• In a shaker filled with ice, add fresh basil and basil simple syrup.
⅔ oz basil simple syrup Bunch of basil 1 oz fresh lime juice 1 oz mango nectar 2 oz D’usse cognac
• Muddle basil with ice. • Squeeze key lime juice into shaker. • Add fresh lime juice, mango nectar and D’usse. Shake. • Serve in a coupe glass and garnish with fresh basil sprig.

Chorizo Paella INGREDIENTS

Many of these will vary depending on what size pan you're using. Always err on the high end; it's better to have too much broth than not enough. In general, your goal is to ensure that the pan is not too full, otherwise the dish won't cook evenly. Aim to fill between 1/2 and 2/3 up the walls of the pan by the time all of your ingredients are in.
Salt and pepper (to taste)
Olive oil
1 TBSP minced garlic
1-2 c red wine (use dry white wine for seafood or chicken, red for pork/beef) 8-10 c of chicken or vegetable broth 4-5 c of short grain rice (+/- 1 c based on how full the pan looks) 2 tsp paprika

2 tsp turmeric 2 tsp thyme 3-4 bay leaves 1 yellow onion (chopped) 1 green bell pepper (strips) 1 red bell pepper (strips) 1 can (16 oz) tomatoes, whole peeled or crushed 1 fennel bulb (strips) 3 chorizo sausages (sliced thin) Cilantro (chopped) Lemon wedges
Cooking Instructions There are three steps to this recipe: preparing the broth, sautéing the vegetables in the paella pan, and then combining both and baking in the oven. To make things easier, chop vegetables and measure spices before you start. Prepare the broth first, then start on the vegetables while the broth heats up so that it's ready.
• Save 1-2 cups of broth to use as needed for dry spots, then pour broth into paella pan. Ingredients should be submerged but visible just below the surface of the liquid. Press down anything that's sticking out of the liquid.
Preheat oven to 350° F.
• Cook uncovered on low for 15 minutes or until rice absorbs most of the liquid. If needed, add broth to uncovered areas. Don't stir. Try to disturb the pan as little as possible during this step.
Broth
• Once rice is cooked, stir once to make sure nothing sticks to bottom.
• Combine in a saucepan or pot and simmer for 10 minutes, then keep hot:

Chicken or vegetable broth, wine, paprika, saffron threads, salt, pepper, turmeric, thyme and bay leaves.
• With larger pans, you may need to leave the oven door cracked. If so, take out the pan halfway through baking and rotate it 180 degrees.
Paella pan
• Bake 20-25 minutes, or until liquid is absorbed and rice is cooked. Check after 1213 minutes for dryness, adding saved broth if needed.
Coat the pan with a layer of olive oil. Add oil as needed if any area of the pan is low or the vegetables are burning. Sauté in this order, stirring in the new ingredients with each step: • Onions and garlic for 4-5 minutes, until softened. Stir as needed to keep from burning, especially the garlic. • Tomatoes, peppers, and fennel for 3 minutes. Be sure to get all of the liquid from the canned tomatoes into the pan. • Add rice, adjusting as you go to avoid overfilling the pan. Stir to cover the rice with onions/tomato sauce.
• Remove from oven and cover with foil for approximately 5 minutes.
Garnish • Sprinkle chopped cilantro evenly across paella. • Cut 2-3 lemons into wedges and serve alongside paella. • Don't forget to take out the bay leaves!
• Add sliced chorizo, distributing evenly around the pan.

Cooking Instructions • Mash banana; add egg and stir. Add rolled oats, hemp seeds and pecans and mix to make batter. • If desired, add a dash of cinnamon and vanilla extract. • Place a small amount of coconut oil in a non-stick skillet and turn heat to medium. • When the oil melts, add batter to make pancakes. Let pancakes cook 2-4 minutes before turning. • Serve with fruit and/or maple syrup to your liking.

