WINE & FOOD
In vino veritas [In wine is truth]. Proverb quoted by PLATO
WINERIES
St. Innocent was founded in 1988 by its winemaker and president, Mark Vlossak. We produce small lots of handmade, vineyard-designated wine from some of the best sites in the Willamette Valley. Since our founding, we have grown from 600 cases that first year to our current production of 8-10,000 cases, yet each wine is still handcrafted in the very same manner. Year after year, St. Innocent Winery has received recognition from throughout the country and around the world for its outstanding Pinot Noir, beautifully-crafted white wines, and fair pricing. Mark’s raison d’etre is to produce wines that reflect their terroir, the specific qualities of the vintage, and his vision of wine’s place in life: to complement and extend the pleasure of food. To accomplish his goal, he picks fully ripe fruit at the point of maximum complexity and ferments the fruit to extract the exact balance of flavor and tannins desired. This produces wines that display their unique fruit character as well as secondary flavors specific to the terroir of the site: spice, pepper, mushroom, earth, etc. The result is wines with higher acid levels and diverse yet harmonizing flavors. By marrying tradition with innovation, combining old world attention to detail with cutting-edge inspiration, Mark creates wines that reflect their terroir, are complex, balanced and age worthy.

Founder Jim Bernau purchased the Estate site in 1983 and cleared away the old pioneer plum orchard hidden in scotch broom and blackberry vines. He planted Pinot Noir (Pommard and Wadenswil clones), Chardonnay (Dijon and Espiguette) and Pinot Gris. In 1989 Jim was ready to build his dream—a world class winery in the Willamette Valley—and make cool-climate varietals, especially Pinot Noir, in sufficient quantities to be served and sold in the best restaurants and bottle shops in the world. A combination of determination and extraordinary people has brought Willamette Valley Vineyards from an idea to one of the region’s leading wineries, earning the title “One of America’s Great Pinot Noir Producers,” from Wine Enthusiast Magazine. Our approach is to grow, by hand, the highest quality fruit using careful canopy management, and to achieve wines that are truly expressive of the varietal and the place where they are grown. Our stylistic emphasis is on pure varietal fruit characters, with attention to depth, richness of mouthfeel, and balance. The wines are truly a collaborative effort of the entire vineyard and winemaking staff.

Bethel Heights Vineyard is a family-owned and operated winery located in the historic Eola Hills northwest of Salem. Two families established the vineyard in 1977 and released their first wines in 1984. Planted between 1977 and 1979, Bethel Heights was one of the first vineyards in the Eola Hills, a chain of hills in the center of Oregon’s Willamette Valley. Terry Casteel and Marilyn Webb are half of the original team, and Ted Casteel and Pat Dudley are the other half. Pat’s sister, Barbara Dudley, also is a partner and serves as chairperson of the Board of Directors. Pat Dudley is Marketing Director and President; Ted Casteel is Vineyard Manager; Terry Casteel is Winemaker Emeritus; and Marilyn Webb is CFO and assists with marketing. Ben Casteel, son of Marilyn and Terry, is Winemaker, and Mimi Casteel, daughter of Ted and Pat, is Vineyard Assistant. Truly a family business. The winery produces 13,000 cases of premium wine annually, specializing in Pinot Noir, Pinot Gris, Chardonnay and Pinot Blanc. Over the past several years Bethel Heights has expanded to include second generation leadership and ownership, bringing youthful energy, talent and passion into the blend. The family is known for generous service to the Oregon wine industry over the years, and for leadership in building sustainability and stewardship of the land into all aspects of growing grapes and making fine wine.

Cristom’s founder and owner, Paul Gerrie, used his skills as an engineer and avid researcher to pursue his passion for wine. On his travels to France, he was introduced to the traditional growing practices of the Burgundy region. He learned that soil and site were key in developing the complexity of the fruit. After a 1991 visit to the International Pinot Noir Celebration in Oregon, Paul decided the time was right to leave the East Coast and bring his family and his passion for great Pinot Noir to Oregon’s burgeoning wine country. But their journey wasn’t complete without a winemaker who shared Paul’s vision of “letting the land make the wines.” Enter Steve Doerner (pictured above) who, after a quarter century of experience, still believes the winemaker’s job is to “optimize what nature — the vineyard — provides.” In addition to his reputation as a master winemaker with “keen intuition” (possibly from his French heritage), Steve is a biochemist who had been making wine in California. And so with a passion that only wine enthusiasts embrace and a precision that can only come from a chemist and an engineer, the two set out to cultivate their vision, which today, can be seen in the seven distinct vineyards on Cristom’s 65 acres.

