Our network of small Yorkshire farms, perched on fellsides and nestled down dales, rear their heritage breed herds and flocks naturally, ready for yuletide. At our base in Ripon, North Yorkshire, we mature and prepare our meats under the watchful eye of Master Butcher, Andrew Carrington, and cut fresh for your Christmas order.

You won't find this special bird anywhere else. It's the best turkey we've ever tasted, and an outstanding centrepiece for the Christmas table. jeff baker’s guide to stuffing your christmas turkey Our Michelin star chef Jeff has compiled this simple guide on how to perfect your stuffed festive turkey this season.
“Stuffing is so versatile and perfect for adding bold flavours to enhance your bird. I like to use chopped prunes and orange peel, but you can let your imagination take over. You could swap chestnuts for mixed seeds, or swap the herbs for parsley, lovage and thyme.” Jeff Baker - F&Co Executive Chef What you will need: 1 free range turkey small pot of melted butter butchers string 1 long skewer Ingredients for stuffing: 450g farmhouse sausagemeat stuffing 100g fresh white breadcrumbs 100g chopped chestnuts 150g dried mixed fruits roughly chopped 1 large free range egg 1 large white onion (peeled & finely chopped) 1 orange zest & juice dozen or so fresh sage leaves roughly chopped pinch ground mixed spice pinch sea salt & cracked black pepper
Soften the onions in the butter over a low heat until translucent, remove from heat and cool. Once the onions are cool, mix thoroughly into the sausage meat with the remaining ingredients. Remove the giblets from the cavity of the turkey prior to stuffing. To start stuffing the bird, insert around one third of the stuffing into the neck cavity of the turkey. Pull the neck skin over the stuffing to the back of turkey and secure with a skewer. Tuck the wing tips under the body to avoid overbrowning while roasting. Next, loosely spoon the remaining stuffing into the body cavity. Tie the drumsticks together with kitchen (butchers) string. Place the turkey breast side up on a trivet of vegetables in a shallow roasting tray. You're now ready to roast.

celebration beef from the yorkshire dales Outstanding heritage breed beef is how we made our name as Master Butchers. We dry age mature all our beef roasting joints to concentrate the flavour and relax the grain of the meat to tenderness. This is very much the finishing touch to our award-winning Christmas beef – the luscious meat would not be possible without the unique geography of the Yorkshire Dales. Wensleydale is a valley of ancient farming traditions. It's on the tops of the valley here where Stuart Raw runs his herd of Dexters, a stone's throw from the commanding fortress of Castle Bolton. These pint-sized cattle might look dainty, but they are hardy creatures, adept at foraging among the bracken, and hunkering down under ancient oak trees in the winter months. Over the tops by way of the Buttertubs Pass, David Harrison rears his Galloways above the cliffs of Kilnsey Crag in Wharfedale. The land here is more exposed than Stuart's land, but the grass is lush and deep. Galloways, originally bred in the borders, have a thick coat to withstand the elements and thrive on the bleak limestone grassland, and they huddle together in strong winds.
The upland pastures provide natural grazing, meaning the herds can put on weight naturally at their own pace. Whichever breed and roasting joint you go for, these traditional farming methods ensure the marbling that will give your celebration beef flavour, nutritional value, and the sheer quality other beef just can't match.

organising your christmas delivery Our Christmas delivery slots are open from the 2nd of December until the 23rd. It's best to order as soon as possible to avoid disappointment. We are expecting a lot of demand this year, while our small network of farms has limited supply. All of our range (except pies, suckling pigs, and beef wellingtons) are dispatched fresh and suitable for home freezing. That's ideal if you'd like to receive your food in advance to freeze down ready for festive cooking.
