Christmas Pudding Recipe

Christmas pudding, a must have dessert for the Christmas party celebrations. We would like to share our very own John Smith’s Stadium Christmas pudding recipe with you to make at home and enjoy with family and friends this Christmas. Don’t forget to add a coin in for good luck too!


Christmas Pudding Recipe

Recipe from Executive Chef, Malcolm Emery

INGREDIENTS 120g Raisins 120g Sultanas 120g Currants 120g Fresh bread crumbs 120g Vegetable suet 120g Demerara sugar 120g Bramley apples 120g Carrots 150ml Guinness 50ml Cognac 2 Eggs 1 Teaspoon ground mixed spice 1 Teaspoon ground ginger

METHOD Soak the dried fruits for 24 hours in the Guinness and Cognac. Mix dry ingredients together then combine  the fruits together with the eggs. Spoon the mixture into a pudding bowl and steam for 6 hours. To serve, lower the pudding into a pan of cold water (with water in the pan 2cm below the top of the bowl). Place the pan on a low heat, allow the water to

cut out and keep

simmer until the pudding is hot approximately 1.5 hours.

Enjoy with rum or brandy sauce!