Mahonia Aquifolium, named by Lewis and Clark on their epic journey to the Pacific, is the Oregon state flower and our vineyard’s namesake. Also called “Oregon Grape” because of its blue berries, this Northwest native and our winegrapes both thrive in the unique habitat of our site in the Willamette Valley foothills. We sell our fruit to some of Oregon’s best winemakers for their own vintages, and they craft a limited amount of wine exclusively from our grapes that we sell under our Mahonia Vineyard label. Founder/Owner John Miller and Vineyard Manager Ferenc-Ipacs-Szabo work together to ensure the highest quality by limiting yields and employing best practices. Our grapes are grown sustainably in our family-owned vineyard. We generate solar power, use locally-produced biodiesel, and are both SalmonSafe and LIVE certified. Our definition of profit includes giving back to Oregon communities, especially through programs benefitting children such as Family Building Blocks, and those benefitting the environment such as SOLV.

Witness Tree Vineyard is named for an ancient oak tree, which towers over our 100acre estate. Used as a surveyor’s landmark in 1854, the tree bears “witness” to the Northwest corner of donation land claim No. 51. Witness Tree Vineyard is steadfastly committed to being an “estate”, for as winegrowers we believe that only by tending our own vines can we achieve the highest quality to produce the finest wines. We only use grapes grown on our 52 acres of planted vine, grapes that deliver the unique expressions of each individual vineyard block. Low yields in the vineyard and minimal handling in the winery allow us to create wines of depth, elegance, concentration, and character. The vineyard is farmed using sustainable agricultural practices and is certified by the LIVE (Low Impact Viticulture & Enology) and Salmon Safe organizations. Witness Tree Vineyard’s primary focus is premium Pinot Noir, but we also produce limited quantities of estate-grown Chardonnay, Viognier, Pinot Blanc, and Dolcetto. Steven Westby is our Winemaker and Vineyard Manager. Working the vineyard at Witness Tree for the last fourteen vintages has given Steven an intimate knowledge and appreciation for the varied microclimates in our vineyard. His familiarity with the nuances of each separate lot of fruit grown here on the estate qualifies him as one of Oregon’s most capable Winemakers.

2007 Villages Cuvée Pinot Noir A nose of red and black fruits with spice, pepper, and floral notes. Cherry and black raspberry flavors are layered with spice and dark flowers. Dark ruby and full bodied, the ‘07 reflects the vintage’s complex layered tannin structure that will benefit from being opened several hours and can be aged up to 5 years to gain added complexity. 2007 Vitae Springs Vineyard Pinot Gris This Pinot gris was made in an Alsacian style. It has textural complexity; a wine that moves throughout your mouth. By picking late and harvesting at full ripeness, the signature spice component of Pinot Gris is revealed. It has a spicy nose with orange peel and citrus notes. That spiciness continues into the mouth with pear, apple and citrus flavors. Completely dry, it is a great match for Asian-influenced foods, appetizers, and fish entrees. Bethel Heights Vineyard, Inc. 6060 Bethel Heights Road NW • Salem, Oregon 97304 • 503.581.2262 www.bethelheights.com
2007 Estate Pinot Noir Brooding aromas of clove and anise over light barrel toast, forest floor, and dusty raspberries. The palate is dense, with a lively vein of acidity framing flavors of bright red cane berry, strawberry, and intense minerality. This wine has the structure to age well. 2006 Justice Vineyard Reserve Pinot Noir 91 points, “Smooth and polished, this is a vivid wine, with racy acidity and distinctive mineral-accented raspberry and strawberry flavors, hinting at watermelon as the finish lingers effortlessly. Best from 2009 through 2016.” - Harvey Steiman, Wine Spectator Insider

