EASTER EATING WITH FARRO

I

t may be a once-a-year indulgence for some to sit down to a serious chocolate session or a six pack of hot cross buns, but we think Easter isn’t just about chocolate, bunnies and eggs. Apart from its religious significance, Easter also marks the change of seasons, and the cooler months certainly mean a move to comfort food. The BBQ is cleaned off and goes back to its winter home, the last of the tomatoes are on the vines and if you’re lucky, you’ll have a tamarillo or two on the tree.

Easter is a bit like Christmas for us at Farro. We clear spaces for all the treats that make Easter so perfect and we also get really excited about the opportunity to cook! In these longer weekends we love nothing more than trying out a new recipe or ingredient. This year we’ve got pork shoulder as our main meat of choice (to slow cook or roast) plenty of hot cross buns ready for the toaster and lots of long weekend eating insiration. Happy Easter eating!

PREP TIME: 30 MINS | COOK TIME: 3 HOURS | SERVES 4-6

This is an easy meal for the long weekend – simply pop on and forget for a few hours. Then serve over the pasta, and top with the freshly grated parmesan and the freshly chopped Italian parsley.

INGREDIENTS

◻ 1.3-1.5 kg Freedom Farms rolled pork shoulder,

string removed and unrolled, then skin removed and diced into 3 cm pieces ◻ 1 medium onion, peeled and finely diced ◻ 2 cloves garlic, peeled and finely chopped ◻ 1 large carrot, peeled and finely diced ◻ 1 80g pack Farro pancetta, diced ◻ 2 tablespoons Mutti tomato paste ◻ 1 cup Foundation Foods beef stock ◻ 1 teaspoon Farro dried thyme ◻ 1 teaspoon Farro dried oregano ◻ 2 cans Metelliana crushed tomatoes ◻ Salt and pepper to taste TO SERVE: ◻ 1 pack La Molisana dried fettuccini ◻ 100-150g grated parmesan ◻ 1 bunch Italian parsley, finely chopped

In a heavy-based casserole dish, heat a little oil and add the pork pieces and brown well all over on a medium heat. Remove pork from the dish and set aside. Add the carrot, onion and garlic and cook for 3-4 mins in a little oil or until well softened. Add the pancetta to the ragù/casserole and cook for a further 2-3 mins before adding the tomato paste. Cook for 1-2 mins , mixing well, then return the pork to the casserole along with the beef stock. Mix well, scraping the bottom of the casserole to loosen any cooked-on bits.

Add the dried herbs and the tomatoes, stirring well to combine. Cover and place in preheated oven to cook for 3 hours covered. Remove the lid and cook for a further 30 mins to reduce the juices down. Twenty minutes before serving, cook the fettuccine according to the package directions. Drain and return to the pot. Meanwhile, using two forks, shred the pork and mix it into the cooking liquid. Serve the ragù over the pasta topped with the freshly grated parmesan and the freshly chopped Italian parsley.


HAND CRAFTED BY LOAF

L

oaf has been part of our Farro family of producers since we started 10 years ago.

Sean Armstrong had founded Loaf just two years earlier and was setting up his small bakery just around the corner from our Lunn Ave store in Mt Wellington. This year, in 2017, they are handcrafting traditional hot cross buns as well as chocolate hot cross buns for Farro, using our own special recipes. We tinkered for many months with different recipes, which involved lots of tastings, toastings and lashings of butter to get them just right – the ideal balance of fruit and spice to satisfy our Easter cravings. The trick to the perfect hot cross bun, according to Loaf’s founder Sean, is plenty of fruit that has been well soaked, and just the right balance of spices, along with a slow fermentation time and gentle mixing so the fruits don’t get smashed.

Chef Sean Armstrong started Loaf in 2004, to create handcrafted artisan bread and cakes for cafes, retailers and restaurants. Over the past 12 years he’s grown his bakery, which now employs 85 staff who help to create an extensive range of handcrafted breads, sourdoughs, cakes, slices, pastries, scones, muffins, doughnuts, seasonal treats like Christmas mince tarts and hot cross buns. Loaf has also pioneered many new tastes; Sean was the first to introduce sliders (still one of Loaf’s biggest sellers) to NZ in collaboration with chef Al Brown, and they were also behind the cronut craze here.

“Loaf is all about wholesome food, real ingredients and, above all, flavour,” Sean says. “All along, we have strived to produce food for people who enjoy baking ‘just like mum used to make’”. We asked Sean what he will be serving for the long weekend brunch; oatmeal pancakes with real maple syrup, classic poached eggs, hollandaise and rocket, and plenty of hot cross buns along the way, of course!