KIDS’ COOKING CORNER
C
ooking for kids can definitely be challenging. One day something can be their favorite food, the next day they won’t touch it. A great way to get kids excited about cooking is to give them an apron of their own, roll up your sleeves and dig in. Cooking with kids can be fun! 1. Prep work is fun! No matter what age, prep work can be fun for kids. Pull a chair up to the sink and let them wash the fresh veggies, snap the beans and asparagus and shuck the corn. The hands on experience will have them invested in the process and gives them a great view as to where their food comes from!
2. Packing lunches isn’t just mom’s job. Each night, create a menu of lunch options for the next day with one catch: whatever they pick, they have to help make. PB&J? Great! Grab the bread, a dull butter knife and let them starting spreading the jelly. Hummus and veggies? Have them fill the Tupperware, clean the veggies and pack how much they want.
3. Bake up a mess. The fun of cooking sometimes is the mess it makes. If there is one thing that kids love too, it’s making a mess. Grab a large mixing bowl, dump ingredients together and let them stir until their hearts content. You’ll have an extra set of hands and they will be adorable for the inevitable photo you’ll want to take.
4. Cooking is learning. The key to making a recipe working is math. Adding measurements together and doubling recipes are critical skills. Test your kids by asking for different size measurements as you cook. They won’t realize they are actually learning!
5. Lights, camera, action! Have a star in the family? Capitalize on it with your very own cooking show. Whether playing just pretend or even creating your own livestream, your kid will feel like a star as they help you create their favorite recipes. Plus, they will be more apt to taste that newly famous recipe you just made!
6. Invent a recipe together. Sometimes the best recipes are happy accidents. Start with a basic cake recipe. Challenge your kid to take it up a notch with some pre-chosen additions. Maybe some chocolate chips would be a tasty addition. Perhaps fresh fruit would make it even more delicious. No matter what, you’ve made something together!
7. From farm to table. The best way to get your kids involved in cooking is to take them to its roots. Literally. Pick a recipe together. Visit your local store and shop the best ingredients together. Prepare everything. Get cookin’. Set the table and enjoy. From beginning to end, you experienced it together.
8. Clean up! The most important – and most dreaded – step of cooking is cleaning up! Make a game of it. Who can clear the table the fastest? Who can wash the most dishes? Who can unload the dishwasher the quickest? Clean up will be done in a snap!

wo years ago, the fairway Community foundation hit the ground running with a Chunk of Change, a staCk of legal doCuments, and a wide-eyed board of direCtors with a desire to give baCk. today, the foundation is gearing up for two large-sCale proJeCts that fulfill its mission by empowering and investing in the people and plaCes that make Communities great. these proJeCts are built on partnerships with two non-profit athletiC organiZations, bringing neighbors together to be physiCally aCtive, enJoy eaCh other’s Company, and enJoy themselves. In June, the Foundation is partnering with St. Albans Handball Association, Inc. and Our Own Handball Association, Inc. to bring the 2017 Citywide Handball Championship this June in Central Park. The Championships are a continuation of the handball-focused projects the Foundation kicked off last summer by funding the refurbishment of two handball courts in Chelsea and Red Hook. In addition to fulfilling the Foundation’s mission, these projects support an activity that is quintessentially New York: handball. More importantly, handball is one of the most inclusive sports around. All you need is a ball, which you can buy for just over one dollar, and a wall, which you can access for free in public parks across this great city.
2017-18 school year, will support the evolution and implementation of a new and improved curriculum for the program. The Foundation’s contribution to New York Road Runners Run for the Future, a program serving young women across the five boroughs through the power of running and fitness, will allow for an addition of 10 rising high school senior girls to the summer 2017 cohort and allow for an additional $500 to be added to all 85 participants’ respective college scholarships. In conjunction with financial support, the Foundation will partner with Fairway Market to host a healthy grocery shopping event for the summer 2017 program participants, along with designing and delivering educational workshops to all 85 program participants.
Over the course of the summer the Foundation will also be rolling out the fruits of our partnership with the New York Road Runners supporting two of their Team 4 Kids initiatives. The Foundation’s contribution to Rising New York Road Runners, a free, in-school fitness program for youth which will serve 150,000 New York City children in the

• Place garlic and salt in a food processor or blender and pulse for 2 seconds. Add egg yolk and lemon juice. Pulse on and off until blended.

• Turn on machine and slowly add extra virgin olive oil in a thin stream. • Finish with pepper and a bit more salt.

For the Stuffed Squid Squid, 2-3 per person 1 daurade (sea bream), filleted 8 prawns, shelled 8 scallops 1 lb fresh spinach Additional extra virgin oil to sauté
For Side Vegetables • Sauté leaks and carrots. Must be served warm.
For Stuffed Squid • Remove head of squid from body. Clean body thoroughly, inside and outside. Separate head from tentacles and discard head. • Sauté daurade (sea bream), prawns, scallops, spinach and squid tentacles in extra virgin olive oil for 5 minutes, 2½ minutes per side. • Chop everything very small for stuffing. • Pipe stuffing into squid body, dividing the mixture evenly between them. Do not overstuff. • Fry stuffed squid in pan with extra virgin olive oil until golden on each side. • Place stuffed squid on one side of plate, side vegetables on the other and drizzle aioli on the squid.

