Eat Better Meat This Christmas 2019. Has it flown or has it dragged? We can’t tell. Between the chaotic weather and the baffling politics, this has seemed a strange old year, but perhaps that’s all the more reason to leap sherryfirst into the festive season, with unencumbered joy and abandon. We’ve brought back award winners from last year and created many new delicacies to join them. Our resident Chef Jeff Baker - with his decades of experience in Michelin-starred restaurants - has created even more oven-ready roasts and moreish party morsels, granting all Christmas food wishes and serving all kitchen skill levels. If nothing else, do try our new dark fruit stuffing: plump prunes, cranberries and sharp apples, combined with free range pork and juniper-cured bacon, with the most delicate wisp of
smoke. It’s fruity, it’s glorious and it can be found rolled into a porchetta, turkey and goose this year, as well as on its own. While we’ve had the most delicious time creating our Christmas 2019 range, our focus will always be on heritage breeds reared by the most inspiring producers we know. Without the Farmison & Co farming community we’d be nowhere, and so it is to our wonderful suppliers we will raise a glass as we sit down to feast this Christmas. So we urge you to gather those loved ones, charge that glass and forget your cares awhile… let’s get down to some serious Christmas cheer. Joy and abandon it is.

Meat is dry-aged or game-hung before being hand-cut by our team of artisan butchers. – CHEF’S SUGGESTION – If you can bear to part with tradition, steer away from stuffing the cavity of your Christmas bird if opting for a meat-based stuffing; by the time your stuffing is cooked through, the breasts may be overdone. Instead, stuff under the skin, covering the breast, so that bird is basted as it cooks, or cook the stuffing on the side ideal for creating those addictively delicious crispy edges.