TASTING WINES Cristom Vineyards 6905 Spring Valley Road NW • Salem, Oregon 97304 • 503.375.3068 www.cristomwines.com
2007 Estate Pinot Gris This Pinot Gris is a pale-straw color. It has the aroma of Asian pears, white flowers and green apples along with some mineral notes. On the palate it shows a ripeness, viscosity and concentration that give the impression of fruitiness in a decidedly dry wine. This dry style will make it an excellent accompaniment to a variety of dishes. 2007 Mt Jefferson Cuvée Pinot Noir This Cuvée is a medium garnet color. On the nose it is showing cola berry, oolong tea and wild berry aromas. It has the ‘signature’ Mt. Jefferson liveliness on the palate with bright, juicy and mouth watering red cherry flavors that echo on the finish. There are more complex flavors of earth and spice evident on the palate but they need a little time to show through more completely. This wine will develop nicely in the short to medium-term. Dobbes Family Estate 240 SE 5th Street • Dundee, OR 97115 • 503.538.1141 www.dobbesfamilyestate.com
2007 Dobbes Family Estate Willamette Valley Pinot Gris A classic Oregon Pinot Gris that is lively, yet sophisticated. Exhibiting intense aromas of ripe green apples, lemon zest and verbena. This Pinot Gris is slightly nuanced with just enough barrel spice to add further complexity. The mouthwatering flavors mirror the aromas and finishes long and clean. Best through 2010. 2005 Dobbes Family Estate Cuvée Noir Pinot Noir The winemaker’s “true love”; the Cuvée Noir is a big and full-bodied wine. Not over the top, but skirting the line beautifully; this wine flirts with power, depth, richness and elegance simultaneously. This harmonious cuvée opens with expansive warm aromas of spices, graham and black fruits with a hint of floral notes. The mouth mirrors the aromas with full flavors of black cherries, blackberries and red currents wrapped within fine and sweet tannins. Perfect for immediate gratification, the Cuvée Noir also exhibits excellent aging potential to 2011.

TASTING WINES Mahonia Vineyards 2655 Landau Street SE • Salem, Oregon 97306 • 503.585.8789 www.mahonianursery.com
2005 Mahonia Vineyard Pinot Noir Winemaker: Russ Raney, Evesham Wood Winery, Salem, Oregon This wine shares with past vintages a pronounced black cherry fruit and considerable viscosity. It has the firmness and concentration of the 2004 vintage yet with a bit more structure and a surprisingly bright fruit acid. After fermentation in 400 gal. open-top vats, the wine was aged for 10 months in predominantly older French oak barrels with about 25% new oak. It was racked gently off the sediment twice for clarity prior to bottling in August 2006 and was not filtered. 2007 Mahonia Vineyard Pinot Gris Winemaker: Aaron Hess, Daedalus Cellars, Dundee, Oregon A bright, full-bodied wine with mineral notes, citrus fruit and spice flavors. The vines were cropped at 2 tons per acre to create a full-bodied wine with depth and structure. The fruit was fermented in equal parts stainless steel drums and neutral French oak barrels with no malolactic fermentation. The result is a vibrant, powerful wine with complex aromas and a long, flavorful finish. 2007 Mahonia Vineyard Chardonnay Winemaker: Russ Raney, Evesham Wood Winery, Salem, Oregon Fermented in neutral French oak, this version of the Mahonia Chardonnay has fine varietal flavor and aromatics. The 2007 vintage yielded a wine with more of the mineral and talc tones than most recent vintages, along with a zestier fruit acid and somewhat leaner texture. A very crisp and vibrant Macon-styled Chardonnay. Witness Tree Vineyard 7111 Spring Valley Rd NW • Salem, Oregon 97304 • 1-888-GR8T-PNO (478-8766) www.witnesstreevineyard.com
Estate Pinot Noir 2007 This wine is packed with succulent, forward black fruits with just the slightest hint of vanilla and spice. The 2007 season provided graceful and spirited Pinot Noir - the kind of beautiful wine that put Oregon on the world map of premier Pinot producers in the 1980’s. Estate Pinot Blanc 2007 This limited bottling offers delightful fruit flavors reminiscent of apple and pear, balanced beautifully by a crisp refreshing acidity. Serve it with lighter table fare, crab or other shellfish, or simply on its own.