ThE BarTlETT Makes one drink Ingredients 2 TBSP pear puree 2 TBSP ginger simple syrup 1.5 oz Absolut pear vodka
½ c. champagne Lemon wedge
Directions To make pear puree: peel and core 6 ripe Bartlett pears. Puree pears in food processor until smooth. This makes enough for about 12 drinks. To make ginger simple syrup: place 1.5 c sugar, 1.5 c water and ½ c of fresh shredded ginger in pan. Heat on low heat for about 10 minutes. Let cool, then strain the ginger out. • • • •
Take a tall glass and fill with ice. Add pear puree, ginger simple syrup, Absolut Pear Vodka and ½ c champagne. Stir, squeeze lemon wedge into drink then place on top. Serve with stirrer. The pear tends to settle on the bottom. It is nice to be able to stir back in while sipping.

It also provides promotional materials and exclusive Community Partners offers designed to create excitement and build momentum for each school’s program. The bigger the “buzz,” the bigger the donation! The Community Partners Recipe Contest is the most recent buzz-worthy initiative. It’s
generated a lot of excitement, extra money for the winning schools and some genuinely terrific recipes to share with the readers of Fairway’s FLAVORS magazine. Jennifer Rozencwaig coordinates the Community Partners program at Eleanor Roosevelt High School and with its two winning recipes, she has reason to be proud. • Heat broth to boiling. Separate eggs. Beat egg yolks with lemon juice until blended.

• Preheat oven to 250°.
1 ½ c sugar 1 can evaporated milk
flan mixture:
4 oz cream cheese
• Beat eggs in a blender. Add the milk, cream cheese, vanilla, salt and ¾ cup of sugar. Blend well and keep in blender until syrup is complete.
1 tsp vanilla extract Pinch of salt to taste 9 inch pie plate (aluminum/metal) Lasagna pan or equivalent that can accommodate a 9 inch pie plate
syrup • In 9 inch pie plate, melt ¾ cup of sugar on stove under low/medium heat until light brown. Make sure to continuously stir the sugar as it melts. Once it has melted to desired color, coat entire pie pan with syrup until it hardens*.
Assemble • Add flan mixture to pan. Place pan in the large lasagna pan. Pour hot water into the lasagna pan only until it covers ¾ of the outside of pie plate to create a water bath. Place in the oven for approximately one hour. Test with toothpick or knife for doneness. Remove pie plate from water, let it stand to cool for one hour then cover and refrigerate until ready to serve. When ready to serve, turn the pan upside down onto a plate and enjoy! *Note: Be very careful handling syrup. It is dangerously hot!

2 pounds of beef, cut in cubes
• Preheat oven to 350°.
2-3 large yellow onions, in 1-inch wedges
• Dredge meat in flour.
1-28 oz can organic diced tomatoes or 6 fresh tomatoes, chopped
• Heat about 5 TBSP oil in a pan. Sauté wedges of onion until translucent. Add floured meat to pan and brown evenly.
½ c extra virgin olive oil (or more) Himalayan salt or Karas sea salt 2 TBSP each oregano, mint, and basil ⅓ c flour for dredging meat 1-16 oz box orzo
• Remove onions and browned meat and place in a large dutch oven or deep, oven-proof pan. Pour diced or chopped tomatoes over the meat and onions. • Add olive oil, about 1 tsp of salt, and oregano, mint, and basil. Mix all together to blend flavors. • Cover, place in oven and cook for about 2 hours. Check a couple of times while cooking and add a little hot water, if more liquid is needed. • After 1 hour and 45 minutes, cook the orzo following directions on box. • When the meat mixture has cooked for 2 hours, add the cooked orzo to the pan and return it to oven for 5 minutes, uncovered. • Remove from oven and serve with salad greens, cucumbers, capers, olives, and tomatoes. • Afiyet Olsun! 1 bulb fennel
• Wash leeks and fennel, then coarsely chop.
2 leeks
• Wash salmon, pat dry and season lightly with salt and pepper.
2 TBSP olive oil Salt and pepper to taste 1-1½ lbs salmon filets 2 c white wine 2 lemons (juice one, thinly slice the other) Fresh parsley, thyme and/or chives (chopped)
• Heat 1½ TBSP olive oil over medium/high heat in a cast iron or heavy-bottomed 8-inch skillet. Add leeks and fennel. Sauté until tender and leeks are just beginning to brown. Add salt and pepper to taste. • Move leeks and fennel to the sides and add remaining olive oil to the center of the skillet. Increase heat to high. Sear salmon, flesh side down, in the center of the skillet for 1-2 minutes. • Flip salmon, skin side down, and add white wine and juice of one lemon. Cover the salmon with thinly sliced lemon. Reduce heat and simmer for 10-12 minutes or until salmon is cooked through. • Top with chopped, fresh herbs and serve with lemon wedges. Roasted veggies and rice complete the meal.

