellow onion, 2 cloves of minced garlic, breadcrumbs, egg, 2 tablespoons of grated cheese, red pepper, and 1 tablespoon each of thyme, oregano, and basil. Mix until incorporated. Form 2 oz meatballs and pack tightly. Place the meatballs on a baking sheet lined with parchment paper, bake in the oven for 8 to 12 minutes, or until golden brown. *Make it 100% plant-based with plant-based cheese.

3. MAKE THE SAUCE Sweat the remaining onions and minced garlic with olive oil until they are soft. Add the tomatoes and simmer for 30-40 minutes. Once the sauce has finished cooking, add the remaining fresh herbs and cook for 1 more minute, then season to taste.

4. BOIL PASTA AND ASSEMBLE Bring a large pot of water to a boil. Add a generous pinch of salt and cook the spaghetti according to the package’s instructions. Add the meatballs to the finished sauce and serve over spaghetti. Top with your choice of cheese.

5. SERVE, SHARE, AND ENJOY Makes approximately 12 meatballs, serves four.

There’s more than one way to skin a potato and we’ve created a new twist on a traditional favorite that uses — surprise — riced cauliflower! Cauliflower is a healthy alternative and has the same crispy crunchy texture as potatoes. But the kicker to this recipe? Adding a sriracha lime cream drizzle and some chopped scallions to the top. Trust us, these will become a requested part of your Hanukkah tradition for years to come.

INGREDIENTS LATKES

SRIRACHA LIME CREAM SAUCE

Vegetable oil to cover bottom of pan, 1/4” deep

1 cup sour cream

14 oz bag riced cauliflower

1 tbsp fresh lime juice

2 large eggs, lightly beaten

1/4 cup sriracha

2 tbsp all-purpose flour

1 tbsp honey

1/2 tsp. salt

Garnish with chopped green scallions

1/4 tsp. garlic powder 1/4 tsp. black pepper (to taste) 1 small scallion diced (green part only) 1 medium onion, diced (we recommend caramelizing onions for extra flavor before adding to mix)

METHOD 1. Steam cauliflower for approx 5 minutes to soften. 2. Put cauliflower in bowl and mash with a fork. 3. Add caramelized onion, salt, pepper, garlic powder, then flour and eggs: mix well. TIP: Add eggs and flour last so you can taste the mixture and adjust seasoning. 4. Generously coat bottom of cast iron skillet. Heat vegetable oil on medium heat. Oil is ready when it sizzles. 5. Using 1/4 cup measuring cup, scoop mixture and gently drop in oil. 6. Fry evenly on both sides until crisp and golden brown about 4 minutes. Drain on paper towel.

PLATING Stack latkes (2 per person) on a small plate. Drizzle with sriracha lime cream sauce and sprinkle with a few chopped scallions and voila, the best latkes you’ve EVER tasted!

Strawberry Challah Bread Pudding Who doesn’t love sweet, custardly bread pudding? Ours is made with our freshly baked Fairway challah and the deliciousness of real vanilla bean paste. Mix in sweet macerated strawberries and you have a decadent end to your holiday celebration!

INGREDIENTS BREAD PUDDING

STRAWBERRY SAUCE

1 large loaf (14 oz) Fairway challah

1 lb fresh strawberries, trimmed

1/4 cup butter

and finely chopped. Leave 10 whole

(for greasing the baking dish)

VANILLA CUSTARD

1/2 tsp. vanilla bean paste

1 cup or 8 oz granulated sugar

1/2 tbsp fresh lemon or lime juice

4 large eggs

1 1/3 cup heavy or whipping cream 1 vanilla bean, split lengthwise

*Whipped cream or powdered sugar for serving

METHOD 1. Preheat oven to 350 degrees Farenheit. Slice challah into 1/2 inch slices and cut each slice in half again. Butter 12.5 x 8 x 2.5 inch oval baking dish or individual ramekins. Set aside. 2. Make strawberry sauce. In a saucepan, combine the strawberries, sugar, vanilla bean paste and lemon juice. Cook over medium heat, stirring occasionally, until mixture come to a simmer. Continue cooking for 10 minutes until sugar dissolves, the strawberries release some liquid and become tender. Remove from stove and cool. 3. Make vanilla custard. Whisk sugar and eggs in a medium heatproof bowl, set aside. Place milk and cream in heavy saucepan, scrape in seeds from the vanilla bean and add the bean too. Bring to simmer over medium heat, discard the vanilla bean pod and remove mixture from heat. Gradually pour into the egg mixture, whisking constantly. 4. Assemble the pudding. Arrange about 1/2 the bread slices in the dish, enough to cover the bottom while having space between the slices. Pour half the strawberry sauce over the slices. Top with the rest of the challah and strawberries. Slowly pour over the custard. As the bread soaks in some of the liquid, gently press down the top layer with the back of the spoon to absorb the remaining liquid. Arrange sliced, fresh strawberries over the top of the pudding. Place baking dish in a larger pan and add enough hot water to pan so that it comes halfway up the side of the dish. 5. Bake pudding for 50 minutes. Check to see if the bread pudding is set by inserting toothpick in the center. If slightly moist, remove from oven and let stand in water bath for another 30-40 minutes. Now the pudding should be completely set. The custard should not be runny and the strawberries nicely roasted. Remove dish from water bath. 6. Sprinkle with powdered sugar and serve. Spoon pudding into bowls or cut into slices. Serve with whipped cream if desired. Enjoy! 26