TASTING WINES Willamette Valley Vineyards 8800 Enchanted Way SE • Turner, Oregon 97392 • 503.588.9463 www.willamettevalleyvineyards.com
2007 Pinot Gris Bright, fruity, crisp style. Pretty aromas of fresh young pear, starfruit, grapefruit, honeydew and flower. Bold and crisp mouthfeel with generous flavors of pear, mineral, tangerine and spice, interwoven with well-balanced acidity. A small amount of Pinot Blanc, picked very ripe, adds an emollient mouthfeel, and contributes to the Alsatian style. A kiss of Muscat adds flowery sweetness. This wine is a quintessential match with salmon. Wonderful with cheese, shellfish, chicken, salads and white fish. Serve chilled and allow to warm in the glass for optimal enjoyment. 2006 Estate Pinot Noir This is an elegant wine that truly expresses the terroir of the red, volcanic earth where it was grown. Aromas of sweet wild rose, red and black fruits, clove and earth are complemented by flavors of black cherry, cassis, cocoa, vanilla and cinnamon. A medium-full bodied wine with a voluptuous mid-palate and big round tannins in balance with the crisp acidity. The spicy cinnamon and black pepper finish lingers into the next sip. Appealing now but will further reward those who cellar this wine. Peak drinkability is between 2008-2012. Pair with prime rib, quail, duck, wild game, and winter vegetables-especially mushrooms. Great paired with dishes with complex spices. Try with a variety of medium to strong cheeses. 2007 Riesling A semi-sweet medium bodied Germanic-styled wine. Vibrant aromas of peach, pear, citrus and honeysuckle flowers. The explosive mouth-filling flavors mirror the aromas with star fruit and steely apple malic acidity, giving a sweet-tart balance. Clean and refreshing with a crisp mouth-watering finish. A good match with light cheeses, citrus fruits, slightly sweet fowl dishes with fruit chutney, prawns, scallops, and crab. Serve well chilled on the table and allow to warm in your glass for optimal enjoyment of aromas and flavor.

Salem, Oregon Diana Ramallo fell into the world of food quite by accident. A professional kitchen was not where she thought she would end up but it’s twenty years later and she is still enjoying being a chef. For Diana, food is a creative process but also an expression and offering of love. It is a way of using different ingredients creatively to produce something that tastes amazing but also makes the recipient come away with a feeling of having been nurtured. Diana has always had an intuitive sense about flavor profiles and the way in which they best come together and had them further honed by a classical culinary education. For the western world, a basis in French culinary techniques is the jumping off point for creative composition and while her menu at the Amadeus Café is considered eclectic, it employs much of what is good and true about French cuisine: fresh ingredients, locally sourced, cooked upon order. A la minute cooking (cooked upon order) is de riguer at Amadeus and while it may take a little longer the results in terms of freshness of flavor are well worth it. The Amadeus Café is located in south Salem at 5121 Skyline Village Loop, inside of the First Pacific Corporation building, providing a lovely respite from a busy day. www.amadeuscafeinc.com.

Travel packages sold through the Auction contain only those elements listed in the auction lot description. 1. Air travel must not be interrupted. Airfare is to be booked point-to-point. Any changes or additions to travel will be at the buyer’s expense. This condition also applies to rental cars or other ground transportation not included in the auction lot description. 2. Once a trip is scheduled and confirmed by the buyers, changes may not be allowed by the donors. Some trip features or amenities may have to be paid by the buyers at the time of use. Such expenditures will not be reimbursed unless specifically listed in the auction item description as qualified for reimbursement by the Auction. 6. PLEASE NOTE: If a buyer donates a travel package purchased at the Auction to another charity, or it is resold to another person, bidder assumes ALL risk. Family Building Blocks/The Uncorked Wine Auction will not be responsible for honoring any elements contained in travel packages purchased outside the Auction.