TiraMisU a la’ErNEsTa INGREDIENTS 16 oz of mascarpone cheese 1 whole egg 1 egg white ½ c sugar ⅓ c milk 1 c heavy cream ½ c (4 oz) Kahlua (Liqueur de Cafe) 1½ c (12 oz) cold Italian espresso or decaf espresso 4 oz shredded semi-sweet chocolate 40 ladyfinger cookies
Cooking Instructions • In medium saucepan whisk together whole egg, egg white, sugar, and milk. Bring to a simmer over medium heat, whisking continuously to the point of boiling. Remove saucepan from heat and let cool. • In a separate bowl, whisk heavy cream until thick. • Fold the whipped cream and the mascarpone into the cooled egg mixture. • In a separate bowl, mix together the Kahlua and the cold espresso. • One at a time, dip the ladyfingers into the Kahlua/espresso mix, and use them to tightly line the bottom of an 11"x7"x 1½" glass dish. Cover the ladyfingers with half of the cooled egg mixture. Distribute 2 oz. of the shredded chocolate over all. This is the first layer. • Repeat previous step on top of the first layer. • Chill overnight and enjoy!

Cooking Instructions
3 eggs
• Preheat oven to 350°.
1 c sugar
• Whisk the eggs and sugar together until fluffy. While stirring, gradually add water, oil and salt.
½ c vegetable oil ½ c warm water 1⅓ c flour ⅓ c corn starch 3 tsp baking powder ½ c coconut flour 2-3 TBSP chocolate chips
• In a separate bowl, combine the flour, corn starch, baking powder and coconut flour. Slowly add them to egg mixture, constantly stirring. Add the chocolate chips last and mix. • Place in oiled bundt pan and bake for about 35-40 minutes.

dUlCE dE lEChE COOKiE (alFaJOrEs dE MaizENa) INGREDIENTS 2½ c corn starch 1⅔ c flour 2 tsp baking powder ¾ c sugar 1 c softened butter 3 egg yolks ¼ tsp salt 1 TBSP vanilla extract 2 tsp lemon zest ¼ c milk (if needed) Splash of cognac, whiskey, rum or similar spirit (optional) 1 13-16 oz jar of dulce de leche (milk caramel) Grated coconut for garnish (optional) Powdered sugar for garnish (optional)
Cooking Instructions • Preheat oven to 350°. • Place softened butter in a medium bowl. Add sugar and beat gradually until mixture is light and fluffy. Add egg yolks, one at the time, beating after each addition. Add vanilla, lemon zest and, if desired, spirits. Continue beating until batter is smooth and creamy.
• In separate bowl, sift together cornstarch, flour, baking powder and salt. Gradually add the dry ingredients to the butter mixture, beating thoroughly and making a dough. • Separate dough into 3 or 4 portions, and refrigerate for an hour or so to make it easier to roll. • Flour your surface and roll out dough until approximately ½ inch thick. If dough is crumbly and difficult to roll, add a couple to a few tablespoons of milk, kneading into the dough to bring together. • Cut out cookies (most traditional are plain or scalloped circles, but hearts work just as well) and place on cookie sheet lined with parchment paper. Combine the scraps, repeat rolling and cutting with remaining dough, adding flour as needed. • Bake until cookies are set but still light, approximately 11-15 minutes. Cookies should not be browned. • After cookies have cooled completely, generously spread dulce de leche on one cookie. Add another cookie on top to make a sandwich. (It’s okay if the dulce de leche is oozing out of the cookie – it will help the grated coconut stick to the sides). • Leave your alfajores plain, roll in grated coconut or sprinkle the top with powdered sugar.
