We asked our Executive Chef Laura to create a few holiday recipes that highlight the flavors of fall as well as the bounty of fresh produce we offer. From yams to brussels sprouts to acorn squash, these dishes will truly warm the soul and impress your guests. Roasted Acorn Squash with Autumn Stuffing
When summer colors fade to warm earth tones and the air turns brisk, I get nostalgic about the flavors of fall and the bounty of produce that hearkens in a season of thanks and celebration. The vegetable lover can look forward to tender roots and shoots and to robust leaves and tubers that are earthy and flavorful, like baby beets, butternut squash, rainbow chard, and turnips. Fall and early winter produce is perfect for hearty soups, rich and delicate vegetable entrees, and holiday sides that warm the soul. From yams and sweet potatoes to Brussels sprouts and acorn squash, the shift to fall fresh produce is like sweet and savory culinary gold.
INGREDIENTS 4 acorn squash (about 1 pound each), halved lengthwise and seeded Olive Oil 3 tbsp. unsalted butter 1 1/2 cups celery, diced small 2 leeks, halved lengthwise and sliced 1/4 inch thick 2 fall apples, peeled, cored and diced 2 tsp finely chopped thyme 6 cups of day-old rustic rye bread (or other bread) crusts removed, cut into small cubes 7 ounces pre-cooked chestnuts, chopped small 1/2 cup chopped parsley 1/3 cup heavy cream 1/3 cup low-sodium vegetable broth Salt and pepper to taste
METHOD Preheat the oven to 400°. Brush the cut sides of the acorn squash with olive oil. Season the cavities with salt and pepper. Place the squash cut side down on a baking sheet and roast for about 20 minutes, until tender and slightly darkened. Meanwhile, place the butter and approximately 3 tablespoons of olive oil in a large skillet or cast iron. Add the celery and leeks and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Add the apples and thyme and cook over moderately high heat until the apples start to soften, about 5 minutes. Season with salt and pepper to taste. Place the mixture into a large bowl. Add the bread, chestnuts, parsley, cream and stock and toss well. Season with salt and pepper. Lower the oven to 350. Turn the squash cut side up. Spoon the stuffing into the cavities and roast until the squash are tender and the stuffing is golden brown, about 20 minutes. Transfer to plates and serve.

Caramelized Brussel Sprouts with Orange, Sage and Cranberry
INGREDIENTS Olive oil 2 lbs. Brussels sprouts halved lengthwise 1 shallot, minced 2 tbsp. fresh chopped or fresh rubbed sage 1/4 cup fresh orange juice 2 tsp. real maple syrup 1/2 lb. fresh or thawed frozen cranberries 1 1/2 tsp finely grated orange zest Salt to taste
METHOD In a small saucepan, combine the cranberries, orange juice, maple syrup and orange zest. Cook over moderate heat, stirring occasionally, until the cranberries break down and thicken, about 10 minutes. Heat a cast iron (preferable) or large heavy bottomed saute pan to medium high heat. Drizzle enough olive oil into the bottom of the saute pan to cover and coat it. Place the cleaned and sliced Brussels cut side down, filling the bottom of the pan. You may have to do this in batches depending on how many fit face down, side by side. Move them around a little so they don’t stick, but keep the cut face down so it gets brown and crispy, 7 or 8 minutes. Drizzle in a bit more olive oil if the pan is dry and add the minced shallot and sage. Toss all around with the Brussels. At this point you don’t need to keep them face down anymore as they should be brown. Allow them to cook a few minutes longer with the shallot and sage. Lower the heat and stir in the cranberry sauce. Coat the Brussels well. Season with salt to taste and serve.

BROWN BUTTER PUMPKIN GALETTE Topped with caramelized onions and mozzarella cheese. This savory pumpkin galette makes a perfect Thanksgiving appetizer!
INGREDIENTS FOR THE CRUST 3/4 cup all purpose flour 3/4 cup white whole wheat flour (or regular whole wheat flour) 4 1/2 ounces COLD unsalted butter, cut into cubes 1/2 teaspoon salt 1 large egg, 2–3 tablespoons cold water FOR THE FILLING 6 tablespoons unsalted butter 2 cups pumpkin puree (canned or fresh) 1 large egg, plus another large egg beaten for egg wash 1 teaspoon kosher salt 1 cup caramelized onions (from about 2–3 onions) 6 ounces Fairway fresh mozzarella 2 tablespoons honey Flaky sea salt (such as Maldon) for sprinkling, optional
METHOD MAKE THE CRUST 1. Mix together the flour and salt in a medium bowl. Use a pastry cutter or a fork to cut the butter into the flour for a few minutes, until the butter is broken into pea sized pieces. 2. Whisk together the egg and two tablespoons of cold water, then pour it into the flour mixture. Use a fork to stir the mixture until it comes together, adding one to two additional tablespoons of water until it forms a ball. Do not knead the dough or mix any further. Wrap the ball in plastic and refrigerate for at least 30 minutes prior to rolling out. MAKE THE FILLING 1. Melt the butter in a saute pan over medium heat. Keep a close eye on it as it sizzles, foams, and eventually turns brown and smells nutty. Add the minced sage and immediately remove from the heat. Add the pumpkin puree to a bowl and pour the butter in. Add the egg and salt, then mix until the butter is fully incorporated. ASSEMBLE 1. Preheat the oven to 425 degrees. Roll out the dough to about a 12″ circle and transfer to a parchment lined baking sheet. Spread the pumpkin mixture in the center, leaving a 2 inch border around the outside. Distribute the caramelized onions evenly over the pumpkin, then crumble the mozzarella on top. Drizzle with honey. Gather and fold the dough up around the sides to enclose the filling. 2. Brush the exposed dough with the egg wash, then lightly sprinkle flaky sea salt (if using) on top. Bake for about 25-30 minutes or until the crust is golden brown. Remove from the oven and allow to cool for at least 20 minutes before serving.