SILENT AUCTION 103. Oregon Pinot Noir vs. French Burgundy #1 This is a great opportunity to taste the crème de la crème of French Burgundies and Oregon Pinot Noirs. Invite your wine loving friends and have a blind taste test – which is best, local or European? Ken Wright is all about Terroir. He does a variety of single vineyard bottlings that showcase the diversity in the land and soil of some of Oregon’s finest grape growing spots. His wines are full of dark berry fruit and the minerality and stern frame certainly tip their cap to the great wines of Burgundy. Volnay is the finest village for red burgundy in the southern part of the region known as the Cote de Beaune. The Marquis d’Angerville is unquestionably the finest producer in all of Volnay. The wines are full of red fruit and chalky minerality and age effortlessly. To compare and contrast: • 2007 Ken Wright Cellars Meredith Mitchell Pinot Noir, three 750ml bottles • 2006 Marguies d’Angerville Volnay 1er Cru Champans, three 750ml bottles Contributed by: Ed & Greta Shugrue
104. Oregon Pinot Noir vs. French Burgundy #2 Who says “opportunity only knocks once”? Here is your second chance to do your own comparison of Oregon Pinot Noirs and French Burgundies. Don’t let this one get away. Dick Shea is one of the pioneers of Oregon Pinot Noir. The Shea vineyard site that bears his name can be considered one of the “Grand Cru” sites for Pinot Noir in North America. While the 2007 Estate Pinot Noir has the wealth of fruit that good Oregon Pinot has, it also has vibrant acidity and solid structure giving the wine great balance. Lignier is one of the legendary producers in Morey St. Denis. His wines are dark and ripe, but have a deep earthiness and minerality that give the wines great balance. Morey St. Denis lies at the crossroads of rusticity and finesse and are some of the finest representations of Pinot Noir in the Cote de Nuits. For your taste test: • 2007 Shea Vineyard Estate Pinot Noir, three 750ml bottles • 2005 Lignier Morey St. Denis Clos Sionnierres, three 750ml bottles Contributed by: Ed & Greta Shugrue

ORAL AUCTION SPECIAL APPEAL
Your support will keep the wheels on the bus going round and round . . . For Family Building Blocks to fulfill its mission of “keeping children safe and families together,” it is imperative that enrolled infants, toddlers and preschoolers attend our therapeutic classes each week. Most of the high-risk families that we serve cannot provide their own transportation. So, to be successful, we must transport children each morning in small yellow buses equipped with specialized car seats. These buses provide much more than just a way for children to get to class. Many of the families whom we serve live in isolation with no car. The regular visit that the bus makes to their homes may be one of the only contacts that the parents have with the community. The teacher who knocks on the front door to pick up a child serves as a critical piece of that family’s safety and support network. Sometimes, that regular contact can provide vital information needed to make a crucial difference for a family in need. Our studies show that attendance in our therapeutic classes really does make a difference. Last year, 98% of the children enrolled in our program were able to continue living safely with their families, thus avoiding the trauma and heartbreak of being removed and placed in foster care. This outcome is remarkable considering the overwhelming challenges facing our clients. With your collaborative support, we can “keep those wheels going round and round” and make a difference for another bus load of children!

Ms. Kuhn teaches part-time at Willamette University and Baker Charter School and shows her work at the Mary Lou Zeek Gallery in Salem. “The landscape holds me, wraps me up and gives me comfort as a blanket does.” This work consists of acrylic and fiber on canvas and is intended to blur the distinction between the landscape and us. The flat areas of stitched fabric are reminders of the domestic tradition of needle and thread. Wine should come from a beautiful place. Everything we do, we strive to do in harmony with the land, keeping the vineyard pristine, the soils healthy and the farm life rich. Sustainability speaks to the vision we have of our job as winegrowers. The fruit from outstanding wines can only come from beautiful origins. It is our commitment to respect the land, the vineyard, and the wines that come from our site as things of great beauty, to be carefully and lovingly tended. We are caretakers only. We are charged with delivering this parcel of land to the next generation with healthy soils, intact biology and a vineyard that has a brighter future ahead than even its greatness of the past. Everything we do, we try to do with the attitude of “we’re doing this forever, don’t cut corners, don’t make short-run decisions.” 2006 – The First Vintage from Zenith Vineyard! - We are thrilled to announce the release of our 2006 Pinot Noirs and Tempranillo - the first-ever vintage under the Zenith Vineyard brand. These are also the first vineyard-designated wines from our site since the 1998 St. Innocent O’Connor Pinot Noir. Mark Vlossak, winemaker of St. Innocent and our partner in the vineyard, made the wines with his usual high standards and elegance. Zenith Vineyard made two Pinot Noirs and a Tempranillo in 2006. Our 2006 Barrel Select Pinot Noir, (180 cases) is $40 per bottle; the 2006 Estate Pinot Noir, 280 cases produced, is $25 and the 2006 Estate Tempranillo, only 50 cases produced, is $25. Please Enjoy!
