Nikki’s first restaurant job was as a hostess at Mexican Village when she was in high school.
Ryan’s first cooking job was at Dairy Queen when he was 14 years old. From there it was one restaurant cook job after another.
FAVORITE MENU ITEM: When asked what their favorite menu item is, Nikki responded with “I think I speak for both of us when I say that answering this question would be like choosing your favorite child.”
The James Beard Awards, established in 1990, are the nation's most prestigious honors recognizing excellence in the culinary, hospitality, and food media industries. Often called the "Oscars of the food world," these awards celebrate exceptional talent and achievement across various food-related fields.
The Fargo area had a bakery, chef, and two restaurateurs who were nominated for James Beard awards in 2024. We interviewed them all to find out more about how they got into the food industry and what to expect at their restaurants.

RESTAURANTS: Nichole Hensen is the head chef and founder of Nichole’s Fine Pastry.
THE NOMINATIONS: Nichole’s was nominated for Outstanding Bakery in 2024.
GETTING YOUR START: Nichole’s first job at Sprouts Deli ignited her culinary
passion. Her dreams flourished during a UND trip to Europe, where Paris’s food shops, especially a stunning fruit tart, left a lasting impression.
FAVORITE MENU ITEM: Nichole told us lemon meringue pie is her favorite, but she also loves a fresh fruit tart – which was the dish that started it all.
Andrea Baumgardner of the former BernBaum's was nominated for Best Chef Midwest in 2024; she was previously nominated for the award in 2020.

Ingredients:
Tart Dough:
4 oz granulated sugar
4 oz softened butter
1 egg yolk
10 oz all-purpose flour
4 oz cake flour
Pastry Cream:
1 cup whole milk
1 cup heavy cream
Instructions:
Sandy’s Donuts
¼ oz vanilla bean paste
8 oz granulated sugar
2 oz cornstarch
½ tsp salt
3 eggs
Glaze:
2 oz granulated sugar
1 tbsp cornstarch
½ cup pineapple juice
1 tsp lemon juice
For the tart dough, cream 4 oz granulated sugar with 4 oz softened butter, then blend in 1 egg yolk. Mix in 10 oz all-purpose flour and 4 oz cake flour until just combined. Refrigerate until firm, then roll to ¼” thick, press into a tart pan, and prick with a fork. Bake at 350°F until lightly brown, then cool.
For the pastry cream, heat 1 cup whole milk, 1 cup heavy cream, and ¼ oz vanilla bean paste to scalding. Remove from heat and whisk together 8 oz granulated sugar, 2 oz cornstarch, and ½ tsp salt, then blend in 3 eggs. Temper the hot milk mixture into the egg mixture, stirring constantly until it boils and thickens. Transfer to a heatproof container, cover with plastic wrap directly on the surface, and chill until cold.
For the glaze, combine 2 oz granulated sugar and 1 tbsp cornstarch in a saucepan. Stir in ½ cup pineapple juice and 1 tsp lemon juice. Cook over medium heat, whisking constantly until thickened. Use immediately.
To assemble, fill the cooled tart shell with pastry cream, top with fresh fruit and/or berries, and brush with glaze. Chill until serving. Best enjoyed within 12 hours.

The Fargo-Moorhead Symphony Orchestra continues to enrich our community through live performances that entertain, educate, and inspire.
HISTORY: The Fargo-Moorhead Symphony Orchestra (FMSO) has a history that dates back to 1912 when a small group of musicians led by Harry Rudd performed at a Norwegian Saengerfest. The current organization was formally chartered in 1931 as the Fargo Civic Orchestra and gave its first concert in 1917 under the direction of A.J. Stevens.
WHERE TO WATCH: Their show season includes a Masterworks Series, Chamber Music Series, and a popular late summer "Symphony Rocks" event. The Masterworks series features world-class guest soloists, and the Symphony Rocks event is a collaboration with a local horn band to showcase the FMSO to audiences who might not attend traditional classical concerts.
